I DO!

Sporting fever is gripping Townsville – we’ve had the State of Origin Series (as I write this the third game is yet to be played… the suspense!) and now the V8s are just days away (read our story on Mr and Mrs Courtney and Mr and Mrs Webb in our special V8s feature on page 58 – what genuinely lovely couples they are). On top of that we have the Paluma Push, Townsville Cup and Townsville Running Festival just around the corner. I have always wanted to be good at sport. I love fitness and I’m a big fan of the hill, my RPM classes and the odd 5km run; but anything that involves catching a ball or moving my arms and legs at the same time, forget it. My sporting highlights can be reduced to two occasions: one – winning the sack race in year five (I did have an unfair advantage though as I was the tallest in my class and therefore had the longest legs. Sadly, once those pesky boys caught up to me my glory days were over). The second was getting ‘best girl on field’ in a touch rugby game in 2006 – sounds great in theory, until I realised I was the only girl on the field. Ho hum – we can’t be good at everything can we?

So I think it’s only natural that my lack of sporting ability would translate to a general lack of interest in watching it.

Don’t get me wrong – I love watching State of Origin as much as the next person, but if I am to be totally honest with you (and risk getting pelted by rotten tomatoes in the street), I don’t really have an interest for the finer points of the game. It’s all about getting together with friends, having text wars with Blues supporters, enjoying a glass of red wine and a bit of a cheese platter and falling asleep on the couch (OK, the last bit wasn’t planned, but a direct result of the red wine). It’s amazing how sport and socialising go hand-in-hand though. As you will see from our story on the Cowboys Old Boys from page 16, it’s the friendships forged that these guys take away as their strongest legacies to the game.

They are looking forward to catching-up later this month at a luncheon organised by Shane Muspratt to have a beer, reminisce and raise money for the Sam Faust Trust. Tickets are still available if you’d like to be part of the occasion and rub shoulders with Mal Meninga (call 1300 462 692). You really don’t have to be a die-hard fan of a sport to enjoy it and support it – it’s about the atmosphere. Take the Townsville 400 Festival – yes it is built around event eight in the V8 Supercar Championship Series, but you don’t need to be a revhead to enjoy a day out at the track, or the whole month of events that go with it. Use it as an opportunity to get out of the house, away from the cleaning/gardening and TV, and enjoy our beautiful weather and the ability to savour good times with good friends.

You might even learn something new or meet some impressive people along the way (more couches to fall asleep on!).

We used plumberry blush with sunset lunar dust to make Lizzy’s cheeks pop. To finish the look we used bistro lipstick with crush lipshine.

WHEN DID YOU START COOKING AND WHAT WAS YOUR FAVOURITE DISH? I was five or six and my favourite was meringue.

I’d make them with my Nan and she’d keep them in a little tin beside the oven… she used to live with us and I’d help her with cakes and peel the potatoes when we’d have a Sunday roast.

WHAT DO YOU THINK HOLDS PEOPLE BACK FROM BEING GOOD COOKS? I think it’s primarily confidence… I’ve always said cooking is 50 per cent confidence, 40 per cent passion and 10 per cent ability. For those just learning, pudding is always a good way to go – something like sticky date or chocolate fondant – it sounds hard, but it’s really easy, leaves a great impression and you can prepare it in advance.

DID YOU EVER THINK YOUR PASSION FOR FOOD WOULD TAKE YOU SO FAR? It’s been something that’s just unfolded, but also has been the result of lots of hard work. When you put 110 per cent in you reap what you sow, and that’s with anything you do. Also, when you’re committed and you work in places with talented people – who are also committed to their profession and equally as passionate and talented – it becomes a competitive environment, which is beneficial for your career.

WHAT ARE YOUR CAREER HIGHLIGHTS? Surfing the Menu (laughs)! That was so much fun doing that TV show when I was working with Curtis [Stone] and travelling through Australia and meeting wonderful producers and going to spectacular locations. And also when I was working with Jamie Oliver and cooking with Tony Blair at 10 Downing Street – I had to pinch myself a bit there… Tony requested a doggy bag after the meal, so we must have done something right! I’ve also cooked for Ruth Rogers [famous British chef], Al Pacino, and famous architects.

DO YOU GET NERVOUS COOKING FOR MORE HIGH PROFILE PEOPLE? No, not really because it’s all about having confidence in what you’re doing. I know I can cook, but Tony Blair can’t! I would be more nervous about meeting and talking to those people.

WHAT WAS IT LIKE BEING CALLED “ONE OF THE UK’S HUNKIEST CELEBRITY CHEFS”? In terms of building your confidence, it’s nice to have someone say that about you, but it’s funny – I’ve never considered myself to be one of the ‘hunkiest chefs’, especially as I had a bit of competition with Curtis [Stone] – I’m sure most people would think that he’s a bit hunkier!

YOU KNEW THEIR NAMES WHEN THEY PROUDLY DONNED THEIR COWBOYS JERSEYS AND TOOK TO THE FIELD, BUT WHAT ARE THEY DOING IN THEIR POST-FOOTBALL LIVES? NINE OF THE NORTH QUEENSLAND COWBOYS’ “OLD BOYS” RIB EACH OTHER AND REMINISCE ABOUT THEIR PLAYING DAYS IN THE LEAD-UP TO A FUNDRAISING REUNION LUNCHEON THIS MONTH. Belonging to a professional sporting team is like being in an exclusive club. The feeling of camaraderie experienced when the pressure is at boiling point, emotions are charged and stakes are high is difficult to replicate. That’s possibly why a lot of elite footballers remain mates for life – even when they’ve scattered all over the country and swapped their fastpaced playing days for new careers and the responsibilities of family. Later this month, the Cowboy’s past players will reunite for their yearly reunion weekend to catch-up with old comrades and see where life has taken them. But this year exCowboy Shane Muspratt is turning the event into something more substantial to attract previous peers from far-and-wide. The highlight will be the Cowboys Old Boys 2011 Reunion Luncheon at the Mercure Townsville where retired team mates can close ranks, interact with the new crop, share a beer with loyal fans, hear from State of Origin coach Mal Meninga, and – most importantly – pay tribute to a lost mate.

“This is our way to acknowledge the support we had for so many years,” Shane tells. “Yes, it’s a great way for everyone to catch up, but also an opportunity for the Cowboys Old Boys to give something back to a region that’s so important to us as players… the Friday luncheon will be a lot of fun, but our real focus is to raise funds for the Sam Faust Trust.” Tickets are available to the public for $120 per person, with $50 going to the charity. The event is on Friday, July 29 at the Mercure Townsville, kicking off at 12.30pm. Call 1300 462 692 to secure your spot. LEIGH MCWILLIAMS COWBOYS: 1998-2005 MAIN POSITION: HOOKER Originally from Newcastle, Leigh played his entire professional career with the Cowboys and describes it as “living the dream”: “What I loved about playing footy, was playing footy,” Leigh states. “I was lucky to have the opportunity to do it because not everyone does.” Moments he’ll never forget include playing his maiden first-grade game and also the Cowboys’ first foray into the semi finals. These days Leigh works as a contract carpenter, finishing off the remaining two years of his apprenticeship when he stopped playing sport. He is married to Kylie with three kids – Taylah (9), Jake (7), and Piper (4) – and savours his weekends off to spend time with the family.

SHANE MUSPRATT COWBOYS: 1996-2003, 2005-2007 MAIN POSITION: HALFBACK A part of the Cowboys for most of his playing career, except for a year at Parramatta, Shane says the game has changed markedly since he last carried Cowboys colours. “I always loved the competitive edge of playing and being part of an 18

under-strengthed semi-finals team in 2007 is one of my greatest memories,” the 32-year-old tells.

“The game is so involved now, from both the training perspective and the off-field requirements. Plus the players are a lot younger which often means they don’t get to learn from the guys who’ve spent 10 years in the game. I loved my time playing footy, but I don’t miss it and either does my body.” Shane is loving life as a member of the Gedoun Property Group (he actually works with Leigh McWilliams) and welcomed his first child Carter 16 months ago with fiancée Rochana: “He certainly keeps me busy – between work and being a father you definitely appreciate how easy we had it as footballers.”

remembers when he looks back at his four years with the Cowboys, it’s the friendships and his love of slipping-on the jersey. “The friendships you make are the best memories and you always have a laugh to this day when you catch-up with the boys for a beer,” Shaun tells. “I just loved the game and was lucky enough to play at top level.” Shaun now runs his own business, Cheaper Lawn Mowing and Gardening Services, which he loves as it allows him to spend more time with his wife Arlene and their kids Trey (8) and Gabrielle (2).

He is also maintaining the links with the game he adores by coaching the Brothers’ Under 18s side and his son’s Under 8s. “I’m loving my life between work, family and football,” Shaun says.

The jerseys have also got a lot tighter.” Peter loves that he has maintained this connection to NRL, but he is also happy outside work with wife Debbie and the family they have created – Jack (12), Hayley (11) and Sophie (9). “I’m taking great delight in watching my kids grow their own personalities,” Peter tells.

After a broken arm at the Cowboys was followed by a knee reconstruction in 2003, George put his first-grade career on the backburner for several years until he journeyed overseas for a couple of playing stints. These days he admits that he’s more recognised for fish and chips as the owner of Simply Tops on Palmer Street. “It’s the best fish and chip shop in Australia and I offer footy tips and stories for free now,” laughs George. “But I do have a shrine of

football photos in my shop to make people remember!” George’s most treasured memories from the game include playing alongside his childhood friend and State of Origin legend John Buttigieg in his first Cowboys game, and winning in front of a big crowd. “I’ve made some great friends along the way and loved the challenge of playing too, although these days I’m pretty happy to say I’m in control of my own destiny and have the time to play the occasional game of golf at Willows Golf Club.”

DEAN SCHIFILLITI COWBOYS: 1995-1996 MAIN POSITION: SECOND ROW Originally from Ingham, Dean played for the Illawarra Steelers and South Sydney Rabbitohs before returning to North Queensland for the Cowboy’s inaugural year. He made an appearance in the number one game in 1995, but lasted 11 minutes before being stretchered off due to a recurring knee injury that ended his season. He played the following year, but then moved on from the club to join the Adelaide Rams, followed by Parramatta for another two years.

Now running his own construction business in Townsville called

Formset, Dean says his fondest memories of the game date back to when he played barefoot in Ingham with his mates. He now balances work with his own kids – Shae (15), Lucy (4) and Ben (1) – and spending time with wife Donna, thankful that he no longer has to train vigorously or contend with the media spotlight.

MARTIN LOCKE COWBOYS: 1996-2000 MAIN POSITION: FRONT ROW After six years with the Broncos and South Queensland Crushers, Martin left to sign with the Cowboys in the club’s second year.

He is thankful his decision introduced him to the north where he stayed to raise a family (Candice now 22, Kristy 20, Mitchell 15, and Isaac 11) with wife Melissa, and eventually start his residential building business Martin Locke Homes. He lists the friends made and places his playing career took him as highlights, and admits he misses the camaraderie of being part of a footy team, although the game has changed significantly. “I started my professional career as a full-time plumber and part-time footballer, but it’s quite different now for the guys coming through.

While I do feel for them with so

much public spotlight, they have a fantastic opportunity to set themselves up,” Martin says.“While my time playing for the Cowboys didn’t bring too much on-field success, I’ll always remember the solid support of having a local team in the NRL.”

DANIEL STRICKLAND COWBOYS: 1999-2006 MAIN POSITION: BACK ROW Daniel always enjoys a catchup with the boys, and says the banter at the upcoming luncheon will be “well worth the price of admission”: “The best part about my playing days was definitely the friendships I formed with great blokes,” Daniel says. “I don’t see many of them very often anymore, but when you do catch-up you always pick up where you left off.”

Daniel loved running out in front of a home crowd at Dairy Farmers and remembers the first game he played for the Cowboys when they were going down to Cronulla 32-4.

“I’d spent the first half of the game on the bench and Cronulla were red hot…I finally got my chance on the field and in the first involvement I had I gave away a penalty for offside,” he laughs. Daniel has carried his fitness philosophy into his post-football life; owning and

running Kirwan-based health and fitness centre Fit Solutions. “I love my job and spending time with my wife Aimee and our three kids Ella (6), Max (4) and Leila (2),” he says.

BRETT BOYD COWBOYS: 1999-2000 MAIN POSITION: HOOKER Now the owner of business BNZED Landscaping, Brett’s most treasured part of his time at the Cowboys was playing in front of a home crowd and the camaraderie formed with his mates on the field, something that is difficult to replicate in post-footy life. “It’s not easy catching-up with the boys these days because everyone is so busy, so I always look forward to these get togethers,” Brett says.

Done with putting his body on the line, nowadays the father of two girls – Malaika (6) and Mahalia (3) – and husband to Zita, loves the fact he no longer has to vigorously train (although he admits he had it easy compared to today’s players who have to be “more athletes than footballers”) and has the time to do the things he enjoys: “I love my family life and having the freedom you struggled to find when you’re playing professional football.”

Ideally at least eight weeks prior to your departure date. If you have left things until the last minute it is still important to get health advice even though you may not have time to complete all of the recommended treatments.

WILL I NEED VACCINATIONS IF I’M GOING TO BALI? In addition to being up-to-date with all standard vaccinations, some other vaccinations are usually recommended when

travelling to Bali. Our Travel Health Advisory Service will make recommendations about what vaccinations you need to consider based on your individual travel itinerary and medical circumstances.

IS THERE A RISK OF CONTRACTING MALARIA IN BALI? In most tourist areas in Bali the risk is considered low, however, there may be an increased risk depending on which geographical area(s) you are visiting – it’s wise to get specific advice before you go. In any case, it is extremely important to take precautions against mosquito bites to reduce the risk. Not all insect repellents are equally effective and some are not safe for everyone.

HAVE YOU ALWAYS LOVED PLAYING AROUND WITH FASHION AND ACCESSORIES? My grandmother was the most beautiful seamstress and she used to make all my clothes when I was little. I remember rummaging through her sewing cupboard, playing with her lace trims and buttons, which were a rainbow of pastel colours and flowers.

From then on, I have always had a love of fashion and I still have my grandmother’s laces to this day!

WHAT PATH LED YOU TO DESIGNING ACCESSORIES FOR SEDUCE GROUP? I started my fashion career as a design assistant, working in apparel. [But] I had always had a love of fashion accessories, so when a job came up as the junior designer at Oroton, I jumped at the chance. I worked on Oroton women’s [accessories] for a few years and then went on to design the leather goods for Marcs, Baby Doll and Morrissey… an amazing opportunity! From there, I moved to Seduce, where I have been designing the accessories for both Seduce and BlueJuice for the past four years. We are also launching a new range of accessories for the Katherine label, which is very exciting!

WHAT’S A TYPICAL WORKDAY LIKE FOR YOU? My day starts with a large coffee! Then, first thing when I get to the office, I answer any emails, which have come in overnight − mostly from offshore suppliers. We all follow a strict timeline, so depending where I am in the product development process, I might then go to showings with suppliers to see

their new season ranges of jewellery. [There’s also] researching and designing the Seduce, BlueJuice and Katherine accessory ranges, making amendments to samples that have arrived from suppliers, or – if I am at the final stages of development – finishing costings, photographing the new styles and compiling the new season accessory look book.

WHAT VAST AND VARIED THINGS CAN INSPIRE YOUR DESIGNS? Obviously, designers are inspired by the overseas catwalks and looks happening overseas, but we also draw inspiration from other aspects of life. I have a huge love of vintage, so I scour the markets regularly to find vintage accessories to draw inspiration from. I think all visual aspects of life can inspire me!

WHICH CELEBS DO YOU THINK ACCESSORISE BEST? I am heavily into [American TV show] Gossip Girl at the moment and am a huge fan of [actress] Blake Lively. I love her eclectic styling and the way she puts her outfits together in a quirky, fun way, but still always looks sexy! She is not afraid to wear sequins during the day and I love her confident, fresh attitude to fashion.

DO YOU TRAVEL MUCH FOR WORK? I travel once a year to the UK to see what trends are emerging on the High Street. London is great as you get all levels of fashion, from budget to high-end, and you can see what trends each market is working with. London is also great for markets and vintage too! I travel three to four

times a year to Hong Kong and mainland China to source new materials and see my suppliers – Hong Kong is definitely a favourite!

YOUR BIG ACCESSORY TREND PREDICTIONS? The ‘70s is one of the biggest runway trends… spanning both apparel and accessories. There is a “luxe boho” mood for day, with headscarves, fringed shoulder bags and wedge sandals working as the key items.

For night, think Studio 54 disco, with shoulderdusting earrings, small, glitzy evening bags, and corsages decorating belts, shoes and hairpieces for that glamazon Jerry Hall look. There is also a huge focus on colour – bright and fun, with no rules. The shoe of the season is the platform wedge – they are high and they are hot!

WHAT WOULD PEOPLE BE SURPRISED TO DISCOVER ABOUT YOU? I am addicted to Tarot! I love going to tarot readers, palmists, psychics; you name it! I have even done a Tarot course myself, but am very much a beginner. As they say, I won’t be giving up my day job anytime soon!

FAVOURITE SHOPPING DESTINATION? Brisbane – it’s great to have the pop-up stores, but I also love the Fortitude Valley Precinct, especially James Street, and the Queen’s Plaza in the mall.

My husband bought me a black wool Covers dress for our first Amateurs Racing Carnival. That was 22 years ago after I’d had our first baby. He calls it my “Morticia dress”! I wore it recently – it’s a classic piece.

Nothing stands out because my style is so diverse, but one thing I have learnt is not to wear stilettos in the grass at Cluden after a few glasses of bubbles.

CUTE AT 4 This photo was taken at home where I grew up in Wulguru. My mum did my hair and had a professional photographer come out to our house, but the reason I’m sat on a side angle is because I’d fallen over the previous day and had gravel rash all down the other side of my face!

FARRAH AT 15 I think I was trying to channel Farrah Fawcett here – my hairdryer and Black Silhouette hairspray were my best friends! As embarrassing as this is, the photo was taken at the Cat and Fiddle Arcade’s downstairs ladies’ toilet.

My girlfriend and I discovered there was a draft from under the door and, when we’d walk past, it would flick our hair up like we were on a modelling shoot. So here I am striking a pose!

ROCKIN’ AT 20 This was taken in the late ‘80s when big hair was all the rage! The photo was part of the promo shots I was getting done for my folio to set myself up in the music industry.

I had been singing in my Dad’s band since I was 14 and went on to sing at the Criterion and the Seaview Hotels with my own band Sealed Section. Not long after this photo, I was offered a job with New Zealand band Mr President and headed down south for the next four years. Covering songs like Turn Back Time from Cher, Pat Benatar’s All Fired Up and Simply the Best by Tina Turner, my hair stayed BIG until 1994 when I did the complete opposite and got it straightened!

LOVING 38 I love this family shot of us that was taken four years ago at Toomulla Beach. I met my husband Tom when I was 21 – he’s also a musician and plays in Abbey Road. My sons Tyrone and Jai were 10 and three and we were at my parents’ place with my two brothers and their families. My hair is long here because it’s the easiest option when you’re trying to look after two young kids!

TUNE OUT THE MANY MYTHS ABOUT HEARING LOSS

DON’T LISTEN WHEN PEOPLE TELL YOU INDUSTRIAL DEAFNESS AND TINNITUS CAN’T BE TREATED – THEY ARE MISTAKEN. There are many myths associated with ears, hearing loss and hearing aids. Some old wives’ tales claim that “the larger the ear lobes, the greater the intellect” and “ringing in your right ear means someone is praising you” while “ringing in the left ear means someone is cursing you”. While few people believe these particular sayings, it is common for many people to still have misperceptions about other facets of hearing.

The most common misconception I hear is “there’s nothing that can be done about industrial deafness”. This was definitely true in the past when technology was less advanced and the hearing aids available completely blocked the ears. Industrial deafness is characterised by good hearing for low-pitched sounds and poor hearing for high-pitched sounds. Blocking the ears with older hearing aids meant that access to the good lowpitched hearing was lost, and all sounds had to be amplified rather than just the high-pitched sounds. Because of this, low-pitched sounds were over-amplified resulting in uncomfortably loud low-pitched background noise. Effectively the wearer would actually hear better without

their hearing aids! However, about five years ago, a new generation of hearing aids was specifically developed for industrial deafness sufferers. These devices, called open-fits, do not block the ears and instead allow the wearer to use their own “good” hearing for low-pitched sounds, with the device simply assisting with high-pitched sounds to make speech clearer.

The result is a very natural sound quality.

Further advancements in technology mean that these open-fit devices are now significantly smaller and packed full of features such as Bluetooth. As a result, if industrial deafness is treated early enough, it is the easiest hearing loss to address – the success rate is 99 per cent.

Another myth I hear regularly is that nothing can be done to relieve the symptoms of tinnitus (ringing in the ears). This is partially true as you cannot completely eradicate tinnitus, but there are several things you can do to get some relief, most notably through hearing aids.

The specific origin of the complaint remains unknown, but there are several theories about what causes it. Severe tinnitus is thought to be sourced anywhere from the inner ear up to

the limbic system (emotional area) of the brain.

Irrespective of this, nearly all tinnitus can be associated with a decline in hearing. Research shows that normal hearing individuals experience ringing sounds when in completely sound proof environments. However we are never usually in complete quiet so all the everyday environmental sounds stop us from ever hearing the ringing sound. However, when hearing deteriorates the accompanying everyday environmental masking noises also fade and the ringing is more obvious. In theory, if you restore the hearing through the use of hearing aids, access to all the everyday environmental sounds is regained and the tinnitus is subsequently masked. However, once you remove the hearing aids, the tinnitus returns. From a clinical point of view, I would say that approximately 95 per cent of tinnitus sufferers get relief through hearing aids. If the use of hearing aids does not remove it altogether, then at the very least there will be a reduction in the perception of the loudness of the tinnitus – a much better alternative than believing it can’t be treated!

Swedish is a common style and usually one of the first learnt by a massage therapist. It incorporates long gliding strokes, known as effleurage, with friction and kneading movements to provide a relaxing and stress-relieving treatment.

Deep tissue massage focuses on the deeper muscles to relieve muscle congestion, tension points and usually involves a strong pressure, stretches and works with the breath. Stretching techniques and the use of pressure points known as tsubo are used in shiatsu to balance the energy, known as chi, in the body. Heated stones are used on the muscles to relieve tension, boost circulation and induce a feeling of deep relaxation in hot stone massage. The

treatment delivers a deep massage effect without necessarily using a deep tissue pressure. Reflexology works on the basis that tension or congestion in the body is mirrored with the corresponding point on the foot. The massage treatment that is ideal to aid those with lymphoedema and fluid retention, and may assist sufferers of allergic sensitivities and menstrual concerns, is lymphatic drainage. It targets the lymphatic system in the body which is responsible for the body’s immunity.

It is always there. You know it is there. It will get you. It won’t get me as I am prepared for what’s coming. I prepare all the time at home so when I go to Magnetic Island, I am already fully prepped with my answers.

I am talking about, of course, the hill walk behind Nelly Bay to get to Geoffrey Bay. You see, my wife Linda does Castle Hill just about every day.

Every day, she also says, I should do it. For the life of me I cannot see how me dying halfway (well, maybe not quite halfway) up Castle Hill will help me. I do not like the idea of those walkers/runners going past and sniggering about me going so slow that the bitumen is growing over my feet.

So when we go to the island, my wife is always saying to me that we should walk over the hill to Geoffrey Bay. My answers are flippant at the time but there is also a measure of truth. It is way too dangerous to walk over that hill. The edge of the road, the railing, and the cars are all too close to the pedestrians for anyone’s comfort.

So, during the election, I was able to commit the Coalition to $4.7 million to build a walkway from Nelly Bay to Arcadia. Labor matched my commitment but the whole thing has since descended into politics.

I met with the Federal Minister for Regional Australia, Simon Crean (we support the same AFL team so he does speak to me), and discussed the impasse. He appreciates what has gone before, but will not yet commit to funding this piece of infrastructure for our island.

So I organised a Walk for Our Walkway rally at Geoffrey Bay last month.

This was the start of a Magnetic Island community-led campaign to get funding for the walkway so that people no longer have to wonder how they’ll get over the hill without getting run over by a passing car or bus.

I have been pushing for this for a year now and I do not want to let it go on for too much longer. We, as a whole community, must show some mettle and get behind this push.

And when it happens, there will be no more excuses for me not to walk over that hill.

I have always enjoyed reading aloud to my children. However, sometimes in the business of the end of the day (the baths, the dinner and homework), reading gets put at the bottom of the list. But recently I have focused more on story time again because sitting on the couch together and cuddling-up with a few books has endless benefits.

When a parent sits with their child and reads a story aloud they leave behind the business, the routines and the stress of the regular day and enter the world of the story. It is an escape and a time to bond and share a wonderful moment. Children flourish in this love and parents enjoy the moment and are subconsciously building memories they will treasure.

Children also enjoy the company and calming voices of their parents. Even having an older child read to a younger child opens the door and makes them connect and deepen their relationship.

Recently I scanned my bookshelf and dusted off a book I read with great enthusiasm many years ago that excited me and deepened my perception of reading, teaching me about the amazing benefits a child gains from hearing a story read to them. The book is Reading Magic: Why Reading Aloud to Our Children Will Change Their Lives Forever by Australia’s bestselling author and literacy expert Mem Fox. She talks about the incredible emotional and intellectual impact that reading aloud to children and babies and bonding through books has on their ability to read and prosper in their future life.

All parents want and expect their children to learn to read, but few realise they can get their kids on the road to reading long before they start school simply by reading aloud to them every day. I often encourage parents to read to their baby from day one. It doesn’t matter that they don’t understand the words at this stage because there is a long list of other benefits, including increasing a child’s brain development. The more stimulation a baby has through its sense of touch, taste, smell, sight and hearing, the more rapidly development occurs. Reading does all these. Reading to your child, in fact, starts a whole process: First you read aloud for enjoyment, next your child learns to read. You then have created a life-long reader who then becomes a life-long learner. What a process!

In that sense, reading should not be considered a chore or something to fit in when you can, but an enjoyable part of the day that parents and kids look forward to. Or, as Mem Fox puts it: “When I say to a parent ‘read to a child’, I don’t want it to sound like medicine. I want it to sound like chocolate”.

ANOTHER ST MARY MACKILLOP EARLY LEARNING CENTRE IS SET TO OPEN IN TOWNSVILLE WITH A FOCUS ON LIFE-LONG EDUCATION.

Construction is underway for a third Catholic Early Learning Centre for the Townsville community. Located next to the Good Shepherd Catholic Community School on Allambie Lane in Rasmussen, it is anticipated the new St Mary MacKillop Early Learning Centre will open by next month.

With the canonisation of Blessed Mary MacKillop in October 2010, the Townsville Catholic Diocese and Catholic Education decided to re-brand the former Mary MacKillop Childcare Centres to St Mary MacKillop Early Learning Centres. The new name and logo better reflect the service provided, which now includes a kindergarten program in some centres in addition to the formal early learning programs.

Townsville Catholic Education director Dr Cathy Day says a Catholic education is about life-long learning. “Children who attend our St Mary MacKillop Early Learning Centres receive a quality early years education program and are also introduced to the Catholic faith and values,” Dr Day

explains. “It was a Townsville Catholic Diocesan initiative in 2003 to branch into the provision of childcare to support the growing needs of families in our communities and we are very pleased that almost a decade later we are able to continue to expand this service throughout the Diocese.”

St Mary MacKillop Early Learning Centres are supported by the Townsville Catholic Diocese and Townsville Catholic Education. The centres are also located in Mundingburra, Kirwan, Ingham and Palm Island and cater for babies aged from six weeks to six-year-old children. All centres are staffed by qualified early years professionals and the kindergarten program is run by a qualified early childhood education teacher.

FENNEL SAUTÉ 2 large fennel bulbs, finely sliced 1 onion, finely sliced 100ml olive oil 1 tablespoon of fennel seeds, toasted 100g pine nuts, toasted 50g raisins, chopped Fennel fronds SAUCE 2 blood oranges juiced (or 200ml blood orange juice), strained 1-2 tbsp white sugar Lemon to taste Sea salt TO SERVE Extra virgin olive oil Fresh or frozen broad beans approx 6 per person, blanched and peeled Cypriot black sea salt Micro rocket/micro herbs

1 Make the salt crust: toast fennel seeds and grind 2 tablespoons with salt in a spice grinder or mortar and pestle, cover skin generously with the fennel salt.

2 Sauté finely sliced fennel bulbs with onion in olive oil until soft. Add extra toasted fennel seeds, raisins and pine nuts. Add blanched chopped fennel fronds. Set aside.

3 Peel, blanch and shell broad beans season and toss in olive oil.

4 In an oven proof frypan cook the fish skin side down in grape seed oil, holding firmly down with a fish slice until the skin is crisp.

Turn the fish and finish in a 180C preheated oven for 5-7 minutes.

5 Reduce blood orange in a pan with enough sugar so it has body. Finish with a squeeze of lemon. Taste to make sure it isn’t too sweet and season to taste.

6 To plate up, sit the fish fillet on a bed of fennel sauté. Pour some blood orange sauce around the fish and ‘drop’ in the EVOO. Scatter broad beans in sauce and around the plate and garnish with Cyprian black sea salt and micro rocket or herbs.

FALLEN MILK CHOCOLATE PUDDINGS MAKES 6 Unsalted butter softened for greasing Plain flour for dusting 350g couverture milk chocolate buds 4 eggs 125ml pouring cream 50g unsalted butter at room temperature cut to 1cm cubes

1 Grease 6 Ă— 125ml dariole moulds with softened butter using a pastry brush, dust with flour and refrigerate until needed.

2 Put chocolate in a heatproof bowl and melt over a saucepan of simmering water, stirring until melted and free flowing.

3 While the chocolate is melting, break eggs into a bowl and whisk gently together.

Bring cream to the boil in a saucepan over a medium heat, set aside and cool for 5 minutes.

4 Add several spoons of melted chocolate to the egg and gently mix through, then slowly, gently mix through the rest of the chocolate.

5 Add the cream and gently mix through. Add the cubes of unsalted butter and mix until melted.

6 Cover the mixture with cling wrap and leave to set for an hour in the refrigerator until fudgy.

7 Spoon the mixture into the chilled dariole moulds filling almost to the top. Refrigerate for 30 minutes or overnight.

8 Preheat oven to 200C and evenly space moulds onto a baking tray and bake for 15 minutes. The puddings are ready when the edges crack and there is a soft dome shape in the centre.

9 Allow to cool for 3 minutes before carefully up-turning puddings onto serving plates.

For a luxe finish garnish with gold leaf.

10 Serve with crème anglaise and raspberry coulis.

TOGETHER ON THE FAST TRACK JONATHON WEBB Last year was my first year in the V8 Supercars Championships. I was running with the well-established Dick Johnson Racing, so I just jumped in and drove, which made my life easier. A few things went on last year that meant we could no longer guarantee our tour position in V8s, but we’d already committed as a family and bought the race car, the truck and the racing licence, so Kobe and I made the decision to create our own team. We had a big empty workshop in January and now we have what resembles a race team and some decent results.

Kobe is handling all the management and keeps the business going and she’s thriving, which is great because I don’t have to stress – I know while I’m away racing that it’s all happening back at the office. All eyes are definitely on us for taking on the big project of starting our own team from scratch after one year of racing in the category… I think we’re the only couple in pit lane running our own V8 team. So far this year we’re not quite as far up the front as what we would have liked and not quite as competitive – we’ve dropped back to about 18 in the Championship, but there’s a long way to go until the end. Our goal is still to finish in the top 10, which is where it was at the start of the year.

We just need to work hard.

IT’S BEEN A BIG YEAR SO FAR FOR JONATHON AND KOBE WEBB. NOT ONLY DID THE LONG-TERM COUPLE MARRY IN JANUARY; BUT AFTER AN IMPRESSIVE DEBUT SEASON LAST YEAR, FORD DRIVER JONATHON AND KOBE – A MULTI-MEDIA DESIGNER – STARTED THEIR OWN RACE TEAM CALLED TEKNO AUTOSPORTS.

KOBE WEBB It’s been a pretty big year for us – we were married on January 22, then had to move all our racing gear and set-up the new place, plus we moved house, employed a team and got a new puppy. We had a really good start to the racing year in Abu Dhabi, but since then we’ve sustained a bit of crash damage so we’re working on improving our results. Being the operations manager, my role is to put us in the best position for us to do well: The boys are under so much pressure that it makes a big difference when they know the business is running smoothly. It has been a big learning curve for me getting my head around all the terminology: The boys will talk about tyre pressure and suspension for hours and it took me a while to comprehend how important these things are when I’m used to just driving my car out of the garage and putting fuel in it! I’m pleased to be involved with the business because it consumes so much of Jon’s life and if I didn’t understand the racing world it would leave a big gap in our relationship. We are basically trying to enjoy the ride at the moment because we’re getting to travel to some amazing places and meeting some great people – best of all, I get to do it with my husband.

Motorsport definitely wasn’t one of my first loves, but it’s certainly grown on me!

2010’S V8 SUPERCARS CHAMPION JAMES COURTNEY IS NOT LAPPING THE SAME ON-TRACK SUCCESS AS LAST YEAR, BUT THE RESOLUTE SPORTSMAN IS STILL AIMING FOR THE TOP FIVE. HE’LL USE TRACK TIME TO TEST NEW TECHNIQUES, WHILE SAVOURING OFF-TRACK TIME WITH WIFE CARYS AND THEIR TWO YOUNG CHILDREN.

JAMES COURTNEY There was always going to be an adjustment period [swapping from Ford to Holden this year], but I would have liked the results to be better than what they are. We have a bit of work to do with the car and there’s been a big change of personnel within the team, which is great as we have a fresh set of eyes looking over things. At this stage we’re working towards the Championship for next year… it would be ideal to get back into the top five this year, but our main goal is to prepare for a full-on assault in 2012! I will now put everything into going for outright race wins. Not having a Championship to worry about means I can take a few more risks, which is good because we can learn a lot more about the car. I love racing and most mornings I wake up pinching myself that it’s real and that my passion is the way I earn my money – I’m so lucky to be able to do it. There’s a lot of travel involved, but the good thing is when I’m at home, I’m 100 per cent at home. I can take Zara (4) to Dreamworld and Movie World during the day, and now Cadel’s (named after James’ sporting hero Cadel Evans, 18 months) big enough he’s coming too. Carys is a great mum and comes to all the races with me that she can. She’ll be in Townsville with Zara, which will be fantastic to have them cheering me on.

CARYS COURTNEY I had nothing to do with motorsport when I met James. I have three older brothers, but they were all into football, so I’ve learnt a lot! In only 10 years I’ve seen James go through four different categories of racing and it’s been amazing. I’ve been in all the garages and James has taken me from the back to the front and explained everything, so you do become a part of it. What surprised me was how much is involved – it’s not just the driver. When I take people through the garage or sit next to strangers at dinner they start asking me questions and they’re always fascinated by how many support people are involved [James’ Toll Holden Racing Team has 97]. I don’t think motor racing is glamorous in any way at all! Along with fast cars comes a safety aspect too, so I think that’s something to keep in mind and it definitely gets the nerves going watching him! We have shared so many highlights though, with one of the most memorable being the finale at Homebush last year – after 10 years of being with him, I know how hard you work for a Championship. Any good results are lovely, but in the world of motorsports you’re up and down all the time – that’s why a solid foundation is so important.

Explain your job for us... I’m the manager of the aftermarket sales and new car delivery department at Parry Nissan. Following a new car purchase, I’m responsible for organising any extra accessories and vehicle protection that’s required to be fitted to the vehicle in time for delivery. What skills do you draw upon daily?

I’ve been told talking is my greatest skill – I love to chat and can talk to anyone about anything!

Also, attention to detail, quality control and – most of all – a commitment to customer service are key attributes. How long have you been at Parry Nissan? I’ve been a part of the team here for more than six years, starting in 2005 in

administration, and then progressing to the new car department in 2006. I’m in my seventh year now so, needless to say, it’s a great place to be a part of. What do you enjoy most about your job? As I’m a people person, it would definitely have to be interacting with my customers each day and making the purchase of their new vehicle as enjoyable as possible. I also value the many people I work with as I spend more than 40 hours a week with them. Best career advice someone has given you? My Mum’s saying “whatever you do, do with all your might, as things done by halves are never done right”.

What exactly does Camp Quality do? We believe laughter is the best medicine so we host a series of camps and fun days throughout the year where children living with cancer, and their families, are treated to trips away so they can forget about being sick and just be a kid. We also offer financial support to families and work closely with hospital social workers. How long have you been involved? My family and I moved to Townsville from Darwin in January last year. I have always loved working with volunteers, so I was attracted to the work of Camp Quality. I started here as the office administrator in a relief position and became the area manager earlier this year – I look after 62

Mackay to the tip of Cape York and west to Mount Isa. Have you been on any camps yet? I was fortunate enough to go on my first camp to Mount Carbine on the Atherton Tablelands where we took some five to 12-year-olds. They were all amazing kids and really came out of their shells after five days – they didn’t judge each other and had the freedom to have fun. What activities are offered? Depending on the ages of the kids, it could be anything from craft activities to swimming and rock climbing, or something more adventurous like chopper rides, joy rides in military vehicles, ballooning and visiting the theme parks on the Gold Coast. What do you

do in your spare time? If I’m not at work, I’m usually driving my children (7, 11 and 12) around for rugby, football, basketball or guitar lessons – my only ‘hobby’ is getting my children to their extra curricular activities! Actually that’s not true, I do get to listen to music while I’m in the car – I can’t do that in the house because I have to compete with the sports channel and cartoons!

A DECADE OF HEALTHY FIRSTS PASSIONATE ABOUT PLACING MINDS AND BODIES FIRST TO ACHIEVE WELLNESS AND BALANCE, FIRST THINGS FIRST RECENTLY CELEBRATED ITS TENTH BIRTHDAY. DUO CATCHES UP WITH DIRECTOR MEGAN FLUX TO LEARN MORE ABOUT THE INDUSTRY PIONEER THAT’S HELPED THOUSANDS TO LEAD BETTER LIVES. How did First Things First Wellness Centre (FTF) come about?

Ten years ago FTF was created to offer a high-profile upmarket massage centre where people were comfortable sending their family and friends. We were definitely the pioneers in this industry. We wanted to establish a place that offered people the space to relax, rejuvenate and begin their journey to complete wellness and focus on clients’ health from the inside out!

What are some of the major milestones over the decade?

Relocating the two centres from Kirwan and the city into one at the Rising Sun Shopping Centre in 2009 was a fantastic move. Also, introducing endermologie to our range of services was a big part of our expansion. The introduction of the Ultra Lite weight management program has been another growth area, and our busy clients have recently benefited from being able to book via our new website. A big change for me personally was going from a partner to outright owner in 2010.

Are you finding that people are embracing the notion of wellness more now than they did 10 years ago?

There is definitely more awareness around wellness and health and people are taking a more preventative approach to their health. I think it’s important for people to find balance in their hectic lifestyles and they are increasingly turning to massage, good nutrition and a healthy body to get them through everything life throws at them.

Are there any occasions that are particularly memorable?

Every year we hold a staff conference/team building day and a few years ago we did an Amazing Race around Townsville. Our staff were broken into teams competing against each other and it was hilarious to see them hitchhike, bend into the weirdest shapes to get into the back of cars, suck

the inside out of an egg, and generally see what level we would go to in order to win! I guess you could say we are a competitive bunch!

How has FTF made a difference to lives?

Not long ago I helped a man who’d had two heart attacks in two weeks. I think I got him though a very difficult time by assisting him with his weight loss and getting his life back on track. He is still grateful to this day and I will always remember him. We have helped a lot of people who are clinically depressed, undergoing cancer treatments, or are generally unwell and unhappy. It is a very rewarding experience seeing the transformation of such clients. At times you also feel like counsellor because people tend to open up and let go of everything that is holding them back.

Can you tell us a bit about Megan outside work?

I am a Townsville girl, born and bred, who has a wonderful husband, Aaron, and a gorgeous son called Boston who is nine. I enjoy a laugh with my girlfriends, a great barbecue, being active and socialising. I’m very grateful for the love and support my family give me so I can achieve my personal goals. I love playing basketball, going for a run, eating dark chocolate and doing anything spontaneous!

What would you say to someone who’s not feeling the best and doesn’t know how to improve?

I would strongly suggest that they book a free consultation. They will learn what steps to take to feel better than they have in a long time. Making the first call is the beginning to unleashing the power of health and wellness within. Remember, you only have one body and it is important to be the best version of you!

BIG STEPS FOR YOUNG MUMS BEING A MUM IS BOTH CHALLENGING AND REWARDING. BUT FOR THOSE WHO HAVE THEIR FIRST BABY AS A TEENAGER OR YOUNG ADULT WITH FALTERING FAMILY SUPPORT AND LIMITED WORK OPPORTUNITIES, THE CHALLENGE IS THAT MUCH TOUGHER. DUO DISCOVERS HOW LOCAL ORGANISATION IN-STEP IS STRIVING TO HELP YOUNG MUMS FIND THEIR FEET. EMMAH SMITH, 17, young mum Kohen is 14 weeks and two days. When I first had him it was hard and I was up every 10 minutes – my life just completely changed. It was like I had instantly read 1000 books on growing up and knowing what to do. My friends have been very supportive, but there have been some hard times. There have also been some good times, and suddenly I have so much more to live for. Being part of the IN-STeP program has helped a lot – even just having people to come in to talk to and get advice. The young mums involved are a mix of ages and their babies’ ages vary too, so there’s so much information shared between us. It can get quite raw at times with all the guts and glory.

The girls in the program have become really good friends and there’s no need for anyone to feel uncomfortable. As well as getting together and sharing stories, we have also learnt practical and emotional skills like how to combat domestic violence, how to do internet banking, interview tips and things like that – it’s about getting us back into the workforce. I used to want to work in aged care, but after having Kohen I now want to do youth work – I just want to do everything I can to help kids. If I had to give advice to other girls who fall pregnant young, I’d tell them having a baby is the best thing you can do in your life. There are rough times, but it works out in the end so keep your head up – don’t have a negative view about it because everything else will go bad. Just because you have a baby at a young age, who’s to say you can’t go to work? You can still have the life you want and achieve your goals; it’s just that your priorities have changed.

DEAN WILSON, IN-STeP manager I’ve been at IN-STeP for five years now, but this is the first time we have run the Young Mums program. It started in January and was supposed to go for 12 months, but because of the recent natural disasters it was shortened to six months. In this time we have managed to help 28 first-time mums who were all under 25 and not working. The majority were 16, 17 and 18, but there were some in their early 20s. The aim was to create a social network where young mums would meet other young mums, and continue that interaction outside our weekly sessions so they could share their experiences and learn from each other. We also touched on a range of life skills to enhance their ability to find work, and even just did basic things like pampering them, the way all mums should be treated. Some of the young ladies are in rough circumstances – they might come from disadvantaged backgrounds or their partners may have left them and they feel on their own.

By pampering and counselling them they are in a much better headspace, which means the baby is too and life is better. Some of the girls will come in more than once a week to have a chat and we love to see them here because it means they are getting the support they need. We are hoping to continue the program and open it up to more young mums in the region, but we need community support to make it sustainable. Postnatal depression is becoming more recognised and, from that point of view, we want to get these young people past as many hurdles as possible and give them the support they need to look forward to the future.

HOW YOU CAN HELP IN-STeP is a not-for-profit community-based organisation that works with at-risk kids. Management is currently looking at ways to raise funds to continue the Young Mums program into the future, including starting a business the participants could operate.
