FROM OUR EDITOR

BUYER’S

The real estate market in most urban centres, as we all know, is insane. In downtown Toronto, for example, decades-old semis in need of major renovations are selling for more than a million dollars. It’s a tough pill to swallow for purchasers, especially first-time buyers. So last summer, when one of my best friends asked me to house hunt with him, I was eager to help him get the most value for his money. When we found a small Victorian in an up-and-coming neighbourhood for less than a million, we were thrilled. The house had terrible curb appeal, was poorly renovated and desperately needed a new kitchen and bathroom. But it was also a detached property with lots of natural light, and had a nice backyard as well as a parking spot. The renovation seemed straightforward – nothing I hadn’t dealt with before. Likewise, the home inspection didn’t turn up anything unexpected. My friend was sold. But then the problems started. First, the contractor tore out the bathroom walls and found singed joists. After some exploration, he determined there had been a significant fire in the house. What followed was a series of inspections, repairs and delays. When that issue was finally settled, the contractor moved on to open the back wall of the main floor to install French doors. Simple, right? Sure, until all the bricks began tumbling down. It was more bad news: The foundation bricks were disintegrating, and the house had become perilous. It was heartbreaking – and my worst nightmare! The house I’d encouraged my friend to buy was a disaster. So now he had two options: Spend a large amount of money to shore up the house or tear it down and start from scratch. Shockingly, the costs were comparable. After a number of sleepless nights and a lot of toing and froing, my friend decided to build new. For me, it was a bittersweet resolution. I love the original house, but the lesson here is that when the unexpected happens you have to roll with it. Thankfully, we’re working with a spectacular architect, and the drawings for the new place are almost done. It may be another year before my friend can move in, but I can promise him one thing: The house will be just right.

at your service BLACK MAGIC I’ve been looking forward to reading Style at Home’s January 2017 issue, both for the design inspiration and to discover what’s in store for the year ahead. While browsing, I was so excited to see a home with black walls (“Forever Young,” page 78) – especially since I recently painted many areas in my own home the same shade, including my kitchen (pictured). From a true design nerd and someone who loves all things creative: Thank you for all you do to inspire! TINA HATCH, VIA EMAIL

WEEKEND ESSENTIALS

BEAUTIFUL BITES As an Australian living in Canada, I was absolutely delighted when reading the “Breakfast Bar” article featuring fellow Aussie Donna Hay’s delicious breakfast bowls (January 2017, page 92). Her recipes have been fondly used in my kitchen for many years, providing satisfying dishes and delightful memories. I felt a touch of warmth and comfort, as well as a sense of home, after seeing her recipes again – priceless to an expat. LOUSIE FELL, VIA EMAIL

LITTLE LUXURIES

@NATALIEMEYERS

Your article “Small Spender” in the January 2017 issue (page 56) about former Style at Home design editor Stacy Begg’s newly designed living room has changed the way I view home decor. Being very frugal, I’m always trying to find affordable pieces (or even treasures from the curb!) when decorating. Sometimes they work, but other times I, too, end up with “a sad university student vibe,” as Stacy described her prereno space. The article taught me that splurging on a few key items can really reshape a room – the same way adding a cashmere sweater to an inexpensive outfit makes the whole look shine! DIRECTIONS Preheat the oven to 350°F. In a large bowl, beat the butter and sugar until light and fluffy, about 3 minutes. INSIDE DESIGN PRODUCER BRITTANY DEVENYI

Guided by wanderlust and an artful eye, this renowned interior and product designer brings a global sensibility to all she creates.

laura kirar creative carving Designer Laura Kirar produced this kinetic mobile, which decorates her live-work space in Brooklyn, N.Y., from copper plates with a matte black acrylic finish.

INSIDE STORY Every artist has that moment: the one where a creation takes form and reinforces the direction he or she is meant to follow. For Laura Kirar, it took place at the Art Institute of Chicago, where she studied sculpture and interior architecture. “Before I knew it, I was making sculptures that were electrified and illuminated, and they eventually became sconces,” she says. The intrepid designer went on to craft pieces for the likes of Holly Hunt and Ralph Lauren Home. Now she is the founder and creative director of her own design firm, has product licences with four Kohler brands and still takes time to wander the world in search of inspiration.

HOME AWAY FROM HOME The free-spirited designer has a live-work loft in Brooklyn, N.Y., that epitomizes her worldly, industrial chic style; it’s spilling with an eclectic mix of prototypes that never made it, vintage pieces, artifacts found while travelling and more. “It feels very personal. It’s very artistic,” says Laura. Her artful aesthetic is also reflected in her second home, a once-abandoned hacienda near the Mexican city of Mérida, which she and her husband decided to transform. While staying there, the designer works with local artisans to create everything from furniture to jewellery. “When I can see an artist’s hand in the piece, that’s what gets me most excited,” she says.

frame of mind From the modest mullioned windows in her colourful Mexican abode to the more elaborate arrange ment seen in a New York City home she designed (shown at right), Laura’s style is recognized worldwide. “My designs are a combination of different influences,” says the designer. “They resonate with many different cultures.”

INSIDE DESIGN An elegant bedroom Laura designed in New York City’s West Village neighbourhood.

GLOBAL VISIONARY “I’m in a really intensely creative period in my career,” says Laura. “I think it’s my level of travel. I’m a sponge, from seeing new things to meeting new people to taking in new smells.” Mexico’s Mayan ruins, for instance, have been translated into her furniture designs. “I’ve started creating pieces that have lower proportions – that are bigger, chunkier,” she says. “It’s more about the horizon, as opposed to being pretty and perched. Everything is more planted. I feel that’s what people want right now. We want stability, especially at home.”

world -class attraction “My frequent trips to China helped inform the Asian quality of this case,” explains the designer. “The inlaid wood pattern is also very much inspired by Spanish Colonial style.” And the cabinet’s ziggurat-shaped top? “It’s influenced by Art Deco, but still references Latin America.” Laura Kirar veneered walnut Tonio CHEST in Manor House, Baker, bakerfurniture.com.

seated showpiece “Occasionally you need to create something for the person who has everything,” says Laura of this statement seat. “It’s a chair fit for an art collector.” With intricate leather fringe detailing, the handcrafted piece takes several weeks to complete.

AND THE

Beautiful Decorating an entire home with a fearless palette of pink or blue takes courage, but this space proves that having design guts often leads to interior glory.

1. CHOOSE REFINED EXTRAS

Hot pink grows up when it’s paired with elegant neutrals like white wainscotting and black and white accents; plus a few well-travelled finds displayed in quirky, confident ways. (Case in point: that large white shell sitting on the entryway floor.)

3. TASTE TEST FOR COMFORT

If you’re accustomed to decorating with neutrals, dip your toes into the world of colour by adding hot pink accents like vibrant dining chairs. The rest of the room – from the walls to the floors – can remain comfortably subtle.

2. WORK WITH A SOLID FOUNDATION

The elegantly elaborate moulding throughout the home makes it easy to go wild with candy colours because the space already has architectural gravitas to balance the playfulness of hot pink.

3

2

4. TAKE RISKS IN SMALL ROOMS 4

Petite enclosed spaces like powder rooms afford the opportunity to play with colourful patterned wallpaper. Even if the rest of your house is white or minimal, a fuchsia print on all four walls of a small room offers a tiny surprise every time you open the door.

Layered patterns look rich and decadent rather than cluttered when a mural wall covering and silk accent chair feature similar base tones. To create contrast, choose prints with varied pattern scales – in this case, the designer went larger on the wall and smaller on the chair upholstery.

7. TIE IT IN

This room is a collector’s dream filled with elaborate patterns, eye-catching accessories and a mix of modern and old-world furniture. The thing that ties them all together? Aqua blue runs through the wallpaper, toss cushions, chair upholstery and rug, allowing clashing colours and prints to sit side by side in harmony.

6. TAKE A TIME OUT

Even the boldest abodes need a few peaceful moments. This vignette still has a touch of true blue, but the seafoam wallpaper and sturdy wood cabinet balance the house’s other vibrant components.

8. GO WITH THE FLOW

When creating a multicoloured yet cohesive design that flows through many rooms, bring moments of colour to each space, as with the touches of salmon and powder blue here. Cohesion is most important in open-concept homes with plenty of sightlines. In a house with closed-off rooms, you have more freedom to create independent environments.

“I’M A FARM GIRL AT HEART, so I really love that country-in-the-city look,” says homeowner Raewyn Fahlenbock of the master bedroom in the Victoºrian home she shares with her husband, Charlie, their daughters, three-year-old Olive and 14-month-old Juniper, plus their dachshund mix, Bella. “Colour used to be out of my comfort zone,” says Raewyn. But she trusted designer Margie Doyle White’s instincts so much that she even allowed the chic, sophisticated shades of lavender and pink to be employed on the main floor of her abode in Toronto’s Cabbagetown neighbourhood (featured in Style at Home’s May 2016 issue). “I generally lean toward neutrals and rarely use colour in a bedroom,” admits the designer. “But this big, bare master suite was just waiting to be kissed with colour.” Before it was ready for that kiss, the 300-square-foot room required some serious romancing. It had worn carpeting, drab yellow-beige walls and uncovered windows. Working from the ground up, Margie

And like the rest of the house, the master bedroom was painted in Farrow & Ball’s Great White. “I call this shade my secret weapon,” says Margie. “It has lavender and pink undertones, but it’s not overtly feminine.” The paint’s understated hues were the jumping-off point for the rest of the room’s look, which includes a soft tufted headboard, boho bedding and stunning linen drapery. “The drapes are the most exquisite lavender-grey shade, which creates tone-on-tone chemistry with the walls,” says Margie. “They’re tailored and slightly formal, but make a cozy statement

into the blue Ooh la la! Colour, pattern and texture mingle in this historical Montreal semi’s upbeat French bistro-style kitchen. TEXT IRIS BENAROIA | PHOTOGRAPHY YVES LEFEBVRE | STYLING JULIE DESLAURIERS

“Not every kitchen needs a big island,” says designer Philippe Côté, who opted to keep the snug space unencumbered, embracing the light flooding in from the newly installed glasspanelled doors. Paired with bistro chairs, the Saarinen-style table is the homeowners’ favourite spot to sip their morning coffee.

WHEN HIS CLIENT DOMINIQUE TREMBLAY asked for a white kitchen, designer Philippe Côté went rogue: He handed her a sketch showcasing dark blue cabinetry with brass hardware. Philippe knew full well that the art-loving, dinner-party-throwing empty nester and her husband, Richard Larouche, could handle it. (Their Yorkshire terrier, Romeo, was indifferent.) “Dominique is an artistic, out-of-the-box thinker who’s willing to take design risks, and we wanted to give her something unique,” says Philippe, who worked with his then colleague, Valérie SaintJacques, on the summer-long project in Montreal’s Notre-Damede-Grâce neighbourhood.

The French bistro feel was a natural fit for both the heritage home and its owners (he’s a physician; she’s retired). “When we host, we always start the evening in the kitchen,” says Dominique, noting that, as Philippe predicted, she went gaga over the plans for the blue-infused bistro decor. Relaxed and romantic, it conjures up lively scenes of kibitzing over beer and frites. The existing kitchen, though functional, lacked charm thanks to “oppressive” (as Philippe describes it) full-height cherrywood cabinetry and limited natural light. So the designers overhauled the room, stealing more than a foot from the adjacent dining room and transforming the L-shaped kitchen into a galley layout to widen the narrow space. DECORATING

The chic mix of patterns and materials creates ample appeal: Hand-printed Moroccan tiles (with underfloor heating to accommodate Montreal winters), rosewood-look open shelving, ravishing jewel-toned blue cabinetry and an elegant herringbone-tiled backsplash that extends to the ceiling keep the eye engaged. Meanwhile, full-height glass doors lead to the backyard garden and let in lots of light, making the 160-square-foot space seem larger. Tucked around the corner along the back wall, a new butler’s pantry is both fetching and functional. But the pièce de résistance is the nook holding the gas range. The designers framed it in a luxurious band of faux rosewood that

matches the shelves and fridge, and also added a custom hammered-brass vent with slightly rounded edges (similar to what you’d find on a gold bar). “I wanted a modern twist on a classic design,” says Philippe. The play of patterns and finishes with fresh functionality underscores the lively bistro look: layered, informal and packed with personality. Dominique and Richard reinforce the kitchen’s bistro style with the way they use it. “We love its casual vibe,” says Dominique. “Whether we’re entertaining friends, trying out new recipes or simply watching the seasons change through the huge glass doors, we spend a lot of time here.”

ABOVE, CENTRE A trio of industrial-style pendant lights and open shelves with iron brackets reflect all the hallmarks of a French bistro. To keep everything neat, homeowner Dominique Tremblay displays only her white dishware. LEFT The glamorous vent, fitted with a standard insert, was one of the project’s biggest challenges: The unique hammered brass sheet, sourced from a factory in New York state, was nearly too short. “I was so nervous it wouldn’t fit,” says Philippe with a laugh.

ABOVE “I said, ‘Let’s do a non-kitchen – one that looks like an open bistro, where you are not oppressed by upper cabinets but instead are surrounded with beautiful objects and art,” says Philippe. “And that’s exactly what we did.” (Romeo, the couple’s Yorkshire terrier, takes a moment to consider the renovation.)

LEFT The butler’s pantry, featuring tons of storage space, was deliberately made to mimic furniture for a more custom vintage look. In it, the homeowners stow wineglasses, crystal dishware, oversized salad bowls and sundry kitchen appliances.

OPPOSITE Open to the kitchen, the family room is designed for a busy family’s lifestyle. The coffee table is made from reclaimed wood, “so the more wear and tear it receives, the better it looks,” says Angela Robinson, one of the designers. “I JOKED THAT I WANTED TO LIVE IN A GLASS AND WHITE BOX,” says one of the homeowners of this bright new build in Vancouver’s coveted Kitsilano neighbourhood. “I envisioned something super bright, with lots of windows, lots of light and lots of white,” she says. “But I didn’t want the space to feel austere or cold. I wanted warmth, comfort and softness.” Though she and her husband loved their community, they had lived in their dark and narrow townhouse for 10 years and were ready for a change. So when their real estate agent found a place just a few blocks south in STYLEATHOME.COM APRIL 2017

DECORATING LEFT & BOTTOM In the kitchen, a herringbone-tiled Carrara marble backsplash lends interest to the mostly white space. The pendant lights, each sculpted from a long strip of wood veneer, offer organic warmth and a touch of whimsy. a more quiet family-friendly nook near their seven-yearold daughter’s school, the couple pounced. Though the house was small and dilapidated (it had been a rental property for 15 years), the couple loved its location so much – including its tree-canopied street – they decided to tear the place down and build their dream home from scratch. With a binder full of ideas ripped from magazines, the homeowners turned to designers Tanya Schoenroth and Angela Robinson. “I said: ‘Here you go!’” notes one of the homeowners of handing over her stack of inspiration. “‘Here are all my hopes and dreams. Let’s see what we can do!’” So the design team (who have separate firms but often work on projects together) took the owners’ vision of a “bright white glass box with a soul” and created what Tanya dubs a “modern coastal” aesthetic. Completed last year, the resulting 2,900-squarefoot three-storey house features large windows and skylights, uncluttered openconcept rooms and clean architectural lines. Fresh white-on-white dominates the abode, as requested, but the scheme is tempered by driftwood-like bleached-wood elements, such as the light-stained wide-plank oak floors. Light fixtures are playful and sculptural, textural fabrics like the linen drapes and velvet sofa add softness, furnishings inject pops of colour and the unique shapes of the kitchen’s pendant lights and family room’s swivel chair give personality. DECORATING IN BLOOM Just as the whites, greys and browns of winter give way this month to the bright shades of spring so, too, do our preferences shift from cozy neutral hues to the bolder side of the colour spectrum. Even the smallest changes – fresh blossoms or new accent pieces – can welcome the season in style. We approve.

BEST IN BLUE AND WHITE “You can’t go wrong with blue and white,” says decorator Amie Corley of the kitchen’s oversized chinoiserie vases and bistro stools. “The timeless yet fresh combo simply goes with every colour. To me, it’s a cheerful new neutral.”

Working on a period house

has its perks. “The windows all have their original leaded glass, framing gorgeous views of the historic park outside,” says decorator Amie Corley of the 6,000-square-foot house in St. Louis, Mo., she recently redid. The homeowners – who share the five-bedroom abode with three children from six to 17 years old – sought a fresh contemporary update of their existing traditional look, wanting to keep things kid-friendly. They also asked for ample colour, with blue and white being a favourite combo. To fulfill their colour requests, Amie kept the home’s architectural bones neutral: The walls and trim on the main level are coated in different finishes of the same warm-toned white paint. “We brightened the traditional architecture and then layered in hits of bold hues,”

An uplifting spot for enjoying cocktails and gazing at the view, the living room showcases a chic mix of orange, pink, black and gold. Designer Chrissy Cottrell had to search for the drum-shaped table, which has a black-glass mirrored top. “It’s very difficult to find a large round coffee table,” she says, noting that a square one wouldn’t have suited the space’s curves. ESIGNERS ARE USED TO EGREGIOUS STYLE FLAWS, LIKE CHEAP LINOLEUM PUT DOWN OVER PRISTINE HARDWOOD FLOORS. “What were they thinking?” we can hear them whisper under their breath. For Chrissy Cottrell of Chrissy & Co., one such gaffe is particularly memorable. The Vancouver designer was asked to revamp a 1,700-squarefoot Yaletown condo as a pied-à-terre for a jet-setting couple and their four kids, ages six to 16. Chrissy had expected the 32nd-floor suite to be bad, but not this bad. The maze-like layout revealed a closed-off den, a kitchen that could only be accessed through a small door and a dining room “so small it couldn’t even fit a reasonably sized table.” But the worst offence was the wall in the entryway that obstructed the dazzling view, which stretches from False Creek to English Bay. The designer’s treatment for the chopped-up space? Swift and merciless style surgery. “There was no facelift option. Everything in the 1990s condo had to go,” she says of the year-long renovation that was completed while the homeowners were abroad (talk about trusting your designer). “Because of the exceptional view, it only made sense to tear down most of the walls to achieve that panorama,” says Chrissy. Other casualties of the overhaul included dark dated floors and puffy patterned burgundy valances that trailed the window tops like overfed caterpillars. For the overhaul, Chrissy channelled a glam 1950s Hollywood aesthetic. The feature wall colour was inspired by a black and orange 1949 Dior perfume advertisement showing an illustration of a woman’s hand resting in a tiger’s paw. Both Chrissy and her client loved the ad’s mix of whimsy and opulence, so referencing it in the design was a no-brainer.

She also loves Hermès, so it felt natural to incorporate orange into the design.” Chrissy used the beguiling warm citrus hue as a focal point on one of the condo’s central walls, which dovetails into a daring black kitchen boasting a sultry elegance impossible to achieve with white. Meanwhile, glossy black interior doors and trim used throughout the condo lend the space cohesion and contrast the white backdrop. The overall effect of the dwelling’s decor is at once dramatic and chic yet totally livable. The design shows just how much power colour can offer a space if a client is gutsy enough to embrace it. Leaning in a slightly more modern direction than the rest of the main level, the living room features an eclectic mix, including a funky oval shell-veneered coffee table, boho toss cushions and nature-inspired artwork. Boasting open-concept Craftsmanstyle architecture, a classic kitchen and dark hardwood floors, the 2007 build “wasn’t quite us,” she says. Looking to update the main floor with a fresh Hamptons-esque flair, the couple turned to designer Karla Amadatsu of Kerrisdale Design. Having admired her soothing classic-with-a-touch-ofmodern aesthetic for years and bringing little furniture from their significantly smaller former pad, the pair was happy to give the designer carte blanche. And blanche she did, painting every wall a creamy white. “That alone was a huge transformation!”

Next, the designer sourced or custom designed the major furniture pieces, opting for mostly traditional styles, including a diamondtufted roll-arm chair for the living room, a Louis XVI-style settee for the kitchen eating area and William Birch-look sofas for the family room. “Classic furnishings with great lines are solid basics that you’re going to love for a long time,” says Karla, who employed neutral envelopes for the same reason. MEATBALLS with Tomato & Zucchini

Quick TOMATO SAUCE

MEATBALLS WITH TOMATO & ZUCCHINI SERVES 8

¼ cup extra-virgin olive oil, plus more for frying 1 small onion, finely chopped Kosher salt and freshly ground black pepper to taste 1 cup peeled chopped tomatoes ½ cup diced zucchini 1 clove garlic, minced 1 lb extra-lean ground beef 1 lb ground veal ½ cup grated Parmesan ⅓ cup dry bread crumbs 1 egg, lightly beaten Warm the olive oil in a skillet over medium heat. Add the onion and salt and pepper and cook, stirring frequently, until the onion starts to soften, 3 to 5 minutes. Add the tomatoes, zucchini, garlic and a pinch of salt. Cook until

the vegetables soften and most of the juices have cooked off, 8 to 10 minutes; let cool. Combine the beef and veal in a large bowl. Add the Parmesan, bread crumbs, egg, cooled vegetables and some salt and pepper and gently work everything together using your hands or two forks. Do not overmix – the mixture will be quite soft. Shape the meat into 1½" balls, cover and refrigerate them for at least 15 minutes and up to 24 hours. Heat ¼" of olive oil in a large skillet over medium heat. Working in batches, add the meatballs, being careful not to crowd them. Cook on all sides until browned, then cover the pan and lower the heat to finish cooking, 6 to 8 minutes total. The meatballs may lose their shape and collapse a little as they cook – that’s okay. Transfer the meatballs to paper towels to drain. Cook the remaining meatballs, adding more oil as needed. Serve with fresh pasta and Quick Tomato Sauce (recipe follows).

QUICK TOMATO SAUCE MAKES ENOUGH SAUCE FOR 1 POUND OF PASTA, PLUS EXTRA

3

lbs fresh tomatoes or canned peeled whole tomatoes 1 small onion, halved 7 tbsp unsalted butter 2 tsp kosher salt ¼ cup loosely packed basil leaves Peel the tomatoes if they’re fresh. Chop them coarsely and put them in a large saucepan with the onion, butter, salt and basil. Bring to a boil over medium-high heat and simmer gently for 30 to 45 minutes, stirring occasionally. Taste and adjust the seasoning, and remove the onion if you like (or leave it in and just hack it up a little with a sharp knife). Use immediately (sauce can be refrigerated for up to 5 days or frozen for up to six months).

PASTA with Garlic, Tomatoes, Basil & Brie

PASTA WITH GARLIC, TOMATOES, BASIL & BRIE SERVES 4

4 perfectly ripe tomatoes, coarsely chopped ½ cup coarsely chopped, loosely packed fresh basil 2 cloves garlic, finely chopped ½ cup plus 2 tbsp extra-virgin olive oil Kosher salt and freshly ground black pepper to taste 12 oz Brie 1 lb curly pasta (such as cavatappi) Combine the tomatoes, basil and garlic in a serving bowl. Pour in the olive oil and season well with salt and pepper. Stir everything together and cover the bowl; let sit at room temperature for at least 2 hours and up to 12 hours. About 45 minutes before you plan to eat, put the Brie in the freezer for 20 minutes to firm up, which will make it easier to cut. Cut into ½" cubes and add to the bowl with the tomatoes. Bring a large pot of generously salted water to a boil. Add the pasta and cook according to the package directions just until al dente. Strain the pasta and tip it into the bowl. Fold everything together until the Brie starts to melt and the pasta is slicked with cheesy tomato goodness. You will probably see a fair amount of liquid in the bottom of the bowl – those are tomato juices, so that’s a good thing. Serve the pasta immediately. Keep leftovers in an airtight container in the fridge for up to 3 days.

PENNE WITH BLISTERED CHERRY TOMATOES & CORN SERVES 4

1 2

lb penne pasta generous cups Blistered Cherry Tomatoes (recipe follows) 6 cobs corn Handful torn fresh basil leaves Grated Parmesan, for serving Bring a large pot of generously salted water to a boil. Cook the penne until al dente, about 8 minutes. Meanwhile, warm the Blistered Cherry Tomatoes over medium heat in a saucepan, then pour them into a large serving bowl. Cut the corn from the cobs and add it to the tomatoes.

PENNE with Blistered Cherry Tomatoes & Corn

Blistered CHERRY TOMATOES

Drain the pasta, reserving 1 3 cup of the pasta cooking water, and add it to the tomatoes and corn. Fold it all together – the heat of the pasta should soften the corn, and the tomato juices should blanket the pasta like a salad dressing. If it’s at all dry, add a little oil and some pasta water. Stir in the basil. Serve the pasta in wide, shallow bowls and pass the Parmesan at the table.

BLISTERED CHERRY TOMATOES MAKES 4 TO 6 CUPS

12 cups tiny, sweet cherry tomatoes, such as Sun Gold 6 cloves garlic, lightly smashed

Extra-virgin olive oil, for roasting Coarse salt to taste Heat the oven to 425°F. Place the tomatoes onto two heavy rimmed baking sheets or roasting pans; they should fit in a single layer (if not, add a third pan). Add the garlic. Pour a generous layer of olive oil over the tomatoes, enough so that a thin layer of oil pools in the baking sheet. Season generously with salt. Bake until the tomatoes are blistered and deflated and release their juices, 20 to 30 minutes. Remove from the oven, discard the garlic, and let cool. Make sure to save all the oily juices! Store in a container in the fridge for up to 10 days.
