t’s safe to say that 2020 has left us all not quite the same as it found us. We have had a different range of seasons yes but we have also had a different range of experiences that have been felt by everyone the globe over. The world became a village and we were put in a space where we had to face the same foe collectively and find s new space to call normal. As you have seen during this ever changing space it is the comforts of normalcy that have left us feeling somewhat safe. For me having the Edgars Club on digital has really been key to my adapting. I went into old issues as we created the new issues and reminisced on the journey that has led us to this space and I am grateful. I urge you in your downtime to pick up your gadget and open up The Edgars Club magazine.

Greek yogurt 1/4 c. sour cream 1 tsp. prepared horseradish Juice of 1/2 lemon Kosher salt INSTRUCTIONS In a large bowl, mix together oil, vinegar, mustard, thyme, rosemary, bay leaf, smashed garlic, and honey. Add meat to bowl, cover with plastic wrap,

and marinate in refrigerator for 1 hour or up to one day. Preheat oven to 210ยบ. Line a rimmed baking sheet with aluminum foil and fit a wire rack inside. Remove tenderloin from marinade and pat dry with paper towels. Season all over with salt, pepper, rosemary, and minced garlic, then place on rack. Roast until cooked to your liking, about 20 minutes for rare. Let rest 5 to 10 minutes before slicing. Meanwhile, make sauce: In a medium bowl, whisk together yogurt, sour cream, horseradish, and lemon juice, and season with salt. Slice tenderloin and serve with sauce on the side. INSTRUCTIONS Heat oven to 400°. In a small bowl, combine 1/4 cup oil, garlic, chopped rosemary, and thyme. Place lamb in a large roasting dish, then season all over with salt and pepper. Brush herb oil all over lamb (you won’t use it all right now). Roast 30 minutes. Meanwhile, in a medium bowl, stir together whole garlic cloves, onions, rosemary sprigs, and lemons

In small bowl, combine fennel, red pepper, and 1 teaspoon each salt and black pepper. Rub mixture all over inside of pork loin. Roll pork loin up and tie tightly with 5 to 6 pieces kitchen twine. Rub

outside with 1/4 teaspoon salt. In 7- or 8-quart Dutch oven or heavy-bottomed pot, heat oil on mediumhigh. Add pork to pot; brown pork on all sides. Transfer to cutting board. To pot, add apples, onions and butter. Cook 2 minutes, stirring. Nestles pork on top of apple mixture. Place in oven; cook, uncovered, 20 minutes. Meanwhile, in small saucepan, combine cider, vinegar, cinnamon, star anise, and ginger. Heat to boiling on high. Boil 15 minutes or until reduced by half, stirring occasionally. Brush pork all over with some of cider mixture, discarding solids. Roast pork another 45 minutes or until cooked through (145 degrees F), brushing with cider mixture every 15 minutes. STEP 1 Peel the oranges using a sharp knife, ensuring all the pith is removed. Slice as thinly as possible and arrange over a dinner plate. Sprinkle with the demerara sugar followed by the Grand Marnier and set aside. STEP 2 Crumble the Christmas pudding into large pieces and scatter over the bottom of a trifle bowl. Lift the

oranges onto the pudding in a layer and pour over any juices. STEP 3 Beat the mascarpone until smooth, then stir in the custard. Spoon the mixture over the top of the oranges. STEP 4 Lightly whip the cream and spoon over the custard. Sprinkle with the flaked almonds and grated chocolate. You can make this a day in advance if you like, chill until ready to serve.

Paintbrushes Glue Assorted Ribbons (you could also use Yarn, Colored Paper, etc.) Optional embellishments like Glitter, Stickers, Gemstones, Sequins, etc. as desired Masking Tape

DIRECTIONS

As she went along she began calculating what she would do with the money she would get for the milk. “I’ll buy some fowls from Farmer Brown,” said she, “and they will lay eggs each morning, which I will sell to the parson’s wife. With the money that I get from the sale of these eggs I’ll buy myself a new dimity frock and a chip hat; and when I go to market, won’t all the young men come up and speak to me! Polly Shaw will be that jealous; but I don’t care. I shall just look at her and toss my head like this.” As she spoke she tossed her head back, the Pail fell off it, and all the milk was spilt.
