(Not all copies will have been delivered by this date, but just a reminder.) Wow, the Olympics what can I say! I had a great day in Glasgow taking in 2 football matches - Honduras v Morocco & Spain v Japan. The atmosphere was great, we encountered a group of Morocco fans, decked out in traditional dress, they’ve never missed an international game and were over the moon after Morocco scored. The volunteers were wonderful, so helpful and cheerful they did a great job. Even watching the other events on TV - I found myself roaring at the TV with excitement as Mo Farah crossed the line in the 10K. Bring on the Paralympics! I’m sure we’ll be even more inspired by what these athletes achieve. Seasonal Recipe This quick curry is so easy to make and much cheaper than a take away. We’ve used lean lamb steaks but you could replace the lamb with pork fillet, chicken or tu rkey.

Heat 1tbsp of the oil in a large deep frying pan. Add the lamb chunks an d fry over a high heat until browned all over. Remove the lamb from the pan with a slotted spoon and set aside.

Add the rest of the oil to the pan and fry the onion and aubergine for 7-8 minutes, stirring all the time until golden. Stir in the curry paste and cook for 1 minute then pour in the sieved tomatoes and bring to the boil.

• 3 tbsp sunflower oil • 650g lean lamb steaks, cut into chunks • 1 onion, peeled and chopped • 1 large aubergine, cut into cubes • 2tbsp Rogan Josh curry paste

Return to the lamb to the pan an d reduce the heat to a simmer. Cover and cook gently for 25-30 minutes until the lamb is tender. Stir oc casionally and add a splash of water if needed.

Season to taste with salt an d freshly ground black pepper. Serve the curry in warmed bowls garnished with coriander an d with chapattis, sliced tomatoes, cucumber and onions.

Serves 4 Ready in 50 minutes

400g sieved tomatoes Salt and freshly ground black pepper Fresh coriander leaves, to garnish Chapattis, sliced tomatoes, cucumber and onion, to serve

TIP

You’ll find jars off curry pastes in most supermarkets and they certainly take all the hassle out of making an authentic tasting curry at home. Rogan josh is a medium-hot paste but for a really mild flavour use a korma paste or go for a vindaloo paste if you prefer a curry with a little more heat.

Morocco

On the North East coast of Africa lies Morocco home to Oases and Kasbahs. Deep in southern Morocco, the Valley of a Thousand Kasbahs is a fabled lan d where ancient forts of mud and straw mingle their reflections in the sparkling waters of the river Dadès. Balancin g on the rocks, sprinkled like sandc astles from village to village, they take on the colo urs of the earth, red, mauve, ochre and gold. Rainstorms an d floods have long t hreatened their walls but they still st and, like proud sentinels from the past. In this tortured land shaped by earthqu akes, the hills are bare, baked dry, but alon g the river are almond groves, luminous patches of young wheat and mud houses with zigzag patterns on their walls and ornate grills on their windows. Pink roses bloom in a secluded grove and in the little town of El Kelaa M’Gouna, every sho p sells rose water and scented lotion. There, women cover their faces as you appr oach but their veils are fringed with silver trinkets. Where the roads from the valleys meet at over 3000 feet, Ouarzazate greets you with the most illustrious kasbah, once home of a wealth y

lord. Inside, a forbidding maze of dark alcoves and latticed wind ows recalls centuries of history while storks rattle their beaks on t he battlements. Follow the road an d you could dine pash a-style in Tifoultout kasbah, gaze at turrets and wall t attoos in Taour irt or explore the World Heritage Site of Ait Benhaddou where the fragrance of mint tea lingers in the air and locals speak of Lawrence of Arabia, Jewel of the Nile and other epics filmed on the spot. Suddenly, the desert wind rages through the streets, shaking the fig and pomegranate trees. Shops close their doors and the bo ys fishing in the river loo k at t he sky and pack u p their gear. It’s time to escape and climb to the spectacular Ait Saouen pass in the Anti-Atlas before tackling the steep descent to the Draa valley, stopping n ow and then to allow an iguana to crawl across the tarmac.

When we stand in front of a microwave waiting im patiently for something to heat up it seems like it is taking forever. When I tell someone to do just two minutes, I get that look of “What good is that going to do?”

Well let me tell you two minutes can accomplish more than you can ever dream if you will just quit whining about what it won’t do and show yourself what it can do!

Club Focus

Harbourlights East Neuk Music Co Last year, after functioni ng as Waid Junior Operatic Society for more than 30 years, we cha nged our name to Harbourlights – East Neu k Music Co. Although we are affiliated to N.O.D.A (National Operatic & Dramatic Association), we decided it was time to make our group s ound more accessible to members and audiences alike, and felt that perhaps the “Operatic” title sounded a bit stuffy for this day and age. The length of our sea son wa s also cha nged to August March with our annual production taking place Prior to Easter rather than just before the sum mer break.

Performing on stage boost s self confide nce and teaches the youngsters important life skills such as sel f discipline, responsi bility and team building skills – things that will help in their daily school lives and into adult hood.

Next year’s production – “Dream On” by Malcolm Sircom will be performed on 20, 21 & 22 March at Waid Centre. This a modern musical written for young people in an attempt to reach an audience which mi ght never consider that the works of William Shake speare were in any way appealing. A version of "A Mids ummer Night's Dream" it’s dramatic, colourful and humor ous and we Our cast members come from all anticipate that both the company over the East Ne uk to learn stage and our inte nded audience will craft, singing, dancing a nd drama. find this extremely enjoyable.

The company starts it's season on Wednesday 22nd August 201 2, and is open to children i n the area (from Primary 4 up to and including those people aged 18 and still in education). We rehearse every Wednesday eve ning during term time from 6.30 pm to 8.00 pm up until the begi nni ng of December, take a break until January and the n rehearse we ekly again fr om 6.30 pm to 9.00 pm until 'showtime'. All new and returning members are welcome up to the October break, by which time casting will be final ized and any new members must wait until the foll owi ng year.
