News Marco Pierre White is to open his latest Steakhouse Bar & Grill at the four-star Castle Hotel in Windsor this month. The 80-cover restaurant will offer what White calls ‘affordable glamour’, serving a selection of English and French dishes.

It will be the chef’s 13th steakhouse to open across the UK and Northern Ireland under a franchise agreement with Black and White Hospitality. John Willcock, general manager at the Castle Hotel Windsor, said: “It’s wonderful news for our hotel guests and visiting diners that we have been able to gain such an authentic and exciting restaurant adjoining the hotel. Dishes will include Entrecôte of Veal and Cambridge Burnt Cream and 28-day aged Native Breed Steaks. White said: “My menus are designed to offer something for everybody, for every price point and budget, as
the future of eating out is affordable glamour.” Originally a Mecure property, the 108-room Castle Hotel Windsor was re-branded under Accor’s high-end MGallery collection last year.
It is the first MGallery hotel to welcome a Steakhouse Bar & Grill, joining its sister Mercure sites in Leicester, Oxford, Stratford-uponAvon and London Bridge which operate under the Marco’s New York Italian Brand.

The Pig At Combe Takes Shape As Bookings Open

The newest Pig hotel will open its doors in early July with bookings being taken from March 9 as the property begins to take shape. The Pig at Combe in Otter Valley near Honiton, Devon, is the fifth property in the ‘Piggy’ litter, joining the Robin Hutson group alongside boutiques in Brockenhurst, Bath, Southampton and Dorset. Now with the hotel gearing up to launch, details for the new 27-bedroom The Pig at Combe have been revealed and include a number of elements that break away from the norm. The entrance to the hotel and ‘Great Hall’ have been converted into the main bar, where guests will be greeted with a long bar, oversized sofas and chairs, along with an open fire, shaking up the traditional arrival experience. The panelled banqueting room and drawing room have been turned into a more informal restaurant, complete with bare wood floors and restored shutters. The former dining rooms have become cosy sitting rooms. The garden space has been transformed into an atmospheric indoor-outdoor bar and dining area with wood fired oven, oversized tables and benches.
The previously unused attic floor in the main house has been converted into bedrooms, while the original Georgian stable block, also previously unused, has been turned into quirky ‘Horse Yard’ rooms. The original Georgian kitchen has become a private dining room, with a ‘below stairs experience’. The old laundry has been turned around to be home to its own private terrace and garden, while inside the walled garden, 2 potting sheds have been transformed into treatment rooms offering a range of ‘Piggy’ massages. Two thatched Devon longhouses in the grounds will provide additional private cottage style accommodation. The kitchen garden will become the ‘beating heart’ of the new addition, with
three walled gardens – the vegetable garden, herb garden and infusion garden – providing much produce to the hotel’s kitchen and menus. CEO of Home Grown Hotels Robin Hutson said: “We’re really over the moon with the building progress at The Pig-at Combe – outside we are busy planting and seeing new shoots in the kitchen garden, and inside whilst deformalising the space we are renewing every pipe and wire, stripping off layers of varnish, and scouring the country for quirky and unique artifacts. Combe sits well within the footprint of our other four locations. Demand has been very high for the existing properties and our guests want more Pig’s in more locations but we will only create them if we find exceptional sites like this – possibly the finest hotel building in this neck of the woods.”
News Hotel Marketing Association partners with HOSPA The Hotel Marketing Association (HMA) has signed a management agreement with the Hospitality Finance, Revenue Management and IT Professionals Association (HOSPA) to provide hospitality marketing expertise to its membership. The agreement sees HOSPA become responsible for HMA’s administration while the marketing organisation, formed 40 years ago, will provide all aspects of marketing, including updates on trends, views and strategy, to HOSPA members. HMA chairman Ed Purnell said joining HOSPA was an ‘obvious next chapter’ for his organisation. He said: “The impact of the digital era on our industry has been exciting and fast-paced. Marketing professionals have had to adapt quickly to ensure that they keep their strategies relevant and optimised. This has naturally aligned marketers and marketing intelligence with revenue management and systems infrastructure.” HOSPA chairman Chris Upton, whose non-profit organisation is designed to bring together hospitality professionals working in the areas of from financial management, revenue management and IT, said: “The HMA’s objectives form a natural fit with our own, especially at a time when marketing is increasingly becoming an integral part of HOSPA’s three membership disciplines and communities – hospitality finance, revenue management and IT. We look forward to supporting the HMA in enhancing high marketing standards and practice; and to benefiting from the HMA’s marketing professionalism and expertise.” HOSPA currently has a membership of 1,100. As a result of the agreement All HMA members will automatically become HOSPA members.
Work begins on world’s most authentic titanic hotel
Work has begun to fully restore the former Harland & Wolff Headquarters building and Drawing Offices in Belfast’s Titanic Quarter. The iconic buildings, where RMS Titanic and 1,000 other ships were conceived and designed, will include a new boutique hotel and public heritage space. The development of the four-storey, 84-bedroom hotel is being managed by Titanic Quarter Ltd. It will be the world’s most authentic Titanic-themed hotel. Titanic Foundation, with the help of a £4.9m grant from the Heritage Lottery Fund’s Heritage Enterprise programme, is supporting the restoration of the Drawing Offices. The scheme, which will include three pavilions, will be publicly accessible for tours, events and exhibitions. Both projects are due to open in 2017, creating 100 new jobs. Kerrie Sweeney, Chief Executive of Titanic Foundation, said: “The Harland & Wolff Drawing Offices are one of Northern Ireland’s most significant and important historical buildings. It is a building of global significance where over 1,000 ships were designed including Titanic, Britannic and Olympic. Today marks a key milestone in its long-awaited restoration.”

King Street Townhouse Unveils Infinity Rooftop Pool Manchester newest hot boutique hotel, King Street Townhouse has unveiled the city’s first hotel rooftop pool. The hotel, which is the fourth boutique in the Eclectic Hotels portfolio, opened in December and now the pool has officially been revealed, sitting seven floors atop the Grade-II listed building. The infinity pool boasts panoramic views across the city of Manchester and completes the King Street Townhouse’s new spa, comprising
of the pool, a Helos steam room, relaxation room and two treatment rooms. The rooftop is also home to a south facing terrace, where guests can enjoy drinks and afternoon tea. Hotel Guests’ Top Cleanliness Concern Is What Lies Between The Sheets A new survey by Miele Professional has found that over a quarter (26%) of UK hotel guests worry about the cleanliness of the room that they are staying in. Of those who do worry, over 60% were concerned over the state of the bed sheets, pillows and bed covers/ blankets. 52% of respondents said that they didn’t like the thought of items being unhygienic and a further 44% were worried about catching germs from previous users.

The research revealed that with 90% of people visiting hotels for pleasure rather than business, nearly two thirds (62%) listed a comfy/big bed as the top factor that makes them feel most at home when staying in a hotel, with a good breakfast also being of high importance (41%). Over a third (39%) of respondents stated that clean, crisp sheets on the bed made them feel most comfortable.

The Miele Professional research also revealed that 55% of consumers list high levels of cleanliness as an influential factor in encouraging them to return to a hotel. This was the second most influential factor behind competitive pricing (64%). 69% listed an unclean room as the factor most likely to put them off returning to a hotel, with a generally unclean hotel coming in second place (66%) and unfriendly service close behind (54%). The survey also revealed that three quarters (75%) of consumers feel that the cleanliness of the hotel room most influences their perception of a hotel’s values. Johnson Targets Hotel Industry Gallery Direct’s Carson Leather Armchair With £15M Acquisition Johnson Ser vice Group (JSG), the Cheshire-based textile services firm behind the Johnsons brand of dry cleaning stores, has a c q u i r e d Z i p Tex t i l e s Limited, a provider to the hotel sector, in a multimillion pound deal. JSG has bought the entire share capital of Zip for £15m, in addition to a debt of £2.7m to finance recently installed processing equipment. Zip provides services to the hotel and leisure sector from a facility in Birmingham and will now expand JSG’s reach in central England as well as boost its reputation within the hospitality industry. JSG said: “Zip is an extremely well invested business that offers good synergies with Bourne, geographical reach and scope to increase processing capacity significantly.”
The deal follows a number of acquisitions made by Johnson last year, including the purchase of linen hire and laundry business Ashbon Services Limited for £6.25m in November. JSG CEO Chris Sander continued: “Having expanded our hotel and restaurant divisions through the acquisitions of Ashbon and London Linen, the addition of Zip to the JSG family marks the latest milestone in our growth strategy.” Zip, which achieved revenue of £7m in the 12 months to January 31, is expected to be immediately earnings enhancing.

How clean and hygienic are your facilities? UK gym-goers are not too ‘clean-living’ according to Initial Washroom Hygiene who revealed from a recent gym bag study that 60% of gym bags carry high levels* of bacterial contamination. Swab tests carried out found that more than one in three (35%) bags harboured coliform bacteria on the handle. These bacteria are typical indicators of poor hygiene and, outside the body are predominantly found in faecal matter. Any presence of coliform bacteria carries a significant threat of illness and cross contamination, yet the dirtiest bag within the test contained seven times the acceptable level of coliform counts. Bags made of leather were found to hold more bacteria than those made of canvas or nylon - the spongy surface texture of leather providing the perfect conditions for bacteria to live and grow. With bags designed to be carried and handled by their owners, and research estimating that 80% of all infections are transmitted by hands, thorough washing and hygiene practices are crucial in combatting the spread of bacteria. This is especially true in busy gym environments, which typically have high footfall, multiple touch-points and warm conditions.

Interestingly, tests also revealed that bags belonging to females were just as likely to have high levels of bacteria as those belonging to males (64% vs. 61% respectively).

Dr Peter Barratt, technical manager, Initial Washroom Hygiene, said: “Gym bags are portable - we take them with us into our homes, places of work, in our cars, and on public transport. If they become contaminated, their potential for accumulating and transferring bacteria and virus particles is significant. Our study demonstrates how relevant the provision of easily accessible hand washing facilities and hand sanitisers is in gyms, to help prevent cross contamination between members. It’s also down to individuals to take responsibility for their own hand hygiene by following correct handwashing guidelines: between 20 and 30 seconds is the recommended time for thorough hand washing. This is one of the tips we give school children because if we can make hand washing and sanitising a habit at an early age, we’ll all be a little better off. As well as keeping yourself fit in the gym, it’s important to remember to stay healthy at the same time.” *‘High levels’ are defined as any sample containing an ATP (adenosine triphosphate) reading of 500 Relative Light Units or above using the Hygiena SystemSure process on either the handle or inside of the bag.

World renowned chef and restaurateur Jason Atherton headlined the Hotelympia Food Service 2020 Conference discussing his growing number of sites in a fascinating talk entitled ‘re-imagining global for local’. Park Inn by Radisson Hotel Newhey Carpets, a leading British manufacturer and specialist designer of innovative, high performance and sustainable commercial carpets, produced over 20,000 square metres of Graphics Tufted and Colortec+ carpet for the Park Inn by Radisson Hotel & Conference Centre London Heathrow. Rezidor’s mid-market brand Park Inn by Radisson Hotels have invested £50 million to refurbish 21 of their UK sites. The Park Inn by Radisson Hotel & Conference Centre London Heathrow is one of Rezidor’s flagship hotels. The hotel was granted £13 million of the total investment figure to refurbish the guestrooms, corridors and public areas.

The hotel which is situated only 1.6 kilometres from Heathrow Airport, wanted to introduce a stylish contemporary feel to the interior. Newhey Carpets worked closely with interior design practice Trevillion Interiors, based in Hertfordshire, to create the brand standard designs to suit both business and leisure guests. A simple but sophisticated 3 colour Graphics Tufted design was chosen for the guestrooms incorporating a different colour scheme for each of the 5 floors. The corridors mirrored the colour scheme of the guestrooms, where a Colortec+ construction was specified due to the requirement for panel and runner features throughout.

The renovation featured and air-force blue and smoke grey colour scheme, which fitted perfectly with the hotels brand design. The newly refurbished hotel has 895 guestrooms and can cater for up to 700 delegates in the stylish new conference and meeting facilities, which have the largest capacity in Heathrow for residential conferences. The whole renovation project was ongoing throughout 2014 and also included carpet being supplied to Park Inn by Radisson Manchester and Telford. itting proudly amongst over 500 acres of West Midlands countryside, is England’s Leading Resort (World Travel Awards 2015), The Belfry Hotel & Resort. The Belfry has been synonymous with golf ever since it held its first Ryder Cup in 1985 and has written itself into golf folk law having gone on to host the famous biannual event a record four times. The resort boasts three spectacular courses and a golf academy and whilst we were there we did find time to tackle The Barbazon Golf course. The course was in great condition for the winter months, fairways immaculate and the greens were excellent. The weather was kind making conditions easier than it could have been. I approached the famous 10th hole with excitement, memories flashing back to Seve’s famous drive onto the green back in 85 – needless to say I took a more cautious approach and was happy to walk off the hole with a par. The course was tough and challenging but the back 9 was a chance to post a respectable score. But the main reason for this visit was to see what else the
resort had to offer away from the hallowed greens and needless to say I was just as impressed by these facilities and level of service! Just 20 minutes from Birmingham city centre, The Belfry is perfectly positioned at the heart of the country attracting guests from all over the British Isles. Upon arrival to the resort you are welcomed by a smiling concierge in top and tails and the smiles do not stop at the door. After checking in we were shown to our signature room, one of 319 in the resort. Spacious and full of the amenities you would expect in a luxury resort, the room was a lovely base from which to explore the West Midlands retreat. Our exploring started in the Hotel’s main bar, the Brabazon bar, where we were served a delightful champagne afternoon tea. A range of finger sandwiches, scones and freshly baked pastries were beautifully presented on a 3 tiered cake stand and joyfully washed down with a couple glasses of bubbly.
Leading Resort The Brabazon bar is certainly a very sophisticated setting for a few drinks and it will take you a while to make your way through its long and varied cocktail menu. The bar was lively initially made up of those on a conference day with The Belfry fully equipped for corporate days out with six boardrooms and more than 20 conference and events suites accommodating up to 400 guests. As the afternoon passed the bar started to fill up with more hotel residents and those that had spent the day tackling the golf course. The usual route from the 18th green is to Sam’s Club House for a post round pint, where guests can take advantage of the relaxed environment and enjoy a menu of classic light bites and Sam’s double stack burger! Our destination for dinner though was The Belfry’s signature restaurant, The Ryder Grill.
Award winning Chef Director Glen Watson has put together an a la carte menu that really does stir the senses! Using high quality, locally sourced ingredients the menu consists of succulent steaks, chargrills, spit roasts, fish and lobster. I went for the best of both worlds and opted for the Surf and Turf. Fillet steak perfectly cooked medium rare, accompanied by half a lobster and a side order of French fries, washed down superbly with a few glasses of fine wine of course. Somehow I did have space to tackle a sticky toffee pudding, which was well worth it.

The restaurant has a very relaxing atmosphere with dim lighting and stylish décor, making it a very pleasant place to spend your evening. The Ryder Grill is next to the Ryder Kitchen, its more relaxed counterpart offering a wide selection of starters, mains and desserts from their three course selfservice menu. The Ryder Kitchen is also the scene for The Belfry’s Sunday Lunch, with 3 courses for just £24.50. The Belfry has added to their gastronomy offering with the opening of Rocca’s Pizza Pasta restaurant last month. The family friendly Italian

restaurant is named after Costantino Rocca, Italy’s most successful golfer who played the Belfry’s Brabazon course when representing Europe in the Ryder Cup in 1993. Rocca’s focuses on serving fine Italian cuisine in more of a relaxed setting open Friday and Saturday evenings and daily during school holidays. The launch of Rocca’s is in line with a concerted effort by the resort to appeal to the family market. The end of 2015 saw the opening of The Belfry’s Woodland Walk. Set throughout the woods adjacent to the hotel, this interactive adventure features engaging activities perfect for families with young children, including den building, wildlife spotting and bug hotels. Fitness obstacles are in place for those that opt to tackle the 2km course at a slightly faster pace whilst next to the woodland walk is another option for younger children in the form of The Belfry’s brand new playground. Kids wanting to get in to golf will be tempted to sample the new Ryder Legends Mini Golf course with parents just as keen to get the putter out.

I also managed to squeeze in one of The Belfry’s signature treatments the Hero Back, Face & Scalp Treatment. Lasting 85 minutes, the ESPA experience delivers triple results including a back exfoliation, a back massage with hot stones, a personalised facial and a scalp massage from just £109 per person.
Having been well fed and suitably relaxed I left The Belfry refreshed and understanding of its place as England’s best. The hospitality and high level of service is matched by its facilities and leisure offerings with golfers, couples, families and corporate clients all catered for. No doubt The Belfry Hotel & Resort is set for more accolades in the coming years.

Inveralmond Brewery’s Rascal London Porter goes Stateside Popular craft beer Rascal London Porter is about to cause a splash in the burgeoning U.S. market, thanks to a deal between Perthshire based Inveralmond Brewery and Iron Horse Beverage.

Beginning at the end of March, Rascal will hit bars and retail stores in the USA, starting with New York and California. The agreement with Iron Horse Beverage puts Rascal in a highly competitive but fastgrowing craft beer market. There are now more than 4,000 active breweries in the United States, with two opening per day, according to the Brewers Association. That is thought to be the highest number since the 1870s.

Rascal, a rich dark beer with a 5.6% ABV, forms part of Inveralmond’s Inspiration Series. Iron Horse Beverage will bring two more beers from the series to the USA in the coming months: the Czech pilsner inspired brew Sunburst and Belgian Abbey beer inspired De Mons. The Iron Horse/Inveralmond deal is one of the first to come out of Showcasing Scotland, a meeting of 100 Scottish food and drink companies and 140 international buyers last October. Organised by Scotland Food & Drink, Scottish Development International, Highlands and Islands Enterprise and Scottish Enterprise, the event took place at Gleneagles as part of Year of Food and Drink Scotland 2015. Susan Beattie, head of food and drink at Scottish Development International, said: “It’s great to hear that the connections we made at Showcasing Scotland, and Inveralmond Brewery’s hard work in following up this event, have paid off. We know that there is strong interest in craft beer from US consumers and Scotland is well placed to respond with high quality products from companies like Inveralmond.” The man behind Rascal’s U.S. launch, Cliff Morello, took Grolsch to the USA. He launched Iron Horse Beverage in 2004 and supplies beers to 35 states. In what he calls a “cut-throat, very competitive” market, Morello said he was looking for a
product that would stand out. Morello, Chief Executive Officer and President of Iron Horse Beverage, commented: “When I started in this business there were 65 breweries in the USA. Now there are over 4200 with probably another 1800 coming. Craft beers have 15% of the market. The number one craft beer in the USA is the IPA, whereas not everybody has a Porter.” Rascal has a combination of a spicy aroma and silky palate and is inspired by the mighty brewing styles of 18th century London. The London Porter is named after the porters who moved goods on and off ships and around London’s city streets. Bob Hogg, commercial director for Inveralmond Brewery, commented: “Rascal has been a great hit in the UK and we fully expect it to cause a stir in the USA. We believe its interesting combination of flavours makes it unique in the market. The same can be said for our whole Inspiration Series, which we’re delighted to see launched into an exciting and fast-growing craft beer sector in the USA. We’re also happy to see a positive outcome from Showcasing Scotland and last year’s Year of Food & Drink Scotland celebration.” As well as being sold in the UK on-trade and off-trade, Rascal London Porter has been shipped to Germany, Denmark, Switzerland and Italy. The brand will get an extra marketing boost in March when it hits the shelves of Aldi in Scotland as part of the supermarket chain’s Scottish Beer Festival, an in-store showcase of Scottish breweries beginning on March 10th and available while stocks last. Rascal won Champion Beer at the 2015 World’s Biggest Ale Festival, run by JD Wetherspoon, before it was officially launched. As a result it was featured on JD Wetherspoon’s national guest ale list during July and August 2015.

Hotel stays clear of limescale with KalGUARD®

Despite being located in one of the hardest water areas in the country, a popular hotel in Bath has completely avoided problematic limescale accumulation in its hot water system thanks to a KalGUARD® water conditioning solution from Sentinel Commercial. The scientifically-proven, electrolytic limescale prevention device was commissioned in October 2013 at the hotel, which at the time was newly constructed. Ever since, regular monitoring reports from the boiler manufacturer and Sentinel Commercial have confirmed that KalGUARD® has kept the system almost entirely free of limescale – a result that not only ensures maximum system efficiency, performance and longevity, but also minimises stubborn and unsightly limescale deposits on the hotel’s thousands of appliances, bathroom and kitchen fittings.

The hotel is part of one of the UK and Ireland’s biggest and fastest growing hotel companies, comprising over 650 premises. Committed to offering quality accommodation at affordable prices, each hotel is built to the highest standards using reliable technologies that are proven to deliver long-term cost and energy efficiency. As the Bath hotel is located in an area served by incoming mains water with a total hardness of approximately 330ppm (as calcium carbonate), due consideration had to be given to preventing limescale formation in the hotel’s new hot water system, as Chris Shelton, Sales Director of Sentinel Commercial, explained: “Failure to adequately treat a hot water system means that limescale will form readily on heat transfer surfaces, pipework, and appliances, causing poor energy efficiency, reduced water pressure, noise, component failure,
and even inadequate hot water supplies. Not to mention that it builds up on sanitaryware and appliances, making them difficult to clean. Such problems are not only costly, but totally unacceptable for any company whose business relies on reputation, as all hotels do in today’s online information age.” The forward-thinking building service provider responsible for the design and installation of the new hotel’s HVAC system elected to install Sentinel Commercial’s KalGUARD® at the 108 bedroom facility. KalGUARD® ‘conditions’ water permanently by dosing it with very low levels of stable zinc via an electrolytic process that uses a zinc anode and a copper cathode. This forces naturally occurring calcium carbonate crystals to form as soft, non-deposit-forming aragonite rather than into hard, depositforming calcite (limescale). A tested and trusted product, KalGUARD® has been independently proven by Cranfield University to reduce limescale drastically. Furthermore, the electrolytic technology it uses is recommended by the Part L Building Services Compliance Guide for the control of limescale. A 54mm KalGUARD® system was installed at the Bath facility, where water usage is approximately 20m3 per day, with a peak theoretical demand of over 140 l/min. Here, the hotel’s water supply enters a CWS tank and is boosted to all hot and cold water services, including three high efficiency water heaters, supplied by a major boiler manufacturer, as well as a 2,000 litre preheat vessel that is fed from a Micro-CHP unit. On the advice of the Sentinel Commercial team, KalGUARD® was fitted to the building’s rising main to ensure that the water heaters, as well as other hot and cold outlets, remain free of limescale. Since KalGUARD® was commissioned in October 2013, the system has been inspected and monitored on a quarterly basis by a Sentinel Commercial engineer as part of a regular service support package. All standard reports have shown steady state conditions, with KalGUARD® performing extremely well despite the acute hard water in the vicinity. To allow continuous monitoring of waterside conditions
and assess changes in the system, Sentinel Commercial used data loggers on this project. These readings have demonstrated a steady state between flow and return temperatures. The boiler manufacturer, also keen to support efficient hot water generation objectives and limescale prevention, has independently monitored conditions in the heat exchangers using sitespecific diagnostic programmes. Once again, all reports undertaken by the boiler manufacturer’s Water Heater Product Manager have proven KalGUARD® to be effective at controlling limescale. As would be expected, the boiler manufacturer and hotel are impressed with KalGUARD®’s performance, and confident in its technology. “Unlike devices that use magnetic, impulse field and electronic technologies, all of which are supported by claims that are difficult to validate, KalGUARD® uses Part L approved electrolytic technology, and has proved successful at preventing limescale in hundreds of commercial facilities across the country. KalGUARD® will not only maximise the longevity and efficiency of the hotel’s energy saving heating system, but will also help to ensure a dependable supply of hot water, better water pressure, increased longevity of appliances, and easier, faster cleaning of bathrooms and kitchenware. Ultimately, all of these are necessary to keep guests happy, achieve the high standards of Premier Inn hotels, and increase long-term energy and operational savings,” concluded Chris Shelton.
