many schools starting this month, it can feel like summer gets cut short. But there’s still plenty of it left to enjoy. One thing’s for sure, we’ve seen a lot of growth around the community this summer. On any given weekend there are numerous events and activities around town. Businesses are growing too, providing people with more options for places to dine and find quality services. In this issue we feature a number of businesses who are experiencing growth that is benefitting the community in a variety of ways. Zach Scribner, who owns three Salon Z Studios in West Omaha, is opening a fourth location next month. ucked away just behind the hustle and bustle of West Omaha’s popular retail shops and restaurants at Legacy sits a quiet neighborhood with beautiful homes on expansive lots. Six years ago when Amy and Ken Bachulis moved to Omaha from Michigan and were looking for a home, they fell in love with the neighborhood, and in particular a home with a covered deck that overlooked a magnificent backyard and offered plenty of space for their four children.

This home was the first of 60 the Bachulis’ looked at over five days. The five bedroom, 5,400 sq. ft. home built by Ken Oster caught their eye from the street, and Amy said she fell in love with it the minute she stood on the deck and saw the large backyard, which would be perfect for her kids. “I knew it was perfect even before I saw the rest of the house,” she said. Built in 2005, realtor Teresa Elliott with Berkshire Hathaway Home Services said the builder was ahead of his time with the story and a half open floor plan. Including extra tall ceilings, 8-foot high doors, and the two-story fireplace in the living room were unique features that are still sought after today. “The house is timeless,” she said. “From the cherry

wood floors and granite countertops to the warm, inviting colors. It’s very modern.” Having lived on the East Coast for many years, Amy said she was surprised at so many aspects of the home. Not only were all of the finishes very high end, but there were a number of unusual touches she hadn’t seen in other homes. Large, decorative crown molding, finished painted ceilings, staircase off the kitchen, suede front bar in the basement, and ample built in cabinets. The only changes they made were to add a mud room/drop zone off the garage for the kids, and they recently put new carpet in the basement. “It’s literally move-in ready,” Amy said. Shortly after moving into the house, the Bachulis’ had the property professionally landscaped by Lanoha, creating a back yard haven. “All the kids in the neighborhood come to our yard,” Amy said. “And we eat dinner on the covered deck almost every night from May through October.” All of the lots in the Legacy subdivision are about an acre in size, making it a desirable location to get into. Amy also pointed out how nice the proximity is to so many retail and restaurant options. “The allure of the area makes this neighborhood and house even more captivating,” she added. The house is in the growing Elkhorn South school district and close to the Zorinsky Lake trail as well as the smaller Wiebe Lake where Amy’s kids like to walk to and go fishing. It also attracts wildlife to the area. But it’s far enough from any major intersections that it’s still quiet and peaceful. “This house is so easy,” she said. “We don’t have to worry about schools, safety in the neighborhood, or who our neighbors are. t some point in their lives everyone has experienced a time when they haven’t felt themselves. Perhaps sleep is fitful, energy is low, libido is down, or headaches pop up unexpectedly. Sometimes physicians aren’t able to pinpoint a cause, which can lead to frustration and ongoing, undiagnosed issues. Her extensive work in Obstetrics and Gynecology led to her interest in the study of hormone imbalance, in which she later became certified in bio-identical hormone replacement therapy and is currently a physician mentor with Bio TE Medical. Pollard said she was tired of seeing patients with issues and not being able to help them the way they deserved to be helped. That’s when she took matters into her own hands and began studying Bio-identical Hormone Replacement Therapy extensively and ultimately narrowed her focus of her practice to natural hormone management and aesthetics. All of her services are designed to bring balance back to health. She said a lot of people don’t realize that many symptoms people experience are the result of hormone imbalance. Whether migraines, having cold hands and feet, sleep issues, or retaining weight in the belly, Pollard said hormone replacement therapy can address a number of common issues. “Once patients start explaining their symptoms, I can narrow it down and focus on certain areas where deficiencies are present,” she said. “I help put the pieces of the puzzle together and create the big picture of health for them again.” So often people attribute their symptoms to “getting old,” but Pollard said we shouldn’t accept aging as an answer. “Everyone, no matter their age, should go through life with a feeling of vitality.” She explained that when hormones are in balance, for both males and females, they help protect the heart, bones, and organs, as well as prevent disease as we grow older. “Patients often feel frustrated and alone when dealing with symptoms,” she said. “They are exhausted with telling their story to physician after physician without results. Once they know I understand what they’re going through, the relief is visible on their faces.” People want someone to take the time to listen to them and that is exactly how Pollard practices. She explained that her philosophy for more than eight years of experience is that, “If I listen long enough to someone, they will tell me exactly what is wrong with them.” This philosophy has not steered her wrong and leads her 28 |

patients to positive results in their health. She also spends a lot of time educating patients on their health and making recommendations for their medical management. Once patients start treatment, Pollard said they usually start seeing improvement and feeling better within two to four weeks. Both men and women can benefit in their overall health from bio-identical hormone replacement therapy. Pollard said she has a strong male following, as well as a wide range in age for female patients. Although many of her female patients are in the menopausal stage, she said she does see younger patients as well. Pollard works with some area neurologists to collaborate in migraine management too. Once patients begin feeling better, the next logical step is they want to improve their appearance. s is so often the case, life takes us down a career path we never imagined. That was certainly true for Minnesota native Zach Scribner, who moved to Omaha to play hockey for UNO. He decided to stay after college and started a career in the medical recruiting industry. Through a contact and friend he started helping manage a local salon studio, which he later purchased. Before long Scribner purchased two more salon studio locations and is about to open his fourth.

Scribner said salon studios are not a new business model. “I didn’t create the model, but they are certainly unique.” Rather than a traditional salon in which an owner employs a number of stylists, salon studios are made up of individual beauty professionals, each with their own studio, their own schedule, their own clients, and ultimately their own business. Scribner owns all of the equipment and fixtures and leases it to each professional for a flat fee, making it a tenant/landlord relationship. Each space comes fully equipped with the necessary cabinetry, sinks, and chairs, allowing the tenants to only provide their specific tools. However, he is very hands on at each location, ensuring all of the business owners have what they need in order to operate successfully. “I’m available and responsive to them, whether it’s

plumbing and electrical issues or simply differences in opinions amongst co-workers,” Scribner said. “They are not my employees, and I am not their boss. We are simply working together. But my pledge to them has always been I’ll try to fix an issue that day, and if I can’t get to it, I’ll at least communicate with them.” What makes the studio business model so attractive to stylists is they get to keep a larger percentage of revenue than they would at a traditional salon. Scribner explained that anywhere from 40 to 60 percent of a stylist’s revenue is given back to the salon owner, whereas with the studio model they get to keep about 50 percent more because they are the salon owner. He doesn’t take a commission or percentage of revenue. “It works because I have a large space I’m subleasing, and they’re leasing space without giving up revenue,” he said. There is no front desk receptionist at the studio, and stylists must keep their own schedule. But Scribner said many prefer it this way because they can work as many or few hours as they like. Most of the stylists are seasoned professionals with established clientele, making the studio a destination rather than one 36 |

Each of the stylists are unique in how they operate their business, which Scribner said is what you want from small business owners. “Stylists are artistic people and everyone has their own vision for their business, so I give them space and let them do what they’re good at,” he said. There are currently three Salon Z Studios locations: 144th & Maple; 168th & Center in Legacy as well as one in Armbrust Village. A fourth location is set to open September 1st on 175th & Center in the Tivoli development area and still has studio space available. Once completed, all four locations will house 85 private studios with 110 professionals, including hair stylists, aestheticians, massage therapists and nail techs. “Many people have asked me, why three locations within close proximity to one another?” Scribner said. “But with the way the area has developed, the demand for more studio space has grossly increased. So many people want to work off of West Center.” And he isn’t done expanding. Scribner hopes to continue to add locations as opportunities arise and eventually hire some additional help from the management side. But he enjoys the flexibility of being a business owner himself and nurturing other business owners. “It’s all about listening, being responsive, and treating people with respect,” he said. “I love what I do and working with so many different people, it’s rewarding. I wouldn’t have it any other way.” 38 |

s an anchor restaurant in West Omaha’s Village Pointe for the last 10 years, Kona Grill has always enjoyed a popular following. Whether for its happy hour, sushi bar, or casual, upscale dining menu and environment, customers know they can count on quality, consistency, and variety at Kona. In fact, August marks the beginning of a new promotional menu at the restaurant that isn’t to be missed. General Manager Chris Congdon said promotional menus are typically introduced quarterly as a way to test new items. Usually one or two of those become best sellers and make it on the permanent menu, which is changed yearly in the fall. This newest promotional menu is a celebration of summer and its fresh ingredients. It includes a new sushi offering, flatbread, a salad, two entrees, a dessert, and a seasonal cocktail.

The new Rainbow Naruto roll puts a summer twist on sushi with king crab, tuna, white fish, and salmon combined with green onion, citrus aioli, and a spicy ponzu sauce rolled in cucumber rather than rice and seaweed. A kale salad provides another lighter choice that includes carrots, dried cranberries, mandarin oranges, pistachios, soybeans, and goat cheese in a citrus shallot vinaigrette dressing. Kona used to offer a garlic shrimp pizza, which has now come back as a flatbread on the new menu. The promotional entrees include a Kobe beef cheeseburger, and the Kona Churrasco, which is a flank steak topped in chimichurri sauce and served with garlic parmesan mashed potatoes and French garlic green beans. A banana cake is the perfect summer dessert to end any meal and is made with fresh banana, chocolate chips, and walnuts mixed into the cake then topped with homemade caramel and chocolate sauce with vanilla bean ice cream and a caramelized banana. The summer menu also features a seasonal pomegranate mojito made with Captain Morgan, fresh mint, pomegranate juice, pineapple juice, and fresh squeezed lime juice. But that’s not the only new drink. After five years, Congdon said Kona has also changed its happy hour cocktail menu. “It was a little outdated, and we wanted to offer some newer, more modern drinks that have become popular,” he said. These include a Moscow Mule, London Mule, and Kentucky Mule, a Patron margarita, as well as a Maker’s Mark Old Fashioned. They also now offer all of their wines by the glass for $2.00 off during happy hour. Long-time favorites such as the Macadamia Nut Chicken, Avocado Egg Rolls, and Las Vegas sushi roll are still on the menu, but Congdon said there are a number of items that customers aren’t

One is the Temptation sushi roll, which is shrimp tempura, crab mix, and cream cheese topped with more crab and a spicy motoyaki mayo plus eel sauce. “It’s not on the menu, but we can make it anytime,” Congdon said. He also noted they offer a daily fresh fish such as Mahi Mahi, Swordfish, or Cobia that is served with one of six different salsas made in-house. These include a mango, Mediterranean, Caribbean, and Avocado corn salsas. They also have a sweet chili glazed salmon, a pan-seared Ahi tuna, and a sea bass that is marinated in a miso sake for 72 hours then pan-seared and baked, served with a ratatouille and a shrimp and pork fried rice that includes sweet pineapple. Kona also has its private dining room that can seat more than 30 guests, its upcoming annual Halloween and costume party, and its Husker happy hour during all of the fall football games. Additionally, on Wine Down Wednesdays all bottles of wine are half off all day throughout the restaurant. With so much to offer, old and new, it’s easy to see why Kona Grill continues to delight.

Jennifer Turco Meyer with Dyer Law is committed to fighting for what’s right and taking the time to explain and educate her clients about all of their options and about the process from start to finish. Mayer’s love for law started at an early age. When she was five years old she asked for a briefcase for Christmas. In high school she was on the academic debate team where she discovered her talent for persuasion. She completed her undergraduate degree at the University of Nebraska-Lincoln and then was graduated from law school at

As the first member of her large Italian family to earn a graduate degree, she worked her way through, putting in 40 hours a week as a trainer for a telemarketing company. As a result she witnessed a number of employment issues in the workplace. “I realized how much people identify with their jobs,” Meyer said. “When someone loses their job, it affects their whole family. Or when a small businesses’ reputation is at stake, which affects the entire community.” Although she has worked in many different types of law, she focuses primarily on employment law, which includes non-compete cases, wage and hour claims, and wrongful termination claims. She also helps businesses ensure they’re being compliant by reviewing employment handbooks and other documents. Regardless of the case, her passion is being in the courtroom. “I love being able to help and argue on behalf of people in these types of cases because it has such as impact on their lives,” Meyer said. At her current practice, she is one of five attorneys, but she is the only one who works on employment law. She says she takes a very personable approach to practicing law that is more dynamic than perhaps others. “I spend the time talking to my clients and getting to know them—their families, interests, goals, and fears,” Meyer said. “That way when it comes times to give my clients advice about their case, I can focus on the big picture and take into consideration what is really important to them.” She said that so often attorneys look at every problem as requiring a legal solution, which is what they’re trained to do. But often a problem doesn’t require a legal solution. Rather, they require someone who can point out real world solutions to resolving conflicts. It all goes back to her unique approach to spending time with her clients and explaining to them every option available. And because most of work is contingency cases, she’s not bound by billable hours. “My firms works as a team and is very good about communication with our clients and helping each other out,” she said. Another benefit of working for a smaller firm is that she’s able to achieve a positive work-home life balance. As a mother of two toddlers, her schedule 58 |

and time at home are precious. Although it’s a daily struggle to fit everything in, she has a supportive husband and work environment that recognizes flexibility is key. “There’s been a big change in the legal profession for both men and women to set boundaries and have family time,” Meyer said. Genuine care and respect are a common theme for Meyer. She said even when she spends a day working on 10 files for 10 different clients, she reminds herself that each of those clients are living their case all day, every day. “I try to recognize what they’re facing and what they’re going through,” she said. “I’m just grateful they trust me with their difficult issues.” AUGUST 2015
