Through the Old Spirits Company - which sells, well, old spirits - I start with spirits that have at least thirty years of bottle age, and go back as far as possible. The majority of bottles date from between the 1930s and 1980s but current records for the oldest and rarest are a 1795 Cognac, a c. 1800 Madeira, a case of mid-nineteenth century absinthes and an 1868 American Pennsylvanian Rye Whiskey.
