For the rabid (sorry) dog lover in your life, Denver’s boutique Hotel Monaco is offering the ultimate in state-cationing. From Aug. 23-26, the downtown hotelier, located smack dab in the middle of all the big city action, is offering its Puppy and Prosecco package.

That’s right – a gaggle of adorable puppies and a bottle of Italian bubbly will be unleashed directly in your room for an hour of unbridled puppy love.

Down girl.

Of course, the cost of all this bubbly rollicking goodness is not cheap: $550. But 50 percent of the cost will be donated to Denver-based animal rescue organization, Lifeline Puppy Rescue, which incidentally is also supplying the puppies and will be on hand to address any urgent puppy matters. And, in case the prosecco goes straight to your head, all puppies will be available for adoption (please just don’t take them home in your suitcase.)

According to Lifeline’s Scott Cramer, the promotion is a win-win, not only raising money for the nonprofit but also helping to socialize the pups.

The event, which is being held in conjunction with National Dog Day (Aug. 26) is just a natural extension of the hotel’s open doggy-door policy.

Pets of hotel guests – and puppies from Lifeline – already regularly attend the hotel’s happy hour and are rumored to be way better trained than some of the humans.

Wally World America’s richest family is getting into the mountain biking biz. Walmart heirs Sam and Ben Walton – both avid riders – are breaking ground on a new bike park in Pitkin County. The 4.7-mile trail network will be built upon a former coal mining site near the hamlet of Redstone.

According to plans filed with Pitkin County, the trails will be completed in 2020 and include varying levels of difficulty. The trails will be open to the public and free of charge, according to a story in The Aspen Times.

Sam and Ben Walton are grandsons of Sam Walton, the patriarch of the Walmart empire. Perhaps unsurprisingly, both have homes in Aspen.

Of course, as with most things Walmart, the plan is not without controversy. A local citizens group, the Crystal River Caucus, is fighting the development saying it will bring a “flood of mechanized recreation” – not to mention Spandex – into the surrounding national forest. The group has also taken a hard stance against the proposed 83mile Carbondale-to-Crested Butte trail.

And while the “Walmart bike” has been a longrunning joke in cycling circles (plenty of online daredevils have taken the bargain rigs down harrowing descents with varying results), the Waltons are serious about biking. Tom and Steuart Walton, cousins of Sam and Ben, built 163 miles of trails near the company’s HQ in Bentonville, Ark. The Waltons also own a majority in cycling apparel company Rapha as well as bike company Viathon.

However, with “low-end” models costing around $2,000, you probably won’t be seeing these babies at the local supercenter anytime soon.

No word on whether the new trails will be called “Wally World” or not.

LaVidaLocal A moveable feast I am about to move, which means I am packing. The packing process is an ideal time to assess one’s possessions for their true value to one’s life. Sure, one can handle boxes of junk lightly forgotten in the back of the closet, behind the suit jackets that never fit one just right. But why should one want to move those boxes to a new location, when one could leave them in the crawlspace for some future tenant, or rats?

Purging oneself of unused possessions while packing makes perfect sense, so naturally, one is not doing it. Instead, one’s efforts are going toward eating all my food.

Follow the bouncing ball – my reasoning here goes something like this: Bananas don’t last forever. If a banana is left over come moving day, it WILL get put in a box with other items. Because if college taught me one thing, it was never to date two women consecutively from the same campus organization. And if it taught me a second thing, it was never to pass up food, particularly food that was not “cooked” in the dining hall.

So into the assorted box the banana goes. That box might be the first box I unpack, and a banana will be what gets me through unpacking day. Otherwise, if it’s not the first box I unpack, I will get hangry and quit unpacking, and the banana box will live behind the suit jackets until the odor causes me to move again.

The banana is hypothetical. It could be any food-like item. It could be pistachios, or electrolyte mix. It could be cod. You never know what ends up where on moving day.

That’s why I’m mobilizing all my effort and manpower to consume all the food in this house before going to the next one. This goal requires that I grocery shop as little as possible in the weeks leading up to the big day. In fact, the past week’s grocery list has consisted of the following: n Bananas, because writing about them made me crave them, okay? n An avocado, to reinforce the stereotype imposed on my generation by people older than me who forget what it felt like when they had stereotypes imposed on THEM by even older people n Bread, local and artisan, whole grain, nine-seed, reduced gluten, because what barbarian goes a day without avocado toast? Not this barbarian!

That’s all. You see, I have a large quantity of food still left in my kitchen.

Food that, I have determined, is still there because it doesn’t go well with any

of the other food left in my kitchen, and/or I have yet to identify it.

Take for instance these mason jars of dry food. I bought them two houses ago, when I lived near a store with a hearty bulk-food section. Filling mason jars with dry food brought me significant sensory satisfaction. The textures of seeds and grains and dehydrated food bits. Their various colors. Their sounds as they tumbled into my jars. I seriously haven’t been so calmed and entertained since that time I spent too long with a Sharpie in the fifth grade.

Actually, I was so calmed and entertained that I didn’t jot down what those foodstuffs were called, which means now I can’t Google them, which means I am left to toss them in the rice cooker and see which one goes best with the curry ketchup that expired just last Thanksgiving and still tastes fine.

That bad news in all this is that, without names or binomial nomenclature or a thorough understanding of the expiration process and its impact on flavor, I can record precious few functioning recipes from my stint as a Mr. Julia Child. But here is one example of a culinary discovery that you, too, can make at home with the blinds drawn.

Zach’S Moving Day Mélange Prep Time: Variable Cook Time: Optional Ingredients: Dry ingredients; wet ingredients n Preheat oven or stovetop to 350 degrees, or until hot to touch. Grease an 8 ½” by 11” baking pan with coconut oil, butter, Vaseline, or similar substitution to taste. (Leftover containers will work in lieu of baking pan.) n In a separate bowl or hat, mix dry ingredients. Cocoa powder works. So does jasmine rice. Add spices, peppers, salts, electrolyte mixes, and raisins.

Remove raisins, because you remember raisins are gross. n Mix wet ingredients in anything besides a colander. Add water to taste, if ingredients aren’t wet enough. n Stir wet ingredients into dry ingredients. Whip one egg and fold into mix. n Scoop mélange into pre-greased container, but on second thought, don’t place it into the oven or on the stove. Contents may be flammable. n Actually, contents may self-ignite. Call to renew auto insurance, if necessary, then load mélange into trunk of car. On your way for barbecue, drop off meal at the nearest dormitory. It’ll get eaten.

Stop for-profit health care insanity To the editor, All but a handful of Americans currently have high premiums, high deductibles and poor coverage – or no coverage at all. Despite the fact that so many of us are un- or under-insured, our average health care costs per person are the highest in the world, by far. We all know someone who is struggling with a choice between health and financial solvency. If it costs $1,000 to take your kid to the ER, you are faced with a deadly choice.

That’s insane.

National Improved Medicare for All (NIMA) would cover every American from conception to death very well – with comprehensive benefits, no questions about coverage or benefits, and no co-pays or deductibles. That means no insane choices between rent money and health care. Costs for covering every one of us would be far cheaper per person than what we pay now.

As with Medicare, a NIMA system would mean that we have one funding source – “single-payer” – that pays for all medical care provided by any provider. As with Medicare, providers, hospitals and clinics are privately run.

So “universal, single-payer health care” does NOT equal “government-run health care,” as insurance lobbyists want you to think. It means efficient, excellent care, as recorded year after year by the World Health Organization which rates NIMA-type systems as the most effective in the world. No wonder 70 percent of Americans favor a shift to NIMA. Our American system is chaotic – it’s not designed for patients, but for profit. A friend’s twin granddaughters were born premature, their lungs undeveloped at 7 months. They, and their very stressed parents, rotated in and out of the hospital to address breathing issues.4

Recently, one twin was admitted to the Neonatal Intensive Care Unit closest to their parents’ residence. Shortly after, their mother realized that the other twin was also suffering respiratory distress, but her spouse had the car, so she had to rely on an ambulance to reach the ER. As frequently happens with for-profit health care, the ambulance company only served one hospital – the hospital across town, not the parents’ preferred provider. So the twins were split up across town from each other, which required separate visits from their parents. More stress for everyone, and worse care for the patient.

This sort of insanity would not happen in any other developed country. Why? In all other developed countries care is centered on the needs of each patient, not on the competing claims of provider clinics in their effort to stay afloat. In those countries all citizens can go to any provider. Because all records are available in one database, administrative costs are dramatically cut. Compare Medicare’s administrative costs (2-3 percent) to those of our current, fractured for-profit system – 18 percent.

Get in the game – call your representative, write a letter and come to the local presentations of Healthcare Durango. Talk about it with folks you know. Enough nonsense! Let’s vote for National Improved Medicare for All. – Kirby MacLaurin, Durango

Paying for Mr. Trump’s golf habit To the editor, For all who voted for Trump, so far he has lied to the American Public over 10,000 times. One of the big lies was when he said he would work in the White House and wouldn’t have much time for golf like Obama did. Well, the count is 187 days of golf for Trump at his own golf courses to the tune of $102 million of your money. You the taxpayer has paid this much.

Oh, you say Obama golfed, so what did he cost you?

Well $12.7 million for the eight years, and mostly at military bases.

Trump spent 252 days at his properties like Mar a Lago and Trump Bedminster in New Jersey. This is your tax money going into his pocket. What a deal for him.

Remember, he has security that stays with him on his property, and you pay for it. If you think this is right call your representative or senator as maybe you can get invited for a round of golf on your dime.

BLM wants to liquidate your lands To the editor, The Bureau of Land Management manages more than 245 million acres of public land, the most of any federal agency. This land is primarily located in 12 Western states, including Alaska. Over 64 million Americans – more than one in six – live within 100 miles of public lands managed by BLM. These lands provide outstanding opportunities for outdoor recreation, including hunting, angling, camping, hiking, climbing, wildlife viewing and many other activities. Colorado has 8.3 million acres of BLM public lands.

Unfortunately, the Trump administration appears to be putting the BLM public lands that hunters, anglers and others rely on for outdoor recreation at risk. Recently, Interior Secretary David Bernhardt signed an order naming William Perry Pendley – a lawyer with a long history of opposition to public lands – acting director of the Bureau of Land Management. This order puts him at the top of the agency, but without a Senate confirmation process.

“William Pendley has made a name for himself by relentlessly and brazenly attacking our American system of public lands and waters and advocating for the sale of this priceless American legacy,” Backcountry Horsemen and Anglers President Land Tawney said. “Mr. Pendley is not someone who should be entrusted with

the management of our public estate. The fox has taken control of the hen house, and he is poised to systematically dismantle the very resources he is charged with overseeing.”

Pendley is the former president and founder of the pro-development law firm Mountain States Legal Foundation. He has ties to a number of notorious anti-public land groups, including the American Lands Council. He argued in a 2016 National Review article that the “Founding Fathers intended all lands owned by the federal government to be sold.”

Pendley is, in a nutshell, an extremist nut and an outright enemy of America’s great public lands hunting-angling heritage. “Holy smoking bombshells. People better wake up,” Hal Herring, Field & Stream contributing editor wrote. “We’re not making ourselves heard, and we’re about to hit a tipping point of real loss. One of the most prominent firebrand voices for divesting public lands is now the head of the BLM.” Kayje Booker, policy and advocacy director at Montana Wilderness Association, stated in a press release, “It’s hard to imagine anyone in this position more dangerous than William Perry Pendley.” U.S. Sen. Jon Tester, D-Mont., issued a statement calling Pendley’s BLM leadership “a grave threat to the future of public lands.”

Today, the No. 1 threat to the future of hunting and fishing is loss of access to quality habitat. America’s public lands are critical if we are to maintain our hunting and fishing traditions and freedoms. Mr. Pendley has made it clear that he plans to do everything in his power to liquidate America’s great public lands estate.

Step by step Colorado explores public health insurance option

O

ver the past several years, Colorado’s elected leaders have tried to tackle the rising cost of healthcare.

In 2016, there was the bid to create ColoradoCare – a state-run, single-payer system that ultimately failed at the ballot box. This year, legislators passed a bill to create a reinsurance program to supplement high-cost insurance claims and lower premiums. The latest effort is a public health insurance plan.

Commonly called the “public option,” this type of plan is a lot like other insurance plans. The difference is the public option is one run by the government instead of a private company.

Guinn Unger, who’s worked on healthcare issues in Southwest Colorado for years as co-chair of Indivisible Durango’s Healthcare & Senior Issues committee and as the regional coordinator for the ColoradoCare Amendment 69 campaign in 2016, explained the reason public insurance options are typically more affordable than private coverage is because the government

With the profit margin eliminated, it’s immediately less expensive. Governmentrun programs – whether it’s a public insurance option or single-payer system – can then focus on efficiency and innovation to cut additional costs.

According to Unger, some studies have shown that under public option plans, insurance costs could be lowered by as much as 8 percent.

“Although that’s not insignificant, it’s not a huge amount,” he added. “There’s

still people who can’t afford it.”

To find exactly how much it might lower costs for Colorado residents, the state legislature passed HB-1004, also called the Proposal for Affordable Health Coverage Option.

The idea behind the law is to get the details of creating a state-run health insurance option – including who it would cover, how much it would cost the state, who would run it and how to get it all started.

The Division of Insurance is the group tasked with getting all the information together. Currently, two of its top administrators – Kim Bimestefer, executive director for Health Care Policy and Financing, and Mike Conway, insurance commissioner for the DOI – are traveling the state to find out exactly what Coloradans would want from such a program.

So far, they’ve made pit stops in Boulder, Denver, Greeley and Keystone. Over the next several weeks, they’ll continue the trek with meetings in Pueblo, Alamosa, Grand Junction, Glenwood Springs and one scheduled for Durango on Aug. 27. 4

The goals laid out in the legislation are to figure out how to create a public option in Colorado that is affordable, innovative, stable, competitive, addresses the uninsured, and takes advantage of the state’s existing infrastructure.

According to Vincent Plymell, assistant commissioner for the Division of Insurance, they won’t tackle the finer details until the public outreach efforts are complete.

The schedule is to gather public comment through the end of August and release a draft report by Sept. 30.

They’ve allotted just two weeks for comment on the draft, then the final report heads to the state General Assembly on Nov. 15.

From there, anything’s possible.

Elected leaders could use the information in the report to actually implement a public option during the 2020 legislative

session. They could use it to create another fact-finding mission, take another stab at a state-run single-payer system, or even table these ideas altogether.

The bill only requires the Division of Insurance to gather the information and

other distraction.

“I see a public option as a potential interim step,” he explained. “But, it’s not an ultimate solution.”

Unger admits a public health insurance option could take the financial pressure off some residents, but it’s not going to solve the problem. In fact, he said, it could waste time that could otherwise be spent on real solutions.

He believes a single-payer system is the right path.

In spite of this, the United States spends almost twice what other developed countries spend per person on healthcare. Unger said this isn’t because those countries have better care, it’s only because patients are charged twice as much.

With a government-run, single-payer system, however, profits would not be the endgame.

Unger, who also ran for the Colorado Senate in 2018, admits he likely would have voted for HB-1004 if he’d been serving in the state legislature.

Getting real numbers would be beneficial and considering the options is worth it, he said. With all the statistics, costs and information likely to be gathered, it could provide some convincing data.

“I think looking at options is a great thing,” he added. “It might be a little step in the right direction, but it doesn’t really solve the problem.” n

Premiums likely to go down on state exchange Coloradans could see the cost of health insurance drop dramatically when open enrollment begins on Nov. 1.

The state legislature passed a bill this spring, called the State Innovation Waiver Reinsurance Program. It creates a reinsurance program which helps private companies, who offer plans on the state’s health exchange, cover high-cost insurance claims.

This, in turn, will allow those companies to lower premiums by almost 30 percent in some areas.

The program was dependent on getting federal approval from the Centers for Medicare and Medicaid Services, which it got last week.

“This is a commonsense policy that will go a long way in lowering premiums for Coloradans across the state, helping to put quality health care coverage in reach for more families,” U.S. Senator Michael Bennet, D-Colo., said in statement.

Bennet expects premiums to go down by 16 percent across

the state, and about 27 percent in rural and mountain areas.

The bill (HB-1168) is only for plans offered on the state exchange, Connect for Health Colorado, which will have eight different insurance companies participating this year.

It does not apply to employer or government-run plans.

MountainTownNews Endless summer strains mountain towns WHISTLER, B.C. – From Whistler to Crested Butte, exhaustion has been setting in as summer’s economy roars on.

“Back in the day, there was a kind of ‘we-are-in-this-together’ feeling. Besides, we knew that in just a few short months we would all get some much-deserved downtime,” writes Clare Ogilvie, editor of Whistler’s Pique Newsmagazine.

Now? There seems to be no downtime. The dialogue on social media is telling. “We can hardly post a comment without being roasted,” she reports. “Facebook is becoming one of the most negative forums around.”

Crested Butte also remains very, very busy for just a few more weeks. Paradise Basin is just up a busy gravel road. In town, tempers easily flare.

“There are some, but not many, currently living here who want to see this level of busyness all year long. Ouch,” writes Crested Butte News editor Mark Reaman. He wants continued downtime in fall as an antidote to the busyness of July and early August, long the town’s busiest time.

“Instead of cursing the dirt biker on the trail he or she is entitled to use as much as you when you are hiking or mountain biking, look inside and call upon more patience and peace to share what we all enjoy,” he advises his readers. “A smile goes a lot further and is better karma than a finger.”

In Whistler, Ogilvie wants no return to the slower times. But the growth has taxed the human capital. Jobs in Whistler have grown from 12,200 just nine years ago to 16,300 now. This, in turn, has exacerbated a housing shortage.

“We still need more workers,” she writes.

Why a plane slammed into a mountain CANMORE, Alberta – Deprivation of the oxygen adequate for proper functioning of the brain and other parts of the body is a condition called hypoxia. It famously occurs among mountain climbers who have ascended too rapidly without acclimatization or, at extreme heights, like the top of Everest, all climbers.

It also affects air passengers, including the pilot of a small plane that crashed near a mountain summit south of Banff and Canmore in August 2018. The Transportation Safety Board of Canada has found that oxygen deprivation “likely played a role” in the crash that killed the pilot and a survey technician.

The Piper PA-31 had taken off from Penticton, B.C., and, after two hours of survey work, was heading toward Calgary, flying at about 15,000 feet above sea level when, according to a flight data monitoring system, things went awry.

The plane had a portable oxygen system, but the pilot was not continuously using it, according to the monitor, which included a camera. Use of oxygen is required when above 4,000 meters (about 13,100 feet) above sea level. Onset of hypoxia can be slow and gradual, so it’s likely the pilot did not recognize the symptoms.

At sea level, air contains 20.9% oxygen. In Aspen and Vail, the oxygen content lowers to 15.4%. It drops to 11.8% atop Washington state’s Mount Rainier, which is 14,411 feet (4,392 meters). Atop Everest, it’s at 6.9% A 2014 article in Flying magazine explained that linking hypoxia and accidents was hard. Even so, the U.S. National Transportation Safety Board’s aviation accident database listed 24 accidents related to hypoxia in the prior decade, 22 of them resulting in fatalities.

One of them occurred in 2003, when a pilot with three passengers took off from north of Denver with a destination of Las Vegas.

The pilot at one point told air traffic controllers he thought he was above Montrose when, in fact, he was above Telluride, a distance of about an hour by car. The crash occurred near La Sal Junction, Utah, south of Moab.

ASPEN, Colo. – Aspen has so far been spared the hillsides of red pine needles and gray tree trunks that have blanketed mountainsides to the north and south. That may end soon.

The Aspen Daily News reports some experts believe the Engelmann spruce trees killed in historically unprecedented avalanches could become massive breeding centers for spruce beetles.

To the north, in the Vail-Steamboat Springs-Winter Park area, an epidemic of bark beetles that began in 1996 took off in the dry,

hot summer of 2002 and in successive years, turning forests of lodgepole pine orange and then gray. The spruce beetle epidemic of the San Juan Mountains was more recent but, in places, such as Wolf Creek Pass, just as eye-opening. Spruce deaths can also be seen overlapping with bark beetles near Grand Lake, at the western entrance to Rocky Mountain National Park.

Jason Sibold, assistant professor of geography at Colorado State University, declined to say with certainty that the spruce beetle will flourish near Aspen. “But you certainly have the ingredients,” he said.

“You’ve just had an extraordinary avalanche cycle in those areas,” he told the Daily News. “Those dead, downed trees are defenseless.”

Lodgepole have a 160-year life span, according to a report by the Colorado Forestry Advisory Council. But spruce and fir forests, which commonly occur at higher elevations, have longer life cycles, often living for 400 years or more.

Sibold and students conducted research last fall near Independence Pass, the Continental Divide crossing between Aspen and Leadville. They found that past epidemics of spruce beetles resulted in mortality of only 20% or so.

Based on parallel research in the San Juans, Aspen could be in for a greater loss. Those San Juan spruce forests lost nearly 90% of trees, a result of climate change, Sibold says. “The beetles love the warm temperatures. The trees are extra stressed, so it’s a double whammy.”

Sibold warns that an outbreak somewhere around Aspen will happen in the next 10 years, perhaps just in the next 2 or 3 years.

Presidential hopefuls pass hats in Aspen

ASPEN, Colo. – The presidential wannabes continue to parachute into Aspen to pass the hat. Kamala Harris, the senator from California, was there last Friday, while former Vice President Joe Biden and former U.S. Rep. Beto O’Rourke are also scheduled to stop by this week.

The Aspen Daily News reports that the invitations for both the Harris and O’Rourke events noted minimum $500 donations for entry.

Biden is also scheduled to press the flesh and pass the hat in Park City during September. No word out of Jackson Hole, which may have even more silver heels than Aspen, about fundraising events.

But then, it’s the more favored hide-out of wealthy Republicans.

But Aspen has enough wealthy Republicans that Vice President Mike Pence stopped by in July to ask for help to put the self-described billionaire Donald Trump back into the White House for another four years. He also spoke to the Republican Governors Association.

Surviving a mountain lightning strike

BANFF, Alberta – When rescuers arrived on a mountain slope in Banff National Park to attend to a 28-year-old woman, she wasn’t sure why she had summoned them by cell phone. She had said she was disoriented and had some memory loss, but she wasn’t sure why.

What the rescue team quickly discerned from talking with her and seeing her melted clothing was that she had been struck by lightning. Whether it was by ground currents or by direct strike isn’t clear. She was hospitalized.

Any time you get struck by lightning or get struck by ground currents that are strong, you are lucky to survive. “It was an extremely close call, and it could have turned out a lot worse,” said Banff spokesman Brian Webster.

The Rocky Mountain Outlook notes the general rules of thumb on lightning: get off summits or other high points. Get rid of ice axes, hiking poles, or other metal objects. Better to keep moving downhill rather than just hunkering down. And if your hair stands on end or you hear a buzzing sound, like the sound of bees, skedaddle.

A-Basin switches sides after 22 years

DILLON, Colo. – Arapahoe Basin last week announced it was joining Alterra Mountain Resorts after ending its affiliation with Vail Resorts after 22 years.

The company in February announced it was not renewing its partnership in Vail’s Epic Pass program. It suggested that Vail was producing more skiers than its infrastructure could accommodate.

“While the mountain still has plenty of room for skiers and riders, the ski area is feeling a pinch on parking and facility space,” the company said. “Due to these constraints, Arapahoe Basin believes its staff can take better care of its guests by separating from Vail Resorts.”

I

never knew tandem mountain biking existed until a friend suggested I borrow his two-seated bicycle to take out with a guy I’d just started dating.

It sounded fun, and it was a quick and adventurous test to see if he and I were compatible. We had a blast! So we rode back to my place for celebratory beers. As he was getting off the bike, though, we both toppled over and I put my hand down, naively trying to catch myself, the bike, and my date. It might not have been heartbreak, but it hurt just the same.

After my life came to a painful halt, I needed to get things back to normal so I went to the place that all my friends were recommending: San Juan Hand Therapy. The locally owned, independent hand therapy clinic has been in Durango since 1996 and provides specialized treatment for hand, wrist, and elbow injuries and disorders. moved to Durango, Colorado for the same reason we all do: the mountains, the nearby desert, biking, rafting, skiing, the people, the breweries..I mean, the list can go on and on. But, the one thing our landlocked state was really missing was true blue, high quality, sustainable seafood.

Practicing safe salsa

I

learned about salsa from a used car salesman. That may sound sketchy, but Roy had already given me a great deal on a Subaru. Then he gave me a quart of salsa for Christmas. By the time he told me that salsa helped him quit drugs in the 1970s, I already knew Roy was not your average used car salesman. So when he invited me over to watch football and make salsa, I jumped at the chance. And not because the Broncos were playing.

Roy looks like Willie Nelson and speaks with a Southern twang. That afternoon, he laid out a murderous lineup of hot peppers, as well as some bells and sweeties. They would add spice, sweetness and pungency to the tomatoes, carrots, garlic, onion and cilantro, all of which, peppers included, are ripe at about the same time. With 20 gallons of salsa to make, we pulled on gloves and got to work.

Since learning what I learned that afternoon, I have been making Roy-style salsa, albeit with more reasonable levels of capsicum. His salsa can do almost anything, and it changed my life too, if differently than how it changed Roy’s.

The extremely high levels of hot pepper heat helped Roy with his addiction, he told me, by triggering a rush of endorphins that took the place of the endorphins heroin triggered. When he feared falling off the wagon, Roy fell into the spicy arms of his salsa instead.

For me, Roy’s salsa has become a glue-behind-the-glitter type ingredient in my cooking that I use in a ton of sneaky ways. Salsa is also a way of dealing with overwhelming mountains of summer produce. When converted into salsa and sealed into gleaming jars, that

summer bounty is preserved at its peak. It is summer in a jar, and it can flavor the menu all winter long.

When I’m looking to add a little je ne sais quoi to a dish, practically any dish, the range of vegetable flavors in a jar of Roy-style salsa can often get it done. It could be stew, eggs, coconut curry, potatoes and many other dishes that don’t necessarily scream tomato. The salsa adds aromatic complexity, on par with adding a good vegetable stock, but with spice and acid too.

Because I use the salsa in so many ways, I keep the heat level mild. There are many ways to add chile spice at serving time, if and when you are looking for some hot salsa for your corn chips and whatnot.

One day each summer, I spend an afternoon with the kids using the food processor and seasonal veggies to convert the kitchen into a canvas for Jackson Pollock-style splatter painting.

We chop, blend and boil a vat of our own, and funnel it into clean, sterile jars that seal on the countertop. Stored in a reasonably cool place, these jars will last until next summer and beyond. In the fridge, an open jar can last two weeks before going bad.

I shouldn’t publish Roy’s recipe, as food safety experts say it’s too dangerous. Not because of the insane levels of heat, but because Roy’s salsa doesn’t have enough acid.

Once, a few years back, I did print the recipe. And the food safety experts swarmed.

The issue is that tomatoes, while acidic, are barely acidic enough to bring pH of most types of salsa below 4.5. And some tomatoes are more acidic than others. So, adding vinegar is advised – as much as a cup or more for each quart of salsa, which makes the salsa roughly 25 percent vinegar. That is more acid than Roy would joke about, even when talk turned to the good ol’ days.

Until recently, I have quietly resisted adding extra acid to my salsa. As long as the jar is sealed, the salsa inside has been good. Now I add a little, maybe a quarter of what the food safety experts recommend. And not long ago, I came across a recipe that bears a striking resemblance to Roy’s, but without any safety violations whatsoever.

I can say that with confidence because the recipe, for “Carrot Pepper Salsa,” comes from the Ball Complete Book of Home Preserving, published by Ball Co., which has been making mason (canning) jars since 1884. The only difference between this recipe and Roy’s is the use of vinegar and sugar. Perhaps the Ball recipe was a source for Roy when he formulated his own. Anyway, the quantities below are straight out of the book, so please direct any complaints or legal action to the Ball Corporation.

While the quantities listed below are exactly from the book, I have tweaked the method in a Roy-esque direction, by using the food processor. But the cooking and canning times are by the book.

Ball Jar Carrot Pepper Salsa Makes five cups 6 cups chopped tomatoes 3 cups coarsely grated peeled carrots 1½ cups cider vinegar 1¼ cups brown sugar ½ cup chopped onion ½ cup chopped, seeded jalapeño peppers 1½ teaspoons salt ½ teaspoon freshly ground black pepper ¼ cup finely chopped cilantro Use a food processor to mince the tomatoes, carrots, onions and peppers. Add those ingredients to a heavy bottomed pot, along with the salt, pepper, sugar and vinegar, and bring to a boil on medium/high heat, stirring often. Reduce heat and simmer for an hour. Stir in the cilantro and cook for five more minutes.

Using a ladle and funnel, add the salsa to clean, sterile jars, leaving an inch of head space at the top. Place the lids and screw on the rings, and process for 15 minutes in a boiling water bath. Listen for the pings of sealing jars.

It’s the sound of summer, stashed away for later. n

Dear Rachel, Can you explain why single-sided print jobs cost just as much as double-sided ones? They use twice as much ink per sheet, and corporations usually take every opportunity they get to gouge me further. I’d expect double-sided to run triple, just because of the extra machinery involved. Instead, I end up wasting more trees because I might need to write on the back of one of those pages, and I need a good cost-conscious reason to be a better person.

The SEPT Program works with children and families involved in divorce, custody, domestic violence, dependency and neglect, and other high-risk court cases. We provide supervised safe exchange and supervised parenting time to both court-ordered and voluntary clients.

Our goal is to provide a safe and neutral space for families to reunite in a meaningful way. Tasks include: (1) Supervise safe exchanges and visits (2) Take detailed, objective notes for the court (3) Create a nurturing, safe environment for the child(ren) (4) Attend training monthly to learn new skills and connect with other volunteers.
