Dear Residents Welcome to the second edition of your Eden Local Community Magazine. Since our first issue, we have recieved some fantastic feedback and I have certainly been busy out and about in the community, gathering community stories and attending events. At this point, I would like to thank and welcome the new businesses that have chosen to support our publication. Once again, a thank you to the existing businesses, whom I have been visiting this month and finding out much more about them. It’s a busy time out there and on top of this it’s Christmas. From the contents, you will see some interesting articles. I have really enjoyed putting articles together with local people in various businesses, out in the fields with Neil Hodgson and his family at Carleton Hall Farm, in the kitchens at Indiagate and over at Tommy Martin’s gallery in Askham. Our front cover is just one sample of the superb work in the gallery. There are and will always be some new and interesting ideas posted throughout the magazine. Eden House of Cakes
Maggie Cormode and Debra Warburton have run Eden House of Cakes in Penrith for six years. Between them and their team, to say they make a whole range of cakes is most definitely an understatement. Never too many, but always enough and with what little waste there is, even this has been put to good use in raising money for the Great North Air Ambulance. Close to the entrance as you go into the shop there is a cake stand with a simple sign, ‘Proceeds form this basket will be donated to Great North Air Ambulance All items 20p’. So simple, so tasty, it’s a massive hit with local children. Many adults buying them for pack lunches, a likely story….but a good reason to pop in. But it doesn’t stop there. From the counter to the ski slopes, well the ski slope cake, that is, with the skiing penguins in the shop window. To add to the cake coinage steadily building, which started back in the summer, from the cake stand, they also have a raffle for this wonderful, very edible ski slope including penguins! Yum. Once again all proceeds are going towards Great North Air Ambulance. Please, please donate or buy a raffle ticket. It means you get to have your cake and eat it! About that window with the penguins skiing, it’s one of three windows, which whilst there are more penguins around, Eden House of Cakes has a fantastic Cinderella theme display including a pumpkin carriage, a Cinderella and even the clock striking midnight. The castle is truly magical. It is a reflection not only of the hard work behind the scenes, but the skills, the craft and the innovation of these two, very talented, community focused ladies and their team. What is Christmas? The past two months we have evidence that the “Christmas Season” is fast approaching. In our shops you can’t miss all the displays and well stocked shelves of gifts, toys, cards and everything to do with Christmas. So is this what Christmas is all about, getting stressed, extravagant buying, getting into debt? Wait – what’s this? A card with Joy and Peace at Christmas time. Isn’t that what we all want? But how do we find it? Can it be bought? Over 2,000 years ago, God sent a gift for all. This gift was not gift wrapped but came in the form of a baby. The Christmas story of the baby Jesus is known all over the world but what does it mean to you today? Is it relevant to us or is it just another story?

In Penrith over the last few years, to celebrate the switching on of the festive lights, many from all churches have gathered together to walk through the town centre, carrying lanterns that have been lit. This is showing all that Christmas is about light. Jesus being that light, a light brought out of darkness. 2,000 years ago, God saw that people were lost and walked in darkness. So he sent his son Jesus as a special gift. Today we are still living in dark times where there is political unrest, wars, famines, floods, family breakdowns, loneliness and much more. The gift of Jesus is still available for us today. So as Christmas time approaches, are we going to get lost in the hustle and bustle of all the trimmings or are we going to give time for the real meaning of Christmas? Penrith gets a taste of the Continent with Festive Xmas Market Come and sample the delights of the Continent this Christmas, as Penrith hosts its first ever continental market! The market is being held on Devonshire Street in Penrith on the 17-19 December. All of the traders will also wear their traditional local costume from 100 years ago, as well as decorating their stall to represent the area of the country they have come from. Hospice at Home the charity that cares and nurses local people Hospice at Home Carlisle and North Lakeland is a local charity providing a free nursing service for people at the end stages of life who prefer to be cared for in their own homes with all that is familiar about them, and gives support and help to the carers, within rural North and East Cumbria and the city of Carlisle. This area covers 1500 square miles. Working closely with the family, District Nurses and other members of the Primary Health Care Team the Hospice at Home service carefully and sensitively assesses the amount of care needed. During the episode of care the nursing and support team build up a close relationship with the patient and immediate family and carers. The professional care offered by the Hospice at Home team of specialist nurses provides people with the choice to stay at home during the end stages of life and allows patients to achieve the best quality of life. All the above services are free of charge and as far as possible the care is tailored to the individual need of the patient and their carers.
Who can refer? Patients can be referred to the Service by the GP, District Nurse, other Health or Social Care professionals such as MacMillan
Nurses, Social Workers, Hospitals both acute and community or individuals themselves can refer. Services provided include:• Nursing and emotional support to patients, their relatives and carers. This will include elements of personal care, respite provision and specific nursing care. • Bereavement support including both pre and post bereavement. • Complementary therapies for the patient and their relative or carer. • Hospice at Home also manages the specialist services of Lymphoedema, Occupational Therapy and Penrith Day Hospice. The service was set up in 1997 and since then has provided nursing care and support to almost 3000 patients, their relatives and carers. All patient services and support are completely free of charge. The charity’s running costs are more than £775,000 per year. A grant is received from the NHS

however, this covers only part of the cost and this year Hospice at Home needs to raise £490,000, which equates to £9,500 per week, to ensure that the vital service is available when needed. Overhead costs are kept to a minimum which means that over 80p of every £1 donated goes directly to the provision of patient care. Volunteers are the backbone of the Charity with numerous local people giving their time to fundraise. This can be given in various forms from perhaps organising an event, working in the Hospice at Home shop or office in Penrith and helping at Flag Days. Jamie’s Top Turkey Tips: • If you are at all worried about your turkey being cooked, just stick a meat thermometer in the thickest part of breast. When the internal temperature has reached 65C for a good quality bird, and about 82C for a cheaper bird and the juices run clear – it’s ready to come out. •Please, please don’t forget to let the bird rest after you’ve cooked it and before carving. This lets all the juices get back into the meat and gives you a much juicer, better tasting turkey. It also gives you valuable time to get all the trimming sorted EdenLocal
Preheat the oven the maximum temperature. Put a saucepan on medium heat. Once hot add the butter, half the sage leaves and the bacon. Peel and finely chop 2 garlic cloves and 1 onion. Add the garlic and onion to the saucepan and fry everything gently until soft and golden brown. Take the pan off the heat, add the breadcrumbs and, while the mix is cooling down, roughly chop and stir though the dried apricots. When the stuffing mixture has cooled down completely, add the pork mince, lemon zest, nutmeg, egg and a good few pinches of salt and pepper, and then mix everything together well. Chop the remaining

onions and Clementine’s in half and thickly slice the carrots and celery. Give the turkey a good wipe, inside and out, with kitchen paper, and place it on a board, with the next facing away from you. Lift up the skin at the back of the turkey and pack in the stuffing, then pull the skin back over and secure it with a couple of cocktail sticks. Weigh the stuffed bird and calculate the cooking time – about 20 minutes per 500g. Place the bird in a large roasting tray and drizzle it with olive oil, season with a good pinch of salt and pepper, then rub all that seasoning into the meat. Surround the turkey with the chopped carrots, onions, remaining garlic cloves and the Clementine halves. Cover the tray with tin foil and place in the hot oven. Straight away turn the heat down to 180C/350F/gas 4, and roast for the calculated time, or until the juices run clear from the thickest part of the thigh when pierced with a knife of skewer. Check you turkey every 30 mins

Toss the remaining sage leaves in olive oil, then leave 45 minutes before the turkey is done, get rid of the tin foil and scatter the sage leaves over the top of the bird. When cooked through and lovely and golden carefully transfer the turkey to a board, cover it with tin foil and leave to rest for 20 minutes. Skim the surface fat from the roasting tray then mash up the remaining veg with a masher. Add the flour and stock then place the tray on the hob and bring to the boil on a high heat. When the gravy starts to thicken, strain it through a sieve using a wooden spoon to really push all that goodness through. Carve your turkey then serve with the gravy and all the usual trimmings.

Lakeland Logs is a retail and wholesale rewood company, which supplies seasoned, hardwood logs suitable for open res, log-burning stoves, wood burners and log-red boilers.
Lakeland Logs works closely with local forestry contractors and woodland managers.
The logs are stored in large, ventilated bags in airy barns, allowing for airow around the logs, guaranteeing a constant supply of consistently good-quality fuel.
We use mixed hardwoods, mainly beech, ash, sycamore, oak and birch, which are all renowned for their excellent burning qualities.
All our timber is sourced from local, sustainable British woodland. Trees are cut as part of the natural thinning process. The benets of burning dry logs are:
The drying process starts as soon as the timber is felled and stacked.
The timber is delivered to our production yard by lorries carrying 25-tonne loads. The wood is then loaded onto our new state-of-the-art computerised wood-processing machine which cuts and splits the timber into logs. All the logs go over a lter system so bark shavings and sawdust don’t go into the bags, leaving a clean product.

Carrots of
a little help from Neil and his family. Here is a thought for you when you’re at home on Christmas day…..in fact any day or when you want to take a holiday. We can talk about getting down to the roots of this article, but a pledge at Eden Local is to support the locally economy where it can. So we have arrived at Carleton Hall Farm, Carleton Village, situated on Carleton Avenue (A686). It’s a good penalty kick from Penrith Rugby Club (I mean a really, really good kick) unfortunately for many a drive past on the way to Frenchfields. Some would say it’s almost opposite or next to the Cross Keys - anyway that’s the logistics. If you drive up or down the road, the farm shop with free parking, a lay-by and a Caravan Club Site sign is
very visible. It’s a case of if you want to find it, you will. This article is basically about carrots, beautiful, dirty, tasty carrots and the importance that we hope is stressed in this article of the local economy. I was fortunate to be able to choose to have some time out in the field this month with Neil Hodgson and his two sons Chris and Craig. I met Jean, his wife, who with Neil, set up their home on Carleton Hall Farm 31 years ago. They have a herd of 40 Friesians that for 365 days of the year, contribute in their own way to the Cumbrian economy with

the surrounding areas. It’s an article with a few questions, which I would like you to think about. When you are buying your carrots do you know where they have come from? Are they nice and clean, all packed in a polythene bag with a label, or are they covered in mud and presented in a basket or crate straight from the ground? Which costs more when you really think about it? It’s a short drive, about half a mile from the farm to the carrot fields on a hill on the outskirts of Penrith. It’s the best place and the best soil I’ve been reliably informed. It was probably a silly question for me to ask Neil, ‘how often do you pick the carrots?’ The tractor trawls along the furrows loosening the carrots. Neil and his lads
and sometimes with help from friends, then spend the required hours bending down, pulling the carrots out of the soil from one end of the field to the other, cutting off the leaves or greens, as they are called. Then for transit, they are placed in re-useable bags loaded onto the tractor and taken back to Carleton Hall Farm. So the simple question and answer to it was, ‘we pick em when we need em’. We are not just talking about carrots that have travelled less than a good walk into town to get to the counter, we are talking freshly pulled to suit demand. Of course one other factor is that they will always be subject to the weather. Carleton Hall Farm like many local shops, has to provide a selection and Neil and his
family, whilst they strive to sell ‘dirty carrots’, have to provide cleaned washed carrots like everyone else to meet demand and deal with what people have become accustomed to. The last question will also be in the taste……………..Fresh from the ground or fresh from the packet? From a local economy point of view, the question is, where do you buy your carrots and is the money going into the local economy? Please support your community farm. From the chopping board to the table
Welcome to a behind the scenes look at Indiagate Restaurant, Borrowgate, Penrith. As a new feature in Eden Local, working with the owner Abu and his staff, we are taking a different look at the familiar and special signature dishes that we order in the restaurant or take away as a matter of reading a menu. Do we know how it got to the menu? This month we have chosen a dish, which links to another local business, Mr Vikkis, based in Eamont Bridge and we take a glance at the mechanics of a successful mouth-watering dish.
A well loved and well known comedian Eric Morecambe once said to André Previn, ‘I’m playing all the right notes but not necessarily in the right order’. As strange as a mix of notes on a piano, when played in the right order, they are a pleasure and music to your ears. An infusion of the right ingredients, mixed in the right way, at the right time and cooked together in the right way, in the right order, are a taste that is music to your taste buds. Does this mean cooking is like learning the piano? Years of practice developing techniques whilst sticking to the rules, then one day, we get to write and play our own music. It is on the menu at Indiagate under the Chef’s specialities as Shimla. But what is Shimla? Shimla is one of 12 districts in the Himachal Pradesh in north west India, approximately 370 kilometres from Delhi, that’s about 8 hours drive I have been told. The Himachal Pradesh extends from the plains of Punjab and Haryana to the snowy mountains separating it from Ladakh and Tibet. The elevation varies from 350 metres in the foothills to 6977 metres in the higher ranges. The economy of Himachal Pradesh is mainly dependent on tourism and apples. A good time to visit is in the summer when temperatures are up to 30 degrees centigrade and Simlar is well known and a favourite for its winter skiing. With some natural mineral and cement factories,

The area has seen some rapid development in its infrastructure and promotion of modern techniques of cultivation among the farmers, suitable agricultural machinery and good breeds of cattle, sheep and poultry, has made Himachal a real example of rapid transformation from one of the most backward parts of the country to one of its most advanced. Himachal is in the top five respectively of per capita income among the states of the Indian Union. So, back to Borrowgate and on the menu we have our choice of chicken or lamb. The two lines under the heading on the menu are:Mr Vikkis’ Punjabi Pickle locally produced cooked with onions and spices. Simmered to give this a hot aromatic taste.
Well, we know a bit more now and in the kitchen, I found more than just two lines…. The chef looked like he was shuffling cards and I can only describe this as a fountain of ingredients with a firework of spices. The chef…..takes a selection of ingredients to make a special spice, I was told. What I can say is turmeric, coriander and cumin were present. How quickly can I write? There was garlic, a hot pan, a spot of oil and chicken and Mr Vikkis’ Punjabi pickle known as HHH on the shelf and available in Cranstons’ Food Hall. Was I just too busy sniffing and watching? I think I was there for a moment just breathing it in. Like a chemist mixing up an everyday solution, in a flash we had landed….dinner is served. Me, I’m still none the wiser, perhaps next time….. Twas the month before Christmas, when all through the inn Not a pint was pulling, not an optic of gin. The cables were hung by the walls with care, In hopes that the electrics were very nearly there. By the time this article comes through your door, the paint will be dry on the walls. There won’t be a cable in sight, the openings in the walls closed and the dust like the small army of builders, electricians, plasters, fitters, decorators, plumbers and carpenters that worked around the clock will be gone.

The logs will be burning on the fire and the smells circulating around will be those of food from the kitchen and the noise of the banter from the bar. At the moment, when I’m walking around with Kathryn, who with Tom, will be managing the new look and refurbished Stoneybeck Inn, situated a short distance north of Penrith on the A6, the smell is of cement, plaster, dust and paint, but somewhere in there is the smell of success. Yes, it’s a building site in places with a mass of potential, the outlook at the moment is of hiab cranes, building materials and mountains of sand, plant and machinery with safety caution signs. In just three visits, the progress in a week has been quite amazing. So with my visi-vest and helmet, I snapped at the potential with my camera and here is a tour of what twas the month before Christmas. Here is a strange thought. For today’s reader the Stoneybeck Inn is now open. Are there any ghosts from Christmas past, this article as written is from the past to present and now into the future EdenLocal

heard a lot recently, whilst we were rehearsing for this year’s school play at Queen Elizabeth Grammar School. However, this was not just an ordinary version of Romeo and Juliet, this was the Alternative Rock Musical version, featuring music performed by talented year 11 musicians Josh Judson, Steve Harrison, and Sam Groom. With over seventy students involved in the show rehearsals have been a real laugh, although

headteacher Mr Kirkup changed a lot of the script to make it amusing to watch and hilariously funny to perform. But there were also some very serious moments for our star-crossed lovers who were very ably performed by 14year-old Oliver Tallis and 16-yearold Ainsley Brolly. I was a member of the Capulet gang, who in this show were the
Rockers, whilst the Montagues were known as the Mods. As members of a gang we had several fight scenes throughout the play. A funny and very entertaining Richard Bracken (aged 15) was playing the slightly camp character of Mercutio and added passion and hilarity until Mercutio came to an untimely end.

Capturing the moment and the mood, Tommy Martin Tommy Martin is a professional photographer who has been living and working in Cumbria since 2004, creating dramatic and atmospheric images of the Lake District and Eden Valley landscapes. His work has appeared in many national and international publications, and has been shown at the Tate Gallery in London. At the beginning of 2010, with his partner Katharine Duckitt, Tommy took over running the Queens Head in Askham. In the summer of 2010 Tommy Martin established a new studio and gallery right next door to the Queens Head. The gallery features a constantly changing exhibition of Martin’s limited edition landscape prints, along with shows of work from visiting artists. November saw the opening of an exhibition of beautifully crafted stoneware by renowned local potter Stuart Broadhurst that will be on show until the end of the year. Welly Walks This is a new family idea, which we hope will appeal to you. As a regular walking family, we have our walking boots and our welly boots. When our children were very young, we had one toddling short distances and one being carried in a papuse on my back. As they grew up, we got into longer walks and the investment had to be made in walking boots. However, with the unpredictable weather we have in Cumbria, which at some times of the year can only be measured in inches, we go out on the muddy tracks with the dog, around Penrith where we live and the Peter Pan in me still loves to splash in the puddles! Many of our readers have children, grandchildren, nephews and nieces. Some of our readers can’t cover the distance they might like to due to access restrictions or physical constraints. We want to develop our very own Eden Valley welly walks, sent in by our readers based on walks they have completed. We want to publish these walks, that anyone can do 365 days of the the year, either in their boots or assisted in a suitable carriage or wheelchair. ‘The Romans knew Heughscar Hill, though not by that name, and laid their High Street along its western flank … It is clothed in patches of bracken and a velvet turf on which carpet slippers would be more appropriate than boots, but its greatest joy is the spine of limestone outcropping in rocky pavements along the top … Heughscar Hill is a gem for aged fellwalkers.’ A. But all the family can enjoy this lovely walk, which overlooks the eastern end of Ullswater giving magnificent views westwards towards the Helvellyn mountain range for EdenLocal

comparatively little effort. From Pooley Bridge, turn right at the church and, continuing over a crossroads drive uphill until the road ends at a gateway. There is parking here at the side of the road. Walk through the gateway on to a bridleway which leads uphill to a crossroads. Here the Roman road crosses our route. Continue uphill to a boundary stone where a grassy path leads uphill to the summit of Heughscar Hill. A cairn marks the highest point where full-length views along Ullswater can be enjoyed. The stroll along the limestone ridge is entirely delightful with a fragment of limestone pavement to find to the right of the path. Drop down off

the ridge to join another bridleway that can be muddy in places after rain. When the corner of a tree-lined wall below the line of the track is reached, this is the cue to turn downhill fairly steeply using a well-trodden path back to the starting point. 2011 Calendar The 2011 Wainwright Society calendar has been on sale since the end of July 2010. As last year, the A3 format comprises photographs taken by Society members, together with line drawings and quotations from the works of Alfred Wainwright. The calendar includes scenes from the Lake District and ‘Limestone Country’ in the Yorkshire Dales. All profits from the sale of the calendar will be donated to the Lake District and Pennine Mountain Rescue Teams. To date, the total amount raised for the Mountain Rescue Teams is in excess of £4000. With Christmas and the New Year approaching, this is the ideal time to purchase a calendar and also to help to ensure that the volunteers can continue their valuable work of saving lives in the Lake District and the Pennines. One month on from ‘Twas the month before Christmas’, I’ll be back at the Stoneybeck Inn and capturing the smell of freshly cooked local produce, rather than the recent smell of fresh paint! We have had some great articles sent in this month from people in our community, so we hope these keep coming in. I’m looking forward, come rain, snow or ice to being out there. If you have got an idea for your local, community magazine, please let me know at lee@edenlocal.co.uk. In the next issue, we hope to feature one of the first Eden Fm Community radio volunteers as we gain momentum in this project. If we are lucky, by early spring we could be applying for our first trial, restricted service licence (RSL) if we are aiming to broadcast our first programmes in Penrith and the surrounding areas by the end of 2011.
