Ergonomics Sound balance is essential in the design of a restaurant. If there are too many hard surfaces amplifying the noise the level is unbearable. Alternatively, if it is too quiet the space’s atmosphere will become intimidating and sterile. Also, table spacing needs to reflect the design intent of the restaurant. Some restaurants we have done say it is important to have closely laid out tables as that closeness creates a great atmosphere. But customers know when a restaurant has shoehorned too many tables into a space, so balance is key.

Identity (design experience) All spaces have a personality and a type depending on the brand. The impression that the identity needs to leave is one that a customer would want to return to and also tell their friends about.

Lighting All restaurants have two lighting schemes – day and night, and variations in between. We have a lot more control over evening lighting and we like to ensure that the most sophisticated dimmer system that the budget allows is used. We always ensure that there is lots of lighting dotted around the restaurant so we can create various moods. Materials The current customer is very design aware. It is very important to get the choice of material combinations right, and we think that the success of some restaurants is due to the originality of merging in new ways or putting a twist on a material and where it is used. Manipulation of Space How we choose to break a space up is important to creating an overall holistic journey through the space. An example would be if we were given a long, narrow restaurant, it would be more difficult to seat customers at the rear of the restaurant. By creating your main

feature or focal point at the rear of the restaurant this problem can be eliminated.

Aubaine Selfridges, London

Aubaine is an established London restaurant brand that combines provincial, rustic France with a contemporary ambience. The Aubaine we worked on is in Selfridges. Due to the corridor nature of the restaurant, we were aware that space required variation of furniture layout, so we introduced various table types, both circular and square, against banquette seating and a large feature table. The combination of all of these sizes and choices of seating helped us distance the design from a canteen type layout. We also opened up the window at the back section of the restaurant to let in natural light for daytime, and during the evening we rely on our focal lighting to create atmosphere within the space. We also used decorated tiles to the front of the restaurant and around the bar area to draw attention to passing custom.
