1. Place a skewer through the tail portion of the shrimp. 2. Place a slice of andouille through the skewer. 3. Curl and spear the top part of the shrimp over the andouille slice so the shrimp is wrapped around half the slice of sausage. 4. Preheat grill or a grill pan. 5. Toss shrimp skewers with oil until lightly coated. 6. Place the skewers on grill for 1 minute on each side to slightly char the sausage and add some grill marks. (Both the shrimp and sausage are already fully cooked.) 7. Chill skewers. 8. Toss with lemon juice, then sprinkle with Cajun seasoning and minced parsley. 9. Serve with a side of guacamole or your favorite sauce.
