ABOUT ME I’m Gemma MorganSmith, 34, a veterinary nurse, and I live here with my husband Kyle, 33, a radiographer, and our dog, Byron. OUR HOME We live in a three-bed mid-terrace new-build property in Southampton. We bought the house in September 2015. WHEN WE BOUGHT IT Everything was shiny and new, which was a big attraction. It was an empty shell that needed lots of work but we could see its fantastic potential. AND NOW Every room is filled with personality and showcases my love for Scandinavian design, mixed with bohemian-style touches. Gemma embraced the challenge of turning her new build into a stylish, Scandiinspired haven with a boho twist
A
s with most house purchases, the process for us had plenty of twists and turns along the way,’ says Gemma. ‘At the time it felt like a bit of a nightmare with all the setbacks, but it just goes to show how things can work out for the best in the end. This house, it turned out, had everything we were looking for. Having reserved a townhouse on a nearby new-build development, the sale of our flat fell through on the day of exchange, meaning we lost the property that we’d had our hearts set on. Back to square one, we managed to secure another buyer for the flat and in the meantime this three-bedroom terraced house on the same development had come back on the market after another sale had fallen through. I wasted no time booking a viewing and actually ended up reserving it the very same day! There was something about it that just felt right and I’ve not looked back since.
Adding our own style Kyle and I had just returned from 14 months of travelling and couldn’t wait to get in and put our stamp on the property to make it feel like home. Luckily, we were able to liaise with the developer about the flooring as this part of the build wasn’t yet finished and it worked out much cheaper to source and fit it ourselves. Kyle installed the B&Q laminate downstairs and we used a local carpet fitter to tackle the upstairs. We then decided to focus our energy on decorating the living room, as this is the hub of the house, so our priority was to turn this into our cosy sanctuary.
Pattern and texture As the layout of the house doesn’t allow for a separate dining room, I created a dedicated dining area in the living

room. The open-plan feel works perfectly for us, especially in the summer when we can open the doors onto the garden. My aim in this space was to make it somewhere we could kick back and relax, and host friends and family. With the property being a new-build, it meant we had a completely clean slate to work with and the fun part of decorating could begin straight away. I definitely started out with a minimalist approach but, as time went on, I soon found myself introducing more pattern and texture into the mix to build up a look that has a slightly bohemian feel. Scandinavian interiors have always inspired me so there’s definitely a sense of simplicity in the way we’ve decorated – using clean lines and a cool palette as a base throughout. I found Instagram to be a great source of ideas, too; there are

Tackling DIY To help keep costs down, Kyle and I took on most of the DIY ourselves and have certainly learnt a lot during the process! There was one occasion when Kyle accidentally drilled into a live wire in the wall – thankfully he was fine – so we have since invested in a wire detector. I love upcycling furniture and have revamped several pieces around the house, including two mid-century chests of drawers that are now in the guest bedroom. I purchased them from Gumtree at a great price and painted

In a well-ventilated area, lay out newspaper or anything suitable to protect the surface. Wearing a dust mask, spray-paint the first layer over the tins. Allow to fully dry before applying

a second coat for full coverage. Using superglue, attach strong magnets to the back of the tins. Either strip magnets or discs will work – try Amazon for options. Insert small succulents or cacti, keeping them in their pots, and pop on the fridge. Remove the plant from the tin for watering.

Abstract design
I’d say I’m naturally drawn to a more muted colour scheme and embrace Scandi-inspired styling by using lots of white, grey and natural woods. I wanted to keep the house feeling light and fresh so we decided to stick to these colours throughout, adding touches of blush pink and green accents with furniture and accessories. Having seen geometric painted walls on Pinterest, I had a go at this technique myself in the living room and created abstract shapes to lift the plain white walls. It was actually much easier than I thought it would be and using FrogTape meant I could play around with the design before painting. The guest bedroom design was a little trickier, however, as I had to use a level to make sure the line was straight all the way around the room. In the end, the half-painted design worked out really

Remove drawers and unscrew any handles if necessary. Lightly sand the surface. Wipe off any dust and apply a multi-purpose primer using a small foam roller or paint brush. Once dry, apply your top coat – eggshell or satin wood paint will give a low-sheen finish. Leave to dry, lightly sand and repeat. To paint a pattern, reinsert the drawers to make sure the design lines up. Mark out your scheme either freehand or use masking tape for a neat finish.

Remove the drawers to paint the design for easier access. When dry, finish with an optional top coat of clear sealant or wax to protect the paintwork.

Eye for a bargain
When it comes to furnishings, I’m a bit of a bargain hunter and found a lot of pieces for the house through websites such as eBay, Facebook groups and Gumtree, particularly for products that were out of stock or discontinued. Ikea is my go-to store for affordable, stylish furniture that has a Scandinavian feel and I even admit to enjoying building flat-pack furniture now and again! H&M Home and Matalan

also have some gorgeous ranges and my favourite higher-end retailers have to be Made.com and West Elm. Making the house personal to us has been a natural process and I only buy things that I feel drawn to, not trends that shops tell me I should buy. Transforming our house from an empty shell into somewhere we can call home has been worth the wait and I now can’t imagine living anywhere else! ABOUT ME I’m Agnieszka Dmochowska, but everyone calls me Agi. I’m 37, a stay-at-home mum, and I live with my husband, Bart, 37, our daughter, Hanna, six, and our son, Leon, four. MY HOME A three-bedroom Victorian end-of-terrace property. We moved here in May 2010. WHEN I BOUGHT IT The previous owners had been letting it out for a couple of years, so it needed a lot of love. The layout was impractical for family life, and the rooms all felt a little dark. AND NOW It took us eight years, but it’s finally a fun and vibrant home. We went for a white base to make for easily interchangeable schemes, and injected colour with an abundance of accessories.

lthough incorrectly advertised by the estate agents as a “well-presented property” (it couldn’t have been further from the truth), we were still charmed,’ says Agi. ‘And despite a builder friend advising us to walk away, we were so excited, or, if we’re honest, desperate, to buy our first house that we went for it anyway. It was generous in size, particularly compared to others we’d viewed within our budget, and we could see endless potential for it to become a happy family home. We weren’t ignorant to the fact that it’d take a long time – not to mention a lot of work and money – to whip it into shape and make it work for us, but we gladly accepted the challenge.

COLOUR COCKTAIL ‘Our starting point for this room was simple: white walls to make it appear bright, and a grey corner sofa that doubles as a bed for when we have guests to stay. Plus vibrant art to keep it feeling fun’
When we moved in, the house had an impractical layout and looked rather unloved. As a Victorian property, it should have been bursting with character, but instead it appeared lifeless, bland and boxy. The renovation began almost immediately with the master bedroom. We set to work uncovering the original floorboards and opening up the fireplace to reinstate the room’s period features, as well as painting over the muddy brown walls with white paint. The bathroom was next on the list, and was a much bigger job than we’d anticipated. It’s in an extension built by the previous owners but it was in a bad way with paint flaking off the tiles (we assume they were painted in regular emulsion rather than specialist paint) and a less-than-ideal positioning of the suite. Bart took on the task himself, which meant that while we were saving money, it wasn’t a quick makeover. He knocked through the flat ceiling so the room felt more airy, ripped out the original suite and switched it

In fact, I vividly remember Bart installing the bath every single evening so that we could shower, then disconnecting it again afterwards – for days on end – so that he could continue with the tiling or grouting the following afternoon.

Money was tight after the bathroom update, so it was another two years before we could begin the biggest job: reconfiguring the downstairs layout. Originally, the house had two separate modestly sized reception rooms and a long, narrow corridor which ran down the side, connecting the two rooms to the kitchen at the end. This layout felt far too closed off for me, and I craved an open

Once we had the money saved up, we had local builders knock down a few of the downstairs walls and replace them with steel beams. We chose to keep the living room chimney breast in situ to help zone the two areas and allow us to create alternate moods in each space. It also gave us a great excuse to treat ourselves to a wood burner. I’ll never forget walking in for the first time after the support posts and scaffolding had been removed. The feeling of space was overwhelming. We definitely made the right decision.

But as our tastes have evolved, so has our choice of

Ever-changing interiors While we’re happy with our home as it stands, it’ll never be fully finished. I’m always stumbling upon new ideas and inspiration on Instagram and in interiors magazines, and trying to figure out how to incorporate them into our schemes. I also share photos of our home projects on Instagram (@agi_at_59). The renovation has been a serious lesson

in patience. I ve learnt that projects often take much longer than anticipated, and often cost more too. But you always get there in the end. My biggest regrets are not installing the freestanding roll-top bath I had my eye on eight years ago, and choosing two sinks instead of extra storage, but I’ve come to realise that the key to being happy with your home is letting go of any flaws you think it has, and just accepting it for the cheery, fun, imperfect place that it is.’

ABOUT ME I’m Martin Holland, 33. I live here with my partner Mark Walters, 40. We run an interior design company. MY HOME A three-bed semi in Nottingham, built in 1900. We moved here in August 2009. WHEN WE MOVED IN The house had a nice, newish bathroom, but the rest was just neutral with very few period features. Downstairs there were mismatched floors and an old, damp kitchen. AND NOW We’ve installed a sleek, white kitchen, knocked through the living and dining rooms, and turned the smallest bedroom into extra living space upstairs. A LUXURY LOOK’ Martin Holland and Mark Walters gave their Nottingham doer-upper house a designer makeover, on a budget
IDEA TO STEAL ‘Cornicing gives the property period charm’
‘W
hen we decided to buy somewhere to live together, neither Mark nor I had any particular type of property in mind,’ says Martin. ‘We’re both passionate about design, but we like lots of different periods and styles, so it was more about finding a house where we could create something interesting and individual, rather than looking for a particular type of property. We viewed several others before we spotted this house. It was liveable, but it needed a complete overhaul, so it was ideal for us. We were a bit gutted when we discovered it was under offer, but, amazingly, that sale fell through a few weeks later, so we snapped it up.
Making plans Apart from the bathroom, which had been refurbished quite recently, all the rooms were bare. The decor was tired and old-fashioned and the windows were draughty. Downstairs there were three different floor types, the kitchen was damp and tatty, and the only original character left was some cornicing in the hall and living room. So while we were waiting for the sale to go through, Mark and I fine-tuned our ideas for transforming the house. We had ambitious plans for a wall-to-wall redesign of each room that would give us an open-plan feel, with plenty of light and a mix of classic and contemporary styles. Neither of us is afraid to make a bold style statement and we definitely wanted our home to have a quirky edge.

LUSH LIGHTS ‘We found a fabulous white chandelier to hang over the table and define the dining space. The modern take on a ceiling rose is our own design and gives it even more drama’
ripped out and the exterior walls were knocked through, ready for glass doors to be fitted in the dining area and kitchen. Then the patchwork of concrete, laminate, tile and wood flooring was replaced with uniform dark, glossy timber floorboards throughout, which tied the different downstairs areas together. Fitting the flooring was one of the biggest jobs, as we had to take off all the skirting boards and raise some sections to get a consistent level. For about six months, the house was full of brick dust and it was dirty, messy and cold. We had a limited budget so we were doing most of the work ourselves with
some help from family. Luckily, we’re both very handy, but even so, it was difficult. We just tried to learn as much as we could and focus on the end result. Over the course of about three years, we’ve replastered, redecorated and rearranged all of the rooms. We didn’t need the smallest bedroom, so we knocked it through and made a spacious second living room upstairs, complete with TV and music systems. We learned a big lesson there, too, as we bought the sofa in a sale, without checking we could get it up the stairs. One section was just too big and would not fit. We finally managed to haul it in through the

window, but it was touch-and-go, and would have been an expensive mistake if we hadn’t managed to find a solution.
Using our design skills To get the contemporary, one-off look we wanted, we created our own interior features. We’ve designed and made things like the angular, suspended ceiling that houses the kitchen lighting, the integrated storage and cladding around the living room fireplace and the dining

RESTORE FLOORBOARDS

Sweep the floor thoroughly and check the general condition of the boards in case any need to be replaced. If so, try reclaimed boards. Check each board is firmly fixed – any protruding nails need to be hammered below the surface. Prep the space by sealing any doors to stop dust escaping and make sure you have a dust mask plus clothes, eye and ear protection. Using a professional sander, follow instructions for safety. Start by moving the sander diagonally across the boards. Then work up and down, going along the grain. Finally, use an edging sander to go over the edges

of the room, and then a corner sander for any hard to reach nooks. Sweep the floor, then repeat step three if required. Sand any rough spots smooth with sandpaper. Before staining, clean the floor with methylated spirit, making sure the area is well ventilated. Choose your preferred type of varnish depending on how much wear and tear the room will receive. Then, using a 75mm paint brush, start staining the boards in line with the grain. Once dry, sand out any rough spots and then repeat with second and third coats, if needed, until you have your desired finish.

‘AN EXTRA-HIGH HEADBOARD IMMEDIATELY GIVES A BEDROOM A SENSE OF GRANDEUR’ between the hallway and the living room. The hall was dark, and we wanted to boost the natural light without losing the dividing wall. We knocked a big hole in the wall and filled it with open shelves. Now, light spills into the hall, but the two spaces are still separate. Removing the bricks was nerve-wracking – there’s a concrete lintel supporting the hole, but we worried the cornicing might collapse. The idea of maximising light is behind a lot of the changes we’ve made. We
replaced all the cheap internal pine doors with modern timber-framed glass ones, and we’ve now got glazed doors to the garden from the dining area and kitchen so they let even more light filter in. As a starting point, we painted all our newly plastered rooms white and chose high-sheen white kitchen cabinets.
Neutral not bland After that, we began investing in key furniture pieces. We’re keen on the

neutral look, so long as it isn’t bland and characterless. We’ve used a warm taupe on a couple of walls in the living area with crisp white to lift it. There’s plenty of texture throughout the house, too, with furniture, cushions, throws and rugs. The whole interior feels much brighter now, but inviting too, with light-reflecting mirrors and chrome accessories, set against warm woollen textiles in muted neutral shades. Transforming our home took most of our spare time, energy and money for a long time, but we’ve had an amazing experience developing our own ideas and learning new skills. On the back of the project, I entered and won BBC2’s Great Interior Design Challenge. Mark and I have since set up our own company, MartinMark Design (martinmarkdesign. com). It’s been a huge learning curve, but we’ve loved it all. And as part of the process we’ve found a passion and created the home we always wanted.’

I
t’s all very well saying, “if it ain’t broke...”, but what do you do if you just don’t like it and you’ve got a big wish list and a small budget?’ says Laura. ‘That’s the conundrum David and I faced when we inherited the original kitchen in this house. It didn’t feel like a space we wanted to spend much time in and, even though it’s a great size, it didn’t deliver on the multi-functional space we were after. There was only a tiny oven and no space for a dishwasher. The units were good quality but their wood-effect finish just wasn’t to our taste and its red and brown tile scheme left me cold! It also felt very narrow due to the wall cupboards which lined the room. Even so, we lived with it for more than a year before we made any changes. We couldn’t afford to rip it out and start again, so we decided to work with what we had.
Starting point
The first thing we did was take down the wall cabinets. This immediately made a huge difference, really opening up the room and making it feel much brighter and wider. Next, we looked at colours for the walls and cabinets. With the existing black flooring I wanted to make the base cabinets lighter, so I chose a soft grey paint shade and then added a bit of drama to the dining end of the room by painting the walls dark blue.

STYLE UP OPEN SHELVING Create small displays using items in a variety of shapes and sizes, leaving space around them so that the eye is drawn to them. Use the pyramid principle – form a cluster in a triangular shape by staggering the heights of objects. A stack of crockery, glasses or plants can help add texture and varied heights, too. For a smart display match the shelves to the wall colour behind – this makes the items stand out. A contrasting colour to the wall will make the shelves more of a feature. ‘Grey or coloured grout makes quite a statement and helps feature tiles pop against your walls’
dishwasher! Fitting in a seating area was a challenge, but my dad came up with the idea of this lovely bench which is practical and comfy. It doubles as dining room seating and a radiator cover, too. What I wasn’t prepared to compromise on, however, was our cooker. It’s induction, which is perfect when you have children and need to prepare quick meals!
Main challenges Although the work during the summer of 2017 went without a hitch, the main challenge was to stay within budget. We did most of the work ourselves or with the help of family. The only thing we didn’t tackle was the tiling – a friend helped us. What we hadn’t bargained for was the time it would take to paint the
unit doors! There are 18 and they all had four coats, so it was a labour of love. Realising the difference they made to the room was the best bit of the project.
Finishing touches One of the most striking features of the room is the dramatic dark blue on the walls, which I love. I like natural elements too, so I knew I wanted wood to be a feature. The scaffold planks that we made the shelves from cost hardly anything but add texture and warmth. The plants then provide a pop of organic green against the blue and the timber. I’m pleased with what we’ve achieved, especially on such a tight budget. There’s nothing I’d do differently. I think you could safely say we maxed out on our wish list after all!’

How does it work? An induction hob has a circular coil under each zone that generates a magnetic field. When you place a ferrous-metal pan onto the surface and effectively complete the circuit, heat induces through the coil and into the pan itself.
What are the benefits? It’s very fast – two pints of water take just over a minute to boil on an induction hob with a boost function, as opposed to nine minutes on gas and 11 minutes on a ceramic hob. It’s also very efficient – it’s only using energy when the pan is on the hob, which means savings on your bills.
Is it easy to clean? There are no pan supports or burners to negotiate, just one flat surface that can be wiped down in no time. Plus unlike a ceramic hob, the surface doesn’t get hot,

What’s it like to cook on? Plenty of top-end chefs have ripped out their burners and replaced them with induction because it gives the cook so much control. Induction reacts instantly when you change the temperature, even more quickly than gas, plus the range of temperatures is much wider, so you can set it super-low when you want a gentle simmer or very high for searing meat.
Will I need new pans? Not necessarily. Your pans need to have a ferrous-metal base, such as 18/10 stainless-steel or cast iron, which will make a circuit with the magnetic coil in the element below – otherwise, the contents of the pan won’t heat up. To find out if your pans are compatible, test them by holding a magnet to the bottom. If it sticks, you’re in business. Each pan’s base should also be perfectly flat to guarantee even heat distribution.

How safe is it? Although there will be a small amount of surface heat left behind when you take a pan away (indicator lights will remind you) induction hobs are safer than most as it’s the pan, not the surface, that heats up. MY CHALLENGE The bathroom was poorly laid out, with wasted space. The walls were covered in a dated blue paper and the fixtures were falling apart. The vinyl floor had begun to warp, and the beige mosaic wall tiles weren’t our taste. MY WISH LIST We had a generous amount of space to work with, so my aim was to rework the layout to fit in a freestanding bath and a walk-in shower. I wanted metro tiles to feature, and wanted the room to become a peaceful retreat.

een to stay close to both our families, my husband Daniel and I had focused our house hunt on several villages within close proximity to York that were more affordable than living in the city itself’, says Lucy. ‘I was set on finding something with lots of character and we were happy to take on a project, so when this Victorian semi came on the market, in need of a little TLC, we jumped at the chance.

The existing bathroom, although dated, functioned fine for day-to-day life and so Daniel and I decided to spend time living with it as it was, so we could carefully consider exactly what we wanted from the new space and not rush into anything. Fast forward three years – a little longer than we had originally anticipated – and we were ready to begin work with a clear vision. Daniel works in CAD design, so he was able to draw different layouts on the computer which allowed us to reimagine the space and play around with ideas to help us visualise the end result. Having been given quotes from several plumbers, we decided that it would be a lot more cost effective for Daniel and his brother-in-law to carry out the labour themselves, as they already had some experience. Switching around the previous layout and reconfiguring the plumbing took some time to complete because we moved the toilet and sink, as well as installing a shower where the old bath used to be and fitting a separate freestanding bath. Most of the work ran smoothly and we were able to continue using the bathroom during most of the project, aside from a few weeks

Clean the window you want to cover thoroughly with soapy water, making sure to clean the glass right up to the edges to ensure the film won’t peel away after it’s applied. Remove any excess water with a squeegee and then go over the whole window surface with a lint-free cloth until completely clean. Using a spray bottle full of clean water, spray the window so it’s covered in a thin mist. Remove the backing liner from the window film and spray the sticky side with water as you peel. Place the film onto the window and use the squeegee to remove water from under the film, starting from the centre, working outwards until the film is smooth and free of any air bubbles.

Styling the space To make the room fit in with the rest of the house, I couldn’t resist adding a few rustic touches in the smaller details, and some plants to make it feel fresh and homely. The vintage-inspired bath is my favourite part of the room and it feels like a completely different space to when we first bought the house. Now the hard work is finished, it’s so rewarding to finally enjoy the room we spent so long planning – it was definitely worth the wait!’

when we had to shower at my mum’s house down the road. Doing the work ourselves drastically kept costs down and, although it may have taken a little longer, we were able to stay within our budget. I love all things rustic and vintage, which is the style we chose for the rest of the house, but we decided to go for a more modern and clean feel in here. Most of my inspiration came from Instagram, as I use it for my business, @helstonstreet, and I stumbled across some wonderful ideas like the black-framed shower screen which I instantly knew I had to have! I went for simple white metro tiles to keep the look clean and then painted the walls in a subtle blush pink colour to soften the black detailing in the taps and shower.

WALK-IN SHOWERS Love the easy access of Lucy’s walk-in shower? Make it work in your home…
A
hybrid between an open-plan wet room and fully-enclosed shower cubicle, walk-in showers offer easy, low-level access and a luxuriously spacious showering area. The screen helps to contain shower spray, making walk-ins a practical choice in smaller bathrooms and for young families.
So, what is a walk-in? A walk-in shower has no door – hence the ‘walk-in’ – but it does include at least one shower screen. There are two main styles: the single entry, like Lucy’s, has access at one end, which is great for a corner or alcove. A double entry or walk-through design can be accessed from either end.
Should I go for a tray or tank the floor? Tanking (waterproofing) the floor, and walls, will provide completely level access and is worth considering if you have less-abled users or are looking to future-proof your home. It will also provide the slickest designer look. However, taking the tray route means

you’ll swerve the expense of tanking (a labour-intensive, messy process), which is why we vote tray every time.
Where can I get one? Complete walk-in shower packages are widely available and come with the tray, screen and waste fittings in one. You can potentially save money buying the tray and screen separately but do measure carefully to ensure they fit together.
What size and shape? This will be dictated by your space but ideally you want at least W100xD80cm. Walk-in showers tend to be rectangular and can be used as two zones – one end for showering and the other for drying off. You can also buy screens that curve outwards in the main showering area to provide more elbow space while you wash.
How can I achieve uninterrupted entry? Completely level entry requires tanking the floor to make it waterproof, or a flush-fit tray, but neither option is cheap. Slimline trays are your next best option and range in height from 2.5-3.7cm, so the step ‘up’ into your shower is negligible. Not every bathroom is suited to low-level trays, as they can be too low to achieve sufficient fall for the water to drain away. Placing your shower nearest the external soil pipe will help, as will the direction and depth of any floor joists below – ask your builder or plumber if you’re unsure.

Grease and line an 18x28cm tin with baking parchment. Put the chocolate, butter and syrup into a bowl and melt over a pan of simmering water. Meanwhile, put the shortbread into a plastic bag, tie a knot to secure and bash with a rolling pan to crush. Put 50g of the mini eggs in a plastic bag and bash to crush. Cut the fudge into small pieces. Take the chocolate off the heat, add the biscuits, fudge, crushed eggs and marshmallows. Mix well, then transfer to the tin and chill. To make the topping, melt the milk chocolate with the butter. Pour over the chilled mixture, to cover. Scatter over the fudge and mini eggs, then chill until set. Cut into 16 even squares.

SELECT YOUR FRAMES Go for different sizes and shapes of frames for an eclectic look. Remove the backing and front glass, then rub down the frame with a cloth to remove any dust or dirt.

PRIME THE FRAMES Add a coat of primer undercoat, ensuring the whole frame is covered. Leave to dry.

PICK A PAINT COLOUR Select a colour from Sandtex’s 10 Year Exterior Gloss collection and apply two to three coats evenly over the primed frame. Leave to dry completely between each application.

CREATE A BASE FOR THE PLANTS Staple chicken wire across the back of the frames to provide the base for the greenery. Ensure the wire is pulled tightly.

ADD GREENERY Using moss and succulents, entwine your greenery around the wire. You may need to pinch the wire together to secure each plant in place. Keep filling until the wire is hidden. Fix the frames to the wall.

SAND THE SURFACE Use a P180/P240 grade sandpaper to smooth the frame’s surface. Dust off and degrease the wood with methylated spirits using a lint-free cloth. This gives paint the best possible chance to bond on timber. If the frame is metal, use mineral spirits and remove peeling paint by hand-wire brushing.

HERB-ROLLED LEG OF LAMB TAKES 2HR 20MIN SERVES 8 2kg butterflied, boneless leg of lamb (ask your butcher to do this for you) 2tbsp olive oil 400ml white wine 400ml lamb or beef stock FOR THE STUFFING 100g pine nuts, lightly toasted Large bunch of fresh mint, leaves picked Grated zest and juice of 1 unwaxed lemon 75g black pitted olives 2 garlic cloves, crushed 1tsp ground cinnamon 3tbsp olive oil

Preheat oven to 220째C/Fan 200째C/ Gas 7. Whizz the pine nuts, mint, lemon zest and juice, olives, garlic, cinnamon and 3tbsp of the olive oil in a food processor until coarse. Lay out the lamb, skin-side down, on a chopping board and season. Spread the stuffing over the meat, leaving a 3cm border. Tightly roll up the meat and tie at 5cm intervals with kitchen string. Rub over the remaining olive oil and season again.

Put the joint into a roasting tin and roast for 30min. Turn the oven down to 180째C/Fan 160째C/Gas 4, pour the wine into the roasting tin and roast for a further hour. Allow the lamb to rest with the string still on, for up to 30min, while you make the gravy. Pour the juices and any bits of stuffing from the roasting tin into a pan, skimming off the fat. Add the stock and warm through. Remove the string from the lamb, carve and serve.

LEEK & BACON TARTLETS TAKES 40MIN SERVES 6

100g streaky bacon, diced 20g butter 2 leeks, trimmed and sliced 100ml white wine 6tbsp crème fraîche 500g puff pastry Flour, to dust 4 sprigs of thyme, leaves picked

Preheat the oven to 190°C/Fan 170°C/Gas 5. Fry the bacon for about 10min until golden, but still pink. Set aside. Heat the butter in the same pan and fry the leeks for about 5min. Season with salt and black pepper. Pour in the wine and bubble for another 5min until the leeks are soft and most of the liquid has evaporated. Stir 3tbsp of the crème fraîche through the leeks and add the bacon back to the pan. Remove from the heat. Roll out the pastry on a lightly floured work surface until just thicker than a £1 coin, cut out 6 x 12cm circles using a saucer as a guide. Mark a 1cm margin around the edge and put onto a baking tray. Spread the remaining crème fraîche into the middle of each tart, then top with the leek and bacon mixture and half the thyme leaves. Bake for 15-20min. Sprinkle with the remaining thyme and serve.

Preheat the oven to 220°C/Fan 200°C/ Gas 7. Place the carrots and parsnips in a roasting tin, drizzle over the olive oil and butter, and gently toss to coat the vegetables. Roast for 25min. Stir in the mustard to coat all the vegetables and cook for a further 5min, until nicely glazed.

BROCCOLI WITH LEMON & GARLIC CRUMBS

TAKES 20MIN SERVES 6 500g Tenderstem broccoli 75g day-old bread, crusts removed 1 garlic clove, crushed 5tbsp fruity extra virgin olive oil Zest ½ lemon and 1tbsp lemon juice

Bring a pan of water to the boil and blanch the broccoli for a couple of min until tender. Drain and refresh under cold water. Whizz the bread with the garlic and 2tbsp of the olive oil until coarse, tip into a frying pan and cook over a medium heat for 5min, until deep golden and crisp, then set aside. Gently warm the lemon zest and juice and remaining olive oil in a pan. Season well with salt and black pepper. Add the broccoli to the pan and coat in the dressing until hot. Transfer to a serving plate and scatter over the breadcrumb mixture.

STEAM-BAKED ASIAN-STYLE HADDOCK TAKES 25MIN SERVES 4 2 bok choy, halved or ½ white cabbage, shredded 4 x 200g haddock fillets Juice of 1 lemon 2tbsp sesame oil 4tsp ketjap manis (Indonesian soy sauce) 1tbsp tamarind paste Lemon wedges and sticky rice to serve

Preheat the oven to 200°C/Fan 180°C/ Gas 6. Place the bok choy on four separate sheets of non-stick baking paper and top each with a piece of fish. Mix together the lemon juice, sesame oil, ketjap manis and tamarind paste, and top each fillet with the mixture. Season well with salt and black pepper. Fold, roll and seal the baking paper to enclose the fillings. Place on a baking tray and bake for 12-15min until the fish is cooked through. Garnish with a lemon wedge and serve immediately, with sticky rice on the side.

Preheat the oven to 190°C/Fan 170°C/Gas 5. Put the sugar, eggs, oil and vanilla into a bowl and whisk for a few min, until pale and combined. Sieve in the flour and cinnamon. Fold in the coconut, carrot and pineapple. Divide mixture between

two greased 20cm tins. Bake for 30min. Turn out onto a wire rack to cool. To make the filling, mix together the mascarpone, vanilla and sugar. Slice each cake in half, horizontally. Spread one layer with 4tbsp lemon curd. Top with another cake and spread with half the mascarpone mixture. Repeat with the other two cake layers and decorate with the chocolate eggs.

LEMON CURD CREME BRULEE TAKES 45MIN, PLUS COOLING SERVES 6 600ml double cream Zest 6 egg yolks and juice of 1 lemon 100g lemon curd 50g caster sugar, plus extra to sprinkle Icing sugar, for dusting

Preheat the oven to 150°C/Fan 130°C/Gas 2. Put the cream and lemon zest in a pan, and bring just to the boil. Beat the yolks in a bowl with the lemon juice, lemon curd and sugar. Whisk in the cream. Strain the custard through a sieve into a jug, then pour into six large ramekins. Put them in a roasting tin and pour hot water into the tin to a depth of about 2cm. Bake for 25min, ensuring the mixture is wobbly in the centre. Sprinkle a layer of caster sugar on each. Caramelise under the grill until bubbling and golden. Leave to cool, then dust with icing sugar. Serve with Easter bunny biscuits.

Grease a 1.5L ovenproof dish with butter. Spread the hot cross bun slices liberally with butter, then top with the apricot jam. Warm the dried apricots and sultanas in the Cointreau or rum, then set aside to cool and let the fruit swell. Whisk together the eggs and the extra yolk, milk, cream, sugar, vanilla extract and ground cinnamon. Preheat the oven to 180°C/Fan 160°C/ Gas 4. Arrange the buns in the dish and scatter with the alcohol-soaked fruit. Pour the custard mixture over the top and press it into the buns a little. Cover and leave to soak for at least 10min. Scatter the pudding with the demerara sugar. Bake in the oven for 30-40min, until golden, puffed up and set. Serve hot, with pouring cream on the side.
