A company has launched the ultimate vessel for messing about on the river - a five-star floating hotel. The M/V Aria was custom built to offer guests a luxury boutique hotel on which to explore the Amazon River in Peru. The 147-foot-long boat can accommodate 32 guests in 16 suites with floor-to-ceiling windows described as offering “generous outward-facing picture-windows with panoramic Amazon river views”. On board are an on-deck Jacuzzi, gym, lounge, observation deck, as well as a fine Peruvian dining restaurant led by Executive Chef Pedro Miguel Schiaffino. Aqua Expeditions claim they provide the “luxury of a five star hotel in one of the most remote and most beautiful destinations in the world.”

CELEBRATING 33 YEARS IN THE BUILDING INDUSTRY
Having started work at the bottom of the scale hod-carrying, perhaps by fate, I ended up joining a self-build group. At the time, I had only a dream to chase but that dream soon became a reality and my first house was soon built and sold. From that moment onwards, my efforts have been relentless and I am a self-confessed workaholic. In the early years, caution was thrown to the wind and I was travelling faster than most around me and believed that I was ‘invincible’. I saw many changes during that time, some for better, some for worse. However, seeing these things happen did not deter me and I carried on with the same carefree attitude.

Keddie – A Numbers Game 1979 - 1990
My first company, Keddie, was conquering because we diversified into contracting, plant hire, Civil Engineering, and block manufacture and ended up with ninety eight vehicles on the road and employed two full time mechanics. The vehicles ranged from cement tankers to a fleet of eighteen JCBs, lorries and sand dump trucks. We took on around a hundred direct and indirect employees, including office and site staff. Then came the recession and there was a sudden slowdown in trade. It soon became clear that our expansion could not continue and Keddie could no longer survive. Sadly, the shop was closed and everything, including my family home, went down the pan. The only thing remaining, was my burning desire to build and somehow, that was what I continued to do.

Yellow3 – Short spell at the top 1990 - 1993 Having met someone else with the same burning desire as myself, we started over. One of our first meetings was on a cold January day in the midst of a blizzard. He had come to measure windows on a house that I was building and I arrived for the meeting in a snow covered Porsche. We laughed that we must both be mad as everyone else was housebound and we were the only two people out in the whiteout. I took photos that day over the rear of my yellow Porche and my second company Yellow3 was born and grew over a short period.

Seven – The early days 1993 - 2000 With a few pounds in my pocket gained from the days of Yellow3, and a market place steadily on the up, Seven evolved. It was set up as a development company with a desire to be noticed, both through quantity and individuality. Work started on a credible vision, with a dream of one day maybe being floated on the stock market. With a new Bank behind us and a few local Investors, we went from strength to strength and developed multiple housing sites from New Milton to Shaftesbury and Swanage to Dorchester. We were soon building over a hundred units a year and to date, over 33 years in the industry, we have built over a thousand new homes in Dorset and Hampshire.

Seven – Now 2000 - Present day
Seven were doing well, but a change of direction came along purely by chance. I have always tried to design our properties with individual character, but not the extreme. By trying something different, we found ourselves pioneering modern, contemporary homes and soon became leaders in this trend. We won a variety of prestigious Awards and slowly transformed from a mass development company to one which built individual oneoff properties of around twenty a year. We also designed, built and jointly owned a contemporary hotel on the River Stour and this led us to diversifying. We are now travelling a new road, and that gives me a new energy to continue to push and pass on my experience for expertise and new ideas to my son, Josh. Selected awards

New Ventures Football, what do I know about it? Where my knowledge is lacking I have had to rely on my son Tom, who at the age of seventeen and after many years of my questioning: “What do you want to do when you leave school, son?” and getting various negative responses, finally decided that he would like to be a footballer. So, I ended up buying a local Club in trouble, Dorchester Town FC, which I soon outgrew leaving them in good stead. Meanwhile, I progressed to a league Club and various other ventures have found my fancy. From media, football projects, architecture and restaurants we are also continuing our building in London and abroad, Cap Ferrat, Montenegro, and soon Dubai where we have acquired a taste of their forward thinking development strategy. Where next? I don’t plan... I just do it!

The brief A straight-forward brief was given by the client to provide a simple to use home theatre system that will fit within the parameters of the loft space available. The system must be simple enough to be used by any member of the family and include Sky HD, PS3 and DVD sources.

The solution The original brief was fairly straight-forward to provide a custom home cinema to fit in the loft space, but as the project moved forward at a rapid pace more and more features were added. The first task was for us to measure the room to calculate the optimal size screen for the environment. Due to the shape of the room we selected an 80” screen which was fitted to a custom screen wall that we constructed. The video projector that we chose to use is ceiling mounted to provide the room with more flexibility and space, and all the technical facilities and amplifiers were also mounted in a small rack in the eves. For optimum sound quality we used five speakers and a subwoofer which were mounted in specific locations behind the screens and on the walls to produce the best acoustic performance. As the project progressed the client was keen for us to look at other elements so in addition to integrating the cinema screen with the PS3 and Sky HD box. We added an online server to manage their entire DVD collection digitally and installed lighting and blind control to the one device controller system. We also fitted a motorised staircase which is controlled by a wall pin code ensuring protected access and ability to lower the staircase. Acoustic treatment was finally added to the front and rear of the room, covered in a suede to match with the room colour. The final finishing touches were six electric reclinable seats – two x2 seat configurations and two single seats with a passage between the tiers. Perfect viewing!
The verdict “The installation is fantastic, we have thoroughly enjoyed the cinema so far! It has become a bit of a family event that we all sit down and pick a film and all we need to supply is the popcorn! The system was professionally installed and every detail taken into consideration we especially like the keypad entry from the landing with the security pin code. The Dawson’s installers actually added to the whole ownership experience by being so friendly and helpful during the installation and also whenever we asked for a personalised adjustment to the programming. They gave 100% to ensure we were really happy with the end result and the whole experience has been a most pleasurable one.”

In the past, heat output wasn’t important to most fireplace purchasers. They would use their central heating to warm the house and the fire was primarily to look pretty. Then in 2008, came the financial meltdown which, coupled with the ever increasing price of gas, has forced customers to consider living room fires which actually heat the home. This has lead to a resurgence in wood fire sales that would have been unimaginable a few years ago. As a result, fire designers and engineers are developing creative and exciting ways to offer a low carbon form of sustainable heat which can be a major architectural feature within the home. Open plan family living areas are becoming popular with a real fire at the heart of the design. Several of the new glass fronted cassette stoves are available with ducted hot air systems and with outputs big enough to heat the whole home can be connected to bedrooms, hallways and other living areas. New generations of boiler stoves are being developed by a number of manufacturers offering the possibility of linking the output of the fires to the existing heating and hot water system. This approach, offers great flexibility, enabling the traditional heating system to maintain comfort levels whilst the house is unoccupied but the real fire system can take over on those cold winter nights, saving significant amounts of fossil fuels. Somehow, there is nothing like a real fire on a cold winters evening. Taking the process one step further, “Fondis” the French manufacturer has developed a way of connecting the ducted air system to an air source heat pump which can either provide warm air when the fire is not lit or cool air throughout the summer months. Combination heating and hot water systems
can provide ways of significantly reducing your energy bills and helping to reduce your carbon footprint. Traditionally, heating systems were powered by an oil or gas boiler, designed to cope with the total heating load in the worst of weathers. However, for probably 340 days of the year, weather conditions are not that extreme , in fact the average UK temperature throughout the year is 7 degrees centigrade. Therefore although a property might require 30 kilowatts of heat on the coldest days when the house is fully occupied, most of the time a heating output of 12-15 kilowatts would be more than adequate. By using a stepped approach, combining low carbon emission heating appliances of differing outputs provide the total heating load when required, but will use far less energy in doing so and are able to run at much lower levels in times of reduced demand. The Government is looking to encourage the use of technologies such as air and ground source heat pumps, solar thermal panels and biomass boilers. Installation costs of such low carbon appliances generally attract only 5% VAT. They will also be introducing the Renewable Heat Incentive which will give a cash rebate for every kilowatt of heat produced by these appliances for the next 18 to 20 years. Exact details of the domestic arrangements have yet to be released but the scheme will be the first of it’s kind in the world. “We’ve got a psychometric test we do for staff, and I thought, ‘I’ll do it myself’. “It tends to put people in two categories creative or logical. I’m literally chalk and cheese. I’m left-handed with chopping and writing, everything else right-handed.” This could well explain how his madly creative impulses sit so easily alongside a love of rational, scientific exploration. During the past four years, TV viewers have been treated to his extreme approach via his Feasts series, Little Chef and Heston’s Mission Impossible. And this year he opened his second high-end restaurant, Dinner, which provides a tour of Britain culinary past and includes your average Blumenthal twists, such as meat fruit (chicken liver parfait wrapped in mandarin jelly to make it look like a tangerine). “At one point when we were opening Dinner, we had 600 dishes in development between the restaurants, television, Waitrose and other projects,” he says.

If you want to see food through Heston Blumenthal’s eyes, pop a biscuit in your mouth, pinch your nose and breath in. It won’t taste of much as flavour comes entirely via aroma molecules, he explains. But it’s the kind of experiment that inspires his day-to-day cooking and has helped him to turn dining out into a quixotic art form.
In his latest book, Heston Blumenthal At Home, the three Michelin-starred chef attempts to lay bare his thought processes, without recourse to the epic commands contained in his seminal 532-page Big Fat Duck Cookbook of three years ago. Just to recap, his bacon and ice cream mixture needed to infuse for 10 hours, then mature for another 10, before you poured on liquid nitrogen. This time sizzling culinary facts - both technical and trivial - intermingle with easy-to-imitate recipes mostly confined to one page of text.
“Fear of failure is a big driving force so I know I have to drop myself into one situation, pull myself out again and then do it again, trying to keep my head above water again.”
“If you ask me for my guilty pleasure, it’s prawn cocktail,” says Blumenthal. “When I was growing up in the Seventies you could only get one type of pasta, and you could only get olive oil from chemists, but that’s not to say there wasn’t food from that era you didn’t grow to love. For me it’s prawn cocktail. “When I get home late after working in the Fat Duck there’s nothing I like better than to raid the fridge for it. Being such an addict, I’m deeply resistant to attempts to muck around with the ingredients, but putting a little chopped basil and tarragon into the mix introduces some fresh, lively extra flavour, as does scraping the seeds from a vanilla pod and adding them to the mayonnaise.
Although it’s hard to imagine Blumenthal’s ever less than 100% in control while in the kitchen, he begs to differ. “There are some times when you think, ‘I’ve bitten off more than I can chew’. Even with Feast. In the second series, we were panicking the day before, thinking we had nothing to serve. “But because of the length of the programme you don’t see all that. I’d be like, ‘I have a problem’. Next scene ‘Oh I’ve fixed it’. You miss the bit where I was madly panicking!” Here are three recipes from Heston Blumenthal At Home...
“It’s funny as we think of vanilla as sweet, but if you chew a vanilla pod, it’s as bitter as coffee.” Reading his cookbook, filled with tips on how to cook ‘sous-vide’ style (food sealed in airtight plastic bags and plunged in a warm water bath) and the joys of smoking candyfloss, it’s easy to get absorbed by his bold tactics. Even if you do think spritzing Kirsch into the air to accompany your Black Forest gateau, or smearing fan blades with a maritime scent to accentuate the flavour of your salmon dish, might be going too far. “I’m a bit weird,” admits Blumenthal, as he analyses why he cooks in such extreme terms, and dreams up dishes such as snail porridge.

Combine the tomato ketchup, mayonnaise, cayenne pepper, Worcestershire sauce and lemon juice in a bowl and mix thoroughly. Season with salt and freshly ground pepper.
100g mayonnaise Âźtsp cayenne pepper Worcestershire sauce, 12 drops 10g lemon juice Salt and black pepper 400g cooked shelled prawns 1 iceberg lettuce, finely shredded 1 avocado, peeled and diced
Add the prawns to the sauce and stir to coat. Place the shredded lettuce on the bottom of four glasses or glass bowls, followed by the diced avocado, and then a generous spoonful of prawns and sauce.

2 racks of lamb, weighing approx 500g each
Pre-heat the water-bath to 60C. Place the racks in two individual sous-vide bags with 15g each of oil and the herbs divided between them.
Extra virgin olive oil 16 sprigs of thyme 4 sprigs of rosemary 8 bay leaves Salt Jar of tapenade You will need: Sous-vide vacuum bags Water bath (bain-marie)
Seal the bags under full pressure, and place in the bath for one hour. Remove the bags from the bath and remove the racks from the bags, discarding the herbs. Pat dry. (Alternatively, place the sealed bag in a basin of iced water at this stage and refrigerate until required.) Season the lamb with salt. Coat the bottom of a large frying pan generously with olive oil and place over a medium-high heat. When the oil is hot but not smoking, add the lamb and cook for four minutes, flipping the rack every 15 seconds, until the meat is brown on each side. If the pan begins to smoke, lower the heat. Remove the lamb from the pan and allow to rest for at least 5 minutes before coating with the tapenade. Divide into cutlets to serve.

For the Eccles cakes:
To start the Eccles cakes, melt the butter in a saucepan over a medium heat, then add the sugar and heat until the mixture begins to bubble. Remove the pan from the heat and stir in the currants, vinegar and allspice. Allow to cool completely.
100g unsalted butter 150g unrefined caster sugar 200g currants 25g red wine vinegar 5g ground allspice 500g all-butter puff pastry Egg wash (1 egg yolk beaten with 2tsp milk) For the potted Stilton: 100g Stilton, at room temperature 50g Mascarpone 75g unsalted butter, at room temperature ½tsp salt 30g Pedro Ximénez sherry ½tsp sherry vinegar
Portion the mixture into 16×25g balls, put on a tray and place in the freezer for 1 hour. Roll out the pastry to a thickness of 3mm, then cut out 16 circles using a pastry cutter (approximately 9cm). Brush the circles with egg wash, then place the frozen filling in the centre of the circles and wrap the pastry around it. Press together the overlapping edges to seal, and roll between your hands to form a perfect ball. Turn each cake over so the join is on the bottom and slash the top with a knife three times. Place the cakes in the freezer for at least 30 minutes (they can be left in the freezer at this stage if making them in advance of serving).
Meanwhile, for the potted Stilton, put the Stilton, mascarpone, butter and salt into a bowl and blitz with a hand blender until smooth. Gently warm the sherry, 55g cold tap water and the sherry vinegar together in a small saucepan until almost simmering. Slowly add the sherry and water to the cheese and mix carefully until well combined. Decant into small ramekins or a single bowl and place in the fridge to set (approximately 1 hour). To bake the cakes, pre-heat the oven to 200C. Brush the surface of each cake with egg wash and bake in the oven for 20-25 minutes or until the pastry turns golden brown. Take the potted Stilton out of the fridge 10 minutes before serving with the warm Eccles cakes.

The recent economic climate has seen many local businesses struggle, often resulting in them losing the fight and ending in closure. This short-lived cycle is becoming something of a trend, one moment a new eatery pops up and in the flash of a pan they are gone. This is not the case for everyone however, and there are a few entrepreneurs out there breaking the mould and succeeding against the odds. We met with the three intrepid foodies behind the brand Koh Thai Tapas to talk business, find out what it takes to succeed in the restaurant trade and discuss their plans for the future. James Hampton, Andrew Lennox and Nick Billingham are taking the restaurant world by storm. The company started in 2009, just after the recession really hit hard. Eleven months after the opening of their first restaurant in Boscombe, Koh Thai Tapas were awarded the highly coveted Bournemouth’s Restaurant of the Year and their latest venture, a restaurant in the centre of Bournemouth, is going from strength to strength. Founded on the concept of taking dining out back to its roots; combining a relaxed dining experience with great food and service, the idea of breaking Thai food from its traditions and being served tapas-style, Thai Tapas was born was born. It takes some serious business acumen and determination to succeed in this demanding trade. Each of Koh’s three co-owners brings something unique to their enterprise and their combined skills and expertise have created a force to be reckoned with. James has over twenty-five years of experience in the restaurant trade; having worked in an eclectic mix of establishments across the USA he truly is a
restaurateur at heart. Nick, with ten years of bar and restaurant experience is arguably the biggest foodie of the three and his passion for Thai food has resulted in him being trained by an international Thai chef. Finally, Andrew is the business brain behind Koh and with ten years of business experience he is utilising his expertise to develop the brand alongside James and Nick. The boys take their work seriously and have embarked upon Koh as a business venture. They are all incredibly hands-on, not satisfied with taking a backseat they spend time working in the restaurant and getting stuck in, no task is too small or menial for them to complete. This work ethic is also reflected in the staff that they hire. Good people really do make the difference and their loyal team of carefully selected staff share this attitude as they all work together to make Koh a success. Not only do Koh invest in their staff but they invest in the local community too. With the belief that that the areas they are in will only get better by local businesses investing time and money to push regeneration and other projects in the right direction, the team at Koh have become heavily involved in the regeneration of Boscombe and Bournemouth. They put a lot of their time and money into charitable work and this is a something that will continue as they expand across the UK. James, Andrew and Nick’s understanding of the importance of investing in the community and their grasp of the volatile market has resulted in them effectively adapting to the new business environment. They recognised that the industry was changing and developed something that they call CDE - Complete Dining Experience. The

This relates perfectly with their ‘Thai Tapas’ concept and has given people a new format to eating out. Koh is attainable to everyone, with no airs they simply want to create a warm ambience in which people can relax and enjoy delicious food; great food, great times, great atmosphere, it’s a simple idea but one which clearly works. Their adaptability to the recession and humble approach to business has helped them to conquer various obstacles along the way. Finance was their biggest hurdle the three had to overcome. With banks not lending when they started out they were forced to fund the entire project themselves. It was essential that they started small and once again their business approach had to evolve in order to make Koh work. Despite the hardships of the time they

always had their eyes set on the bigger picture and concentrated on a steady development in order to build a stable business during unstable times. If slow and steady wins the race then Koh Thai Tapas is a winner indeed and they are undoubtedly here to stay. The future certainly looks bright for the boys as their goal to build a boutique chain of restaurants across the UK is right on track. Plans for restaurant number three are already underway and their outside catering business Koh Lounge is continuing to expand too. Many restaurants come and go but with their business acumen and refreshing attitude Koh is set to stand the test of time.

2012 Year of the high-flyers Luxury watchmaker IWC Schaffhausen gets off to a powerful start in 2012 with five new models, the ‘Top Gun’ collection establishes itself as an independent formation within the IWC Pilot’s Watch family. The year’s high-flyer is the Top Gun Miramar: a tribute to the place in California where the myth of the elite pilots was born. And two Pilot’s Watches featuring many of fine watchmaking’s greatest achievements prepare for take off: the Big Pilot’s Watch Perpetual Calendar Top Gun and the Spitfire Perpetual Calendar Digital Date-Month. “For the new TOP GUN Pilot’s Watches we drew on our long tradition of manufacturing unusual deck watches. In the 1940s, Pilot’s Watches made in Schaffhausen were widely used as socalled B watches for flight navigation,” explains Georges Kern, CEO of IWC Schaffhausen. “Back then, only wristwatches with the highest possible precision were good enough for navigators: the pilot and his crew would synchronize their watches to the navigator’s.” Since the main priority for navigation is optimum legibility of the seconds and minutes, these two were often the only indicators shown on the outer ring; the hours would be relatively small and appeared on a central ring. This particular detail inspired IWC’s designers to display the hour circle and the chapter ring separately on the dials of the Big Pilot’s Watch TOP GUN Miramar and the Pilot’s Watch Chronograph TOP GUN Miramar. “The process of retracing the historic roots of our Pilot’s Watches gave us the idea of using the Miramar to create our first line with a military style design,” adds Christian Knoop, Creative Director at IWC.

“This allows us to combine various styles in an imaginative way – even with luxury elements, if we wish. That’s one of the reasons the new Miramar line is such a perfect fit for IWC: premium-class watches with outstanding mechanics and a rugged, almost hardedged feel.” The dark, metallic sheen of the grey ceramic case and the matte anthracite of the dial all waken associations with precision instruments used in aviation. The use of specific camouflage colours such as beige for the hands and chapter ring, together with green for the strap, underscore the desired look. The textile strap leans visibly on the tough webbing belts. It is complemented by two high-tech materials, typical for Top Gun, that were introduced to watchmaking by IWC as early as the 1980s: zirconium oxide for the case, along with titanium for the controls and the watch back. Both the Miramar models – like the entire Top Gun collection, incidentally – are equipped with IWC-manufactured calibres. Like the other Big Pilot’s Watch, the Big Pilot’s Watch Top Gun Miramar is equipped with the largest automatic movement made by IWC, with a power reserve of 168 hours. This also explains the 48-millimetre case diameter. The calibre 89365 found in the Pilot’s Watch Chronograph Top Gun Miramar is one of the most advanced and robust chronograph movements ever produced. It has a flyback function as well as an analogue display for stopped minutes and seconds.

The Schaffhausen-based watch manufacturer IWC has been making rugged and reliable timepieces for pilots and their passengers since the mid-1930s. Right from the start, IWC Pilot’s Watches were designed to offer optimum legibility by day and night and established the look of an instrument: a look that has since determined the appearance of this special breed of watches, to this day. The IWC Special Pilot’s Watch, launched in 1936, stood out with a distinctive black dial that was set off by striking luminescent hands and large luminescent numerals. Outstanding technical features of the IWC Special Pilot’s Watch included a shock-protected balance wheel bearing and a nonmagnetic escapement. With its 55-millimetre diameter, the Big Pilot’s Watch 52 T. S. C. of 1940 is the biggest wristwatch IWC Schaffhausen has ever manufactured.
As a deck watch it featured, among other things, a central hacking seconds to enable pilots and navigators to synchronize their watches with down-to-the-second precision. An extra-long leather strap also meant that it could be fastened around a flight suit. The clearly arranged dial was a perfect example of reductionism: a style cue and a paragon for all classic Pilot’s Watches. The Mark 11, with its hand-wound 89 calibre, manufactured from 1948 onwards for the Royal Air Force, established itself as the best-known IWC Pilot’s Watch of them all. It was less than three years ago that AFC Bournemouth faced a 17-point penalty and the threat of relegation out of the Football League. Today, the club is making substantial headway into plans to lift themselves out of npower League One and become an established Championship club.

The Cherries narrowly missed out on a lucrative promotion last season. A heartbreaking penalty defeat against Huddersfield Town in the play-off semi-final proved to be the undoing of a promising team, but also the catalyst for everyone involved at the club to build for another attempt at reaching the second tier of English football. Despite the nucleus of the squad departing over the summer months and the team not emerging out of the bottom half of the table until November, the squad was invested in, shaped and improved into serious play-off challengers. Unfortunately after a poor run of form towards the end of the season, it was not to be for the Cherries, but they are set to gel and mature further for an even stronger campaign in 2012/2013.

The principal element to any flourishing side is the proper attitude and ability on the pitch to which there is an undoubted abundance at the Seward Stadium. The departures of last season left the management team the opportunity to introduce highly talented players to the club, such as Matt Tubbs, Scott Malone and Welsh international Shaun Macdonald, who joined from Premier League newcomers Swansea City. Director of football Tom Mitchell explained the process of revamping the squad, and his hopes for the side in the coming years. “It has been a rebuilding process this year,” he said. “Obviously we lost a lot of our squad last year but I think we’re slowly getting there and the performances of late certainly show that. The last four or five games we’ve seen an improvement. In two or three years’ time I do see this as an established Championship club and pushing on from there.” Chief Executive Neill Blake shares that optimism and believes the club has all the credentials on and off the pitch to be a genuine force at the next level. The club is currently developing a state-of-the-art training complex next to the Seward Stadium and has plans to continue development around the ground. “We have a three stage plan at the football club. The first stage was to put the car park in. The second stage was to build the training pitches, which we have now started, and the third stage will be to build the south stand which houses a hotel.”

The new training facilities are on course for completion by pre-season in July and are expected to have a massive positive impact on the club. Mitchell said, “The training pitch development is already underway and the facilities will be in place for next season. It’s beneficial to us because everything is under one roof and obviously it cuts out travelling long distances to an external training facility every day. The players can train, attend the gym and eat all under the same roof. It is ideal.” The complex has been carefully designed to maximise the potential it holds. “The training pitches will mimic the stadium’s pitch to the most minute of details. We have dug down underneath the turf at the Seward Stadium, and developed the new pitches to exactly the same specifications, so conditions are identical in training as they are on a Saturday afternoon.” Despite the facilities nearing completion, Blake is keen to add even more to the development to further enhance the benefits of the an onsite training complex. “Due to the level of usage, I don’t think the two pitches will be sufficient enough,” he said. “In an ideal world we have enough area to the side of it where we potentially could put in an application for a third pitch to be added,” he explained The youth side, who currently train at Chapel Gate, will move to the first team’s current training ground of Canford School, Wimborne thanks to the new development and Blake is extremely enthusiastic about the role they have to play in the future of the club. “The youth side is where you should be able to bring kids up from a young age, spot the talent in the area, train them and introduce them into the same ethos as what you’re doing with the first team and hopefully see them playing in the first team.” Recent graduates of the Cherries youth set-up include former front-men Brett Pitman Sam Vokes and Danny Ings, as well as current midfielder Joe Partington, but Blake is looking to add more to the list. “As long as you’ve got the right principals in place and the right areas to work on then you can potentially be looking at three, four players coming through the youth team every year and looking for a place in the first team.” This summer marks the 25th anniversary of Harry Redknapp’s Bournemouth side winning promotion to the second tier for the first time in the club’s history, and the current administration are determined to end the supporters’ long wait for Championship football. Times may have moved on but they plan to follow the club’s proud tradition of bringing in young and exciting players, and playing attractive football, and, as always, there’s bound to be a few twists and turns along the way.

Red Bull Racing’s German F1 star became the youngest ever double world champion when he finished third in the Japanese Grand Prix in October 2011. Vettel joined an elite list of drivers to have won back-to-back titles, which includes Fernando Alonso, Michael Schumacher, Ayrton Senna, Alain Prost, Jack Brabham, Juan Manuel Fangio and Alberto Ascari. Seb has been setting Formula One records since his first weekend in the paddock. When he left the garage at Istanbul Park in practice for the 2006 Turkish Grand Prix he became the youngest man to take part in a Grand Prix weekend. Less than six seconds later he became the youngest man to be fined by the FIA during a grand prix. Speeding in the pitlane was the offence and he was fined $3,500, “which is a lot of money when you haven’t got any, so that hurt!” Five years on and he’s still setting records, many of them still for being the ‘youngest whatever’, but increasingly for being simply the best. In 2011 he had a fabulous car, the experience and confidence of being world champion, and a team-mate who’s struggled with the new Pirelli tyres. Seb has taken full advantage: here’s some of the records he set during 2011.

Heppenheim-born Seb began his racing career as a youngster in karts back in 1995, winning many titles before upgrading to open-wheel categories in 2003. In 2004 Seb won the German Formula BMW Championship before moving on to the Formula Three Euroseries winning the top rookie honours that year. Seb finished runner-up to Paul Di Resta in the 2006 F3 Euroseries, which led to F1 tests for Williams and BMW Sauber. On August 27, 2006 Seb became the third driver for BMW Sauber, leading to his F1 debut in Turkey where he picked up the speeding fine. He was the youngest driver to participate in a Formula One Grand Prix race at the age of 19 years and 53 days. On June 10, 2007, Vettel had his first opportunity in Formula One in the US Grand Prix, where he finished eighth and became the youngest driver ever to score a point in F1, at the age of 19 years and 349 days. From that day on, the records have continued to fall to Vettel, who at the time of writing has 21 GP wins, 36 podium finishes, 30 pole positions, nine fastest laps and is ready to defend his World Drivers’ Championship title in 2012.

Instructions Wash new potatoes and cut into quarters; leave the skins on. Boil until just soft; around 10 minutes. Empty the pesto into a large bowl and add the olive oil and crushed garlic. When the potatoes are just cooked, add to the pesto with the onions and coat. Take out with a draining spoon and spread on a large baking tray and roast for 10 minutes. After 10 minutes, coat the rest of the vegetable in pesto then add to the potatoes and cook for a further 10 minutes. Preheat the oven to 180 C / Gas mark 4. Heat oil in a cast-iron or other oven-safe frying pan over high heat. Sear steaks quickly on both sides until brown, then place the whole pan into the oven. Roast steaks in the oven for about 15 minutes for medium rare. 122

Instructions In a saucepan, combine stock with sherry. Add saffron and bring liquid to a boil then reduce to a simmer. In a large pan, heat olive oil and 4 Tbls. butter over medium heat. Add onion and curry powder. Cook until tender. Add garlic, cook for a minute, and then add rice. Stir to coat. Add 1 cup of hot stock and stir until liquid is absorbed. Add another cup and cook until absorbed. Continue this until 3 cups have been absorbed. Then, add the remaining stock to the pan and cook until absorbed and rice is chewy and just firm to bite. Remove from pan and add another tablespoon of butter and Parmesan cheese. Stir. Divide into bowls, sprinkle with chopped parsley Pan Fry bream fillets 6min each side & gently place on risotto with poached egg
Ingredients For the monkfish •
100g/3½oz cornflour

180-200g/6½-7oz piece monkfish tail, skin removed, visible veins trimmed

1 tbsp rapeseed oil
•
100g/3½oz butter
For the broth •
55 g (2 oz) fine stir-fry rice noodles, broken into 10 cm (4 in) lengths

2 tsp groundnut oil
•
2.5 cm (1 in) piece fresh root ginger, finely chopped
•
75 g (2½ oz) shiitake mushrooms, stalks discarded and caps thinly sliced
•
1.2 litres (2 pints) chicken stock
•
1 tbsp dry sherry
•
2 tbsp light soy sauce
•
125 g (4½ oz) cooked mixed seafood, such as prawns, squid and queen scallops
•
75 g (2½ oz) Chinese leaves, shredded
•
4 spring onions, thinly sliced
•
75 g (2½ oz) bean sprouts
•
Fresh coriander leaves to garnish
•
Chilli sauce to serve
Instructions For the monkfish, season the cornflour with salt and freshly ground black pepper and sprinkle the mixture onto a plate. Dust the monkfish fillet in the cornflour mixture until it is completely coated. Heat the oil in a large frying pan over a medium heat. When the oil is hot add the monkfish and cook for 4-5 minutes, turning regularly, until the fish is opaque and golden-brown on both sides. Add the melted butter and cook for a further minute, spooning the butter over the fish, or until the fish is cooked. Put the noodles in a bowl and pour over plenty of boiling water. Set aside to soak for 4 minutes. Meanwhile, heat the groundnut oil in a large saucepan, add the ginger and mushrooms, and cook for about 2 minutes to soften slightly. Add the stock, sherry and soy sauce, and bring to the boil. Halve the scallops if they are large. Add the mixed seafood to the boiling stock together with the Chinese leaves, spring onions and beansprouts. Bring back to the boil and cook for 1 minute or until the seafood is heated through. Drain the noodles and add to the soup. Bring back to the boil, then ladle into large soup bowls. Scatter over a few fresh coriander leaves and serve with chilli sauce, to be added to taste.

– Why did you decide to work in radio? I’d always be the one talking too much and playing up in school. My teachers said, “you talk too much and distract others from their work”, but when I realised that I could do that for a living I was set on the idea. I’m also a fan of loads of different bands and artists so getting to play songs at work is great!
– What is the best thing about working a Hot Radio? The best thing about working at Hot Radio is being able to have a laugh and play music for a living. It can be hard sometimes, but I always look forward to starting work. It’s also great to chat with listeners, they become like your mates!
– What advice would you give prospective radio presenters trying to break into the industry? Get used to making tea or coffee! I think that if you’re passionate about getting into radio then you need to put in the hard (and often unpaid!) ground work. Help out at small stations or hospital radio. You’ll learn a lot and meet lots of useful contacts. Don’t give up, and keep making the teas, you’ll get noticed eventually.
– If you could interview any person, past or present who would it be and why? I’d love to interview my musical heroes, probably Bowie or The Beatles. Although I’d probably make a fool of myself! Last year I got to interview Henry ‘The Fonz’ Winkler - I was so nervous as I’d grown up worshipping him, luckily I didn’t gush too much. But Bowie, I think I’d be lost for words.
– Tell us about how you landed a drive time slot at Hot Radio? I was doing the breakfast show with Paul before so was getting noticed by the management a lot more. I had been at the station for a year or two though, making coffees and helping out. I guess that always being enthusiastic helped me out.

– What was the first CD you ever bought? I’m sure it was some awfully embarrassing 90s pop. Something like the Vengaboys. Although I used to borrow lots of more credible stuff from my parents or brother like The Doors. I would borrow my brother’s Doors CDs and give them back when they were all scratched up.

As reputations go, McLaren’s is pretty much as good as it gets. Unlike most of its counterparts McLaren has created road car projects following on from its daily grid at the front of the F1 grid, not the other way round. And the only other road car in its back catalogue is the F1; a £634,000 all-carbon missile built without compromise, a car that cracked 240mph and held several world records - including the title of the world’s fastest production car - for over a decade.

Only now have the final productionspecification cars reached the road, and the prospect of road car project number two is a hugely enticing one when you understand that it was designed and is built with the same near-fetishist attention to detail that goes into its racing cars. As a simple example, one of the many weight-saving measures is the use of wiring that is hexagonal in cross section rather than round; that saves you 4kgs. But the most important measure is the carbonfibre chassis or MonoCell in McLarenspeak. They claim a saving of 75kgs over a comparable aluminium structure, and what that does for strength too is massive; you can actually drive a bodiless chassis as all the panels bar the roof have no bearing on the car’s integrity. That body is a thing of functional beauty however, and rather than grabbing attention for the sake of it you can see why there are scoops, vents and curves where they need to be. The rear wing is discreet when it is stowed, it pops up only when needed (or if you want the extra downforce) or when it is acting as an air brake. It doesn’t follow fashion, it follows function, and it appeals to the head and the heart as a result.

You get the same impression from the snug cockpit. There’s a low-key centre console (even though everything is beautifully finished) with a slick touchscreen panel in the centre that takes care of most functions. The view out is superb, and the driving position gets you in the mood, particularly the gearshift paddle which is actually one piece across the back of wheel just like in the F1 cars. Finger the starter button and the McLarendesigned 3.8-litre twin-turbocharged V8 fires up quickly and with a characterful blare - forget anything you’ve heard about it being too quiet - and with the automated transmission in D it rumbles away with total ease. Sedate driving on local roads shows that the MP4-12C can do comfortable and quiet. The Active Dynamics Panel is a pair of switches on the centre console, one for Power and one for Handling. With them all turned down the ride is tightly controlled but comfortable and the engine is aurally present but doesn’t disturb. You notice the easy torque available with just the lightest brush of the throttle and the measured, consistent response from the steering, but beautifully judged; it’s possible to forget for a moment that you’re driving something capable of over 200mph which is exactly what you need should you be lucky enough to drive one every day.
feel that the car is doing all the work for you, instead you’re just left feeling like a hero and that you’ve extracted every possible ounce of performance from the car. This is not a car for everyone, aside from the sticker price. It doesn’t shout about its performance, it doesn’t have the outrageous curves of a concept car to attract impressionable young ladies and it does the boring everyday stuff extremely well. And yet when you decide to exploit all it has to offer it displays a monumental ability to flatter and thrill the driver whilst simply demolishing the most challenging of roads. This is a car that will keep on giving, years after you’ve signed on the dotted line. Above all, it’s a car for and by those who really understand what driving is all about.
But some track action is the only way to find out what the McLaren can really do, and handily McLaren arranged some laps around the Top Gear test track at Dunsfold. Even with everything still switched to its lowest setting, the MP4-12C attacks the straights and bends with vigour. In a straight line the performance is delivered with silken brutality, a purposeful roar from the exhaust and each gearchange firing through in a fraction of a second. Instead of traditional anti-roll bars the MP412C has adaptive damping, but this is much more than the marketing gimmick you find on some cars. Roll is remarkably absent regardless of the setting yet the ride comfort never diminishes. Turn everything up to Track mode and the unmuffled roar from the engine sounds borderline illegal, the gearchanges snap through even quicker and the body remains incredible composed and level however hard you push. And you will push hard, because the MP4-12C is working hard to help you out. It has a brake steer system that applies measure braking pressure to an inside wheel as you enter a bend. You can feel it working but at no point do you

Simon Dolan
Simon Dolan is the epitome of a success story, having started his first business with a tiny advert in the local press, Dolan is now worth an estimated £100 million, with business interests as diverse as finance and mental health. Dolan developed a taste for business at an early age, selling scratch cards to classmates at school and following a brief spell trying to become a rock star Dolan fell into accountancy, the only field he didn’t really want to enter. After a short period working for someone else, he soon decided he could do better on his own and SJD Accountancy was born. 20 years on, SJD Accountancy is the 48th largest accountancy firm in the UK and placed 26th in the Sunday Times’ Best Companies to Work For list, thanks to its ‘low-stress environment’. This success has allowed Dolan the luxury of investing in start-ups, via Twitter of all places, making him Britain’s first ‘Twitter Dragon’. Initially offering a £5 million investment pot for successful business pitches on the social networking site, earning himself the nickname Simon has invested in a number of successful start-ups. We found a rare window in his schedule and caught up with Dolan for a brief Q and A.

I can’t say I have one, or indeed ever have. – What drives you to succeed? Probably insecurity in one way or another. – What inspired you to invite investment pitches via Twitter? I was frustrated by the lack of investment opportunities coming through from the normal channels and it occurred to me that Twitter could work really well for looking at new ideas – it’s easily accessible, anonymous if people want it to be, and of course, succinct. I figured that if someone could interest me in 140 characters, it’d be worth a follow up. – What was the craziest pitch? I’ve had several as you can imagine. A couple of highlights – one chap who wanted me to invest £2.5m to make porn films, and the other was an oil field in Iraq! – Which ones went on to succeed and are you still involved? Out of the 4 I invested in, 3 are still currently active and to various degrees successful. These are She Who Dares (a perfume and gift brand), MentalHealthy.co.uk (UK’s largest resource
for info on various mental health issues) and Global Moguls (a South African and UK based music project). I am still very much involved in all these. – If you lost everything tomorrow, what would you do? Cry, sulk, moan for a while and then get back on with making money again. – What’s your biggest extravagance? Cars! I’ve owned just about every super/hyper car there is and of course the racing cars. – Where is home and what kind of property is it / are they? Our main home is in Gerrards Cross and we have a country house in the Cotswolds. They are two very different houses with the one in Gerrards Cross your typical modern day “mansion”, and the one in the Cotswolds is much more traditional and quaint. – What ambitions do you still have? Many. To win Le Mans, to make the businesses more successful, and most importantly to help my boys to grow up to be happy. – What’s your proudest moment in business so far? Winning the Entrepreneur of the Year award was pretty good, but there have been many along the way, generally when you hit a milestone of either turnover or profitability. Next one will be when we hit £10m a year profit which we should do next year. – And your worst? I get asked this question a lot and to be honest I really can’t say there have been too many really hard times. I guess when you catch people you trust stealing from you is a really low point. – Favourite business book (apart from your own)? Atlas Shrugged by Ayn Rand. The 6th longest and without doubt the greatest book ever written. – What would you like to own that you don’t currently? The secret to eternal youth.

– What challenges did you face in the early days and how did you overcome them? There are challenges every day – that’s what makes life exciting. In the early days I had literally no money at all – not even enough to buy a typewriter (remember them?!) to type up accounts on so I had to buy one on credit from a catalogue paying £2.50 a week for 52 weeks. I still have it at home. I also knew nothing at all about tax when I first started and got involved in a tax investigation with my 3rd ever client. I told him I was an expert in tax and duly became one in a weekend but holing up in the local library and swatting up like hell!

Over the past few decades people have been preoccupied with losing weight and obtaining the much-coveted size zero and in doing so have embarked on some extreme diet and exercise regimes.
related changes in the body such as increased fat levels around the midriff or spare tyre! Elevated levels of Cortisol will break muscle down making you fatter and suppress the immune system.
Very low calorie, low fat diets in conjunction with what I call ‘Chronic cardio’ - exercising at a steady rate day in day out - by doing this, you do lose weight in a manner of speaking, but not so much body fat (and it becomes an ongoing cycle) it’s also not so healthy. Too much cardio is seen as bad for the immune system and bone density.
When you train cardio at 70% of maximum heart rate you are working at an energy efficient mode – so naturally you go for longer at a lower output, similar to a marathon runner - which is fine if your goal is to run 26 miles, but if it is to be lean, strong and healthy, you should be practising High Intensity Interval Training and following a high protein diet.
When you go on a low calorie diet the body automatically slows down its metabolism to survive as our ancestors did many thousands of years ago - what this means is that when you eat normally again the calories you will consume will be too much and you will put fat back on again quicker than ever. Also, during the low calorie stage you tend to burn muscle as fuel which means your body fat will automatically go up along with releasing a hormone called leptin which is termed ‘the starvation hormone’ so when your body is not getting enough fuel, it kicks in and makes you eat more sugary, fatty foods. This is directly linked to ‘insulin resistance’ which is when you have spent too much time consuming processed and sugary foods and the insulin that controls it becomes less effective and a whole host of problems start to occur which are group termed ‘metabolic syndrome’.
In summary, a low fat low calorie diet and lots of cardio training is not good for your health or for lowering body fat levels and staying lean. The result of this, has the recent movement towards a healthy, strong body image over the emaciated clothes horses we all longed for previously. Skinny is out, and strong is most definitely in.
With too much cardio or very long intense workouts you release cortisol when your fuel stores get depleted. Cortisol is called ‘the stress hormone’ because it is also secreted in higher levels during the body’s ‘fight or flight’ response to stress, and is responsible for several stress176

What To Do? For a number or years I have been training and eating in a certain way that not only keeps my body fat down, it fills me with energy and stops me getting ill. Very simply you have to practise HIIT and optimise and harmonise your hormones, HIIT being high intensity interval training – working intensely for a short time, having incomplete recovery and then going again i.e. sprint for twenty seconds, rest for 10 seconds and then repeat for approximately 4 minutes. Ideally, in addition to sprints, you want to be using bodyweight or weights for HIIT. A circuit could be 20 seconds of bodyweight press ups, 10 second rest, 20 seconds squats, 10 second rest and repeat for 4 minutes.
A simple way to optimise your hormones is to control the amount of insulin present in the body. Insulin is a master hormone that has a lot of work to do, but its main role is controlling blood sugar so that it doesn’t get too high, but when you eat a lot of processed foods, sugary drinks, too much fruit and starchy carbs, your blood sugar rockets and in comes insulin to control – then you get a crash when you feel tired and blood sugar is low – so then you crave sugar and release cortisol to keep you going and the process starts all over again. This will result in becoming fat and a host of other metabolic syndrome type problems such as diabetes and heart disease. With low calorie diets they don’t tend to state what foods to eat as long as they are 1000 calories or below – very bad! The sister hormone of cortisol is glucagon that is promoted when you eat more protein and less starchy carbs and sugary foods! Glucagon will help you release stores of body fat, but to do so you need to eat a protein rich diet around 35% with around 35% high fibre greens such as curly kale, asparagus, green beans, broccoli etc and also 30% fat, ideally monounsaturated fats like olive oil, avocado and flax seeds and also omega 3’s from fresh water oily fish. In addition, eat small amounts of fresh fruit, nuts and seeds. Altogether this is the best way to optimise your hormones and lose body fat rather than calorie count! Train hard, but remember, you can’t out train a bad diet.

Wimbledon All England Club, London 25 June –8 July 2012 This erstwhile garden-party tournament, which began in 1877, has grown to become one of the world’s favourite sporting events; it is also a central pillar of the summer season. The world’s oldest major tennis championship, fought out for two weeks between late June and early July at south London’s All England Lawn Tennis and Croquet Club, is the third Grand Slam tournament of the year and the only one still played on grass. The All England Club is famous for the perfection of its grass, as well as for its adherence to tradition. Players are expected to wear predominantly white on court, and are advised to bow or curtsey towards the royal box (though not all do so). Wimbledon originally financed itself by selling Debentures, an early form of time share for wealthy tennis fans. The system still operates today: some debentures are still held by the families of original owners, many are owned by companies. Debenture-holders have access to blocks of seats on Centre Court, and can use a special lounge where lunch and tea are served. Debentures are exchanged on the London Stock Exchange for upwards of £50,000 and are retained for five years.

Wimbledon’s Royal Box has 74 seats. President Clinton, Princess Diana, Cliff Richard and Jack Nicholson have been seen there in the past. Royalty has a long association with the Club: in 1929 Prince George became President of the Club when he died in 1942 his widow, the Duchess of Kent (later Princess Marina) succeeded in the post, attending for 23 successive years. The tradition continues with the present Duke of Kent, who succeeded his mother in 1969. He and the Duchess of Kent attend each year and present the trophies. Other members of the royal family are also regular visitors. In 2011 the Queen attended Wimbledon for the first time in over three decades.
In 2009 Wimbledon unveiled a revamped Centre Court, with a new retractable roof over the court (thus avoiding rain delays). The roof, which is translucent and allows natural light to reach the grass, takes at least 10 minutes to close. The men’s champion in 2011 was Novak Djokovic, took the title from Rafael Nadal, 6-4, 6-1, 1-6, 6-3. There was a new Ladies champion, Petra Kvitova from the Czech Republic, who beat a resurgent Maria Sharapova 6-3, 6-4. Andy Murray, who played well throughout the tournament, once again succumbed to Nadal in the semi-finals, 5-7, 6-2, 6-2, 6-4. British tennis enthusiasts will have to wait another year before he can once again make an attempt on that elusive, much-cherished, title. Most tickets for the show courts are sold in advance via a public ballot, entry for which closes in December. However, Wimbledon is the only major Grand Slam where fans can queue for tickets for the same day’s matches on Centre Court, No. 1 Court and No. 2 Court (overnight queuing is generally required to guarantee a ticket). There are six designated car parks, plus a park and ride shuttle-bus service from the A3.

In addition to the motor racing there is a display of pre-1966 aircraft, as well as stunning aerial displays, which capture the spirit of historic aviation (Goodwood was a WWII aerodrome).
Goodwood Revival Chichester,West Sussex 14 –16 September 2012 Goodwood House in Sussex is the seat of the Dukes of Richmond, Lennox and Gordon. Horse-racing at Goodwood dates to 1801, and it is the setting for one of the racing highlights of the summer season, Glorious Goodwood, which traditionally signalled the end of the summer season, when the London house was shut for the summer and the family migrated to the country. Goodwood’s motoring history began in 1936, when hill-climbing and timed uphill sprints (often in vintage cars) were introduced by the 9th Duke. In 1948 Goodwood opened its gates to the public to host the first post-war motor racing event in a permanent venue. In 1993 his grandson, the current Earl of March, brought motor sports back to Goodwood in the form of a three-day hill climb and general celebration of car culture, the Goodwood Festival of Speed, held in late June. In September, Goodwood hosts the Revival, a legendary race for historic cars which is a celebration of the golden era of motor sports. The Goodwood revival looks back to a period – 1948–1966 – when the Goodwood motor circuit was, alongside Silverstone, Britain’s leading race venue. The competing cars and motorcycles are all from this period and are driven by famous faces from the world of motor-racing: Sir Stirling Moss, Damon Hill, David Coulthard, Giacomo Agostini and Derek Bell have all participated. Henley Royal Regatta Henley-on-Thames, Oxfordshire 27 June –1 July 2012 Presided over – and often, but not invariably, attended by – the Royal Family, Henley’s famous annual regatta attracts international crews and even Olympic champions, making it a must-see event in the sporting calendar. The south Oxfordshire town of Henley-onThames is the setting for one of the world’s most prestigious rowing events, held over five days (Wednesday to Sunday) in late June/early July.
Dress Codes for the Stewards’ Enclosure •
Ladies wishing to enter the Stewards’ Enclosure must ensure their hemline is below the knee.

Bare shoulders are fine and hat wearing is not obligatory, but is encouraged.

Remember that high-heeled shoes will sink into the grassy banks.

Men should wear lounge suits, or rowing blazers or jackets and flannels, and a tie or cravat. Blazers belonging to members of exclusive rowing clubs, such as The Leander Club, are often startlingly garish.
The Regatta dates back to 1839, when the mayor and townspeople put it on as part of a fair, with Prince Albert as its patron. The Henley regatta now consists of head-to-head knockout races over a one-mile 550-yard (2.11-km) course (112 m longer than the international standard). The most longstanding, and celebrated, race is the Grand Challenge Cup for Men’s Eights, awarded since the regatta’s inception and open to all established amateur male crews.
Enclosure, at the end of the course and the location for the awards ceremony on the final day, is limited in access to the Stewards, and members of the enclosure and their guests. The waiting list for membership is years-long: applicants must be proposed and seconded by existing members, and priority is given to those who have competed in the Regatta. The enclosure has covered grandstands, a bandstand, a marquee with a restaurant, bars and rolling lawns, and strictly enforces a dress code. The Regatta Enclosure just downstream is open to all by admission fee, as is Remenham Farm on both sides of the river at the first half of the course.

The event is organised by a self-elected body of stewards, numbering about 50, many of whom were competitive racers and scullers themselves. The event does not rely on commercial sponsorship, raising a considerable amount of money from subscriptions paid by members of the Stewards Enclosure and their guests. Royal Ascot Ascot, Berkshire 19 - 23 June 2012 Ascot stages 26 days of racing throughout the year, but the five-day Royal Meeting, held annually in June, is the most famous – a key date in the social calendar which combines venerable tradition with fashionable panache. Hordes of well-dressed racegoers descend on the Berkshire town, and many enjoy the traditional Car Park Picnic. Car Parking labels are available in advance from the racecourse and places, especially in the prestigious Number One car park, are jealously guarded. The first race meeting ever held at Ascot took place on 11 August 1711 and was instigated by Queen Anne, but it was with the accession of George II that the race became the second most popular in England. Originally established to ensure privacy for members of the royal family, the Royal Enclosure dates back to the 1790s, when a separate Royal Stand was erected. The exclusive Royal Box, commissioned by George IV in 1822, was only accessible to guests brandishing a royal invitation. To gain entry to the Royal Enclosure, racegoers must obtain a sponsorship form and have it signed by someone who has attended the Royal Enclosure for four years. Each day during the Royal Meeting the Queen and her party drive in open-topped carriages across Windsor Park, entering the racecourse by the Golden Gates.
On Friday it is the turn of the Coronation Stakes, and the Meeting ends on Saturday with the Golden Jubilee Stakes.
Tuesday features The Queen Anne Stakes, The St James’s Palace Stakes and The King’s Stand Stakes. On Wednesday you can see The Prince of Wales’s Stakes. The prestigious Gold Cup event is held on Ladies’ Day (Thursday), when women entering the Royal Enclosure must wear a hat that covers the ‘crown of their head’. Ladies’ Day at Royal Ascot can trace its roots back to 1823, when an anonymous poet described the Thursday of the Royal meeting as ‘Ladies’
Royal Ascot’s much loved tradition of ‘singing round the bandstand’ dates to the 1970s under the stewardship of Lady Beaumont, wife of the then Clerk of the Course. The afterracing medley of British favourites and flag waving was an immediate hit, and thousands of racegoers stayed on and joined in. Now, traditional singing is listed as part of the day’s formal proceedings and songbooks and flags are handed round.

Dresses and skirts should be of modest length (falling just above the knee or longer).
Black or grey morning dress, which must include a waistcoat and tie (no cravats).
Dresses and tops should have straps of one inch or greater.
Black or grey top hat and black shoes.
Jackets and pashminas may be worn but dresses and tops underneath should still comply with the Royal Enclosure dress code. Trouser suits should be of full length and of matching material and colour. Hats should be worn; a headpiece which has a base of 4 inches (10cm) or more in diameter is acceptable as an alternative to a hat.
Please note: A gentleman may remove his top hat within a restaurant, a private box, a private club or that facility’s terrace, balcony or garden. Hats may also be removed within any enclosed external seating area within the Royal Enclosure Garden. The customisation of top hats (with, for example, coloured ribbons or bands) is not permitted in the Royal Enclosure.

Spectator Guide If you’re going to Cowes week, be prepared for a long day. Racing starts at approx 10.30am but the party continues ashore late in the evening. Buy a Racing Guide – it’s an invaluable tool when it comes to understanding the complex racing timetable. Take advantage of one of the spectator boat options – you can get out on the water and feel part of the action. Remember to bring wet weather gear, a pair of binoculars and a small portable radio. Cowes Radio (87.7FM) will keep you in touch with the action. Use public transport to get to Cowes – the roads are incredibly busy and parking is a nightmare. If you’re planning to stay overnight, book well in advance.
Traditionally held between Glorious Goodwood and the Glorious Twelfth, the annual Isle of Wight regatta has long been a magnet for royalty, the nobility and the rich and famous. One of the UK’s longest-running sporting events, Cowes Week has been a highlight of the social calendar since 1826, when George IV showed his approval of the seven-yacht race, held under the flag of the Royal Yacht Club, by presenting the King’s Cup. In 1897 the Queen’s Cup was first presented to the Royal Southampton Yacht Club by Queen Victoria. It was won by Latana and is still awarded today to the IRC Class Zero winner of the first Saturday’s racing. In the 1800s yachting was the preserve of rich gentlemen who hired a crew and skipper and raced big cutters. It was only after the Second World War that yacht racing began to lose elitism and became more widely accessible. Smaller, more affordable yachts of around 40 feet that could be skippered alone became popular and sailing really took off. Now extended to eight days in early August, Cowes stages up to 40 daily races for more than 1,000 boats in nearly 40 handicap, one-design and multihull classes, and in the process offers a unique mix of classic and state-of-the-art designs.
The sheltered waters and unusual tidal conditions of the Solent can lead to challenging sailing conditions. The Solent is exceptionally busy during Cowes week, with 30-odd different courses in one of the busiest commercial stretches of water in the world. The 8,500 or so competitors range from weekend sailors to world-class and Olympic yachtsmen and -women, while a crowd of more than 100,000 enjoy a festival atmosphere climaxing in the fabulous Cowes Week fireworks display on the final Friday. Parties and live street entertainment are focused on Cowes Parade, which has a central information point, stands offering free introductory sailing sessions, a landing from which spectator boat services depart, great views of the starting lines, and a bar and barbecue overlooking the Solent. Alternatively, Cowes Yacht Haven, open to professionals, amateurs and spectators by ticket, has a waterside port and champagne bar, a beer tent, food and trade stalls, and a live entertainment stage. Events here include a ball and the prize-giving ceremony on the last Saturday.

The RHS Chelsea Flower Show Royal Hospital, London 22 – 26 May 2012 This world-famous flower show is the first event of the traditional Season, and is a particular favourite of the Royal Family. While summer clothes are the norm, temperamental weather in mid-May often brings rain and a spring chill. The origins of the show date back to the mid18th century when John Wedgwood, eldest son of the potter Josiah, approached William Forsyth, chief gardener to King William III, and proposed forming a horticultural society. The first shows organised by the Royal Horticultural Society (RHS) took place at Chiswick House, but the modern show dates back to the mid19th century when Prince Albert encouraged a move to South Kensington. In the late 19th century the show moved to Temple Garden on the Embankment and finally, in 1913, to its present location, the grounds of the Royal Hospital, Chelsea.
The Show takes place over five days each May, displaying a huge array of plants, plus a multitude of gardening accessories and tools. New plant launches, more than 20 show gardens predicting coming trends, and flower-arranging demonstrations are among the offerings, and awards are given for categories such as Best Chic Garden and Best City Garden. In 2011 the Best Show Garden went for the third year running to the Daily Telegraph garden, designed by Cleve West. The Show centres on the Great Marquee, which contains stands from major nurseries and plant producers. The Avenue runs at the eastern side of the Great Marquee, and is flanked on either side by complete gardens, created by innovative and established designers who compete for coveted RHS medals. These gardens are a source of inspiration to amateur and professional alike. The peripheral walkways are packed with gardening equipment, gadgets, tools, plant containers, statuary, garden furniture, craft stalls and gifts. There’s a wide range of food and drink available at the show: during the 2011 show the organisers served 12,120 sandwiches and baguettes, 24,191 cakes and pastries and 1,128 seafood platters as well as 5,567 glasses of champagne and 35,900 cups of tea. The popularity of this show means that advance booking is essential. Chelsea Flower Show tickets can be purchased online or by telephone. There is a private Royal preview, a Charity Gala evening (the night before the show opens to the public) and RHS members enjoy special rates and privileged entry.

Glyndebourne Opera Festival Near Lewes, East Sussex 20 May – 26 August 2012
This world-class East Sussex opera festival presents the perfect opportunity to indulge in champagne picnics on summer lawns. Dating back more than 70 years, Glyndebourne Opera attracts thousands of opera-lovers from London and further afield, especially for its Mozart, Handel and Janácek, staged in the acoustically brilliant multi-million pound auditorium that opened in the 1990s. Landowner John Christie, who inherited the historic country house (probably 16th-century), and his opera-singer wife Audrey Mildmay originally set up the festival as a showcase for small-scale productions of Mozart operas. The London Philharmonic is the main resident orchestra for the duration of the Festival. Operas are staggered throughout the summer months from May to August. They commence in the afternoon and are punctuated by a lengthy 90-minute interval during which dinner can be taken on the extensive lawns, in the form of a picnic, or in one of the restaurants within the grounds. Generally the dress code is black tie. Guests arrive in good time before the start of the performance to bag a picnic spot in the grounds and enjoy a pre-performance glass of champagne. Picnics, which can be preordered along with porter service and furniture if required, feature the likes of champagne, lobster salad and Glyndebourne summer pudding. Take picnic chairs to sit on as it’s especially difficult to sit on a rug elegantly when wearing an evening dress. Also, take a warm shawl to fend off the chill of the British summer evening.
