THE SCENT OF GARDENIAS in someone’s front yard. The feel of skin on freshly washed linen sheets. The taste of my mum’s scones heaped with jam and cream. The sound of a Champagne cork popping! These are just a handful of my favourite sensory experiences. They’re what make life extra beautiful. I bring this up because July is the senses issue. We’re spending more time nurturing our environments and ourselves, so why not explore how our senses guide our style. Stripping back can wait ’til summer – this season, let’s treat ourselves to things that make us feel good: warmer bedding, a new winter perfume, a weekend getaway with an open fire and second servings of our favourite foods. This month, the team styled bedrooms that are *literally* what dreams are made of (p11), and put together pages of homewares inspired by three evocative fragrances (p99). There are few purchases that can uplift a room and stir the senses quite like art, so we’ve curated a selection of pieces to buy, from originals to affordable prints (p90). If you see something you like, check out more of the artist’s work online. And speaking of second servings, from p136 you’ll find pastry recipes perfect for Sundays spent baking. The homes featured in this edition, I hope, will also speak to your senses. Georgia Ezra’s Mediterranean-influenced family home (p54) is filled with so much textural warmth you just might be able to feel it as your fingertips flip the pages. If you find peace and calm surrounded by greenery, turn to the innovatively designed apartment blooming with plant life on p64. 1946 FROM HOLLYWOOD MOVIE SETS to luxury shopfronts and celebrity homes, Graham & Brown wallpapers have kept illustrious company during their 75-year existence. It’s a far cry from the brand’s humble start, post-World War II in a small factory in the northern England town of Blackburn. Harold Graham and Henry Brown, two passionate yet somewhat inexperienced best mates, had the idea of taking wallpaper from its traditional supporting role and making it the star of the room by way of design-led patterns and luxe materials. They couldn’t have timed it better. People were eager to liven up their homes following the harrowing years of war, and Graham & Brown’s finely crafted and original designs – from artisanal florals to damask flocks and dependable block colours – provided homeowners with an ideal avenue to express their passions on their walls. Sadly, five years into the partnership, Harold passed away in 1951, leaving Henry to build the business into the global leader of wallpaper designs it is today. He had help: Harold’s brother Herbert stepped in as director, and in the late ’50s, Henry’s son David and Harold’s son Roger joined the team. Together, they purchased additional factories, expanded into overseas markets and by the 1970s, Graham & Brown was producing millions of rolls of wallpaper each year. In 1983, they released the iconic Superfresco wallpaper, the first paintable wallpaper that was easy to hang. Coordinated homewares and paints in complementary shades followed, along with recent “paste the wall” technology, which has revolutionised a once painstaking application process. In celebration of its 75th anniversary, Graham & Brown has released a Through the Decades collection of limitededition wallpapers featuring nostalgic designs from the company vault. The business is also making impressive inroads to reduce its environmental impact. Wallpapers are printed on sustainably sourced papers using water-based inks and there are plans to switch to a renewable energy supplier by 2022. Now a third-generation, family-run business, it’s safe to assume Graham & Brown will be adorning our homes for many more years to come. R
In 1946, Harold Graham and Henry Brown embarked on an exciting venture that would see their wallpapers delivered across the UK, and later, the world. Their sons David Brown and Roger Graham came on board in the ’50s, shown here holding the first Graham & Brown wallpaper design, known as ‘The Original’.

The addition of their Superfresco wallpaper range was a gamechanger. These paintable designs – now stocked in Bunnings – give homeowners the freedom to customise the finish of their walls in myriad ways.

INTERIOR DESIGNERS LILY GOODWIN AND JOSH CAIN reimagined Victorian elegance through a contemporary lens when they created the interiors of No. 92. Housed within a Georgian building in Sydney’s Inner West, the wine bar and restaurant is dressed in subdued neutrals and inky blacks, with touches of rust and sage. Natural surfaces, such as smoked oak, blackbutt timber, stone, marmorino plaster and aniline leather, feature heavily throughout the space, with accents of brass and linen. “Our intention was that the palette be imbued with an understated and quiet beauty, rather than anything too loud or distracting,” says Lily, co-director at Pattern Studio. “Minimal, contemporary additions were included, intended to enhance – rather than compete with – the original detailing. We wanted to breathe new life into the space while respecting its history.” While each zone has unique character, the commissioned Angie Pai wall mural and the Grand Plaster Shell pendant light in the bar are particularly memorable. “I think people are drawn to the joyful and playful juxtaposition of these two elements,” Lily says. However, it’s the carefully curated selection of pendant lights and wall sconces with sculptural qualities sprinkled throughout No. 92 that demonstrate the true design vision. “Typically, we sourced vintage fittings deliberately from no one origin or era,” Lily explains. “We found Achille Castiglioni, Tommaso Barbi and Holmegaard fittings from the 1960s, vintage Euroluce and Angelucci from The Vault in Sydney, and contemporary fittings from Arturo Alvarez, supplied by Mobilia.” LED lighting is cleverly concealed within the joinery, suffusing a soft, atmospheric glow in the bar area. “We find that subtlety offers more of a sense of discovery – you might notice a new detail each time you visit,” Lily explains. Light it up Each wall sconce and pendant featured in No. 92 was carefully considered, Lily says. “Ensuring the lighting is suitably ambient is key. A wine bar or restaurant’s interior should dissolve happily into the background, allowing patrons to relax in a space that feels special – and a little theatrical.”

A new era In the formal living room of Suzie McAdam’s terrace house, different design decades and styles play off one another. Suzie had the mouldings added “as a simple, effective device” to frame the wall lights and artworks. Most pieces are vintage or antique, including the 1970s coffee table from Paris, the lilac chair in Pierre Frey fabric, the small French sofa in Fearless fabric by JP Demeyer and the Venetian glass chandeliers and sconces, which Suzie sourced from a vintage dealer in Milan. The jade-hued Onslow sofa by David Seyfried is covered in Pierre Frey ‘Dandy laine’ with ‘Bordure les fleurs du bengale’ trims. The Japanese screen is from Altfield and the artwork above the sofa is by Angela Chrusciaki Blehm. A

SUZIE MCADAM’S HOME is like a mixed box of Ladurée macarons. Decorated in shades of pistachio, rose, vanilla and violet, the Victorian terrace has the visual temptation of a sweet pastry and is every bit as decadent as it looks. An interior designer, Suzie delighted in the opportunity to indulge her personal aesthetic and design her own home – one she spent years looking for with her husband Barry Byrne. When they found this double-fronted 19th century home in Dublin, Suzie says they both sensed its “amazing potential” and lived there before renovating to get a feel for the floor plan and natural light. “What I loved about doing up my house is that I could be true to my style, experiment and take risks,” Suzie says. “I’m lucky that Barry, who has masculine tastes, allowed me to stay true to my vision.” MODERN HISTORY The style of Suzie’s home could be described as a French Baroque chateau moonlighting as a museum of modern art. This fabulous fusion begins with the architecture – Suzie collaborated with her friend, local architect Courtney McDonnell, to create better access to beautiful views and simplify the layout by moving the four bedrooms downstairs and the kitchen, dining and living spaces upstairs. “Designing functional spaces is an important part of what I do,” maintains Suzie, who studied architecture before realising interior design was her calling, “but I love bringing soul to interiors with unusual antiques, fabrics and art.” While the new spaces have large picture windows and a modern feel, they retained the old cornices and fireplaces. Suzie says it was important to distinguish between the contemporary and Victorian elements. Even more crucial was that she connected with every element – “it’s about surrounding yourself with things you love.” TASTE SENSATION Entering the dining room feels like Alice in Wonderland stumbling upon a decadent tea party replete with vintage decor, Venini glass lighting, whimsical wallpaper and eccentric guests – two dog-like sculptures by Melbourne artist Troy Emery. The master bedroom is a Francophile’s fantasy in floor-to-ceiling toile fabric, Pierre Frey silks, Maison Dada furniture and a vintage pink glass chandelier. And during last year’s lockdown, Suzie says the formal living room became a space for enjoying small rituals – “on Fridays we make cocktails and light the fire”. Indeed, even this formal space has a frivolous side. Suzie admits the antique French sofa in surreal JP Demeyer fabric isn’t too comfortable, “but it’s important to have something that inspires you, even if it’s not practical!” R

Dining companions A pair of Troy Emery sculptures add to the dining room’s fanciful atmosphere. The walnut table is a French Art Deco piece from Pamono, the Venini glass pendant is vintage and the dreamy wallpaper is from Watts of Westminster. Colour cocktail The dining room drinks cabinet is painted in a lush pairing of Zoffany ‘Faded Rose’ and ‘Serpentine’. On the top shelf is a print by Luke Edward Hall. Make sure the item is worth the money you will spend re-covering it. If it’s poorly made, damaged or you just don’t like the design and shape, brand new upholstery won’t fix it!

Choose the right fabric. Highly durable upholstery-grade fabrics are ideal for sofas and dining chairs. Lighter fabrics are fine for purely decorative pieces.

When consulting an upholsterer, bring visual inspo and ask to take home swatches. Research the costs, but do keep in mind quality upholstery is worth the expense.

Get creative! You can add, lengthen or remove the skirt of a chair or sofa, or add details such as piping in a contrast colour to enhance the furniture’s lines.

She also had the ceiling removed to reveal the home’s original pitched roof, which opens up the space. FROM LEFT Flight of fancy While Barry didn’t agree to using pink onyx in the kitchen, Suzie got her way in the main bathroom, which is clad in marble from Miller Brothers and Phillip Jeffries ‘Flight’ wallpaper. The Calacatta marble bathtub from Hurlingham had been on Suzie’s wishlist. The lion-shaped tapware is from Bespoke Taps, the mirrors are Gubi, the wall sconces are by Kelly Wearstler, the cabinet handles are from Anthropology and the vintage pendant is by J.T. Kalmar. A fashionable life Suzie seized the chance to design a dressing area for herself. The joinery is painted in Zoffany ‘Faded Rose’ and the drapes are made from Zelina fabric in Pétale by Pierre Frey. History meets escapism Draped in Electric Dreams kimono-inspired jacquard by Dedar, with Samuel & Sons fringe and sage green Augustine silk by Pierre Frey, this bedroom has all the fantasy and frou-frou of Sofia Coppola’s film Marie Antoinette.

On the wall Homeowner Georgia Ezra created beautiful textured walls using a Bauwerk limewash paint in Birch. “We spent a long time testing colours throughout the house to get the walls and colour tones right,” she says. Unglazed clay floor tiles from Tiles of Ezra add to the home’s tonal approach. Softly does it Georgia took a sustainable approach during the renovation, using a recycled oak handmade island in the kitchen (opposite) and reclaimed timber sleepers for the beams. NAV cabinetry features a grass cloth insert by Style Revolutionary. “I love the kitchen in the morning,” Georgia says. “The sun filters in and the colours blend into one another.” A

INTERIOR ARCHITECT AND BUILDING DUO Georgia and Richard Ezra were on a mission the first time they viewed their 1930s Melbourne property in 2019. With the same goal, but completely different design considerations, they divided and conquered when sizing up the property as a potential renovation project. “Richard and I are very lucky in our capabilities to confidently and seamlessly renovate,” says Georgia. “When we visit properties, you’ll find me walking through the spaces with a floor plan in hand, spinning with ideas of what I could do internally, and Richie will be scanning the exterior looking for structural issues – we literally go in separate directions.” The couple were first attracted to the property because of its Spanish mission-style facade and the “amazing” condition the property was in, thanks to its previous owners. Having said that, there were spatial issues to tackle. ALL CHANGE With a great structure to play with, Georgia and Richard began demolition works in January 2019 (when Georgia was heavily pregnant with daughter Halle) and they moved into the home in May. “I gutted the entire home and reconfigured almost the entire floor plan. That meant removing walls, opening up walls, creating new rooms that didn’t exist, putting in skylights, making two rooms from one and opening up windows and doors in the external facade walls. It was a complete revamp,” says Georgia, who managed to do most of this with a toddler and newborn baby along for the ride. “It was a crazy time of our lives.” CLUB MED Georgia’s vision was to bring a Mediterranean twist to the home. “You will find features of Spain, the South of France, Morocco and also India incorporated into our abode,” says Georgia, who has carefully curated unique and second-hand finds that she’s found online. “It’s one of my all-time favourite things to do,” she says. “My home is full of unique personality. I love to tell a story through my decorative items, bringing in history, moments and memories from the past.” R Holiday vibes Outside, Mediterranean style continues with Blanca Free Form stone cladding from Tiles of Ezra, alongside a pallet chair finished with an At Home With Georgia Ezra cushion. Double vision Partners in life and business, Stefania Agostini and Luca Mostarda called on their combined backgrounds in architecture and furniture design to create a homely haven in the middle of Madrid. Their design philosophies and creative by-products are evident throughout, including these two artworks depicting the Matitone skyscraper in Genoa, which the couple drew. Grand designs In the living room (opposite), two iconic pieces sit side by side: an Isamu Noguchi Akari ‘UF3-Q’ rice paper lamp for Vitra and a reproduction of Gerrit Rietveld’s ‘Red and Blue’ armchair from Cassina. A
Room of wonders Form and function are celebrated in equal measures. The Largo sofa by Piero Lissoni for Kartell ticks the comfort box, while an orange Kruk stool by Doorzon and AMArchitectrue ‘Stanlio’ table are a study in materiality. YOU’D NEVER GUESS THAT THIS light, bright and green home was once an office, with a dark corridor leading to various workspaces overlooking one of the busiest streets in Milan. And therein lies the genius of Stefania Agostini and Luca Mostarda, founders of AMArchitectrue studio, who transformed the space into a living, breathing – literally – home for their family. Pivotal to the design is the internal terrace/greenhouse, separated from the main living areas by folding French doors. Its bow window is filled with greenery and acts as both a filter for outside pollution and a barrier against external traffic noise. “A love for nature and sustainability are part of our generation,” says Stefania. “Being parents of two girls made us even more aware of these issues.” PURE MAGIC The innovative design features don’t stop there. Another central element in the large open-plan space, the kitchen is slightly raised to give it more prominence. “It’s nice to cook by observing what is happening around you from above,” Stefania says. “We covered it with bronze mirrors to make it more precious; we love reflective surfaces, because they create special lighting effects”. The once-gloomy corridor has been opened up via a series of four wooden arches – two rounded and two pointed – which lead to the couple’s daughters’ shared bedroom. It creates a somewhat theatrical element, reminiscent of a fairy tale, especially with the addition of curtains to close off the space. “For now, the bedroom doesn’t need doors,” explains Luca, “but if one day Agnese and Matilde want to have their own rooms, the arches will become the elements that will distinguish them.” TALENT SHOW Stefania and Luca have given special attention to their chosen materials: wood is left as natural as possible (no paint or lacquer) and marble is celebrated for all its virtues in a book-filled coffee table and bench seat at the entrance. Prototypes of their furniture designs are scattered here and there, and their paintings and drawings deck the walls. As such, the home is an apt representation of the couple and all they stand for, with creativity at its heart and unexpected moments at every turn. R

Reduce external noise with double-glazed windows. Rugs and floor underlays will help absorb sound, while music or water features can mask it.

Use your decor to instil a sense of calm and comfort. Stefania and Luca opted to surround themselves with natural materials, soothing colours and books galore!

Fill your home with greenery. Potted plants help filter the air and do wonders for our health. They also give us a sense of peace by providing a link to the outdoors. Garden variety A host of evergreen plants, including philodendrons, rubber plants, aloe vera, fiddle leaf figs and areca palms, permeate the home with colour and life. The couple often use this outdoor terrace to work and paint, surrounded by the verdant greenery. On reflection Blue-framed doors in the kitchen pantry (opposite) mirror those leading to the terrace, while the mirrors bounce light around the space. The low oval Charles Eames table for Vitra makes the perfect play and craft surface for the two young girls. Make an entrance Large canvases painted by Luca and Stefania hang in the corridor and entry, where the Bahia bench made from Azul Bahia granite and mirrored steel makes a striking first impression. Do not disturb Curtains close off the girls’ bedroom when privacy is needed, as expertly demonstrated by three-year-old Agnese. Chop shop Lauren’s background gave her the confidence to modify furniture as she saw fit. “The height of this Harpers Project coffee table was wrong for the space, so Lauren said, ‘Let’s chop off the legs,’ and just like that, we did!” recalls stylist Simone Haag. The table stands on a Halcyon Lake rug, one of several in the home. School of rock Lauren wasn’t afraid to use premium stone and stone-based materials in zones the kids would frequent, selecting a large block of Tundra Grey marble for this shelf and bench in the living room (opposite). The two terrazzo coffee tables were designed and made by Lauren’s firm, Built by Wilson.

Clean slate “Wipe-ability” was a priority in the kitchen, so Lauren made extensive use of Intarivo Border tiles from Academy Tiles + Surfaces. The tiled island features Tundra Grey marble skirting and a Corian countertop. Simone sourced the vintage bar stools from Italy. Lauren didn’t adhere to any particular school of interior design, and the blend of styles and eras creates depth and nuance. Here, a custom-made HK Living sofa faces a HK Living artwork inspired by Brutalism. On the marble shelf, a vintage lamp is topped with a shade by Lizzy Cybulski in Kelly Wearstler fabric. A

homes “I WAS OUT TO PROVE that a family house needn’t be boring or unattractive,” says Lauren Wilson of her latest project, a four-bedroom residence in Geelong’s pre-eminent suburb, Newtown. In some ways, the house serves as a sequel to the home Lauren constructed for her partner and their four children a few years earlier: like before, she enlisted Ben Robertson from architectural firm Tecture to design it and a posse of Geelong’s finest craftspeople to construct it. This time, though, she was determined to let creativity lead her. “Yes, it needed to be functional,” she says. “But I also wanted it to be beautiful.” LEADING LIGHT Lauren wanted to create a light-filled haven, with floor-to-ceiling windows and skylights, and Ben incorporated internal courtyards to connect all the spaces. To amplify the light, Lauren devised a colour palette of airy neutrals. “I’m of the opinion that you shouldn’t wait until your kids have grown up to buy that white couch or install a marble island,” she explains. “Stains are not the end of the world.” She is, however, an advocate of honest, hard-wearing materials including wood, stone and wool. “My key words were ‘robust’ and ‘timeless’ throughout the project,” she notes. SURFACE PRO After considering the surfaces that families use daily, such as kitchen countertops and bathroom vanities, Lauren settled on slabs of tough-yet-glossy white Corian for the kitchen island and the kids’ bathrooms. “First and foremost, Corian looks beautiful,” she says. “But it’s also so easy to clean, and you can buff scratches out of it.” For the living room, she installed a massive block of marble as a shelf/bench. “My view is, yes, it gets marked over time, but that wear and tear is beautiful,” she says. ONE FOR ALL Lauren worked with stylists Simone Haag and Sharon Robinson to flesh out the home’s identity. Almost all the furniture incorporates curves, softening the atmosphere, and the liberal use of indoor plants creates a dialogue with the leafy garden. The trio used statement pieces and contrasting tones to subtly differentiate the rooms, adding pops of warm colour in the kids’ areas and cool blues and greens in the adults’ rooms. The result, Lauren says, is “a house where everyone feels at home”. R

If you’re keen on a sophisticated white sofa, consider one with a linen slipcover. The creases are part of the charm and you can wash it if the kids make a mess.

Worried about floorboards or painted skirtings getting scuffed? Leave the natural wood untreated – it can still look beautiful with a bit of wear.

If you go for a ‘mature’ neutral colour palette, counter it with varied textures, such as velvet and exposed brick that kids can have fun touching and feeling.

homes Walk this way The French oak floorboards, from Made by Storey, are smoked and wire-brushed to retain a natural look, then finished with a matt lacquer that minimises the appearance of scratches. The art in the kitchen is a digital collage by French artist Julien Pacaud from Boom Gallery. Wonder wood Lauren chose American white oak for much of the joinery, including the built-in bench and coat rack in the entrance (opposite), which she treated with a custom stain. American white oak is popular in residential projects because it’s strong but also has low stiffness, meaning it can bend without becoming deformed. A

The pair agreed on olive-green Pozieres paint by Dulux for the walls, a Hudson sofa from Trit House and a fun check Halcyon Lake rug. The painting is by Little Nicki.

Taking a tone Lauren used Natural White paint by Dulux throughout, and many of the fixtures and fittings – from baths to pendant lights – are pure white. The multitude of material textures and the clever deployment of warm highlights mean the home doesn’t come across as sterile. A

Go with the flow With the removal of a wall, what used to be three rooms is now one open, light-filled space in this cosy guesthouse. Owner and interior designer Leanne Ford (pictured opposite) maintained the three zones with her careful furniture placement. Central to the space, a vintage table and storage ottoman provide somewhere to sit, read, write or observe the goings-on in the adjoining kitchen. Breathe easy In the living area (opposite), the original dark timber ceilings were painted white. “We stopped at one coat, so the wood tones and grains could seep through, which gives it that warm effect,” Leanne explains. Textural layers in neutral hues and greenery from the garden make the space feel all the more welcoming.

LIKE SO MANY OTHERS WHO HAD THEIR LIVES dramatically changed by the pandemic, interior designer Leanne Ford found that her priorities underwent a sudden and comprehensive shift. With plane travel dubious and being closer to family more important than ever, the US designer and her husband Erik packed up their home in Rustic Canyon, LA, and relocated with their two-year-old daughter Ever to a grand old estate near Leanne’s childhood home in Pittsburgh, Pennsylvania. Perhaps the best thing to come from the move was the carriage house included in the sale. “It reminded me of a perfectly worn-down home in the Paris countryside,” Leanne says. “And because we can’t go to Paris right now, I thought, ‘Why not create that feeling here, where the whole family can be together?’” And that’s just what she did. Toeing the line between preserving the building’s bones while giving it a much-needed refresh, she started with a neutral colour base, painting the dark timber ceilings white to instantly calm and brighten the space. She layered each room with earthy tones, vintage furniture finds and lots of texture, with the aim of creating a relaxing haven where guests felt compelled to settle in for a while. Currently, Erik’s sister “Nauntie Ali” is enjoying the calming, comforting space while helping take care of Ever. For those keen to have the same “holiday at home” experience, Leanne has this insightful piece of advice: “Don’t aim for perfection, aim for interesting!” @reallivingmag

“To me, homes are like happiness – better when shared” FROM LEFT Wonder walls Downstairs, the walls have been given a slightly unconventional treatment. “One day I took Erik’s leftover coffee grinds over to the cottage and just rubbed them on the walls,” Leanne tells. “When I came back the next day, it had set in rather intensely, but in the end it turned out beautifully!” Throughout, empty pockets of space have been cleverly filled with seating, display cabinets and hanging storage. That’s a wrap The Smeg cooker was brand new, but its olive green colour didn’t work with Leanne’s “girl’s weekend” vision. Her solution? Wrap it in a custom terracotta-coloured vinyl. Rafters removed from the upstairs bedroom were put to use as shelving for the mismatched country-style tableware. Twist of lemon Each room has a distinct colour theme – for the yellow bathroom, Leanne added a concrete column sink and a fun feature tile pattern for a modern twist. “Don’t be afraid to layer several tones of one colour in a space. Repeating colour can simplify and unite a room,” she says. Here to stay “The first step to adding character and warmth isn’t about adding anything at all – it’s about keeping as much soul as you can,” Leanne tells. For the main bedroom, she retained the floral wallpaper, enhancing it with vintage lighting and furniture, and added a touch of decadence with plump pillows, a chunky quilt and silken throw. A

SUMPTUOUS, ELEGANT AND UNDENIABLY COMFORTABLE, carpet has the power to completely change the look, feel and acoustics of a room. It’s been providing warmth underfoot in our bedrooms and giving us a cushy place to lounge in living areas for close to a century, and in recent times, carpet has enjoyed somewhat of a resurgence. “Throughout Covid, our homes became our sanctuaries, with a focus on indulgent fabrics and textures that soothed the senses,” explains Nicole Canty, product manager for Choices Flooring. “The trend continues as we seek to create a calming haven away from the high-stress, high-tech world we live in.” Nicole notes that homeowners are gravitating towards warm, earthy tones and sustainable fabrics made from natural fibres like jute, wool and hemp. “We’re moving away from the charcoals and shiny metallics that we’ve seen so much of, to thicker carpets and more calming, natural tones, including terracotta,” she tells. There’s also good news for carpet maintenance and longevity. “A new renewably sourced fibre called triexta features built-in stain protection that never wears off, making it easier to clean carpets with just water,” Nicole says. “And another new fibre, Molecular Enhanced Polyester (MEP), is honed at the molecular level to make it more resistant to soiling and staining without compromising on the super-soft feel.” Sounds like a winning combination to us! BOASTING ALL OF THE SAME BENEFITS AS CARPET, rugs have one notable extra feature: their versatility. STOCKPILE CONTENT Chances are you’re probably pretty busy working your main job as it is. One of the main reasons side hustles fail is the inability to keep up with content. Let’s say you want to become a blogger and deliver weekly or bi-weekly content. I suggest writing 20 ready-to-go pieces so that if things ramp up at work, you don’t have to stress about punching out a blog post. The same goes for advertising. If you want to do one social media post every three days for your hand-sewn baby-clothing business, plan and schedule that content! It’s also a good way to test out if you actually have time for your said side hustle.

OUTSOURCE Ever spent 10 hours on something that you know someone else could have done in one? Don’t be afraid to outsource work that will allow you to generate revenue in a different way.

STOP UNDERVALUING YOURSELF! Putting a value on your work is difficult, but incredibly important. This is particularly important for writers, designers and illustrators who have trouble understanding their worth. Believe it or not, I know many freelancers who’ve closed more deals when they raised their prices! Look at what your expenses are, from software to hardware to time. What amount per hour makes you feel comfortable? If your current customers aren’t willing to pay it, market yourself to a different group.

SEPARATE YOUR FINANCES It will make your life much less muddy if you keep your personal and professional finances separate. This means having an account that is purely for business expenses like order-taking, subscriptions, expenses and saving money for tax. Yes, money earned from a side hustle is considered income, so make sure you’re putting money aside for tax. SET YOURSELF UP TO SCALE • Register your business with the ATO. • If you anticipate earning over $75,000 per year, you need to register for GST. • Research how much money you need to be putting aside for tax. • Pay yourself superannuation from the start (if you can). Remember, super contributions as a sole trader/contractor/freelancer are also tax deductible! • Invest in software like XERO or MYOB that makes accounting and customer communication easier. • Research what insurance you may need. It is particularly important if you’re doing a job that requires you to enter someone’s home. • Factor in fuel, wear on your car, cost of software and so on, so you can price your work appropriately and also claim the necessary items at tax time. • Make assets that legitimise your offering, e.g. a logo, website, booking forms, customer reviews and newsletters. When you’re just starting out, there are plenty of affordable options to get you going.
HOT TIP If you’re feeling unsure about how best to approach your side hustle, find someone who’s already doing it and ask them! This is as easy as a friendly call or email inviting them to coffee. On a behavioural psychology level, people love talking about themselves. If they’re a good person, they won’t see you as competition. If they say no, they could simply be too busy. Don’t take it personally. It might also be a referral down the line!

A FAMILY-FRIENDLY RAINFOREST WALK with a lyrebird soundtrack… Minnamurra Rainforest is home to the remnants of an ancient rainforest ecosystem. Life thrives in this lush, protected environment, which is a sobering reminder of how the Illawarra region used to be before European colonisation. In the first half of the 19th century, the area’s red cedar trees were extensively felled for their prized timber, leading to their current scarcity. Today’s cedars stand tall, surrounded by boulders, waterways and bird’s-nest ferns. On a hot day, the shade from the canopy and the moisture from the streams keep the air cool. Lyrebirds can be heard, but are much harder to see, and water dragons and swamp wallabies also call the national park home. The site offers two trails: the Rainforest Loop Walk and Falls Walk. The Loop Walk is the shorter track, a well-maintained, elevated path (perfect for prams) that passes over the Minnamurra Rivulet. This track eventually connects to the longer and steeper Falls Walk, which guides you beneath the spectacular Minnamurra Falls. After heavy rain, these falls are particularly phenomenal. With ample facilities at the site, and plenty of information on hand from the expert staff in the Rainforest Centre, this engaging and educational trip makes a great excursion for families. A
Chasing waterfalls You’ll glimpse moss-covered rocks, waterfalls and maybe even a lyrebird as you make your way along the elevated tracks of the Falls Walk.

A NATURAL LAP POOL surrounded by birdsong and towering eucalypts... Located within the Royal National Park, this trip is accessible via Heathcote train station. From the eastern side of the station, follow Wilson Parade past the State Emergency Services building and take the signposted track that veers into the bush. Waratahs, native wildflowers and thick shrubs populate the area surrounding the track that leads to the pool. The cacophony of birdsong – parrots, finches and cockatoos all calling simultaneously – adds to the wildness of the bushland. As the trail approaches the water, the vegetation thins out, exposing a large waterhole surrounded by rock platforms – some great for shade. The 20-metre-long pool is enclosed by a eucalyptus forest. Doing laps of the clear green water is a perfect way to recharge after the walk down. Kangaroo Creek can be explored upstream or downstream, with secret picnic spots waiting to be discovered. While spending a whole day at the Karloo Pools could easily suffice, if you’re craving more of an adventure, continue along the track for another hour, taking you to Uloola Falls. Make your way down the faint animal trail to the base of these impressive cascades for an extra challenge. Once you’ve had your fill of picturesque swimming holes, dry off and make your way back to Heathcote Station. (It’s possible to walk in the other direction from Uloola Falls to Waterfall Station, making the trip a total of 11 kilometres.) A
Cool off Accessed by a moderately challenging track through thick heathland, Karloo Pool is a delightful swimming and picnic spot well worth the trek.

THE MAGICAL PROPERTIES of Fairy Bower and Coxs Cave were an early attraction of Mount Victoria’s tourism industry, which opened up in the latter half of the 19th century after the railway line was completed. Mostly known for its semi-rainforest vegetation, Fairy Bower features lush ferns, moss-covered stones and a handful of large caves. It’s a perfect place for ‘forest bathing’. While some parts of the track are quite steep, this is overall a reasonably easy jaunt – and it is also dog friendly. At 1094 metres, Mount Piddington is the highest lookout in the Blue Mountains. Commencing your walk from the picnic area, you quickly reach an intersection going to either Fairy Bower or Coxs Cave – this is the start of the loop. Head left on Coxs Cave Circuit and begin the descent down a series of stone steps to the ‘grotto’, a stone formation plastered with moss and ferns. Pearly dewdrops magically suspend themselves from the tree branches and aerial roots arch and weave themselves over the path to create an ethereal tunnel. The gentle sound of the creek amplifies this already enchanting experience. Keep venturing down the track and you will soon arrive at another intersection. Turning left takes you to Fairy Bower picnic area, ideal for resting; otherwise continue on until you arrive at a steel ladder that leads to Coxs Cave. Ascend the ladder – watch your head on the rock above – and then scramble up the small hill into Coxs Cave, an impressive dome-shaped natural structure with great views of the Kanimbla Valley. After making your way back to the track, start the ascent to the first intersection, which marks the end of the loop. R

lard shortcrust pastry Makes 1.3kg Prep time 15 mins, plus resting time
This is a traditional Cornish pasty pastry. My Gran used to make this lard pastry every week for our pasties or pasty tarts, so it’s an incredibly well-used and proven recipe. It’s also wonderfully easy to work with; if it tears, you can simply stretch a little excess over the rip and carry on. The lard and butter provide lots of flavour, making it a good option for almost any savoury bake. I have added a wholemeal variation because I love the flavour of whole grains. Another traditional variation is to use beef dripping instead of lard, resulting in a different flavour and crisper finish. You can of course also just use all butter in the recipe. 700g plain (all purpose) flour 1 tsp fine salt 175g unsalted butter, chilled and cut into 1cm cubes 175g lard, chilled and cut into 1cm cubes 270g chilled water
WHOLEMEAL VARIATION 350g wholemeal flour 350g plain (all purpose) flour 1 tsp fine salt 175g unsalted butter, chilled and cut into 1cm cubes 175g lard, chilled and cut into 1cm cubes 280g chilled water
Put the flour and salt in a mound on your kitchen bench and scatter the chilled butter and lard cubes over the top. Use a rolling pin to roll the fats into the flour, gathering the flour back into the middle as you go with a dough scraper or spatula. Keep rolling until the mixture has a crumbly texture, with shards of butter the size of rolled oats still visible. 2 Make a well in the middle and add the chilled water. Continue using the dough scraper to fold the flour over the water and gently work it in with your hands, working from the outside in, until the dough just comes together. The dough should be firm and not sticky to the touch. 3 Roll out or press the dough into a rectangle 2-3cm thick (exact dimensions are not important here). Fold one-third of the dough into the middle, then the other third over the top of that, as if folding a letter. Rotate the dough 90 degrees and roll it out again into a rectangle 2-3cm thick, then repeat the letter fold. Don’t worry about making these folds perfectly neat – this is just to finish bringing the dough together and layering the butter, which results in a lovely flakiness. 4 Fold the dough over itself a few times to create rough layers. Shape it into a flat block, then wrap and put it in the fridge to rest for at least 2 hours, or preferably overnight, before using. The pastry will keep for 3-4 days in the fridge, or up to 3 months in the freezer. 1
equipment I find the best equipment for making pastry is my hands, a good rolling pin and my kitchen benchtop. A lot of pastry can be made with just these things, but if you’re going to invest in baking equipment, there are some things to consider. I love my traditional, or ‘roller’ style, rolling pin. It has handles at each end, attached to a central dowel, for the roller to rotate around. I find these better for pastry than the rod-style rolling pins, because they require less grunt and don’t work the dough as much. An electric stand mixer can speed up the job and make light work if you have one. But if you don’t, you can still successfully make all of the pastries in this book by hand. A dough scraper and a pastry brush are inexpensive but invaluable tools, always in use and by your side. A measuring tape or ruler will ensure you get the dimensions right when rolling out your pastry. Dimensions given are aimed at
maximising the recipes and minimising pastry wastage. A portable digital timer is essential. They are accurate, easy to use and if you leave the kitchen, you can take it with you. I recommend using digital scales that measure to the gram. They are inexpensive and also save you having to wash up measuring spoons and cups countless times as you go. In terms of the ‘right’ pie dishes, use what you already have. It might mean that you get more or fewer pies out of a recipe than me, but what you’re really aiming for is flavour and texture. The same goes for pastry cutters. At home I find myself using plates, mixing bowls or lids of various sizes as templates to cut out my pastry. Size really doesn’t matter! All recipes have been tested in a domestic electric fan-forced oven. However, ovens tend to have their own personalities, so times and temperatures may vary. Get to know your oven and use your baking intuition. A

gran’s traditional cornish pasty tarts Makes 2 (each serves 4-6) Prep time 25 mins, plus resting time Cooking time 80 minutes
Gran’s pasty tart was something I looked forward to every Friday evening when I was young. It’s basically a traditional Cornish pasty but in tart form. Simply take an old enamel deep pie dish, line it with lard pastry, fill and top your tart and then bake it. Gran always called it a pasty tart, but I gather from asking around other Cornish folk that most call it a pasty pie. It’s just swede, potato, onion and really good skirt steak. Ansum! 1 quantity lard wholemeal shortcrust pastry (see p139) 400g onions 280g swedes 280g potatoes
Place the pastry on a lightly floured kitchen bench and divide it into two equal pieces. Roll out into two rectangles roughly measuring 30cm x 6cm. Roll one 2mm thick and the other 3mm thick, then cut 2 x 30cm discs from each. The thinner pastry is for the tart bases and the thicker one is for the tops. 2 Put the pastry discs on a tray, layering a piece of baking paper between each one. Add the two pastry tops to the tray first, then the two bases last. Put in the fridge to rest for 20 minutes. 3 Grease 2 x 26cm round, 5cm deep pie dishes. Gently lay the pastry bases over the dishes, then use your thumb to firmly press the pastry into the corners. Rest again in the fridge while you prepare the filling. 4 Peel and chop the onions, swedes and potatoes into randomly shaped pieces, roughly 2cm in size. Cut the beef into 1cm dice. 5 Combine the vegetables and beef in a large bowl. Add the salt and pepper and mix well. Divide the mixture between the two pie dishes. Lightly brush the rims with egg wash, then lay the pastry tops over the filling so the edges meet. Press the edges together to seal, pushing out any air as you do this. Crimp or pinch around the edge with your thumb and forefinger, using both hands. Brush all over the top with egg wash, then use a knife to poke a couple of holes in the top to allow the steam to vent while baking. 6 Return the pasty tarts to the fridge to rest while you preheat the oven to 190˚C. If you only want to bake one tart, the other will keep in the fridge for 2-3 days, or freeze it for up to 3 months. 7 Bake for 10 minutes, then reduce the oven to 160˚C. Bake for a further 60-70 minutes, turning the tarts halfway through, until the pastry turns a lovely golden brown. Transfer to a wire rack to rest for at least 10 minutes before eating. A 1
egg wash Whisk together 1 whole free range egg, 1 egg yolk, 20g full cream milk and a pinch of salt. It will keep, refrigerated, in a sealed container for a few days. The salt helps to denature the proteins in the eggs so it’s easier to brush the pastry. Egg wash can also be used to fill holes or cracks in a pastry tart shell. Simply brush the surface of the shell in the last few minutes of blind baking to ensure any small holes are sealed. If the hole is too big, use a little piece of raw dough and use the egg wash like a cement to plug that hole, then blind bake for a further 5 minutes to seal.

SCONES 220g unsalted butter, chilled 500g plain flour 2 tsp baking powder ½ tsp bicarb soda 2 tsp fine salt ½ tsp ground ginger ¼ tsp ground cloves 1 tsp ground cinnamon ½ tsp freshly grated nutmeg 220g coarsely grated parmesan, plus 50g finely grated, for topping 230g pumpkin puree (see below) 2 medium eggs, at room temperature 50g full cream milk or buttermilk, plus extra, for brushing PUMPKIN PUREE 1 small pumpkin 1 tbsp olive oil Fine salt and freshly ground black pepper

pumpkin scones Makes 8 Prep time 25 mins, plus resting time Cooking time 2 hours These scones were inspired by Thanksgiving pumpkin pie. With the natural sweetness from the pumpkin, warming spices and the sharp bite of the parmesan to balance all the flavours, they make for an excellent afternoon treat in the autumn.
PUMPKIN PUREE Preheat the oven to 190˚C. Cut the pumpkin in half and remove the seeds. Put in a roasting pan, drizzle with the olive oil and season with salt and pepper. Cover with aluminium foil and bake for 1 hour 45 minutes, or until tender. Scoop out the flesh and blitz in a food processor to form a smooth puree. 2 Cut the chilled butter into 1cm cubes and return it to the fridge to get it really cold while you weigh up the rest of your ingredients. 3 Line a large baking tray with baking paper. Put the flour, baking powder, bicarb soda, salt and spices in a large bowl and whisk to combine, removing any large lumps. Tip the dry ingredients onto the kitchen bench and scatter over the chilled butter cubes. Use a rolling pin to break the butter into the flour, gathering in the flour with a dough scraper or spatula as you roll, until the mixture is crumbly with shards of butter the size of rolled oats still visible. These small pieces of butter are important for the structure and texture of the baked scone, so be careful not to over mix at this stage. Add the coarsely grated parmesan and toss to combine. 4 Place the pumpkin puree, eggs and milk in a bowl and lightly whisk to combine. Make a well in the centre of the dry ingredients and pour the wet mixture into it. Toss the flour mixture over the liquid and use your hands to gently bring everything together – this may take a minute or two. Use a dough scraper to gather up any loose flour or liquid as you go. Once it is a cohesive mass, roll it out a little and fold over itself two to three times to help create layers. 5 Roll the dough into a slab roughly measuring 18cm x 28cm and 3cm thick. Use an 8cm round cutter to cut out six scones. Gather up the trimmings and push them together then cut out another scone or two. Place the scones, evenly spaced, on the lined tray. Cover loosely with a tea towel and refrigerate for a couple of hours or freeze for 30 minutes to set the butter back into the dough. At this stage, you can wrap and freeze the scones for up to 1 month. 6 Preheat the oven to 190˚C. Lightly brush the tops with milk, then sprinkle with the finely grated parmesan. Put the tray on the top oven shelf and bake for 10 minutes, then turn the oven down to 180˚C. Bake for a further 10-12 minutes, turning the tray halfway through, until golden on top. Transfer to a wire rack to cool for a few minutes, then eat on the same day. The flavour of the spices will mellow beautifully as the scones cool. 1

Bench warmer Local cypress timber was used to create the furniture throughout the three Ross Farm dwellings. “There’s a common design language that flows through them, which is both raw through the use of natural materials and refined with a utilitarian and minimal aesthetic,” says interior designer Andrea Moore, who worked on this project with her family. In the Barn accommodation, light fixtures are made from brass pipes, walls are clad in OSB engineered wood and curtains soften the scheme. Home country The Barn (opposite) retains its original footprint, but had to be rebuilt to meet regulations. “We lifted the roof to allow for a mezzanine and to capture the northern light and views of the hills,” Andrea explains. Pure palette The Barn’s material palette was inspired by the nearby Wilsons Promontory National Park, which is known for its unique granite rock formations and the ever-changing colours of its landscape. In the kitchen, pink granite is paired with brass. This pink granite also makes a floor-to-ceiling statement in the bathroom, which was designed to meet accessibility standards. All of the property’s kitchens are equipped with everything guests need to cook up a feast, and come with pantry and breakfast staples as well as a coffee machine. Light bulb moment “The way the morning light streams into the space through the glazed facade is really lovely,” Andrea says of the Barn’s light and lofty aesthetic. The furniture, lamps (opposite) and even the door hardware were custom-made where possible and store-bought materials were often cleverly repurposed. A

ON AN OLD DAIRY FARM where coastal bushland meets meandering waterways and magical fern gullies, you’ll find Ross Farm. Twenty years ago, tourists would have passed right by the property, its three dilapidated dwellings buckling under the weight of age and abandonment. But today, visitors come to this pastoral parcel of land to gather with friends and family and escape the everyday. The restoration of Ross Farm was a family affair – it was owner Lindsay Moore’s idea to convert the disused buildings into guest accommodation, and it was his daughter Andrea’s interior design background that turned his epiphany into a project. “It was a labour of love and indeed a larger project than first realised,” Andrea recalls. Naturally, Andrea was responsible for designing the three dwellings while her dad, who she describes as a “talented craftsman and maker”, worked with a “small bunch of local builders and tradespeople” to bring the family’s vision to life. Located on the outskirts of Meeniyan, a quiet town in Victoria’s South Gippsland, Ross Farm is a modern manifestation of the area’s extensive ecosystems and rich farming history. “South Gippsland is dairy country and is known for its green rolling hills and pristine landscapes and beaches,” Andrea tells. Inevitably, the environment informed her design brief, which was to create “a truly unique accommodation experience honouring the agricultural architecture the region is known for, A

Heart of steel In the Barn, a rusted steel spiral staircase connects the wheelchair-accessible ground floor to a mezzanine while anchoring the double-height volume, which Andrea says creates “a great sense of spaciousness”. To keep the place warm on cold nights, the Barn was insulated and re-clad with recycled tin sheets, and features a double-glazed glass facade. Intimate experience In the Barn’s accessible bathroom (opposite), a Japanese timber bath and beautiful brass hardware beckon guests. Rural rituals Come evening, guests gather around the communal fire pit (opposite). The South Gippsland region sits at the southernmost point of Australia’s mainland and is a must-visit for nature lovers and keen bush walkers.

Guests can also book two or all three accommodations and there is a minimum two-night stay*. How to get there Ross Farm is near Meeniyan in South Gippsland, Victoria, about a two-hour drive from Melbourne. Travel by car is recommended as there is very little public transport, and there is room for cars to park on the property. Good to know Meeniyan is a 10-minute walk from the farm and is a great place to enjoy brunch, lunch or dinner. The region is home to picturesque lookouts, nature walks, beaches, boat tours and a national park, and while it’s beautiful year round, it’s best to pack for all seasons as the weather can be unpredictable. The team designed and handcrafted as much as they could with local materials and their combined skill sets, and Andrea says this resourceful approach encouraged her to apply quite humble or ordinary materials in experimental ways. For example, the decision to use naturally beautiful surfaces replaced the need for paint, kitchens were designed using floor pavers, basins are constructed out of concrete pipes and the light fittings are made from repurposed brass pipes. Then there’s the furniture and cabinetry, all of which was created specifically for each space, and because many of these details were resolved with the craftsmen along the way, the accommodation feels truly authentic and visibly soulful. Ross Farm is made up of three seperate guest dwellings. The one-bedroom Cabin opened in early 2018 and in late 2019 the three-bedroom Dairy and two-bedroom Barn were added to the offering. While each has its own distinct aesthetic, a raw and restrained palette flows from one to the next. So too does the physical flow between each shelter – the layout strategically provides private outlooks and allows for outdoor showers, but should a large family or groups of friends book more than one building, they all work together as a collective. It’s an idyllic destination for retreats and gatherings – after a day of sightseeing or hiking through nearby Wilsons Promontory National Park, guests can unwind in a big bathtub, cook up a barbecue, watch the sunset and settle around a wood fire. “We want guests to slow down and take in the atmosphere. To notice the smaller details of the space and enjoy simple daily rituals, whether it be lighting a fire, drawing a bath or a shower under the stars and exploring the beautiful landscape at our doorstep,” Andrea says.
