weeks ago, I knew summer was officially here. One of my boys was sick and wanted a bowl of chicken noodle soup. He didn’t want canned soup, and unfortunately I didn’t have time to make it from scratch. So, I called around to every restaurant in my small community on a mission for soup. “Out of season” was the consensus. We have officially hit summer when soup dries up and grills are fired up! Summer is such a fun time and there are so many things to enjoy in Omaha during this season. We enjoy staying downtown and riding the carriage rides on the waterfront. Outdoor dining and people watching is also very entertaining. Cellar 426, our feature story is just a short drive to Ashland and has scenic views and wines to suit any taste. Owners Richard and Amy Hilske will go out of their way to ensure you have a great experience. New to EDGE is a section specifically for happenings and events in the community. oore’s Hilltop probably isn’t a housing subdivision in Omaha that is familiar. That’s because only one home comprises Moore’s Hilltop as recognized by Douglas County, and it’s owned by Jeff and Diane Moore. When they purchased the full acre lot in 2009, they knew they wanted to keep as many of the existing trees as possible, and that they wanted a mountain, wood craftsman style home. After working with Curt Hofer & Associates, they built their dream home.

Building a home isn’t always a stress free process, but the Moore’s said they had a fantastic experience. Their previous home was only six blocks from the new one, so they walked to the construction site to check on progress daily and kept a photo album of the entire process. They also designed the home to fit within the wooded lot, and temporarily moved a number of trees to Lanoha that were later replanted around their new home. And every single tree survived. The design of the 5,000 sq. ft., four-bedroom ranch was a true collaboration. Some of the home’s features, such as the custom walk-in wine cellar, were specific requests the Moore’s wanted. Others, such as the barrel vaulted ceilings with exposed wood beams were suggestions from the builder. “There are

The hardwood floors on the main level are character grade walnut, there’s crown moulding throughout, plenty of built-in shelves, and energy efficient geothermal heating and air. The chef’s kitchen opens into the great room, and an additional dining room and four seasons room that can double as an office are also on the main floor. The large master bathroom includes an air tub and custom walk-in closet. Cellar 426 offers a variety of wines and one exceptional view

hat happens when a horticulturist and a marketing/ accountant both enjoy wine? They decide to start a vineyard and open a winery, of course. That’s what Richard and Amy Hilske decided to do almost 20 years ago. Today, they operate Cellar 426 in Ashland, where they produce and sell more than a dozen different wines and welcome guests to their newly expanded tasting room that offers a stunning view and relaxing atmosphere not just during the summer but year round.

Once in awhile, right in the
Amy’s love of gardening came from her two grandmothers. She grew up loving plants, earned her Master’s degree in horticulture, and is now the Greenhouse Director at the University of Nebraska—Lincoln. Richard has degrees in both marketing and accounting, but always had an interest in the tourism industry. Together they enjoyed visiting wineries throughout the country. “We thought with both of our backgrounds that it would be fun to start our own winery, so we decided to give it a try,” Richard said. The first hurdle was finding land in the right location. There were only a handful of wineries across the state of Nebraska at the time, and they knew they needed a place close to the interstate and have something about it that would excite people to come back again and again. They found exactly what they wanted in 2005—land in Ashland, located near Mahoney State Park and right between Omaha and Lincoln—that was for sale by a retiring farm couple. In 2006 the Hilske’s planted the first half of their grape vines, and the second half the following year. “It takes three to

five years to develop a crop, so we nurtured them for several years,” Richard said. The first building they constructed on the property was their own home, followed by the winery, which opened in 2012. This year they expanded the winery by adding the Skyline Room, which holds up to 30 people for small parties and event gatherings. Now with about three acres of grapes, Cellar 426 produces more than a dozen red, white, and specialty wines combined. Unlike California, grapes grown in the Midwest are hybrids that can withstand the cold winter temperatures. Many are developed in northern states such as Minnesota and Wisconsin, as well as on the East Coast. Cellar 426 grows varietals such as Frontenac, Marquette, and Brianna, which all do well in Nebraska’s climate. Additionally, Nebraska has a law which states that 75% of wines made in Nebraska must be from a Nebraska vineyard. With the unpredictability that goes along with being in an agricultural industry, flexibility is key. Ideally, Cellar 426 would like to focus on making eight to ten wines per year, but they know they need to bring in whatever grapes are available, which changes due to weather conditions. For example, last fall they were able to bring in La Crescent grapes, so that will eventually become its own wine. “We have a systematic approach and will make a wine according to how it fits into our existing portfolio,” Richard said. “We don’t want two wines that are too similar. We always want to have a variety for guests to choose from.” That variety includes a range of dry, lightly sweet, semisweet, and sweet wines. Even though Midwest wines tend to be sweeter than its West Coast counterparts, the Hilske’s said wine drinkers’ palettes are changing. “People all over the country are enjoying sweeter wines more,” Amy said. “Nebraska wines are very good, and people are more willing to try different kinds.” Many of their wines have won awards, and one of their most popular is their Sangria, available only at the winery. the business, as is their son Erich who often helps during his breaks from college at Iowa State. Even their two-yearold son Evan enjoys greeting guests in the tasting room. Amy’s primary focus is taking care of the grapes while Richard makes the wine. He also designs all the labels, and together they come up with the names of the wines, such as “Rocky’s Red” named after their beloved Black Lab. This year, Cellar 426 will produce about 16,000 bottles of wine, of which 95% will be sold at the winery, and the rest sold at a few grocery stores in Omaha, Lincoln, and throughout the state. With good wine and accompanying food such as cheese, fruit, and charcuterie trays for purchase, guests can relax either in the grand lodge style tasting room, or on the covered deck with a stunning view of the vineyard, tree-lined countryside, and Lincoln sky-
line. During the summer months, there is also live music every Saturday night. Amy also offers crafting classes, such as wine glass painting and cork projects, and they offer a wine dinner pairing occasionally as well. “A lot of people just want to get away from their normal routine and come out here to enjoy the scenery, nature, and peacefulness while also enjoying the wine and some food,” Amy said. No matter what reason you have to visit Cellar 426, Richard and Amy want you to have a wonderful experience. “We have great wine, but what makes us really different is our location—the beautiful winery and the way it’s blended with the great view,” she added. “We’re about bringing you into our family. We love meeting people, sharing our passion for wine, and helping others find a passion for it too.”

Everyone tells you becoming a parent is life-changing. There are many new experiences that you’ll encounter, and, of course, there are a lot of new responsibilities. The weight of these responsibilities can be heavy, and when it comes to decisions for your child within your estate plan, thinking about the issues may be overwhelming. While planning for the future seems daunting, you need to make sure you’ve thought through the implications, made proper decisions, and worked with your advisory team to document everything properly. One of the main decisions to make is who you will name as your child’s legal guardians if you and your spouse pass away. There are a lot of issues to consider. Can they take on this responsibility until your child reaches adulthood? Do they share your views on education, religion, rules, discipline, and health care? Where do they live? Will your child need to change schools? How will they facilitate visits with noncustodial family members for birthdays, holidays, and other occasions? You also need to name a conservator to manage your child’s property. If you establish a trust, you will name a trustee to handle the financial matters. Naming someone other than the guardians for this role is usually a good idea, because you split up the workload and also because people have different strengths. You must also decide how and when your child should receive their inheritance. Many parents decide to hold their child’s inheritance in trust until the child reaches a financially mature age, with distributions in the meantime for the child’s support. If your child has special needs, you should consider holding their inheritance in a special needs trust for their lifetime to address state aid qualification considerations.
With the arrival of siblings for your first child, you need to evaluate whether the provisions in your estate plan should be updated. Are the guardians you originally named wellsuited to care for multiple children? Along with determining who will serve these important roles, you should evaluate your overall financial picture when you become a parent, with special attention to life insurance needs and college planning, and how these changes impact your retirement planning. Updating your estate plan when you have a child likely gets placed on the bottom of a very long to-do list. However, my clients often tell me that once they’ve signed their estate plan, they feel a great weight lifted from their shoulders.

A quick Internet search may provide helpful safety tips for first-time travelers, business travelers or college students, but none of them address allencompassing travel alertness. Before joining 88 Tactical as a Risk Management Consultant and Senior Instructor, I was in the U.S. Army Special Operations. After retiring from the Army, I spent several years in corporate America, managing security and risk management programs. There are many aspects of personal safety to keep in mind while traveling, but here are some simple tips: Do a little research: Research the location and check out chat sites. You can find cool places to visit, fun activities, good restaurants, and even places to avoid. Be mindful when out and about: Put your mobile device away and enjoy the sights, and watch for people who are watching you. Let people know where you are going, and keep in mind: G.O.T.W.A.: o G – Where you are going o O – Others who are going with you or people you meet (posting selfies is a great way to keep an electronic diary) o T – The time you expect to be back home, or back to the dorm, hotel, etc., or when people can find you on social media channels o W – What others can do if they haven’t heard from you in, say, 48 hours (your travel plans
will dictate contact times with loved ones and friends) o A – Actions you need to take if something happens. For example, a lost passport, your phone and computer are missing, you need new medication, your wallet is missing with all your credit cards and money Back-up all your electronic data: Constantly scan for viruses, and be mindful that free WiFi is a haven for hackers. If you or your loved ones are planning a trip, consider attending 88 Tactical’s new Travel Safety workshop. It’s a specialty program geared toward vacationers, students, and those traveling for business. The Travel Safety workshops focus on topics and situations that any student in the U.S. or abroad, or any business or leisure traveler needs to be aware of. 88 Tactical’s Travel Safety training teaches people to recognize threats early and to be prepared for the unexpected, which includes understanding how the dynamics of culture might impact your exposure to risk. Looking through leather-bound ledger books that date back to the 1860s, you’ll see hand-written records of hardware purchases from famous locals such as Augustus Kountze, founder of Kountze Memorial Lutheran Church in downtown Omaha, which was near the original Johnson Hardware store. Brad said for the last five years bronze and satin nickel finishes on hardware have been popular, but now more contemporary styles such as polished nickels and chromes are showing up in products. And just when you thought brass was out, satin brass finishes are in. “A few years ago, rustic finishes were popular, then it went to rustic modern,” Brad said. “And cabinet hardware has become larger and pulls have become longer. Now you can pick a cabinet knob or pull that comes in numerous sizes to fit in multiple areas of a home.” But it’s not just selection that sets Johnson Hardware apart. hen Noreen and Jeff Thelen decided they wanted to open a restaurant in Omaha, they didn’t know exactly what type they wanted, except that it be a neighborhood eatery with good, reasonably priced food. The Thelen’s hired Grant Lundin, a consultant with a long history in the restaurant industry, and together they developed the concept for a casual, Italian bistro where friends and family could meet. And last December, Lombardo’s Bistro and Bar opened its doors.

Creating a menu was one of Grant’s first tasks. He researched various options, and after putting together an initial menu, he and Chef Brian Howard fine-tuned it. “We know we wanted to have the classic Italian dishes, but wanted to do them with an American flare,” Brian said. The result is nuances of traditional Italian combined with a modern American bistro style that includes items such as lasagna and spaghetti and meatballs, but also filet and plenty of seafood options. “We’re more than just Italian, which is why we put ‘bistro’ in the name,” Grant added. The interior of the restaurant also has more of a bistro rather than Italian diner feel. Acquiring a space that had previously been a restaurant was a plus, but they needed to still create the warm, comfortable atmosphere they wanted. “We wanted to be in line with upscale, casual dining and have an enjoyable, comfortable place, but we don’t play Frank Sinatra,” Grant said. “Although Italian food is the pull, we incorporate craft cocktails, such as Jeff’s Bloody Mary, which is his own recipe.” To perfect the robust menu, Grant and Brian spent countless hours in the kitchen trying, and perfecting, recipes, often inviting the Thelen’s and their friends in to test the results and offer suggestions. The Sugo sauce used in the Bolognese is Noreen’s family recipe, which Brian and Grant tweaked until everyone felt it was just right. They also came up with a recipe for Caesar wings—char buffed wings with a homemade sauce.

“We’ve taken risks with our food that have paid off,” Brian said. “Lots of places do wings well, so I was skeptical at first. But it’s a favorite on the menu.” Other popular items include the Pecan Crusted Red Snapper, the Filet Al Gorgonzola, and the Tuscan Salmon, which is grilled and served with a pesto risotto and asparagus in lemon caper butter sauce. “We use simple ingredients and do simple dishes that don’t try to be too fancy or go over the top,” Brian said. “Our house sauce has only five ingredients, all herbs are fresh, not dried, and we use the best quality so that there’s a 56 |

freshness about everything that is simple, yet delicious.” Another unique concept that Lombardo’s offers is the three tier wine list. All bottles of wine are either $24, $45, or $65, and includes a variety of both whites and reds at each level. “People who love to drink wine should be able to drink good wine at an affordable price,” Grant said. The concept has gone over so well, they have added a fourth tier for even higher end wines. The bartenders also create new craft cocktails on a regular basis, with a house made margarita mix that has become a favorite. And
drinks can be enjoyed on the outdoor patio, which includes live music every Tuesday night, weather permitting. With good, reliable food and a comfortable, friendly atmosphere, Lombardo’s wants to be the restaurant that families frequent multiple times a month. “We’re fortunate to have a great location and a great staff that includes Managers Wynn Weber and Alex Seliak who oversee everything,” Grant said. “We want to wow you with experience, quality of food, and value, so everything about Lombardo’s is approachable and memorable.”

In fact, her mother was a life-long role model in compassion. While Jill and her husband Randy lived in Arlington, NE, they both worked full time and also earned their college degrees. Jill’s mother was the one who often helped out with Jill’s two children, Katy and Nicholas, when there was a day off from school or they both had other commitments. Then as her children entered high school and her mother grew older and needed help herself, Jill and Randy didn’t hesitate to be there. “We’d mow her yard, help with things around the house, or take her to the doctor,” Jill said. If they got a call from her in the middle of the night, Jill would rush over to her mom’s home in Fremont. “I was too young to help out on the farm very much growing up, so this was my way of being able to help,” she added. After Jill’s mom passed away, she missed the close conversation and companionship that accompanied helping her. With her own children grown and her and her husband having moved to 60 |

Omaha, Jill knew she wanted to continue helping people and felt people would want to have the conveniences she could offer. “If I hadn’t had the help and support of my husband, my mom and other family and friends, I would have had to quit my job years ago,” Jill said. “So I want to be that for people who don’t have a lot of support available to them, or who have some but need a break every now and then.” The range of services Jill offers through Hometown Help includes caring for your home and taking care of pets, transporting family members, including children, to and from appointments or school, helping with day of wedding duties, short term needs such
as if you’re sick or injured, helping coordinate moves—anything that involves some extra help. Jill is also CPR and AED certified, and volunteers for Heartland Equine Theraputic Riding Academy (HETRA’s) wounded warrior veteran program, the Alzheimer’s Association, and is a mentor with Girls Inc. But what she offers is much more than just transportation. If she takes someone to a doctor’s appointment, for example, she goes with them into the office and waits, and when she takes them home she makes sure they’re resettled and relaxed. “I love talking to people and hearing their stories,” Jill said. “I miss that in my own life and want to do that for others. What I do is so personal for me and very rewarding.” Trust is the most important element in what she does, and Jill takes that trust very seriously and values it. “Jill is so reliable and trustworthy, but most of all she is responsible and careful with our dogs,” said Jill Sideris. “I’m so

thankful to have found her. My husband and I can truly relax, knowing that Jill understands their individual needs, and they truly adore her.” Ann Crouse originally called Jill to help during her parent’s move and since then has had her take care of her dog, Bella, help prep for a party, and pick up her 13-year-old son, Kade, from school when she’s unable to. “Jill is so accommodating and reliable,” Ann said. “And Kade really likes talking to her.” Establishing relationships with people is what Jill enjoys the most, and said she truly treats every person and pet like a family member. “I feel this is my calling and am grateful to make a difference in people’s lives. Helping people brings up good memories for me.” And once you’ve experienced that personal, caring, trustworthy help, it will create your own good memories.

Confidence comes in many forms. For sixteen-year-old Shelby Adams, her confidence comes from her willingness to try new things. Those have included art lessons at age 6, Tae Kwan Do lessons at age 11, and home schooling at age 13. Since then she has become an award-winning artist, a 2nd degree, level 4 black belt, and takes courses at Metropolitan Community College. For a soft-spoken teen, she has a drive and passion to help others that speaks volumes.
Edge: How did you become interested in Tae Kwan Do? Shelby: I tried gymnastics, soccer, and tennis, but none of them kept my interest. My mom suggested Tae Kwan Do, and I loved it from the very first class. I go to Tiger Rock Academy, and I joined a leadership program there when I was 13. I was able to help teach classes, and when I turned 16 I was able to test to become a certified instructor. I passed it, and I love teaching the younger students. The kids are great, and it’s cool to watch them grow and mature. Edge: How has Tae Kwan Do helped you personally? Shelby: I was pretty shy when I started, and it’s given me the confidence and assertiveness to stand up for myself. Physically, it’s made me a lot stronger
too. Plus it’s a great way to just wind down. If I’ve had a rough day, I can work it out physically. Edge: What made you decide to try home schooling? Shelby: A few of my friends were home schooled, and I thought it’d be fun to try it. My parents looked into it, and we decided to try it for one semester and see how it went. Amy Adams: My husband, Roy, and I place a high value on learning and researched home schooling as an option. There are different curriculums you can choose from, and it doesn’t have to be one certain way. Once you know how to learn, you can learn anything you want to. Kids have different learning styles. Some kids fit really well into a traditional school system, and others don’t. There are lots of
opportunities to do things to meet your child’s interests. She had been exposed to other kids who were home schooled, and the myth that you don’t get socialization is outdated. Edge: Home schooling has obviously worked well for both of you. Amy: One of my biggest concerns was the parent/teacher relationship. I thought it would create more conflict between us, but I was surprised how much it balanced itself out. Shelby: It just works for us. It was a little stressful at first, but once we got into the swing of it, we just naturally switched back and forth. And taking classes outside of home helps too. My mom teaches me most of it, but I take math online and science classes off site. And I really like my classmates at Metro. Amy: I don’t think we could be in the house together all day every day! (She laughs). But it’s been really nice. There’s so much flexibility in it. Shelby: And I don’t have to get up super early in the mornings! Edge: And you’re an artist too. Shelby: I first started drawing at age 6. My older cousin drew and I wanted to be like her. Whenever I have free time I draw, or when I’m taking an art class. I like all mediums, but my favorites are pencil and ink. I’d like to have a career that’s somehow related to art. I’ve thought it’d be cool to open an affordable place for kids to take art classes. There are so many really talented kids who can’t afford lessons. Edge: It sounds like you enjoy working with kids in a number of ways. Shelby: I do. This summer I’m going to Costa Rica for the fourth time. We serve at a children’s home for at risk kids. I love going there, and always miss it. The kids get into your heart and stay there. Amy: That’s one of the things I’m most proud of about Shelby. She has a heart for other people, especially the downtrodden. She has a righteous anger, and I’m glad she does. It’s what drives her to doing things like going to Costa Rica. She has always reached out to others and makes the effort to get to know people. She recognizes that valuing people is the most important thing in life.
