Saving Grace Perishable Food Rescue started with one woman who had a desire to help the hungry in Omaha and reduce food waste. Beth Ostdiek Smith and her team give their time to working with local restaurants, caterers, grocery stores, and others to collect unused perishable food and then deliver it fresh the same day to non-profit organizations. They have dedicated themselves to this huge undertaking that is so important because it benefits so many. Katie and Brent Cordery with Omaha Physical Therapy Institute are another great example of giving both their time and talent to helping others. They provide a level of care not often seen in their industry. They don’t just treat patients at their clinic, but they will

accompany athletes to the field, court, or wherever necessary to ensure they have the physical ability and mental confidence to get back to their game. The in-house talent at Whitten Dentistry doesn’t just help patients’ teeth, it helps their overall health and wellbeing. Karry Whitten and her staff have a whole-body approach to dentistry so that their patients look and feel their best. is designed with family functionality in mind. There is no unused space in the home, and everything from the wood ceiling beams and natural stone detailing to the iron light fixtures carries the theme throughout the house. “Our goals with this model were first to show functionality and second to show the types of technical capabilities we have,” Brett said. Rather than a raised island in the kitchen there is a two-tier granite island that is lowered so that kids can sit around it in chairs rather than bar-height stools. The open floor plan welcomes group gatherings, but the second floor play room with spiral staircase to a loft is a perfect space for kids. There are two flex rooms on the main floor that can be used for office or other space, and a multipurpose room off the three-car garage with a separate entrance that could be turned into a workout room, shop, or pool room. The technical features of the home include charging stations for devices in the mud room, outlets hidden inside bathroom cabinets for hair dryers and curling irons, and invisible speakers completely concealed within walls. These modern components are complimented by the European style 10, 11, and 12 ft. ceilings and unique ceiling treatments along with the dark-stained 8 ft. knotty alder doors. “Most people really connect with the Mediterranean, old-world look because it’s so unique,” Brett said. The fireplace in the great room is a good example of the type of creativity Absolute Customs brings to its homes. They acquired concrete corbels—a popular building feature 200 years ago—that had been used on the exterior of the First National Bank building downtown and repurposed them into a design element on either side of the fireplace. They then had the sides faux painted to blend and carried that same paint treatment into the vent hood above the stove in the kitchen for continuity. If that doesn’t make you feel like you’re in a European home, the master suite certainly will as you step up into it through French doors. A large covered deck overlooks protected nat-

By nature, we are creatures of comfort. As the temperatures drop outside, we look for ways to keep cozy at home. Foyers have traditionally been given special attention, and it is not difficult to understand why. However, our owners’ entries, also known as the garage entry, are not appointed with the same care. Why reserve the plush area rug for your foyer when most of the time you don’t enter there? Try thinking of your garage entry differently—treat it as a second foyer. Throw the industrial-looking, snow catching, utilitarian rug out into the actual garage and slip your wet shoes off there. Invest in a soft area rug for your owner’s entry that reminds your cold tired feet that they are home. Saving Grace food rescue helps Omaha’s hungry one truckload at a time

t

rue change is made when just one person recognizes a problem and decides to do something about it. That’s what happened when Beth Ostdiek Smith realized how much food was being thrown away in our community. In fact, 40% of food that’s produced ends up in the trash, and yet one in five kids may go to bed hungry. In 2013, Beth set out to make her vision of feeding the hungry with the heartland’s excess healthy food a reality. She formed Saving Grace Perishable Food Rescue, a non-profit business in Omaha that rolled out its first refrigerated truck on Sep 30, 2013, picking up excess perishable food from local restaurants, grocery stores, caterers and other food purveyors, and then delivers it the same day, free of charge, to local non-profits that serve families in need.

w w w . w h i t t e n d e n t i s t r y. c o m The concept itself isn’t unique, but it is unique to Omaha and throughout much of the Midwest. To learn how to operate a perishable food rescue, Beth visited Waste Not in Arizona. There she met Operations Director Judy Rydberg who returned to her native Omaha to help Beth with Saving Grace operations. Beth brought business, nonprofit and fundraising experience to the table. Judy, who had worked with Waste Not for 12 years, had perishable food rescue operational experience. “That summer the two of us put our feet on the ground,” Beth said. “She had the operations knowledge and I had the contacts, so we went to work.” Beth established a few key donors for initial funding, and a meeting with the Douglas County Health Department to get their approval. They then set out to line up food donors and educate them on what food can and cannot be donated. Beth explained that perishable, prepared food that has not been set out to the public are rescuable. This includes wrapped catering trays, prepared salads, sandwiches, or other meals from grocery stores, or food from restaurants that was never served. Items that were set out or on a buffet are not able to be picked up for health reasons. This along with fresh produce, dairy, meats and bread items are ripe for rescue. Three years later Saving Grace now has two refrigerated trucks and two professional drivers, who pick up food five mornings a week from 30 Food Donors such as Hy-Vee at 156th & Maple and 180th & Q, Fresh Thyme Market, Bonefish Grill, Quick Trip Kitchens, Trader Joes, and Whole Foods. Food is matched to the needs of their non-profits partners, which includes food pantries such as the COPE Center in Elkhorn; shelters such as the Open Door Mission and Sienna Francis House; after school programs such as Youth Emergency Services; and transitional living such as Bethlehem House. In its first 37 months of operation, Saving Grace rescued 1.2 million pounds of perishable food, valued at over $2 million. As with any new program, there is a lot of education that goes along with it. Beth said it’s important to raise awareness within the community about food waste and how much goes into our landfills. “We’ve only tapped into the problem,” she said. “Our goal is to grow the food sources so we have enough places donating to meet the demands of the non-profits. The concept of Saving Grace is simple; the logistics are not.” That awareness and education can be as basic as when ordering catered food, rather than order large trays, order smaller ones and only set out as needed. That way any unused trays can be rescued. Not only can it help business’s’ green initiatives, but donating food is also a tax deduction and saves on dumpster fees. Savings Grace also holds events to raise food waste awareness, such as The Great Food Makeover – A No Food Waste

Fest held this past October, and Feeding the 5000 the previous year, in which Omaha was only the 3rd city in the United States to host this international event. “We want to add volunteers to help with these events going forward, and dollar donations always help so that we can sustain and grow our operations,” Beth encouraged. OUR business Karry received undergraduate degrees in biology and art, and prior to dental school at the University of Nebraska Medical Center, Karry traveled to Nicaragua for medical missionary work. There she was able to work with a local dentist in villages to provide basic care. She found dentistry to be the perfect marriage of art and science and opened her first practice in Elkhorn in 1998, then purchased the practice at her current location by Westroads Mall in 2012. The customized treatment at Whitten Dentistry extends all the way to its approach with aesthetics. Karry asked her brother, Thad Hegwood, to join her practice as the in-house ceramist. Working side-by-side, they are able provide a level of care that is both reliable and adaptable. “One of the difficulties dentists can have is communicating with their lab,” Karry explained. With Thad working in-house, he is available to collaborate with Karry on cases, talk directly to the patient, such as helping them choose tooth shade, and make immediate adjustments so patients don’t have to make recurring appointments. Thad and Karry have also developed a solution called My Smile Imagined, which is a way for patients to “test drive” what their veneers or restoration would look like. It allows patients to experience what their smile would look like, feel like, and how it would function following treatment. The process is complimentary and can be used for a single tooth or an entire mouth. The teeth are mechanically retained on original

teeth for up to three days. “The process provides something tangible for patients so they are educated and can make an informed decision before moving forward with treatment,” Thad said. Facial aesthetics are also an important part of Whitten’s practice. In addition to smile design, they offer teeth whitening, Invisalign braces, and Botox and fillers to augment lips, around the mouth, and other areas of the face. Karry teaches facial aesthetics to other dentists and is a clinical professor at Creighton’s School of Dentistry. She said she has a huge passion for using both research and art in what they to do to “create long-term, predictable treatments for patients.” She attends annual post graduate courses at the Kois Center in Seattle to learn best practices in aesthetic, occlusal, and restorative dentistry. Hygiene is another area in which Whitten prides itself. Hygienist Kim Yates has been with many of the patients since 2007, which gives her a deep understanding on a professional and personal level. She said not only can she provide a unique treatment plan for every individual, but the recommendation comes from someone the patient can trust and whom they know has their best interest. She also performs comprehensive screenings at each visit that includes medical history, oral cancer, checking bite, gum disease, and sleep apnea. “It’s all part of the connection between mouth and the rest of the body that researchers have found,” Kim said. Technology also plays an important role in treatment, and Whitten has incorporated digital x-rays and laser gum therapy into its practice. “Patients expect a certain level of technology, and it helps with education,” Kim said. Dentistry is done on such a small scale, so technology enables patients to be part of it. “It makes our job easier as practitioners when we can offer state-ofthe-art care,” Kim added. And that care extends to every member of Whitten’s staff, which includes office manager Mandy Schantz; dental assistant and treatment coordinator Tiffany Brower; and dental assistant Holly Slobotski. The staff, technology, research, education, and in-house specialties all combine to result in quality, customized care that keeps Whitten’s patients healthy.

1. Yes, There is a Gift Tax. The gift tax is paid by the donor—not the recipient—of transferred property. This tax is a part of the U.S. “transfer” tax system, which also includes the estate tax and the generation-skipping transfer tax. 2. The Gift Tax is Tied to the Estate Tax. Thankfully, you do not owe the 40% gift tax until you’ve given away more than $5.45 million of your property—this is the same rate and same exemption amount as the estate tax on transfers of property at death. Each taxable gift you make reduces your remaining gift exemption amount, and it also reduces your remaining estate exemption amount. 3. Some Gifts Are Not Taxable. Certain gifts do not count against your $5.45 million exemption amount. In 2016, you may make gifts totaling up to $14,000 to as many recipients as you desire, and you will not pay a tax on those transfers. You may make gifts to cover the costs of another person’s medical expenses, and as long as you pay the provider directly, any amount may be gifted without paying gift tax. You may also pay an unlimited amount of tuition directly to qualifying educational organizations as a non-taxable gift. The cost of books, supplies, and room and board don’t qualify, but you could use the annual exclusion to cover these costs.

4. Gifts to Spouses and Charities are Deductible. You may gift an unlimited amount to qualified charities and also to your spouse, if your spouse is a U.S. citizen. An offsetting deduction is allowed, which results in no gift tax due for these gifts. Again, these gifts do not count against your $5.45 million exemption amount. 5. You May Need to File a Gift Tax Return. If you give an individual gifts in one year that are valued in excess of $14,000, then you need to file a gift tax return. This is true even if you do not owe gift tax because you haven’t used all of your $5.45 million exemption amount. The due date is April 15th of the year after you make the gift and, although due on the same date as your income tax return, the gift tax return is a separate filing. The choice of lawyer is important and should not be based solely on advertisements.

Paradise originated in Arizona as a bakery and later added its additional menu items. Although Panera now owns the Paradise name, the two Omaha franchises are part of Cutchall Management, which owns local restaurants that includes Jams, Famous Dave’s, and Lo-Lo’s Chicken & Waffles. And while Paradise and Panera share some items such as the Fuji Apple Chicken and Strawberry Poppy seed salads, Paradise has a fully open concept. Not only can customers see their food being freshly made, but it’s usually ready by the time they reach the cashier. Another key factor that makes Paradise different from other similar concepts is the priority that the staff puts on customer service. Director of Operations John Sgourakis said they constantly strive to give the type of customer service that is found in a full service restaurant, including stopping at tables to ask guests about their food. “When you come into Paradise you feel like you’re at home,” he said. “We treat first timers like they’ve been here many times.” Whether you’re a frequent customer or not, everything on the menu is made fresh to order down to the bread used for the sandwiches. Some of its signature items include the Fire Roasted Tomato soup topped with tortilla strips; the Chicken Walnut Salad sandwich and Turkey Cranberry sandwich, both served on Paradise Molasses bread; the Asian Chicken salad; and the Crumbly Blue Cheese salad—a Paradise staple that is ordered more than any of its other

salads. And all vegetables are fresh cut in-house, with nothing pre-bagged. The one thing that Paradise is probably best known for is the free cookie served with every meal. “The bakery does set us apart,” John said. In fact, chances are good that one of the bakers will be scooping cookie dough onto trays as you come through the order line. “There’s a lot to be said for freshness,” he added. “The open concept is also a way for the staff to interact with the guests and help give them a great experience.” Catering is another important part of Paradise, comprising about 15% of its business. Whether for business meetings or bridal showers, any of their items are available for groups. They offer individual boxed lunches, sandwich trays, large soups and salads, as well as assorted bakery goods and cookie trays. Private parties are also welcome in the restaurant, and Paradise offers holiday gift baskets that can be custom made to include any combination of breads, muffins, and cookies, including their bite-size chippers. With both locations part of shopping centers, the convenience and comfort of Paradise make it an ideal place to stop for coffee, lunch, or dinner. But John said having individuals and entire families come back on a regular basis is what means the most to them. “We have a strong following,” he said. “People can get a turkey sandwich anywhere, so we need to set ourselves apart. And when people keep coming back, that’s when we know we’re doing something right.”

Brent and Katie met while both receiving their doctoral degrees in physical therapy at Creighton University. Katie played soccer and basketball in high school and went on to play soccer while an undergrad at CU. After tearing her ACL, she decided to pursue a career in PT. Upon graduating, she and Brent moved to Minnesota where they both practiced in large PT clinics. Neither liked the corporate approach those clinics took, which they said put more emphasis on number of patients seen rather than on the quality of care given to the patients. So in 2006 they decided to move back to Omaha and open their own practice—a risky endeavor but worth it to make a difference in the industry.

Katie said from day one they wanted to offer the same type of care that they would want for their own friends and family. “If my own mom or dad had to go to a health care professional, what would I want for them?” she explained. “We provide a service that we are proud of and that people deserve.” All patients always work with a physical therapist rather than an assistant or a technician. Furthermore, the physical therapists at OPTI use science-based, proven methods rather than trends that come and go within the industry. OUR health making people more tense, which leads to fear of movement and increased pain. “We have created a treatment approach that is gentle and allows patients to actually look forward to their physical therapy appointments,” he said. “We talk about how to interpret discomfort and how to respond properly with movements that allow the nervous system to calm down, resulting in re-gaining mobility in a more comfortable manner. It’s never a forceful approach. We do not push our patients through pain.” The result is that their patients often have fewer sessions, which saves money, and their recoveries are quicker. Geri McKenna has had a frozen shoulder and two knee replacements. She went to another physical therapy clinic for her shoulder and then went to OPTI for her knees. “The other place did not provide any hands on care or oneon-one instruction on how to perform my exercises,” she said. “At OPTI, I had Katie’s full attention the whole time. She didn’t try to push me through any pain, and I got movement back much quicker. I’ve also been able to work through other issues, such as my back, and do it without taking medication.” Katie and Brent have also incorporated the Athletes In Motion (AIM) program into their clinic to allow athletes a safe transition back into sports. “Recovery is just as much mental as it is physical,” Brent said. “By integrating sport-specific skills within the PT protocol, it gives the

athlete the confidence and the ability to play their sport again.” They take patients to their AIM clinic inside of the Omaha Sports Complex and practice soccer, football, or baseball specific skills on the turf surface, or to places such as Common Ground in Elkhorn for court sports such as basketball and volleyball. Former UNL soccer player Mayme Conroy had physical therapy at OPTI after her ACL surgery in high school and was able to continue her soccer career into college and at the semi-professional level despite her injury. The national return to play rate following an ACL reconstruction surgery is 44%, whereas at OPTI it’s 95%. “My recovery was quicker than my teammates who had similar surgeries,” she said. She had such a successful recovery in high school that she drives from Lincoln now to do rehab at OPTI after sustaining a different injury. Katie and Brent and their staff work with people of all ages and try to make their clinic a fun, supportive, and friendly environment. Katie and Brent know there’s a difference between PT clinics, and they want people to choose one not based off proximity to where they live, but based on the best place for their health. “If you are hurt, we can help,” Brent said. “We don’t fix people; we teach people how to help themselves.”
