I have to admit we didn’t know much about the awards till a phone call from the magazine asking for more information about us. It speaks volumes for the boys and girls here at Turners that they are thought of so well and it was nice to be able to break this bit of news to them.

Onwards and upwards though and December’s weather brought a whole different set of challenges for us; we’ve become used to dealing with the odd snow day here and there but the rain and water on the roads last month was something else. Thank you for your patience if we struggled to get to you and another massive pat on the back for our transport team here and our drivers on the road for some
heroic efforts to keep things moving. We are hoping for a more settled and calmer January and February. 2014 promises much and we have plans to continue improving our service and adding key people to our teams here at Goudhurst. We have lots of new ideas and projects to keep everyone busy and everything focuses on getting better at what we do. In terms of product and produce, we have new suppliers coming on board as we work through logistics with folks we met last year on the Continent and we are further strengthening our ties with local and British growers & producers as we expand on the produce and meat we offer. Watch this space!

Created by a reaction of two liquids, one containing alginate extracted from seaweed and the other natural calcium, small droplets of one are deposited into the other, forming perfectly spherical balls as a thin film is instantly created around the droplets. Not only is this process usually very time consuming, but also requires specialist equipment not found in most kitchens, so Freshburst® Pearls are a real innovation for any chef wanting to wow their customers without having to spend time ahead of service preparing them themselves. Milled in the little town of Coccolia by the Spadoni family, who have been grinding wheat into flour since 1945. This universal “00” flour is ideal for preparing any kind of sweet or savoury product and of course is particularly suited to fresh pasta. Its fine texture means no lumps (anti-grumi) and no need to sift so is also perfect for gnocchi, béchamel and pizza dough.

WEST COUNTRY WONDERS Known as one of the 3 ‘superior’ artisan cheddar makers, Tom Calver has bought passion and experience to the family business and in 6 years has guided Westcombe Dairy to the upper echelons of quality cheese production in Britain.
Cheese production on Westcombe Farm in the Batcombe Vale, Somerset is no new venture. Records show Cheddar was being produced there as early as 1890 by a lady named Edith Cannon. It is not a coincidence that Cheddar is still made there today as the area has fertile soils, lush green grasses and a fresh spring water; a perfect terrior on which the cows can graze and Cheddar can be produced.
The 90’s bought a new modern dairy, after the old factory was knocked down, allowing Westcombe to hone their traditional cheese-making skills and conceive a new Cheddar based on Edith Cannon’s original recipe. But it wasn’t until Tom Calver, the current cheese-makerin-chief joined and took over cheese-making in 2008 that we saw the cheese we do today come into fruition. As a trained chef, he brought a passion for good food and wealth of experience to the Dairy and decided that the future lay in a combination of traditional methods, enhanced by modern technology. Moving away from mechanisation where possible and encouraging an instinctive approach in order to express the milk’s true character, Tom does everything to make sure it is as rich and wonderful as possible. From installing pedometers onto the cows which measure stride-length, in order to recognise any that may be lame or on heat, to using solar power to reduce the carbon footprint of Westcombe, the use of modern, scientific ideas, alongside the timehonoured skills and special conditions found in the cheese ageing room combine to allow Westcombe to strive for perfection and transform their milk into truly delicious cheese.
Throughout its history, Westcombe Dairy has consistently produced high quality cheese, even during WWII when production of Cheddar was encouraged. Its ability to adapt to current markets also helped it maintain a quality and desirable product, such as during the 1970’s when commercial need grew to such an extent that they moved production to non-traditional block Cheddar in order to better suit the fast moving mass market favoured by supermarkets. This had however been reversed by the 1980’s, when quality over quantity was seen as the way forward for the dairy, and traditional Somerset cheddar was once again produced.

SARA KENT may be a relative newbie, having
been with us for around 7 months, but she is definitely a much-loved member of our office staff. Working in the Purchase Ledger department, her duties include dealing with supplier enquiries and data entry. Previously Sara worked as a Sales Manager at Education First language schools which took her around the world recruiting foreign students to study in the UK. It was a desire for a change of direction and new challenges that bought her to Turners. It appears she is very happy with the switch as she says the best thing about working for us is the vibrant atmosphere in the office and working with a really friendly and fun team of people! In her free time, Sara is quite the social

butterfly. She loves nothing more than partying the night away with friends or eating out in any of her finest local eateries. So if you ever have the pleasure of seeing Sara out and about, remember...hers is a JD and coke! Sara also considers herself a bit of an adrenaline junkie. She loves anything fast or dangerous and enjoys pushing her 1.0 litre Citroen C1 to the absolute max! In her defence her previous car was an MG convertible, so maybe we’ll believe her after all. You might be surprised to know that Sara had a Punk wedding in the 70’s and wore a black dress on the day. If she had a super power she would like to be able to teleport so she could get to places without the hassle of travelling... I think we’re all with you on that one.

Remember that our customer service team is here 24 hours a day during the week, till 4pm on a Saturday and from midday onwards on Sunday (an answerphone service is in operation out of hours). So whatever time of the day or night you need to place your order, there will always be a friendly voice at the end of the phone, who will be happy to help. Please be aware that at peak times (from 10pm onwards) our phone lines can become extremely busy, so if you are able to place orders before 10pm then you will have more chance of getting through at the first attempt.
DELIVERIES We deliver daily, Monday to Saturday and our vans leave us between 2am and 7am, depending on the journey. All routes are fixed so you can expect your delivery at or about the same time every day. We do not operate a minimumorder policy.
