APPLE

1 pint / 8 pints Strongest of the fruitwoods, has a complex, sweet and fruity flavour. Dense smoke makes it particularly good with poultry, ham and game. A good all-rounder.

MAPLE 1 pint / 8 pints A mild, smoky flavour with a slight sweetness which works well with poultry, ham, cheese, small game birds and vegetables.

CHERRY

1 pint / 8 pints Milder than apple but still sweet and fruity, gives a rose tint to meat during smoking. Ideal for poultry and ham.

OAK 1 pint / 8 pints Works with most foods and provides a heavy smoke which is particularly good for red meat, heavy game and pork. Equally good with salmon, hard cheese and sausages.

CHESTNUT 500g

Stronger than fruitwood, it is a great combination of sweet and intense smoke. Recommended for meat and game which will carry the flavour density.

Aromatic oak dust that is ideal for heat-free smouldering and for cold smoking fish, hard cheese and bacon.

Highly aromatic and slightly resinous wood dust which is ideal for mixing with a traditional hardwood such as oak to add extra colour to your cold smoked dishes.

WHISKEY SOAKED OAK 500g

HEATHER 500g A distinctive earthy aroma which conjures up its moorland setting! Great teamed with game birds and a chef's favourite for smoked salmon.

Robust oak wood smoke with a kick of whiskey, the chips are tumbled in whisky for that little extra. Perfect for hot smoked salmon, red meat and game like venison and pheasant.
