I get that ‘back to school’ mood when summer changes to autumn, and I can’t help browsing for new shoes and coats to see me through a long, rain-lashed winter. I am more mindful of not just buying things for the pleasure of it now, though. Sorting out my dad’s stuff after he died brought home how easy it is to accumulate stuff we don’t need and isn’t designed to last. I can’t pretend to be an eco warrior, but I would prefer to leave behind things that can be passed on and used, or disposed of without damage to the environment, rather than the leftovers of my life ending up in landfill. If you feel the same, keep an eye out for our ‘One Small Step’ logo – it’s there to flag up any sustainable, green or fair products we think you should know about. P.S. We’ve had a refurb! After all the hard work we’ve put into renovating it, we both have a real emotional connection with this house and hate to leave it

athalie and her husband AJ already knew their perfect location – they just needed to find the perfect house: ‘We’d been living in a two-bedroom flat in north London but, keen to start a family, we needed somewhere bigger,’ says Nathalie. ‘We often took our dog, Ramsay, for long walks further north, near Chipping Barnet, which has countryside on its doorstep and a busy high street, and is only a short Tube journey into the heart of the city. ‘We didn’t have to wait long to find something we could afford. A neglected Victorian terrace came on to the market and we jumped at it.’ The house had been abandoned for more than 20 years. It had no central heating and the kitchen and bathroom were unusable. It even had an outside loo. ‘Having a dog made it hard to rent somewhere, so we had to live in the house while it was renovated,’ says Nathalie. The scale of the job meant we couldn’t tackle one room at a time – the whole place needed new wiring and plumbing just to make it habitable. Two weeks after moving in, I found out I was pregnant – not the best timing, but we were thrilled and we had no choice but to buckle down and get it done.’ Starting with the kitchen, the couple knocked through into the outside loo, then removed the chimney breast and an internal wall to create an open-plan space with a dining area. The bathroom was moved from the back of the house into the study and the dividing wall moved to create a large bedroom where the bathroom had been. ‘With the basics in place, we double glazed the sash windows and installed bifold doors across the back of the kitchen. We then painstakingly replastered, refitted and decorated each room. We’ve lived through a complete renovation whirlwind, but we’re so proud of everything we’ve achieved,’ says Nathalie.

Liat Hughes Joshi, 45, lives with her son Luka, 14. They’ve recently moved into a four-bedroom Twenties semi in north London. Liat is the author of seven parenting books (liathughesjoshi.co.uk). ‘Our new house doesn’t have a single stroke of grey paint in it – and never will! When I was house-hunting, so many properties were top-to-toe grey, presumably because it’s on trend at the moment. But not only is it as dreary as a drizzly day, it’s so ubiquitous. In fact, it made me dismiss some houses. Yes, it’s easy enough to paint the walls a different colour, but when all the floors and fittings are grey, too, it could get expensive. Grey walls remind me of grey skies – and it’s really not a good look in the UK. That neutral palette might work in sunny California, but why complement the dreary UK skies with yet more grey? I grew up by the seaside and I love warm blues as they remind me of happy, sunny days. I do think grey can look tasteful in small measures, but you have to give it a lift with brighter shades. Painting every room in the same dull colour may make the interior flow, but it also looks so bland. Besides, it will soon become dated. I’m convinced there will be plenty of people who regret going all-out grey within a few years. There are so many beautiful colours to choose from – why stick to just one?’

Grey is the perfect canvas for adding brighter pops of colour to, so it’s anything but boring

Nicki Massey, 56, lives with her husband Paul, 65, in a four-bedroom detached house, part of which dates from the 15th-century, in a Worcestershire village. Nicki is the owner of online interiors boutique DesRes Home (desreshome.co.uk). ‘I think there are several misconceptions about grey. It’s not just a passing trend that’s appeared over recent years; in fact, it’s been around for a very long time. Our house was originally two 15th-century cottages and we’ve since added a modern extension at the back. I’ve used elements of grey throughout – it was the perfect choice to work alongside the original timber beams. Contrary to what many people think, grey can also be a very warm colour. The trick is to get the right shade, and that does take a bit of work. You have to consider where the light falls in your room throughout the day and how this will affect the tones. I once tried out a tester pot of a shade that looked like the perfect neutral grey when I first applied it – but later in the day, it had pretty much turned purple in the sunlight. Black-based greys can sometimes be quite steely and cold, particularly in a north-facing room, but there are so many lovely brown-based shades to choose from instead. Grey is a great neutral. I find it very calming and inspiring. And it provides the perfect canvas to add brighter pops of colour. So it’s anything but boring. Once I find a colour that works, I’ll never change it. When I do need to repaint, I’ll use the same shade. Our landing has been grey for 20 years – and I can guarantee that if you visit us in 20 years’ time, it will still be the same. However, it tends not to work so well in small, dark bathrooms, where it gets lost on the walls.’ ■ ‘The charm of blush pink is that it is warm without being saccharine,’ says Farrow & Ball’s Joa Studholme. ‘It has also become one of the most popular colours in men’s shirts in recent years, so it can’t be accused of being a feminine colour any more,’ adds Marianne. ‘Team it with warm stone neutrals and a

touch of black to reclaim it for spaces shared by both sexes.’ ■ ‘Blush pink can clash with orangey wood, such as pine flooring,’ warns interiors stylist Ali Attenborough. ‘To avoid this, use a cooler, grey-toned pink in a mid-tolight weight instead.’ ■ ‘When paired with neutrals, it’s important to avoid harsh contrasts,’ says Joa. ‘Dimity from our Red Based Neutrals group has an underlying pink tone that’s sympathetic to blush pinks.’

■ ‘I love the softness of a powdery blush against bold, earthy colours,’ says interior designer Louise Robinson (louiserobinsoninteriors.com, 07970 692371). ‘Try crimson, burgundy, burnt orange, ochre and green. It also works well with natural woods and aged brass.’ ■ ‘My favourite neutral to team with blush is warm grey,’ says Marianne. ‘It makes it look less delicate in a grown-up room. I love how the light pours through the windows in the morning and I’m proud of how we’ve preserved the original character of the property

aving outgrown their canal house above a coffee shop in Amsterdam, Sophie and Diederik van der Graaf were delighted to find a spacious Twenties house close to The Hague, but in one of its greener suburbs. ‘The age and style of the house appealed to us,’ says Sophie. ‘It was light and spacious, with French doors opening onto balconies from two bedrooms, but I thought we should open up the kitchen and rearrange the upstairs layout.’ With 165sq m of floor space to play with, there were a lot of options to investigate. ‘We opened up the dark old kitchen by tearing down a load-bearing wall and adding a new beam,’ says Sophie. ‘Then we fitted a new kitchen with a breakfast bar, which we all gather around to hang out and chat. We love the way the kitchen blends into the dining area, where everyone can work, eat, play, make a mess or have a glass of wine by candlelight. Upstairs, there was just one large bathroom, so we split it into a family bathroom and an en suite, and created an open-plan landing that doubles up as my office. It’s lighter, fresher, colourful and more practical.’ The work began in August 2016 and by Christmas the family had moved into their dream home. Despite all of the renovations, the house has kept its character – the new windows and door frames mimic the originals and the new tiled kitchen floor is also in keeping with the era, flowing naturally into the restored oak parquet flooring in the living room and the terracotta-tiled entrance hall. Sophie then set about decorating the space in her preferred palette of subtle greens, blues and natural hues, complemented by feature walls in bold patterned wallpaper. ‘The co-ordinating colours, patterns and materials were all used to optimise the light that comes in from all angles through the bay windows and the three sets of French doors,’ says Sophie.

I love relaxed, unstructured spaces, and this house had the bones to make that work

hen Katharine and James Howard needed to upsize to accommodate their growing family, the architecture of this house blew them away. ‘It’s early Victorian, with sweeping steps up to the front door, which were a big draw.’ The house had been let to students, so the interior was another story. ‘It had brown, cigarette-burned carpets and scuffed magnolia walls, but my mind began racing with ideas to bring it to life,’ says Katharine. ‘The deep cornicing, the lovely tall windows, the marble fireplaces – it had it all,’ she says. ‘Although the house felt big compared to our flat, we knew there was scope to make it more family friendly.’ The first move was to stretch the footprint of the property by adding an extension that gave them an all-in-one family room and kitchen-diner, plus an office and capacious built-in storage – ‘to swallow up all the boots, sports kit and family clutter,’ says Katharine. On the top floor, the couple had the ‘Hobbit-height’ ceiling raised to create a bright bedroom and a bathroom for their daughters. Throughout the house, its orange pine floorboards were replaced with silver oak planks and the standard panel radiators swapped for Victorian-style designs, which Katharine painted blue to disappear into her blue-based colour schemes. ‘I like the way the blues feel dramatic but calm; and from a practical perspective, it makes the artwork stand out.’ As well as the varying shades of blue, Katharine has indulged her love of decorative detail, with button-back upholstery, swannecked lamps, fringed sofas and oversized patterns. ‘I’m glad that decorative design, richness and layering is making a comeback,’ she says. ‘I wish I could be more restrained, but it’s impossible!’

Living room ‘I’ve got a thing for blue!’ says Katharine. ‘It feels surprisingly calm, though. O

nce their children left home, Sue and David Mansfield decided to downsize, planning to build a purpose-built property in a field they owned next to the house. At a homeimprovement exhibition, they met architect Mark Percival of Architecture:M and he designed a sustainable building, complete with a green roof, but the local planners decided it wasn’t innovative enough. ‘One of them suggested we convert a redundant barn on the site instead,’ says Sue. ‘Mark came up with a plan to extend the barn, which was used for storage, to create an eco-friendly house.’ The barn was virtually rebuilt, although a condition was that the original walls were retained. ‘We were able to replace windows and doors, but the back of the barn had to look as it had always done,’ says Sue. The front of the barn was extended to incorporate large windows to allow in lots of light, and a courtyard was built to enhance the open, modern feel. ‘We wanted to be able to see through the house from front to back.’ For the second floor, Mark suggested adding a mezzanine and Sue chose barn-style bedroom doors for an authentic feel. The roof was replaced and timber cladding added to the extension. ‘The house is also very green,’ says Sue. ‘It’s heated by a ground source heat pump, with underfloor heating downstairs and cast-iron radiators upstairs. Solar panels on the garage roof provide electricity and there’s a Tesla Powerwall to store electricity.’ The work took a year and the couple lived in their old home before selling up and moving into the barn. ‘We are so thankful that we’ve been able to downsize into this great space where we are able to spend quality time with our family, friends and great neighbours.’

tylists and interior designers will often tell you that curtains can really make a room, but only if chosen with care. It’s easy to feel overwhelmed when trying to make your selection – with heading type, fabric weights, length, pattern, colour and practical considerations all needing careful thought. So we asked three pros – an interior designer, a stylist and a curtain expert – to help us out with some professional advice… ARE CURTAINS EVEN IN FASHION? ‘Curtains are always in fashion in one form or another,’ says interior designer Yvonne Jones. ‘I think living in a colder climate means we like to feel wrapped up and having curtains frames the view.’ Sarita Sharma, a stylist, adds: ‘I think people used to see curtains as an investment buy, but with the availability of such fabulous

fabric designs at affordable prices nowadays, you can get a high-end designer look without the price tag.’ WHAT DO THEY ADD TO A ROOM? ‘To me, curtains give a space personality and character,’ says Sarita. ‘I think they can give a room something it’s lacking, whether that’s warmth, simplicity, elegance or drama,’ says Yvonne. WHAT FABRIC SHOULD I CHOOSE AND WHAT ABOUT LINING? ‘Think about function, which room and which window,’ says Victoria Walker, product manager at Hillarys. ‘Voiles are sheer and translucent and a great way of letting the light in while still offering privacy, but black-out, lined curtains are a better choice for bedrooms. I’d always line curtains though – unless they are voiles – as lining makes your curtains look fuller, helps reduce light leakage and provides extra

‘A flat, boxy, straight pelmet adds neatness to a window,’ says Yvonne. ‘When choosing pattern, make sure you take the whole room into consideration’

privacy. Coloured lining is also available – think about grey or black facing out instead of white or ecru.’ Sarita loves mediumweight linen or a linen mix for a relaxed look. ‘But for drama, there are some great velvets around in fabulous colours, as well as lots of botanical and tropical designs at the moment,’ she says. But whatever you choose, make sure it’s a design you’ll love for a long time. ‘Good curtains last for years so you need to really love the pattern,’ advises Yvonne. BUT COULDN’T I JUST FIT A BLIND? ‘If dressing a really wide window, blinds can look awkward and out of scale,’ says Sarita. ‘Likewise, on a really tall window, blinds can become cumbersome, especially Roman ones as you have to pull the full weight of the fabric up each time.’ Plus, Yvonne advises that curtains are a better choice for both warmth and sound insulation. ‘They also create a

different aesthetic, giving a bigger visual effect,’ she says. HOW LONG IS THE RIGHT CURTAIN LENGTH? ‘I love curtains that are fitted to the ground – well 1cm off if I’m being fussy,’ says Victoria. Yvonne agrees: ‘I like them to just touch the floor. If they puddle, then the fabric can crease or kink and not drape properly, as well as making opening and closing a nightmare.’ There does seem to be an element of personal choice though as Sarita loves the look of a puddled curtain against a tall window. ‘Although you do have to be careful with your choice of fabric and if your room tends to get dusty or you have pets, then it’s not as easy to clean under them,’ she says. TALKING OF CLEANING, HOW DO YOU CLEAN CURTAINS? ‘The bottom edges of your curtains are the first to really show the dirt,’ says Victoria. ‘It’s because they sit on

use a double- or triple-pleat heading on a bay window and hang the curtain under the track, not against it,’ says Yvonne. ‘This will allow the curtains to stack up better.’ n BIFOLD DOORS ‘I’d suggest curtains with a wave header on a wave track,’ says Victoria. ‘These would draw back to

a minimal stack when open, so wouldn’t cover up too much of your view.’ n FRENCH DOORS ‘Keep the curtain pole as wide as possible so you can draw the curtains completely out of the way to get maximum light when open,’ says Sarita. n SMALL WINDOWS ‘Make them look bigger by fitting

the floor or windowsill. Dusting and vacuuming sills and flooring will help. Curtains will benefit from a regular clean, too – use the brush attachment on your vacuum, working top to bottom, front and reverse of your curtains when closed. You can also take them to the dry cleaners.’ POLE OR TRACK? ‘This depends on the type of window, as well as the type of header you prefer,’ says Victoria. ‘For example, a wave header needs to be fitted into a wave track, while an eyelet header just needs a pole. The most popular types of header are: wave, eyelet, double- and triple-pinch pleat, pencil and deep-pencil pleat.’ ARE PELMETS BACK IN FASHION? ‘I personally don’t like pelmets,’ says Sarita. ‘They feel old-fashioned and just add to the expense.’ Yvonne agrees. ‘Avoid anything frilly or overembellished. If you are looking to fit one, then style in a reserved, controlled manner.’ WHAT ABOUT TIE-BACKS, BORDERS AND TRIMS? ‘Avoid fabric-shaped tie-backs, which are old-fashioned, and choose woven leather, beaded or even tasselled ones instead,’ says Yvonne. ‘I like to inset a wide border, too, about 8-10cm in from the leading edge. This can be toning with a geometric or floral design or add contrast with a plain colour. But remember – never trim a pelmet!’ WHAT STYLE DO YOU LOVE? ‘I love a wave header,’ says Sarita. ‘It gives a very boutique look to a room.’ For Yvonne it’s all about quality. ‘I love well-made, hand-finished curtains,’ she says. ‘My favourites are stacked velvet curtains, hanging almost ceiling to floor, with a sheer voile,’ says Victoria.

‘The kitchen was dark and narrow, but there was potential for a double-height extension at the back for the lofty, multifunctional space we had in mind. We moved out for six months while the extension, designed by Cooke Fawcett Architects, was completed. The glass structure has made the house lighter and more modern inside than you’d expect from the front. One of the extension’s features is its

Douglas fir rafters and I was keen to echo them without overwhelming the room with wood. So, we chose West & Reid cabinets in a mix of Douglas fir and painted matt grey-green finishes. Everything has been chosen with longevity in mind. We’re usually in here all day long and it’s lovely when we have friends and family here, too. The kitchen fitting took four days and cost £4,000 as part of the extension project.’

STEAM WORKS Food cooked with steam loses fewer vitamins and nutrients than other methods of cooking. A regular steam oven is great for cooking juicy fish and veg, but they don’t brown or crisp. A combination steam oven cooks with both steam and conventional heat to produce crusty loaves and perfectly browned joints. Or consider a standard oven with added moisture – often called steam-assist. They inject moisture during a regular fan cooking programme rather than full-on steam cooking. HOW ELINA AND GAVIN DID IT ‘We’d been living here for 15 months when, one day when we were at work, the dishwasher caught fire and the kitchen was gutted. Although it was harrowing, it gave us the chance to create the kitchen-diner we’d always wanted. The dining room was separate, so a surveyor friend suggested we remove the wall, fit a steel beam for support and create one large space. It was a fairly simple process, but it took the builders a lot of work to restore the smoke-damaged walls. We designed the cabinets ourselves, combining Howdens carcasses with doors and leather handles we found online. We love colour, pattern and texture, and wanted a room that was fun to be in. The work took seven months and cost around £6,300.’

HOW LUCY DID IT ‘We wanted a bedroom with an en suite and hired an architect to draw the plans. The planning permission went through smoothly and we were able to live in the house during the work. Once the builders had created the two rooms and fitted the windows, I was surprised at the sheer size of the bathroom. Planning the layout, it was clear that the challenge would be to get everything in proportion. By using floor plans

I’d found in the back of kitchen showroom magazines, I was able to mark out where I wanted the sanitaryware and played around with it until I was happy. The build took eight weeks and we paid a tiler £1,000, the electrician £700 and £2,000 for the installation. I’m pleased with the look and, budget-wise, although we spent big on tiles, we saved by buying sanitaryware through a trade supplier.’

HOW TOÉ USE COLOUR IN THE BATHROOM Just because it’s normally the smallest room in the house, doesn’t mean it has to be the plainest...

Q

How do I choose a colour? Start with a colour wheel to see how shades interact with each other. Contrasting colours (those opposite one another) will make a statement, while harmonious colours (which sit together) are better for a relaxed vibe. Pick three colours that work together and use the 70:20:10 rule, which means the lightest colour will cover 70 per cent of the decor, the next will cover 20 per cent, and the boldest 10 per cent. If you want a calm scheme, stop it looking bland with two neutrals in a 70:30 ratio.

Where should I use it? Coloured tiles are an obvious choice, and you can use the same shape in a selection of shades to create a feature. Patterned tiles will add an attractive detail and are

HOW NADIA DID IT ‘Considering how big this room is, I don’t think anyone could have come up with a worse layout than the previous owners. There was a central island, with washbasins on one side and the loo on the other. The mirrors were so low, you had to stoop to use them and the tiny shower cubicle was stuck in a dark corner. After living with it for three years, I knew what I wanted. Then it was a matter of deciding where

everything should go to make the room flow. A local company, Kallums Bathrooms, helped us find solutions and managed the project, too. Our budget was around £18,000 and, in some cases, we had to rein ourselves in. We were going to buy a stone composite bath, but chose a less expensive option. It still looks stunning, and saved us thousands. The work took about 10 weeks and fitting cost around £12,000.’

usan and Tom were looking to move from their Georgian flat in Edinburgh to a property with a garden when a friend’s recommendation led them to local architect Matthew Johnson of A449 Architects, who had acquired a stable and coach house. As soon as the couple saw the plans that Matthew had in mind for it, they bought the property. ‘We liked the materials and features proposed, especially the burntlarch exterior cladding,’ says Susan. ‘The proposed size of the building was ideal for our needs, too.’

FROM OLD TO NEW At this point, the foundations of a new extension had been laid. Respecting the character of the building was a priority, with the aim to minimise alterations by retaining as much of the original building as possible and working with existing doors and windows. The building was stripped, the roof was removed and a new membrane and slate tiles fitted. The crumbling retaining garden wall was rebuilt and tied into the structure of a new, two-storey timberframed extension that had been built behind it. INTERIOR PLANNING In terms of layout, the principal living rooms are now accessed from a central hallway, making the most of the narrow and low original building. The couple were able to tailor the design to their needs. ‘We had a good feeling about what we wanted the house to look like,’ says Susan. They requested that the kitchen and dining area be opened up into one space. ‘We wanted to create an open-plan living area, while retaining a minimalist aesthetic.’ ECO CREDENTIALS The new structure was superinsulated and app-controlled underfloor heating was laid. The open-plan living space has glazing that opens fully out to the garden beyond. ‘We feel very lucky to have been so involved in the making of our house,’ says Susan.

atharine and David Eaton moved in knowing the house needed renovation and more space but they were up for the challenge. ‘We wanted to make it our forever home,’ says Katharine.

GETTING HELP Ben Woodhart, co-director of the Woodhart Group came up with ideas that would fit their budget. ‘We couldn’t create the extra bedroom we wanted upstairs, so we focused on making the living space versatile instead.’ CREATING SPACE The couple consolidated the downstairs living spaces by replacing the existing small extensions and knocking through. This gave them a big kitchen-diner on one side and a larger sitting room on the other, both with full-width bifold doors. The work took seven months. BUDGET CHALLENGE The couple overspent on electrics, external alterations and fitting underfloor heating. ‘These were deliberate decisions and we managed to find ways to save in other areas to compensate,’ says Katharine. ‘We now have the space to chill out or entertain and our teenager can get away from us when she needs to! Staying in is so much more fun now.’

SIMPLE PLEASURES

Brioche rolls with quailÕs eggs INGREDIENTS ● 7g sachet fastacting yeast ● 1tsp sugar ● 100ml lukewarm milk ● 2 eggs, whisked ● 300g strong white bread flour, plus extra for dusting ● 50g butter, softened and cubed, plus extra for greasing FOR THE GLAZE ● 1 egg FOR THE FILLING ● 12 quail’s eggs ● 250g baby spinach leaves, washed and wilted ● 3tbsp crème fraîche ● 4 pinches of ground nutmeg

1 To make the dough, put the

yeast, sugar, milk and eggs in a mixer fitted with a dough hook. Mix on low for 10sec and high for 10sec, then add the flour and ½tsp salt. Continue beating on high

TAKES 1hr, plus proving and cooling MAKES 8 rolls

until the dough forms a ball. Add the butter and beat for 1min more until the mixture is smooth.

2 Tip the dough onto a floured

surface and knead for 2min. Place in a greased large, non-metal bowl and cover with cling film. Leave to rise in a warm place for 1½-2hr.

3 Divide the dough into 8 oval

rolls. Place in a large, greased roasting pan and enclose the pan in a greased plastic bag (grease the inside so it doesn’t stick). Leave to rise in the fridge (4-24hr) or in a warm place for 1-1½hr until the dough doubles in size.

4 Preheat the oven to 220°C/

Fan 200°C/Gas 7. Make a glaze by whisking the egg with 1tbsp water. Brush rolls with egg glaze.

5 Bake for about 20min until

golden. When the base is tapped it should make a hollow sound.

6 While the brioche are cooling,

soft-boil the quail’s eggs in a pan for 2min, run them under cold water and shell them.

7 Split the rolls and fill with

the warm egg, spinach, crème fraîche and nutmeg. Season well and serve immediately.

Panettone French toast with quick clementine marmalade TAKES 30min SERVES 4-6

INGREDIENTS FOR THE MARMALADE ● 4 clementines, peeled, seeds removed ● Rind of 1 lime, thinly sliced ● 50ml apple juice FOR THE FRENCH TOAST ● 4 eggs ● 150ml milk ● 1tsp vanilla paste ● 1 panettone, cut into 4 slices, then halved lengthways ● 2tbsp butter TO SERVE ● 250ml natural yogurt ● Maple syrup ● 50g walnuts, chopped

1 First, make the marmalade. Put

the clementines, lime rind and apple juice in a small saucepan. Bring to the boil, then lower the heat and simmer for 10min until it starts to thicken. Leave to cool slightly while you make the French toast.

2 In a large mixing bowl, whisk

the eggs with the milk, vanilla and a pinch of salt. Dip the panettone slices into the egg mixture, leaving for 30sec on each side, so it soaks all the way through.

3 Melt the butter in a large frying

pan over a medium heat, then turn up the heat a little. Cook the first batch of panettone for 1min on each side until crispy and golden. Repeat with the remaining slices.

4 Serve the French toast with the

clementine marmalade, yogurt, maple syrup and walnuts.

Oven-cooked plums TAKES 20min SERVES 4-6 INGREDIENTS ● 12-16 ripe plums, halved ● 15g cube of soft butter ● 60g vanilla sugar ● 2 vanilla pods ● 4tbsp dark or golden rum ● Single cream, to serve

1 Set the fruit, cut sides up, in

a large heatproof baking dish or lined roasting pan rubbed generously with butter. Sprinkle half the vanilla sugar over the fruit.

2 Preheat the grill to the highest setting. Place the fruit under the grill and cook for 8-12min or until dark, sticky and almost collapsed (or preheat the oven to 230°C/Fan 210°C/Gas 8 and bake near the top for 20-30min).

3 Split the vanilla pods, scrape

out the seeds and mix with the remaining sugar. Stir in the rum to make the syrup. Crisscross the empty vanilla pods over the fruit and drizzle with the rum and vanilla syrup. Serve warm with cream.

4 Just before cooking, make the

green crème fraîche. Blend the dill, parsley, capers, extra virgin olive oil, chilli, lemon zest and juice in a food processor. Spoon the crème fraîche into a bowl and lightly ripple half the green mixture through. Spoon the remaining green sauce into a separate bowl.

5 Heat 1tbsp olive oil and a little

butter in a large frying pan over a medium-high heat. Cook the potato cakes for about 4min on each side until crispy, golden and hot all the way through.

6 Serve the hot potato cakes

topped with green crème fraîche, slithers of smoked salmon and green sauce. Finish with a little sprinkling of lemon zest and lemon wedges on the side.

TAKES 1hr, plus chilling SERVES 6 INGREDIENTS ● 500g Maris Piper potatoes, peeled and cut into large chunks ● 110g plain flour, plus extra for kneading ● 50g oats ● 1tsp onion powder ● 1 egg yolk ● Zest of 1 lemon, plus extra zest and lemon wedges to serve ● ½ green chilli, finely chopped ● 60g butter, melted, plus extra for frying ● 1tbsp olive oil ● 200g smoked salmon FOR THE GREEN CREME FRAICHE ● Small bunch fresh dill ● Small bunch fresh parsley ● 1tbsp capers ● 1tbsp extra virgin olive oil ● ½ green chilli, deseeded and sliced ● Zest and juice of 1 lemon ● 150ml crème fraîche

1 Put the potatoes in a large pan

of salted cold water. Bring to the boil, then simmer for 10-15min until cooked and fluffy. Drain and leave to cool in a colander.

2 Put the flour, oats, onion powder,

egg yolk, lemon zest, chilli, melted butter, potatoes and a pinch of sea salt in a large bowl. Mix to form a soft, slightly wet dough. Tip onto a lightly floured surface and briefly knead.

3 Shape the dough into 6 round

potato cakes. Cover in cling film and chill in the fridge for 30min or until ready to cook.

1 Put the potatoes in a large

saucepan of salted cold water. Bring to the boil, then simmer for 15min until just cooked. Drain the potatoes, then leave in the colander over the pan to steam dry in the heat. Tip them back into the pan and roughly mash.

2 Meanwhile, using a sharp knife,

peel away the casing from the chorizo and add the sausage to a large frying pan. Fry over a medium heat, constantly breaking it down with a spoon until it crumbles. After 10-15min, when it starts to turn crispy and golden, add the thyme and breadcrumbs, and continue to cook until crispy. Scoop into a bowl and set aside.

3 Put the butter and a drizzle of

olive oil in the same pan. Add the garlic, leek, kale and sprouts, and cook over a high heat for 10min until slightly wilted and soft.

4 Put the mashed potatoes and

cooked greens in a large bowl. Add the mustard, egg, flour, rosemary and clementine zest and juice, season generously with salt and pepper and mix together well. Shape the mixture into 4 large or 6 smaller cakes.

5 Heat 2tbsp olive oil in a large

6 Fry the eggs to your liking in

a little oil in a large frying pan. Serve the bubble and squeak with a fried egg on top and chorizo crumb spooned over and around.

I’m doing and can easily lose track of time. Our dachshund, Dudley, joins me here a lot. In the house, he’s a very vocal dog – sitting at the window and barking at everyone who goes past. But in the hut, he just curls up happily. Things get added, then taken away again on a regular basis. Simon sometimes complains about the number of twigs, bits of foliage and piles of cushions I have indoors. Here, I can do exactly as I please. Nobody can complain because it’s all mine! I used to have a room inside the house, but that became a playroom and I was relegated to the kitchen table, where I was constantly interrupted. I found it hard to switch off from being a mum and felt guilty if I was doing anything other than giving the boys my full attention.
