Mogg – the new furniture brand blurring art & design Established in Italy last year and brand new to the UK, Mogg is the hot Italian furniture and accessories company founded by architect Nicola Galbiati. The company works with a range of award-winning designers, or as they put it, ‘partners with vision – crazy dreamers’ and a philosophy of ‘creating pieces that limit the boundaries between art and design’. The name Mogg is derived from MO (MObili = furniture) and OGG (OGGetti = objects) and was born from the belief that the world of commercial furniture is becoming saturated. Galbiati describes the Mogg collection as ‘democratic – able to satisfy the tastes, needs and budgets of all, where exclusivity does not describe the cost but the originality of a piece, and is unlike any other product on the market’.

In the busy world of hotels, bars and hospitality in general, moves are afoot towards embracing the ethics that surround all aspects of introducing sustainability into the blueprint of the business.

After all, increasing numbers of your existing and prospective customers are now more than ever, likely to be ethical buyers who are discerning in what they buy and the environment in which they spend their time. Hotel Stuff Ltd, are leading suppliers of new custom sustainable and recycled furniture to the hotel, bar, pub and hospitality industry and are in the maelstrom of growing interest from customers grasping the concept of sustainable furniture. Breathing new life into recycled products from hotels and bars when they refurbish, Hotel Stuff are able to offer a huge range of quality recycled furniture. The high quality finish and end result is achieved through careful refurbishment and attention to changing trends in the hospitality market reflected in a wide choice of fabrics, soft furnishings and furniture styles. This has come about not only because of the bite of the recession of recent years where upcycling proves a cost effective approach but it is environmentally

friendly too. What could be better than calling a halt to waste units filled with discarded, perfectly good furniture? Complementing huge stocks of recycled contract furniture, Hotel Stuff also commission new lines of custom built furniture made from soft Rubberwood derived from latex producing trees. Latex is of course used to produce all rubber-based products that can be found around the globe. Once the latex has been drained from the tree, after a usage of around 26 – 30 years, the tree is considered to be waste and is felled with a new tree planted in its place. This therefore presents an opportunity to create new durable furniture using wood that will not deplete vital resources and whose sole existence is not only to produce furniture. Hence the concept of sustainability is well used by re-using something that would have otherwise gone to waste. Rubber wood (or Hevea Brasiliensis) is a member of the maple family and is ideally suited to this purpose as it is a stable and close grain wood which means that it contains a low water content of between 8 – 10%. During the kiln drying process it is easily controlled and has very little shrinkage. This ensures minimal movement either during the manufacturing and assembly stage or as a finished product situated in

a centrally heated environment or directly adjacent to a radiator. It is not indigenous to the UK and given the demand for latex to create rubber products supplies are readily available to cope with demand. As part of this sustainable strategy, through its sister company, Pub Stuff Ltd, a range of environmentally friendly sanitisers have been produced without the incorporation of ION 5, a chemical agent that is not only harmful to the environment but also gradually destroys the veneer and finish of the tables they are used upon. They are often described as ‘hard surface’ cleaners but most owner/managers won’t realise the extent of their destructive impact on varnish. Prolonged reliance on this as a method of cleaning results in the varnish beginning to soften and break down easily identifiable by the ‘white bloom’ or flaking or sticky varnish on the furniture. So for hotels, bars and hospitality venues, for whom sustainability is both an important part of their business culture as well as being important to their customers, making it a fundamental aspect of the design of the business can be achieved easily and to great effect.

Nelson Catering Equipment was brought in to mastermind the design and installation of this exceptionally busy 30 metre long kitchen which is home to 7 full time chefs and up to 30 temporary kitchen staff. The kitchen also had to look exceptionally good as it is sited adjacent to 2 glass walls open to a restaurant.

Streamlining the entire operation was the starting point. Because around 50% of the food produced is canapés to cater for various events, it was important to allow the various chefs to be able to work on their own agendas. Therefore, a bank of self-contained work stations was created along one complete side of the kitchen.

The working environment, too, was carefully considered as it was essential that it should be comfortable and steam free both for kitchen staff to enjoy and for diners to admire. The two outside doors promote airflow, helped by a giant, custom built extraction canopy set over the island and measuring a massive 8.5 x 3 metres, reputed to be one of the largest in London.

Functional and bulk cooking is situated around the island and includes combination ovens, a brat pan, boiling jackets, twin wok cookers, fryers and 2 x 6 burner ranges with

“DOOR HINGES FOR SAVOY HOTEL” The re-opening of London’s prestigious Savoy Hotel, following an ambitious 3 year restoration, encompassed new interiors designed by world renowned Pierre Yves Rochon. The project required architectural ironmongery of the highest standards of performance and appearance and Architects Reardon Smith, in collaboration with London hardware contractors, selected SIMONSWERK UK door hinges. As we approach Jermyn St, we catch our first glimpse of the elegant Cavendish Hotel. The Façade of the imposing Fortnum & Mason, against the backdrop of the London hustle and bustle, give us the first inkling of a wonderfully placed hotel. As we step inside, friendly faces, warm glowing lights and very comforting, private seating areas meet our arrival.

Both the bedroom and sitting room are illuminated with Beautifully crafted lamps and swathed in sensuous materials – velvet, silk, leather and cashmere. Modern aristocracy with a wink and a nod to contemporary style 40 best sums up the vibe.

The Washroom is large and made for two, with a huge inviting shower, and a deep bath. The essentials are laid on along with some of the items that give the extra touch. The Bedroom gives you more room than you need, a 42”, double sided wardrobe and enough seating for a small family. The real star of the Cavendish is Petrichor Restaurant. This food deserves a page to itself, everything so perfectly married with the flavours on the plate, the beauty on the eye and the excellence of the service. A fantastic experience on its own, if you don’t have the time to stay. Puzzling that they hold a 4 star rating, given the 5 star populated area, with several of those at least a mark below, The Cavendish. Certainly a star of Mayfair on it’s own!

The hotel trade is subject to quite a significant amount of regulation. You should consider obtaining specialist help if necessary to make sure you comply with all the legal requirements. The following is an outline of some of the areas that are likely to be relevant to you. This list is not intended to be exhaustive.

Accommodation

Depending on the number of letting bedrooms you have, you may have to comply with special hotel legislation. If you can accommodate eight guests or more you will have to display a current tariff showing clearly what the price covers such as meals, service charges, VAT and so on. You must keep a guest register containing details of guests over the age of 16. You can read guidance notes for hotel businesses on the Trading Standards Institute website. Information is also available from your local authority Trading Standards Department.

Fire safety

All employers with business premises must comply with fire safety regulations. This is particularly important in premises like hotels that provide accommodation for both guests and staff. To comply with the regulations you will need to carry out a fire risk assessment and put in place fire precaution measures. These could include fire alarm systems and extinguishers as well as clearly signed escape routes. You’re responsible for the safety of your staff and your guests. The Department for Communities and Local Government has produced several helpful guides to the regulations, including a guide for businesses providing sleeping accommodation. You can download this and other fire safety guides from the Gov.uk website. Information about fire regulations in Northern Ireland is available on the Northern Ireland Fire and Rescue Service website.

Food safety

All businesses in the food sector must comply with strict food safety legislation. Before you open, you must register your business with the local authority environmental health department. Your local environmental health officer will be able to give you advice and guidance as to what you should install in your premises to make sure your operating areas are hygienic and how to comply with the requirements of the Food Safety Act and regulations made under it.

Food waste

If your business produces food waste - most catering businesses do - you must make sure that you dispose of it correctly. It mustn’t contaminate the environment and it can’t be fed to livestock. If you use a waste carrier to get rid of your waste you’ll need to make sure they’re properly authorised. You can find out more about your responsibilities on the Gov. uk website.

Spirits duty paid tax stamps

All bottles of spirits and made wine above 30% alcohol by volume must have a tax stamp on them to prove that UK duty has been paid on them. It is illegal to hold in stock or to sell any bottle that is not marked in this way.

Workplace smoking ban Alcohol licensing legislation

The sale of alcohol is regulated by: t the Licensing Act in England and Wales t the Licensing (Northern Ireland) Order t the Licensing (Scotland) Act in Scotland t If you intend to sell alcohol you’ll need to obtain the appropriate licence and comply with the terms of the legislation. Smoking is not permitted in workplaces such as restaurants and the public areas of hotels (although it is permitted in designated hotel bedrooms). You must display appropriate ‘No Smoking’ signs. The legislation varies slightly in different parts of the UK so contact your local authority for details of how the ban affects you. Gaming legislation

Coin operated amusement machines offering games of chance are subject to gaming legislation and Machine Games Duty (MGD). In Great Britain, if you only have two gaming machines in a premises with an alcohol licence, you only need to notify your local licensing authority. If you want to provide more than two, you’ll need to apply for a licensed premises gaming machine permit. In Northern Ireland your alcohol licence entitles you to a certain number of gaming machines. The licensing authority will decide how many you can have when they grant the licence. You can find out more about gaming legislation in Great Britain on the Gambling Commission website. The Department for Social Development in Northern Ireland (DSDNI) website has information about gambling laws in Northern Ireland. Employment matters

Anyone employing staff must comply with employment legislation. As an employer it’s your responsibility to check that someone you take on is entitled to work in the UK. There are fines for employers who employ illegal workers because they’ve failed to make the necessary checks. Equality and discrimination law

You must not discriminate against anyone because of their age, disability, gender reassignment, marriage and civil partnership, pregnancy and maternity, race, religion, sex or sexual orientation. This applies to every aspect of your business operations, from taking people on to dismissing them. You may need to make reasonable adjustments to your premises and working arrangements so that you don’t unfairly discriminate against disabled people.

Health and safety

The Health and Safety at Work Act and the numerous regulations made under it cover all aspects of health and safety at all business premises. Employers have a duty to ensure the health and safety at work of all their employees and those with five or more employees must prepare a written health and safety policy statement. Further information and guidance leaflets on all aspects of health and safety are available on the HSE and Health and Safety Executive Northern Ireland (HSENI) websites, and from your local authority environmental health department.

Steve Tate, chairman at Cristal International Standards, said: “With the rise in popularity and increasing impact of sites like TripAdvisor, hotels can be damned instantly through one bad guest experience.

“The RoomCheck Standard, combined with 50 independent auditing to an internationally

recognised level, means that complaints are reduced and room standards are kept consistently high.” Earlier this year Check Safety First highlighted the importance of keeping bedrooms clean, and said that rooms are often overlooked in comparison to bathrooms. As well as its module, the company also provides a website, room-check.com, which lists only hotels whose rooms pass a certain standard of cleanliness. Compiled from reviews and ratings from an independent source, the site aims to help customers choose rooms with consistent and trustworthy hygiene levels. GIVING AIR A CLEAN BILL OF HEALTH Controlling air quality within a hotel’s kitchen environment is critical because contamination of food and drink could lead to outbreaks of infection. Kitchen equipment, including the ventilation systems should be specified to a very high standard and there are several important factors for the design team to take into consideration, aside from just hygiene. The development of modern hotels requires the involvement of architectural and engineering practices fully familiar with the sector’s unique set of requirements, and these professionals will in turn wish to engage with a specialist in the field of ventilation equipment, to ensure the kitchen environment is properly served. Systems must comply with British Standard BS6173:2009, which requires interlocking of mechanical ventilation systems and gas supplies for all types of commercial kitchen appliance, preventing a gas appliance from being switched on before the ventilation system is operating. The majority of new hotels these days are being designed to meet BREEAM ‘Very Good’ and even ‘Excellent’ or ‘Near to Zero’ Carbon standards. It is crucial then to look at

the performance of the ventilation system; as it not only requires electrical power to operate, but can be responsible for discharging large volumes of warm air to the outside atmosphere. Conventional cooker hood extract systems use powerful fans to simply suck hot, moist air away from the work area. The green alternative is to select one of Ledaire’s ‘induction hoods’ which cut by 80% the volume of air exhausted from the kitchen itself. It achieves this by discharging fresh air into the hood space at high velocity, creating a low pressure area over the cooking vapours and fumes, which are then removed through the filters.
