• STILL RAINING! January was by far the wettest month we’ve ever seen and once again we take our hats off to our tireless transport crews who keep everything moving day in, day out. It will be interesting as the year progresses to see how this weather impacts on crops and livestock; seasons seem to blend in to one another now.

The year has started well for us with some new faces here at Goudhurst; Simon Hall, who most customers have spoken to in the years he’s been manning the phones in the evening, has joined the daylight crew and more of you will be hearing from him as he helps out on the sales side. We’ve also welcomed Chris Moore, who is bringing his long years of experience

in front of the stove to help out on the product and ingredient side of the business. Both great additions to the team here. Howie and Cam continue to push on with the development of our speciality and produce offer; direct supply from JB Viande on the suckling pig and direct pallet deliveries of citrus fruits will improve our competitiveness as we establish further. If you’re looking for produce and / or fresh meat, general or something specific, give the guys a call. Valentine’s Day normally gives us the first proper boost to trade in the New Year and we hope your February is busy too.

There is nothing we love more than finding a British producer, who not only has an avid interest in preserving an aspect of our natural heritage that may have been forgotten over the years, but also manages to do it in a way that is both relevant and desirable in today’s society. Hodmedods is a fine example of such a producer. The brainchild of Nick Saltmarsh, Josiah Meldrum and William Hudson in 2012, Hodmedod are heading a revival of British grown, sustainable beans and pulses aimed at the UK market, because believe it or not, nearly all dried and tinned pulses that make it onto our shelves are now imported. What makes this more surprising is learning that some varieties, such as the fava bean, has been grown in this country since the Iron Age and for centuries were a key part of the British diet as a year-round source of protein. It was only once meat and dairy became more readily available that their popularity dwindled. This is not to say that they are not grown here any more, on the contrary. Beans and pulses are an important part of the British farming economy and exported in large volumes every year. It would seem that these wonderful crops never fell out of favour in other parts of the world as they are widely enjoyed throughout Southern Europe, North Africa and India as well as many other Asian, African and Middle Eastern countries. Habas Fritas in Spain, Ful Medames in Egypt and Bessara in Morocco all have our humble British fava at their heart.

tickled pink! French company JB Viande have managed to corner the market with their specialist suckling pig products, under the brand name PORKETTO. Based in Hazebrouck in the north of France, not far from Bretagne, it is now run by Freddy Braure and his 20 strong team, after being established in 1974 by Freddy’s father Jocelyn. In 2005 JB Viande moved into its current 5000m2 home adjoining the Hazebrouck abattoir to make the process of slaughter, butchery and packaging a much more efficient production process. Since the move the business has grown exponentially and export to Europe, primarily

So with this in mind, Hodmedod is stepping back into the history books and looking to bring these healthy, versatile and delicious ingredients back to our attention and into our kitchens. And it would seem that with popular concern about the provenance of food and the environmental impact of meat production, there is no better time to re-introduce these foods as everyday staples in our diets. Their current range includes whole and split fava beans, which are naturally high in protein and dietary fibre but low in fat and very versatile. Use them whole in a chilli or curry, mash them with potatoes and wild greens, as they do in Puglia or make your own delicious baked beans. Black Badger peas are one of the rarer varieties that Hodmedod’s are set to re-introduce. Still a regional delicacy in parts of northern Britain as parched peas, they are also very popular in Japan. Their taste and texture compliments bacon superbly. Among the best varieties of dried marrowfat peas is the Kabuki pea. Most commonly used as classic mushy peas, they also pair beautifully with wasabi or horseradish. Also a great addition to any salad and can be roasted for a fantastic bar snack.

Portugal, Spain, Italy, Greece, Cyprus, UK and Benelux, now makes up 50% of their trade and domestically JB Viande have a 75% share of the suckling pig market. All animals come from surrounding farms and much care is taken to ensure that the meat arrives in the best possible condition and that it’s history is fully traceable. Every carcase arrives under controlled conditions, is temperature checked and then individually labelled with a specific lot number which denotes which farm it came from, date of slaughter and stamped with the abattoir’s registration number.

JB Viande benefits from doing all of its own butchery and on-site skilled butchers firstly cut the carcases into five primary pieces, which are then butchered further into secondary cuts, ready for vac-packing, which extends the shelf life to 21 days. FROM Leicestershire with love

Located in the South West Leicestershire countryside, Sparkenhoe Farm has been the site of Leicester cheese production since 1745. Now run by David and Jo Clarke, the Leicestershire Handmade Cheese Company is producing some excellent cheese including the traditional ‘Sparkenhoe’ Red Leicester, the only Leicester to be made on a farm with raw milk in Leicestershire.

Both David and Jo come from families that have been dairy farmers for generations and together they started making Sparkenhoe in the later part of 2005 after discovering an old recipe. Remaining faithful to the traditional methods by which the cheese is made, the previous day’s unpasteurised milk is pumped directly from the milking parlour to the cheese room at 4am each day. Animal rennet is added and Annatto used to give the cheese its rich orange colour. The curds and whey are then scalded gently and separated after which the curds are cut into blocks and turned to release any further whey. These prepared curds are then put through the mill, salt is added and then put into moulds and pressed for 24 hours. The cheeses, which come in 10kg and 20kg wheels, are then bound in cloth and lard and matured for 6 months in the store at 10 degrees. But Red Leicester is not the only cheese being produced on Sparkenhoe Farm. Two

other raw milk cheeses are made from the milk of the 300 strong herd of Friesian cows residing in the lush pastures surrounding the farm. Bosworth field is a semi-soft cheese made in small vats, where the milk is heated gently and the curds are cut by hand, allowed to pitch for an hour and then placed in 5kg moulds and pressed gently over night. The next day it is placed in a brine bath, after which it is ripened for 2-3 months, in which time the rind forms and takes on a gorgeous wrinkly appearance. The newest addition to the range of cheeses is Battlefield Blue, named after the Battle of Bosworth, which happened on part of the farm. The milk is heated and blue mould added. Once the cheese is made it is pierced to allow the veins to develop through the cheese. The wonderful green, grey rind forms as a result of the cheeses being ripened in a room with a high level of humidity.

What an electrifying thought! If he wasn’t working at Turners, Jon would love to be an engineer working on new inventions in the world of technology.
