Soak some raw cashews for about 1 hour, pour off water and place into blender and add some sweet freedom, blend until you get a smooth paste, you may have to add a bit of water, add a riped avocado, a tablespoon of lime juice and blend until mixed together, add more water if too thick, add 2 heaped teaspoons of cacao powder of carob powder and blend together until it looks like mousse, you may have to add more water to get the correct consistency. Once you have the correct consistency, pour the mousse onto the crust, smooth out with a spoon and refrigerate for about 1 hour. Serve and enjoy.

To make the filling, soak a cup of cashews for about 2-4 hours or overnight, drain water off and put into blender, add banana, 2 tablespoons of lemon juice, 3 tablespoons of coconut oil, and 4 tablespoons of sweet freedom or agave nectar, blend well together, add a hand full of raspberries and blend further. Pour mixture onto the crust and decorate with some raspberries, place in the freezer for 1-2 hours and then in the fridge for about 15 minutes. Serve and enjoy.

Take it out of the fridge and press flat onto a chopping board, using a rounded glass or cookie cutter, cut them into biscuit shapes, using a metal spatula, remove them from the board and place onto a plate covered with grease proof paper and place in the freezer for 10 minutes. In a bowl, add 2 or 3 tablespoons cacao or carob powder, melt and add about 8 tablespoons of coconut oil and add cacao powder, add some sweet freedom and mix all together, making chocolate sauce. Take the cashew biscuits out of the freezer, using a metal spatula loosen them from the plate and cover with the chocolate sauce using a teaspoon, place them on grease proof paper on a plate and cover the other side with the chocolate sauce. Once all the biscuits are covered, place them into the freezer or about 20 minutes and enjoy.

Grind a cup of cashew nuts and a cup of desiccated coconut, pour dried mixture into large bowl, add a heaped teaspoon of cacao or carob powder into mixture and about 4 tablespoons of sweet freedom, raw agave nectar or honey into the mixture, add 4 tablespoons of melted coconut oil, melted in a glass bowl placed in hot water. Mix ingredients together and form a dough, place in fridge for about 10 minutes to firm up. After 10 minute break of small sections of dough and press each bit into a flat biscuit shape in your palm, place onto a flat plate and with a cookie cutter or something similar cut dough into rounded biscuit shapes, when finished, place the place into the freezer for 10 minutes. After 10 minutes remove from freezer, using a flat metal spatula remove cookies from plate and place them onto another clean plate. Add 4 tablespoons of melted coconut oil into a glass bowl, add a level teaspoon of cacao or carob powder and a bit of sweet freedom or honey, mix until you get a chocolate sauce. If the sauce thickens, leave in a warm room for 5 minutes. Using a teaspoon cover each cookie with the chocolate sauce and place the whole plate into the freezer for 10 minutes. After 10 minutes remove from freezer and using the flat metal spatula remove each cookie using firm motion to get them off the place, cut or break off excess hardened chocolate from the sides of each cookie, place them into a clean plate and enjoy.

For filling Dice some mushrooms, white onion, the green part of a spring onion, a few sundried tomatoes and put in a bowl. In a seperate bowl, mix together 1/4 teaspoon of curry powder, 1/4 teaspoon of cumin, some cayenne pepper, a sprinkle of dried oregano, 2 teaspoons of nutritional yeast, some sea salt and 5 tablespoons of olive oil, mix well until blended. Pour mixture over the mushrooms mix and mix until well blended. Cover with a plate until the crust is ready. After 30 minutes take crust out of freezer, place into the fridge and wait 10 - 15 minutes, meanwhile give the filling another thorough mix. After 10 minute take the crust out of the fridge, fill the crust with the filling and gently pat down. Serve and enjoy. They can also be made in small individual quiche dishes.

To make the coriander sauce, soak a cup of raw cashew nuts for about 4 hours. Drain and pour nuts into a blender, chop up some coriander and add to nuts, add 3 tablespoons of lemon, a clove of garlic, some sea salt, 4 tablespoons of water and 1/4 cup of olive oil and blend until smooth. You can purchase the spelt crackers from any health foods shop. Spread some sauce onto the cracker, add the diced onion, tomato and cucumber, a dash of black pepper if you wish and enjoy.
