e are now in the First Quarter of 2022 and its fast reaching the end. A year that started once again with a low-key lockdown. However it has picked up with breakneck speed. Personally, the lockdown created opportunities for inner work. Now the world is open outside, I am out here realising on the ground the dreams that I was creating during the long slumber. Lockdown was not easy for many. It took away the will to live in some instances. I would like to speak on resilience. Its a built up muscle that we need to use more often and recognise it as a necessity not as a luxury. Resilience is accepting the status quo and stepping out to change it or create your own reality. As we step further into 2022 let us exercise this muscle and gain its full uses.

Gently heat the oil in a large pan. Fry the sausages all over until brown, then remove and set aside. Add the onion to the pan and fry for 5-10 mins until golden and soft, then add the celery, garlic and rosemary, and cook for 2

mins more. Pour over the stock and bring to the boil. Reduce the heat and simmer for 20 mins, then add the sausages back to the pan along with the butter beans. Simmer for 8 mins, then stir in the butter, parsley and lemon zest. Ladle into bowls and serve piping hot with lots of chunky bread.

Tip in the tomatoes and the peanut stock, then stir in the chicken pieces. Put a lid on the pan and leave to simmer for 30 mins, stirring frequently to make sure the peanut butter doesn’t stick to the base of the pan. Stir in the sweet potatoes, peppers and chopped coriander, then cook for 30 mins more. Serve sprinkled with the reserved coriander, with rice and lime wedges for squeezing over, if you like. Sausage, kale & gnocchi one-pot INGREDIENTS • 1 tbsp olive oil • 6 pork sausages • 1 tsp chilli flakes • 1 tsp fennel seeds

(optional) • 500g fresh gnocchi • 500ml chicken stock (fresh if you can get it) • 100g chopped kale • 40g parmesan, finely grated INSTRUCTIONS club

Heat the oil in a large high-sided frying pan over a medium heat. Squeeze the sausages straight from their skins into the pan, then use the back of a wooden spoon to break the meat up. Sprinkle in the chilli flakes and fennel seeds, if using, then fry until the sausage meat is crisp around the edges. Remove from the pan with a slotted spoon.

Tip the gnocchi into the pan, fry for a minute or so, then pour in the chicken stock. Once bubbling, cover the pan with a lid and cook for 3 mins, then stir in the kale. Cook for 2 mins more or until the gnocchi is tender and the kale has wilted. Stir in the parmesan, then season with black pepper and scatter the crisp sausage meat over the top. Easy Cornflake Tart INGREDIENTS: • 320g ready-rolled

shortcrust pastry • plain flour, to dust • 50g butter • 125g golden syrup • 25g light brown soft sugar • 100g cornflakes • 125g strawberry or raspberry jam • custard, to serve INSTRUCTIONS:

Heat the oven to 180C/ 160C fan/gas 4. Unroll the pastry and club

briefly roll out on a lightly floured work surface until it's large enough to fit a 23cm loose-bottomed tart tin. Use the rolling pin to lift the pastry over the tin, then press into the corners and sides so the excess pastry hangs over the rim. Trim this away, leaving just a small amount of excess hanging over the rim. Line the pastry with baking parchment and fill with baking beans or

uncooked rice. Bake for 15 mins. Remove the parchment and beans, then bake for another 5-10 mins until just golden. Remove from the oven and trim any excess pastry from the edges using a serrated knife. Heat the butter, syrup and sugar in a small pan with a pinch of salt, stirring frequently, until melted and smooth. Fold in the cornflakes to coat in the butter mixture. Spoon the jam into the cooked pastry base, then level the surface. Tip the cornflake mixture over the jam and gently press down until all of the jam is covered with a layer of the mixture. Return the tart to the oven and bake for another 5 mins until the cornflakes are golden and toasted. Leave to cool until just warm before slicing and serving with custard. Edgars Club @ 8 years

apple and caster sugar into a large saucepan along with 350ml of water and bring to a simmer, stirring to dissolve the sugar. Cook gently, stirring regularly, for 30 mins until the apples have collapsed. Stir in the lemon juice, add the cinnamon stick and simmer gently for another 2-3 mins until the mixture

is thick and glossy. Remove the small plate from the freezer and drop a little of the 79 117 79 mix onto it. Leave for a few seconds – it should be fairly firm. If it’s still a little runny, put the pan back of the heat and simmer for another 10-15 mins. Put the plate back in the freezer and test again, it should now be ready. Divide between clean, sterilised jars and seal. Will keep for three months in a cool, dry place. Once opened, chill and use within one month. Edgars Club @ 8 years

Daily habits are easiest to implement because they can easily become habituated or automatic over time. When a habit is performed daily, you will not need to think about executing it once it becomes habituated. In other words, once any action becomes an established habit, it will occur without the need to think about making it happen in much the same way you will drive home from work automatically, instead of stopping by the store or a friend’s house. HONE AND REFINE HABITS 127 89 89 AND GOALS: Goal setting, habit creation, and rhythm all go hand in hand. Some habits are goals, some goals need good habits to accomplish, and following a daily rhythm is one long daily habit. Easter Bunny SUPPLIES: • Wooden Spoons (6 inch length) • Acrylic Paint • Googly Eyes • Pipe Cleaners • Craft foam (paper will also work) • Pom Poms • Ribbon • Craft feathers

bunny’s face. For the bunny’s ears, bend a 12 inch pipe cleaner in half to find the middle. Take one end and cross it over the middle point. Then twist it to hold it in place. Repeat for the other end of the pipe cleaner. You should end up with two loops (aka DIRECTIONS: Paint your bunny ears) that are twisted around the spoons using acrylic paint. of the spoon. Cut out a circle from pink craft foam. Glue the circle to the front of the spoon. If you plan to add a bow, make sure you leave a bit of space below the head so you have room to tie the ribbon. Cut a piece of ribbon and tie it into a bow around the “neck” of your bunny.
