Try the Tikka Boys’ wildebeest fillet METHOD Roast all the seeds till fragrant, crush along with sugar salt pepper and gar lic. Generously spread the dry rub over the whole fillet (400 g) and leave to ‘cure’ for about an hour or two. Sear the fillet in a hot pan or over hot coals to get some caramelisation. Wil debeest is best served medium rare. Carve the fillet to serve.
A recipe that is of special significance to Ultimate Braai Masters Yusuf Sujee and Stephen Mandes must be the fare they prepared at Sossusvlei in the Nam ibNaukluft National Park. The theme for the eight episodes of the Ultimate Braai Masters 2014 com petition was venison and teams were put to the test of their creative abilities. The Tikka Boys succeeded in going through to the next round with their wil debeest fillet served with pumpkin frit ters, glazed beetroot and pickled car rots. Their dry rub recipe is very versatile and can be used for all sorts of tender cuts. Beef fillet would work well as a re placement for their winning wildebeest dish. Enjoy!
FRITTERS ) 300 g roast pumpkin puree ) 10 g ground cinnamon ) 20 ml honey ) Salt and pepper to taste ) 3 whole eggs ) 200 g flour ) 150 ml milk
DRY RUB ) 20 g cumin seeds ) 20 g coriander seeds ) 20 g fennel seeds ) 10 g sugar ) 10 g course salt ) 5 g crushed garlic
METHOD Sujee and Mandes never had the luxury of a food processor in the desert but at The Restaurant at La Vierge in the Hem elenAarde valley, they combine all the ingredients to a smooth lump free batter.

PHOTO: COOKED IN AFRICA FILMS Heat a frying pan over medium heat with a little oil, shallow fry the batter to make little fritters. Fry till golden brown each side. Lay on a paper towel and lightly dust with cinnamon sugar. PICKLED CARROTS ) 100 ml white wine vinegar ) 100 ml water; 100 ml sugar ) Thinly shaved carrots
METHOD Heat up all the pickle ingredients, just till sugar is dissolved. Pour the pickling liquid over the carrots and allow cooling. GLAZED BEETROOT ) 3 or 4 large beetroot ) 30 ml white wine vinegar ) 40 g brown sugar ) 40 ml water
) 5 g roast cumin seeds METHOD Roast the beetroot covered in foil in an oven at about 180 till soft. Peel while still warm. While the beetroot are roasting, com bine all the glaze ingredients in a pot and reduce to a syrup consistency Once that’s all done, slice the beetroot and pour the syrup over.

Stellenbosch is reeds sedert verlede jaar besig om vere reg te skud vir die jaarlikse US Woordfees, ’n verheerliking van Afrikaans en al sy verskillende fasette, wat van 6 tot 15 Maart in die Eikestad gehou kan word. Vanjaar se tema, 16 onse, ver wys na die fees se 16de bestaans jaar en vier die veelheid en verskei denheid van die “onse” waarin in dividue hulself in ’n veranderende wêreld groepeer. Dus net ’n ander manier om eenheid in verskeiden heid te sê. Feesgangers kan kies en keur uit ’n verskeidenheid optredes, uitstal lings, boekbesprekings en ge sprekke wat regoor die dorp gaan
plaasvind. Daar sal ook hope vermaak vir die kleinspan wees. Die Prinses en die Ertjie, Kinkel en Konkel, Lollos en Tjiff en Tjaff gaan almal tydens die Woordfees te sien wees. Met optredes deur groot geeste soos Nataniël, Laurika Rauch, Vali ant Swart en nog vele meer sou dit wys wees om nou al jou kaartjies te koop! Daar is selfs ’n optrede deur een van SuidAfrika se gun stelinggroepe, Mango Groove, op 13 Maart by Neethlingshof. Die Woordfees se kaartjieverko pe vaar nie net goed nie, dit is am per 100% beter as verlede jaar dié tyd. Só meen Woordfeesdirekteur Saartjie Botha, die dramaturg en teatervervaardiger wat vanjaar dié gewilde fees vir die eerste keer bestuur.

Die goeie kaartjieverkope is vir haar veral verstommend omdat hulle nog glad nie volstoom met hul bemarkingsveldtog begin het nie. “Ons is egter ’n bietjie benoud. Alles wat opgaan, gaan weer af. Daar is net ’n beperkte hoeveelheid kaartjies beskikbaar. Die moontlik heid bestaan dus dat die groot ver tonings soos Nataniël en Laurika Rauch s’n vinnig sal uitverkoop.” Botha sê daar is minder as 10 produksies waarvoor daar nog geen kaartjies verkoop is nie.

Camping provides oodles of affordable fun, sometimes not MARK STUART I get more excited than a five-year-old around Christmas time when loading my tent and camping gear into the back of the bakkie for a camping trip. Although I’ve done this umpteen times it always gets my heart pumping fast and my imagination running wild. The joy of pitching my tent in a perfect campsite and then exploring the campsite, surroundings and nearby town is a new adventure every time. In my mind, too many people go overboard and hitech when buying a tent and other necessary camping supplies. My wife and I have been camping in tents for more than 30 years and have narrowed our camp ing equipment down to the minimum, without for saking any comfort. We have “experimented” with many tents over the years, small, flimsy and cramped to finally big, solid, robust and comfortable. We have camped at the foot of mountain ranges, at the coast and alongside rivers and in forests and experienced extreme heat, cold, rain and gale force winds, but have loved every single moment. Once, while camping alongside the Great Brak River in the Southern Cape with our then teenage daughters, our braai fire was doused by a heavy downpour of rain. We quickly moved inside our tent and decided to make spaghetti bolognaise on our gas stove in side the tent. We had all we needed for a great big pot of spaghetti bolognaise and had a great meal while the rain poured outside. Our children, now grown up, still have great memories of that evening. While on one of our first camping trips, near the Knysna Heads, we returned from town after buying supplies to find that our tiny twoman tent

PHOTO: MARK STUART had been flattened by wind and rain and our clothes and sleeping bags were drenched. We bundled the tent into the car and quickly found some cheap selfcatering accommodation. During another camping trip on a small wine estate near Tulbagh, the wind was so strong that it blew our twoman dome tent on top of us while trying to sleep. Some of these experiences were not always that much fun at the time, but we will never forget them
and have always made the most of every trip. The great thing about camping is that it is still very affordable, loads of fun and you often meet likeminded campers. We are extremely blessed in the Western Cape with a plethora of amazing campsites to choose from – many only a short drive away. So what are you waiting for? Valentine’s under the stars Set in beautiful Elgin, the Hope at Paul Cluver Amphitheatre will be screening oldschool classic Top Gun this Valentine’s Day, with tick ets costing only R100 each. There will also be fun improv style theatre and lots of fun and games for the family.
