RECIPE!

Snap Peas with Bacon Photos by Viktor Budnik

What you need: 3 cups snap peas 2 strips bacon 1 tablespoon olive oil ½ teaspoon sea salt Black pepper to taste ½ cup ricotta salata cheese 1 teaspoon fresh mint ½ lemon

Snap peas get their name from the snappy crunch they make when you break them or chew them.

The entire pea is edible! That means you can eat the pods, the peas inside and the plant itself!

What to do:

Chef Josh Kellum spends a lot of time in the kitchen with his daughter. This recipe is kidapproved and can be made with just a little parental help!

1. Clean peas, then blanch them: Put peas into a pot of boiling water for about 1-2 minutes. Quickly remove from heat and put immediately into a bowl of ice water to “shock” the peas. This stops the cooking and keeps them bright and crisp.

2. Cook bacon in the oven in a pan with edges at 350°F until crispy (10 12 minutes). Let cool, then crumble.

3. Heat oil in a medium-sized sauté pan. Once hot, add snap peas and season with salt. Cook for one minute. Right before taking them out of the pan, squeeze the lemon over the top. Place snap peas in a bowl. Add bacon crumbles, torn mint and finely grated ricotta salata cheese. Top with black pepper.

Peas grow on a vine that can grow more than 6 feet tall!

In most places, peas grow best in late spring.

Because of our mild climate, we can grow them here in fall and spring!

Lo que necesita: 3 tazas de chícharos 2 tiras de tocino 1 cucharada de aceite de oliva ½ cucharadita de sal marina Pimienta negra al gusto ½ taza de queso ricotta salata 1 cucharadita de menta fresca ½ limón

Los chícharos reciben su nombre por el rápido crujido que hacen cuando los rompes o los masticas.

Todo el guisante se puede comer. ¡Eso significa que puedes comer la vaina, los guisantes del interior y la planta misma!

Qué hacer:

El chef Josh Kellum pasa mucho tiempo en la cocina con su hija. ¡Esta receta está aprobada por niños y se puede preparar con solo un poco de ayuda de los padres!

1. Limpiar los guisantes (chícharos), luego blanquearlos: Pon los guisantes (chícharos) en una olla de agua hirviendolos aproximadamente 1-2 minutos. Retira rápidamente del fuego y pon inmediatamente en un recipiente con agua helada para "sacudir" los guisantes(chícharos) . Esto los mantiene brillantes y crujientes.

2. Cocine el tocino en el horno en una sartén con bordes a 350°F hasta que esté crujiente (10 -12 minutos). Deje enfriar, luego rompelo en pedacitos pequeños.

3. Caliente el aceite en una sartén mediana. Una vez que esté caliente, agregue los chícharos y sazone con sal. Cocine por un minuto. Antes de sacarlos de la sartén, exprime el limón por encima. Coloque los guisantes(chícharos) en un tazón.

Agregue los pedacitos del tocino, la menta cortada y el queso ricotta salteado y rallado. Cubra con pimienta negra.

¡Los guisantes crecen en una enredadera que puede crecer más de 6 pies de altura!

En la mayoría de los lugares, los guisantes crecen mejor al fin de la primavera. ¡Debido a nuestro clima templado, podemos cultivarlos aquí en otoño y primavera!

El Distrito Escolar de Ocean View sirve alimentos frescos de origen local a los estudiantes todos los miércoles. Asegúrese de verlo en la cafetería de su escuela para probarlo.

Aqui en El Distrito Escolar de Ocean View, somos autónomos, lo que significa que dirigimos todo el programa y no dependemos de proveedores de comidas para alimentar a nuestros hijos.

Somos parte del programa Get School Cooking (GSC) de la Fundación de Chef Ann y nos tomamos en serio la transición del calor y el servicio a la cocción simple.

Nos preocupamos mucho por los niños.

Sabemos el nombre de todos los estudiantes del campus.

Muchos tienemos hijos (y nietos) que asisten o aún asisten a nuestro distrito.
