Love you Mum. This edition is full of Mums. It’s all got to do with Mothers Day on the second Sunday of the month. I was thinking about my Mum in Ipswich and how she wants to sell her home and move into a retirement place and how hard it is to organise all of that for someone of her age. Mum lives very close to Booval shopping centre and the last time we visited I realised that just about every one of her neighbours was elderly and lived alone on a quarter acre block of land. In the whole block that was about twelve people. It wasn’t always like that. There used to be lots of families with kids but as the houses weren’t four bedders with a theatre room they moved to the new suburbs further out and built mini mansions. Not that there’s anything wrong with that. Towns and cities need development to provide employment,

stimulate retail and contribute rates so we can all have the quality of life we expect. But along with growth, I think it’s time to have another look at how we’re under utilising our big house blocks, throughout our inner suburbs. Seems to me that, as finance becomes harder and harder to get, families could consider the financial, environmental and social benefits of renovating and expanding the family home and leverage the land value they already have. I’d like to know your thoughts on this. I imagine these blocks could have multiple dwellings on them. There’d be savings right across the board. Shared transport. Shared child care. Shared aged care. Shared health care. And they’d be much easier and way more cost effective for the City Council to provide services. And that could possibly reduce charges for all ratepayers. It’s an idea. Our first pregnant cover girl, Nikkeah (30) is a stay at home Mum to two gorgeous little girls, Bailie (5) and Tayla (2) with another bundle of joy due to arrive in the next few weeks. To make the shoot even more memorable we photographed Nikkeah with her girls together - and don’t they look cute!

Using Osis Flatliner and Cloud Nine straightening irons straightened the roots to midlengths, leaving ends natural for fuller effect. Hair tied in a high ponytail using Osis Elastic to smooth and hold it in place. Teasing the ends of the hair created volume then twisted the hair around to create a topknot. Pinned the topknot in place then teasing to stretch the topknot a little higher. Finished with Osis Session hairspray and Sparkler shine spray.

Prepared the skin with Young Blood mineral primer then applied Sun Kissed liquid foundation and Warm Beige loose powder foundation, finishing with the hi-definition powder in Warmth. Created a small line in Chestnut eyeliner pencil on the upper and lower eyelid. Pressed eye-shadow quad Shanghai Nights was used on the base of the eyelids blending in Bamboo pressed eye-shadow. Dusted eyelid with Golden Beryl in Crushed eye shadow finishing with Mink Mascara. Tropical Glow creme blush on the cheeks for a natural fresh glow. Tangelo lipstick emphasised the lips.

DESIGNERS BRIANNA PIKE & ANNA HARVES FASHION AND INTERIOR TEXTILES BRAND SIXHANDS HAS EXPLODED ONTO THE DESIGN SCENE IN A RIOT OF COLOUR. INTERVIEW CARLA CARUSO

WHAT MADE YOU BOND AS A DUO? Brianna: We were [both] studying fashion and textile design at UTS [University of Technology, Sydney]. It wasn’t until a few years after graduating from our degree, while working in the industry, that we decided to go into business together. The bond started with a common passion for the ultimate workplace – after having been dissatisfied and uninspired by the companies we had been working for – a common drive for creative ideas and thinking, and an affinity with textiles, fashion and design! WHY DO YOU TACKLE SUCH A WIDE RANGE OF DESIGN AREAS? Anna: Previously our business focus was selling oneoff artworks to fashion labels on an exclusive basis. Introducing an interior-based brand allowed us to express Sixhands’ unique style, without being in direct competition with all of the fashion brands we continually work with… We work tirelessly – a little hyperactivity goes a long way! – sourcing quality Australian production, continually evolving and refining our wallpapers, fabrics, rugs, cushions, lampshades, and wall art. We are currently in the midst of designing and producing our new range, which includes a new outdoor fabric, napery range and some other rare gems. IS IT RARE TO BE AN AUSTRALIAN-OWNED AND OPERATED TEXTILE DESIGN BUSINESS? Brianna: Yes, it is very rare, probably because it is so hard to produce products in Australia at a competitive price. It’s a challenge to compete with other brands that are producing their products off-shore. We value ethical and sustainable business practices and we are proud to produce within Australia. ANY DESIGN IDOLS? Brianna: Sig Bergamin – he’s an amazing architect and designer. We recently saw a feature on his Sao Paulo house, which was so colourful and eclectic. He is generally stoked and inspired by people, colour and the incredible keepsakes he collects in his world travel. He is a breath of fresh air! WHY DO YOU ALSO OFFER A BESPOKE SERVICE? Anna: There is definitely a renewed interest in personalising products... This is evident across fashion, where you can construct your Havaianas

in whichever colour combination takes your fancy, to stationery, including notebooks and gift cards, to sports equipment, where you can build your bike from the ground up, to home décor, where you can choose a Sixhands rug/wallpaper/wall art in custom colours and accessorise with coordinating décor products! HAD ANY PINCH-YOURSELF MOMENTS? Brianna: We were approached by Peri Mooney, a stylist for Channel 10 to be involved with The Renovators [and] be a stockist for the show’s 10,000sqm MasterChef-style “pantry” full of interior design products. It was great to hear [judge] Peter Ho declare: “I love that wallpaper”, referring to [our] Skater wallpaper in one of the winning designs… A bigger pinch-yourself moment has to be our appearance on Designer Travel, a unique, international TV series that explores destinations through the creatives who live in them – giving an insiders’ perspective of the city. The creatives have included the likes of [industrial designer] Marc Newson and a bevy of incredible talent that Sixhands were honoured to sit alongside. WHICH ICONIC BRANDS HAVE YOU WORKED WITH? Anna: Our textile designs have graced the catwalks and stores of many Aussie brands including Camilla & Marc, Willow, Bianca Spender, George Gross & Harry Who, Shona Joy, Wayne Cooper, Ginger & Smart, Hussy, One Teaspoon, Charlie Brown, Peter Alexander, Alannah Hill, Manning Cartell, Bonds, Sportsgirl, Tigerlily, White Verve, and Wheels & Dollbaby, to name a few. We have also designed prints for accessory brands such as Basil Bangs, and prints for many surf/swim labels including Misfit, Insight, Baku, Bond-Eye Swimwear, Quiksilver and Rip Curl. It’s an honour to work with such a talented local fashion industry and we have [also] been extremely lucky in the calibre of interior clients the Sixhands brand attracts. YOU DO ECO THINGS TOO, LIKE USING SOYA-BASED INKS AND SUSTAINABLE PAPER STOCK. WHY? Brianna: We have very strong ideals on the long-term and the impact of every little thing we do and how that affects our environment. We will always take the eco option where it is available.

Granny! Just don’t call me

WHEN GLENDA WORRELL became a granny at age 49 she was, as she put it ‘in denial’. She says “I thought I was too young to be called Nana. But I realised that while you think you can’t do it all, you actually can. I enjoy my work life and I love watching my grandkids grow.” Glenda is Nana to five children under the age of three and a half plus one on the way. Luke 14 months, Flynn 11 weeks old, Harry 3½, Charlie 2 and Mila 2. Glenda owns Elite Properties, a company established four years ago now employing eight staff. When it comes to her Nankids, Glenda couldn’t be prouder. Her company website contains a page with photos of the children to share important milestones. Her season pass to Reef HQ is well used as these children are fascinated by the fish. The Fairfield Waters lake walking paths and the waterpark on the Strand are also favourite spots. Glenda relishes being a different kind of Nana who invites the children to ’Nana’s office’. Her own mother was an involved grandparent teaching Glenda’s four kids to knit, bake and play the piano – leaving with the now adult children a still deep respect for older people. Elite Properties offices has a children’s corner with stickers, toys and books to entertain both her Nankids and her clients children, to allow that necessary peace while preparing to sign a contract. “I meet lots of parents every week as [both] clients and staff. I employ three ladies who finish their working day at 2:30pm to be there for children in the afternoons. A lot of mums don’t want to work beyond school finish and yet, have a lot to contribute to the workforce! JACKIE ALFORD VALUES the lesser formality of being a contemporary Nanna with grandchildren Georgia 12, Olivia 10, Lili 9 and Fletcher 7. She says, “We interact; talk, play and I even listen to their music and dance with them. The girls also love it when I let them practice their hairdressing and make up skills on me which wouldn’t have happened back in my grandparent’s day. “ Jackie works four days a week as a Client Services Officer in the Financial Planning Department at Moore Stephens Queensland. Being available on a weekday has strengthened Jackie’s ties with the four children. “A little extra free time comes in handy if I need to swap a day off to attend one of the grandchildren’s school events like the Mother’s Day Morning Tea.” This Nanna enjoys a full life by swimming and walking up to six times a week, reading, movies and socialising with friends and family. “I love spending time with my grandchildren and so far they love having me around and even want me to go with them on holidays. “I know that there’ll come a time during their teenage years when it won’t be ‘cool’ to have Nanna hanging around. I’m not looking forward to that time.” Jackie cheers on the Nankids at sporting events and school celebrations. “Their faces light up when they see me there. I feel so special.” Time at home is often typified with board games, watching ‘Real Steel’ five or six times, baking a cake or a batch of biscuits and sleepovers followed by pancakes or scrambled eggs the next morning. “I’m so fortunate that we all live in the same town and I can see them often.”

JANE MIGUEL’S OLDEST three grandchildren, Madeleine 16, Margot 14 and Adam 11 call her Jane but to Ronan 3 and Jack at 3 months, she’s Grandma. Jane says “My children also called their grandparents by their first names. Ronan likes to call me Grandma.” She grew up in a family of seven, is a primary school teacher for years 6 and 7 at Railway Estate State School and teaches Spanish at James Cook University.

Conversing with young people comes naturally to Jane. “The children often pop in with their parents; Adam on his way to the sports field. I listen to them and ask lots of questions.” As a teacher Jane appreciates the developmental stages of her grandchildren. “I can stand back a little and have more of an objective view than I could with my own kids.” The branches of the family all live in Kirwan within a half kilometre radius of each other. “The two girls are spreading their wings as they are getting older and we are seeing them less. That’s a good thing though. It’s what they should be doing. Being a grandparent brings more to Jane’s role as a teacher. I have realistic expectations with kids having now taught all primary ages. It’s important for children to be good to each other and use their manners. But I don’t overreact about behaviour.”

Jane gets a tremendous kick from the Nankid’s differences in personality. “Ronan is a chatterbox and is very curious about the world around him while Adam loves his sport and being involved.” Jane and Ray, her husband of 38 years, regard themselves as modern grandparents. KAYE RILLEY’S GRANDDAUGHTERS Heidi, three and a half and nine month old Taylah know her as Nan Nan. She says, “The word grandma; it’s from the past.” Spending time with the Nankids includes shopping, going out for lunch on Sundays, sleep overs and dancing together. “Heidi loves what she calls her ‘sleep party over’ and Pa is the bees knees. We love to have time with the children. Taylah enjoys dancing with us and we go for walks along the Strand and take a picnic. “We took them to the march on Anzac Day this year. I think it’s important for little ones to grow up knowing about the day’s meaning.” For Kaye 60 is just a number, but in the workforce, she’s finding maturity is a bonus. At Northwest Flooring, Kaye is a valuable part of the business. She handles sales, purchasing, stock control, quotations and onsite measures for the company. “I am in the warehouse with the boys checking paperwork and onsite measuring for our Department of Housing contract and if I have the time, I’ll even make the boss a cuppa.” Kaye says with good humour. “I bring a lot to my employer by knowing myself really well. Granny’s are stable and appreciate the fact that we are employed.” In turn a growing number of employers are nurturing flexible work hours for families. “I can step in and care for the children if needed. I am lucky. I have an employer who is flexible to the needs of my family and it’s good because there are a lot of Grans working these days.” Having Nankids has brought more to Kaye’s working life. “I have the incentive to stay in the workforce a bit longer so that I stay young for the children. I keep my mind active.” Kaye and her husband Charlie moved from Strathpine to Townsville three years ago to be with family. A tradition of the last few years is where Heidi and Kaye bake the family Christmas cakes. “Heidi gives the all-important last stir to the batter.” L-R: Heidi, Kaye and Taylah.

ery soon Michel will be heading down a red and dusty track, back to where his career was just dawning. After family and food, one of Michel Flores’ other known passions is motorbikes – a love affair that has seen the French-born and trained chef and owner of Michel’s Restaurant on Palmer Street travel to the backblocks of Peru, Bolivia, Vietnam, Morocco and Italy on two wheels. After officially stepping away from the family restaurant he and wife Jennie started and ran for 18 years (leaving it in the very capable hands of his talented partners Jason Makara and Craig Smith); Michel will shortly be blazing a trail to the tip of Cape York on his GS BMW. He will then shoot back down the iconic Birdsville Track, before returning to his much-loved Townsville home. “I certainly plan to visit the old Maree Hotel which was my very first

job in the outback (not far from Cameron’s Corner and the Birdsville Track) again after 40 years of not working there,” Michel tells over a late afternoon coffee, the tropical sun bathing everything in its orange veil. “I can’t even begin to imagine how much has changed.” As the sun sets on Michel’s physical involvement in the industry, much has evolved and few would argue that he and Jennie have earned the right to bask in the warm glow of success that years of sheer hard work have afforded. “When we first started here, it was never a glamour industry,” Michel says who bought his first restaurant, L’Escargotière, in Townsville in 1974 with his brother. They’d migrated to Australia from France with the family when Michel was only 16 – two and a half years into an apprenticeship that started at the tender age of 13. He was very fortunate to

have the opportunity to finish his qualification in Melbourne under respected French chef Claude Moreau. Once completed, he then set-off for the bush chasing money through cooking at outback construction sites, and then followed his family to Townsville where he cheffed in several places, including the celebrated Travelodge on The Strand (in those days diners could watch dolphins and turtles swimming from the restaurant’s window, particularly during the famous Sunday breakfasts). “It’s always been hard work and long hours, but I’ve always enjoyed the industry. Like anything, it has its ups and downs, but we feel satisfied that – after positively loving Townsville and making it our home – we have witnessed the town and the rest of the industry growing, and we’ve been very fortunate to represent Townsville in various culinary accolades.”

Some of these triumphs have included entry into the American Express Hall of Fame after being voted Best Restaurant in Townsville for three consecutive years; taking out the North Queensland Restaurant and Catering Awards across several years in several different categories, and even winning the prestigious North Queensland Training Award two years in a row for the Flores’ involvement in training and developing apprentices. This commitment was also recognised when Michel was awarded the Lifetime Achievement Award from the Queensland Restaurant and Caterers’ Association. But while Michel is content with the mark he’s made in a professional sense, it’s clear that family is his priority. With his two daughters Camille and Eloise (now 30 and 23 respectively… “Still no grand kids” he laments); he can still remember being concerned that he and wife Jennie, who has always run front of house since they met and formed their strong life and working partnership, were spending too much time in the business. “We’d have all sorts of different clients come in of different professions and businesses – and I’d often converse with them to see how much time they were spending with their kids, and soon realised everyone was in the same predicament,” Michel tells. It eventually became clear that restaurants and family complemented each other perfectly, with the girls playing at the establishments when they were younger and working there when they were old enough. In fact, many members of the Flores family have assisted with the business over the years, and it was actually in Michel’s first restaurant that he and Jennie first locked eyes. “Jennie was a customer and I’d noticed her in the dining room,” Michel shyly smiles. “She

mentioned to the head waiter she might have lost her ring on the floor. I told her I would be cleaning the next day and that if she left her number I would contact her. What I didn’t tell her was that I’d actually found it earlier that night, but wanted a good excuse to see her again.” The couple’s first restaurant together was Le Rendezvous, situated on Flinders Street East above Lang’s Hotel, which is now the Mad Cow Nightclub. “In those days it had an old wrought iron balcony and the fishing boats and trawlers were anchored in the along the creek. I would wander across the road to get fresh prawns, bugs and fish from the day’s catch for that night’s service,” Michel recalls. “When Le Rendezvous closed (the couple wanted to try something different), we actually had a letter from the chairman of Qantas in Sydney saying it was a ‘sad day for Townsville the day Le Rendezvous Restaurant closed’.” The next venture saw the creation of C’est Si Bon, originally located opposite the old Townsville General Hospital before it eventually shifted onto Gregory Street. But then, after two years, the couple decided to have an even bigger change of scenery, taking their small family to Hamilton Island for Michel to be head chef at Frenchy’s and Jennie to look after front of house. “It was a nice change from working in city restaurants, but we got homesick so came back to Townsville and, after a few months, opened Le Boulevard Brassiere on Flinders Street – a fine dining French restaurant that was very popular for seven years,” Michel recalls. It was after that success that the couple decided to make the risky decision of purchasing the Taylor Marine Building on Palmer Street – still considered to be “the rough end of the city”.

That big building became Michels – the final frontier for the adventurous restaurateurs. Now after nearly 45 years in the restaurant industry, owning five popular Townsville restaurants and training and mentoring almost 50 chefs, Michel will take a backseat, but won’t completely reverse out of the industry he adores. “I’ll always have something to do with the industry, one way of another, but maybe not on a daily basis,” Michel tells. “I’ll be more of a mentor and a consultant… a role I seem to be doing already, as a lot of my past apprentices are often calling for advice! The biggest tip I can give them is to be consistent with their food. You are never going to please everyone and you certainly need to have a thick skin, but if they are passionate enough, they too can realise their dream of being in charge of a kitchen, then owning their own restaurant, and maybe then the property their restaurant is situated on; all the while bringing up their family and making a living. It is a lot of hard work and you need to be on top of your game all the time, but it’s worth it and Jennie and I are very grateful for the support we’ve received over the years from our customers.”

OPENING EARS TO NEW TECHNOLOGY

An annual conference in the US has showcased a wealth of new, ground-breaking technologies for the hearing impaired. Following on from my column last month, I have returned from the annual conference of the American Academy of Audiology (AAA). There were so many ground-breaking developments on show there that I will not be able to list them all. However, I will detail the most interesting ones over the next few editions of DUO. For me, the most exciting and revolutionary developments to come out of the conference included a bone conduction hearing device called SoundBite, noise protection technology, the Digital Ear Impression scanner (mentioned in a previous DUO edition), and lastly, probably one of the most ground-breaking developments in five years, the second-generation, 24-houra-day, permanently worn hearing device called Lyric. Today though, I will talk about SoundBite. The SoundBite is a bone conduction hearing aid, which works by vibrating the skull to directly stimulate the inner ear, instead of going through the ear canal. It is quite an effective method of hearing and we all hear in this manner every day when we talk. Our voice box vibrates our skull when we speak, and if you completely close off your ear canal with your finger or via an earplug, you will still hear your voice quite clearly

and loudly. Bone conduction hearing aids are designed for two purposes: for people who are unable to wear any devices in their ears and for patients who have completely lost the functional use of one of their ears. I have several patients who are unable to wear hearing aids at all, because they have completely lost their pinnae (the external part of the ear) or ear canals because of skin cancers, genetic cranial abnormalities such as Atresia, facial or throat tumours, growths within the middle ear system, physical trauma, and beyond. The absence of the pinnae and ear canal means we have no means of delivering sounds through the outer and middle ear system. For these patients, they basically have two options: surgically-implanted bone conduction, which sits at the back of the skull using a bone-anchored hearing aid (BAHA), or a bone conductor hearing aid which is held in place by a headband. Both of these options have their limitations. Firstly, they are quite unsightly and obtrusive, so cannot be worn discreetly. Secondly, fitting a BAHA means frequent trips to Brisbane for the surgery and adjustments, as

well as running the risk of infection post-surgery and afterwards. The SoundBite works by attaching the bone conduction to a dental plate, which rests against the teeth and vibrates the skull through the teeth and jaw. The microphone, which picks up the sound is a very small, essentially invisible device, which can sit either as a lapel mic on the collar, or if there is any pinnae at all, on top of the ear, hidden from view. The microphone picks up the sound signal and transmits it via Bluetooth to the bone conductor. The user cannot sense the vibrations and the plate and bone conduction does not interfere with speech or eating. The other use for the SoundBite is for singlesided deafness. By placing the mic on top of the dead ear, it is picking up all the sound on the dead side, and by transmitting it to the bone conductor, it stimulates the cochlear of the remaining good ear. The wearer is then able to hear the sounds from their dead side clearly in their better ear. The SoundBite should be available for release in Australia, either at the end of this year or the start of next year.

Recently, we helped a long-term denture sufferer who was wearing an old, broken metal denture. She was having ongoing mouth pain with varying intensity for two years, including tender gums and sensitive teeth. Upon making the most difficult decision, which is often accepting there is a dental problem and making an appointment, it was decided there was insufficient underlying bone to successfully restore the missing spaces with dental implants. This was a difficult situation for my patient to understand and lead to significant anxiety as she worried she may have to live with her denture for life. But after explaining the normal physiological process of bony remodelling following tooth loss and the fact she was never informed about the most ideal time for implant placement following tooth loss, we explained that bone needed to be implanted prior to actually placing the implants. To achieve an ideal outcome, Dr Dance – the oral maxilo-facial surgeon – harvested bone from the hip and placed it into the mouth

in the deficient areas. Six months later six implants were placed in the jaw, were allowed to integrate for four months and subsequently restored with porcelain crowns. This was a lengthy process as bone augmentation takes time to develop for implant placement. The treatment plan was a success as our patient had realistic expectations, had a positive attitude and a strong overall resolve to see success. She was overcome with emotion at completion of treatment: she no longer had tooth sensitivity from her metal denture nor underlying gum pain from the rubbing denture. She said they actually felt better than her remaining teeth. What was very apparent was a new-found confidence. It was a special moment as we both disposed of her primitive metal denture and welcomed her to complete, comprehensive dentistry at Casey Dentists. SWELLING RELIEF FOR CANCER SUFFERERS Cancer sufferers with persistent swelling, caused by lymphoedema, can find relief through massage and cell stimulation. Lymphoedema occurs when the lymphatic system doesn’t work properly, resulting in long-term swelling of body parts, such as your arm. The lymphatic obstruction may be inherited or caused by injury to the lymphatic vessels following lymph node dissection, surgery or radiation therapy – most notably in the treatment of breast cancer. Not sure how to treat the condition? Well, thankfully, help is available! Oedema – or swelling – is the body’s normal response to an injury, common after a sprain. This swelling is due to excess tissue fluid and this type of injury can be treated with RICER (Rest, Ice, Compression, Elevation and Referral). The lymphatic system absorbs and transports interstitial fluid to the thoracic duct, which is then returned to the bloodstream and recirculated around the body to the tissues. Lymphoedema, however, occurs when this system is compromised and unable to drain the lymphatic fluid. Primary causes are structural, such as insufficient vessels, while secondary causes are due to obstruction. Knowing the cause also assists the treatment.

In the thorax, armpit and shoulder, there are a large number of lymphatic circuits and ganglions for draining the lymph from the arm. Surgery and radiotherapy for breast cancer traumatises these, thus, preventing them from performing this draining action – fibrosis barriers develop and the lymph is blocked. The size of the arm swells rapidly, the skin thickens and the arm becomes heavy, impairing movement. There are a vast array of manual lymphoedema techniques – and specialised therapists who can perform these treatments. The light, stroking techniques can act to move fluid from a congested area to a wellfunctioning area, where the fluid can be easily processed and cleared from the body tissue. An immense amount of benefit can be achieved by manually assisting fluid removal through massage, in particular. Massage can provide great symptomatic relief. Your therapist may also be able to offer advice to you or to your carer for some techniques to assist maintenance and recovery in between treatments.

In addition to massage, there is Endermologie. Endermologie uses a draining mechanism and is a much quicker way to remove fluid from the area, taking only 45 minutes to perform and being even more powerful than massage. Lower back pain is a common aliment that most people (up to 85%) will suffer at some stage during their life. It can be a distressing experience for someone to continue living with pain for any length of time, for not only can pain be physically debilitating but also emotionally stressful; leading to health problems long after the initial complaint has been resolved. This can sometimes be referred to as a pain spasm cycle whereby a chain of events and symptoms may trigger and reinforce other complaints resulting in a self-perpetuating cycle. The most common causes of lower back pain are caused by injury or trauma, and can account

for around 90% of cases: ■ The intervertebral disc (the shock absorber between the vertebral bones of the back) ■ Apophyseal joint (the point where the vertebra meet to form a joint commonly called a facet joint) ■ Sacroiliac joint (the joint where the lower part of the spine and the pelvis meet) ■ The Paravertebral and Gluteal muscle trigger points (the muscles that support and attach to the vertebra and pelvis) Less common causes can be more serious in nature, but can be helped with proper diagnosis by Doctors, Physiotherapists, Chiropractors and Osteopaths. Generally, with the aid of an imaging device such as x-ray, ultrasound, MRI or even a CT scan. LIFE AFTER LAP BANDING

When Michaella Cutmore and her friend Shelley Gowley signed up for lap banding, their lives took a profoundly positive turn.

THANKS to her lap band surgery in 2009, Michaella Cutmore has dropped from 144kg to 68kg and halved her dress size from 28 to 14. I was in PNG and Bougainville recently. I was part of a delegation led by Shadow Minister for Foreign Affairs Julie Bishop and the purpose of my visit was to explore the opportunities for Townsville in PNG. We had two days in Port Moresby, a day in the southern highlands looking at the LNG project ($US50billion!!) and two days on Buka and Bougainville. It was on Bougainville where I had the trouble. You see, the nerve damage I have sustained makes my left leg basically numb and I cannot balance on it at all. We had been all over the island and I was in the back of a troop carrier. That means, sitting sideways with my knees way above my hips while we found every pothole and rough road on the island. Needless to say, when we got back, I was more than happy to get out and stretch my legs.

Parents are often too focused on loving their child, keeping them happy, being their friend and giving them everything they need and want. Or they perceive that parents who have rules, stand firm, say ‘no’, provide the necessities without all the luxuries are cold hearted, unloving and too firm. In many parents minds they think you are one or the other. Let’s fast forward to the future – the child who grows up with the ‘love’ parent, is where parents are focused on providing everything their child needs or desires, being their best friend, and their happiness is the family focus. Life is easy. In the future these children inevitably leave home and their parents and then think that the rest of the world will treat them as their parents did. The world, we know, doesn’t. Then life is ‘unfair’. They then blame others for not helping them or giving to them to make their life easy. Lets take the other child – in the future they know that they can’t possibly have everything they desire, that life involves give and take, disappointments happen, that the world has rules, some written some unwritten. Life is one of choices. These children inevitably leave home and their parents and then think that they need to work for what they need, they need to choose between options. Balanced parenting involves both. Balanced children need both. How do you combine love and firmness in a balanced way which leads to children who want to do as they are told. Children who are ‘good’ for 80-90% of the time. Children who want to do as they are told. Children who follow rules. Children who have structure and are sensitive to others. They know that parents are in charge and that there is simply some behaviour you will not tolerate. They know that they have ample hugs and kisses but also rules and consequences. Loving parents should take control – you are not creating happiness by having no rules. You are a parent, it is your job to love your child unconditionally, bring them into line when they cross it, and teach and nurture them to become wonderful adults who can function well in the world outside your home. To teach them how to do it for themselves and how to develop relationships with others which involves give and take. “I WANTED TO BE THE INTREPID TRAVELLER AND SASHAY MY WAY OUT AND WAVE TO THE GATHERING LIKE I WAS ERNEST HEMINGWAY. ”. The problem was that when we got back, it was their peak hour and as we pulled up there would have been 500 smiling faces waiting to greet us. Now all I had to do was get out of the Troopy and walk to the banana boat to get back to Buka. Simple enough. My main issue was how to get out with all those people there. I wanted to be the intrepid traveller and sashay my way out and wave to the gathering like I was Ernest Hemingway. My leg, though, was causing me problems. I could see only two ways of getting out. The painless and risk-free way was to lay on the floor and flop my way out backwards like a baby seal. I could get both my feet on the ground at the same time. Sure, it would be safe and relatively easy. But how would it look? Would Hemingway do it that way? Certainly not. So I decided I would risk it and stand on the tail gate, smile, puff out my chest, and step onto the sodden soil as if Neil Armstrong was behind me. Of course, my leg buckled, and I did a commando roll in the mud. Of course, I was also wearing a white shirt which will never recover. Of course, everyone saw it and they laughed and laughed. I just stood and waved to all and tried to tell the story of how much my back hurt. To add insult to injury, Julie approached me and asked how I was. She was worried because it looked like I must have cut myself during my gymnastics. I had to tell her that it was not blood. It was beetle nut spit. And we all laughed every time that story was told. We are always seeking ways to improve our service and our aftercare programmes so if you have any associated topics that you may wish us to consider, we would welcome your

200g dark couverture chocolate, roughly chopped 200g butter, roughly chopped 6 free-range eggs 300g white sugar 50g gluten-free plain flour 100g toasted hazelnuts, finely ground Ganache 320ml pouring cream 60g butter, chopped 2 tablespoons orange liqueur 320g dark couverture chocolate, roughly chopped SERVES 12-16

HAZELNUT AND CHOCOLATE TORTE

Preheat the oven to 180°C. Line the base and side of a 30 cm round springform cake tin with baking paper. Combine the chocolate and butter in a saucepan over low heat and gently cook, stirring constantly to prevent scorching, until melted. Set aside to cool. Beat the eggs and sugar with electric beaters until light and fluffy and doubled in volume. Fold in the cooled but not set chocolate mixture, then sift in the flour and add the nuts. Mix well and pour into the prepared tin. Bake for 30–35 minutes, or until the cake has set. Remove from the oven and allow to cool in the tin. Remove the outer ring after about 10 minutes.

Meanwhile, to make the ganache, place the cream, butter and orange liqueur in a saucepan over low heat and cook, stirring constantly, until the cream starts to bubble around the edge. Take off the heat, add the chocolate and stir until it has melted. Set aside to cool for close to 30 minutes. To remove the cake from the base of the tin, very gently place two or three clean tea towels over the cake. Place a large plate or baking tray over the tea towels and quickly turn the cake over. Lift off the tin and carefully remove the paper. Place a serving plate over the base of the cake and turn over. Spoon the ganache onto the concave cake top and set aside for at least 5–6 hours, or better still overnight. The cake can be refrigerated and then taken out 2 hours before serving to come to room temperature.

SERVES 4-8 8 lamb shanks, french trimmed zest and juice of 1 lemon sea salt and freshly ground black pepper ½ cup olive oil 4 rosemary sprigs, leaves picked 4 garlic cloves 200g butter, chopped and softened 500g muscatel grapes, separated into small clusters 8 ripe tomatoes 2 cups dry white wine 2 tablespoons Marsala 1 handful of rosemary sprigs, extra 1 cup pine nuts, toasted 2 lemons, cut into quarters Preheat the oven to 200°C. Wash the lamb shanks and pat dry with paper towel. Rub the lemon zest and juice into the shanks and season with the salt and pepper. Pour the oil into a large deep roasting tray, place the shanks on top and scatter on the rosemary, garlic, half the butter, the grapes and tomatoes and shake. Pour in half the wine and Marsala and cover with foil. Roast for 30 minutes, then remove from the oven. Turn the shanks and baste with the pan juices, cover and return to the oven for 30 minutes. Baste with the pan juices again and sprinkle on the rosemary. Roast, uncovered, for a further 30 minutes, or until the meat pulls away from the bone. Transfer the shanks, grapes and tomatoes to a warm serving platter and cover with foil. Add the remaining butter, wine and Marsala to the tray and place over high heat. Scrape the residue from the sides and base of the tray to deglaze and simmer for 5 minutes or until the sauce has thickened slightly.

KNOCKOUT LAMB SHANKS

Pour the sauce over the shanks and serve, garnished with the rosemary sprigs, pine nuts and lemon wedges. The shanks are great with blanched broccolini tossed in lemon, chilli and garlic.

It can help strengthen existing relationships, and throw open the doors to new ones. “The cloud is a major shift in the way we think about technology”, says Glen McClain, a senior T-Suite application sales specialist at Telstra. “Put simply, it’s all about turning information technology into a service, not a capital cost. Because the cloud moves IT from being something in-house to being a service delivered through the Internet, it offers huge improvements in storage capacity, and accessing the very latest in technology and security.

Moving to the cloud means your business shifts from having to manage its own security and storage, to having access to the best security minds and processes in the business. It also means being able to access as much – or as little – storage and processing capacity, as you need. What you are doing is moving to a consumption model of computing, where you pay for what you use. It’s the idea of computing as a utility, like electricity. You plug it into the wall and you pay for what you use,” he says. “It’s a true consumption model. It lets a business focus on its core activities, and not be constrained by technology.” And the value that the cloud adds to your business? TOWNSVILLE artist Kate Martin has been given an once-in-a-lifetime opportunity to perform at Groovin’ the Moo with some of the hottest musical acts of the year. The folk singer-songwriter won the annual triple j Unearthed competition to play at Groovin’ the Moo, and will be joining international artists such as Kaiser Chiefs, Matt Corby, Kimbra and Hilltop Hoods for the festival. Last year triple j Unearthed also became a full-time digital radio station playing music sourced entirely from artists discovered on triplejunearthed.com Ms. Martin said she is excited about the wider audience she will reach thanks to triple J Unearthed and playing at Groovin’ the Moo. “I’m also looking forward to playing alongside a couple of artists who definitely had influence on my writing when I was younger,” she said. Joining the Groovin’ the Moo line-up is another milestone in Ms. Martin’s already impressive list of achievements – she has released two albums and is about to start a national tour.

“Once I started to play guitar in Year 9, I became immersed in lyrics and melodies and putting it all together,” she said. “Writing has always been a passion of mine throughout my school years. So I guess, with my interest in music, it was a natural progression.” Ms. Martin credits the Townsville City Council with awarding her grants and opportunities to play when she was first starting out in the industry. “I received a couple of council grants that helped me enormously to get some music gear together in the early days,” she said. “And I was given the opportunity to play at some gigs for the Townsville City Council.” After playing and creating music steadily for four years, Kate was lucky enough to catch the attention of her current manager Andrew Brown at Outer Records, and has been busy recording and performing ever since. “I think it’s important to know that music is your passion because it has to be your love of it that will sustain you through the ups and downs,” she said. “I’ll be touring with my fivepiece band, so hopefully it’s a large and

immersive experience for listeners. “We’ll be doing songs from both albums plus a couple of new ones. It’ll be fun.” Ms. Martin’s national tour kicked off on April 27 with a performance at The Venue but you can still catch her at Groovin’ the Moo.
