I keep it simple at Christmas – classic brown paper, some ribbon or twine (no tape) and I use a set of alphabet stamps to print the names of my family members on their gifts in red ink. It looks sweet and old-fashioned, like a gift from the 1940s.

I love wrapping presents neatly, making sure the seam is underneath, but never tie them with ribbon, even though I have lots of it in a box (it never seems to go with the paper!). Then I get the kids to make me gift tags out of last year’s cards and attach them with ribbon or natural string.

I tend to leave my wrapping to the last minute. But when I get around to it, I like to use a mix of papers – usually a simple colour combined with a beautiful print. I use natural twine for tying, then add a handwritten note for each family member.

I save all the A3 paintings and drawings the kids do at school throughout the year and wrap pressies in those – people love the personal touch and it requires very low efort from me!

I’m notoriously bad at wrapping presents, so much so that I avoid the task altogether. I usually opt for a gift bag, but this year I’m feeling inspired by our ‘30 steps to a sustainable celebration’ (page 52) and will use cloth bags that the recipient can use as a shopping bag afterwards. On the day, I’ll head into the garden to find a special bloom for each person and tie it to their gift with string.

I’m all about using free or reused paper. Each year, I love the gift wrap that comes with the YH&G December issue, and this year’s prints are particularly cute! Plus they come with matching cards and gift tags so my wrapping is sorted.

Tie the knot Knotted-fabric wrapping is an attractive and eco-friendly way to present your gifts. This method works best with boxed items and you won’t need any sticky tape or ribbons.

STEP ONE Place a large piece of fabric patternside down on a flat surface. Make sure you have enough fabric to go around the gift and leave long enough ends to tie together. Place your boxed gift in the centre of the fabric on the diagonal.

STEP TWO Fold the fabric over the sides of the box just as you would with gift paper, and fold or roll the corner pieces over a few times in the middle. Flip over the box so the folded fabric is now on the bottom.

STEP THREE Neatly bring the two remaining corners up to meet each other, tucking in the rough sides to create a neat fold.

STEP FOUR Tie the fabric ends in a knot and tuck the rough edges under the knot to hide them.

ur glorious floral Christmas photoshoot was originally inspired by the luxe brass countertop in Blush, Kelly Karam’s Auckland floristry shop, but on the day, some very special blooms muscled their way into the spotlight.

“There was some wisteria available on the morning of the shoot so I felt we had to add it in!” says Kelly. “I love colour and am inspired by unexpected combinations. The dark berry, lilac, blush and white we used here is a dream.”

With the addition of pale marble, warm, luxurious brass and, you guessed it, blush pink into the palette, our bold yet feminine Christmas setting was ready for its close-up.

Although it may seem complicated, this look is actually easy to achieve at your place. It’s all about having fun with colour, planning your arrangement, buying flowers that are in season and making it work for you on the day.

> Fresh or fake? Start by deciding if you want to use fresh blooms or faux flowers. To enjoy a floral tree for the whole of December, we recommend using a base of faux flowers and adding in a few statement blooms from the garden – or the florist – on Christmas morning. > Draw up a plan Make a rough sketch of your tree from its main vantage point. Plan how your decorations will be placed and use flowers to lead the eye around your arrangement. > Get creative with colour It’s fun to deviate from the traditional palette so have a play with some bold hues. Choose your hero colours then use neutral tones to create balance – on our tree, white orchids break up the crimson, pink and lilac blooms. > Fake it to make it If using faux flowers, head to your nearest craft store to see what colours are on ofer before you decide on a palette. Most faux flowers have wire stems that can easily be wrapped around the Christmas tree fronds. > Keep it fresh Our arrangement was put together by florist Kelly, so each stem has a small greenery tube attached to make it last.

If using fresh flowers, ask your local florist for some tips if you need your floral tree to look fresh beyond the big day. > Wrap presents in the same colour palette you’ve used on the tree, but don’t try to compete with your flowers if you’ve gone bold. We used gold paper for glam, then softened the glitz with blush linen and ribbon.

Blush owner and florist Kelly lives in Ōrākei, Auckland, with husband Richard and 9-year-old son Hugo. After our photoshoot we sat down for a little chat about what she’s looking forward to this Christmas.

What floral trends are you seeing for Christmas?

Colour! I love mixing colours at Christmas. This year, I will be using blush and red. Metallics are also big, so I may include a little brass in the way of vases or a beautiful piece from Tom Dixon.

How do you decorate for Christmas? We love the smell of a fresh pine tree so always have a couple in the house. I like to nestle lights into the tree so you don’t see the cords during the day. I’ve ordered lots of blush and red wooden balls to hang over the tree and will wrap all the gifts in complementary colours – I love Kikki.K for gift wrap.

What does Christmas morning look like at your house? Lots of presents, ham-and-cheese croissants, chocolate, cofee and a little bubbles.

I think this may be the last time Santa visits our house since Hugo is now 9!

What do you love about owning your own floristry business? I love being surrounded by natural beauty. We mostly provide flowers for happy occasions so it’s always really positive.

What are you working on at the moment? Many, many weddings! Wedding season has kicked of and we are crazy with weddings until April 2019.

We are also branching out into a full styling and event design service in the new year. •

Simplify the season. Buy fewer presents and less food, and opt to travel as little as possible. Slow down and make the most of the family moments instead.

Is your family doing secret Santa? Suggest that everything gifted is either secondhand, homemade or eco-friendly in some way.

Reuse paper and ribbons or use cloth bags for wrapping. If you are buying new, opt for recycled and recyclable paper, or use natural string or raffia.

Plywood trees and wreaths are made from natural materials and can be reused year after year. Woodenspoons.co.nz makes trees and Love Bradbury offers cute wreaths that foraged blooms can be added to.

Consider whether the presents you’re buying, or asking for, are ethically made. Trade Aid has a number of gift options, plus decorations, gift wrap and cards, or you can hunt out Fairtradecertified or other ethically produced presents.

Instead of cutting down a tree or buying an artificial one, which will eventually end up in landfill, opt for a potted tree you can keep inside or plant out later. You could also consider decorating an outdoor tree.

If you buy a real tree, make sure you dispose of it properly by recycling it into mulch, compost or firewood. Some Christmas-tree farms and transfer stations offer this service, or you can enlist a Christmas-tree removal company or garden-bag collection service.

Minimise your lighting. You don’t need to deck the whole house out in Christmas lights. For those you do use, choose energy-efficient LED lights, replaceable bulbs and solar-powered bulbs for the outdoors.

Send digital Christmas cards or make your own from recycled paper or last year’s cards – simply cut the front off and write on the back like a postcard.

Free-range and organic meat will make for a more sustainable Christmas feast. Freedom Farms offers freerange turkeys, hams and more. You can also visit your local butcher or buy online from clarksorganicbutchery.co.nz.

Alternatively, go meatless for Christmas lunch. If that’s too controversial, consider offering just one meat option.

Skip disposable plates and cups, as well as straws and paper napkins. Ask everyone to bring their own plates or get them to pitch in with washing the dishes.

Purchase presents from charities, or give a donation on someone’s behalf (many charities have gift catalogues to choose from, with items such as mosquito nets, schoolbooks and chickens). You could also donate any unwanted gifts to charity.

Go without plastic-filled Christmas crackers. Make your own instead using paper-towel rolls and recycled paper, or buy a DIY cracker kit, so you can pop your own homemade gift inside.

If you are indulging in seafood over the silly season, check out bestfishguide.org.nz to ensure you are eating sustainably caught fish or shellfish.

Give practical presents to those starting out on their sustainability journey. An eco-friendly lunch box, reusable straws or food wrap, or even a bokashi bin are useful gifts that will help minimise waste throughout the year.

etting together with the people in your life to mark the end of another year is one of the best things about the holiday season. Whether it’s breakfast with extended family, dinner with friends or drinks with workmates, it feels good to take stock and share those rare moments of rest and reflection. When the Your Home and Garden team gathered at editor Kristina’s house recently, style director Catherine and art director Fiona put together a festive table that you can easily recreate at your place. Here’s how they did it…

Flowers & foliage When you think about Christmas foliage, the colour that commonly springs to mind is evergreen, but shades of crimson and rose were the order of the day at our YH&G lunch.

Especially with a lush backdrop like the native bush at Kristina’s West Auckland home, adding colour through flowers and foliage is a great way to bring your table to life.

Fiona chose flowers such as carnations, manuka, sweet william and hemlock to provide colour in vases, then at the last minute Catherine dashed off to forage for slender eucalyptus branches, which she draped along the centre of the table. This gave the setting a beautiful lushness as well as being in keeping with our Antipodean Christmas.

Food & table With a strong colour palette established, the next step was to add contrast. Catherine did this by using plenty of glowing gold and brass tones in the place settings, which created a rich, festive effect alongside the deep reds and pinks. Soft grey plates and linen napkins help to ground the arrangement, while pure white candles added light and a touch of formality.

It’s up to you whether to use a tablecloth – Catherine and Fiona opted not to, as the occasion was casual and they loved the colours in this Vitrine table and bench set. However, a vintage rug beneath the table, plus a few velvet cushions, made this relaxed outdoor setting feel a little bit luxe and kept the overall effect from being too austere.

When it came to the food and drink, our resident foodie Kristina really turned it on.

fresh hummus, charcuterie, crackers and bread looked gorgeous with our stylists’ table decor. And we all learned a good trick – a cut tamarillo on a cheese board instantly makes it look more appealing!

FESTIVE MINI MERINGUES Arrange store-bought mini meringues on a serving plate. In a bowl, whip 500ml cream and then combine with 3 Tbsp good-quality maple syrup, 1 Tbsp vanilla paste with seeds and 200g crème fraîche. Dollop this mixture on top of each meringue, sprinkle with freeze-dried raspberry powder and scatter with sliced fresh strawberries.

NON-ALCOHOLIC BERRY FIZZ Pour a selection of frozen berries (we used raspberries and boysenberries) into the bottom of a large jug until it’s a quarter full, then stuf a large bunch of mint down each side. Fill with lemonade, top up with more frozen berries and mint, and serve.

“We hand-pick a real tree every year as a family – it has to be a real one,” smiles Milly. The family look forward to their annual outing to The Christmas Tree Farm in Hamilton, where they carefully choose that year’s pine tree, before hauling it back to their Pirongia home to decorate.

It’s not just the fragrance of pine that wafts through their Waikato abode at Christmas.

Their 170-square-metre Lockwood home sits on an acre of land, much of it planted in roses, dahlias, annuals, perennials, herbs and foliage for their flower-farm business, Primm Gardens.

Here, Milly grows (and designs) seasonal blooms for weddings, events, wholesale orders and Christmas displays.

“In December, I go to town, filling the house with floral wreaths, garlands and arrangements, as well as large bowls of fresh fruit and nuts,” she says. “It smells wonderful!”

Although Primm Gardens has more than 500 roses in 70 varieties, it’s dahlias that are the focus of Milly’s own Christmas floral arrangements. “At that time of the year, the dahlias are just starting to bloom. There is such a wide variety of forms and colours to play with, so it’s fun creating with them!”

FREE SPIRIT Milly describes her decorating style as eclectic, fun and family-friendly. “I don’t have any set style rules.

Our home is a mix of everyone’s favourite things and colours. It’s a busy, creative and well-loved place to live.”

PRESENTS OF MIND When asked what she loves about Christmas, Milly laughs.

“Everything! I’ve always loved Christmas. It’s a magic time for kids, and as parents we get to relive that joy and excitement with them. It’s my favourite time of year.”

For Christmas Day, Milly continues an old family tradition in which the children exchange gifts with each other. “I’m the eldest of five and as young kids we would always hunt out a gift for each other at Christmas. Our three now do the same. It’s awesome watching them take time to think about their siblings, to make or find them something heartfelt, and to focus on giving rather than receiving,” she says.

Christmas is either spent at home or close to home, with Milly’s and Paul’s families all living locally. “We alternate hosting lunch, which is the main meal of the day for us all. Christmas is always fun and relaxed, with good food and music, outdoor games and lots of laughs,” she says.

OPEN-HEARTED The family’s Lockwood was built in 2012 and designed to be simple yet modern, following timeless principles.

“It’s open-plan living at its best,” says Milly. “It’s north-facing with generous decking and a big lawn we can use to enjoy Kiwi summers.”

The family moved in three years ago, buying the place from friends who were relocating to Australia. The couple wanted something semirural with enough space for their kids, flowers and dogs, so when the opportunity arose “it felt like it was meant to be”, says Milly.

The aesthetic of the home was already established. The land, on the other hand, was almost bare with only a few young fruit trees in evidence – yet full of promise. “We’ve slowly been working on our plantings over the past few years, adding trees, hedging, rose beds and cutting gardens,” Milly says.

They also put their own touch on the house, adding a master bedroom with walk-in wardrobe and ensuite, as well as a large garage to give them more storage.

At the moment, the living area doubles as Milly’s studio as she juggles flower-arranging with family life, but she says it’s a small price to pay to have the flexibility to be present for her family while also working.

GROWING PASSION Flowers and gardening have been Milly’s passion for the past decade, since having children. She’s self-taught, in both floristry and growing flowers, so building Primm Gardens from scratch has been a handson endeavour. Milly’s had to studiously learn the right way to do things, discovering what plants do best in their soil type and climate and building on that knowledge year by year.

There are always challenges. With no hothouses, the weather can really make or break a ‘flush’ (the point at which all blossoms are open). Most of the plants Milly grows are fairly resilient, but too much of anything – heat, rain, wind – can be stressful and encourage bugs and disease. These risks are constant, with no two seasons the same. But it’s all worth it to Milly.

“It’s an outlet for my love of growing and creating,” she says. “It’s a privilege to work with nature and the seasons; the pace and beauty involved. I love that my work is so varied and creative, and that I get to meet so many special people along the way. The floral styling has been a beautiful consequence and something that brings me immense joy.”

H GET THE LOOK CHRISTMAS QUIZ What will you be eating on Christmas Day? Milly: My dad owns Magills Butchery in Te Awamutu, so we are spoilt for choice in the meat department. We’ll have roast leg of lamb, whole scotch fillet and glazed ham.

Everyone brings their own specialty salad – Greek, Caesar and Caprese – and we have freshly dug spuds from the garden.

What will you be drinking? Champagne with strawberries. We’re also big craftbeer fans, so there’s always a good supply of Garage Project brews on hand.

What do you do to style your home for the festive season? Every year we each find a new decoration for the tree, so we have a decent collection now and a pretty unique-looking tree! Each decoration is so special to us, because they each represent a time, place and memory for our family.

What’s your advice for using florals at Christmas? Try your hand at some festive florals – a herb-filled wreath or a lush garland for the dinner table brings a beautiful, natural vibe to celebrations. •

There have been so many happy times shared with family and friends here over the past three years. We love throwing parties for birthdays and Christmas; our home is a go-to for our extended-family gatherings and it’s such fun to get everyone together. Background When Dharlia and Ty Lynch returned from an extended OE in Margaret River, Western Australia, deciding where to settle was a no-brainer. Muriwai on Auckland’s west coast is where Ty grew up, as well as where he and Dharlia first met. With its famous surf beach, as well as a location and community vibe that suited them both personally and professionally, it was a match made in heaven.

“Muriwai is a pretty special place for us,” says Dharlia. “Ty grew up out here, I moved here 15 years ago, we met here 14 years ago and our son has lived here since he was born.

We’ve hit the jackpot as far as our lifestyle goes, plus the community here is unreal. There are bush walks, a bike park, skate park, golf course and the beach, all just minutes from home.”

Serendipity played a hand in the Lynches’ journey to home ownership. While living in a rental, they watched as the Auckland property market escalated and even the most modest Muriwai baches quickly became unaffordable.

But the township’s tight-knit community didn’t disappoint and it wasn’t long before the family found a solution within their reach. While out walking one morning, a casual chat with friends in the driveway led to an offer for Dharlia and Ty to purchase an 1800-metre section next door to the home they were renting.

“Funnily enough, we stored all our belongings in the owner’s shed next door years before, when we were living overseas,” remembers Dharlia. “I used to fantasise about building a house on the plot where our neighbours now live. It’s funny how things come full circle. We made a private offer to the owners in January 2015 and by March 2015 it was ours.”

Nearly two years of clearing invasive weeds followed, revealing groves of mature nikau, kanuka and ponga in the process, and allowing the couple to map out a building platform.

KITCHEN The kitchen was designed with a clear budget in mind and a ply benchtop kept costs down. Dharlia splurged on the hero piece, a Douglas & Bec Y chandelier in brass.

The build The idea of bringing a relocatable home to their site was ruled out early – a covenant protecting native trees on the property meant Dharlia and Ty were limited as to where they could build. Instead, they began researching building companies. Building a new home seemed daunting, especially with limited funds, but then the couple discovered Durapanel, a flatpack system which would enable them to design their own home and have it manufactured off-site.

“We designed all the aspects of the house ourselves, from the kitchen through to bathroom layouts and wardrobe design, and spent many nights doing cut-and-paste mock-ups of our home,” recalls Dharlia. “Durapanel took care of the concepts and building-consent drawings, which were included as part of the package.”

As luck would have it, the covenant was then lifted under the new Auckland Unitary

Plan, meaning resource consent was no longer required, but by then the Lynches were happily committed to their home design.

Dharlia and Ty enlisted Nest Builders to bring their vision to life and the home quickly took shape on-site. The couple worked with Nest to outsource to local contractors, which was another cost-saving factor.

“Nest worked through the most horrendous winter on record and delivered a home we are so proud of, in record time,” says Dharlia. “Kris from Nest was also happy to hand over as much or as little of the outsourcing for subcontractors as we wanted. Apart from Durapanel, all our contractors and subcontractors were locals, whom we felt really good about supporting.”

OUTSIDE The family love to spend time outdoors, so 100 square metres of deck was an essential part of their home’s design. Dusty and his friends spend hours circling the house on their skateboards and utilising the mini ramps dotted around the property.

Describing their home as a “mash-up of eras and styles”, Dharlia and Ty say their aesthetic is inspired by mid-century ranch homes but has a modern coastal twist that includes heaps of vintage furniture and local art.

“Just about all our furniture has either been inherited, gifted, found by the side of the road, upcycled or made by us. People have told us that for a new-build, our home has soul, which I think is due to the nature of our inherited goods. We like the fact that these things were made to last and we’re still enjoying them decades later,” says Dharlia.

Art is a major focus in the house and the couple have chosen some large pieces to create drama against the minimal white walls.

“We love art and tend to go for large pieces imbued with colour. We’re lucky in that there’s a talented pool of local artists (and friends) out here and we have invested in or been gifted pieces by Catrina Lloyd and Matt Sinclair, and we also love Tanya Blong and Cherise Thomson.”

“Last year we hosted our first Christmas in the house and it was really lovely,” remembers Dharlia. “Intimate but fun, with all the food served up on our island bench and then casual eating around the table. Ty’s mum makes a beautiful ham, and my mum and the rest of our family put together lots of fresh salads and some yummy desserts. I’m a sucker for pavlova, a berry fool or an Eton mess, so there’s definitely one of those on the cards.”

This year, the Lynch family are excited about continuing their new traditions. Weather permitting, they are planning a lazy beach afternoon at Muriwai, with hopefully a surf and a few family games.

“We plan on doing archery with a homemade target again,” says Dharlia. “We had a ball doing this with the whole family last year, followed by some hammock time in the sun. Ty and I always

hope for a Christmas Day surf, too. We just love it if we don’t have to leave the beach!”

This year, Dharlia intends to move the dining table outside for an al fresco meal with the nikau providing a natural backdrop and all-important midday shade. Decorating is likely to remain minimal, with a focus on natural materials. Dharlia loves foraging for local flowers – hydrangeas are abundant in December in her area and provide a relaxed reminder of the warm summer days to come. Driftwood, linen, simple wrapping and a pared-back table setting will complete the picture and, since Dharlia and Ty are both allergic to pine, they’ll be thinking outside the square when it comes to a tree.

“Dusty and I decorate the tree together each year,” says Dharlia. “Last year we used a fake one, which I loathe, so this year we’ve got a cool printed banner from Pony Rider. We also love using linen bows and lovely wooden ornaments we inherited, plus a bit of tinsel and baubles for good measure.”

Natural flow The home’s 145-square-metre floor area provides ample space for family gatherings, while the pitched ceilings and big windows create an organic sense of flow out onto 100 square metres of decking. Proving to be functional and warm during winter, the house has shown it’s well up to the challenge of life on the wild west coast, but summer is when this special home really comes into its own.

“The flow of our home works beautifully and we wouldn’t change a thing,” says Dharlia.

“We love how sunny and private it is, as well as the wide wraparound deck and the gorgeous outlook of native trees and the abundant birdlife. It is a very calming space as it is so nestled in the bush. We love seeing our son and his friends playing outside while we socialise or make meals. In summer, the doors are opened wide to the deck and beach beyond, while in winter the couple get the woodburner going: “I love nothing more than a roaring sea outside and a roaring fire inside,” says Amy. t goes without saying that proud Gisbornites (“Gizzy hard!”) Amy Moore and Stu Watts – winners of this year’s The Block NZ– will be spending Christmas in their favourite place: their personal slice of heaven right across from the beach in their home city.

After a massive year – which included spending 12 gruelling weeks away from home as they competed on the TV show to transform a brand new townhouse in Hobsonville, Auckland, into a dream home – the couple are looking forward to some downtime and bringing their family together to celebrate Christmas.

“We are not traditionally super-Christmassy but we love to get together for food and drinks and enjoy the company of anyone and everyone,” says Amy. “For us, Christmas is about the kids. We just have our fingers crossed that it’ll be a cracking Gizzy summer’s day.”

Yule be right On 25 December, you’ll find the blended family (Amy has a daughter, Nina, 13, and Stu has two children, Flynn, 13, and Zoe, 11) chilling out with family, friends and no shortage of food. “There’s always a ham,” says Amy. “My Dad usually does pork on the Weber and there are salads and lots of sweets, including Mum’s famous brandy and chocolate ice cream.”

On The Block, Amy’s styling prowess stood out from day one, but she takes a more laidback approach when it comes to decorating for the festive season. “I love Christmas lights and am a big fan of the things the kids make to hang on the tree, but that’s about as far as it goes – a few fairy lights and sometimes a little tree decorated haphazardly with homemade decorations is about the extent of it,” she says.

Highs and lows At some point during their relaxed celebrations, you can bet Amy and Stu will raise a glass of bubbles (actually, make that a beer for Stu) to toast the year that’s been – and their win on The Block which saw them scoop $169,500 and a new car.

“It was such a cool experience. Being on The Block was a total rollercoaster of emotions with the highest highs and the lowest lows. It has definitely strengthened our relationship and made us appreciate the amazing city we both come from even more than we already did,” Amy says.

The pair had separate reasons for entering the reality show: Amy wanted to put her love for interior design and styling into practice and “Stu just wanted to be on telly and be famous!”.

They struggled a bit with the social media trolls – “I honestly think some people thought we were just characters on a TV show and not real people with the ability to read. That was really hard, for me especially,” says Amy, but

they found the experience brought them closer.

“It reinforced our strengths as a team. We both worked to our individual strengths, which I think was the key. We have both done a bit of reno and DIY but never together.”

Beachside bliss The home the couple share was taken through a major renovation by Amy before she and Stu moved in together. It had been a small, two-bedroom 1970s bach belonging to Amy’s family, occupying the back of a large section overlooking the beach – “Potential plus,” says Amy. She redesigned it with the help of a local architect, keeping the existing roofline but changing pretty much everything else, and got stuck into the makeover in the middle of last year. Turning it from a beach shack into a four-bedroom home with a self-contained studio downstairs (which they rent out on Airbnb) and a brand-new double garage entailed an almost complete rebuild.

Amy’s growing mostly herbs and succulents in the retaining beds – “Anything hardy enough to withstand the coastal elements” “Following the reno, Stu and I thought it was a good time to combine forces and families and start the journey of living together as a blended family. We have never looked back,” she says.

To reflect their seaside environment, Amy used plenty of natural materials in the build – such as plywood and wooden floors – as well as concrete, which she softened by adding textured accessories in muted, earthy colours: yellow, burnt orange, emerald. Cane and wicker are particular favourites and feature in lightshades, stools, chairs, planters and outdoor furniture.

Amy says there’s no easy way to describe her decor style. “It’s a little unique. Maybe old-meets-new, a bit of boho, urban jungle and lots of warmth. I’m not a fan of cold colours and spaces. I love nice linen, my bits of taxidermy, and our quirky collection of cushions.”

New direction When you visit their amazing home, it’s easy to see why the couple love living in Gisborne. They’re making the most of all the city offers, with the kids swimming and surfing all summer long while Amy and Stu watch from the deck of their lowslung house which sits right on Wainui Beach.

“One thing that was a must when we rebuilt was a toilet in our garage for sandy, wet children to use,” Amy laughs.

The couple relish being in their own space and having a home that makes entertaining easy. “We have a pretty much open-door policy and live in a community where it’s still okay for kids to ride their bikes around and play cricket on the beach until dark,” she says.

Unlike The Block, where value is added to a home for a quick sale, there are no plans to sell this beachside beauty. “We’ll be staying for ever,” Amy says emphatically. But there is change in the wind: their TV success has encouraged Amy to look at new ways to enrich her work life. After 20 years as a beauty therapist, she’s hung up her wax strips and started an interior design and styling business in Gisborne, renting office space in her friend’s homeware shop, kō.

KITCHEN The cinder-block wall was designed to passively heat the family home as well as being a nod to Shelley and Doug’s favourite architectural era – the 1960s.

A

rt is a vital part of Doug and Shelley McConaughy’s life – they collect it, Shelley creates it and their home is an extension of it.

So when Your Home and Garden visited them recently, it wasn’t a surprise to find the family Christmas tree adorned with a delightful collection of handmade treasures.

Equally unsurprising is that this creative couple opted to sell their recently renovated villa in order to build a brand-new home.

In early 2016, Shelley and Doug bought a five-acre block on the outskirts of Dunedin. Part of a working farm right up until the time of sale, the site was still fenced into three paddocks when the couple took possession. Just a few months later, in September, the property, which had not a stick of planting on it and possessed breathtaking harbour views, began its journey from blank canvas to stunning contemporary home.

H CREATIVE FORCE With Doug’s background as a structural engineer and artist Shelley’s natural flair, combined with a wealth of house-building experience (the pair have clocked up an astonishing 11 new-builds and one renovation), the McConaughys decided to design their new home entirely on their own.

That’s right – no architect and no draughtsman, just a blank piece of paper and their joint creative powers.

“We designed everything from the floor plan to the cladding; from window placement to interior design. Even the council consent lodgements were done by us,” says Shelley.

They were also keen to build a home that exceeded current building regulations for insulation and efficiency. “When considering a new-build, it’s important to think about futureproofing – such as installing an electric car plug outlet and choosing fittings and finishes that will last the distance,” she explains.

NEXT LEVEL The build took six months and the family lived in their former villa home in Dunedin while it was under way. Not satisfied with simply designing their home, the couple also decided to project manage the build, despite being well aware that the role would require making daily – and often difficult – decisions on-site. But they weren’t daunted by the prospect and thoroughly enjoyed the whole building experience.

“We tried to help out on-site as much as possible – together we laid the cork flooring and stained over a kilometre of weatherboards,” says Shelley.

Clever lighting has been used throughout to highlight beautiful pieces created or collected

by Shelley. The colour palette is earthy and natural to ensure the vast collection of paintings, photographs and sculptures are able to shine.

Shelley’s favourite design feature is the cinder-block walls between the lounge and dining area and the hallway and older son Oscar’s room. Not only do they look beautiful and provide an interesting backdrop, the blocks help to heat the home during winter.

“Just as stones soak up warmth, the cinder blocks absorb heat from the fire or the sun and release it throughout the day,” says Shelley.

As well as being designed with passive heating in mind, this home also takes maximum advantage of its position. Sunlight floods through huge windows which also frame views of rolling green pastures and the sparkling Otago Harbour, creating natural artworks that can be enjoyed from every room.

HANDMADE CHRISTMAS Every year, the McConaughy family Christmas tree tells a story. “I have some of my grandma’s decorations that she handmade and I love that we think about her every year when we decorate the tree,” says Shelley.

The family also treasure trinkets made by Oscar, 15, and his brother Eli, 13, when they were at Playcentre and primary school, baubles given to them by friends, and others that Shelley has made or repaired. “Decorating the tree this way is a lovely way to link some really special times and people to us every year,” she says.

Christmas this year will be spent at home with family, many of whom will be travelling to Dunedin from around the country and haven’t yet seen the finished house. A white linen

tablecloth kept for special occasions will be draped over the dining table and Shelley will forage for greenery to arrange on top, alongside vintage deer ornaments, candles and fairy lights for a truly festive feel.

THE END Although the McConaughys show signs of new-build addiction, they say this house may well be their last.

“We have a history of building, but this home is absolutely my favourite as far as location, function and form goes,” Shelley says. “We can never say never, but we have no intention of building again at this point.”

Christmas is sure to find this harbour house looking its best, and Shelley looks forward to many more within its walls.

“We absolutely love it here. It’s peaceful, beautiful and endlessly changing.”

edecorating her 1950s house in Anderson’s Bay, Dunedin, required a lot of planning for Kathy Baughan.

“For years I’ve cut up design magazines and pasted pictures in a journal to create my wish list and personal style,” she says.

Once ready, Kathy, who works in childcare and as a sales consultant, gave the seaside home a “modern, beachy” makeover, with a fresh white

rriving on a Friday night, I was definitely ready for cocktails and conviviality, and the Cordis Lobby Lounge didn’t disappoint.

The contemporary elegance of my surroundings blended perfectly with traditional Kiwi hospitality - in no time I was sipping a delicious aperitif made with locally-distilled rhubarb gin.

Famished later and unsure what I felt like eating, I headed to Eight restaurant, with its signature “interactive dining” – eight specialist kitchens offering grill, seafood, salads, Chinese, Japanese, Indian, Italian and delectable desserts, all under one roof.

Under the guidance of executive chef Volker Marecek, the emphasis on locally sourced, sustainable and seasonal products was clear to see. Cordis kitchens produce very low waste, too, something which staff are justifiably proud of.

After my chosen starter of octopus and oysters, it was time for meltingly tender lamb accompanied by coriander naan fresh from the tandoor ovens, followed by a thorough trial of the dessert buffet.

I love a leisurely hotel breakfast, so in the morning I opted for the Executive Club - which, if you can tear yourself away from the view, serves crisp bacon, eggs, warm pastries, continental selection and a daily fresh smoothie.

Club privileges also include complimentary snacks and beverages all day, or drinks and canapes come evening.’

No visit to Cordis is complete without experiencing High Tea by Cordis, and the resident tea sommelier ensures you don’t confuse your Assam with your Oolong. When it comes to flavour-matching, I always take advantage of expert advice and the staff were both charming and knowledgeable. The food is outstanding, clever and intricate, but the highlight was a house-blended tea of camomile and butterfly pea flowers. Bright blue when poured, turning to violet when lemon was added, this liquid magic concluded a marvellous meal.

By now a soak in the jacuzzi was calling, followed by a delicious dinner in the quiet comfort of my room. Morning found me enjoying excellent coffee and a delectable porridge that was almost too pretty to eat – almost.

The Cordis free shuttle will drop you within an easy stroll of the CBD eateries, and ethnic dining options abound in nearby Karangahape Rd and Newmarket, however Cordis provides such a comprehensive range of offerings I simply had no reason to leave.

ART ATTACK To create this simple ‘Welcome to my jungle’ artwork, paint a round art canvas in Resene ‘Quarter Sisal’. While it dries, hand-cut letters from a sheet of contact adhesive or print out your chosen message, trace the letters onto the adhesive and cut out. Peel of the backing and stick letters onto canvas, smoothing down the edges so no paint will bleed underneath. Coat entire canvas in a paint colour of your choice – we used Resene ‘Noosa’. Dry overnight then peel of the letters.

SHELF SAFAR I This DIY bookshelf-cum-headboard provides a great focal point for a bedroom, as well as being a fun and functional way to keep books or a glass of water handy. All that glitters Creating a sense of luxury is all about the details. In this setting, a panelled wall, plush velvet sofa and brass or gold elements come together to evoke a feeling of classical elegance.

In contrast, we kept the festive pieces simple and understated.

Alternative tree Sometimes it’s the simplest things that make the most impact. In place of a tree, we hung three glittery stars against a cool, white backdrop to create a subtle, festive feel.

The sparkle of the stars sits well alongside the brass items, artwork and the star on the coffee table, and makes the room work as a whole.

Wrapping To allow the glittering elements to take centre stage, we kept the presents simple yet chic with glossy black paper, gold cord and luxe gift tags.

Peachy keen A neutral scheme promotes ease of living and gives you the freedom to add a few hints of colour, as we’ve done here with peach and apricot. This room is filled with natural elements that create interest yet are still harmonious.

Alternative tree If your style tends towards the minimal, this pot and branch ‘tree’ could be perfect for you. Select your pot, place four oasis blocks (also known as floral foam) in the base and position screwed-up newspaper around them to keep them in place. Stick your chosen branches into the blocks and tweak until you’re happy with the arrangement. Cover the foam with straw or a piece of fabric, then decorate the branches. We upcycled some old ceramic decorations, painting them with testpots of Resene ‘Nullarbor’, Resene ‘Okey Dokey’ and Resene ‘Sour Dough’ and, when dry, threading twine through the holes for hanging.

Wrapping To coordinate with the minimal style of this room, we kept the wrapping simple, using a combination of natural brown gift boxes and plain peach-toned wrapping paper. We also wrapped a few smaller presents in fabric.

To decorate, use natural string or twine with a simple gift tag and add some dried foliage or a tree decoration.

Tropical feel If you have a laidback, tropical vibe going on in your home, you may be inspired by our palm room. The combination of Resene ‘Forest Green’, crisp white and textured elements such as the rattan table, light, basket and rug, makes for a fresh, festive feel.

Alternative tree This strong green wall is the perfect backdrop for a DIY palm-leaf wallpaper tree. To make it, take a sheet of plywood and cut into a triangle (ours is 181cm tall by 120cm wide). Lay the triangle on the floor and roll a piece of wallpaper down the middle. Use either glue or double-sided tape to fix the wallpaper to the board. Trim off excess and secure the edges at the back of the triangle. If the lower corners are still showing, cut two more pieces of wallpaper to cover them up, ensuring you line up the pattern; trim and secure as before.

Now simply lean your ‘tree’ against a wall and top with a star.

Wrapping To harmonise with the palm theme, use the leftover wallpaper from the roll to wrap presents. Team with raffia ribbon and gift tags.

If you have lots of presents, keep them tidy by storing some in a basket.

1 A TREE OR THREE A decorated Christmas tree is the starting point for most festive schemes – and some families like to go for more than one. A mini tree or two can be a lovely way to introduce a Christmassy feel into the home. Mini trees cost as little as $5 and can live in a family room, on a hall table, on the kitchen bench or wherever you have the space. You could also add one to a playroom or child’s bedroom and the kids could choose a few special decorations for it or make their own.

2 CANDLES & DIFFUSERS For an easy dining-table centrepiece, create an arrangement of candles down the middle of your table. Mix things up by including different sizes and heights.

For an aromatic option, introduce an oil diffuser with a festive scent, such as pine, cookie dough or cinnamon spice. This is a simple way to add a subtle touch of Christmas.

5 TOWELS & LINENS Christmas doesn’t usually make its way into the bathroom, but there is fun to be had with festive towels. We love these “naughty” and “nice” hand towels from Kmart. Christmas tea towels in the kitchen can also add a merry touch.

or me, Christmas is going to be a bit different this year – the family home I grew up in was recently sold and our annual family dinner is up for a rethink. It’s sad to see this tradition come to an end but, on the bright side, it means our family has an opportunity to start afresh and create a new way of doing Christmas.

I can’t say I’m sad to say goodbye to Mum’s favourite purple decorations! Instead, a lighter, brighter palette of gold, yellow and fresh green will adorn this year’s table. I’m also steering away from the customary huge Christmas tree and instead bringing in some festive wall hangings, such as these two lovely gold paper wreaths entwined with a faux olive branch.

We’re not abandoning tradition altogether, though – we’ll still be enjoying all our favourite Christmas food but this time served in bowls handmade by our friend Yon from Claybird Ceramics. We’ve also collaborated with Yon on some special tree ornaments, which add a beautiful, handmade touch to our festive table.

Finally, as a nice personal touch, I’ll be placing a beautifully wrapped gift of chocolates on each table setting. Who said presentopening can’t last the whole day?

here’s nothing more Kiwi than a campsite Christmas where the living is easy.

Take the stress out of the holiday season by heading to your favourite campsite or glamping location, then sit back and enjoy the incredible views. We set up camp at Wainamu Luxury Tents in West Auckland, and added some festive cheer and foraged foliage to the luxuriously furnished tents.

Keep your decorating fuss-free and simple so you can enjoy all that Mother Nature has to offer.

When the sun goes down, spend your evenings toasting marshmallows around the campfire before nodding off under the stars. Pure bliss.

FORCE OF HABITAT Just because you’re in the great outdoors, you don’t have to let your decor standards drop.

Choose a colour theme that’s in keeping with your surroundings for a little bit of campground style. We took our cue from the rolling green hills and trees, opting for a muted palette of neutrals with hints of soft pink and green.

With the decor settled, it’s time to create what every campsite needs: a fun zone for festive drinks and board games. We decorated ours with a rug from Mitre 10 and an ottoman from The Linen Store. The stool, stemless wine glasses and marble drinks tray are all from Citta.

BRANCH OUT Have fun making your own Christmas tree – the more rustic and makeshift the better. We cut some long flower stems from nearby flax bushes and tied them into a tree shape with string, as seen above right. Little stars handcrafted from twigs and string finished the look, along with a few other decorations we had to hand.

The pretty presents are wrapped in white and pale pink paper and tied with white string.

The gift tags are made from foraged leaves and flowers with the names of each recipient inscribed in gold marker. The collection of pine cones have simply been spray-painted white for a Christmassy feel.

BEDROOM BOOST Even when camping, you can add some glam to your space. Our luxury campsite included a bed and bedside tables, but even if you’re on a blow-up mattress, there is no reason why you can’t decorate your sleeping area with a couple of pretty vases filled with foraged foliage (don’t fill them with water, though; just replace the greenery every day or so). Our printed pillowcases are by The Fabric Queen, the throw and cushions are from The Linen Store and the star on the chest is from Bed Bath N’ Table.

Finding the way from the campfire to your tent is easy – and magical – if you illuminate the path with a tealight walkway

A STAR IS BORN We made a star for the top of our tent and you can, too. Buy a sheet of MDF from your hardware store, draw a star shape and cut it out with a jigsaw. If you’re lucky, your friendly hardware store staff may be kind enough to do this for you.

FLORAL & HARDY When it comes to making a wreath, take inspiration from what’s around you. We made a quick and easy toetoe wreath by wrapping the fluffy foliage around a wire circle. You could use any foliage that will easily bend into shape.

FINISHING TOUCHES You won’t miss the twinkling fairy lights on your Christmas tree at home if you hang jars with tealights inside them from nearby branches.

The addition of handmade macramé bunting will take your decorations up a notch or two – but remember to keep to your colour palette.

There are plenty of YouTube tutorials if you fancy making some yourself. Stylist Melle van Sambeek of Sailor and Scout made ours (you can see more of her decorating ideas at @sailor_and_scout_home).

WALK THIS WAY Finding the way from the campfire to your tent is easy if you illuminate the path with a tealight walkway. Simply fill brown paper bags with a little sand and a tealight candle each, then wait for sundown to experience the magical effect (don’t leave them unattended, though; and use battery-powered tealights if kids are around). •

STEP BY STEP You’ll need: 12 pairs of socks in a colour scheme of your choice (pick ones the family can wear afterwards); embellishments to decorate them with (eg small Christmas decorations, gift tags, paper rosettes, tassels, bells, buttons, pom poms, wool, tinsel); a hot glue gun or needle and thread; small gifts to place in socks; 2 x 1.5m twine, sturdy cord or thick ribbon; 4 push pins or small nails; 24 mini pegs or clips. + Decorate each sock with 1-2 embellishments and secure them with hot glue or a few stitches.

If you like, you could also add a number – cut from felt or card – from 1-24. + Place small gifts inside each sock. You could use tiny Christmas decorations, small wrapped chocolates, a nice pencil or eraser, or a small figurine. You could even write a funny joke on some card, or type up some holiday challenges such as ‘make gingerbread men’, ‘decorate the tree’ or ‘sweep the driveway for Santa’. + To hang the socks, attach your twine, cord or ribbon to the wall with a push pin or a small nail at either end. 1 TH AT ’S A W R A P With scarves currently trending and some gorgeous versions readily available in shops, give the fashionista in your life a gift voucher wrapped in a beautiful scarf. Find a small box and place your voucher inside. Fold the scarf into a triangle shape and place the box in the middle. Fold the bottom, pointy end up over the box, bring the top side down, then fold the two outer ends towards each together and tie in a knot to secure.

SANTA STOCKING This simple project can be whipped up with a sewing machine in around 30 minutes and will set you back about $15. A nice velvetlook fabric will give your Christmas stocking a luxurious yet festive feel.

YOU’LL NEED: 50cm velvet-look fabric, tailor’s chalk, scissors, sewing machine and thread, ribbon for hanging and a decoration if desired.

TO MAKE: Use an old Christmas stocking as a template or print one out from Pinterest. Place stocking or template on the fabric, draw around it with chalk (ours was about 45cm x 27cm; you can adjust the size to suit your requirements) and cut out. Turn template over, draw around it again and cut out. Pin the 2 pieces on top of each other, right sides together. Sew around the stocking, 5mm in from the edge, leaving the top open. Sew a loop of ribbon at the top corner for hanging and turn stocking right side out. Add a decoration if you wish – we attached a plastic star with craft glue but pom poms, fringing or bells would also work well.

CRACKER Give your Christmas crackers a chic update with a velvet and ribbon makeover. This no-sew project is a quick and easy way to take your table setting to the next level.

YOU’LL NEED: A DIY cracker kit, a small gift, a 37cm x 21cm piece of velvet-look fabric, double-sided tape, 2 x 25cm ribbons.

TO MAKE: Assemble a cracker using a DIY kit (ours was from Spotlight) and place your gift inside. Wrap the fabric around the cracker and secure with double-sided tape. Tie a ribbon around each end to finish.

TRIANGULAR TREE CUSHION This stylish ‘tree’ cushion looks great on a sofa or bed or under the tree. Festive yet subtle, the cushion takes just 30 minutes to whip up and would be perfect in a minimalist decor scheme.

YOU’LL NEED: Tailor’s chalk, 50cm velvet-look fabric, scissors, sewing machine and thread, stuffing, needle and a star decoration.

TO MAKE: Using chalk, mark out 2 triangles on the fabric – ours were 42cm on all sides. Cut out, place right sides together and sew along 2 sides, 5mm in from edge. For final side, start from each corner and sew about a third of the way along, leaving a gap in the middle (for stuffing). Turn cushion right way out and stuff to your liking.

Hand-stitch the gap closed. Add a star decoration to the top (we glued ours on with craft glue).

BERRY & PISTACHIO STACKED PAVLOVA SERVES 4-6 This three-tiered berry and pistachio pavlova is a real showstopper. The meringue and raspberry ripple cream can be prepared a day ahead, then simply assemble the dessert at the last minute and serve without delay.

RASPBERRY RIPPLE CREAM 125g (about 1 punnet) raspberries 2 Tbsp icing sugar 600ml cream 300g (1¼ cups) crème fraîche 1 vanilla bean, seeds scraped

INGREDIENTS

1 Preheat oven to 150°C. Trace a 16cmdiameter circle on each of 3 pieces of baking paper. Place each paper, pencil-side down, on lightly oiled baking trays.

225g (about 6) egg whites ¾ cup caster sugar ¾ cup raw caster sugar 1¼ tsp white vinegar 1¼ tsp cornflour 20g shelled pistachios, chopped finely, plus extra, chopped coarsely, to serve Raspberries, sliced strawberries and edible flowers (optional), to serve

2 In an electric mixer, or using electric beaters, whisk egg whites and a pinch of salt to soft peaks (4-5 minutes). With beaters running, gradually add sugars and whisk until firm and glossy (2-3 minutes).

Whisk in vinegar, then fold in cornflour and pistachios. Transfer to a piping bag fitted with a plain nozzle and pipe evenly

within circle templates to create 3 discs of meringue. Place in oven, reduce to 120°C and bake until crisp but not coloured (1¼-1½ hours). Turn off heat and leave in oven with door closed for at least 6 hours or overnight. Meringues will keep in an airtight container for 1 day.

3 For raspberry ripple cream, crush raspberries and mix with icing sugar in a bowl. In another bowl, whisk cream, crème fraîche and vanilla seeds to firm peaks. Fold in the raspberry mixture to form ripples.

4 To assemble, place a meringue disc on a flat serving plate and spread with a third of the raspberry ripple cream. Repeat layers twice more, finishing with raspberry ripple cream. Top with berries, flowers (if using) and extra pistachios. Serve immediately.

F FROZEN SPICED CHOCOLATE PAVLOVA SERVES 10

1 Preheat oven to 150°C. Trace an 18cm circle on 2 pieces of baking paper. Place each paper, pencil-side down, on 2 lightly oiled oven trays.

This double-layer pavlova is the perfect doahead, festive crowd-pleaser. It’s perfumed with cloves, cinnamon and nutmeg, which marry beautifully with the chocolate semifreddo sandwiched in between. Begin this a day early to freeze the semifreddo.

2 Whisk egg whites and pinch of salt in electric mixer (or use beaters) to soft peaks (4-5 minutes).

With motor running, slowly add sugar and whisk until firm and glossy (2-3 minutes). Whisk in vinegar, then fold in cornflour and spices.

INGREDIENTS 225g (about 6) egg whites 1½ cups raw caster sugar 1½ tsp white vinegar 2 tsp cornflour 1 tsp ground cinnamon ½ tsp ground cloves ½ tsp finely grated nutmeg 300ml thickened cream 150g sour cream Dutch cocoa, chocolate curls or shavings and hazelnut praline, to serve CHOCOLATE SEMIFREDDO 6 egg yolks 70g raw caster sugar 50ml brandy 300ml thickened cream 150g sour cream 200g milk chocolate, melted 200g dark chocolate (around 60 per cent cocoa solids), melted

3 Spread a third of meringue over one circle, smoothing the top. Pile remaining meringue in the other circle, forming peaks and swirls on top. Place in oven, reduce to 120°C and bake until crisp but not coloured (1¼-1½ hours). Turn off heat and leave in oven with door closed for at least 6 hours or overnight.

4 For semifreddo, whisk yolks, sugar and brandy in a heatproof bowl over a pan of gently simmering water until mixture is thick, pale and falls from a lifted whisk in a thick ribbon (6-7 minutes). Whisk in an electric mixer until cooled to room temperature (4-5 minutes).

5 Meanwhile, in a separate bowl whisk creams to soft peaks. Fold both melted chocolates into egg mixture, then fold in the whipped cream.

6 Place flat meringue in a 22cm round cake tin lined with baking paper. Spread semifreddo on top, smooth, then top with larger meringue.

Freeze overnight, then cover top of tin and keep frozen (it will keep for 2 weeks).

7 Whisk creams to soft peaks. Run a hot, wet knife around tin and remove pavlova. Place on a plate, top with cream, dust with cocoa and decorate with chocolate and praline, then serve.

INGREDIENTS 150g (about 4) egg whites 190g caster sugar 30g coconut sugar (see note) 1½ tsp white vinegar 50g shredded coconut 1 tsp cornflour 500g coconut yoghurt Thickly sliced banana, coconut flakes, coarsely chopped salted peanuts and lime wedges, to serve COCONUT CARAMEL 150g coconut sugar (see note) 80ml water 1 cup coconut cream Juice ½ lime 1 Preheat oven to 150°C. Trace a 15cm x 30cm rectangle on a piece of baking paper and place, pencil-side down, on a lightly oiled oven tray.

2 Whisk egg whites and a pinch of salt in an electric mixer to soft peaks (4-5 minutes). With motor running, gradually add both sugars and whisk until firm and glossy (2-3 minutes).

Whisk in vinegar, then fold in shredded coconut and cornflour. Spread evenly over rectangle template, place in oven, reduce to 120°C and bake until crisp but not coloured (1¼-1½ hours).

Turn off heat and leave in oven with door closed for at least 6 hours or overnight. The meringue will keep in an airtight container for 2 days.

3 For coconut caramel, stir coconut sugar and water in a pan over medium-high heat to dissolve sugar. Bring to the boil and cook until it has reduced to a thick syrup (4-5 minutes).

Remove from heat and stir in the coconut cream and lime juice. Transfer to a container and chill in the fridge until thick (1-1½ hours). The caramel will keep in a lidded container in the fridge for a week.

COCONUT CARAMEL PAVLOVA SERVES 6 Tropical flavours are at the fore in this gorgeous dessert. We’ve used banana on top, but fresh pineapple or lychees would work well, too. The coconut yoghurt topping makes this a good choice for guests eating dairy free.

4 Top pavlova with coconut yoghurt, banana, artistic drizzles of coconut caramel, coconut flakes and peanuts. Serve immediately with lime wedges for squeezing.

NOTE Coconut sugar is available from some supermarkets, health-food shops and organic stores.

PASSIONFRUIT & MANGO PAVLOVA SERVES 6-8 Mangoes are a deliciously juicy Christmastable treat. Here they crown a lime-scented pavlova piled high with a feather-light passionfruit curd.

INGREDIENTS 150g (about 4) egg whites 1 cup caster sugar 1½ tsp white vinegar 1 tsp vanilla bean paste 1 tsp cornflour Finely grated zest ½ lime, plus extra to serve 300ml thickened cream 250g crème fraîche Thickly sliced mango and passionfruit pulp, to serve

PASSIONFRUIT CURD 150ml passionfruit juice (see note below) Finely grated zest and juice 1 lime 6 egg yolks 110g (½ cup) caster sugar ½ leaf titanium-strength gelatine, softened in cold water for 5 minutes 90g unsalted butter, coarsely chopped, at room temperature

1 Preheat oven to 150°C. Trace a 20cm circle on a piece of baking paper and place, pencil-side down, on a lightly oiled oven tray.

2 Whisk the egg whites and a pinch of salt in an electric mixer (or with electric beaters) to soft peaks (4-5 minutes). With the beaters running, gradually add sugar and whisk until firm and glossy (2-3 minutes). Whisk in vinegar and vanilla, fold in cornflour and zest, and pile onto the tray within the circle, forming peaks and swirls on top.

225g (about 6) egg whites 1½ cups caster sugar 1½ tsp white vinegar 1 tsp cornflour Finely grated zest 1 lemon, plus extra to serve 300g mascarpone

LEMON CURD 4 egg yolks 50g caster sugar 100ml lemon juice 60g butter, diced

BLACKBERRY SYRUP 3 Place in oven, reduce to 120°C and bake until crisp but not coloured (1½-1¾ hours). Turn off heat and leave in oven with door closed for at least 6 hours or overnight. The meringue will keep in an airtight container for 1 day.

100g blackberries, plus 24 extra to serve 100g caster sugar 1½ Tbsp Chambord liqueur Juice 1 lemon 2 Tbsp water

4 For the passionfruit curd, whisk passionfruit juice, lime zest and juice, yolks and sugar in a heatproof bowl over a pan of gently simmering water until thick and pale (10-15 minutes), then remove from heat. Squeeze excess water from gelatine, whisk into passionfruit mixture, then whisk in butter, a little at a time, until incorporated. Refrigerate until chilled and set (3-4 hours). The curd will keep for 5 days in an airtight container in the fridge. Whisk to loosen slightly just before serving.

1 Preheat oven to 150°C and line 12 largish (125ml) muffin holes with paper cases.

5 Whisk cream and crème fraîche to soft peaks.

Spread passionfruit curd over pavlova, top with cream, sliced mango and passionfruit pulp, scatter with extra lime zest and serve.

NOTE To extract passionfruit juice, process pulp in a food processor, then strain. About 12 passionfruit will yield 150ml juice.

BLACKBERRY & LEMON MINI PAVLOVAS MAKES 12 (PICTURED on page 161) We love these little beauties baked in paper, but you could place quenelles (elegant scoops shaped with a spoon) of meringue straight onto baking paper instead. A tarter-thanusual lemon curd offsets the sweetness of the pavlova, while juicy blackberries add a burst of summer fragrance.

4 For lemon curd, whisk yolks and sugar in a pan, add lemon juice and butter, and stir over medium heat until thick and smooth (3-4 minutes).

Transfer to a bowl and chill. The curd will keep in an airtight container in the fridge for 5 days.

5 For the blackberry syrup, stir all the ingredients in a small pan over medium-high heat until sugar dissolves. Bring to a simmer and cook to a light syrup (5-6 minutes). Cool then swirl through mascarpone.

6 Serve mini pavs topped with curd, blackberry mascarpone, extra lemon zest and blackberries.

WATERMELON-ROSE PAVLOVA WREATH SERVES 6-8 This wreath-shaped pavlova ramps up the festivity factor. A topping using drained yoghurt makes a change from the usual cream and cuts through the sweetness of the meringue. Begin a day ahead if you’d like to drain the yoghurt.

1 For yoghurt cream, line a sieve with muslin and place over a bowl. Whisk yoghurt and honey together then transfer to sieve, cover and refrigerate overnight to drain. Just before serving, add cream and whisk to soft peaks.

2 Preheat oven to 150°C. Trace a 23cm circle on a large piece of baking paper and place, pencilside down, on a lightly oiled baking tray.

INGREDIENTS 225g (about 6) egg whites 370g caster sugar 3 tsp rose water, or to taste 1½ tsp white vinegar 1 tsp vanilla bean paste 2 tsp cornflour 2 Tbsp firmly packed mint leaves Watermelon balls, diced Turkish delight and organic rose petals, to serve YOGHURT CREAM 1kg Greek-style yoghurt 80g honey 100ml cream

3 In an electric mixer, or using electric beaters, whisk egg whites and a pinch of salt to soft peaks (4-5 minutes). With beaters running, gradually add 330g of the sugar and whisk until firm and glossy (2-3 minutes). Whisk in rose water, vinegar and vanilla, then fold in half the cornflour. Place heaped dessertspoons of meringue around the circle template to form a ring. Place in oven, reduce to 120°C and bake until crisp but not coloured (1¼-1½ hours). Turn heat off and leave in oven with door closed for at least 6 hours or overnight. (The meringue will keep in an airtight container for 2 days.)

4 Blitz mint, remaining cornflour and remaining sugar in a small food processor to finely chop.

5 To serve, spoon yoghurt cream over pavlova wreath and scatter with watermelon balls, Turkish delight, rose petals and mint sugar.

PEACH PAVLOVA TRIFLE SERVES 10-12 Trifles are things of beauty, as are pavlovas, so why not blend the two? Here mini pavs are the crowning glory of a summery peach trifle – another excellent do-ahead dessert.

INGREDIENTS 150g (about 4) egg whites 1 cup caster sugar 1 tsp white vinegar 1 tsp cornflour PEACH JELLY 750ml rosé 2 cups caster sugar Juice 1 orange and 1 lemon 1 litre cold water 6 peaches, bases scored with a cross 6 leaves titanium-strength gelatine, softened in cold water for 5 minutes BRANDY CUSTARD 300ml cream 300ml milk 1 vanilla bean, split, seeds scraped 6 egg yolks 1½ Tbsp plain flour ½ cup caster sugar 50ml brandy, or to taste TO ASSEMBLE 50ml brandy 16 savoiardi biscuits (sponge fingers) 300ml cream Fresh peach wedges and crumbled freeze-dried raspberries, to serve

Using two 2 dessertspoons, form mixture into rough quenelles (elongated egg shapes) and place on trays. Place in oven, reduce to 120°C and bake until crisp but not coloured (1-1¼ hours). Turn off heat and cool in oven with door closed for 3-4 hours. (Meringues will keep in an airtight container for 1 day.)

Squeeze water from gelatine, add to pan and stir to dissolve. Cool, then pour into a 2.5-litre trifle bowl and refrigerate until set (4-5 hours).

5 Meanwhile, for brandy custard, place cream, milk, vanilla bean and seeds in a medium-large saucepan and bring to boil. Whisk yolks, flour and sugar in a large heatproof bowl, strain in cream mixture and whisk to combine. Return to pan and whisk over low heat until thick (4-5 minutes). Whisk in brandy, transfer to a container, cover surface directly with plastic wrap and refrigerate until chilled. (Custard will keep in an airtight container for 3 days.)

3 For the peach jelly, stir rosé, sugar, orange and lemon juice and water in a large pan over medium-high heat until sugar dissolves. Add peaches, bring to a simmer, then weight with a plate to submerge peaches. Reduce heat and simmer until peaches are just tender (10-15 minutes). Allow to cool in the syrup.

6 To assemble, pour 250ml reserved peach syrup into a bowl; mix in brandy. Add savoiardi and leave to absorb liquid (2 minutes). Arrange half the savoiardi in a single layer on peach jelly in trifle bowl. Top with a layer of poached peach (use half), pour custard on top, then top with remaining savoiardi and remaining peaches.

Cover and refrigerate until needed (up to 2 days).

4 Strain 1 litre of syrup into a clean pan.

Pour remaining syrup into a container. Peel peaches, cut into wedges, add to container and refrigerate. Bring syrup in pan to a simmer.

7 To serve, whisk cream to soft peaks, spread onto trifle and top with mini pavlovas. Arrange wedges of fresh peach on top and scatter with crumbled freeze-dried raspberries. •

Mirror Glaze Cake SERVES 12 PREP TIME 50 mins + freezing 340g packet vanilla cake mix 1 cup strawberry jam 270g NESTLÉ BAKERS CHOICE White Melts Chocolate, plus 360g extra 10 sheets gelatine 3 cups (750ml) cream ²/³ cup (160ml) water ¾ cup caster sugar 200g NESTLÉ HIGHLANDER Sweetened Condensed Milk White and red gel food colouring Mini meringues, raspberries and edible gold shimmer powder, to decorate

1 Prepare butter cake in 20cm round pan according to packet directions. Cool, then split in half. Line a 20cm round springform cake pan and spread with jam. Top with one cake round. Freeze 2 hours.

2 Melt 270g white chocolate. Soften 4 gelatine sheets in cold water for 5 min. Heat ⅔ cup of cream until just boiling, remove from heat. Squeeze excess liquid from gelatine, whisk into cream to dissolve.

Whisk in melted white chocolate until smooth, then cool. Whip remaining cream to firm peaks. Fold cream into chocolate mixture.

3 Grease and line the base and sides of a 22cm round springform pan with a smooth sheet of baking paper. Pour in half the mousse. Place frozen cake jam side-down in centre. Cover with remaining mousse then press second cake layer cut side down into mousse. Freeze 3 hours.

4 Soften remaining 6 gelatine sheets in cold water for 5 min. Stir the water, sugar and NESTLÉ Sweetened Condensed Milk over medium heat until just boils, then remove. Squeeze excess water from gelatine, whisk into condensed milk mixture. Add remaining 360g chocolate and set aside for 3 min.

Blend with stick blender until smooth. Tint white with food colouring. Strain mixture through a fine sieve into a large jug. Pour ½ cup into a smaller jug.

Tint larger jug with red food colouring. Tap jug on bench to remove bubbles and cool. Pour ¼ cup of white mix into red.

5 Unmould mousse cake and invert onto a flat bottomed inverted bowl over a large tray. Pour glaze over cake to cover completely and create swirled patterns. Pour over dollops of remaining white glaze. Allow excess to slowly drip of. Trim drips underneath, then lift onto a serving platter.

Keep chilled. Decorate with mini meringues, halved raspberries and gold shimmer powder, if desired.

NAPKIN RINGS Save a few pennies with tinsel napkin rings. Cut a length of tinsel (about 25cm long) and wrap around a folded napkin.

Tuck the ends in at the back.

WREATH Add some sparkle to your front door or living area with a tinsel wreath. You will need a 350mm foam ring (ours was from Spotlight), 3 x 2m lengths of thick tinsel, clear packing tape and some cord, twine or ribbon. Attach one end of some tinsel to the back of the foam ring with clear tape.

Wind tinsel closely around ring so none of the ring shows through; secure end with clear tape. Repeat with other pieces of tinsel until ring is covered.

Tie cord, twine or ribbon around the wreath and hang on a wall or door.

GIFT TOPPERS If you’re looking for a change from using ribbon on your presents, try these easy tinsel toppers. If you have fine tinsel, cut a short piece, tie some cord around the middle and smooth the strands lengthways on either side (like a middle parting) for a ‘bow’ effect. With thicker tinsel, cut a small piece (size depends on size of present), tuck the ends under to make a loop, and attach to your gift with double-sided tape.
