It’s that time of the year which for many can potentially mean long hours. I spent 18 years in food retail, so I understand that the festive season for many will be an up hill slog until 24th December and I do remember sleeping a lot of Christmas Day and waking up with a cold. Is it me or does everyone seem to be flat out busy and generally working all the hours they can in between feeling quite tired, as a result of the clocks changing and the dark evenings settling in? Whatever we are doing, whatever shift we are on, Christmas is upon us. At the time of writing this publication, I have six more publications lined up before the December close down as I prepare the January supplement, the three monthly publications and then move on with the of best intentions to have the February publications almost complete before 31st December. On top of all this, I will be working with Eden FM Community Radio to complete and submit their application for a full time community radio license, which has to be submitted early January 2013. From midday on 24th November up until 22nd December, I’ll be stepping in to do some radio shows with all the other Eden FM Radio volunteers. The programme guide is on page 29. This month we have our first insert supplement from the Penrith Co-operative Society, reflecting innovation and tradition at the Penrith Burrowgate, Lazonby and Shap stores (p 2 – 3 & 12 – 17). We also have our regular feature with the Devonshire Arcade (p7). I had a wonderful time talking to Terry, Michelle and Christine at the Arches Carpet Centre, who have just opened a new premises at Hartness Road on the Gillwilly Industrial Estate (p 8 -9). My thanks to Peter Sidwell for his contribution and I wish him every success with his new Border TV series which launched on 26th November (p 18 -19). Witterick of Witt Woo Photography who has spent many days collecting what must be over a thousand images for many of this month’s articles and publications. In keeping with our theme, there is of course a lot about the concept of ‘Everything Local’ and the importance of supporting local businesses, utilising the best of our local trades and producers whenever we can. My thanks to those local producers who I met at the Farmers Market in Orton where we saw some truly wonderful local products. A highlight this month has to be trying a locally produced stilton and pear ice cream at Slees of Winskill. The Carrots are in at Carleton Farm shop as are the Parsnips. For a real taste, it’s a must. I would like to wish Bangkok Bistro good luck, who have just opened in Poets Walk, Penrith (p 28). Without further ado and I do have quite a lot to do, I would like to take this opportunity of wishing you all a very Merry Christmas and a Happy New Year. Seasonal Greetings from the Devonshire Arcade by Lee Quinn
For 6 months we have been paying a regular visit to the Devonshire Arcade in Penrith. I hope that the articles covering the history and the mini stories about the businesses have given you a fresh look at the potential always on offer. As we move into December we focus on one of my favourite topics, namely food. For fresh products and provisions for Christmas, the Devonshire Arcade will be open on the Sundays leading up to Christmas, the fresh food counters; Little’s Family Butchers, Crafty Baker, Fish Cellar, Fruit & Veg and the Flower Shop will all be open on Sunday 23rd December. With our focus on fresh food, I chatted to Gavin, of Little’s Family Butchers and asked him about the availability of products for this festive period. In simple terms there will be full availability of poultry and all products right up to closing on Christmas Eve. In the week we wrote this article Gavin reconfirmed that his entire display was from 4 local producers. Little’s are already taking turkey and meat orders and Gavin predicts (with the exception of slightly reduced seasonal sales of lamb) there will be increased sales of pork, beef (including ribs on the bone) and gammon joints with the added bonus of the traditional sales to come from turkey’s, ducks and geese. As traditional as family butchers come, Gavin will be on the counter with his wife Judith supported by Phil and Pat and supported by other friends that they’ll draft in. Adjacent to Little’s it’s not just fish on Fridays from the Fish Cella. On top of the normal trade, Neil will be looking forward to the traditional build up with sales of whole fresh salmon and smoked salmon, which like many of the products, will be available to pre order. Other products already in, include the range of game and next to the counter a full range of frozen products including a variety prawns, other shell fish and wet fish. They do have some amazing fish pates and a great fish pie recipe for Boxing Day. Next door to the Fish Cellar, there is the Crafty Baker with a wonderful range of Christmas specials all freshly baked on the premises. Alan and his team like all the others will be open on the Sunday before Christmas. One of the newest businesses to the Arcade is The Market Fruiter, for Chris and his wife Linda it’s their first Christmas trading and with all that seasonal fruit the traditional Clementines with leaves and Cox’s apples you’ll find sprouts on a stalks all orders available for free delivery and they will have real Christmas trees also with free delivery . To complete our seasonal visit to the Arcade we have our florist; Flower Designs, lead by Alison with her team Audrey and Rebecca. Taking in fresh deliveries every day right through the Christmas period, they will have the traditional potted poinsettias and other seasonal plants. They will also have their full range of church and door wreaths. Also available to order are table decorations and displays for the big day and they also offer a gift wrapping
service as well. There are also plenty of opportunities to create your own floral displays as they have a vast range of seasonal ideas for silk and dry flowers. They also stock wet and dry oasis. Now I had no idea what that was when we went on to this conversation, then the penny dropped. It’s the hard cube like sponge that sits in the middle of each decoration, wet for fresh flowers and dry for silk. Importantly you don’t have to wait for Christmas to go for a visit to the arcade, the card shop Destiny Cards run by Sharon would like to see you just as soon as you are ready to start getting those Christmas cards written and Andon at Cumbria Photography, might be able to squeeze in family portrait, if you’re quick before Christmas. Before we conclude this month’s trip to the Arcade, we must let you know about Off Peak, the new outdoor clothing store run by Richard which will be chock full of winter clothing to help keep you warm and dry this winter including hats, gloves and coats. On behalf of all the businesses in The Devonshire Arcade a Merry Christmas to you all. In December the Arcade will be open 11 – 3 on Sundays in addition to some late night openings.

Underneath the Arches by Lee Quinn
At the time of putting this article together “The Arches Carpet Centre”, after 18 ½ years at The Arches, 1 Victoria Road, Penrith is preparing for the opening of its new showroom at Hartness Road on the Gilwilly Industrial Estate. By the time you read this article the new premises will actually be open. So here is the heads up on this local business that was handed the keys to the doors of a surviving landmark at 1 Victoria Road, with its entrance in the Southend Road, on Friday, 6th May 1994. A big day in the history of this local business that was shared with another event over 360 miles away that day, the official opening of the Channel Tunnel presided over by Her Majesty Queen Elizabeth II and French President Francois Mitterand. The rail tunnel or ‘Chunnel’ under the English Channel connected Britain to the European mainland for the first time since the end of the last Ice Age. Meanwhile, for Terry Oliver, the owner and proprietor of The Arches Carpet Centre it was the completion of the purchase of a site that first started in October 1991. The property back then was a carpet shop owned by Mark and Rhoda Marshall. After originally starting out in agricultural chemicals Terry started in carpets after a very persuasive friend convinced him he would do better selling carpets. This was ‘back to the future’ in 1985, the year of Live Aid, when Terry set up his mobile carpet business ‘Phone Call Mobile Carpets’. The business based from home grew and when 1 Victoria Road came up for sale with PFK in 1990, negotiations started. As Terry explained; from working from home with a boot load of carpet samples to opening a shop and buying stock was a huge step forward and he recalls at the time being strongly advised by the bank not to do it, as the premises weren’t deemed to be suitable. He did question how much knowledge a bank would know about the carpet business and suitable premises, which was already one of many established carpet shops. As we see today, it was one of the best decisions Terry could have made at that time, which has subsequently seen his business grow, gathering a reputation for getting decisions right. EdenLocal
There was much to talk about how The Arches Carpet Centre has evolved. Terry believes he owes a lot to having reliable people around him; Malcolm Read, better known as ‘Mally’ has been fitting carpets for Terry since the beginning also on the team are Andrew and Stephen. His customer based approach, backed up by a reputation for consistency of service, quality products and top quality fitting has seen high levels of repeat business and a steady stream of returning happy customers over the years since 1994. Apart from taking time to discuss the history of the business we also got to discuss carpets. Whilst we walk on them everyday, what do we really know, when we go looking for a carpet, what are we actually looking for; a price, a colour, functionality? The range at The Arches Carpet Centre is quite phenomenal, I suppose you could say its literally “floor to ceiling” with carpets. They also supply Blinds and other types of flooring, Vinyls, Karndean, laminates and Rugs. Choosing a carpet isn’t an everyday task, it’s not something we do regularly and it’s certainly not just about finding the right colour. With such a major purchase what you pay and where you purchase it from could have a major impact on whether you have the right carpet for the right place in your home or place of work. As I came to understand, 1ply is a single strand, which will flatten and it’s not hard wearing. 2ply is two strands twisted together and so on, all the way up to 6 strands. The number of strands and the resulting type of protection the carpet has makes a big difference in price. I discussed with Christine and Michelle who deal with the sales at The Arches Carpet Centre the challenges carpets go through in our homes with pets, children, spills and how carpets today, whilst they do have resistance, can be instantly cleaned with, staggeringly, ‘raw bleach’! This is definitely a ‘don’t try this at home’ unless you have taken expert advice and that is something that comes in abundance from The Arches Carpet Centre. So, getting an understanding of a carpet, is the key to defining its uses, there are 100% wool, 80% wool, 50%

wool all the way through to 100% manmade fibre carpets. There are eco friendly carpets, I discovered the Envirobac carpet; you scrunch it up and it returns to flat being just one of its selling points. There are some big names out there like: Westex, Axminster, Ulster and Woodward Grosvenor, all these are stocked by The Arches Carpet Centre. Closer to home there is Lakeland wool and wool from Herdwicks but the one that for a ‘total novice’ carpet person like myself ticked most of the boxes was a Brockway carpet for quality, functionality, density and price. We have everyday comfortable hardwearing clothes and we have designer clothes, and as I see it, carpets and how we dress our homes are not that dissimilar. To conclude, my time at The Arches Carpet Centre the last 10 -15 minutes were spent with Terry talking about carpet measurements. Are we in yards or are we in metres? As Terry explained, he still has customers going back generations that, when asked how big their room is they walk in a straight line across the showroom putting one foot after the other, pigeon stepping and counting out the measurements. That’s measuring in feet, regardless of the size of your feet and it always has been and always will be. And as for a yard, that’s 36 inches (3 feet) and a metre is about 39 inches.

This Christmas we have locally sourced Cumbrian reared fresh Turkeys and the introduction of our own medium mature cheddar made for us by Appleby Creamery. We have traditional Sour Dough bread made at the Lovingly Artisan Bakery at Oxenholme. The project that will create a real local Buzz At the start of our campaign for local food back in June 2012 after reviewing our existing range of Honey like many stores we had a large range, around 22 in the Burrowgate Penrith store to be precise but none that we could call local. We got out
in the area around the stores, we met a few local bee keepers but like many local seasonal products the key word is season, the second key word is weather. There are some good honey’s around if you know which door to knock on but bee keeping as we have discovered is quite an art with many guidelines, legislations and it has to be produced with the best interest of the bees in parallel with the environment. Local honey has many benefits if it is actually sourced in the area around where you live. There have been many reports on its qualities in helping with overcome seasonal allergies. So how do we get enough honey
for our customers in 2013? We firstly have appointed our own Beekeeper specialist, there will be more about this lady who has been a local beekeeper for almost 8 years and has been involved with local societies. We appeal to all bee keepers around our stores and in Cumbria to contact honey@penrithco-op.co.uk if you would like to ‘bee’ involved in this project. As an independent local business the Penrith Cooperative Society has now commissioned the making of its own Bee Hives. Some of our local suppliers have taken us up on our option to sponsor a hive. It is our plan to have a minimum of twelve hives in place.
Your Local Penrith Co-operative Society Stores Food and Product demonstrations Do you have a bread mixer in a box or on a shelf collecting dust in a cupboard? Gave it a go once, enjoyed the experience but haven’t had the time since. At your local Co-op we don’t just sell bread makers we show you how to use them. We have a new range of Ready Mix Flours, so the baking of your own bread is simplified. If you are still not sure come in and see a demonstration with our staff. Taste good, feel good, give it go at a Penrith Co-operative Society Store near you. Following on from the launch of our in store demonstrations at the Burrowgate store with our all day member event, in our new kitchen on the ground floor, installed and provided by Eden Valley Home Improvements, we are now continuing this as a regular feature every week. Working with TV Chef Peter Sidwell, Peter has agreed to visit the store and help produce more recipes with local produce at least once a month. Dates will be posted in our stores and in local press. Building on this success, we want to get
everyone involved. Not just at the Burrowgate store, but in all our stores. Cooking and tasting our local products on the premises is something which we believe is a great way to engage our staff with our customers and our local producers. So whether this is trying locally produced easy to microwave ready meals, making simple soups from local produce or mixing
up bread in a bread maker with our new range of bread mixes, it will be happening at your local store soon. We are open to refreshing ideas and if you would like to taste and try before you buy, then make a trip to a local store on a demonstration morning, lunchtime or afternoon. Taste the potential and enjoy the experience of a real local taste.
The Co-operative edge in Europe comes to Cumbria Recently Ged Kelly and Lee Quinn played host to a group of 37 visitors from Italian Cooperative in Trentino. It was a presentation that promoted a lot of questions via an interpreter about the Penrith Co-operative Society, its history, its current standing in the community and its future. The group was from a region with a population of 400,000, which includes some towns, villages and a rural area similar to the size of Cumbria. The group was a representation of members from the Co-operative stores and the producers they work with in the area. Their membership is in excess of 200,000. It was time for us to ask the question about how they did it. Working together with the community was a proven model for success. Unlike the mass of supermarket chains in Cumbria, which is growing, this area of Italy has protected much of its region from this kind of invasion. Working the land and co-ordinating and developing its future in partnership with its people and its producers, were fundamental to its future.
Back Home After the reality check which says we can’t go backwards, our model at the Penrith Co-operative Society with its 9 stores, is striving for better links with you the community and businesses in the vicinity around the stores and towards better local and social sales. It is also about supporting the Cumbrian local pound and where it is spent and re-invested. In a rural area, there are few takeaways and we are fortunate to have village shops, farm shops, local post offices and pubs - many of these hubs and an oasis of the community. Then we have online. Do you shop online? Do you shop online locally? We all need food. Your local co-op can deliver your local products. The WeekendPeter Baking Inspiration Sidwell Not only have I opened a new cafe/restaurant in the Rheged Visitor Centre this year but I have also spent the summer filming a new TV series for ITV called Britain’s Best Bakery. I have seen some pretty amazing bakeries and some very talented bakers. I hope you can tune in on ITV 4pm from the 26th of November every day until the 21st of December to see who has Britain’s Best Bakery just around their corner. The UK has seen a massive surge of interest in Great British baking over the past few years, perhaps this is due to a change in shopping habits together with lots of TV baking programmes. For me Britain has a wonderful heritage for baking and I feel there is something really exciting to be built on, my question is where is baking going in the next 10-20 years? Will it evolve like food and cooking has or will it stay still. I want to take Great British baking and push it into the 21st century, give it a really good blast of culinary imagination while still staying true to the classics, just giving them a relevant twist. For me baking is all about the weekend and I like many people have a busy life and baking in the week sounds great but to bake really well you need time and that is something I’m short of in the week. So weekends are the time to be with my family and to enjoy quality time, great food and good friends-so join me for a little weekend baking inspiration.
With Christmas almost upon us what better inspiration can there be to get baking than this festive time. I have created two new recipes perfect for a fresh approach to Christmas. A pecan, cranberry and clementine soda bread is a perfect way to make a no fuss easy loaf of fresh bread for a perfect Christmas Day breakfast- there’s no kneading or proving so it can be in the oven and baking before the kids have even finished unwrapping their presents. I have also created an alternative Christmas Cake as a rich, fruity and alcoholic cake is not for everyone, so my perfect Victoria sponge with a mince pie and Clementine butter icing is a delicious alternative.

Christmas Day Breakfast Loaf Ingredients
Here’s how
400g of Self raising flour 50g of wholemeal flour 2 clementines 2 tbsp of sugar 1/2 tsp of salt 50g of dried cranberries 75g of pecans 2 tbsp of plain yogurt 225 mls of milk
Place all the dry ingredients into a mixing bowl
lightly floured work surface and shape into a round loaf
Add in the clementine zest, pecans and cranberries
Place the loaf onto a non stick baking tray and using a pair of scissors cut 2/3’s into the dough a cross to the middle opens out
Add in the yogurt and milk then carefully mix together to form a soft dough Scoop out the mixture onto a
Bake at 180c for approx 30 minutes until it is golden and cooked right through
Alternative Christmas Cake
Here’s how
Place the 250g’s of softened butter and the castor sugar into a mixing bowl and beat until light and fluffy for 5-10 minutes Add the eggs one at a time, making sure each egg has mixed in before you add the next Mix the flour in using a metal spoon, mix carefully so you don’t knock any air out Add in the milk to loosen the mixture followed by the clementine zest
Ingredients 250g soft butter 250g castor sugar 5 medium eggs 250g Self Raising flour 2 tbsp of milk
3 clementines 1 jar of mince pie filling 3 tbsp of cranberry sauce 140g soft butter 280g of icing sugar
Pour the mixture into a 24cm /10 inch cake tin and bake at 180c for 2030 minutes until golden -a good way to check if your cake is cooked is to carefully press the middle of the cake down and if

it springs back then it’s cooked When the cake is cooked, leave it to cool for 10 minutes then cover in cling film to keep the moisture in. Meanwhile melt the mince pie filling and the cranberry sauce together in a sauce pan, then leave to cool Beat the remaining butter, icing sugar and a squeeze of clementine juice until it is light and fluffy Cut the cake in half and carefully spoon in the butter icing and the mince pie filling Finally dust with icing sugar

Walking with Keith Wood
Rannerdale Knotts The ridge of Rannerdale Knotts overlooks Crummock Watter and whilst Rannerdale is famous for its show of bluebell blooms in May this walk is suitable for any time of year giving outstanding views from the ridge. 1. Park in the small National Trust Parking Bay at the foot of Rannerdale Knotts. Head off through the back of the Car Park past the National Trust Rannerdale sign on the clear path running around the foot of Rannerdale Knotts with a well built drystone wall on the left. Pass through a kissing gate through a drystone wall coming down from the fellside. Pass through the gate and after 50 yards the path starts to swing away from the wall around to the right continuing around the foot of the fell where the shapely peak of Whiteless Pike comes clearly into view. Continue on the path beneath the crags of Rannerdale, the waters of Squat Beck are now in the valley bottom to the left. Continue walking up the valley gaining some height on the right hand bank of the beck. 2. A wooden footbridge crosses over the beck giving access to the opposite bank to inspect the bluebells. Continue on the right bank and pass through a gate through the drystone wall and continue on the clear and stony path up the valley with Whiteless Pike on the left. The beck gradually reduces in size to a trickle and after gaining some height the path flattens off as you walk along the edge of the wide bowl between Whiteless Pike and Rannerdale Knotts. Keep to the clear path walking along the secluded valley of Rannerdale, and as the intake wall is left behind the path starts to gently rise again towards the hause which gives easy access to the ridge of Ranerdale Knotts. The path passes over the beck continues gently rising up the valley with High Snockrigg in sight above the hause. As height is gained pause for a look back down the valley towards Crummock Water. Ignore the path to the right onto the ridge as you near the top of the valley keep straight on the main path towards the hause. EdenLocal
1. The view opens up as you meet the path down from Whiteless Pike. Take the time to look down upon the village of Buttermere and the lake. Double back on yourself to pick up the grassy path along the top of the ridge of Rannerdale Knotts. After a short climb over the green turf the full length along the ridge comes into view. Simply follow the green path along the top of the ridge, enjoying the magnificent views as you follow the ridge along. After a steepish climb about a third of the way along the ridge a grassy plateau is reached which makes for another great viewing station before dropping down a little and then rising again towards the rocky peak. A final little scramble up a rocky knoll leads to the highest part of the ridge topped with three rocky outcrops the third and furthest along being the true top. 1. From the top it’s clear that it’s a steep descent from the top straight down to the valley below. Initially keep heading along the ridge, immediately losing height down a repaired path. Those with short legs may need the odd hand! Follow the rocky path and just before a crag blocks the way the path turns down to the left and starts to descend towards Crummock Water with Mellbreak straight ahead. Follow the mostly green path steeply down the flank of Rannerdale Knotts. The path steeply descends down a gulley on a stepped path before continuing on grass again and swinging around to the right. Just before reaching the bottom walk onto the outcrop jutting into the lake for a full length view of Crummock Water. Finally take the last few paces back down to the Car Park. The gift of giving - the season of goodwill No accountancy talk this month - well almost! Whilst we are still in choppy financial waters and will be for some time yet, it’s time to change the mood because Christmas will soon be here. It might be a time to reflect, recharge the batteries, avoid the relatives, hide from the carol singers or perhaps book the summer holiday (with the hope that you will be able to pay off the credit card by next Christmas!) Of course we all hope that a wonderful present with our name on it will turn up under the Christmas tree, but maybe our thoughts should be more charitable and we consider those less fortunate; as Charles Schultz put it “Christmas is doing a little something extra for someone”. It doesn’t matter what that extra might be, and there are numerous local charities that are in need of your support. Yes, charity does begin at home but every little helps, and don’t forget you can “Gift Aid” your contribution! So just before you pop the champagne and celebrate Christmas, get your smartphone out and give that little something - you will be making a difference. Cheers!
