Thankfully the chancellor did not increase the duty rates in his budget in November but with the last twelve months proving to be a whirlwind of uncertainty in the industry–reflecting the global economic and political environment–inflationary pressures are real. None more so than the worst harvest in Europe for 50 years, mainly down to severe frosts in early spring. We have been working extremely hard over the last few months with our producers to soften the impact where possible, but wine prices have had to increase for 2018.

It certainly isn’t all doom and gloom as we have seen a growing desire for consumers to spend more but drink less. Choosing more expensive wines, eating out more and broadening their horizons when it comes to style, grape and region. We have taken these changes on board and adapted our portfolio to incorporate more fantastic and skilled wine makers. As well as adding more eclectic wines like an Etna Rosso and a Decanter trophy-winning Czech Palava white, we have recently overhauled and bolstered our Spanish agencies. Our buying team has been working tirelessly to find the best Spain has to offer and they’ve certainly succeeded. Newcomers include three exceptional Rioja suppliers including the eye-catching Wine & Roses Tempranillo and an exciting selection from Ribera del Duero. We are also thrilled with the success of our new wine training programme. Having seen a steep increase in demand for training, we decided to invest in improving and encouraging more courses for our customers. Our Training Manager Scott has been working hard in delivering exceptional training courses. These are targeted to customer needs on subjects such as food pairing, list creation and up-selling techniques. The number of organic, biodynamic and sustainably produced wines in our portfolio continues to grow impressively. In the case of the Backsberg Estate in South Africa, we have a truly industry leading proponent in sustainability, headed by the inspiring Simon Back. One of their latest projects is growing agave plants to make bio-fuel – read more about this in the following pages! We also have an ever growing range of vegetarian and vegan friendly wines to meet this growing trend. We are confident that our wine list continues to offer great on-going variety and value. I am proud of our ethos as a family company, the great expertise of our team and our personal and meticulous approach to working with our customers. History Founded in 1822, Ellis is still family run to this day. Joseph Ellis started his wine business in 1822 – some 196 years ago. At that time, the Ellis family was also running the Star & Garter Inn on Richmond Hill. However in 1864, Joseph’s son George decided to sell the hotel in order to focus on the wine business. Initially he ran the business from 36-37 Leadenhall Street in London where all the deliveries were by horse-drawn carts. By 1926, the business needed to expand so it moved to Richmond and, besides benefiting from bigger offices and cellars, the business also acquired a fleet of vans. On the wall of the Richmond building a vine was planted in 1840 and is still growing to this day! Ellis & Co, as it was then known, also had 12 wine merchant shops in and around London. In a true entrepreneurial move, the business branched out to export their own special ‘Vat 99’ blend of whisky to America, which became an important market after prohibition was repealed. In fact, the very first consignment accompanied the Queen Mary on her maiden voyage to the USA. Colin Ellis and his cousin Shaun Cunningham launched a new business in 1978. Based in St Margarets, near Richmond and Twickenham, it focussed on customers around the south west of London. Since then, the company has grown and first moved down the road to premises in Teddington, finally settling with a warehouse and cellars to the north of Sunbury. Today, the Ellis family continue to manage the business and with a fantastic team of staff have built a thriving wine importer/agency business in the true spirit of its founding fathers when they started the family wine merchant business nearly two centuries ago.

About us As a highly respected independent business, we import wines and represent award-winning producers from around the globe. In order to offer a distinctive and unique range to our on-trade customers, we source wines that are exclusive to us where possible. This allows you to create your own wine list to appeal to your individual customers with wines you won’t find in the supermarkets. Our extensive wine list consists of over one thousand wines from all over the world. But we don’t sit on our laurels. Our dedicated buying team is always on the lookout for new, exciting and innovative wines.

Training the Ellis Way

WSET Courses

We see training as one of the key pillars of Ellis Wines and one in which we not only want to offer in a standard format, but one that can also be completely bespoke to meet your precise needs.

We are an approved programme provider for WSET and can offer courses for Level 1 Award in Wines and Level 2 Award in Wines & Spirits. Please see below for an outline of each course and what is involved for students wishing to sit a course.

Our training sessions give a ‘box fresh’ take on what a wine list is all about and how your staff can use it to its full potential. The idea of a wine training session used to be something perhaps a little daunting and one dimensional. We, however, remove this idea and replace it with excitement and opportunity right from the off. Our sessions are also far from one-dimensional. Scott uses mixed media and other tangible tools to ensure that attendees get the very best from each and every session.

WSET Level 1 Award in Wines

• Improves your customer’s experience – and ensuring that it is as good as it can be is paramount

• One-day course (9-5pm) with a 45-minute, 30-question multiple choice exam requiring a 70% pass

• Aimed at people new to the trade and wishing to gain a basic understanding of wines • Hands-on introduction to wine, tasting technique and basics of food and wine pairing

• Upselling increases your profitability – your staff will learn techniques on encouraging customers to explore your wine list • Thorough knowledge of your wine list – staff ‘get to know them’

WSET Level 2 Award in Wines & Spirits

• Tasting sessions and background notes will help them advise customers

• Aimed at people seeking a core understanding of wines and spirits • Explores major grape varieties, important wine regions, wine styles, key classifications and labelling terms. A basic overview of key categories of spirits and liqueurs will also be provided

• Makes wine a focal point of your business – a plate of simple, honest food can be transformed into a banquet with the right wine Scott will take your wine list and use it as a tool to assist your staff to become true ambassadors of your wine. Our training sessions instil confidence to be able to talk about your wines. Added to that, working together spawns a thirst for knowledge. All sessions are interactive. They are designed to encourage even the most shrinking of violets to participate and learn about the fundamentals of wine. Bespoke reference notes and background materials are given to staff at each session.

We offer two different levels of in house training:

Grape Varieties

Sauvignon Blanc

Carmenère

Tempranillo

Once an integral variety in Bordeaux blends but now largely confined to Chile, Carmenère wines are deeply coloured and are usually well structured with smooth, well-rounded tannins, and ripe berry fruit flavours. The best examples possess excellent mid term ageing potential.

Tempranillo based wines tend to have a spicy, herby, tobacco-like character accompanied by ripe strawberry and red cherry fruits. It really comes into its own when oak aged, producing rich, powerful and concentrated wines.

The white grape in Bordeaux and the Loire Valley that has now found fame in New Zealand and Chile. It performs well in the Loire Valley where it produces bone dry, aromatic, racy wines, with grassy and sometimes smoky, gunflint-like nuances.

t N oir Instantly appealing plum, cherry and raisiny character with light tannins, Merlot is a popular varietal and prized as a blending partner. Merlot is adaptable to most soils and is relatively simple to cultivate. It is vital to pick at optimum ripeness as Merlot can quickly lose its varietal characteristics if harvested overripe.

Burgundy is Chardonnay’s spiritual home and the best White Burgundies are dry, rich, honeyed wines with marvellous poise, elegance and balance. However, other countries and regions are making outstanding wines with this grape.

Syrah / Shiraz

Sangiovese

Riesling

Sangiovese produces wines with pronounced tannins and acidity, though not always with great depth of colour, and its character can vary from farmyard and leather nuances through to essence of red cherries and plums.

Syrah can be made into a wide range of styles from simple and fruity to complex, brooding and powerful. Aromas and flavours can range from black fruits and eM white pepper to any ‘earthy’ descriptorolr t like bacon, leather, game and especially, burnt rubber.

Grüner Veltliner has a reputation of being be a particularly food-friendly wine and is a c popular offering on restaurant wine lists. A little is made into sparkling wine, but some is capable of long aging.

Riesling produces delicate, racy, nervy and stylish wines that cover a wide spectrum of flavours from steely and bone dry with scented fruits of apples, apricots, and sometimes peaches, through to the exotically sweet flavours of the great sweet wines. Char

Viognier

Young Pinot Noir can smell almost sweet, redolent with freshly crushed raspberries, cherries and redcurrants. When mature, the best wines develop a sensuous, silky mouth feel with the fruit flavours deepening and gamey ‘sous-bois’ nuances emerging.

The grape produces wine with distinctive peach and honeysuckle aroma. It is now a key component of many white Côtes du Rhône. In Languedoc and Roussillon it is being bottled unblended leading to richly fragrant wines redolent of overripe apricots and peaches.

Sémillon Often blended with Sauvignon Blanc in Bordeaux, south west France and Western Australia. It has a lightly lemony aroma when young develops lanolin flavours which some describe as ‘waxy’, as well as a rich, creamy, intense, texture and a deep golden colour.

Domaine A. Morin Champagne A R Lenoble

Domaine Morin Langaran was first founded in 1330 when it belonged to the Order of the Knights of the Holy Spirit. Since that time it has gone through different hands before the Morin family became owners in 1966. Caroline Morin took over from father Albert and is known for the finesse and minerality of her wines.

With Premier and Grand Cru vineyards, Anne and Antoine Malassagne have established Champagne A R Lenoble as one of the region’s best grower Champagnes winning many accolades and being awarded the ‘Haute Valeur Environnementale’ certification. champagne-arlenoble.com

Domaine Jean Tardy Domaine Jean Tardy is one of the leading producers of the Cote d’Or. He inherited his vineyards from his father, Victor which had come entirely from Domaine Meo-Camuzet. Now Jean’s son Guillaume is taking over the reigns and adding a modern feel to these classic wines.

Domaine Gautheron Domaine Gautheron is situated in the village of Fleys, to the east of the town of Chablis and overlooked by the steep slopes of les Fourneaux. This estate of only 25 hectares has been in the Gautheron family for five generations and now has Cyril and Agnes at the helm. chablis-gautheron.com

The Luquet family have been making fine wines in southern Burgundy for five generations. Today, Patrick Luquet, alongside his sister Christine and her husband Thierry, preside over 30 hectares of vineyards, including 40- 70 year old vines in Fuissé and nearby villages.

J-B Adam is one of the oldest estates in Alsace, with 19 ha of organic vineyard in the Haut Rhin village of Ammerschwir. Jean-Baptiste with daughters Laure, Pauline and Marie creates high quality wines with innovative techniques including the introduction of biodynamic principals.

Château d’Esclans

Domaine Crochet Francois Crochet is one of the prominent names of Sancerre. His 10 hectares of vineyards are planted around the prestigious village of Bué on limestone soils which impart a distincive mineral character to his wines.

Domaine de l’Amandine A traditional, family-run vineyard in the foothills surrounding Séguret, classed as one of France’s prettiest villages. Jean-Pierre Vedeau and son-in-law Alex Suter work on the 120 acre estate of vines that are an average of 40 years old.

Château d’Esclans is located on an exceptional site, on elevated land near the Mediterranean coast. Now approaching cult status for its Provence rosés, it was awarded The Wine Enthusiast’s European Winery of The Year Award for 2014. esclans.com

Hacienda el Ternero is a village which dates back to 1077 when it belonged to the Santa Maria de Herrerea Monastery. In 2009, the village was bought by the current owner. The 60 hectares of vineyards are in the Rioja Alta and sit at an altitude of 650m.

Bodegas Taron is a cooperative based in Rioja Alta. It is made up of four small towns; Cuzcurrita de Rio Tiron, Sajazarra, Villaseca and Tirgo. They have 700 hectares of vineyards over more than 1000 small plots, the oldest vines are over 100 years old.

Alejandro Fernandez followed in his father’s footsteps, by originally making wine from his small vineyards. However it wasn’t until 1972 that he was able to establish his own winery, complete with 16th century wine press, which still survives to this day.

My team will tell you that I often describe Backsberg as a complex machine with a lot of moving parts. Our sustainability initiatives are a good illustration of this. While our philosophy is broad, it is detailed. Most notably, we are recognised as South Africa’s first certified carbon neutral winery, which we achieved after years of research and application of methods to reduce and offset our emissions. To mention just a few, these have included switching to energy efficient lighting, downscaling to smaller tractors and vehicles, bottling in lightweight glass bottles and planting thousands of trees. We are in the midst of a five-year biofuel project, which we hope will get Backsberg off the grid entirely - watch this space.

Carbon neutrality, however, is only one part of the equation. For us, sustainability means operating under what we call an umbrella of care: care for the environment, for our product and for the people who work for us. South Africa unfortunately has a troubled socio-political past and this is something my family has always acknowledged. During the Apartheid years, my father ran a night school, which was illegal under the prevailing regime. This was some time ago, but we did not lose speed after democracy dawned in 1994. Since then, we have funded over 100 years of tertiary education for underprivileged students, some of them the children of our workers. We have also assisted many of our farm workers in obtaining the deeds to their homes, effectively freeing them from dependence on our winery. Backsberg is also a certified WWF Conservation Champion. Our environmental initiatives include setting aside a portion of our land to protect the endangered fynbos biome, an insect predator programme to reduce the need for chemical sprays and a queen bee project to protect the local bee population and promote pollination. While all of our wines are not certified organic, we share much of the philosophy and methodology with this movement. At times it can be frustrating to be on the frontier of sustainable practices, especially when certification bodies have not yet caught up! Regardless, we remain committed to doing what we believe is right. Ultimately, our goal at Backsberg is to produce wines which are first and foremost delicious, while leaving our land, people and community better off than before. We hope, too, that our commitment to sustainability can inspire others to do the same.

More Red wine’s health benefits come from tannin, extracted from the skins and stalks. For a wine to be vegan it cannot be fined with either milk or egg and vegetarian wines cannot be fined using gelatine. No chemicals or ‘manufactured’ additions (like commercial yeast) are allowed in biodynamic wine. Instead, wine growers make special compost preparations with natural ingredients to bolster their vineyards.

3. Delivery

ii. The ‘Buyer’ means the person, firm or company who places an order for the goods.

v. No variation of these conditions shall be binding on the Seller unless in writing and signed on behalf of the Seller. vi. These conditions shall prevail over any inconsistent terms or conditions referred to in an order or correspondence from the Buyer and any conditions or stipulations to the contrary are hereby excluded or extinguished. 2. Payment i. Unless credit facilities have been expressly agreed in writing payment must be made nett cash against pro-forma invoice. ii. Where credit facilities have been granted to a Buyer, the Buyer must settle the account within 30 days of the date of the Seller’s invoice. If any account remain unpaid after it due date for payment, then payment for all Goods delivered at any time by the Seller (including Goods delivered after those to which the unpaid accounts relate) shall forthwith become due. iii. Payment shall fall due as aforesaid in paragraph (i) and (ii) of this clause despite the fact that, in accordance with clause 5 below, the title may not have passed to the Buyer and the Seller shall accordingly be entitled to sue for the price once the same is due notwithstanding the fact that the title in the Goods has not passed. iv. Where the Seller recovers possession of Goods, title in which has not yet passed to the Buyer, such recovery of possession shall be without prejudice to the right of the Seller to sue for the purchase price under this clause. v. None of the Goods are supplied on a sale or return basis. vi. The Seller reserves the right to charge interest (both before and after any judgement) on any overdue accounts at the rate of 3% per annum above National Westminster BankPLC’s Base Rate from time to time in force until full payment is received. vii. In the case of non-payment or late payment or any circumstances where the Seller is obliged to use an agency to obtain or enforce payment, the total outstanding debt will be liable to a surcharge of 25% of the final statement.

When the Seller agrees to deliver or arrange for delivery of the Goods to the Buyer the following provisions shall take effect:

ii. Goods previously supplied by the Seller shall not be samples for Goods subsequently sold and the Seller does not guarantee that Goods of the same description will correspond with the Goods previously sold.

iii. No sale by the Seller shall be a sale by sample.

Orders Orders

ii. The mode of transport shall be at the discretion of the Seller. iii. All Goods must be examined by the Buyer immediately on receipt. Where breakages or shortages have been sustained the carrier’s receipt note must be endorsed to the effect and the Buyer must in addition notify the carrier and the Seller’s sales office in writing within 48 hours. All damaged Goods must be kept for inspection until otherwise advised. Where Goods are returned to the Seller a receipt must be produced signed by an outside carrier or the Seller’s agent. No deduction may be made against the Seller’s invoice without the specific authority of the Seller. In the event of Goods ordered not being received within 14 days of invoice date, the Seller must be notified thereof in writing immediately. No claims can otherwise be entertained. iv. The time of delivery is given as accurately as possible but it is an estimate only and is not guaranteed and may be subject to extension to cover delay caused by any event beyond the Seller’s control. v. The Seller shall not be liable for any loss, loss of profit, damage or expense whatsoever arising either directly or indirectly out of any late delivery or extension to the time of delivery or any damage to or loss of any of the Goods in transit. vi. Orders of six cases of wine and over will be delivered free of charge to addresses in the South East of England. Less than six cases will carry a supplementary small order charge of £7.50 per consignment. 4. Descriptions i. Any descriptions or details of Goods given by the Seller are included only as a general indication of the nature of the Goods and the Seller shall not be liable for nor shall the Buyer be entitled to any other remedy on the grounds of discrepancies between the same and the Goods supplied.

vi. Goods listed in the price list are offered subject to stock availability. Prices quoted cannot be considered binding on the Seller for any specific period. The price (which are quoted exclude VAT and delivery charge if any) are based on prevailing costs and, where applicable, rates of taxes, duties and foreign exchange rates. If between the date of quotation and the date of delivery of the Goods, any change of such costs, rates of taxes, duties or foreign exchange rates occurs then the prices may be altered accordingly. 5. Title of Goods i. In spite of delivery of the Goods having been made, property in the Goods shall not pass from the Seller until: a. The Buyer shall have paid for the Goods in full and; b. No other sums whatsoever shall be due from the Buyer to the Seller. ii. Not withstanding the foregoing, risk in the Goods shall pass on delivery of the same to the Buyer and until such time as title in the Goods has passed to the Buyer, the Buyer shall insure such goods to their replacement value noting the Seller’s interest on the relevant insurance policy and the Buyer shall forthwith, upon request, provide the Seller with the certificate or other evidence of such insurance. iii. Subject to the paragraphs below the Buyer shall be at liberty to sell the Goods in the ordinary course of business to sub-buyers as principal and not as agent for the Seller. The buyer shall have no authority to enter into any contract of sale on behalf of the Seller and any contract shall accordingly be concluded in the name of the Buyer. iv. The Seller may at any time revoke the Buyer’s power of sale by notice to the Buyer if the Buyer is in default in the payment of any sum whatsoever due to the Seller or if any bill of exchange, cheque or other negotiable instrument drawn or accepted by the Buyer in favour of the Seller is dishonoured on presentation for payment or if the Seller has bonafide doubts as to the solvency of the Buyer. v. The Buyer’s power of sale shall automatically cease if a receiver is appointed over any of the assets or the undertaking of the Buyer or a winding-up order is made against the Buyer or the Buyer goes into voluntary liquidation or calls a meeting of or makes any arrangements or composition with creditors or commits any act of Bankruptcy. vi. The Seller shall be entitled to seek a court injunction to prevent the Buyer from selling, transferring or otherwise disposing of the Goods. vii. Upon determination of the Buyer’s power of sale the Seller shall have absolute authority to retake, sell or otherwise deal with or dispose of all or any part of the Goods in which title remains vested in the Seller. viii. For the purpose specified in paragraph (vii) above the Seller or any of its agents or authorised representatives shall be entitled at any time and without notice to enter upon any premises upon which the Goods or any part thereof are stored, or kept, or are reasonably believed so to be. ix. The Buyer shall store or otherwise denote, mark or identify the Goods in respect of which property remains with the Seller in such a way that the same can be recognised as the property of the Seller. x. The Buyer undertakes to the Seller that following delivery the Buyer will at all times handle the Goods properly & store the same in suitable conditions. 6. Termination If the Buyer shall become bankrupt or make any composition with the Buyer’s creditors or if a receiver shall be appointed of the whole or any part of the assets of the Buyer or if any resolution shall be passed or petition be presented or any order made for the winding-up of the Buyer or if the Buyer shall fail to pay for any Goods supplied by the Seller on the due date, the Seller may immediately and without notice terminate any contract with the Buyer without prejudice to any rights which may have accrued to the Seller prior to such determination. 7. Interpretation and Severability i. A contract made between the Seller and Buyer shall be governed by and construed and interpreted in accordance with the Laws of England and for the purpose of settlement of any disputes arising out of or in connection with a Contract the parties shall hereby submit to the jurisdiction of the English Courts. ii. Each clause and sub-clause or paragraph of these Conditions shall be separate distinct and severable from each other clause or paragraph and shall continue to apply and be enforceable even if, for any reason, one or other clause or paragraph is held to be unenforceable or unreasonable in the circumstances and shall remain in force notwithstanding termination.

iv. All bottles are 75cl unless otherwise stated. v. The Seller reserves the right to revise or change the style of labels at any time.
