NEW JAPANESE INSPIRED RESTAURANT OPENS IN BOURNEMOUTH A brand new restaurant serving Japanese inspired cuisine has officially opened in Bournemouth. The Katsu Bar & Restaurant, based on Lansdowne Road, celebrated its grand opening to great reviews from their invited guests, a mix of local business owners and key individuals from across the town. The eighty seater restaurant, arranged over two floors, has been launched by businessman Chris Bialan, Chairman of Poole-based The Affinity Care Group and his daughter Jess, a second year medical student at Keele University, together with local restaurateur Tak Ho, who also owns the town’s highly successful Noodle Bar. “The emphasis is very much on providing diners with a culinary feast of dishes that they may not have ordinarily tasted. As well as our signature Katsu Curry dish, we have a range of small plates and mains that include burgers, fried chicken and the most popular Katsu dish in Japan, Tonkatsu – a thick cut pork loin in breadcrumbs served with a spicy Tonkatsu dressing.” remarked owner Tak.

Representatives from the local disability charity will be on hand to answer questions and give an insight into working with adults living with disabilities, plus those in attendance can speak to people the charity supports. The Dorset based charity relies on the local community to work with them and support extraordinary people that require assistance 24/7 in their own home and out in the community. DIVERSE ABILITIES FLIES THE FLAG AT AFC BOURNEMOUTH AFC Bournemouth’s Premier League clash with south coast rivals Southampton was a special occasion for the children supported by Dorset disability charity Diverse Abilities.

As one of AFC Bournemouth’s four chosen charities to be supported throughout the 2016-17 season, Diverse Abilities and a group of children the charity supports were invited to attend the match at the Vitality Stadium on Sunday 18 December, not only as spectators but also to act as official flag bearers for the teams as they ran out onto the pitch.

The children and parents were invited to stay and watch the game, which Southampton won 3-1. However, even the result couldn’t put a downer on such a great day for Diverse Abilities.

The flag bearers were kitted out with Diverse Abilities shirts and AFC Bournemouth flags and welcomed the

Diverse Abilities corporate and community manager Fiona Hansford also attended the match and said: “Through providing this opportunity, AFC Bournemouth have given so much more than they know to the children and their parents. It has meant so much,

an amazing Christmas gift and we can’t thank the football club enough.” AFC Bournemouth have also supported the Diverse Abilities through a specially run golf day and by donating signed merchandise to the Diverse Abilities Gala Ball. A-One Advice Clinic What is the outlook for my cash savings? These are challenging times for investors and savers alike. ASK THE EXPERT... Monty isn’t just a dapper tweed-wearing handsome Fox; he is also a wealth of knowledge when it comes to the world of property. He is on hand to dispense hints and tips on house sales and property rentals to would-be smart Foxes and Vixens in his fortnightly House Column. This issue, Ron asks, “What sort of contract should I go for when selling my property?” Dear Ron, The two most common types of contract are ‘sole agency’ or ‘multi agency’ contracts. A sole agency contract dictates that you are tied into that agent for a designated period of time and they are the only ones allowed to sell your property. Look out for any wording stipulating ‘sole selling rights’ as this would mean you would need to pay them commission even if you find your own buyer! The positive of sole agency contracts is that you may be able to negotiate a lower commission based on the fact. You may also be able to build a better rapport with the agency as they may be more motivated knowing they are a sole agent on the property. However, on the flip side, you are tied into them and if they turn out to be an inferior agent or if you do not get on with them you will be unable to enlist any other agent until the time elapses or you terminate the contract (which may incur a penalty). The thing to look for here is the length of time an agency will want to tie you in for as this can vary dramatically – some over 20 weeks or even until the property is finally sold. Multi agent contracts simply mean you can market your property with as many agents as you wish and you will only pay commission to the agent who actually sells your property. The benefit of this is not being tied to one agent who may not be right for you and your property and gives you flexibility. You need to be aware that if there are multiple agents involved they may be less motivated to promote your property – however, this should not really be the case with good agencies who will work hard on your behalf regardless. The other thing to watch for is whether marketing your property over numerous agents gives the appearance of desperation – have a think about whether you want multiple boards outside your property! SELF EMPLOYED MORTGAGES If you are self-employed and looking for a mortgage, you can still be eligible for normal mortgage products but you have to prove your income in a different manner to someone who is employed. HOUSE asked Jordan Tuttle from Homeline Mortgages to explain more. What is a self-employed mortgage? There is no such thing as a self-employed mortgage, it is a normal mortgage, the same products are available, you just have to prove your income in a different manner to someone who is employed. The key difference for self-employed applicants is you need to prove your income to a mortgage lender via your accounts or tax returns, rather than simply providing payslips as employed applicants do.

I am a sole trader; how do I prove my income? As the name suggests, sole traders are one man bands, the mortgage lender will be looking to assess your income by using your selfassessments that have been submitted to HMRC. They will ask you to request a form called an SA302, this shows the total income received and total tax due for each financial year. So, in this instance your income will be assessed on your net profit. I am in a partnership; how do I prove my income? If you go into business with someone else, you may well set up your company as a partnership. When assessing your income mortgage lenders will take into consideration your share of the company profit.

COMMERCIAL

I am a director of a limited company; how do I prove my income? Setting up a limited company keeps your business separate from your personal affairs. Most directors will pay themselves a basic salary, usually up to your personal tax allowance, plus they will draw dividends throughout the year. Most lenders will want to see at least 2 years accounts or tax returns, the more accounts you can show the better. How do they assess my income & how much I can borrow? Each lender has different income criteria but generally most lenders will accept salary & dividends shown on your most recent finalised accounts. Sometimes the last two years are averaged, however there are lenders who will accept the most recent year alone. Once your income has been established the maximum loan calculations are the same as for employed applicants. They will perform what is known as an affordability calculation, which assess your income against your committed outgoings. Speaking to an independent mortgage broker is invaluable when self-employed as their knowledge of the market will ensure that you are matched with a lender and product that is most suitable for your circumstances.

My view has always been that both tenant and landlord should contribute to an agents fees for bringing the transaction together, after all they are equal parties to it. The fees tenants pay are therefore an integral part of an agents income so when they are banned agents will no doubt look to landlords to plug the gap, and with even less doubt landlords will raise their rents accordingly, passing the cost full circle back to the tenants. In my opinion, for what its worth, the government would achieve far more by bringing in stringent regulation for lettings agents, but then whenever did the government listen to the industry – remember HIPS and how that turned out?

DREAM KITCHENS & BATHROOMS How to design the perfect open plan living space? The term “open plan” brings to mind images of grand, large spaces – but that’s far from the reality for most of us. Instead, open-plan areas often combine multiple purposes in a space that’s only really large enough for one functions. On the upside, open-plan living is great for families in particular, as you can all do different things while hanging out together. It also creates an illusion of space that many people prefer over navigating a maze of small, separate rooms. When done well, your open-plan area can be updated from the confusing mess of multi-tasking that it used to be, to defined spaces of clarity. This might sound like a dream, but there are some easy tricks you can use to make this a reality. So, how can you make open plan living work for you, in even the tightest of areas?

Define each purpose If you have an open-plan kitchen, dining room, living room and study, for example, it’s helpful to give each of those purposes its own space. Clearly defining the different zones is the key to avoiding cluttered open spaces. How to place your furniture and accessories can take some thought. Use your furniture to identify which area relates to which task. Rugs are great for this too, as their linear lines clearly outline the specific spaces.

Be clever with furniture When using furniture to define your separate zones, a few clever tricks can go a long way.

The brilliant thing is, when the need comes to change the use of that space, a quick lick of paint and reshuffle of furniture will reflect its new purpose.

ARCTIC MAZDA MX-5 Mazda is hoping for things to turn a little Arctic this winter with the launch of the latest special edition version of its MX-5 convertible. On sale from February and priced at £20,995, the new MX-5 Arctic comes with Blue Reflex Metallic paint and contrasting bright silver design cues. Only 400 will be available. Based on the 1.5-litre 130 hp SE-L Nav, the MX-5 Arctic’s silver details contrast against the icy blue paint. With 16inch Silver alloy wheels, a silver windscreen surround, silver wing mirrors and silver headrest hoops the Arctic has the distinctive look. Inside, the stand-out feel continues with silver cup holder rings and chrome scuff plates, while the upgraded equipment tally includes heated leather seats, automatic headlights, rain-sensing wipers and rear parking sensors.

ROAD TEST: INFINITI Q30 PREMIUM TECH Infiniti is a premium car brand which is still under the radar for many, but that situation is changing rapidly as sales begin to gain momentum, writes NICK FLETCHER. Infiniti was introduced in 2008 as a stand-alone luxury marque from the Nissan stable and it offers cars which are charismatically designed and beautifully built, and are a stylish alternative to the long-established premium German brands. The Q30 is a good entry to the Infiniti stable, a five seater sporty-looking hatchback with models starting at £20,550. There are petrol and diesel options and five trim levels. It competes in a sector which includes BMW 1 Series, Mercedes A Class and the Audi A3 and many would argue the Q30 has a much more distinctive appearance. Its bold stylised grille, sleek headlights and large badge make a strong statement. Each time my Q30 Premium Tech test model – costing £31,180 - was parked, people came over to take a closer look, and most admirers guessed the price at around £50,000. My test car had the 168 hp 2.2 diesel engine with a 6-speed auto gearbox. Top speed is 134 mph and the 0-60 mph time a

nippy 8.5 seconds. Even so, fuel economy is very good – 57.6 mpg combined. Ride quality is superb, arguably best in class, and the car feels smooth and effortless to drive, with the dual-clutch auto transmission seamless with the gear changes. The cabin has an immediate luxury feel, with quality materials and a nice understated premium look. Front seats are especially comfortable, designed to give a lot of back support for those long motorway trips. Rear seats will take three adults and bootspace is good at 440 litres, and can be increased by dropping the split-fold rear seats. Standard kit on the Premium Tech version includes dualzone climate control, leather upholstery, wood inserts, powered front seats, front and rear parking sensors, rear view camera, 7-inch touchscreen, radio/CD Bluetooth, adaptive brake assist, lane departure warning, 18 inch alloys wheels, auto lights and wipers, cruise control and a wealth of detail features such as aluminim kick-plates and black laquer side sills. The Q30 impresses as a lot of car for the money, with elegant styling and good driving dynamics and is a creditable rival to other premium-class marques.

VW GOLF ‘BEST USED CAR’

The Volkswagen Golf has won the Car Dealer magazine Used Car of the Year Award. Collecting the award Ian Plummer, Volkswagen UK’s Head of Sales Operations, said: “The Golf retains a timeless appeal and so it’s perhaps no surprise that it continues to pick up awards as a used car.It’s a car that continues to put smiles on the faces of our customers.” James Baggott of Car Dealer magazine, added: “Mid-sized cars are the bread and butter of so many used car dealerships up and down the UK. Perfect for couples and young families, there is a wealth of choice for buyers in this busy part of the market. The Golf is a massive success and the fact that it has been around since 1974 in one guise or another tells its own story.” The Golf has been fine-tuned over four decades and is available in huge variety of bodystyles, drivetrain options and equipment levels ensures the broadest possible appeal. It is also among a small group of mainstream models in its class to be offered in petrol, diesel, hybrid or full electric form in the UK.

MERCEDES NIGHT EDITION

ROAD TEST: LEXUS GS300H The Lexus brand has a strong following with both private buyers and business users, and the latest GS300h helps explain why, writes NICK FLETCHER. Beautifully styled and extremely refined to drive, the GS300h has a clue in its name – the ‘h’ is for hybrid. It uses petrol engines boosted by electric motors to deliver good fuel economy, low road tax and more attractive benefit-in-kind rates for the business user. There are two engines in the range, the 300h and 450h. The smaller engine is a 2.5-litre petrol, the other a 3.5-litre V6. Both are mated to electric motors. There are four trim levels: Executive Edition, Luxury, F Sport and Premier, all very well equipped. Rivals in the sector include BMW 5 Series and Audi A6, but the Lexus offers a formidable alternative, scoring highly for classy styling, green credentials, lower taxes and, it can be argued, more brand exclusivity. Prices start at £34,995 for the GS300h Executive Edition, which was my recent test model. Its 2.5 litre petrol engine is harnessed to an electric motor giving 223 hp, and has CVT auto gearbox. The 0-60 mph time is 9 seconds, top speed of 119 mph. And for such a large powerful car, the fuel figure of 64.2 mpg combined is impressive, as its the low emissions figure, just 104g/km.

Underway, this model is ultra-smooth, with seamless gearshifts and quiet cabin even at motorway speeds. In town, you can use all-electric power for short periods. The car is very comfortable, with exceptionally supportive seating and nicely balanced suspension. Recent revisions have given the GS a more potent visual character, with protruding grille and narrower headlights. The cabin immediately gets attention with its large 12.3 inch multi-media screen, deep-set to minimise reflections, and all the materials have a premium look. Standard kit even in the entry level Executive Edition includes dual-zone climate control, sat-nav, powered and heated front seats, 12-speaker audio system with DAB radio and DVD player, leather upholstery, auto lights and wipers, reversing camera and front and rear reversing sensors, Bluetooth, and smart entry and start. There is also a wealth of safety features including pedestrian detection, adapative cruise control, lane-keeping assist and traffic-sign recognition. The GS doesn’t have quite as much rear space as some, but it will be fine for the vast majority of users, and the 450-litre boot is large enough for normal needs. Apart from its elegant styling and driving refinement, the GS has the lowest running costs in its class which is a major plus-point, especially for the business community.

Mercedes-Benz is extending its range of exclusive models with the arrival of the S-Class Coupé Night Edition, which opens for orders on January 9th. Prices have not yet been announced. There will be a choice of two engines, a 3.0 litre offering 367 hp and a 4.7 litre with 455 hp, and the choice or rear wheel drive or four wheel drive. Top speeds are electronically limited to 155 mph and the 0-60mph time of the most powerful version is 4.6 seconds. The exterior equipment details of the Night Edition include its distinctive radiator grille with a single louvre in high-gloss black, together with 20-inch AMG multispoke light-alloy wheels. The exclusive wheels are painted black and feature high-sheen detailing. The exterior mirror housings and the inserts in the side sill panels are also finished in high-gloss black. Front and rear aprons with AMG bodystyling come as standard, with Night Edition badges on the front wings. Selenite grey magno paint comes as standard. The interior features engraved Night Edition wording on the insert of the nappa leather AMG sports steering wheel.

JEEP RENEGADE AWARD The Jeep Renegade has been named 4x4 Magazine’s ‘4x4 of the Year 2017’, retaining the crown for the second year in a row. In this latest recognition, the off-road driving publication’s panel of expert judges was unable to find a contender capable of taking away the Jeep Renegade’s ‘4x4 of the Year’ crown. Excellent on-road, the range-topping Trailhawk version also outshone rivals on 4x4 Magazine’s tough off-road evaluation course. “Since winning last year, we are now seeing many more Renegades on the roads here in the UK and in Europe,” says Nigel Fryatt, Editor, 4x4 Magazine. “Admittedly, not all of them are Trailhawk versions, and some are front-wheel drive, yet that merely underlines the importance of this small SUV.” In the same awards, the Renegade won the ‘Mid-range SUV’ category, the legendary Jeep Wrangler took the ‘Hardcore’ class for the fifth consecutive year, and the Jeep Cherokee won the ‘Top-Range SUV’ group. The Diamond Cut Wheels manufactured with a diamond cut finish are becoming more and more common, with most of the main manufacturers either offering them as upgrades or as a standard option. A diamond cut wheel can be identified by the polished finish on the front face of the spoke and another colour on the side face of the spoke. This second colour can be a silver, which can then make the polished face hard to spot. Refurbishment of a diamond cut wheel is carried out in the normal way, up to the point that the colour has been applied to the wheel. Then it is loaded into a specialist machine, that lathes the front faces of the spokes using diamond tipped tools – hence the term ‘diamond cutting’. ‘I’LL LEAVE FOOD CAMPAIGNING TO OTHERS’ Rick Stein’s latest foodie mission, Long Weekends, is all about enjoying life’s simpler pleasures. “It’s what we do really,” quips the 69-year-old seafood maestro, who over the years has cooked for a host of famous faces, including the Queen. “I’ll leave campaigning cookery to other people - people like Jamie Oliver and Hugh Fearnley-Whittingstall who do a fabulous job. For me, it’s about saying, ‘Hey! We’re alive’, and what’s the best part of being alive? Eating and drinking... apart from the obvious,” he adds with a chuckle, “so let’s enjoy it while we can!” For those who haven’t caught Stein’s BBC Two food-travelogue series, picture a colourful culinary adventure that follows the chef as he embarks on a string of European weekends, in search of good food, wine and traditional recipes. Meeting at the office of his London publishers, Stein - who splashed onto the foodie scene in the Nineties, with his early seafood cookbooks and TV

series based on his life as owner of The Seafood Restaurant in the fishing port of Padstow, Cornwall - cuts a relaxed figure, excitedly reeling off vivid anecdotes of Palermo’s bustling markets and latenight dining in Thessaloniki, Greece. “It’s great fun. Crikey - to be paid to go off to these cities,” he notes, rolling up his shirt sleeves as he speaks. “For most people that work during the week, having a weekend off is wonderful anyway. But if you add a bit of travel, it makes it so special.” As for plans to open more eateries, he’s not sold on the idea of a chain, but likes to focus on offering opportunities to people with “considerable skill”, as he takes a step back from the day-to-day running of the business. “I’m 69 - I couldn’t do what my chefs do now, I just wouldn’t have the energy,” says the father-of-three, who turns 70 in January. “I’m lucky. Because I have such great managers, I can do less and less, but still have an overall feeling for how the business is going,” he adds, praising his sons

Ingredients For the meatballs: 500g minced beef 2 cloves garlic, finely chopped or grated 1 egg, beaten 1/2tsp ground cumin 1/2tsp dried oregano 2 slices stale white bread (about 100g), soaked in red wine and squeezed dry 1/2tsp salt 12 turns black pepper mill 3tbsp olive oil For the tomato sauce: 1 onion, finely chopped 1 clove garlic, finely chopped 3tbsp olive oil 5cm cinnamon stick 1tsp ground cumin 1tsp sugar 150ml red wine 1tbsp tomato paste 500ml passata 1/2tsp salt 12 turns black pepper mill

Method Mix together all the ingredients for the meatballs except the olive oil and, with wet hands, mould into 20-24 rugby-ball shapes. Heat the oil in a frying pan over high heat and fry the meatballs until golden on all sides, or grill on a griddle pan if you like grill lines on the patties. Make the tomato sauce by sweating the onion and garlic in the olive oil with the cinnamon stick, cumin and sugar until soft, about 10 minutes over medium heat. Add the red wine and bring to the boil, then reduce the heat to medium again. Add the tomato paste and passata, season with the salt and pepper and cook until slightly thickened, about 20 minutes.

Add the fried meatballs and simmer for 20-30 minutes with a lid on the pan until cooked through, adding a little water if the sauce is too thick.

3 globe artichokes Juice 1 lemon or 1tbsp white wine vinegar 1-1.2L vegetable stock (see below) 40g butter 3tbsp olive oil 1 onion, chopped 1 clove garlic, chopped or grated 300g Arborio or carnaroli rice 125ml dry white wine 200g fresh broad beans, double podded if not young (600-700g weight in pods) 200g fresh peas (about 600g weight in pods) Zest and juice 1/2 small lemon 1/2-1tsp salt 8 turns black pepper mill 70g pecorino, freshly grated

To make the stock: Peel and slice the vegetables; you don’t need to peel the garlic.

Put everything in a large pan with the water and bring to the boil. Simmer for an hour, then strain through a fine or muslin-lined sieve.

After about 12 minutes, in a separate pan, cook the artichoke wedges in boiling water for five to seven minutes until tender.

If not using immediately, leave to cool, then refrigerate or freeze.

Remove from the water and set aside.

For the vegetable stock (Makes about 2L): 1 large onion 2 large carrots 1 head celery 1 bulb fennel 1 bulb garlic Handful thyme sprigs 3 bay leaves 1tsp salt 15g dried porcini mushrooms 3L water

When ready, prepare the globe artichokes. Remove the stem to within 1cm of the base. Peel off the outer leaves until you reach the pale-coloured centre. Remove the hairy choke with a teaspoon. Pare off any remaining outer leaves with a sharp knife. Cut into six wedges and plunge into a bowl of cold water, to which you’ve added the lemon juice or vinegar to prevent it discolouring.

Add the broad beans and peas and boil for about three minutes, then drain. Add the cooked vegetables to the risotto and heat through. Remove from the heat and stir through the lemon zest and juice, the remaining butter, salt to taste, pepper and half the pecorino cheese. Serve immediately with the rest of the pecorino cheese.

Heat the stock in a saucepan. Melt the half the butter with the olive oil in a wide pan over mediumlow heat and sweat the onion and garlic for five to 10 minutes until soft. Add the rice and stir well to coat the grains. Add the white wine and stir until it has been absorbed by the rice, then start adding the vegetable stock a 129

2 dessert apples, peeled, cored and cut into fine wedges 1tbsp lemon juice 125g unsalted butter, softened 140g golden caster sugar 3 eggs, beaten 225g plain flour 2tsp baking powder 1/2tsp salt 75ml full-fat milk

Heat the oven to 170C/gas 3. Butter and line a 23cm cake tin.

For the topping: 1 1/2tbsp demerara sugar 1/2tsp ground cinnamon Whipped cream, to serve 130

Coat the apples in the lemon juice and set aside. In a large bowl, beat together the butter and sugar until pale and fluffy using an electric beater. Add eggs and beat until smooth. Sift in the flour, baking powder and salt. Mix until well incorporated. Slowly add the milk, mixing well after each addition until you have a smooth batter. Transfer the batter to the cake tin. Arrange the apple wedges in a spiral over the batter. Mix the sugar and cinnamon together and sprinkle on top.

Bake in the middle of the oven for 40-45 minutes, until a skewer inserted in the centre of the cake comes out clean and the top is golden. Remove the cake from the oven and cool for 15 minutes in the tin. Run a knife around the edges and turn out on to a wire rack. Serve warm or at room temperature with whipped cream.

We wanted to know what all the fuss was about...

ROXY’S DINER American Comfort Food Located on the outskirts of the Dolphin Shopping center (Poole) is the swanky Yankee hangout ‘Roxy’s’ Diner’. Built on the foundations of classic American food, this compact diner is home to towering burgers, dogs, shakes and pretty much everything cheese covered. We arrived at the diner one afternoon to investigate their culinary delights for ourselves and here’s what we discovered… We paused at the chrome-finished bar, ready to be shown to our seats. As we waited we looked around at the numerous amounts of American memorabilia; 50’s posters, old school cereal cartons, checkerboard flooring and voluptuous red leather booths

occupied either side of the room, with an isle between. Soon after our perusal we were greeted by an exceptionally happy chap – then again if I worked surrounded by all this food, I’d probably be pretty happy too. “Your table awaits!” he said and off we went. Sitting comfortably in our cozy booth, we picked up our menus and began to gander at the options. On offer was an array of sinful dishes. Probably not for those on a January health kick, then again why have a health kick if not to have the occasional treat – right? Among our choices was the ‘Smokey Joe’ burger, a classic ‘Grilled Cheese’, a ‘Philly Steak Sub’ and of course copious amounts of American fries.

We knew a feast of such magnitude could only be washed down by one thing; A milkshake and that’s precisely what we ordered. Odd isn’t it, that a meal of gargantuan proportions can actually enable you to eat more? But this was no time for ladylike constitutions, one was to get stuck in and get stuck in good. The shake was creamy and sweet; I’d opted for the classic ‘vanilla shake’ – though naturally I sampled my dining conspirators shakes too, which were equally as delish. Oh the gluttony.

Soon it was time for the main event. As we were presented with our food, we didn’t hesitate getting stuck in. I sunk my teeth into the Grilled Cheese. The gooey goodness poured from either side of the thick toast – oozing delightfulness. There’s something very soothing about cheese. It’s the ultimate indulgence; you know it’s naughty, but the salty sweet savors render you powerless to its allure. You have 3 options available: cheddar, American or pepper jack. In this instance I ordered the cheddar and a mature one at that. If I could turn back time would I have opted for the American cheese? Perhaps, but there’s no sense crying over cured, pressed and aged milk. My co-reviewers informed me that the burgers were also rather tasty, a trusted appraisal

seeing as they disappeared as quickly as they arrived. The portions were gigantic! We each had our own Everest sized pile of fries, heaped further with a hearty sprinkle of cheese and bacon bits. We really ought to take an umpire on our next excursion. As our climb of cheesy-chip mountain grew weary, we all bobbed in agreement; we knew we’d gone too far, though not one of us left filled with a single ounce of regret. Leaving pants (that’s American for trousers – don’t panic) unbuttoned (ok now panic) we rolled back to our station wagons and began our pilgrimage back to the office. MARVEL OF THE MALDIVES I don’t know how it happened, but having popped off to powder my nose, I’m now dancing in delight, with a stranger in paradise. I’m in the Maldives in the Indian Ocean, a country which offers the ultimate in laidback luxury. It has pristine sands, turquoise lagoons and tropical fish that sparkle and shimmer in the sea. So it may seem odd that I’m about to rave over my resort’s restrooms, which is where I’m presently dancing. But they’re such a joyous discovery with their sea-dappled walls, wacky music, whales’ tails, photo booth, and life-sized pictures of Kate Moss-style mermaids - they represent to me, the beginning of a love affair. Not with the guy that I bumped into and jived and joked with, but with LUX South Ari Atoll, a resort which - although this sounds well nigh impossible - offers more than just the Maldives. But I’ll come back to that, later. The Maldives is a chain of 26 atolls, 700km southwest of Sri Lanka. The southern isles include Hulhule, home

to the international airport in the capital, Male, and Dhidhoofinolhu, where you’ll find LUX South Ari Atoll. As we approach, by seaplane, the view is stunning: palm-covered islands, each with a cyan-blue halo, float like lily pads on a sapphire sea. Our pilot, wearing flip flops, brings us down. We glide to a halt across the glassy water. At the jetty, staff wave and shout, ‘Welcome’. Within minutes, I feel like a glamorous castaway. Our villa, with its palm thatch and courtyard pool, opens onto a powdery, milk-white beach; two loungers, framed by coconut trees, face the ocean. My husband and I go for a dip, enjoy a rose-pink sunset, and watch the night sky flood with stars. The next morning we’re sitting, in dazzling sunshine, on the roof of a dhoni, a traditional Maldivian fishing boat, scanning the sea for shadows; I seem to spot them everywhere. But Tina, LUX South Ari Atoll’s marine biologist, knows what to look for - a shape she describes as belonging to “the biggest smile in the ocean”.

We’re searching for (harmless) whale sharks, the largest fish in the world; the biggest recorded is 12.65m long and 21.5tons. White Sands Reef, just minutes from our resort, is one of best places to find them. Incredibly, we’re in luck...

“He’s coming towards us!” Tina shouts. “Quick! Get in!” We grab our fins and jump into the sea. Moments later, a flattened head emerges from the shadows; you can’t miss the colossal “smile”. The shark’s 4m long, a juvenile. I swim beside it for quite a few minutes, keeping my distance, but close enough to feel part of its world. The spotted giant cruises against the current, sweeping the water for food. Then it disappears, ghost-like, into the deep.

and frangipani flowers. Beachside restaurants, bars and pools are hidden in the trees. At one end is the lagoon, the crystal clear water lined with brightlycoloured bean bags. We sit at the bar, a smart take on a laidback surf-shack, and listen to reggae with a bottle of rose from the resort’s exclusive Scrucap selection. A glance at the menu tempts us to try something. We delight in a salmon and red snapper carpaccio and the freshest tuna tartare we’ve tasted. Everyone we chat to comments on the food; it is, without doubt, superb. At East Market, an Asian market-style buffet built over the water, we wander among sacks of rice and baskets of beans, to stalls of steaming dim sum and cook-to-order curries and stir fries. A joke with chef Pong leads to my husband cooking his own Thai green curry, ladling in coconut milk and flavouring it with fresh lemon grass. Pong, very generously, proclaims it’s “the best he’s ever tried”. On the sunset side of the island is Beach Rouge, with a beach club vibe, white furniture and red cushions. My twice-cooked octopus is so tasty, I choose it again during our stay, while the kulhimas (traditional fish curry) served on the terrace at the Senses restaurant, is as fresh as the breeze that wafts in from the sea.

Another day, while snorkelling, I spot a green turtle diving below. Its patterned shell glints in the sunlight, as if a huge emerald has been lost at sea. Where the reef drops away, I come across parrotfish, powder blue surgeonfish and a shoal of black and white pennant coralfish that sink and rise with the waves. I hold my breath and notice munching sounds; it’s a lilac and lime parrotfish, nibbling at dead coral as it cleans the reef. Occasionally, it excretes a cloud of sand. “Kids love it when I tell them they’re walking on parrotfish poop,” Tina says as we return to the shore. LUX South Ari Atoll is one of the largest resort islands in the Maldives, at almost 2km long. A sandy lane runs the length of it, through palms

But it’s the resort’s little touches that excite me most, adding fun, flair and an element of surprise to this sunny island hideaway. There’s the red, thatch-roofed phone box inviting you to phone home for free, wooden carts in little clearings offering fresh coconut and bottled water, Sanih’s ice-cream parlour with its home-made waffle cones, the open air cinema (where my husband, in jest, asks for popcorn, and the reply is “Certainly, sir”) and the cups of rich, island-roasted coffee, with whale sharks patterning the foam. And then there’s the giant banyan tree which, in a nod to local custom (and to encourage donations for community projects), is the resort’s Tree of Wishes.

Red ribbons flutter from its branches. On each of them, a guest has written their heart’s desire: ‘I wish I was a fairy princess’, ‘I wish to be a marine biologist’ and ‘We wish for lovely memories of the Maldives’ they declare. We spend our last two days in an extremely stylish overwater villa, with a nautical feel, a private pool and steps leading into the lagoon. It’s the perfect place for lingering; there again, so is the spa. We go for a couple’s massage but within seconds, my husband’s asleep. I leave him snoozing and slip into the pool. The sky turns peach, the sand glows gold and the hum of the departing seaplane reminds me we’ll be on it tomorrow. But for now, my wish is to wallow in paradise. They say the whale shark has the biggest smile in the Maldives - me, I’m not so sure. 140

KATSU BAR An Explosion Of Flavour

Located amidst the hustle and bustle of Landsdown Road is the quaint and seemingly modest ‘Katsu Bar’. Katsu has proved an incredibly popular dish in the UK, as Brits frequent Japanese restaurants up and down the country to get their hands on this Asian alternative to schnitzel. Katsu Bar is the second of Mr. Tak Ho’s restaurants here in Bournemouth, in partnership with head chef Steve Richardson. The duo has tons of experience between them operating the kitchens of several successful Japanese restaurants and it’s certainly noticeable at this venue. Fun fact; curry was actually introduced to the Japanese by the British, during the ‘Meiji Era’ (the first half of the Japanese empire) and is very much considered ‘Western cuisine’, as opposed to other more traditional dishes. Of course curry is subject to many different varieties but in this case we’re talking distinctively thick roux-style sauce, to which meat/veg is added. So it’s hardly a surprise that a dish ultimately invented by our ancestors has proved popular among Brits in this era. Recognising a fan favourite, Katsu Bar is aptly named to lure the locals into the curry haven, but despite its specific title this buzzing little restaurant offers so much more… We arrived one afternoon, ready to see what culinary treats were in store. Naturally one makes

assumptions of a place named after a particular dish; I suppose I assumed that everything would be centralised around Katsu and to a degree that was true, but as we sat down with our menus my attention was captured by other offerings. Blue-food-fans get your butts here! An entire section of their menu is dedicated to raw meat and fish (my foodie senses were tingling). Sure it takes skill to cook sensational food, but to make raw food taste incredible is truly next level. The dish in the spotlight was a ‘Tuna Pizza’ – I know, what a name! There are some dishes in one’s lifetime that stay with you; the best linger on your tongue months after. Not literally of course, but the memory of the flavour, along with a longing to return for more. Comprised of the most delectable slices of tuna sashimi, on a butter-rich tostada, lashings of punchy wasabi and avocado aioli, fiery Tabasco and Unagi sauce. BOOM a flavour explosion and such a diversity of textures and tastes; the crispy tostada against the silky tuna, aromatic aioli with the contrast of salty, smoky sauces – quite the taste bud frenzy. Ok, confession time; I don’t like Katsu (forgive me). Well that’s a tad strong, but faced with a menu of delicious Japanese food it tends to be at the bottom of my list of things I’d typically order. I know I say this a lot (for the fans who regularly read my articles – hi mum) but truly this review was in the pursuit of foodie journalism, having gone knowing of my

disfavour for the curry. Now for the moment you’ve been waiting for. The question on yours lips; was I converted? In a word –Yes! I had to try a classic of course, so I opted for the Katsu Chicken Curry, complete with my favourite; Japanese short grain rice (you know the kind that’s almost sticky rice, without the added sweetness). The sauce was thick and flavoursome, perfect for dipping the crispy chicken strips into. Our Asian feast was completed with a delectable sushi platter – as if we hadn’t indulged enough. We were presented with an array of spicy tuna, salmon and avocado and California rolls. What a delish third course; the fish was silky, almost butter-like – you know the sort that kind of melts in your mouth. The rice was superb too, sticky, but by no means gluggy, just as it should be. As we wiped our chops and rolled down our sleeves, we left beaming with the kind of satisfaction that can only come from truly tasty food. We thoroughly enjoyed our visit to the Katsu Bar and we will most definitely be back again soon. The spectacular features an amazing amalgamation of bizarre, brave & beautiful acts all woven into an Alice in Horrorland type story driven by a mainly original soundscape & performed with a forked tongue firmly in each cheek. Its appearances on various TV shows have turned what started as a cult show into a household name – taking the extreme to the mainstream. Its TV credits boast The X Factor, The Slammer, Daybreak, Fairground Attractions, Who Wants to be a Millionaire, Body Shockers, Fake Reaction, This Morning, Ant & Dec, The One Show and A Royal Command Performance.
