s I write this letter in the middle of October, Christmas feels a bit like an elephant on the horizon – small and safely distant. But, I know from experience that if I don’t get organised soon, it’ll hurtle towards me, gathering pace, and I’ll suddenly feel overwhelmed by its giant presence! The key to avoiding last-minute panic, as with most things, is preparation. With that in mind, I warmly welcome you to this issue of House Beautiful - packed full of inspirational ways to help you get ahead and fill your home with festive joy. We’ve got an abundance of ideas for you – from gift buying (p64) to decorating looks that will make your home twinkle and your garden magical (p38). For me, the most enjoyable part of Christmas is when the chaos has subsided and I have a few days to hunker down at home with my family. As food lovers, I know they’re going to enjoy making and sharing the delicious canapes and drinks created for us by MasterChef finalist Giovanna Ryan (p138). We’ve followed Giovanna’s journey over the past year (mostly on Instagram @giovannaryan) and have fallen in love with her philosophy that food, like life, should be fun and enjoyable. So, we couldn’t be more delighted that she’s agreed to share more of her expertise and recipes in House Beautiful next year. SUSI BELL AMY Living in Britain, America and Italy has given the artist and designer inspiration for her wonderfully vibrant fabrics, wallpapers and accessories HOW DID YOUR BACKGROUND INSPIRE YOU TO PURSUE A CAREER IN ART AND DESIGN? I studied fashion journalism at the London College of Fashion, and then worked as a fashion editor for a bridal magazine. It was when we moved to the US for my husband’s job that I took up painting as a hobby at the Delaware Art Museum in Wilmington – and I haven’t stopped painting since! TELL US ABOUT YOUR ENTREPRENEURIAL JOURNEY In 2004, we moved to Florence with our three young children, where we lived in a villa with a beautiful tower. At the top of the tower I had a studio, where I taught fellow expats to paint. I was inspired by the exuberance of the colours and landscape of Florence, and the crumbling plaster of the palazzo walls. I loved interpreting what I saw in the galleries and the street corner shrines. When we returned to the UK six years later, I studied at Northumbria University for a Masters in fine art, and then found a studio in the artistic Ouseburn area of Newcastle, where I experimented with layered painting on wood. I had one of my pieces cut into small squares, which I displayed on shelves in my studio, and as I was looking at them one day, they reminded me of cushions. I decided to have my artwork digitally printed onto velvet and made into cushions, and was thrilled when they won a prize in a competition called the Northern Design Event. The turning point came in 2016, when I was spotted by Amara and Liberty at an exhibition in London for emerging designers.

YOUR NEW CHRISTMAS RANGE FEATURES COLLAGES OF THE MADONNA AND CHILD. HOW DID YOU COME UP WITH THE IDEA FOR THIS DESIGN? Twice a year in Venice it floods, and I got stuck in the Gallerie dell’Accademia for four hours during a flood while on holiday. I started looking at all the iconic Madonna images around me and became fascinated by the different component parts. Back in my studio, I bought wrapping paper, doilies and beads, and began cutting out the face and hands of various Madonna images. The rest of the design is made from different patterns that I slot together like a collage. I had young children when I lived in Italy, so the motherhood aspect of the Madonna and Child appealed to me – the baby is often gently touching the mother’s face with one little finger. CAN YOU GIVE US A SNAPSHOT OF YOUR HOME? I live in an Edwardian manor house in Northumberland. The house is definitely an extension of my work – I’ve included all my own wallpapers on the top floor and have even papered the ceilings! The first two floors are painted in plain block colours, which I use as a backdrop for artwork. I surround myself with fashion and abstract images, which are hung in ornate frames from Italy. I’ve also collected furniture from Florence, including a Florentine round table in our kitchen. We live near Hadrian’s Wall and have beautiful views of the surrounding countryside.

WHAT’S HOT DESIGN THE STORY BEHIND...
ROWEN & WREN A brave financial decision led Lucy Uren and Graeme Purdy to create an online store with the home at its heart As with many stories, Rowen & Wren’s has humble beginnings. The online shop, which champions simple design and quality craftsmanship, found its feet in 2011, in Lucy and Graeme’s small one-bedroom flat. The couple, who met in a shared university hall of residence in Nottingham, and are partners in life as well as in business, soon found themselves living almost entirely out of their modest bedroom. ‘We kept all of our stock for the store in the living room, which is where we also did all the packing for the orders and photographed our early lookbooks,’ recalls Lucy, who trained as a textile designer. She first learned the interiors ropes at John Lewis, channelling her creativity in the home design studio, and advising buyers on trends and colour palettes. This experience proved instrumental in the couple’s

brave decision to invest their joint savings – intended for their first home together – into a website showcasing beautiful homewares, initially sourcing and selling artisan accessories made by other designers. Today, the couple – along with product designer Alex Bilton – create around 80 per cent of the pieces sold on the site themselves. ‘We now have broader product categories, including bathroom accessories and hardware. Graeme and I have always been fans of traditional interiors with modern finishes. With any new design, we start by looking at vintage and reclaimed pieces, often at flea markets, and then we add our own twist,’ Lucy explains. What’s more, the brand cleverly bridges the gap between interior and lifestyle products. ‘Stocking local, talented makers is high on our list of priorities for the site,’ says Lucy. ‘We like to layer artisanal products among our own core pieces.’ The Bilton bathroom collection, for example, is designed in-house, and is paired with handmade toiletries that complete the range. ‘We work with an artisan in Lewes who creates beautiful small batch toiletries that help bring our own designs alive,’ adds Lucy. ‘The grey charcoal soaps work perfectly with our brass soap dishes.’ For more information visit rowenandwren.co.uk

S
iv Smeby is originally from a small island on the western coast of Norway, but moved to Oslo with her parents when she was eight years old. However, after many years of living in the bustling capital, the pull of the sea was impossible to resist. ‘We wanted to get out of the city, to focus on a slower pace of life and start a family and I’d always wanted to return to the coast. We’re only an hour from Oslo, so we can still see friends there. It’s an ideal location for us,’ she explains. ‘We began our search by driving around until we were able to pinpoint the exact area where we wanted to settle. I used to dream of living by the sea in an old, romantic villa with a white picket fence and an apple orchard – and amazingly we actually found this house on the internet. It ofered everything I wanted ,’ explains Siv. The couple sold their large, modern home in Oslo, which they had just finished renovating, and took the plunge, moving to Notteroy in 2011. ‘The house was in good condition and featured a wonderful mix of rustic and classic styles, but it wasn’t to our taste, so we’ve made changes over the years – it’s still a work in progress,’ says Siv. As she works as a chef, the kitchen was obviously very important to her. They 80 housebeautiful.com/uk
replaced it and installed wooden painted units with Art Deco-style glazed panels. Siv also had an extra window installed between the cabinets to bring in more light. The original Art Deco roof in the dining room was in need of repair, and the couple took their time to restore it to its former glory, meanwhile filling the house with contemporary Scandinavian furniture and family pieces. ‘We love the garden and were lucky it had been well looked after – it provides plenty of fruit that I use for cooking. Last summer we added the large greenhouse, which really comes into its own during the festive season when we call it the Champagne House.’ Family traditions come to the fore at Christmas when relatives gather to enjoy the festivities. ‘You’ll never see the latest style here!’ Siv laughs. ‘We like to do everything the same way every year, and always will.’ The decorations, such as the handpainted baubles made by a number of diferent Norwegian jewellers, have been carefully collected over generations, passed down from parents and grandparents. Newer additions include Christmas decorations made by Nicoline, Siv’s daughter, using moss and witch hazel from the garden. ‘I have a witch hazel shrub that is about three metres tall and I often cut

Wrapping Christmas presents is carried out in Siv’s home office. The desk and lamp both came from Ikea. On the windowsill sits a sculpture of a heart made from a 4,000-year-old piece of wood and a sailboat that was bought in a local shop

CHAMPAGNE HOUSE At Christmas, the custombuilt greenhouse really comes into its own. Siv lights lots of candles to create a magical mood. The table is a century-old woodworking bench that was originally used in a school

I also love the smell of pine,’ says Siv. ‘We always have a real tree, and put branches of pine on the dining table too.’ As a chef, Siv likes to begin her Christmas preparations in mid-November. ‘I make every course the way my parents did. And they learnt from their parents. My mother-in-law bakes the Christmas cookies, and in exchange I give her my homemade pork ribs. That’s how we’ve done it for almost 20 years now, and it works perfectly,’ she explains. Another important tradition is decorating the tree, which takes pride of place in the oice, just of the dining room. ‘It takes up the whole space!’ laughs Siv. ‘Robert and I decorate it on the night before Christmas Eve after Nicoline has gone to bed, then in the next morning, she rushes into the room to see it. It’s a tradition both Robert and I grew up with.’ The living room is dressed more simply with a candle-laden tray on the cofee table and small wreaths at the windows. ‘On Christmas Eve we light every candle for gratitude, future dreams and in memory of family members no longer with us.’ Siv’s favourite room is the library: ‘It’s so comfortable and peaceful to be in,’ she says. ‘We bought the cowhide rug for our dog Vince,
from a farm in nearby Hemsedal, and he loves it.’ On the staircase is a gallery of more art. Two pictures are framed necklaces, bought in a local interiors shop, which Robert gave to Siv when she was pregnant. Another favourite tradition is to dress the bed with vintage embroidered bedlinen that Siv brings out especially for the Christmas period and teams with other linen. It does take a lot of ironing, but she loves the look and feel of it. The greenhouse has proved to be a well-loved spot. ‘Time alone there is special,’ says Siv. ‘I light lots of candles and drink hot chocolate in there, with Vince for company. We use it daily for light therapy – something that all Scandinavians really need; it’s also wonderful being in here during rainstorms – absolutely beautiful. But the space comes into its own at Christmas. We invite friends over and all gather in here to celebrate and, of course, drink champagne!’ she says. The family couldn’t be happier with their life here – not only for their house and garden, but the multi-purpose greenhouse as well as a boat that’s moored just a short stroll away. ‘It’s fantastic. hristmas waits for no-one, and with a festive deadline looming, Emily and Daniel Kirtley were having second thoughts about their ofer to host the family that year. ‘We’d bought the house in the summer of 2013, and even though there was quite a bit of work to do, we still wanted to be able to do the “big reveal” on December 25th,’ explains Emily. Keen sailors, the couple had decided to forsake their Victorian terrace in London for the coast. ‘It wasn’t a diicult house search, but there wasn’t much to choose from in the city centre, as period properties are snapped up quickly,’ says Emily. ‘We viewed houses at the weekends, staying at a hotel in town
while we tested the commute back to London.’ The couple wanted a home with character that was also within walking distance of the train station, shops and restaurants. ‘This house ticked all the boxes – you could feel its history the moment you stepped inside,’ says Emily, who worked with the local historic buildings oicer to ensure their plans for the property were sympathetic. ‘We loved its sash windows and fireplaces, and although we were initially concerned about the on-street parking, it’s never been an issue.’ The house, though mostly structurally sound, needed complete redecoration. Emily and Daniel enlisted the help of the Martin Sewell Building Company, whose craftsmen are experts in restoration, to carry out repairs. ‘The

five dormer windows needed fixing and recovering in lead, and we were also replacing the bathrooms and kitchen,’ says Emily, who worked closely with the builders to oversee the design. ‘Initially, we managed things by phone during the commute, then I left my job in a bank and launched my coaching practice, working from a corner of the living room.’ The kitchen was one of the biggest elements of the project, and Emily had very definite plans. ‘We had a strong vision of what we wanted: a space that would feel more like a dining room than a functional area. Although, of course, it still had to be highly usable,’ she recalls. ‘The existing units were from the 1950s – and not in a good way! An island unit cut the room in half in exactly the wrong place.’ Emily

The couple insist on a real tree. ‘We don’t put it up too early, otherwise it can be past its best by Christmas,’ says Emily. ‘We’re looking forward to Grace being able to help hang the decorations next year.’

had equally strong ideas for the bathroom. ‘We wanted to keep a traditional feel, but also create a luxurious vibe,’ she says. ‘We kept it classic with the hardware and chose something a little more interesting for the tiling. The carpenters built a unit behind the loo with open shelves for display, as well as a cupboard for hiding things away.’ With the builders finally finished, Emily was able to start styling her home. The first thing she’d done after moving in was rip up the old carpets and paint every room white, creating a blank canvas to work from. ‘We felt we had to stay true to the character of the house, so it’s taken on a traditional feel, but we’ve also reflected our personalities,’ she explains. ‘I love the hints of whimsy, such as the ship
chandelier. It’s one of my favourite pieces – I especially like the way it reflects in the windows at night. It makes me smile every day.’ The couple stuck to a fairly simple colour palette, which feels warm and rich. ‘I’ve loved playing with all the diferent shades of grey,’ enthuses Emily. ‘We’ve gone for luxurious textures – we’ve got velvet and sheepskin everywhere. I’m inspired by old, grand country homes and luxury hotels.’ Emily admits there were times when she worried that she and Daniel wouldn’t meet their Christmas deadline. ‘Having that constantly looming, and living in the house throughout the four-month project were the biggest challenges,’ she says. ‘With hindsight, it would have been easier to camp

in the garden. The low points were showering over the bath, with the dinner plates at the other end, and surviving without a kitchen and just having a microwave!’ The couple are looking forward to another very special Christmas this year – baby Grace’s first. ‘Winters are especially cosy here – with a fire lit, you feel as though you’re transported to another time,’ says Emily. ‘We have our Christmas tree in the upstairs living room, so getting it in is a bit of a struggle, but the scent of pine throughout the house is amazing. We’ll be hosting friends and family again this year – that’s when the house really seems to come into its own. It’s a magical time anyway, but there’s just something extra special about the festive season in a home with a past.’ HB

step up the career ladder was the driving force behind Michael Buham-Wade’s purchase of a at in the centre of Birmingham. ‘Shortly after starting my new job, the company relocated from London to Birmingham, so I needed to ďŹ nd somewhere up here to live during the week,’ says Michael. At weekends he returns to the house in southwest London that he shares with his partner Lee, whose job as a product designer keeps him in the capital. ‘Because it’s just me living here, I was the one who chose the property,’ says Michael. ‘I wanted a at because it’s easy to maintain and I can just lock up and go. When I come home from work in the evening, I don’t have to think about anything.’ Michael was keen to ďŹ nd a well-located apartment within easy walking distance of the city centre. ‘In case my job takes me elsewhere, I wanted a property that I could easily rent out, but I also wanted a nice area for myself now. Ten years ago, parts of Birmingham were pretty ugly, but now it’s
a vibrant city with more companies moving their headquarters here. It has incredible modern architecture springing up and pubs and restaurants all along the revitalised canal, which is nearby.’ After viewing several new ats – and even considering buying of-plan – Michael decided to look for a place that required renovation. ‘It seemed insane to buy a new property and immediately rip out thousands of pounds’ worth of ďŹ xtures because I didn’t like them,’ he explains. He eventually found this one, but it needed work. ‘It’s 12 years old and the ďŹ xtures and ďŹ ttings were nasty, with plastic baths and wall-mounted heaters, which I found hideous. It had been rented out, so it was a sea of beige walls and laminate ooring. The bathroom had black mould everywhere because the fan had not been switched on.’ The apartment’s central location was appealing to Michael, as well as the fact it has three good-sized bedrooms so friends and family would be able to use it at weekends. ‘Most importantly, there are two terraces,’ he adds. ‘I’m Australian, so I had to ďŹ nd a at with outside space. I really need it, and so

Lee is a member of Soho House, a private members’ club with venues across the world, and as seasoned travellers the pair enjoy holidaying in its many locations. The Soho House publication Morning, Noon, Night: A Way of Living became Michael’s style bible. ‘I wanted to emulate the look of a sophisticated gentleman’s club, with rich, bold, slightly decadent colours and a mix of textures and materials. I think that objects stand out more against a dark background, so a room becomes about the accessories and furniture,’ he says. Many of the flat’s fixtures and fittings are the same as in the couple’s London property, to remind Michael of home. When it comes to furniture, however, there’s a diference between the interiors. ‘Our London house is more traditional than this flat. But as it’s just me living here, I can indulge my passion for mid-century pieces,’ he explains. Work on the property took three months, during which time Michael lived in a hotel nearby, visiting the flat daily to keep an eye

‘The flat’s warm, inviting colours are perfect for the festive season’
on the project. He chose a diferent style for each room in order to capture a variety of moods, using an array of textures and artworks to create depth and interest. Now that the flat is finished to Michael’s high standards, the couple decided they would spend Christmas here, and brought all their decorations up from London. ‘Lee decorates the tree, but unfortunately it takes him about eight hours because he adopts a designer, layered approach, using about 2,000 lights. It’s painful to watch,’ says Michael. ‘The flat’s warm, inviting colours are perfect for the festive season,’ he continues. ‘We welcome guests, lock ourselves away, play board games and relax. Lee does the cooking, which he enjoys, and the flat is large enough for a crowd. It makes a nice change – we even walk along the canal on Boxing Day.’ Michael sums up the style of his apartment by drawing an analogy between it and the work of one of his favourite artists: ‘I love Anna Lewis’s car crash style, where she puts things together that you don’t think should work but somehow do. That’s how I feel about this flat; a car crash that turned out just fine.’ HB

fter living by the seafront in her previous home, Poonam Sharma was keen to remain close to the beach when she moved, so location was key when she was househunting. There were a few other important caveats, too. ‘Space was also very important to us – before moving here, I lived in a ground-floor mansion flat, and got used to having plenty of room,’ says Poonam. ‘Low ceilings were a definite no-no.’ So, when she and her partner Paul viewed this house in Hove, they fell in love with the large rooms and high ceilings, as well as the traditional features of the property, such as the original cornicing and fireplaces. Plus, the house was just a five-minute walk from the beach and local amenities, such as cofee shops, bars, restaurants and schools. ‘It ticked all the boxes for us,’ recalls Poonam. There was also potential to extend the property, creating a living space that suited the family’s needs. A new kitchen, shower room and boiler were installed, while one of the bedrooms was turned into a walk-in wardrobe. ‘I had to spend quite a few months persuading Paul that this was a good idea – he wasn’t a fan to begin with!’ remembers Poonam. ‘But now, without a wardrobe taking up space, our bedroom feels much bigger and more spacious.’ When it comes to decorating, Poonam is ‘always faing around and changing things’ – her current projects are the redecoration of Zachary’s bedroom, to make it look more grown-up, and a revamp of the study. ‘I love Pinterest and interior design magazines,’ she explains. ‘My style is constantly evolving, but I nearly always fall back to mixing modern pieces with vintage and mid-century finds.’ Poonam would like to extend the kitchen to the side to create more space for a sofa. She feels this would be ideal for the family Christmases at home – a time that revolves around food preparation in the kitchen. ‘Christmas in our house is simple, as it’s usually just the three of us if we stay at home,’ says Poonam. ‘I’m a vegetarian, but Paul isn’t, so we always have to cook two Christmas dinners!’ >

The family spend most of their time in this openplan space, so Poonam wanted it to feel light and unfussy. To keep a sense of spaciousness, she chose not to have cupboards on the walls. The Ghost chairs are from John Lewis & Partners and the table is from Boconcept, while the vintage rug over the chair was a gift from a friend. A silver vase filled with eucalyptus adds a touch of greenery, echoing the faux tree from Balsam Hill, with its metallic decorations from Cox & Cox. The tree artwork is from a local shop called Art Republic, while the queen painting is by Abigail Ahern

Decorating the house for the festive season is a family afair, with the preparations starting in the first week of December. ‘Before having Zachary, I’d leave it until just a week or so before Christmas,’ says Poonam. ‘But now that he’s here, the build-up is so much more exciting. We love having our decorations up – the longer we can keep them up for, the better!’ The Christmas tree is the focal point of the family’s living room, with a smaller tree taking centre stage in the kitchen dining area. Traditional-style, prelit fir trees from Balsam Hill are the first choice for this busy family, but if it were up to Zachary, they would be celebrating around something a little less conventional. ‘Zachary has said he wants a Lego Christmas tree,’ laughs Poonam. ‘Now, where am I going to get one of those from?’ Poonam uses antique-style Christmas decorations in metallic tones, and, like most interiors enthusiasts, she’s particular about their placement. ‘Now that Zachary’s older, it’s his job to help decorate the tree, which he loves. But when he’s gone to bed, I end up rearranging the decorations, because he sticks them on in random places,’ she laughs. Candles also feature heavily in this home at Christmas, creating a warming ambiance and filling the house with festive fragrances. As with every family, there are rituals that Poonam, Paul and Zachary enjoy each year. ‘We have a strange tradition in our house – we wrap potatoes up and hide them under the tree,’ laughs Poonam. ‘When Zachary wakes up, he gets to unwrap a few, and we tell him Santa sent him a potato for each of the times when he did something naughty – for example, when he threw his plastic cars out of the bedroom window. It’s a bit mean, but it makes us chuckle, and makes him appreciate his actual presents!’ Poonam’s key piece of advice for a stress-free Christmas is not to take it too seriously. ‘I’ve known people to get really stressed out about Christmas, but we like to stay chilled and relaxed,’ she says. ‘We try to keep things simple, because I hate that feeling when the decorations and the tree come down, and everything around the house feels so bare. illed with the scent of cinnamon and spices, Anni Arndal Jensen’s 18th-century Danish townhouse is instantly welcoming. Candles glow alongside a spruce tree in a corner of the living room, while homemade breads and pastries are piled temptingly beside bowls of dried fruit and bitter oranges dipped in Valrhona chocolate on the kitchen table. Anni, a ceramicist, lives on the top two floors of the building above her pottery shop in the quaint town of Holstebro in West Jutland. She shares her home with her husband Ole and their fox terrier Zoé. An artist’s sensibility pervades the white, light-filled interior, which is decorated with natural materials and traditional furniture. At Christmas, a wealth of handcrafted trimmings reflect the charming simplicity of the space. Preparations for the festive season begin in early December, when the house is dressed with spruce trees placed in wicker baskets or large metal pots. The trees are decorated sparsely with real candles and beautifully crafted baubles that are handmade by Anni – she inscribes each one with words of wisdom. She also makes large batches of salt-baked rye hearts, which she hangs from

well for outdoor wreaths, but our indoor version gives the succulent a new lease of life for the festive season. They have become one of the most popular houseplants and Instagram feeds and Pinterest boards are awash with cool cacti displays and trendy terrariums. As they love a dry environment and
are low-maintenance, they’re ideal for indoor wreaths. Often the greenest ones will fare best inside and thrive if given as much light as possible, so display in view of a window if you can. It’s a good idea to prepare your wreath in advance and leave it flat for around four weeks to allow the plants and roots to settle.

1 Soak the moss in water (this will make it easier to work with) and start to cover the oasis ring. 2 Completely cover the oasis with moss, then start to remove the plants from their pots. 3 Start placing the plants one by one into the oasis ring, securing the plants and moss with pins as you go. 4 Try alternating the types of plants for maximum visual impact. Add a few extra pins to secure the moss around the succulents or alpines, making sure you’ve pushed them firmly in so everything stays in place. To make your wreath extra secure, wrap florist’s wire around it to reduce any movement. 5 Add some finishing touches to fill any gaps – pine cones and red berries are great for adding a festive touch.

Rose Royale ‘This is a more delicate version of a Kir Royale. Rose syrup and rosewater varies quite dramatically in strength, so add a little at a time until you reach your preferred strength. The addition of vodka gives it quite a kick, so just leave it out if you’d rather have something less punchy!’ FOR ONE SERVING Rose syrup or rosewater, to taste 1 shot good quality vodka
80ml champagne or sparkling white wine Dried rose petals or rose buds (optional) 1 Pour a little of the rose syrup or rosewater into the bottom of a champagne glass along with a shot of vodka. Pour over the 80ml measure of chilled champagne or sparkling wine and adjust the levels of rose to suit your taste. 2 Serve the Rose Royale cocktail sprinkled with a few dried rose petals or a dried rose bud, if desired.

Prawn, cucumber and rice noodle lettuce cups ‘If you’re after something a little lighter and fresher as an antidote to festive excess, this is the canape for you. These lettuce cups are quick and easy to assemble and the Thai flavours give them quite a kick! For a less spicy option, replace the fiery birds-eye chillies with a milder red chilli.’

Pineapple and mint soda ‘This non-alcoholic cocktail is a great choice for children or non-drinkers. You can always add a splash of rum for an alcoholic version.’ FOR 6 SERVINGS ½ small, ripe pineapple Tin crushed pineapple in juice 4 limes, cut into quarters 3tbsp caster sugar Two large handfuls of mint leaves
500ml soda water Two large handfuls of ice 1 Peel and core the fresh pineapple and cut into small chunks. Empty the crushed pineapple into a jug with its juice. Fig, pecorino and honey flatbread MAKES 2 LARGE FLATBREADS, enough for 15 as a canape or 6 as a generous starter FOR THE DOUGH 700g strong white bread flour ½tbsp salt 1tbsp caster sugar 1½ 7g sachets of fastacting yeast 4tbsp olive oil 500ml warm water FOR THE TOPPING 6 fresh or 12 semi-dried figs Small bunch of rosemary leaves, picked
Crab tarts with chilli mayonnaise MAKES ABOUT 12 300g ready-rolled puff pastry 1 red chilli, seeds removed 2 spring onions Large handful of coriander 300g crabmeat (white and brown, or just white) Juice of 1 lemon 2 egg yolks 200ml vegetable oil 1 Preheat the oven to 180°C/ 160°C fan/gas mark 4. 1 First, make the dough, ideally the day before. Place the bread flour in a large bowl with the salt and sugar on one side and the yeast on the other. Add the olive oil and most of the warm water. Use your hands to combine to a very soft dough. If it feels too dry, add the rest of the water. It should feel quite wet. 2 Knead the dough on a lightly oiled surface for at least 5min or mix in a food processor with a dough-hook attachment. Place in a lightly oiled bowl and cover with clingfilm. Leave in the fridge overnight or in a warm place for an hour or so, until the dough has doubled in size. 3 Preheat the oven to 220°C/ 200°C fan/gas mark 7. Once risen, remove the dough from the bowl and knead again to knock the air out of it. Divide into two balls and roll or pull apart each ball to cover the bases of two lightly oiled out 12 circles (around 7cm diameter) of puff pastry and place on a greased baking sheet. Place another baking sheet on top to stop the pastry from rising and press down gently. Bake for 15min until crispy and golden. Remove from the tray and leave to cool. 2 Very finely chop the red chilli, spring onions and coriander. Reserve half of the chilli and coriander and combine the remaining mixture with the crabmeat and spring onions. Season with salt and pepper and a squeeze of lemon juice. 3 For the mayonnaise, put the egg yolks in a food processor and whizz on high speed. Very carefully, start to add the vegetable oil, a little at a time, until the egg yolks start to emulsify. If the mixture gets too thick, add a little water. Add a squeeze of lemon juice and salt to taste, then blend together until relatively smooth.

Make very fine cuts into each potato, all along one side without cutting all the way through. A good trick is to place each potato on a wooden spoon before cutting, so that its edges prevent the knife from going all the way through the potato. 2 Once you’ve sliced them all, place onto a large baking tray, spread out in one layer (use more than one tray if necessary). Squash the garlic cloves with the flat of a knife and dot them around the potatoes. Toss in the olive oil and season with salt. 3 Roast for around 40min, turning occasionally to make
peeled and finely chopped 4tbsp sesame oil 1tbsp caster sugar Juice of two limes 1tbsp fish sauce 2tbsp sesame seeds, to serve 1 First, make the dressing. Mix together the chopped banana shallot, chopped garlic, half of the bird’s eye chillies, ginger, sesame oil, caster sugar, lime juice and fish sauce in a small bowl. 2 When ready to serve, pull the leaves off the baby gem lettuces, discarding the very small ones, and lay out on a platter or tray. Place a small amount of the cooked rice noodles in the bottom of each lettuce cup, followed by two or three prawns. Drizzle with the dressing, scatter with the mint leaves, chopped chives and the remaining chillies. Sprinkle over the sesame seeds.

Christmas-spiced pecan popcorn
Roast grape, goats’ cheese and hazelnut crostini MAKES 12 12 ready-made crostini, or 12 slices of ciabatta or large baguette, cut to roughly 1cm thick 2 large bunches black grapes 3tbsp balsamic vinegar 100g soft goats’ cheese 200g semi-soft, crumbly goats’ cheese Large handful of hazelnuts, roughly chopped Dill fronds, to serve 1 If you’re making your own crostini, dry the slices of ciabatta or baguette in the oven at 120°C/100°C fan/gas mark 1 for roughly 30min, so that they’re crisp but not coloured. 2 Raise the oven temperature to 190°C/170°C fan/gas mark 5. Place the grapes on a baking tray and drizzle with the balsamic vinegar. Roast for around 20min, turning occasionally, until dark and pleasingly sticky. 3 Spread the soft goats’ cheese over the crostini. Crumble over the firmer cheese, add a few roasted grapes and some chopped hazelnuts to each crostini and serve decorated with a couple of dill fronds.

Once the corn has popped, spread out on a baking tray with the pecans and cover with the butter mixture. Mix together with your hands until well coated. 3 Bake for 10min until the sugar just starts to caramelise. When cool, serve in bowls.
MAKES 2 BIG BOWLS OF POPCORN 1tbsp vegetable oil 200g popping corn 150g butter 50g brown sugar 1tbsp ground cinnamon 1tbsp ground ginger 1tsp allspice 1tsp sea salt flakes 100g pecans
Rose and white chocolate Madeleines MAKES ABOUT 15 125g butter 40g plain flour 40g ground almonds 100g icing sugar 3 large egg whites 2tsp rosewater Flour and butter, for greasing and dusting 150g white chocolate 2tbsp dried rose petals 2tbsp shelled pistachios, roughly chopped 1 First, make the beurre noisette (brown butter). Heat the butter until melted and bubbling. When the bubbling stops and the butter has gone a nutty colour, remove from the heat and transfer to a bowl. Don’t leave the butter in the pan as the residual heat will burn it. 2 Sift together dry ingredients, then whisk in the egg whites one at a time. Once the beurre noisette has cooled, add and whisk thoroughly. Add the rosewater, a little at a time to taste – you might need more or

less depending on its strength. 3 Cover mixture with clingfilm and leave to rest in the fridge for at least an hour. Preheat the oven to 170°C/150°C fan/gas mark 4 and grease a Madeleine pan liberally with butter. I use a silicone pan, which means the Madeleines pop out perfectly. If you’re using a metal pan, make sure you dust it with flour, too. 4 Pipe or spoon the mixture into the pan, being careful not to over-fill. Leave to rest in the fridge for another 30min. This will cause a skin to form, allowing the Madeleines to rise into their signature shape. 5 Bake in the preheated oven for around 14min, or until golden brown and risen. Leave to cool for 5min in the pan then turn out onto a cooling rack. 6 Melt the white chocolate in a bowl over a pan of gently simmering water. Dip the cooled Madeleines into the melted chocolate and sprinkle with a few rose petals and chopped pistachios.

Chocolate ganache sandwiches MAKES 15 FOR THE BISCUITS 140g plain flour 40g cornflour 60g cocoa powder 60g icing sugar 170g butter, softened FOR THE GANACHE ½ cinnamon stick Peel of small orange 90ml boiling water 100g caster sugar
1 Preheat the oven to 160°C/ 140°C fan/gas mark 3. Sift together dry biscuit ingredients in the bowl of an electric mixer with a paddle attachment. Mix on a low speed, then add the butter to form a breadcrumb consistency. 2 Form into a dough and roll small amounts (about a teaspoon each) into balls. Place on a baking tray lined with parchment and press down gently with the back of a fork dipped in icing sugar to spread into small discs. 3 Bake for 25min, remove from the oven and gently transfer to a cooling rack. Be careful, as they’ll be quite delicate. 4 While the biscuits are cooling, make the ganache. Place the cinnamon and orange peel in the boiling water and leave to infuse for 20min. Place the sugar with the cold water in a saucepan and place over a medium-high heat until the sugar melts. Increase the heat and bring to the boil until the sugar turns a light amber colour. 5 Remove from the heat and strain the orange and cinnamon water into the caramel. Add the chocolate and allow it to melt. Add the butter, a little at a time, stirring until it’s a smooth, thick ganache. Put in the fridge. 6 To assemble, sandwich a little of the cooled ganache between two biscuits and gently press. HB

C H E E SE F O R S H AR I N G A cheeseboard after Christmas dinner is as traditional as plum pudding, and experts say that Stilton is still the first choice. But what else could you serve? There’s currently a resurgence in interest in British regional cheeses, and Sarah Stewart from artisanal cheese shop Neal’s Yard Dairy, tells us she will be serving a rich Montgomery’s cheddar and either an Appleby’s Cheshire or a Kirkham’s Lancashire. ‘Sticking with the traditional theme, I’d also have a Caerphilly made from goats’ milk and a European-style
soft cheese that’s been made in the UK.’ Meanwhile, at long-established Paxton & Whitfield, Hero Hirsh advises serving fewer cheeses in bigger quantities. ‘More than four is confusing on the palette,’ she says. Her choice would be a soft brie marbled with trule, a cheddar or gouda, and her wildcard would be Ossau Iraty, a sweet and fudgy cheese from the Pyrenees. And the best time to break out the cheeseboard? ‘Several hours after lunch, when the chaos has died down,’ says Sarah, ‘with slices of apple to cleanse the palate.’

Fred Campbell, spirits expert and founder of Cock & Tail drinks catering company, shares his advice on the combinations that form the base of the perfect cocktails WHEN DID COCKTAILS BECOME SO POPULAR? Before setting up Cock & Tail in 2014, I worked in hospitality, and gradually began to notice that people were becoming interested in cocktails rather than just opting for wine, beer or prosecco. Then suddenly, a few summers ago, everyone started drinking Aperol Spritz, which kickstarted a wider interest in a whole range of spirits and cocktails. WHICH SPIRITS SHOULD WE STOCK UP ON FOR OUR CHRISTMAS COCKTAILS? Vodka and gin have arguably been the most popular spirits, and people have also really got behind all the many different types of gin – pink, botanical and sloe to name just a few – so they’re worth having. I think we’ll start to see something similar emerge with tequila. WITH THAT IN MIND, WHAT’S THE BEST TEQUILA TO USE? Silver (Blanco) tequila can be used in cocktails, but can also be enjoyed alone. The darker Anejo (aged) tequila won’t hold up as well in cocktails but is great for sipping. CAN YOU SUGGEST SOMETHING DIFFERENT TO TRY FOR CHRISTMAS? Eastern Influence is truly delicious. Brew a strong cup of jasmine tea with three teabags then discard. Mix with a cup of caster sugar to make a syrup. Put 30ml vodka, six cucumber chunks, 20ml lime juice and 15ml of the tea syrup into a shaker. Hard shake over ice for 10 seconds. Fill a highball glass with ice, strain cocktail into the glass. Top up with a third of a bottle of ginger ale. Stir. Garnish with a mint sprig.

WHAT CHRISTMAS MEANS TO ME EMMA BRIDGEWATER

For British pottery designer Emma, mince pies, home-reared turkey and family carols at her Oxfordshire home are just a few of her fondest Christmas traditions
Some of my earliest Christmas memories are of decorating the tree with my sister Sophie and brother Tom; it’s something my four children have also enjoyed doing together over the years. As a family, we love Christmas music and enjoy singing carols around the piano together – my son Michael was a chorister one year, and I love hearing him sing. On Christmas Day, we have a big breakfast to keep us going, then eat our main meal later in the afternoon. It usually stars one of the turkeys from our own flock. I adore Christmas pudding, but seem to be the only one. Each year I try to tempt my family with my own version, which I make on Christmas Eve. It’s full of apricots, figs and lots of orange and lemon juice. With all the eating that goes on, I like to fit in some long river walks, which the labradors are also always grateful for! I love bonfires, and at Christmas there’s an excuse for one every day. Twelfth Night is perfect for a bonfire at dusk. I’ve almost always spent Christmas at home in Oxfordshire with my family, but now that the children are grown up, I like the idea of 178 housebeautiful.com/uk
going abroad. One of my daughters is living in Mexico, so I’ve been toying with the idea of visiting at Christmas. I’m already dreaming of the gorgeous decorations I’ll find there!
MY HOME I approach Christmas decorating in the same way I’d style a dresser. I dig deep into my archive of decorations, pairing old favourites with new. My mother received a card when I was born – just before Christmas – from my grandfather that said ‘Blessings on Charlotte and her baby girl’. It occasionally resurfaces, and gets a special place on the tree. There are some lovely 1960s pieces I have that I mix with more current buys, and I always include some of the tiny Emma Bridgewater china items on the tree. This year, I’m looking forward to using the new little mugs with gold initials – it took a long time to get the colour just right. The more candles the better at this time of year, and I even take the time to polish my brass candlesticks! I enjoy eating by the light of tall, cream church candles, surrounded
by ivy and branches of bay. Each year, I do as my mother and grandmothers did, incorporating traditional pieces of family china among the dinnerware, such as a well-loved platter for the turkey, and a dedicated dish for the pudding.
MY INSPIRATION I absolutely love mince pies, which is why there’s always at least a couple of plates for them included in the Emma Bridgewater collection each Christmas. Our plate at home gets a lot of use in the winter months, I’m ashamed to admit! When I’m designing, I always think back to Christmas at home – opening stockings, going to church – and remember how special the day feels. Every year, we design a densely decorated pattern in red and green, and this Christmas, I’ve added a reindeer to our traditional Joy range. I also enjoyed making a festive edition of our signature Black Toast pattern – it’s been reconfigured as Christmas Toast. It’s so satisfying to see an existing pattern take on a new life. HB
