Sugar, spice and everything nice The Flavor of Durango is a local guide to the culinary scene in Southwest Colorado. Our magazine celebrates the cuisine that local chefs prepare for customers, and the dishes that keep them coming back for more. As these restaurants highlight seasonal menu items, signature dishes and popular picks, we hope you find a new flavor to enjoy.
Fall is a short-lived season, but it signals a change of pace in the people and places around Southwest Colorado. As we soak in the last drops of summer sun and enjoying the changing colors of the leaves, we retreat to bask in the warmth of our favorite coffee shops and cafes. We reminisce about summer adventures over drinks with friends, and plan our next ski session over a plate of appetizers. The fall harvest inspires regional chefs to incorporate the freshest ingredients on their menus, and add comfort food to combat the cold. Restaurant owners source quality ingredients from local farmers, who provide a bounty of items like carrots, cucumbers, peppers, potatoes, squash and sweet corn. My personal favorites show up in so many different signature dishes downtown,
like those included in these pages. As the temperatures drop, we love an extra kick of green chile to keep us warm, followed by a seasonal craft beer. Occasionally, we like to indulge with sweet treats and warm drinks. Best of all, there is diversity in every dish, and something for everyone. Modern menus feature a variety of vegetarian and vegan entrees. But for those of us who might not mind ordering sides and salads, there’s no shortage of options. Ultimately, with so many amazing choices, deciding where to dine in Durango is difficult. This menu guide can give you a glimpse of your options and help you find your favorite Flavor of Durango.

Beyond farm to table, the James Ranch Grill is “table on the farm” by sourcing its main organic ingredients from the James Ranch itself. Our livestock feed only on the green pastures of our 400-acre ranch making our beef packed with flavor, our cheese golden and rich and our eggs with yolks the color of a sunset. Our pigs are raised on grassy pastures and whey from our cheese-making processes making our pork tender and flavorful. The organic vegetables that we don’t grow in our own gardens are sourced from local farms in the summer and regionally in the off-growing seasons, and always from farmers that we know that care for the land and use sustainable practices. Our nonalcoholic beverages are organic and our beer, wine and cider are produced locally. All are unique and special. Nature’s Oasis Executive Chef, Charles Childers, is a culinary wunderkind who is internationally trained in Jamaica and Fiji and has worked in well over 100 kitchens, learning from as many chefs as he could find. Chef Charles moved to Durango in 1997 and worked as Sous Chef for several well-known restaurants. He has made multiple television appearances for local stations and has a passion for, and is a hall of fame member in the national nonprofit called Cooking Matters, of which there are more than 80 branches in the country. Chef Charles attended culinary school at Community College of Southern Nevada and was born and raised in Las Vegas, Nevada.
