It’s always great to sit around the firepit or campfire, and it’s even more fun to fix up some fun foods. Why not give these recipres a try next time you gather around the fire for a fun evening with friends and family.
CAMPFIRE CONES INGREDIENTS: Waffle-style ice cream cones Toppings: Chocolate chips, bananas, raspberries, strawberries, mini-marshmallows, Reese’s Peanut Butter Cups, chocolate bar pieces, Rolos, butterscotch chips. DIRECTIONS: Fill a cone with desired amounts of marshmallow and toppings. Wrap cone in foil. Place over the campfire for about 3-5 minutes, on a heated grill for 5-6 minutes until toppings are melted. CAMPFIRE STRAWBERRIES INGREDIENTS: 24 strawberries 1 cup marshmallow fluff DIRECTIONS: Pierce strawberries with a skewer. Place fluff in a small microwave-safe bowl and microwave until melty, 5 seconds. Dip strawberries in marshmallow fluff. Roast on a flame until toasted and serve. CAMPING MAC N’ CHEESE INGREDIENTS: 1-1/2 cups elbow macaroni 8 oz. prepared Alfredo sauce, just over half a jar 1/2 cup grated sharp cheddar cheese 1/2 cup grated Parmesan cheese 1/4 cup mozzarella cheese 1/4-1/2 cup half and half or whole milk Salt and pepper, to taste DIRECTIONS: Cook pasta according to package directions. Drain and rinse with cold water. Stir Alfredo sauce into the cooked pasta with the three cheeses and enough milk to keep things smooth and fairly liquid. This will keep mac and cheese from drying out. Stir in salt and pepper to taste. Divide between four mini or one large aluminum pie tin sprayed with nonstick cooking spray. Spray one side of aluminum foil with more nonstick cooking spray and cover each individual mac and cheese portion, sprayed side down, facing the food. Seal well. Store in a large plastic food storage bag in a cooler until ready to cook. Prepare a fire and let it burn down to the coals. Place a cooking rack over the top approximately 2-3 inches above. Place each pie tin over the hot coals and cook 8-10 minutes or until hot. Remove from fire and serve immediately. 10 101 Things Things to Do • 2019
S’MORES FIREPIT PIES INGREDIENTS: Non-stick spray or oil for pie irons 8 slices cinnamon swirl bread 4 graham cracker squares, crushed into large crumbs 1/2 cup chocolate chips 1 cup mini marshmallows Pie irons DIRECTIONS: Lightly grease pie iron with oil or non-stick spray. Place one slice of bread in one half of the pie iron. Sprinkle with one-fourth of the graham cracker crumbs, 2 Tbsp. chocolate chips and 1/4 cup marshmallows. Place another slice of bread over the marshmallows and close the pie iron. Trim off excess bread. Cook pies over fire for 1 minute, flip and cook for an additional minute on the other side. Slowly open pie iron to keep from breaking the pie apart and remove pie. Makes 4 pies. CAMPFIRE HOT DOGS INGREDIENTS: Hot dogs Crescent rolls Clean wooden sticks or long skewers Aluminum foil DIRECTIONS: Insert a skewer into the end of a hot dog, pushing it about 3/4 of the way in. Wrap one pre-cut crescent roll triangle around each hot dog, starting with the flat end of the crescent and ending with the tip of the triangle. Wrap hot dogs loosely in foil. Roast over fire while turning the skewer the same way you would cook a plain hot dog, approximately 15-20 minutes. NOTE: If using long wooden skewers, pre-soak the skewer in water so you do not burn the stick.

ANSWERS TO MINNESOTA TRIVIA 1. Alexandria got its start in 1858 – the same year Minnesota became a state. Brothers Alexander and William Kinkead of Delaware traveled along the Red River Trail, stopping to establish a settlement on the shores of Lake Agnes. Alexander served as the first postmaster. The town site was named “Alexandria” in his honor. 2. Douglas County’s oldest claim to fame is the legendary Kensington Runestone. Scholars and scientists have spent numerous hours studying the large flat rock’s runic inscriptions. Many are convinced the Runestone is a genuine record of a visit by Viking explorers to the area in the 14th century, more than 100 years before Columbus set sail for America. Others claim is it a fake. The Runestone was discovered in a farmer’s field in the late 1800s near the town of Kensington. The 200-pound stone is on display at the Runestone Museum in Alexandria. 3. The paint roller was not invented in Minnesota; it was invented in 1940 by Norman Breakey of Toronto. The first pop-up toaster was invented by Charles Stite, of Stillwater, in 1919. The first liquid-dispensing vending machine was invented by Henry Fruen, of Minneapolis, in 1884. Scotch tape was invented by 3M researcher Richard Drew in 1930. The handled shopping bag was invented by St. Paul grocer Walter Deubener in 1919. 4. Big Ole, a 28-foot tall, 4-ton statue of a Viking was originally designed to be displayed near a Kensington Runestone exhibit at the World’s Fair in New York in 1965. The theme of the exhibit was “Minnesota, Birthplace of America”. After the fair ended, Big Ole was transported to Alexandria and has stood at the north end of Broadway since December 1965. He holds his spear in his left hand and his shield in his right. 5. c. A giant 25-foot fiberglass codfish in Madison, Minn., reflects the claim by the community in Lac qui Parle County that it is the “Lutefisk Capital of the United States.” Surprisingly, challenges to that claim have been few. 6. Patty Berg, who became the first LPGA president in 1948 and entered her professional prime, winning 57 tournaments on the tour. 10. Soul Asylum, 1993. 11. The Central Lakes Trail. The 55-mile-long trail, located on the old Burlington Northern rail line grade, connects the cities of Osakis, Nelson, Alexandria, Garfield, Brandon, Evansville and Melby in Douglas County. The trail then moves on through Ashby in Grant County and into Otter Tail County where it passes through Dalton before ending in Fergus Falls. 12. Rudy Perpich, who practiced dentistry in Hibbing. He was also the state’s only Roman Catholic governor and the only one to serve nonconsecutive terms, 1976-79 and 1983-1991. 13. Where the Mississippi begins its 2,300-mile journey to the Gulf of Mexico from its source at Lake Itasca in Itasca State Park. Thousands of visitors wade across the river, usually less than a foot deep, during visits to the park. 14 Shoreline – about 90,000 miles of it, according to geographers. 15. Minnesota became the nation’s 32nd state on May 11, 1858.
