‘I adore using COME ON IN!

ABOUT ME I’m Gemma Gear, 29, a TV design producer and interior stylist @thatssogemma, thatssogemma.com. I live here with my partner Tom, 31, an accountant, and our cocker spaniel, Digby. MY HOME A two-bedroom late Victorian terrace in Worthing, West Sussex, bought in August 2019. WHEN WE MOVED IN It was lacklustre and dated, with yellow laminate, magnolia walls and an avocado bathroom suite. AND NOW We gutted the kitchen and bathroom, painted everything white, then added colour and pattern to create a decor that’s characterful and unique. STYLE TIP I try not to be too matchy-matchy or dwell on current trends, but simply fill my house with things that I love. 20 | SEPTEMBER 2021

Renovating her first home gaveGemma the opportunity to properly explore her style and to create an eclectic look that’s filled with fun and bursts of colour

W

e weren’t planning on leaving our rented flat straight away, but when our landlord gave us two months’ notice, we weren’t left with much choice!’ says Gemma. ‘So, we took it as a sign to buy our own place and moved in with Tom’s parents while we scoured the market. This Victorian terrace was about the twentieth property we looked at, and it was just down the road from our old flat. The interior hadn’t been touched since the 1970s, with yellow laminate flooring downstairs, Artex ceilings and magnolia walls. However, we loved the original wooden doors, original wooden flooring upstairs and the two gorgeous fireplaces. I knew that all it needed was some TLC and an injection of colour – along with a total kitchen and bathroom revamp!

First steps We got the keys in summer 2019 but

didn’t move in until October. During that time, we got straight to work on some of the pressing jobs. We sanded floorboards upstairs, plastered the ceilings and had new skirtings and architraves fitted. The bathroom was in a really sorry state. It was an old avocado suite with no storage space and the bath was cracked down the side. So we gutted it and rejigged the layout to fit a big vanity cabinet, which holds all our clutter. The last job before moving in was painting the whole house white. I wanted a blank canvas to work from, where I could try out different looks – much easier with a neutral backdrop.

it out on a large sheet of paper using coloured pencils, or by laying out the dried flowers you’re going to use in a circle. Make small bundles of dried flowers, arranging each bundle according to your design. Ensure the bundles aren’t too large, as these are harder to secure. Using thick garden wire, attach your bundles to a metal wreath frame one at a time. Begin with the bundles at the back and work your way forward. Attach a wire loop at the back to hang on your chosen wall. To keep your wreath in nearly-new condition all year round, keep it out of direct sunlight and don’t display it in a humid area.

go for it! Sometimes I start with a statement piece of furniture, like the cobalt blue sofa in our living room, and work from there using the colour wheel. I chose a bright contrasting yellow for the standard lamp and rug, and those pieces prompted the entire palette. Then, I tried clashing different colours for everything else until I settled on this design. Choosing accessories was really helpful in finding my style because they’re easy to experiment with. I tried out cushions, throws and vases in various patterns and colours, kept the ones that worked and repurposed or returned the rest. I love the joy colour brings. It lifts your mood and you can’t help but feel happy in the space.

Blank canvas My office is a different story. My job is to be open minded and able to appreciate the benefits of many different styles. Bearing this in mind was crucial when it came to decorating the office. I wanted my workplace to be neutral and low-key, so that when I’m working on a styling project, I’m not influenced by my personal taste. I’ve decorated

with plenty of lush houseplants, though. As well as bringing life to the space, I love their calming and air-purifying properties. This room gives me space to breathe and create.

Artistic inspiration I think art is so important when it comes

to my sense of design. A statement piece can inspire the look for an entire room – the Andy Warhol print in the dining room certainly did. We lifted pinks and oranges from it, and chose furniture with those colours in mind. All our art has meaning, whether it’s the Frida Kahlo print (she’s one of my icons) in our bedroom, where I’ve paid homage to her style by 24 | SEPTEMBER 2021

decorating with plenty of colour and greenery, or the pizza slogan print in the kitchen, which is a bit of fun. Throughout the house we’ve mixed punchy statement pieces that stand alone with funky gallery walls, to avoid everything being overly matchy-matchy.

Hands on I’ve always been very hands on when it

comes to DIY. We did all the sanding and painting ourselves when we first moved in, to keep costs down. However, having the house to work on during lockdown was a lifesaver. I channelled all my energy into my DIY blog (thatssogemma.com), as I had so much time at home because

filler, then sand the area. Paint a base coat with masonry paint. Make or order a gorgeous stencil pattern. Use a stencilling brush and/or sponge to paint. Regular paintbrushes will cause the paint to seep under the stencil. Tape your design securely to the hearth and begin painting the first section in colours of your choice. Carefully remove the stencil, leave to dry, then repeat. Seal with a mixture of PVA and water. 26 | SEPTEMBER 2021

my line of work basically shut down for five months over the summer. When it was all getting serious last year, we decided to order fence panels, AstroTurf, masonry paint, festoon lights – everything we might need to transform the garden. We got stuck in and spent the first two months in the sun every day making it into a really lovely space.

Final push The small galley kitchen was the last

major project. The previous kitchen was naff but liveable, so we prioritised the bathroom and waited until we had the money to do it up. It’s amazing how renovating just one room can take over the whole rest of the house! While we redid the kitchen, we were living off microwave meals and leftovers from our parents – it was all worth it in the end though! I wanted to maximise storage and utility, without compromising on style. We worked with Benchmarx who offer a

ABOUT ME I’m Laura Tamcken, 36, a banking associate. I live with my husband Mitchell, 28, who works in e-commerce, plus our two cats, Hiro and Ron. OUR HOME A three-bed Victorian terrace in Shoeburyness, Essex. We moved here in September 2017. WHEN WE MOVED IN The house had been left empty for nine months and had an overgrown garden, nicotine-stained walls and damp that needed sorting straight away. AND NOW We have fully replaced the mouldy bathroom, fitted a brand-new kitchen, replastered, painted and decorated all the rooms. Next stop – the garden. STYLE TIP Shop your home! Their Victorian dream needed plenty of work, but room byroom, Laura and her husband Mitchell havebrought this period property back to life

O

ur previous home was a lovely new build in the countryside but our commutes were more than two hours each,’ says Laura. ‘It made sense to move closer to work, we just needed to find the right house. We had viewed around five properties when I saw this come up online – it was just down the road from Mitch’s work and is a stone’s throw from the beach. The only photo was of the front of the house but I loved it. As soon as we walked in, we knew it was the one for us. Both of our parents came to view it and thought we were crazy to take on such a huge project!

room. I had dreams of opening up false walls and finding original fireplaces or dreamy tiles… instead we found concrete and a lot of bodge jobs. We went for a monochrome scheme and our blue velvet chair from the Sofology sale added a little bit of vibrancy. Next, we ripped out the bathroom and continued with the monochrome palette. We did get professionals in to finish the job, but I had a stroke of luck and found an absolute steal on Facebook Marketplace – a bath and taps for only £50. We also started work in the kitchen, which was old, tiny and to be frank, a bit dingy. We knocked down walls to create a longer and brighter galley kitchen, with plenty of light flooding in. Our Ikea kitchen was exactly what we were looking for and I fell in love with the faux marble worktops. We decided to go for SEPTEMBER 2021 | 35

Along with the obvious sites such as eBay, look on local selling or swapping pages on Facebook and charity shops – you never know what you might find! Just remember to double-check measurements before you hand over any cash. Don’t be shy in asking friends or family if they’re getting rid of anything anytime soon; if they won’t accept money from you, you can always thank them with flowers or baked goods. Make sure you do the prep work before you get creative; giving your item a deep clean and a light sand can make the world of difference to the final finish.

Finding ourway Next on our list was to have the dining

room replastered. However, once the dust quite literally settled, it became clear that we needed to replace all the floors – so we fitted new flooring throughout the downstairs ourselves to keep costs down. It was back-breaking work, but just so rewarding by the end. The carpet on the staircase was ripped up and the stairs sanded, primed and painted white. I have 36 | SEPTEMBER 2021

a real affinity for polka dots and had decorated the hallway with dotty stickers, so decided to jazz up the stairs using the same products from Kiddy Sticks. We then added a little bit of sunshine with the yellow wall at the top of the stairs, which looks so cheerful against the monochrome.

From project to home Nine months after we got the keys to the

house we got married, so all renovation funds went into the wedding pot instead. We arrived home from honeymoon feeling refreshed and ready to start again. It was a good job we had a renewed sense of energy as, just after a year of

I’ve loved every minute of decorating the nursery and as we were painting upstairs anyway we thought ‘why not?’ and refreshed our

bedroom, going from a dark botanical wallpaper to a calming mural from Rebel Walls. We also put down a super-soft carpet after years of having exposed floorboards – something Mitch was very excited to see the back of.

Money matters We didn’t have a budget for each room,

because we tackled them as and when we could afford to. We’ve tried to be savvy – the flooring downstairs all came from B&Q; we would wait for the 3-for-2 weekends where we would snap up the flooring and underlay, saving us hundreds. Laura used a triangle from a maths set to achieve the desired effect. She did one row of up and one row of down – again, this was drawn on with pencil. Once all the lines were completed, Laura used an old make-up brush to go over the lines. You’ll need a steady hand. If you’re right-handed it might be easier to go from left to right. Finally, step back and admire your handiwork!

e started off living in this area of north London many years ago but moved down to south London as we could get more for our money there,’ says Jannine. ‘It was lovely, but ultimately a bit quiet for us. On one of our trips back north of the river to see friends, it dawned on us how much we missed our home turf, so we started scouring the market.

was very little we could afford, until we found a run-down terrace in need of a major revamp. We loved it, but houses were being snapped up so quickly, I was worried we’d miss out. So I wrote a letter to the owner, explaining how excited we were to return to the area, how I planned to use my skills as a designer to renovate the house, and how passionately we felt about the local community. The next day we had a call from the estate agent letting us know the house was ours for the guide price. I’m so glad there are honourable people like that out there.

about creating stylish yet practical looks, so we thought about what we really needed from the house before diving in. The boys were teenagers at the time and definitely needed their own rooms, and Steve works from home a lot so an office for him was crucial. Then, I wanted a simple, elegant bathroom. I could see that the wide landing wasn’t serving a purpose and the space could be better used. We put a bedroom in the loft with a compact shower room, turned the bathroom at the back of the house into Steve’s study, then created a stylish

In addition to changing the layout, we replumbed, rewired, replastered and refloored. Everything needed something doing to it!

Mix and match I’m not one for spending lots of money if

it isn’t necessary, although I love to invest in the odd statement piece. For the kitchen, I bought carcasses from Ikea, sprayed them and updated them with oak handles to make them more individual. Then, our fantastic carpenter Angelo Nunes filled in any gaps with handmade units and 48 | SEPTEMBER 2021

shelving. Our kitchen has a bespoke feel for a much lower cost. Saving money here meant we could splash out on items like our sofa which cost £2,000 – pricey, but the classic style means we’ll have it for years.

Cohesive look Colour is really important to the overall

feel of a house and makes such a difference. At first glance our house might seem pretty neutral – I chose a base of greys and whites accented with muted tones, like teal, mustard and olive green. It’s instantly calming when you walk through the door. Then I added hits of vibrant red in the front room, sunny yellow in the kitchen and multicoloured rugs in the boys’ rooms to bring the

drawers, then unscrew the old handles. Wash the cabinet surfaces with sugar soap. Sand and apply a layer of undercoat. Let dry. Apply specialist kitchen paint that’s designed to withstand heat and steam. Leave to dry then follow with a second coat. Measure the distance between the two holes on the handles. This is the ‘fixing centre’, which will usually be a standard size, making it easy to find a replacement. If your handles don’t fit the original holes, fill them in with wood putty, repaint then drill new holes for your updated handles.

In the frame Art adds so much to a room and I love

finding original artwork, whether it’s a funny print for above the loo, or a canvas I’ve painted myself. Probably my favourite thing in the house is the picture of the Ugandan lady above the mantelpiece in the living room. It’s a piece of screenprinted fabric my brother brought back from a trip to Africa and gave to me when I was 16, so it has great sentimental value. Framing is something that’s really important if you want to make the most of your pictures. My local framers, S’Graffiti, have given me great advice about frame depth and weight. Details like these add so much to our house.

Vintage doesn’t necessarily mean wildly expensive though. I paid £1,000 for the antique drapers’ drawers in our living room, but then I picked up the Londonscape coffee table for just a tenner! I’ve found beautiful pieces closer to home, as well. The wooden unit in the kitchen had been left behind by the old owners, so we kept it, as a reminder of the house’s history – and I love the burst of yellow. I found the desk in Aubrey’s room left out on a street nearby, gave it a good polish and it scrubbed up really well. My dressing table is actually an Ercol chest handed down from my parents. Not only is it a classic design, but it helps to tell the story of our family.’

T

he kitchen was a warren of rooms: a study, a kitchen with no sink, a utility room and a gardener’s loo and coal store,’ recalls Karen. ‘The previous owners had kept the house in the family since the day it was built in the 1900s and had done nothing to modernise it, so it badly needed updating. We kept the utility room, as we knew it would be useful, and knocked down all the other walls to create a large openplan room. We added a narrow extension across the whole width of the new room to create a better-proportioned space, with a wall of glass to connect the house to the garden. The extension also allowed us to include some roof lights. I knew I wanted aluminium bifold doors. The room faces south and on a sunny day I wanted to be able to throw them open. Aluminium is costly; we could have chosen uPVC or wood, but wooden bifold doors are less stable and we felt that in a period property, uPVC would not have done the house justice.

room was going to be a family room as well as a kitchen. We wanted it to be contemporary but also homely. We chose Waverley Kitchens who I have worked with many times as an architect. I love their aesthetic; they make bespoke cabinetry solutions in plywood and they offer tremendous flexibility in price. We did run over a little and in the end did not have quite enough for the log burner that we had planned to put in the low-shelved recess beside the craft desk. That will have to wait a few years.

No disasters To be fair, we are both architects and very experienced at project management, so disasters were not part of the plan! We

INSTALL PANELLING You can buy sheets of

V-grooved MDF panels online. Before painting your chosen colour, apply two to three coats of primer. MDF is a very porous material, so you will not get a clean, even painted finish unless the surface is very well primed in advance. The cut areas of MDF are especially porous, so it is important to seal properly. Lightly sand between coats for a smooth finish – remember to wear a mask while sanding. Add a shelf to the top of the panelled zone for a particularly pretty result and you will have a useful display area.

very particular about this very important, but often ignored, design element, and he found the zingy citrus pendant light trio and wall light to match at very reasonable prices. The retro-style bar stools were a good find on eBay. For the flooring I was inspired by Moroccan tiles, but felt they were a bit cold underfoot. Vinyl tiles were another option, but I worried that they might be hard to keep clean, so I was delighted to discover this beautiful, patterned sheet vinyl flooring. It ticked every box.

Lessons learned As an architect I am learning all the

time. New products and materials are coming out constantly, so there is a lot

to keep up with. We had to extend and update the heating system for this project, and it was trickier than I had expected. Maybe learning how to cope living in a building site with a young family was the biggest lesson though!

here and often comment on this. We designed this kitchen for the needs of our family. We both love to cook, and our kitchen has become the heart of our home. The children do their homework in here and our daughter does artwork at the desk. How can I ensure that it’s good quality? Always order samples so you can see

how the vinyl will look in your space. This way, if you’re buying a design that replicates another material, you can also check to see how realistic it is. For example, does the grain in the wood look authentic or is the colouring of the stone similar to the natural material?

What are the sheet vinyl dos and don’ts? The longer you leave a spill, the more likely

it is to stain, so clean it up quickly. Avoid walking on sheet vinyl with high heels and use felt pads underneath furniture to avoid indentations. Plus, when you’re moving furniture, don’t drag it along the floor – lift and place it instead. Be aware that if sheet vinyl is seriously damaged, it’s difficult to repair and may have to be replaced.

How should I clean it? Sheet vinyl is typically easy to clean. You

ABOUT ME I’m Ellie O’Mahoney, 41, a magazine journalist, and I live here with my husband, Mark Evans, 43, an art director, and our children, Elliott, six, and Molly, three, in a four-bedroomed Victorian terrace in south-east London, which we moved into in June 2017. THE CHALLENGE Turning our uninspiring en suite shower room into somewhere we actually wanted to spend time, with practical sanitaryware that still had plenty of character. aving moved to get more space for our money, we knew we had plenty of work to do on this house,’ says Ellie. ‘Luckily, Mark is handy and can do most things himself, which we’d factored into the equation. We took the top floor, a loft conversion with an en suite, for ourselves, but we only did basic stuff to it, as there were other more pressing needs. First, we renovated the kitchen, the children’s rooms and the main bathroom. After three years we finally got to our en suite.

First moves The shower was the worst aspect of the

room. It was old-fashioned and leaking. We like an industrial feel rather than ultra-contemporary stuff, so after hours spent searching online I chose a black grid style. Although it was more than we’d been hoping to pay, nothing else came close. We also needed a matching shower tray and a decent shower to go with it. I won Mark over to my way of thinking, and then it was all about how we could cut costs elsewhere to achieve it.

Recyclingwins The existing vanity unit was made of

wood and we knew we were going to paint it anyway, so we took the warped top off and used an offcut of the kitchen worktop to mount on top. A baby Belfast sink found on our local Facebook Marketplace creates a sort of gentleman barber vibe. To carry on the theme we bought a kitchen-style mixer tap. We’d over-ordered on white metro tiles when we did the kitchen renovation and there were enough to do half the area inside the shower. The white brick tiles were cheap and easy to match, so it was another area where we could SEPTEMBER 2021 | 95

inexpensive but incredibly effective. Mark panelled halfway up all the way round, making sure he used waterproof wood because of the damp atmosphere. We both like green, and it goes so well with black and white, so green it was.

Waiting game Lockdown was starting to bite and there

was an issue with the paint delivery. Although the room was only two weeks’ work in days, the whole renovation took three months because of the stopping and starting. In the end we chose a different green from a company that could deliver. At first we were worried that it was too dark and would look like the back room of a pub, but once everything was in, we absolutely loved it.

Stylishadditions A new Victorian-style toilet with a

wooden seat had been fitted, but I saw a black toilet seat online at Dunelm for £15, which I knew would tie in with the shower enclosure better, and make a huge difference for very little money, so I swapped it over. We had a little retro cabinet which I’ve put back up on the wall and a new cage light over the mirror adds to the industrial feel. We think we’ve achieved a traditional barber shop style. It now feels as if we are in our own little boutique hotel room in the mornings when we shower.’ 96 | SEPTEMBER 2021

Find a cheap piece of furniture to use – in a junk shop or on eBay – that you don’t mind cutting into. Before making any cuts, choose the basin and taps, and look carefully at the plumbing pipes to see exactly where the holes would be. If in doubt, consult a plumber. Mark out the holes in pen and ask at a DIY store for the best way to cut your chosen surface. You may need to hire equipment. If you’re going for a stone top, measure the size carefully and look for offcuts in stone and marble warehouses. You may also need them to cut out the hole for a professional finish. When painting the new unit, remember to use waterproof paint.

f you’ve fallen hard for steel-framed windows and doors, why not embrace the look on a more modest scale in your bathroom? Metal-framed shower screens look equally at home in modern and traditional schemes, so you can work the trend whatever your style.

PREPARE THE WHEELS Detach the bicycle wheels from the frame and remove and discard the tyres. Clean the wheels with soapy water to get rid of any dirt and grease. Leave to dry. PAINT THE WHEELS In a well-ventilated area, lay down newspaper or an old sheet to protect the floor. Lightly coat the wheels with spray paint and allow to dry. Apply a second coat. Once dry, turn over and spray the other side, making sure to coat the spokes. PAINT THE TIN CANS You’ll need three or four cans for each wheel. Paint in your chosen colour and allow to dry. Apply a second coat if needed. If desired, paint a coloured band around the base of each can using masking tape to achieve a straight edge. MAKE HOLES FOR HANGING Mark three equidistant points around the top edge of each can. Drill to create small holes, ready for hanging. PLANT UP YOUR CANS Fill the planters with soil and colourful geraniums. Alternatively, pick your favourite flowering pot plants. Make sure not to add soil above the drilled holes. ASSEMBLE YOUR CENTREPIECE Use twine to securely hang the painted bicycle wheels horizontally from a canopy or pergola. Thread long lengths of twine through the holes in each planter and tie in a secure knot at the top. Use S hooks to hang from each wheel.

Mix all the burger ingredients together in a bowl. Divide the mixture into 6 and shape into burgers. Heat the oven to 180C/Gas 4. Put the mushrooms on a baking tray, drizzle with a little soy sauce and cook for 25 mins. Meanwhile, fry the burgers on each side until browned,

then put them onto an oiled baking tray and place in the oven for the last 15 mins of the mushrooms’ cooking time. To serve, split the buns and toast the cut sides in a frying pan. Add a slice of tomato and a mushroom to each one, then top with a burger, mustard and lettuce.

Heat a griddle pan until smoking. Char the corn on all sides until cooked and slightly blackened. Remove from the heat and slice the corn from the cob with a sharp knife. Bring a large frying pan to a medium-high heat. Add the oil and cook the prawns for around 5 mins, until just pink. Add the spice mix and cook for a further 1 min. Cook the Mexican rice according to the pack instructions. Arrange the lettuce leaves, avocado and corn in bowls. Add the rice and the prawns and garnish with lime, chilli and coriander.

Put the sliced steaks in a dish, toss them in the marinade ingredients. In a wok, heat the oil. Fry the spring onions, mushrooms and sugar snap peas for 3 mins until just cooked. Set aside. Add the meat to the wok, reserve the leftover marinade. Cook for 2-3 mins, then remove and set aside with the veg. Turn the heat down, pour in the marinade and bring to a simmer for 2-3 mins. Cook the noodles to pack instructions. Add the noodles into the wok, with the beef and vegetables. Stir until everything is warmed through, adding a splash of hot water to loosen if necessary. Sprinkle over extra spring onion, chilli flakes and cashews.

TAKES 10 MINS, PLUS MARINATING SERVES 2 2 chicken breasts, roughly cubed ½tsp oregano ½tsp paprika 2 garlic cloves, sliced Zest and juice of 1 lemon 1 red pepper, sliced 1tbsp olive oil 250g Total 0% Yogurt, to serve 50g rocket 1 avocado, sliced 200g feta, crumbled ½ cucumber YOU WILL NEED Skewers, if wooden, submerge in water before using so they don’t burn

Mix the chicken in the oregano, paprika, garlic, and lemon zest and juice. Leave to marinate for 2 hrs, or overnight. Bring the chicken to room temperature. Roast or grill the pepper slices with a drizzle of oil plus seasoning, until lightly blackened. Set aside. Thread the chicken onto skewers and season. Place under a hot grill or cook on a hot griddle for 10 mins, turning throughout. Serve with the roasted pepper, yogurt, rocket, avocado, feta and cucumber.

Put 1tsp of the oil in a food processor with all the curry paste ingredients and whizz to a fine paste. Heat the remaining oil in a wok on a high heat and cook the paste until fragrant and bubbling. Turn up the heat and add the chicken, and cook for 5 mins, constantly moving around, then mix in the veg. After 2 mins, pour in the coconut milk and boil, then reduce the heat and simmer for 5-6 mins, until the vegetables are tender and the chicken is cooked through. Add fresh lime juice to taste, and top with toasted coconut, red chilli and Thai basil. Serve with jasmine rice.

Heat the oven to 200C/Gas 6. Put the leek and 2tbsp water in a bowl, cover with clingfilm and microwave for 5 mins to soften. Put the fish and milk in a pan, cover and simmer for 5 mins. Transfer the fish to an ovenproof dish with the leeks. Add the thickening granules and Tabasco to the milk, then heat and stir until the sauce thickens. Sprinkle a few basil leaves over the fish, pour over the sauce, then scatter over the breadcrumbs. Arrange the lemon slices on top and drizzle over the olive oil. Bake for 20 mins until pale golden. Finish with a few basil leaves, to serve.

TAKES 45 MINS SERVES 4 350g pack prepared butternut squash 3tsp rapeseed oil 1 vegetable stock cube 100g risotto rice 1 medium onion, sliced 100g spelt 1tbsp fresh sage, chopped 20g Parmesan, finely grated

Heat oven to 200C/Gas 6. Spread the butternut squash out on a baking tray and drizzle over the oil and season. Roast for 20 mins, stirring occasionally. Pour 600ml water into a pan, add the stock cube and bring to a boil. Next, add the rice and onion and simmer for 10 mins, stirring occasionally. Add the spelt and continue to cook for a further 12 mins, until the water has been absorbed and the rice and spelt are just tender. Add more water if required. Stir in the sage, Parmesan and seasoning. Divide the risotto between four warmed bowls and arrange the roasted squash on top.

CAULIFLOWER AND KALE CHEESE VEGGIE FAVE

Heat the oven to 180C/Gas 4. Bring a pan of salted water to a boil and add the cauliflower. Boil for 3 mins, add the kale and cook for 2 mins. In a pan, melt the butter; use a little to coat the dish. Press breadcrumbs against the base and sides. Arrange the cauliflower and kale on top. Add the onion and bay leaves to the pan with the remaining butter and cook over low heat until the onion is soft. Off the heat, whisk in the flour, a quarter of the milk and 1tsp sea salt. Add the rest of the milk and the mustard. Return to the heat and, when it starts bubbling, mix until thick, about 2 mins. Remove the bay leaves from the milk then add in the cheese. Pour the sauce over the cauliflower and kale. Cook in the oven for 20 mins, until the top is golden.
