INGREDIENTS 1 cup long grain rice 2¼ cup chicken broth ½ Tbsp chopped garlic ¼ cup chopped onion 1 Tbsp packed brown sugar 3 Tbsp soy sauce ½ tsp sesame oil ½ - 1 Tbsp Gochujang (optional, or any hot sauce of your choice) FOR THE CHICKEN 4 chicken thighs ½ Tbsp garlic powder 1 tsp dried oregano 1 tsp cumin ⅛ tsp ground black pepper 1 tsp kosher salt club

INSTRUCTIONS Preheat oven to 350 degrees. Pat dry the chicken thighs and set aside. Mix together the dry seasonings - garlic powder, oregano, cumin, salt, pepper, and coat both sides of the chicken thigh. Mix soy sauce, brown sugar, sesame oil, gochujang (or hot sauce) and set aside. Melt 2 Tbsp of butter in an oven safe pot/skillet on medium high heat. Sear and brown both sides of the chicken thigh. 3 minutes each side. Place

chicken on a clean plate and set aside. In the same pot on medium heat, add garlic and onions and allow the onions to sweat, 1 minute. Add rice, mix, and allow it to toast for 1 minute. Pour in chicken broth and seasoning mixture (soy sauce, sesame oil, brown sugar, and gochujang) and combine well. Place chicken back on top of the rice and place in oven (uncovered) After 45 minutes, remove the pot from oven, fluff rice, garnish with chopped scallions and parsley and serve immediately! INGREDIENTS FOR THE SOUP 2 tbsp. extra-virgin olive oil 1 large onion, chopped 2 medium carrots, peeled and diced 1 stalk celery, chopped 1 tsp. dried oregano Kosher salt Freshly ground black pepper 3 cloves garlic, minced 6 c. low-sodium chicken broth 4 boneless skinless chicken thighs 2 boneless skinless chicken breasts 3 sprigs thyme 1 c. heavy cream Freshly chopped parsley, for serving FOR THE DUMPLINGS 1 1/2 c. all-purpose flour 1 tbsp. baking powder 1 1/2 tsp. kosher salt 1 large egg 2/3 c. buttermilk 2 tbsp. melted butter

INSTRUCTIONS In a large pot of salted boiling water, cook pasta according to package directions until al dente. Drain and return to pot. Season chicken with salt, pepper, garlic powder, and Italian seasoning. In a large skillet over medium-high heat, heat oil, then cook chicken until browned on both sides and cooked through. Dice chicken, set

aside, and cover to keep warm. Wipe skillet clean, then melt butter over medium-high heat. Stir in garlic and cook, 1 to 2 minutes. Sprinkle flour over butter and garlic and stir until thick. Gradually whisk in heavy cream until a smooth sauce is formed, then add salt and pepper and stir in Parmesan until melted. INGREDIENTS 8 chicken thighs kosher salt Freshly ground black pepper 1 tbsp. extra-virgin olive oil 1 tbsp. butter 3 cloves garlic, minced 1 onion, chopped 1/2 c. dry white wine (such as Sauvignon Blanc) 1 c. low-sodium chicken stock 2 lemons 1/4 c. heavy cream 1 c. wild rice 1/4 c. chopped fresh parsley INSTRUCTIONS Preheat oven to 180°. Preheat large cast-iron skillet on high heat. Rinse chicken and pat dry thoroughly; season with salt and pepper. Add oil and butter; cook chicken skin side down in two batches until skin is crisp and golden brown, about 5 minutes. Transfer to a dish skin side up and set aside. Reduce skillet heat to medium-high; add garlic, onion, salt and pepper and cook for 1 minute. Deglaze pan with July-August 2020

INGREDIENTS: 2 lb. rhubarb cut into 1” pieces (about 7 cups) 1 1/2 c. granulated sugar 1/4 c. cornstarch 1 tbsp. lemon juice 1/4 tsp. kosher salt 2 pieces pie dough All-purpose flour, for rolling 2 tbsp. butter, cold and cubed 1 large egg, lightly beaten with 1/2 tsp. water Sanding sugar, for sprinkling INSTRUCTIONS In a large bowl, combine rhubarb, sugar, cornstarch, lemon juice, and salt. On a lightly floured surface, roll club

each piece of dough out into two 12” rounds. Fit one round into a 9” glass pie plate and fill with rhubarb mixture. Dot evenly with butter, then cover pie with remaining round and trim overhang to 1”. Fold edges of top dough under and crimp together. Using a sharp knife, make five 1” slits in a circle in the center of the top crust. Freeze pie for 30 minutes. Preheat oven to 375° with a rack in the middle and the bottom third. Brush top crust all over with egg wash and sprinkle generously with

sanding sugar. Bake pie on middle rack, with a foillined baking sheet on bottom rack to catch juices, about 1 hour. Check to see if top crust is browning too quickly and tent with foil if necessary. Continue to cook, checking every 10 minutes to see if top crust needs to be tented, for about 30 minutes more, until bubbling in center and bottom crust is golden. Transfer pie to a rack to cool completely.

INSTRUCTIONS Preheat oven to 375º. In a large bowl, toss berries with 3/4 cup sugar, cornstarch, lemon juice, and 1 teaspoon lemon zest. Season with a pinch of salt. In another large bowl, whisk together flour, baking powder, remaining 1 teaspoon lemon zest, and ½ teaspoon salt. Add butter and break down into pea-size pieces with your fingers or two forks. Gradually stir in

heavy cream and mix until a dough forms. Pour berry mixture into a medium baking dish. Using a large spoon or an ice cream scoop, drop dough over fruit. Brush with cream and sprinkle with remaining 2 tablespoons sugar. Bake until fruit is bubbling and biscuits are golden brown, 47 to 50 minutes.

CHINHOYI CAVES North central Zimbabwe is home to the mysterious Chinhoyi Caves. The caves are protected as park of Chinhoyi Caves National Park.
