This autumn also brings with it renewed hope that better and brighter times are ahead for the hospitality industry with the much welcomed and long-awaited recent removal of COVID density limits at hospitality venues. We hope that many of you can venture out and support some of the fabulous restaurants, cafés, and wineries within this issue along with some of the other wonderful businesses featured. One of the highlights of the season is Easter, when many of us indulge in all thing’s seafood and chocolate from Friday 15 April. This is closely followed by Mother’s Day, Sunday 8 May, when we find ourselves honouring or remembering a special lady in our lives. Then, for the wine lovers, the much longed-for Toast to the Coast will proceed on Sunday 15 May followed closely by Pinot Affair on Saturday 21 and Sunday 22 May. Looking a little further forward, the exciting return of the National Celtic Folk Festival will take place Friday 10 to Monday 13 June, the Queen’s Birthday long weekend. Lovers of culturally rich music, dance and arts rejoice. A broad bevy of talent is heading to Portarlington on Victoria’s beautiful Bellarine Peninsula for the National Celtic Folk Festival 2022, June long weekend (10-13). The festival gives a huge warm welcome to high-energy roots music duo Hat Fitz and Cara, Scottish rockers Rich Davies and the Low Road, along with a host of returning festival favourites including Trouble in the Kitchen, The Tim Scanlan Trio and The Maggie Carty Band. Folk acts also appearing this year include the best in the scene: Music Victoria folk artists of the year Fiona Ross and Shane O’Mara; the country’s best bluegrass and old-time musicians, Kimberley Wheelers Roadside Holiday; along with awarding winning Pete Denahy. What a line-up of live music! Finally, one of Australia’s most influential and iconic bands, The Bushwackers, celebrating 50 years at this year’s festival in a big way! A full program for the young ones includes the Celtic Trail of Tales; a journey of discovery among the hills and hummocks of the Portarlington Celtic Festival Fairyland. As we warm up for June the festival will co-present two unique events: Un-Settled

Friday 22nd April & Saturday 23rd April at The Portarlington Mill from 6-8pm. Un-Settled; today, tomorrow, un-settled; before and many years before, un-settled; maybe always Un-Settled. Un-Settled is on the land of the Wadawurrung people, that has also come to be called the Bellarine Peninsula. The project explores the stories of the land and people of the land, referencing stories and practices of first nations people, agriculture, and changes occurring with the advance of suburbia. Un-Settled brings together elders, researchers, storytellers, film makers, oral historians, installation artists, musicians, and farmers with stories that are told through various forms; light installation, oral recordings, music, moving image/ media and storytelling. This event is suitable for all ages. Un-settled is supported by the City of Greater Geelong through the Arts & Culture Dept Arts Industry Commissions.

As passionate foodies, and having already decamped from Melbourne, moving to the region in 2015, Jason Smith and Sarah Fenton saw an opportunity to purchase the infrastructure of a business that is now known as Bellarine Smokehouse. Operating since 2018, from their food manufacturing ‘shed door’ on Bellarine Estate Winery, Bellarine Smokehouse is the little business that could. Operating as a wholesale, shed door retail and an e-commerce direct-tohome delivery service, they have all bases covered when it comes to premium smoked fish and ensuring customer availability. Bellarine Smokehouse uses traditional curing and smoking methods over a threeday process to produce their award-winning products, they also utilise local ti-tree as it’s a similar hardwood to Manuka wood, used traditionally in Jason’s home country of New Zealand for smoking fish. Jason says the secret to such a delicious product, lauded by renowned chefs and the public is quality ingredients, patience, and time. A good product and flavour take time and can’t be rushed. Jason is very proud to say chefs including Guy Grossi, Michael Flouch and Louis Naepels have all used his products 24

on their menus and that many of the region’s notable restaurants and cafés do too. Jason, known as the Chief Smoking Officer (CSO), and Sarah, who’s not quite sure of her title, but she’s the driving force behind sales and product development; have ridden the COVID wave of the last two years by growing their online business by 100%. That’s not a hard task (tongue-in-cheek), when they didn’t even have a website at the start of 2020! Sarah says they had an ‘Oh heck’ moment when the first wave of COVID hit and had their website and online home delivery platform up and running within a week. Her ‘Bellarine Boxes’ supported not only the sale of their smoked fish products but also 16 other small producers across the Bellarine when all were facing tough times. Products included Lard Ass Butter, Flying Brick Cider, Drysdale Goats Cheese, Adelia Muesli, Bellarine Brownies, Fasties Honey, Teddy and the Fox Gin, Bennetts Wines, Baie Wines, McGlashan Estate, Bellarine Estate, Leura Park, Ket Baker Sourdough Bread, Manzanillo Olives, and The Melbourne Map Jigsaw (yep, they’re local too). So how did a Kiwi and a well-travelled Melbourne girl end up smoking fish on the Bellarine?


They met in Melbourne on Yarra Bend golf course of all places…Jason on a trip to visit his sister, and his sister a friend of Sarah’s having teed up a foursome for golf. The rest they say is history! What certainly shines through is their passion for what they do and the Bellarine region. Whilst they thought they would smoke fish and expand into smoked duck and chicken as well, they’ve found their smoked fish lines to be so popular that the new product developments across those areas have taken a back seat whilst they have introduced Barramundi, King Fish, gravlax, and salt. They’ve also looked at Murray Cod which they say is delicious but expensive. Jason says the question he’s asked most is – “What’s the difference between ‘hot smoked’ and ‘cold smoked’?”, he explains that ‘hot smoked’ is cured and smoked and must reach a cooked temperature of 65 degrees, whereas ‘cold smoked’ is cured in a similar process but the temperature does not reach more than 40 degrees, therefore being a cured, not cooked product. It’s something most people don’t know until they ask. Whilst most of the current lines are ‘hot smoked’ including Tasmanian Salmon,

NZ Ōra King Salmon, Barramundi, King Fish, Trout, Smoked Salmon Pâte, Smoked Barramundi Pâte, Smoked Salt, and Smoked Pepperberry Salt, they also produce ‘cold smoked’ NZ Ōra King Salmon and offer a special-order gravlax. Gravlax is a traditional salt, sugar and herb cured salmon hailing from the Scandinavian countries. They’ve heard from several devotees that their gravlax is the best they’ve ever tasted, and it’s cured using another local product from The Bellarine Distillery – Teddy and the Fox Gin. Sarah says since first making 48 sides three years ago – last Christmas they made over 800. In addition to their retail operations from their Bellarine shed door, they also attend farmers markets across Victoria and their products can also be found locally and across Victoria at various sites including but not limited to speciality IGA stores, provedores, grocers, cafés, restaurants, delicatessens, and bars. Located in a tourist region, Jason says the support of local businesses has been key to their growth as people are able to taste and buy their products at numerous places across the Bellarine, Surf Coast and Geelong. 25

Celebrating the region and their products means these gifted marketeers have also been able to create a range of ‘Bellarine Boxes’ that flew out the door during lockdown with people sending gifts to loved ones, friends and colleagues across Victoria. Birthdays, Christmas, anniversaries, and Easter are key celebrations that see a rise in online orders.

Sarah says key to the success of their business is excellent staff supporting them all the way, a delicious tasting product, great service and very satisfied customers who promote their business through word of mouth. Having Instagram and an easy-to-use website for online orders makes it straightforward for anyone to place an order.

Jason and Sarah have partnered with local logistics provider 3Point Logistics and a Melbourne based business to make sure all deliveries arrive beautifully packaged in Bellarine Smokehouse livery and are completely refrigerated throughout the entire supply chain logistics.

With Easter and Mother’s Day on the horizon Jason and Sarah expect pre-orders for their gravlax to ramp up as there is a two-week time frame for the ordering and processing of the fish as it requires a 72-hour cure and cold smoke.

They have boxes with local Teddy and The Fox Gin from The Bellarine Distillery, Pinot Noir form Bellarine Estate and Sparkling form Bennett’s on Bellarine and of course there are alcohol free boxes too. Having them delivered right to people’s doors via refrigerated courier is a breeze, order on a Monday for delivery by Friday and if you are local – delivered within 48 hours.

A little too much chocolate is just about right If there’s one diary date to make before Easter, it’s a visit to Moorabool Valley Chocolate. For over 17 years, local chocolatier Lynne Meek has been creating and churning out artisanal chocolates from a quaint 1920’s farmhouse in Batesford, west of Geelong. Having learned her craft at Melbourne’s prestigious Savour Chocolate & Patisserie School, Lynne first dabbled in making chocolates to help her daughter who ran a chocolate shop. “I’ve always liked doing creative things and didn’t realise just how creative you could be with it,” Lynne says. Her ‘sweet support’ soon exploded into a full-time business. She started making chocolates from the kitchen of her home. The business soon expanded to include Moorabool Valley Chocolate Café, located in the same Batesford premises (more on this later). These days, around 50 chocolate designs – of around 100 – are on display in the café at any one time. As well as creating these mouthwatering bites of heaven, Lynne is also the chief taster, along with her colour artist. For flavours are key here. All the chocolates are made in-house and, where possible, natural products are used for the fillings (except for the colourings, fondant filling and the Turkish delight). And, there’s something for everyone: vegan options, as well as sugar-free and gluten-free choices. Flavours vary from raspberry (‘raspberry blossom’) to vanilla fondant (‘walnut cream’), almond (‘almond cluster’) to ginger (‘ginger truffle’). The most popular flavour? Caramel. 34

The signature chocolate, named the ‘Moorabool Valley chocolate’, is a chunky chocolate caramel nougat. Hint: it resembles a well-known chocolate bar that comprises similar ingredients (think the name of a planet). Scrumptious! But the true standouts, especially at this time of year, are the Easter offerings. So where better to fill the Easter Bunny’s delivery basket than here? Moorabool Valley Chocolate creates stunning Easter-themed animals, from the characterized, cutesy-style bunny to a very realistic and almost life size furry rabbit. And rejoice! If you’re after the chocolate Bilbies, there are burrows of them here. Then there’s the superb array of hand-painted eggs. Each one is designed individually and then painted by a chocolate artist. Colouring chocolate is a complex process. The various hues are first mixed into white chocolate. These are then painted painstakingly one by one into a mould, after which the usual chocolate is applied. The results are fabulous. But the ultimate sweet gift? Lynne’s personalized Easter eggs. She can add a name to any egg or produce plaques to accompany an egg. She even adds chocolate touches that relate to someone’s interests. For something different again, choose from a


menagerie of dogs and kittens, or massive freckle lollypops. The current runaway bestseller is the delightful range of builders’ tools – hammers and saws and the like – comprising milk, dark, white and marbled chocolate. It’s special, if labour intensive stuff. To keep stocks going and to fulfil the custom orders, one to four people work full-time on the chocolate production line (you can watch them through the viewing window). Lynne has whipped up so many chocolates over the years – she’s lost count of how many kilograms of chocolate she’s churned through. “We put it out and get it out! Chocolates fly out the door,” she says. But it’s no easy task. After all, chocolate is not easy to work with. Her secret? “You have to understand your medium, what you’re working with, the idiosyncrasies of the chocolate; it has its own character.” “We use good quality chocolate (60% cacao content); and of course, we’ve taste tested a lot of chocolate to get it right,” says Lynne. But that’s not all. “Tempering the chocolate is the most important thing. Most people overheat it when they melt it and set it in a mould. With the much welcomed and long-awaited recent removal of COVID density limits at hospitality venues, Café Zoo owners Marc Rodway and Julie-Anne Nott are once again looking forward to their establishment taking a major part in generating many more memories.

Over the years the team have helped locals celebrate everything from sweet 16th birthday parties through to Wedding Anniversaries. Each function is shaped closely with customers, making sure every element is considered in keeping you and your guests happy.

More than two years ago now, Café Zoo helped create fond memories for 120 guests as the café played host to an engagement party turned surprise wedding. This event also remains a warm and lasting memory for owners Marc and Julie-Anne.

Varying room sizes give further flexibility, with options for intimate gatherings and morning teas through to whole venue functions utilising the landscaped garden outdoors. In total there are nine different spaces to choose from, with options both indoor and outdoor.

Dressed up with festoon and fairy lights, the venue was radiant as attendees drank and ate their way through the evening – unbeknownst to what was ahead.

“A lot of people don’t know that, they’ll come and just think it’s the marquee and the front section,” Julie-Anne says.

“The venue is just beautiful at night-time,” Marc says. A secret aisle and reception area were carefully decorated and hidden from guests in the garden out the back. When the right moment came, owners Marc and Julie-Anne revealed the adorned wedding area and directed the stunned guests to take their seats. “Only the bridal party knew, and it was just magic,” Julie-Anne says. “That’s probably been one of our favourite functions for sure.” “For us to be a part of their special day is just wonderful,” she adds. It’s a magical moment to be a part of, and just one of the many memories Marc and Julie-Anne have helped create since taking over the business approximately six years ago. 50

“They’ve got no idea how big it is,” Marc adds smiling. A great event is nothing without quality canapes to keep guests feeling full and content. Everything from small seafood bites through to sliders and sausage rolls can be requested for your next event with options for both set and customisable finger food menus. “One, it looks great and, two, it tastes fantastic and it’s filling. One of the great pieces of feedback we’ve had from customers is, ‘We can’t believe the price and the value for money with the quality’,” Marc says of the catering options. Having worked in the hospitality industry for approximately 30 years, Marc is passionate about food. In those years he’s learnt not to overcomplicate things, as he says, at Café Zoo they make “simple food done well, with quality ingredients.”

This ethos applies to both their functions and work as a café seven days a week. Produce is sourced free-range, organic and locally where possible and includes their bacon, bread and eggs. Marc comments specifically on the difference that quality free-range eggs make. A free-range egg instantly elevates the flavours with each dish and is a noticeable difference from businesses that use caged eggs. Popular dishes utilising the free-range eggs include the cleverly named Mr Benedict and Mrs Benedict – each one a twist on the breakfast favourite. The Mr is topped with hash browns, bacon, fresh avocado, feta cheese and homemade chilli jam. The Mrs has everything the Mr has, but with a generous serving of Atlantic salmon. While these two dishes are popular on the breakfast menu, Marc and Julie-Anne struggle to identify just one dish that stands out as the most popular item ordered – there are simply too many. 52

Items like the roast lamb Zoovlaki, steak sandwich and vegetarian big breakfast are all commonly requested. Customers are really spoilt for choice, with an extensive breakfast and lunch menu with over 50 dishes to choose from. Part of the wide-ranging menu comes from the team’s belief in keeping dishes interesting, varied and creative. There truly is something to suit everyone who walks through their door. With assurances in organic and free-range pork and egg, Marc also adds that there is very little that is pre-prepared and left sitting around in the kitchen. “It’s all fresh and it’s all cooked to order,” he says. The café caters to most dietary requirements, with a range of vegetarian, vegan and gluten-free options. There’s even plenty to choose from for the little ones. As a proud family-owned business, Marc and Julie-Anne work across all areas of the café. With the kitchen being a particular favourite for Marc.


“My time out to switch my mind off from things is to go in the kitchen and cook,” Marc says. The duo is also passionate about having the right coffee. When they took over the business approximately six years ago, they decided to change to a blend they knew and loved. The café uses Lavazza Blend 1 coffee, which is the only blend roasted in Melbourne – all others are roasted in Italy. “It pretty much comes straight off the production line to us, and I grind it to serve too,” Marc says. If coffee isn’t your style, the venue has a liquor license during the day as well as a range of teas, milk shakes, spiders and a fridge full of options to quench your thirst. Pako Festa has been unequivocally uniting Geelong for 40 years, the beloved festa helps to encourage the celebration of the variety of people from different cultures that call Geelong home. Having just celebrated its 40th anniversary in February, the festival has come a long way since its humble beginnings in 1983. The first Pako Festa attracted 12,000 people, with that number exceeding 100,000 attendees in more recent times, all relishing the celebration of diversity. Following another challenging year as a result of the Coronavirus pandemic, Geelong wineries and those from surrounding regions which offer cellar door and dining experiences, are now looking forward to a season of renewed hope that better and brighter times are ahead for the wine and hospitality industry, with the much welcomed and long-awaited recent removal of COVID-19 density limits at hospitality venues.

In addition, autumn is an exciting time of the year for the Geelong wine industry with vintage now underway in the region. “With a cooler summer and a slow ripening season, quality will be exceptional. A great time to be making wine,” Wine Geelong president Robin Brockett says. Harvest will occur throughout the region over March and April. These are the months dedicated to this step of the wine-making process. All the diligent efforts of the previous 12 months coming to fruition. By the end of April all grapes should be securely stored away in the winery and well on the way to producing another excellent vintage As grapes are harvested, they are promptly crushed and pressed, before advancing to the final steps of making wine – the last of which, is obviously bottling.

Come May, wine lovers will once again be able to celebrate the popular Wine Geelong event, Toast to the Coast, which was unfortunately postponed again due to another COVID outbreak. This event is Geelong’s ultimate one day wine festival. “This will now proceed on Sunday May 15th. This will be on the Geelong Waterfront with 20 of the region’s best wineries showcasing their wines,” Robin says. Toast to the Coast conveniently showcases the very best cool climate wines from across the region at one iconic Geelong venue, The Pier. Enjoy complimentary tastings from the region’s finest producers with your favourites available for purchase by the glass or bottle. A Pinot Affair, another much-loved Wine Geelong event, will take place the following weekend, Saturday 21 and Sunday 22 May after a three-year hiatus due to Coronavirus. Participating wineries will once again have the opportunity to showcase the Geelong region’s award-winning world-class cool climate Pinot Noir. On offer will be a variety of experiences including Pinot Noir masterclasses, wine lunches, music and food, as well as the chance 65

Looking further afield, the first weekend of July will see the annual Shiraz weekend return to the wineries. “This is the eighth year it has been held and keeps building into one of the highlights of the year. With some of the best cool climate Shiraz's made in Australia in the region, it's a great reason to visit the wineries with plenty of entertainment and Shiraz themed wine tastings, masterclasses and food for all to enjoy,” Robin says. “The next few months will be a very busy time for Wine Geelong and will give everyone a great opportunity to sample the world-class wines the region has to offer.” There is most definitely something for everyone across all these events. In the meantime, if you haven’t already visited Geelong Cellar Door – a favoured haunt for wine lovers in the region, be sure to do so at a time in the not-too-distant future. Hanging proudly on a wall within this charming ‘old world’ wine bar and store, is a Wine Geelong honour board, handcrafted from the valuable ornamental timber known as walnut. 66

Relax and Wine Down at Banks Road Winery

A giant toothbrush, a massive leaf, and a ‘he-man’ holding up a log are not the first things you’d associate with a winery. Except, that is, if you’re visiting Banks Road Winery. Here, giant sculptures dot the grassy landscape, giving young ones a chance to run amok while guardians enjoy some grown-up fun by indulging in good food and fine wine.

Enter the estate, meander past six hectares of vines and a winery complex and up a small rise. At its peak, sits the very enticing Banks Road cellar door and café: a glass cube, trimmed in funky black and red. The gorgeous vista encompasses the vineyard and open grassland, that’s dotted with the giant quirky artworks. And it gets better: Youngsters are welcome to explore among them, giving time and space to the grownups. For 20 years, Will Derham, and his wife Avanelle, have operated this boutique winery, located at the junction of Banks Road and the Bellarine Highway in Marcus Hill on the beautiful Bellarine Peninsula. This family-friendly and pooch-welcoming estate is just a short 20-minute drive from Geelong and offers scenic views of Swan Bay beyond the vines and sculptures. Will’s philosophy is simple: “Healthy soil means healthy vine equals great tasting fruits.” Thanks to Will’s natural farming practices, Banks Road Winery’s soils are landing A+ scores. 70

So, too, are his well-structured, elegant wines. The winery produces popular wine varieties including pinot noir, shiraz, rosé, chardonnay, pinot gris and sauvignon blanc. Of these, the pinot noir (70% of their production) is their standout wine. His Banks Road 2017 Will’s Selection Pinot Noir and Soho Road 2017 Barrique Eight Pinot Noir scored a whopping 97/100 from James Halliday. This is not altogether surprising. Agriculture is in Will’s DNA. As a child, he spent much time on his grandmother’s farm in Hamilton where he admired her gardening and farming skills. “Gran was always out beavering away with plants. She instilled in me a knowledge, appreciation and affection for plants and animals,” he says. After school (where physics and mathematics were his strong points) he completed a business degree and worked in real estate. Eventually, on coming to a crossroads in his career, he decided to work on weekends at a tasting room at Shadowfax Winery in Werribee. It was a pivotal experience.

“It was an entrée, but I loved it. And I realised I wanted to return to the land,” says Will. “After all, vignerons are farmers; we farm fruit,” he says. “My philosophy was always about minimal intervention in the wines: just really simple, honest wine making,” says Will. But that’s not all. “Ninety percent of the success of the wine is what goes on in the vineyard. It’s about the terroir, where a wine tells a story of what happened to that vine in that spot. Right through to the journey to becoming a wine in the bottle,” says Will. That also includes the grape picking. The vintage – all grapes here are picked by hand – is Will’s favourite part of the job. The grapes are prepared and fermented at the onsite winery (this is another thing of beauty: it’s crammed with stainless steel tanks, a bottling machine and French oak barrels). Here, more magic takes place, with as little interference as possible, until it’s time to reveal them to the wine-drinking world. “I always get nervous at the release of a new wine,” declares Will. He needn’t be.

Nine of his sought-after wines have received 90 plus scores (out of 100) from Australia’s wine guru and critic, James Halliday. Accolades aside, Will says he wants people to have an enjoyable experience. He says, “For me, it’s all about the holistic experience: Wine, food, friends, and ambience.” With the arrival of a new season, along with a new manager, chef and menu, and of course, the much welcomed and long-awaited recent removal of COVID density limits at hospitality venues, Will is looking forward to an autumn with renewed confidence for the hospitality industry. Most of the new menu – except for a few items including cheeses - is made inhouse, and most of the produce is sourced locally within a 10km or so radius. The fertile on-site kitchen garden is also utilised when creating the café’s new seasonal dishes which are served and enjoyed in a relaxed setting and can be paired to one of the wellstructured and elegant wines on offer from the Banks Road Winery collection. 71

Peninsula Pinot is well known for its fragrance and supple character, and this certainly lives up to the reputation of the region. Soft tannins make for ease of drinking with bright cherry/ berry fruit aromatics and flavours to the fore. The warmth of the vintage provides added weight and depth to the palate, with a nice touch of oak adding structure and a lick of spice to the finish. Food pairing: Anything with duck and/or mushrooms are obvious choice pairings, but Asian noodles and dumplings would work just as well.. RRP: $38

McGlashan 2019 shiraz Bellarine Peninsula

13.5% abv

Overall, Bellarine Shiraz is really starting to stamp out its style for producing wines rich in dark fruits and spice. The ripeness of the vintage concentrated the core primary black fruit flavours, adding greater richness and length to the finish. Food pairing: A spicy, wood fired pizza seems like a no brainer.
