“Stellar Delights” A look inside Seagrille, Koh Samui’s new Thai and international restaurant at CELES BEACHFRONT RESORT Seagrille is perfectly blended with the natural beauty of its surroundings. The light, airy dining room with its blonde wood décor is ideal for the seaside setting. You can either eat indoors or sit outside on the terrace but either way you’ll be able to enjoy the beautiful sea views afforded by the north-coast restaurant. It’s a new addition to the Samui dining scene, but it’s hit the ground running, and thanks to seasoned chef Khun Raden and his team, it’s offering some very fine food in a wonderfully relaxed and casual setting. All the food is well-presented and portions are extremely generous. Tastes are mouth-watering as everything is guaranteed to be totally fresh. As the restaurant’s name suggests, there’s plenty of fish on the menu, wherever possible from local waters but also from further afield. Meat lovers are also catered for and there’s a great variety of everything to be had.
Seagrille offers both Thai and western food and naturally, you can also mix and match, thanks to the long menu. You’ll also find a list of wines to go with the main dishes with prices to suit every pocket. There’s so much that’s recommendable that it’s hard to single out a few examples. Pu-nim-tod-kra-tiem is definitely worth trying if you love crab; this particular dish is a deep-fried soft shell crab, nicely crisped in garlic and served on a delicate lattice-work of fried taro. Then there are the jumbo prawns with café de Paris butter sauce, served with two-tone saffron rice and broccoli pulp. If you’re undecided between fish and meat, then an easy choice is the excellent triple mix of pork, rack of lamb and prawn that will arrive at your table on skewers. A trio of dipping sauces accompany them. Meanwhile, if you’re at the restaurant with friends, you may wish to share the Jack’s Creek Wagyu tomahawk beef with herbed butter along with sautéed vegetables and
roasted potatoes. It’s specially designed for groups. There’s plenty of pasta, pizza, sandwiches and burgers and on the Thai side all the nation’s favourites, with soups, curries, salads and more. It’d be difficult to think of anything that’s been left out. Desserts reflect the Thai and international menu, with favourites a-plenty; just make sure you leave some room for them. Who can resist tiramisu or a mango crème Brulée? Seagrille is open all day, and offers memorably great dining whether you gravitate towards Thai-style dishes or international ones. Relax and enjoy the great sea views as you tuck into sumptuous yet always affordable dishes.

The Tastes of Japan Namu wows with sumptuous feasts in a chic beachside setting. This top-quality Japanese restaurant has gained iconic status thanks to the chefs who’ve worked here and who make it the place that it is today. Located in Maenam just a few metres away from the beach, Namu, W’s signature restaurant boasts a stylish air-con dining room, mixing blonde wood and Japanese minimalism. Think cool and comfortable, a million miles away from any clutter, but also extremely friendly. Oodles of both taste and quality abound with a full range of Japanese treats. You can even take a seat at the bar and watch Chef Andy and his team prepare them in the open-kitchen there.
Most of the dishes are true to their Japanese roots and are entirely authentic, but you’ll also find inspirations from Asian and international contemporary cuisine as well. Particularly recommended is the tuna cheese roll, a generous sized portion featuring akami tuna with melt-in-your-mouth cream cheese and mozzarella, along with Korean-style chilli bean sauce and nori. Also try the lobster udon, with the Canadian lobster and the udon hand-made in Japan. It’s accompanied by jalapeno sauce and chilli garlic mix and served in a large bowl. It’s ideal for sharing between 2 and 4 people. The restaurant is filled with delicacies that elsewhere you might not find at all on Samui or maybe not so creatively prepared. At Namu, then, you are in good hands and you can eat your way through just the kind of fare you
might find in an inspired restaurant in Tokyo or any sophisticated Japanese city. Wanting something special, enjoy a private romantic dinner on the terrace accompanied by fine wines. MARZANO PIZZERIA, AUTHENTIC NEAPOLITAN PIZZA BY THE BEACH Is there anything that says Italy more than pizza? Biting into a right out of the oven pizza is just heaven! San Marzano tomatoes originate from the small town of San Marzano Sul Sarno, near Naples, Italy. This is where they first started growing in volcanic soil in the shadow of Mount Vesuvius. Though it is commonly believed that the first seed of the San Marzano tomato came to Campania in 1770, as a gift from the Viceroyalty of Peru to the Kingdom of Naples, and that it was planted in the area of San Marzano Sul Sarno. Pizza dates back to 18th century when it was a garnished flat bread sold by roaming vendors to the poor in the streets. The biggest step towards its current popularity was the acceptance of tomatoes as a pizza topping by Neapolitans. The story is that pizza was endorsed by Queen Margherita in 1889
when baker Raffaele Esposito was summoned to bake for her. He then created the world famous Pizza Margherita with red San Marzano tomatoes, white mozzarella, and green basil to reppresent the colors of the Italian flag.Today, Marzano continues that rich tradition of perfect pizza making with an old-world tiled oven, lots of attention to the dough and the keep-it-simple approach to only the most amazing seasonal toppings – terrific handmade cheeses, the best tomatoes, the most savory meats and freshest basil. Marzano is very serious about Neapolitanstyle pizza that there’s an “ideology” on how the pizza dough should be prepared. The secret to our dough is that we know our ingredients; water, sea salt, flour, and yeast. We use a flour which is a highly refined flour that gets a lot of lightness in the
crust. If you talk to the Neapolitans, they say that the water from Naples is key. And we don’t use oil. As far as Neapolitan pizza is concerned, you want to see the blisters come out at high heat, which won’t happen with oil. Moreover, at Marzano, the finest locally bred and imported meats are chosen by our own in-house chef to help you get the most from your meat. A good grilled piece of meat is one of life’s simple pleasures, and we have taken pride in our grilling knowledge and skill so that meat lovers can taste the most tender and juicy meats. A few recommendations that are simply musttrys make up a majority of Marzano’s delicious menu. The Baci Four Cheese Pizza rolled with green apples, gorgonzola, parmesan, mozzarella, arugula and balsamic vinegar. This four cheese pizza is so tasty is might just melt in your mouth! Another absolutely stunning dish is Marzano’s Spaghetti Arrabiata. A spicy spaghetti made with fresh basil, red pepper, Marzano tomatoes, lemon juice and black pepper. A great dish if you love classic Italian cuisine with a spicy kick! At Marzano, none of that escapes our thoughts and we take the highest care and pleasure to achieve the goal posts that meat lovers have come to demand and expect from Marzano.

Le Jaroen at The Scent Hotel “Offers a satisfyingly small menu of dishes prepared with care�
Many restaurants boast massive menus listing tens of dishes, both savoury and sweet. Le Jaroen at The Scent Hotel narrows it down to what its chefs do the best while still offering enough variety to please everyone. Combining Asian flavours with French cooking techniques, Chef Ying Ratchaneekorn makes sure her kitchen uses as many local products as possible. “We import some meat, but most of the greens and fruits are from local market, where we find the quality is comparably excellet. And to add a Thai accent, I use native flowers and herbs to decorate the dishes,” she says. She then produces a sizeable menu that features less than 20 items, savoury and sweets combined. For a starter, she recommends avocado tuna tartar served on Oba leaf with a sprinkle of black sesame and aromatic chili oil. Refreshing and light, the dish, which sounds bland, has very well rounded flavours and pleasant seasoning. Chef Ying Ratchaneekorn could change your feelings about strong smelling scallop with her Hokkaido scallop on wasabi cauliflower
puree and orange caramel. There’s little whiff of fishiness from the shell, and the normally bland scallop is seasoned with slightly sweet and tangy caramel, with a hint of wasabi from the puree. You really don’t need salt or pepper for this one. The recommended luxuriously simple foie gras truffle miso soup. This truly East-meets-West recipe enhances the simple Japanese miso soup with the richness and creaminess of foie gras, with just enough heavenly fragrance of truffle oil on top. Beautiful Shore Setting, Great Food at Sea Wrap Set on the island’s north coast, within walking distance of popular Fisherman’s Village, you’ll find Sea Wrap, a bistrot-style restaurant that consistently offers great tastes at very affordable prices. Parking is a cinch here as the restaurant is part of Peace Resort, one of the oldest resorts on the island. Once you’ve gone through the foyer head straight for the sea and the restaurant. Sea Wrap overlooks the sands and tables and chairs have been set up just a few yards from the sea, enabling you to watch the sun go down as you relax with a drink and watch the stars come out before having a very romantic dinner. If you prefer you can sit in the restaurant itself – there’s plenty of space, thanks to the size of the place. The waiting staff are all friendly and will make you feel very welcome here. Take your time browsing the menu, which includes Thai, Italian, French and even
some Mexican dishes. The wine list has been carefully thought out, with a selection of wines to suit all budgets. For Thai dishes savor Tiger prawns with tamarind sauce, stir fried asparagus, red chili, Thai basil and crispy shallots, or try Crispy duck leg confit in black beans sauce, Mandarin orange and stir fried baby bok choy. Main courses here can take the form of real meat treats. Doubly Delicious - Olivio Italian Cuisine awes with both Italian & Thai delights Olivio Italian Cuisine at Baan Haad Ngam Boutique Resort & Villas is one of the very few Italian restaurants that’s right on the beach. Not just any beach, but a beautiful spot on the northernmost part of the bay of Chaweng. It’s decidedly romantic. Look out from the restaurant and you’ll see the entire bay as it sweeps down to the south. On an island where culinary competition is extremely strong, Olivio is renowned for for both its Italian and Thai cuisine. It’s been going strong since 2003 when it first opened, all the time headed by the same maestro, Chef Jakarin Huaysan, who cooks both his native Thai dishes, and, equally well, Italian and European favourites too.
It’s an open secret that as much as possible is made from scratch at Olivio. Take, for example, the pasta. Chef Jakarin prepares most of it himself, rather than buying it ready-made. He crafts his own fettuccini and cappelli d’angelo, or angel’s hair, a type of very thin spaghetti to which he adds, say, seafood with garlic chilli. He also prepares his own ravioli and for this he uses a filling of ricotta that he also makes himself. The same goes for the bread; it’s produced on the premises in Olivio’s own bakery. With attention to detail of this magnitude, it’s hardly surprising that the food’s highly tasty. And there’s a huge range of it, too. A bit of an understatement to say there’s something for everyone. Whether you’re after a delicious Toscana-style lasagna or a Thai massaman curry with all the traditional ingredients, you’ll find it here at Olivio. You’ll also find antipasti, risotto, pasta and pizza along with Thai salads, soups, curries and stir-fries. FOOD & OBESITY: A WEIGHTY ISSUE ‘obesity and how to combat it’

I thought it would be good to write on the ills of obesity and how we can combat it right from childhood. An obese child may look cute but the same can’t be said for an obese man. The right lifestyle has to be adopted right from childhood. Every parent must ensure healthy diets and nutrition for their children. Not only do they get healthier with good food habits but these habits can be ensured for their lifetime. Obesity leads to heart disease, this is a well known fact, but still we have people allowing themselves to go over their required weights. There are two main factors that cause obesity. The first one is genetic, the second one is our lifestyle and food habits. We are definitely what we eat. Exercise plays a key role on how we can maintain and control our weight. A daily brisk walk for 30 minutes can do wonders. Sounds simple but requires some determination and patience. When it comes to eating, most people forget what they ate or never know how much calories they should eat. Its here a journal for calorie counting may do wonders. Now we can discuss in a little detail on Diet. Firstly, carbohydrates like rice, bread, sugar etc., give us energy but these are the culprits
for a belly. Key note would be to have a low carbohydrate diet. Avoiding sugar and fizzy drinks would be a great start. Second part of a diet is Protein (meat, chicken, eggs, milk) give us energy and build our muscle. They are so important as they curb appetite. So if you are on a mission on how to really knock off some weight then you have to stick to a high protein diet. It might seem expensive to do so but is an effective and healthy way. Lastly, vegetables and fruits. Try to double your intake of vegetables, this will lead to feeling more full. This also reduces the risk of colon cancer. A plate of food must contain one fist portion of carbohydrate, one fist portion of protein, two fist portion of vegetables and one plate of fruit. Always try to eat a heavy breakfast and heavy lunch. Reduce dinners. Exercise keeps us strong and helps us to maintain our immune system. A very important factor to weight loss is Sleep. Research shows that people who lack sleep tend to overeat. So hopefully if you are a little determined to lose some weight, follow the above basic guidelines and get yourself fit in a month.

Chef Marty was born in Australia and grew up in the rural New South Wales district called Riverina, surrounded by the freshest produce both on and off his family’s farm. After finishing his apprenticeship, Marty moved to Sydney to work in a few fine dining restaurants and opened a bistro with a friend, before turning his career to hotels. He started from the largest hotel in Australia as banquets sous chef and eventually winding up as executive sous chef. eating on samui Chef ANDY Everything about Chef Fook Seong Kok – or Chef Andy as he’s usually called – radiates alertness and attentiveness to his guests. He’s now heading the team at Namu, the signature contemporary Japanese restaurant at W Koh Samui, and as often as not you’ll see him personally preparing food right out in the open kitchen. It’s an experience not to be missed; Japanese food requires the same precision as engineering and his deftness is remarkable. Japanese cuisine is traditional at its heart but simultaneously there’s a happy tolerance of the new. It’s part and parcel of the culture and Chef Andy’s creations mirror this. While he’s utterly at home making sushi and sashimi, he’s also got an eagle eye for how Japanese cuisine can channel some of the west’s most interesting dishes.
