is an exciting month for Edge Publishing. It marks the 8th anniversary for Edge Magazine and the 2nd anniversary for its sister publication, Dine Magazine. When I saw my first issue of Edge, I knew I wanted to be part of it. It’s been an honor to help shape and grow the publication over the past seven years, and it’s incredibly rewarding to be an integral part of the West Omaha community. Sharing stories is my favorite part of what we do, and this issue is full of unique stories about businesses both seasoned and new as well as inspiring individuals—especially our youth and varsity corner features. The cover story about Big Cedar Lodge will put you in the mood to kick off the holiday season whether for a weekend getaway or a longer stay. I had the honor of meeting Jan and Tim Vala when we shared their story in October 2015, and on behalf of the entire Edge staff, we’d like to extend our condolences to the Vala family on Jan’s recent passing. We’d like to note that donations in Jan’s memory can be made to the Gretna Library Foundation to honor her love

s two of the most proud proponents of chiropractic care, Nebraska native Dustin Sparks and his wife Angela have spent the last 10 years helping make chiropractic care a convenient and affordable lifestyle routine. After moving to Texas in the late ‘90s, the Sparks opened a chiropractic clinic in Austin. Within three years they were part of a group that opened 12 clinics and decided to bring their success back to Nebraska. This time they were recruited by a Nebraska-based company, NuSpine Chiropractic, and in April 2021 they opened the first Omaha franchise, marking the city’s first walk-in chiropractic clinic that’s open seven days a week.

OUR health Not only is an appointment-free clinic rare in the local chiropractic community, but so is offering a free hydrotherapy massage with each session. Each of NuSpine’s four hydrotables features a different temperature between warm and cool depending on the benefit needed for each patient. Another differentiator for NuSpine is that nobody pays more than $39 per visit. Instead of insurance, patients can choose the plan that fits their needs, and can use either HSA or FSA dollars. There are additional pricing benefits for veterans and teachers as well. “You can be treated once a week for the same price as going out to lunch,” Dustin said. “We can treat an entire family of four people for the same cost (or less) as an individual at other chiropractic clinics.” NuSpine has 10 years of data that shows student athletes who received adjustments before and during the sports season saw plummeting injuries year over year, and individual athletes all reported increased performance and recovery. “With that kind of result, why not share it with the whole family at a price you won’t find anywhere else?” Dustin added. Chiropractic has long been known to treat more than just back pain. Angela personally uses it once a week for her own wellness as a way to keep her entire immune system healthy. She also shared how it can address common issues seen in children, such as bed wetting, fevers, and chronic ear infections. “I’m a huge proponent of holistic health and caring for your body without medication or surgery,” she said. “There is always a place for medication and surgery, but letting your body do what it knows how to do should always be considered first. They also knew they wanted a female chiropractor on staff because certain patients, such as an expectant mother, sometimes prefer it. he food offerings at 88 Tactical have come a long way since the day it opened for business—according to Executive Chef Matt Davenport, “There were days we had zero customers and not a penny in the till.” Quite a contrast to today, where eastward expansion is coming very soon in Omaha for a 400-seat Founders Club, including an expansive patio and play areas.

OUR food Fondly referred to as the “Guntry Club”, Davenport’s team serves over 5,000 members and their guests in the Founders Club space on the second level of the facility. At its inception, the eatery was more of a lounging space but now boasts several tall, striking wood communal tables that seem to be perpetually full of content diners. Members aren’t just there for the firearms, either. The club offers family activities and educational offerings such as anti-bullying and anti-abduction courses, female empowerment, and a full gym. And some folks come in just to dine, whether on date night, with the family, or entertaining clients. Davenport has been in the business for over 20 years, working his way up through restaurants, focusing on improving his skills and work ethic by tackling incredible opportunities in Yellowstone and Denali National Parks, and perhaps the most fulfilling—a stint cooking for United States wildland firefighters. Davenport described the experience as “legendary”, cooking upwards of 1200 meals thrice daily. “That time taught me to work for a greater good— someone had to be there to nourish those out busting their tails and risking their lives.” Well-travelled, Davenport has been to 46 of 50 states and spent several months backpacking across Asia. These varied and magical experiences taught the accomplished manager and cook the importance of ensuring his food was beautiful, bountiful, colorful, and flavorful. Through these experiences he began to understand that we eat with our eyes first, regardless of environment or context, so plating and cooking principles always consider time and place. “I have a soft spot for real Italian charcuterie, a good green or red curry, in Thailand, or a warm bowl of cao lâu (Vietnamese noodle dish),” he shared. The menu changes quarterly to keep things fresh, with the team replacing seven existing items with new, seasonal offerings. A big proponent of community, the establishment supports local businesses such as Rotella’s Bakery, which provides bread products, Council Bluffsbased Larson Supply for disposables, and Nebraska Star Beef from Holdrege, Nebraska. US Foods has also been a key partner. “US Foods saw potential in us when every other vendor said we were 48 |

too small,” Davenport said. One of the most popular sandwiches served at the Founders Club is the Caribbean Pork Triple Threat, a visually impressive dish that begins with a base of Jamaican Jerked country ribs topped with achiote pork, two slices of thick bacon, and finally garnished with fresh mango salsa, jalapeño, and cilantro. Davenport’s favorite, though, is his signature item, the Slawco Taco. To bring this dish to life he melded the flavors of Southern California with Nebraska, giving the traditional fish taco a Midwestern twist. “I love them to death, could seriously eat one a day, and guests often tell me the same,” he said. The cocktail program is ever evolving, striving to delight members and their guests. According to Davenport, the Bloody Mary is the best he’s tasted. He further explained, “The vodka is infused 50 |

with no fewer than 13 ingredients, and the mix contains at least that many.” The new Founders Club expansion will see additional craft beer options as well as new Scotch and American whiskies. Though the menu is full of flavorful meat-based dishes, Davenport is a self-professed salad aficionado. “I take great pride in my salads and have been building them since I was a kid.” Inspired by the creations at local favorite Jams, his kitchen creates healthy and filling salads with unique flavors and textures. The Cajun Wedge salad, a creative and well-balanced twist on the classic, is spiced with Everything Bagel Seasoning, topped with a house-made applewood-smoked bleu cheese dressing, bacon, blackened shrimp, and crunchy sunflower seeds. With expansion comes new opportunities, so it is no surprise that further changes are afoot at the Founders Club.
Chef Bobby Mekiney, formerly of M’s Pub, is joining the staff as the new Executive Chef, and Michael McDonald, hailing from Panera Bread, is taking over as Food and Beverage Manager at the Omaha location. As the venture moves into new markets such as Texas, Arizona, and Tennessee, delivering a consistent dining experience to members is critical, and Davenport is eager to take on that challenge as Director of Food and Beverage, overseeing startups and expansions. In addition to its welcoming culture, Davenport describes the founders of 88 Tactical as “real life superheroes”. An essential component of this is food, which brings people together in myriad ways. “Steering this ship has been a humbling experience, but I will continue bringing my best shot daily for both my staff and customers.”

In recognition, I hope you take this opportunity to bring some basic estate planning topics to your dinner table for discussion. By talking about these important topics with your family and close friends, it makes the realities of estate planning bearable and your wishes more likely to be effectuated. To help in your conversation, consider these top three topics to break the ice and put a plan together for you and your family. 1. Who will make decisions for you when you can’t make them for yourself? Typically, these questions center around health and financial decision making for someone who has been deemed incompetent. The most efficient way to appoint a decision maker is to sign a Power of Attorney for Healthcare and Power of Attorney for Finances. By signing a Power of Attorney, you can appoint an agent to handle day-to-day and more significant decisions. For example, determining where you should live if you need long-term care and are not competent to make that decision for yourself. 2. Who gets your stuff? I think people would be surprised to learn that, oftentimes, it is the sentimental items which garner the most strife among family members. By deciding in advance who gets father’s wedding ring or mother’s prized dish set, it can help sort through the personal property left behind after someone passes away. I recommend taking pictures of those assets you want to be certain are given to a specific person. That way, there is no question as to your wishes. It is important to talk about big items, too, such as bank and retirement accounts, the family home, and life insurance, to name a few. By making sure your family has general information about what you have and who to contact, it makes it easier to access the information when you are no longer around to ask. 3. Who gets your children? If you have minor children, it is important to talk about who would care for them in the event of your early passing. By naming a guardian in your Last Will and Testament, you afford that person priority of appointment by a court if a guardianship for your minor child needs to be established. Are you a single parent? Understanding the rights of your estranged co-parent can also be helpful in developing a plan in the event of tragedy. Plans for a guardian can also work hand-in-hand with discussion regarding what assets will be available to care for your children and how they will be managed and distributed. When Elkhorn Computer Service first started, the family-owned business came in with a plan to help its community spend time on what matters. In 2004, the struggle to find work led Founder Bryan Thompson to start Elkhorn Computer Service. As a small, residential computer repair company, the business was built on referrals and a passion to provide the best experience possible for its clients. Fast forward to 2021, the humble business continued to slowly grow over time. With a desire to be more than just 54 |

Elkhorn Computer Service, the team decided to rebrand into a company that encompasses everything it has to offer: ECS Technology Solutions. The decision to expand the former business name was made to show company growth and highlight the team’s capabilities beyond computer services. James Thompson, Bryan’s son and President of ECS Technology Solutions, stated the rebrand “opened the doors to bigger opportunities.” Aside from a name change, ECS Technology Solutions wanted to emphasize the importance of its core values. Many businesses are built on similar fundamental beliefs, as these guiding principles help companies work toward a common goal. Thompson and his team, however, wanted to take a different approach. ECS Technology Solutions has three ideologies its people believe in: inno-
vation, integrity, and family. Thompson said his employees decided to list “family” last because family is what supports everything else. Although some people may have a different family dynamic than others, Thompson said for him, his family is ECS. “The way we do business and treat each other is its own thing,” he said. “We know what it [family] means for us. It’s important, and it’s special.” Creating a work environment that is both opportunistic and growth-centered is key to Thompson. The ECS Technology Solutions team strives to make sure all employees will be successful, even if IT has a high turnover rate. “I want to rewrite that script and show people that you can create a business that doesn’t have to have a high turnover rate,” Thompson said. “Employees have opportunities, and everyone here is excited about having the opportunity to go as far into IT as they possibly can.”
The ECS Technology Solutions family takes pride in wanting to watch each other grow. This is why the team emphasizes the importance of both client and employee happiness, resulting in a great experience for everyone. Performing on stage isn’t something that comes naturally for most 15-year-olds. But Gretna High School sophomore Nivi Varanasi is a triple threat with a talent for dancing, singing, and acting. With five performances on her resume and an upcoming role in Corduroy at The Rose Theater in November, Varanasi has set her sights on a career in theater and eventually film. Edge: When did you start performing? Varanasi: I started dancing when I was seven years old. I do Bharatanatyam, which is Indian classical dance that has to do with acting and sharing folk tales. I did my first acting performance in 8th grade. Edge: Why did you decide to try acting?
Varanasi: In middle school we did the musical Frozen. I never thought I could sing well, but my sister pushed me a little, and I felt like I should try auditioning for the lead roles. So I practiced—a lot— before and after the audition. I ended up getting the part of Anna and loved it. Then when Covid happened, I was home doing remote learning and focused on searching for opportunities to audition. I was able to get the part of Vita in How to Build an Ark at The Rose last February.

Edge: What did you like best about playing that role? Varanasi: I like that I was able to have many performances—about 12—and perform it over and over again. This gave me a chance to become more of a ‘professional’ actor as I understood you have to bring your VERY BEST to every performance. It also helped me cherish the experience longer! I was also challenged with building the character. Should I make her shy? Outgoing? I had her be the lone kid at school and then she becomes freer and more playful. It was a fun challenge. Edge: Describe a typical audition. Varanasi: A typical audition for me has usually been sending in self tapes. This is when you film yourself either doing a monologue, or you read a script with an off-camera partner—I drag my sister into this, and she’s super helpful. For The Rose, the first step has been reading monologues. Then, as for any audition, you might get a callback. Usually, this means the directors are looking at you for the role, but not always! Finally, the results come in. 58 |

enjoy? Edge: Are any of your family members actors? Varanasi: No, but my dad gives a lot of speeches, so I think I learned from him. He’s a very animated guy! This year I won 1st place in the Nebraska State Optimist Oratorical contest. Bharatanatyam also helps me improve my facial expressions and hand gestures to be able to tell a story. Edge: What is your next step with acting? Varanasi: I really want to find an agent. I search online for roles, but it takes a lot of time and money to do it that way. I’m not sure how to go about finding an agent, but it’s my main focus right now. Edge: Do you want to have a full-time acting career as an adult? Varanasi: I really hope so. I also have interests in being a reporter, a psychologist/ therapist, a teacher, or maybe a bureaucrat. Edge: What other activities do you
Varanasi: I’m in show choir, on the speech team, and a class officer. I spend time recording my submissions for auditions and hope to be in the drama club musical and one act this year. Edge: What advice do you have for other aspiring actors? Varanasi: I never thought I’d be acting, but sometimes you have a random moment in your life and it becomes something you want to keep doing and experience that accomplishment. It’s a challenge to get roles, and rejection is hard, but you keep working. I’m always open when people point out my mistakes so I can make them better. I want to be given the chance to show what I’m capable of. However, if you are in this field for the fame, trust me, there are better ways to get there such as through social media. Acting is really fun when you get to, but the process of becoming a good actor and getting bigger projects, is a grueling one full of nos. It’s a path that tests if you’re truly passionate about the art. But if you really want something, go for it!

WINNING CULTURE Ensley Frame | Senior | Gretna High School
As a child, Ensley Frame never dreamed that someday she would be committed to playing softball for Creighton University. In fact, she had no interest in softball until her family encouraged her at 10 years old. “My mom and grandpa convinced me to give it a try. From then on softball became my favorite sport.” That was smart advice. Ensley has been a four-year starter on the Gretna High School softball team and last year made the All-Nebraska team. First and foremost, Frame is a team player. “Being a part of Gretna softball has honestly been one of the biggest blessings in my life,” she said “The culture that the coaches, players, and players before me have created is unreal. It is like a family. The focus is about way more than softball. We have two rules: being a good teammate and competing like crazy.” Gretna Varsity head softball coach Bill Heard considers Frame to be a role model. “With all of her accomplishments, both softball and academics, it can be easy to overlook the character and
leadership Ensley models for our younger kids,” he said. “We are fortunate to have had her for four outstanding years.” Outside of softball, Frame belongs to the Fellowship of Christian Athletes (FCA) and loves spending time with family and friends. Ever the perfectionist, Frame doesn’t do anything halfway. During her softball career, she’s had to deal with a broken back and a torn labrum, which made sitting on the sidelines difficult. “Injuries are the worst, but sitting out makes you realize how much you actually love the sport. When you get back to playing, you don’t take a single second for granted.” Working through those injuries helped Frame mature into the player she is today. “I think I am most proud of the character that I have built throughout my softball career. I overcame a lot of injuries and rough patches, and it has taught me to never give up, how to deal with failure and how to work hard.” Those traits will serve her well as she pursues a career as a physician assistant at Creighton.

SUCCESS Colby Erdkamp | Senior | Gretna High School
Gretna High School senior Colby Erdkamp loves to run—probably more than most young men his age. He grew up playing basketball, baseball, and football, but his freshman year he decided to give cross country a shot. “In my first cross-country race, I ended up winning at the Class of the Metro meet. It was a big surprise because I had no idea where my racing abilities were prior to the race. I have always liked to run and liked to run fast. When I realized I could be good, I really started to love cross country and track.” Gretna Cross Country and Track coach Bryce Brunswig believes it’s Erdkamp’s attitude that makes all the difference. “Colby is willing to do the extra work that it takes to go from good to great. He embraces and enjoys challenges and competitions and views them as a way to get better. His calm, get-the-job-done demeanor rubs off on his teammates and helps to keep everyone focused during workouts and before races.” Despite having to quarantine due to COVID three separate times during last
year’s cross-country season, Erdkamp remained calm. “It was really hard to stay motivated to keep pushing forward when I was missing meets.” He was unable to participate at districts because of a quarantine, but the team qualified for state and fortunately, he was able to compete. In the future, Erdkamp plans to compete at a Division I school. “I want to see how far I can possibly go as a runner.” Erdkamp is proud of how far he’s come since that first race his freshman year. “My motivation and confidence have gotten much higher over the last three years of track and cross country. The main thing that motivates me is that I always want to beat myself. I push every day so that I can succeed and beat my old personal bests.” He credits his growth as an athlete and a person to his experience with running for Gretna. “Running has encouraged me to grow more than all of the other sports that I have competed in simply because it is all me and how much I want to push myself to get to my full potential.”
