I read with great interest the article about the couple who look after the cats, and would like to inform your readers that, from June 5th - 14th, we have Madeleine Walker, a well known international animal communicator, visiting Moncarapacho. She will teach you to understand and talk to your pets, and also help us collect for animal charities. If you would like to attend the course, or solve a behaviour problem with your pet, you can have a private sitting. She has been on TV, written a book called “Exchange of love”, and has just returned from India, where she has been working with elephants. This is such a special opportunity! I am looking to buy a property for my family’s use. I have been looking at mainly new properties and I can’t believe the lack of basic health and safety requirements needed for new properties. No smoke alarms or fire doors, and balconies and roof terraces which are a hazard for young children. I am very concerned about this as I have small children of my own and anyone buying to let could be unaware of the potential hazards these balconies and roof terraces can be to small children. Is there legislation for this?

OperationTrident Three British men were among a group suspected of importing drugs from Morocco into Europe. They were arrested as part of operation Trident which is trying to combat the trafficking of cannabis. The police focused on three areas Moita, Olhão and Vilamoura. More then 7,000kg of cannabis was seized and five boats and a vehicle impounded.

Two reports issued this week indicate some optimism for tourism in Portugal. A commission by the EU, which offers all tourism stakeholders a wealth of information, has identified that only 11% of Europeans have serious financial problems which could curtail their holiday plans. However, 40% said that they would have to prioritise their financial planning, maybe cutting out their winter break and, if possible, travelling in low season.

Discussions are underway for the setting up of a British Consulate Office in Faro where an Honorary Consul would be based, providing a limited range of services to British citizens in the East Algarve.

A total of 33% of Europeans taking part in the poll said that they put quality and value for money ahead of low prices.

Shortage of doctors in Algarvethe The National Health Ministry said that the Algarve requires 308 doctors, one doctor per 1,600 patients. Currently there are 270. The population growth,and lack of qualified doctors are contributary factors.There is also a situation where many doctors are close to retirement age, or are considering taking early retirement, and the high influx of tourists also puts an immense strain on the already depleted resources. The University of Faro has opened a new course for graduates to train as doctors and has had a good response. Where do beliefs come from? Beliefs often come from our par ents, siblings, teachers etc. when we’re young. Children believe the most ridiculous things without question. My Mom used to make us “Dirt Pudding.” She told us she swept the kitchen floor and put all the dirt into the pudding. We be lieved her and all loved eating the pudding. But she had to come clean (pardon the pun) when we asked her in front of a visitor if we could have ‘dirt pudding’ for des sert. It turns out, it wasn’t really dirt, but raspberry jam! Your beliefs filter and determine your experience. You’ve probably heard people say, “I’ll believe it when I see it.” In fact, scientific evidence proves the op posite to be true, ‘You’ll see it when you believe it.’ When you believe something, your brain behaves like a tracking de vice, searching for evidence to support the belief. Here’s an example. If you have a Ibelief,can’t trust people who: “wear dark glasses inside” or “have a ‘loose’ handshake” or “don’t look you in the eye when they talk to you” or who paint their nails /read newspapers/ ride on broomsticks etc.” (Well, let’s face it, they make about as much sense as the oth Theners!) you will notice those things that confirm your belief. In turn, you’ll start behaving like you don’t trust the person and he/she will feel awkward and uncomfortable. Their discomfort will show out wardly and will confirm your belief that “they can’t be trusted!”

Some of the most harmful beliefs you can have relate to your sense of identity - who you are. They always start with the words “I am”. Examples; “I am not good enough.” “I am dumb.” These beliefs are damaging because they’re more pervasive. They af fect your very sense of who you are. They become entrenched over time, like all beliefs. They become entrenched because something as simple as mak ing a mistake, confirms and reinforces the, ‘I’m dumb/ Not good enough’ be lief. Someone with out those identity beliefs would just say, “I made a mistake.” The things you don’t believe are as important as the things you believe. Whether you believe something or not it’s still a belief! I’ve heard people say, “I don’t believe in mir acles.” Therefore, they will look for concrete, sensory explanations to justify unusual occurrences. Some one who does believe in miracles will explain their experiences in a very different way. So how do you change a nega tive belief? The first step to changing a belief is being aware of it. Here are some questions to ponder: What do you believe? What don’t you believe? How do you validate those beliefs on a day-to-day basis? If you believed something else, how would your life be different? How much more would you be ca pable of? On the road from Tavira to Cachopo, along with some of the most stunning views in the Algarve, you will find Mesa do Cume, the Table on the Top. The owners tell us in their own words their story of how it all began.

T hat day in 1995, we (Teun/ Tony/Antonio and Maria) drove from the Alentejo into Algarve, along the N379, through Alcoutim, Martin Longo, Cachopo, towards Tavira, and on a little café terrace in Portela da Corcha, we fell in love with East Algarve. We loved it so much that we went back and posted a sign saying “ahead you can find a res taurant with a stunning view over the serra and the ocean”. That was not our first visit to the Algarve, but it was the beginning of our dream. Then one day in 1996 we walked a wonderful path from the very last and lonely house down to the river in Cerols, an almost uninhabited mountain village. It was winter, the afternoon sun was already low, and the wind was sharp, but the beauty of the land was breathtaking. We called the house, which was to be our future home, ”the adventure” rather than “the investment” or “the romance”. Every winter Teun took his mother-in-law, the cat and the pigeons to Cerols, and they loved it. It was in the winter of 2002 Ma ria decided that if her mother and Teun wanted to stay in Algarve all year, she would love to as well. So work had to be done; money had to be earned. Early in March 2007 the sun shone as if it was summer. Neighbours, friends, family from Holland, Mayor and Presidents of freguesias, col leagues of the pigeon club, were at the Opening Day of our Mesa do Cume, Table on the top. Inside and outside, there was a lot of eat ing, drinking, chatting and enjoying the sun and the view. One very special day in June 2007 our daughter from Australia came over and our son and his wife in terrupted their world trip to join us and to give a helping hand to par ents who had to learn how to sur vive the hardship of catering work. We loved the work but were too ambitious, without any experience. And don´t forget we were by that time already 60 and 55 years old. Oh, beloved kids. Today in April 2009, we do it our way, together with our great help Maria Jose Campos from Cacho po, and we like it very much. We have realized our dream and it has been a great adventure. We have a restaurant with a nice, modern ambience on a beautiful spot in

The farm house in Alcaria do Cume which they had passed so many times without appreciating it, ap peared now to be a wonderful spot in the middle of the serra to turn into a restaurant. Both of them loved cooking for their cooking club and, having missed earlier op portunities in the field of catering, they decided to grab this one. The real adventure was starting.

Singing at the Cavern in Liverpool in the early 60’s, the Beatles were in the audience to watch ACDC lead singer BrianJohnson with Big JoeTurner on the same billas us (The Ray Stubbsall stars) at The Cornerhouse in Newcastle. My mate Kev, Newcastle for the Cup!! Me getting into a bit of bother with the Police during a visit from Margaret Thatcher. Since our launch in Decem ber 2008, Gordon has been a tremendous help, offering his services as a profession al photographer free of charge. Dur ing his long and interesting career photography has always been close to his heart, though if things had turned out differently his passion would have helped him make his name in another field of activity.

He was born in South Shields, Newcastle, the son of a keen amateur photographer, so young Gordon’s Christmas and birthday presents always took the form of camera equipment. When leaving school he joined the industrial research photography department of Reyrolle at Hebburn and took a city and guilds course in photography at Newcastle College of Art and In dustrial Design. But he was also a keen musician and after leaving Reyrolles he joined the Mecca as a staff pianist, hold ing down a job at Liverpool Locarno for 3 years. He doubled music as a night-time occupation with a job with a well-known Merseyside photographer. On the music side he was backing the Beatles, the Rolling Stones, Manfred Mann and Sandie Shaw, among others. In the studio he was helping with sit tings by famous personalities such as Epstein.

In 1965, when Gordon was 25, the band moved to Dennistoun Palace in Glasgow and as ‘The Deleme res’ were runners-up in Mecca’s annual contest for ‘the best small band of the year,’ Two years later and feeling like settling down, Gordon returned to Tyneside and joined Newcastle Chronicle and Journal Ltd, as a photographer printer. A short stint as a staff photographer with Reyrolle, his first employers followed and later he joined a well known Newcastle firm of photographic printers as their se nior photographer. In 1970 he set up a company with two other photog raphers in Newcastle. This lasted three years until he set up his own company as an industial and commer cial Havingphotographer.movedtothe Algarve in 2007, Gordon is still enjoying his music and tries to keep his hand in when ever possible. Photography is still his passion and he will be displaying his work at the newly opened “Co lours” gallery in São Brás de Alportel.

T he little town of Manta Rota is spectacularly located amidst the estuary of the Guadiana River, the Natural Reserve of Castro Marim and Vila Real de Santo António and the Natural Park of Ria Formosa. Man ta Rota is integrated in the borough of Vila Nova de Cacela, which be longs to the council of Vila Real de Santo António. This Algarve region has about 12 kilometres of sandy coastal strips, one of the larg est in Europe and is considered a privileged and important place for the observation and study of local fauna, flora, migrating and aquatic birds, as well as the protected Ibe rian Mantachameleon.Rotawas a fishing village and an important agricultural de velopment, which may be seen by the many farms still scattered in that area. This was due mainly to the construction of the railway station of Cacela, which opened in 1906. One of the most interesting cele brations of the Algarve: “a Festa de S. João da Degola” held every year on the 29th of August on the beach of Manta Rota “o banho santo” (Saint Bath). This marks the date on which Saint John the Baptist, the great preacher of the banks of the Jordan River, had his throat cut more than 2000 years ago. This is the highlight of the celebrations and it is held every year. Every year since the beginning of the 19th Century, hundreds of peo ple from the hills of the Algarve, known as “Montanheiros” (people from the mountains) would reli giously come down to the coast, some on foot, others riding their donkeys. They would arrive at the beach of Manta Rota, where they camped, and at the first light on the following day take a bath “dar banho” (as it is said in the Algarve – give a bath). This bath symbolizes the faith people have in the Saint, and recreates the martyrdom of Saint John the Baptist. This was a very important time for the people of the mountains and the coast; a time when people met after a year, giving them a chance for a cultural, commercial and social exchange. This celebration has become more important because it teaches the younger generations a tradition that is hundreds of years old and thus will not be forgotten. Another way of understanding our origins is to observe local tradi tional folklore, which is different in each region and reflects the char acter of its inhabitants, their typical regional customs, the traditional and free time activities, as well as their traditional music and dance (the famous “corridinho algarvio”) as performed by the traditional folklore Foundedgroups.in2001, the local folk lore group (o Rancho Folclórico da Manta Rota) conceptualised and rehearsed by the Association “A Manta”, represents the pass ing on of the cultural and historical knowledge to the younger genera tions as well as to all the visitors. This is, perhaps, one of the best ways to discover the roots of a so ciety, where history comes alive. For that reason you shouldn’t miss the Portuguese Folklore Festivals that happen, mainly in August, throughout the country, including Manta Rota. We must also refer to the archaeo logical discovery of a Roman villa in Manta Rota. This villa is thought to be part of a greater complex of villas throughout the coast of the Algarve. This discovery has enabled histori ans to rethink the Roman period of the region, important knowledge for the history of the Algarve, as well as for the history of mankind.

The beaches continue from Man ta Rota all the way to the border town of Vila Real and are so vast, they never seem to get full, even in the height of the season. There are many cycle routes in the area and you can also take long walks in peace and tranquility to Fabrica and the beach access at Cacela Velha and beyond. There are many restaurants serv ing fresh fish dishes and usually a good selection of fresh meats too. For example, “Paraíso” is less for mal and does good grills, “Restau rant Manta Rota” has good sized portions, “Mars Bar” is known for a good selection of international meals, English breakfasts etc and a nice beer garden ambience. “Proa” is a cosy restaurant which has a good atmosphere. Then you have the ones closer to the beach, “Finalmente” for fine dining and shellfish among other dishes, “Rios” for less formal dining and good dishes of the day and in both of these restaurants they have roof terraces as a choice for alfresco dining. Lastly you have the two new restaurants right on the sand dunes with ocean view “Cha com agua salgada” for drinks and “Sem espinhas” to the far left for a good menu and atmosphere. Extra facilities include three super markets and many cafes serving regional cakes and toasties. Entertainment during July and Au gust is fantastic; it encompasses the entire beach front and includes many music concerts, art festivals which include rides and stalls sell ing traditional produce. Also we have the Manta Beach Club in July and August which is an open air night club in the dunes which was very popular last year and attracted many VIPs; so a lot of people vis ited. Also at Carnival, Easter and festival times the council organises fairs and Followingentertainment.ontothewest of Manta Rota is Cacela Velha and Fabrica, a beautiful place to visit histori cal buildings and the most pic turesque setting for photographs. Many people who don’t live in the area choose to marry there be cause of the surroundings and the lovely views. There are a number of great restaurants which have roof terraces with panoramic views of the ocean, making it a lovely place to visit at any time of the year. The council organises events and craft fairs and usually every year in July there is a special event “Noites da Moura Encantada” where they have a magical few nights of Ara bic music, belly dancers, snake charmers, stalls selling everything from leather goods to food. Many people come from miles around to soak up the atmosphere. The town above Manta Rota, Vila Nova de Cacela has all the neces sary facilities for everyday living; the banks, chemist, post office, schools, public transport links and trains run from there all across the Algarve. The monthly market visits Cacela on the third Sunday of ev ery month. A restaurant which al ways has a good selection of fresh food is called Sabores on the main crossroads of Cacela. On the main street you’ll find me in the Algarve Manta Properties of fice. The council has recently invested a great deal in the renovation and improvement of the beach area, introducing hun dreds of parking spaces and love ly new restaurants on the dunes to make it better for the visitors.

How has the current crisis affected the sales in the area? The market surprisingly is still healthy in this area. There are more Portuguese buying, and they appear to have lost confidence with the banks, and are investing their savings in property, mainly to rent out. They know that returns on rental properties are high and they have a company who they trust to look after it and rent it out for them. Have the prices been reduced on the properties? Two years ago fewer owners and builders were willing to negotiate on the prices of houses. With the situation of the exchange rate with the pound, they are now convinced that it is important to be realistic and fair with pricing. On average the price of houses has dropped by 10-15 thousand Euros. Do you have any bargains at the moment? We have lots, we have brand new apartments in Vila Nova de Cacela from 85.000 Euros with fitted kitchens and pre installation of air conditioning. We also have a nearly new, really well maintained, two bedroom townhouse near to Tavira at a price of 159.000 Euros, much lower price than the market value. They learnt Portuguese in a short space of time and have hundreds of friends. You have the family friendly wide beaches to enjoy. The local community centre organizes classes for dancing, aerobics and rollerblading. Furthermore, at the school, there are FREE Portuguese classes for Expat residents which are extremely popular. What do you see for the future of Manta Rota? We are positive and see that the crisis doesn’t mean that people stop buying, just that their budgets are reduced a little. It is a developing area and a lovely beach resort; people continue to take holidays in this area on a regular basis. People are choosing this area because it is less developed and you don’t pay over inflated prices for tourism.

Air source heat pumps are currently the most commonly installed system and are available in reversible (providing heating and cooling) and nonreversible (heating only) forms. Even here in the Algarve, this type of system can be adversely affected by icing up in cold weather, just when you need them most, and of course efficiency is drastically reduced. Automatically controlled back-up heaters are usually included within the air source heat pump package. Due to the larger scale of production and sales, competition ensures that air source heat pumps are being improved all the time and they are definitely easier and cheaper to install. Next month we will discuss how the heat is transferred into the home or area to be heated, and we would welcome reader’s experiences of solar heating installation, commissioning and use for inclusion in the magazine. But the simplest application for a heat pump is of course the swimming pool. We did what we suggest that you do; we contacted our local supplier and asked him few questions. T here are three main sources from which the heat may be captured: Ground source; water source; and air source, and each source requires a different variety of heat pump, though the heat delivery system options are similar for all three. The Ground Source heat pump, known as a geothermal system, promises the best year round energy efficiency and is based on pipe-work buried about 2 Metres deep, where there is a tremendous store of heat energy at around 12 degrees Centigrade all year around. It is virtually maintenance free and will probably last 50 years or more. The main problem here is the cost; it is likely to be double the cheaper options. If you have the land and access to the cash – don’t discount this option – it’s like set it and forget it. A river, small stream, or better still a spring can provide a water source of heat, though these are most often custom built and designed systems, specifically engineered for the application. Very high efficiencies can be achieved; however, water flow may dry up in summer and freeze, or become too cold for efficient use in winter, just when you need it most. If you have water close to your home and not much below the level of the equipment, then this may well be the optimum long term solution for you. Bear in mind that relevant authority licenses are required for abstraction of water from natural sources.

This week we look at the various types of heat pump available and focus on the luxury of a heated swimming pool, but using natural heat, with a minimal carbon footprint.

Q. What are the Cost Benefits? Heat Pumps are amazingly efficient with installation and running costs much cheaper than other options. Electric heaters, gas heaters and oil heaters use energy to raise the temperature of the heating medium, whereas the heat pump uses freely available heat in the surrounding air. The majority of the cost is in transferring the medium around the Thesystem.efficiency of a heat pump is measured by the Coefficient of performance (COP). Swimming pool heat pumps generally receive a COP rating of 4.5 to 5 units whereas other pool heating systems rarely receive a COP of 1.0, meaning that the swimming pool heat pump is up to 5 times or 500% more efficient than other forms of swimming pool heating. It can be simplified by saying that for every 1 unit of electricity that you put in to run the heat pump you get 4.1 - 5 units of heat out! So, 1kW of electrical energy will give you 4.1 to 5kW of heat from a Swimming Pool Heat Pump.

Q. What is a Swimming Pool Heat Pump? A Swimming Pool Heat Pump is a super efficient way of heating a swimming pool. Heat pumps make full use of the advanced refrigeration technology to capture the heat present in the outside air and transfer it to the swimming pool water. An environmental refrigerant gas absorbs and transfers the heat energy through a refrigerant circulation system. The Swimming Pool Heat Pump circulation system consists of a coil filled with a refrigerant liquid that absorbs heat and transforms it into a gas, the excess is discharged off as cool air. This refrigerant gas is then forced through a compressor in the heat pump which, when condensed, intensifies the heat. This heated gas then passes through a heat exchanger where the heat from the gas is transferred to the pool water. The refrigerant in the Swimming Pool Heat Pump then turns back to a liquid state and passes back through the system.

In uncertain times it makes a lot of sense to be conservative and to avoid risky investments. Better to settle for a lower return, than risking losing your Quantitativecapital. easing (printing large amounts of money) by the USA and UK amounts to an increase in public debt and excessive liquidity to fight off deflationary pressures in the short term, in order to try to jump start an economic recovery. Most economists would agree with this policy. The risk of doing too little to fight off deflation is considered greater than the possibility of a build-up of inflationary pressure in a year or two. The argument would be that the unwinding of the credit boom of the past 10 years will require higher savings and therefore weak consumer spending and low investment for increasing production capacity. When demand is weak, there is no pricing power and inflation should stay low. This observation may have been true during past economic downturns, but could prove wrong this time. The quantative easing policies of the USA and UK have also weakened their respective currencies versus the Euro, Yen and Swiss Franc. As a matter of fact, the government of Gordon Brown has made no secret of its weak currency policy to gain a competitive edge for British industry. Governments need to protect their economies and create jobs and by nature their actions tend to be short termish. If they don’t please their constituents they risk not being re-elected. Moreover, there is a real danger that governments could start considering inflation as a way to reduce the burden of their public debt. This results in erosion of your current and future purchasing power. Solidarity aside, on an individual basis, you may not be thrilled to see both your current and future purchasing power of your income, savings and pension diminishing. When the massive liquidity created by Q.E. bears fruit and the economy starts to recover, it may prove to be extremely difficult to start reabsorbing liquidity, risking inflation and interest rates moving up to levels not seen in a long time. The smart money is already hedging this risk. Paulson & Co bought an 11.3% stake in AngloGold for 984 million Euros as the hedge fund moved from betting against banks to betting against governments. Gold is the only true ‘hard currency’ and stands to benefit as paper currencies suffer from the financial crisis and from governments printing money. If you believe this to be a probable scenario, you should stress test your current and future financial position. If you are have a mortgage on your property, do you have a floating rate mortgage or fixed rate? When inflation picks up again, interest rates will too. It seems unlikely this will happen in the near future, but in 1 to 3 years time it is a real possibility. Fixing your mortgage for 10 years gives you protection and peace of mind. Can you still service your monthly mortgage payments if your source of income is reduced, e.g. resulting from a weakening currency or when you or your partner lose your job? Is your LTV (loan to value) 50% or less? Are you relying solely on a pension when you are retired or do you have other sources of Whenincome?paper assets are losing their value and gold is not your thing, consider allocating part of your money to real estate. Real estate is a good second best providing inflation protection in the medium to long run. Furthermore, with some developers and owners accepting offers of 30 to 50% below the asking price, it again starts to make sense looking at real estate as an income generator too. Investors have long been accepting sub par rental income returns, using leverage to increase their return on investment. The real profit came from capital appreciation of the property, not the rent. This has changed. When you manage to buy a property at prices not seen in the last 7 to 10 years, your rental yield can be as high as 7%, much higher than the long term average of 4% and the near zero % investors have been accepting in the last two years. In some cases you can even expect a return of 10% or more. You don’t need leverage to achieve these returns. As a matter of fact, it is the unwinding of excess leverage that offers you these bargains to begin with when assets change from weaker into stronger hands. A contrarian can make a case for using a small percentage of leverage when everyone else seems to be doing the opposite. If you consider doing this, don’t go overboard, e.g. 25 to 30% maximum. Don’t forget to stress test your investment decision before you buy. Hope for the best, prepare for the worst. Water your new lawn thoroughly, preferably using a sprinkler and never let it dry out as this will cause shrinkage. Leave at least 10 days before mowing and then only with the blades 1.5” high. Turfing during this period means that newly laid turf is then rarely subjected to the stress of drying winds or hot sunshine, and it usually interroots before such conditions.

2 Mark out the exact shape of the lawn and allow for the turfs to extend an inch or two beyond its edges. This can later be trimmed after the turfs have been laid and have settled down, to leave a neat, sharply defined edge.

LAWNS FROM SEED When to Sow? Ideally Autumn (early September) and Spring (April - although germination can be slower at this time of year) Sow during a period of calm, dry weather, when the surface of the seed bed is dry and the soil does not adhere to boots or to the wheels of the seed drill. There should however, be moisture just below the soil surface. 1 Divide the seeds into two halves and, if sowing by hand, broadcast one batch walking lengthways across the site and the other batch walking crossways. 2 If using a seed drill lay a strip of Hessian along the edge of the site and over run. Again, sow half the seeds lengthways and the other half crossways. 3 After sowing lightly rake over the entire seed bed. Do not roll as this tends to flatten or cake the surface. 4 Protect from birds by inserting small twigs or sticks at intervals in the seed bed. Then twine black thread among them 3-4” above the soil surface. After germination. The soil surface is often slightly lifted at germination. Therefore when the young grasses are about 2-3” high, lightly roll when the surface is dry, using a light garden roller. Two or three days later, when the grass has recovered from rolling and is growing vertically again, cut with a sharp-bladed mower.

4 Stagger the joints of turf by laying half turfs. Do not walk on newly laid turf instead lay down planks as pathways. This spreads the weight and prevents depressions being formed by heavy boots or heals. A t one time, turf lawns were much more common than seed lawns. However, in recent years there have been considerable improvements in the quality, variety and availability of seed mixtures, and sowing is now an increasingly popular alternative. Advantages of Seed. The most important advantages that seed has over turf are that it is much cheaper to buy and there is less work involved in sowing than in laying turf. Seed can also be stored easily and will not deteriorate. Sowing can therefore be delayed until the weather conditions are exactly right. Advantages of Turf. The most obvious advantage of turf is that the lawn can be created and used almost immediately. Turf has an instant visual effect and it is easier to achieve a neat, well defined edge to paths and borders. Turf can also be laid in late autumn or winter, at which time it is too late for sowing grass seed.

1 Applying a dressing of fertilizer a few days before laying. The fertilizer encourages the turfs to knit together and the roots to establish. Do not feed it if the soil is already rich and well manured. Rake in the fertilizer, incorporating it well into the soil.

3 Laying the turfs in straight lines, ensuring that each turf is close as possible to the proceeding one. If a segment of turf is needed to complete a row, lay a whole turf at the end and place the segment behind it. Allow a 1-2” overlap at the edge.

FERTILIZING: As with all plants, grasses require nutrients to grow, and regular applications of fertilizer help ensure a vigorous, healthy lawn. Most of the nutrients essential for growth are plentiful within the soil, but four – nitrogen (N), phosphorus (P), potassium (K), and iron (Fe) are often applied as a supplement. For most lawns, two applications of fertilizer a year are sufficient. Spread the Requeijão over the unrolled eggroll. Leave a small strip at the end free of cheese. Sprinkle goat’s cheese or Parmesan cheese, basil, chives and sundried tomatoes on top of the Requeijão. Roll the egg roll in baking paper, you may leave it overnight in the fridge. HEATING Heat the eggroll in the oven on 180 degrees, 10 – 20 minutes. Cut into slices, before or after heating.

• salt & pepper Melt butter, add flour, heat for 3 minutes. Stir in the hot milk to make a roux. Stir in the egg yolks, courgette and whole meal and flavour well. Let cool down. Beat the egg whites very stiff and stir them into the roux with the spatula, be careful not to let loose too much air. Preheat the oven to 200 degrees. Put baking paper on an oven tray of 38 x 25 cm. Spread the mixture on the tray, sprinkle with Parmesan cheese & bake for 15 to 20 minutes until the roll is golden brown and springy. Place on a damp tea towel to roll.

The exchange of eggs in the springtime is a custom that is centuries old in the Christian world. From the earliest times, the egg was a symbol of rebirth in most cultures. Eggs were often wrapped in gold leaf or if you were a peasant, coloured brightly by boiling them with the leaves or petals of certain flowers. In Germany it is traditional to paint eggs green and eat them on Maundy Thursday while in Greek cultures eggs are dyed red as a symbol of the blood of Christ. Hot cross buns originated from the Greeks & Egyptians, where small cakes or buns were made in honour of the respective goddesses they worshipped. Buns marked with a cross were eaten by the Saxons to honour their goddess Eostre. It is thought the bun represented the moon and the cross the moon’s quarters. To Christians, the cross symbolises the crucifiction.

E aster falls on April 12th this year as I’m sure all you chocaholics will know! Originally a pagan festival, the ancient Saxons celebrated the return of spring with an uproarious festival. By coincidence, the pagan festival of Easter occurred at the same time of year as the Christian observance of the Resurrection of Christ. The Christian missionaries were keen to convert the pagans and at the time it made sense to make it a Christian celebration. Originally Easter was called Pascha after the Hebrew word for Passover, a Jewish festival that happens at that time of year. It was replaced by Easter, which evolved from Eostre, the name of the Anglo Saxon goddess of fertility and springtime. The early name Eostre, was eventually changed to its modern spelling, Easter. Prior to A.D. 325, Easter was celebrated on different days of the week, including Friday, Saturday and Sunday. In that year, the Council of Nicaea was governed by Emperor Constantine. It issued the Easter rule, which states that Easter shall be celebrated on the 1st Sunday that occurs after the first full moon on or after the vernal equinox. Easter must be celebrated on a Sunday between the dates of March 22nd and April 25th. Lent is the forty-six day period prior to Easter Sunday. For many Christians, this is a period of fasting and repentance in preparation for Easter, ending in a feast of seasonal and symbolic foods. It begins on Ash Wednesday. The Tuesday prior to ash Wednesday is carnival time “mardi gras”. It is a way to “get it all out” before the sacrifices of lent began. In the Algarve we celebrated carnival last month and much fun was had dressing up. Not that we say no to it though!! Here’s our brief guide to some traditions and it’s origin.

• 2 dl leite or milk • 375g farinha or flour

• 3 drops of vanila essence

• 2 ovos cozidos or boiled eggs • Quince jelly METHOD Soak the yeast in the milk, add half the flour, 6 eggs and stir well until the ingredients are well mixed. Put the mixture to one side wrapped in a tea towel until it rises. In a separate bowl mix the butter & sugar, add the grated lemon peel, & vanilla essence. Now add this mixture to the yeast & knead well then add the remaining flour. Beat a little more until the dough appears shiny & soft. Add a little more flour and let it rise again for about an hour. Pre heat the oven at 180 degrees. After it has risen, put it on table dusted with flour, take the mixture and make rolls with it. Make a cake with the rest of the mixture, place a boiled egg in its shell on top and in the centre. Decorate with the little rolls on top. Beat the remaining egg and glaze the dough, place it on a baking tray dusted with flour, place in the oven for about 30 mins. Remove from the oven & brush with tepid quince jelly.

Translated as ‘Portuguese Easter cake’ it originates from the convents and monasteries of the 1700s. It is an ancestral food made by the ritual mixture of water, salt, eggs and wheat flour. The form & the content vary from region to region and from salty to sweet. The Folar tradition has a base, a ritual of solidarity and brotherhood, with strong symbolic and religious meaning. It is also the offering to the godfather and the priest for Easter. There are strong links between this act and the bread that Jesus shared with his disciples at the last supper. In some regions it also comes with a boiled egg in its shell, symbolically representing the rebirth and resurrection of Christ.

The tournament got off to a flyer at Bellavista with defending champions Team Cuesta San Diego getting lost in central Huelva, having gone via Madrid to reach the course. Warning signs were already apparent with Neil Whittaker unable to locate his own apartment in Ayamonte the day Earlybefore.leaders were Rocky IV with 87 points and even at this early stage many thought this would be the team to beat. Guest Pro Jonathan Pearce, very kindly gave up his time at short notice to escort the first ever ladies team around the course. I personally thought the coaching Jonathan gave was a little too attentive but the girls seemed to enjoy themselves! So off to Castro Marim for round 2 and what a day it proved to be. I promptly illustrated my all round knowledge of the game to fellow onlookers attempting to use one of the new laser sighters on the first tee, only to be informed I had it pointed the wrong way round & the lens cap was still on! The playing conditions reflected the scores – poor. Team Cuesta San Diego were lying 4th - exactly the same as last year at this stage, who went on to win comfortably. The stage was set for a cracking final round to be played at Quinta do Vale. This proved to be another challenging day for the players with most scores around the mid 20’s. Many wondered would the Rocky IV team crumble under the pressure. Captain Richard Lewis showed his intentions from the first tee piercing the fairway with a 1 iron. Ultimately the boys were simply too good on the day for the others to catch up & finished worthy winners. So it was down to Mick Revel (Rush’s Revels) to come in with 20 points or more to ensure second spot for Gerry Rush’s team, which like a true contender he did, totalling 21 points, a fitting end to a wonderful tournament.
