Czech Christmas shopping in Prague Prague has two main Christmas markets, Old Town Square and Wenceslas Square, just five minutes’ walk from each other. At the heart of the festivities, a large twinkling Christmas tree is surrounded by colourful wooden huts. Browse the displays of Czech treats which includes wooden toys, embroidered lace and traditional Christmas decorations (such as Czech glass baubles). Snow-dusted St Petersburg The fairy tale Russian city of St Petersburg looks especially magical with its dusting of snow that covers the city’s wide boulevards and beautiful buildings each winter. From 12th December 2019 till 13th January 2020, the biggest Christmas market in the city will be staged at Manezhnaya Square and Malaya Sadovaya Street in the historical city centre

anopy by Hilton, Hilton’s (NYSE: HLT) lifestyle hotel brand, today announced the signing of a development agreement and a long-term lease between Novaxia Investissement and Dutch hotel operator Borealis Hotel Group for the 150-room Canopy by Hilton Paris Quartier Latin. The hotel, which is expected to open at the end of summer 2022, will be located on rue Lacépède, near Place Monge, Jardin des Plantes and in the heart of the Latin Quarter one of Paris’ most diverse and culturally rich districts. Canopy by Hilton Paris Quartier Latin will occupy a renovated, historical mansion with an Eiffel-style industrial roof and a new sevenfloor building and will offer a range of features, including a restaurant, bar, a tearoom and a fitness centre. Patrick Fitzgibbon, senior vice president, development, EMEA, Hilton, said: “With the first property opening near Trocadero in 2020, introducing the second Canopy by Hilton hotel
Nature will be anchored in the Canopy by Hilton Paris Quartier Latin with an ambitious landscaping component: a vegetated facade with climbing plants, a garden on the ground floor and green terraces. The project is part of a BREEAM certification process. The rehabilitation of this obsolete complex began in September 2019 and is expected to finish in summer 2022. The new hotel will be inspired by the numerous tourist sites that surround the project and will offer top-of-the-range services for international tourists as well as local neighbours. “This project highlights Novaxia Investissement’s ability to offer to its clients complex and outstanding operations, usually led by institutional investors,” said David Seksig, deputy director, Novaxia Investissement. The development is the eighth hotel project developed by the funds managed by Novaxia Investissement and reflects the expertise of the teams in this asset class. Novaxia Investissement has been advised by the Avocats White & Case law firm. The Eden Hotel Collection has appointed Claire Randall as general manager of the five-red-star hotel and country estate in Dartmoor National Park.

With over 30 years of experience in the luxury hotel industry, Randall’s previous role as general manager was held at The Idle Rocks and St. Mawes Hotel in Cornwall. Prior to this, she held a long-standing position at Lucknam Park near Bath as managing director. As well as holding several management positions, Randall also spent six years as a hotel and restaurant inspector for the Michelin Guide. Randall, who will start her role in January 2020, said: “I am absolutely thrilled to be joining Bovey Castle in Dartmoor - one of the UK’s most iconic luxury country house hotels - which provides a wide range of experiences to guests coupled with hospitality of the highest quality”.
Following the acquisition of Bovey Castle by Eden Hotel Collection in 2014, the hotel has won numerous awards, including the AA’s highest accolade: five red AA stars. Blueprint Café add new Michelin star experienced Head Chef to their menu with starters like London cured smoked salmon, Cornish crab and a tartare of Heritage Carrot served with Yorkshire fettle cheese and sunflower seed praline. Lifschutz Davidson Sandilands completes the Hoxton Southwark… Architecture firm Lifschutz Davidson Sandilands has completed work on an ambitious mixed-use development in Southwark, which shelters Hoxton Hotel’s third property in London, Hoxton Southwark. Complete with 192 rooms as well as restaurants, bars and function rooms and 4,000 m2 of flexible co-working office space, the facilities that are stacked within are shelters in a slender 17-storey building.
Owned by Ennismore, the hotel, which is clad in precast brick panels, is situated on the busy Blackfriars Road, nicknamed ‘Blackfriars Boulevard’ because of the way in which it has gradually become a destination in its own right over the past few years. The narrow site sits just to the south of a GradeII listed, 1950s church and charming church gardens. The Colombo Centre – a small community sports hub lies to the west. The basement contains logistics and kitchens with the ground and first storeys given over topublic areas that include restaurants and bars,
banqueting and conference rooms plus a terrace that looks over the churchyard. Six floors of hotel rooms provide rooms of different sizes – ‘Shoebox, Snug, Cosy, Roomy and Biggy’ – ranging from 16-25m2. A further six floors of flexible office space provide new offices for startups and sole traders with the taller ceilinged 13th floor and winter garden breakout/crossover space for coworkers to mingle. HVAC and other plant is on the interstitial 14th floor and the top (15th) floor features a high-quality seafood restaurant and sky-barwith spectacular views over London. The building has a very permeable, active and attractive ground and mezzanine floor on the street with abundant planting and sitting out spaces that are sheltered by awnings and heaters for all season use. Chiming with Hoxton’s open-door policy, visitors are welcome to enter the building without having to check in and go up to the mezzanine function rooms and bar, the co-working suites or the sky bar and restaurant.

D&D London has announced the appointment of their new Head Chef Rudi Warner to the Blueprint Café. Warner has Michelin-starred experience under his belt, including three years at Michelinstarred seafood restaurant Angler and a role as Sous Chef at Ollie Dabbous’s first Michelin-starred restaurant, Dabbous.
British flavours and culture are also subtly represented in the dessert menu, with a cherry blossom-soaked tea cake with rum and whipped cream incorporating Britain’s love of tea in a unique and delicious way, and Rudi has plans to create further tea-inspired dishes in the very near future as the menu evolves.

Star Pubs & Bars completes ‘biggest ever’ refurb in Scotland at boutique pub with rooms Star Pubs & Bars has teamed up with hospitality operator Billy McAneney to reopen a boutique pub with rooms in Inverness after a £1.36m investment.

he refurbishment project at Blackfriars, boosted by a £422,606 grant from The Inverness Townscape Heritage Project, is Star’s biggest-ever refurbishment in Scotland.

The project has transformed the business into a high-quality pub specialising in locally sourced food and added nine boutique bedroom to the building’s two upper storeys. The venue is McAneney’s fourth site with Star and the 12th hospitality business in which he has an interest. The extensive revamp has sympathetically restored the outside of the Category B listed 18th century building, removing render to reveal the original stonework and reinstating traditional sash and case
windows. The chimneys have been rebuilt and the roof replaced. A complete refurbishment of the ground floor has extended the kitchen, replaced the toilets and given the pub a striking, contemporary brasserie feel, with stripped floors, exposed brickwork and vibrant colours. The bedrooms are each named after famous Inverness people and places. To underline Blackfriars’ commitment to local produce, in the spring McAneney is planning to install beehives and a greenhouse with a hydroponic system on a flat roof to provide honey, herbs and edible flowers for the pub’s cocktails and kitchen.
Says McAneney: “We’ve tried to bring something different to Inverness in terms of design as well as to celebrate the area’s food and drink. Our aim has been to create a place that both locals and visitors enjoy and that caters for all occasions.” Comments Star Pubs & Bars operations director for Scotland, Brian Davidson: “Blackfriars is a historic building and needed a vast amount of work to restore it properly. The grant from The Inverness Townscape Heritage Project has made the work economically viable and helped us enable Billy to develop a multi-income stream business and a premium venue that does justice to the building.”

Hotel Brooklyn to launch in February 2020 The highly-anticipated sister property to Hotel Gotham in Manchester is to open its doors in February 2020.
The owners behind Hotel Gotham in the city appointed Squid Inc as lead designers on the project, which will look to position itself as ‘Manchester’s most accessible hotel’. Hotel Brooklyn will aim to ‘be a trailblazer in championing accessible, sexy and modern design for all’. There will be a total of 18 accessible bedrooms at the property. “Accessible accommodation at Hotel Brooklyn features subtle details like basins with integrated hand grips, removable matt black grab rails, accessible bedroom storage and a hidden ceiling track hoist”, says Ed Warner, founder & CEO of Motionspot. “We hope this high level of attention paid to inclusivity will make Hotel Brooklyn one of the most sought-after venues for guests of all abilities.” Each of the bedrooms have been inspired by Brooklyn’s loft spaces.
Beds have brass adornments, while Turkish rugs have been designed to contrast with the concrete floors. Bathrooms have been angled to allow their back walls and semi opaque windows to look out across the bedroom, while street art wall features finish off the bold design direction. Bathroom amenities include organic bamboo toothbrushes and ethically sourced toothpaste, green soap and lotion dispensers with minimum waste. Hotel Brooklyn’s bar and restaurant, named Runyon’s after Damon Runyon, an American writer renowned for his depictions of Brooklyn characters, will present a diverse menu showcasing European and American influences, On the top floor of the hotel, Salvation is the hotel’s dedicated events bar, featuring exposed brick work, pop art and neon lights. The construction is being spearheaded by Marshall CDP, with the interior design overseen by Squid Inc who were also responsible for the look of the Art Deco-influenced Hotel Gotham on King Street, which opened in 2015 and has been a huge success since.

Former HPT to keep majority of investments in hotels Service Properties Trust, the real estate investment trust formerly known as Hospitality Properties Trust, promised to keep 55% to 60% of the portfolio in hotels, even after spending $2.4 billion on retail properties and rebranding the company.

EWTON, Massachusetts—A $2.4 billion investment in net lease retail properties isn’t going to keep the company onceknown as Hospitality Properties Trust from investing in hotels. Speaking during the company’s third-quarter earnings call, Service Properties Trust President and CEO John Murray said he expects to keep “55% to 60%” of the company’s portfolio in the hotel space and will split acquisitions 50/50 between the different asset classes going forward. “But that will probably be a bit lumpy as we ramp up the net lease acquisition activity,” he told analysts.

To that point, the company purchased the 261-room Kimpton Palomar Hotel in Chicago in October for $55 million, adding it to its existing management agreement with InterContinental Hotels Group.

The REIT closed on the acquisition of a net lease portfolio from Spirit MTA REIT in September for $2.4 billion in cash, adding 774 retail properties— including restaurants, movie theaters, fitness centers and other forms of retail. In October, the company closed the sale of two
retail properties and signed an agreement to sell 126 more for a combined $501.3 million. Murray said the company will be a net seller in the near term as they look to pay down debt incurred in relation to the Spirt MTA deal, which included $1.7 billion in unsecured senior note offerings and drawing on the company’s existing revolving credit facility. “We’re being selective and have dialed things back a bit while we’ve focused on the disposition plan,” he said, while noting the company could still be in the market to pick up “a couple hundred million” dollars a piece of both
retail and hospitality properties. Q3 performanceService Properties Trust’s comparable hotel portfolio saw a 0.3% drop in revenue per available room to $98.78, according to the company’s Q3 earnings news release. Murray said RevPAR performance was negatively impacted by disruptive renovations at a handful of the company’s highest performing properties. RevPAR was up 0.9% for the company’s properties not undergoing renovations, he said. The company continues to work toward winding down
its portfolio of Wyndham properties with plans to either sell or rebrand the 22 properties remaining in that management agreement by 30 September 2020. Two properties have already been rebranded as Sonesta flags. Murray said the company now expects full-year 2019 RevPAR growth in the range of down 1% to up 1%. As of press time, Service Properties Trust stock was trading at $23.99 a share, a year-to-date increase of 0.4%. The Baird/STR Hotel Stock Index was up 12.3% year to date.

Washington Mayfair The room’s design was filled with light tones and strong bold colours which compliments the beautiful furniture. We had time to relax before our evening reservation so after settling into our luxury room we decided to make use of the full amenities available as a guest at the Waldorf Hilton and explored the fitness room. We then made our way to the lobby which offered afternoon tea, handmade sandwiches, delicious cakes and in the evening, a jam-packed bar and exquisite hand-prepared Canapés. Madison’s bar – an extremely pleasant lounge bar – serving both breakfast and lunches during the day and stylish cocktails by night sits within a few steps of the hotel lobby. This venue offers a perfect accompaniment and offers an array of wines, with each bottle available by the glass, with a wide variety of whiskies. We opted to select from the signature cocktail list and chose the Melonball an old fashioned, but signature Washington cocktail. This was a perfect way to begin our evening.

Madison’s restaurant offers a classic English fare tempered with a modern European twist. From the mouth-watering menu, I opted for the Roast breast of chicken served with mushroom, leek and tarragon jus, my partner opted for Fillet of salmon served with mash potato, broad beans and crispy bacon– a must have for any seafood lovers. For desert, we decided upon the sumptuous warm chocolate brownie with vanilla ice cream. A perfect ending to the evening.

The next morning, after our deep, re-energising sleep we woke up ready for a delicious breakfast. Here is another example of the Washington’s attentiveness and care as we were served scrumptious cooked and continental breakfast alongside a variety of flavoured teas and juices, finished with refreshing fruit. This was a fantastic end to our faultless stay at the Washington Mayfair, with their breath-taking décor, delicious food and 5 star service, they have succeeded in all aspects of their hotel. I highly recommend them as a top spot to stay in London.

From bars and restaurants to hotels and arenas, the hospitality sector is undergoing its own transformation as it grapples with the changing demands of its customers. Just being a venue isn’t good enough anymore, with everything from the built environment to the sustainable credentials of the coffee cups now under scrutiny from an ever-more discerning clientele.

A new generation of paying customers don’t want to just eat, drink, or find a bed for the night. They want a full experience in which lighting, décor, ambience and Instagram-worthiness can all make or break their perception of a venue. This means that the sector as a whole need to properly reflect on whether it is transforming quickly enough and investing in the right areas to continue to attract loyal customers. Those that are willing to innovate and embrace the latest trends are the ones most likely to make it as it shows they are listening to what customers want and most importantly, responding to that want.
Technology is also playing a key part, with greater automation and personalisation offering a slicker customer experience for the likes of hotels. Using data that is collected at the point of booking, hotels can ensure guests are greeted by name with their personal preferences taken care of, ensuring they feel treated as individuals rather than just a booking reference. It’s this use of data that is going to be one of the greatest anchors of change for the overall customer experience as brands get to know their customers better through the intelligent collection and interrogation of data and then applying it to personalise and tailor an individual experience across digital and real-life interactions. Taking the integration of technology even further is the concept of smart hotels, in which guests can have a greater degree of control over their stay though the use of smart technology. Literally raising the roof:
At Hilton’s brand new Tower of London bar What do you do when you want to create the latest destination rooftop bar in London, but don’t want your vision to be hampered by the elements? You turn your outdoor bar into an indoor bar – or an indoor, outdoor bar, if you’re the DoubleTree by Hilton Hotel London – Tower of London. Jason Eastwood, Managing Director of Canopies UK, reveals how the sky really was the limit when it came to making sure guests can enjoy the iconic views of London from Hilton’s Savage Garden bar, whether it’s day or night, raining or sunny. Canopies UK were contacted by the hotel’s owner to help transform the former Sky Lounge site on the 12th floor into a 8,870 sq ft, 400 capacity lounge bar, including a feature bar, cocktail lounge, dining areas, private spaces, as well as two large outdoor north and south-facing terraces.

Essentially, the project involved making a real statement, which Canopies UK enabled the Hilton to do by helping the hotel make the most of every single square inch of space that was available to them – both inside and out.

“The north Wildside terrace is a dedicated events space that can be hired for private events and functions, such as weddings, and looks out over many of London’s landmarks, including Tower Bridge, The Gherkin and St Paul’s Cathedral,” explains Jason. “Being up on the roof, meant that the new bar, particularly the Wildside terrace, was at the mercy of the weather, so we were called upon to install one our Cantabria canopies, which features not one, but six retractable roofs that can be opened and closed independently of each other at the touch of a button. From a design perspective, it’s a real head-turning feature, and from a practical perspective, it enables the terrace
to be quickly and easily transformed from an al fresco summer hotspot into a winter events space for private hire and seasonal pop-ups.” In addition to the highly stylish and unique retractable waterproof roofs, the canopy also features integrated guttering, LED lighting, heating and a combination of fixed and vertical sliding glass screens that can be retracted in the finer weather and partially or fully closed in cooler, wetter and more changeable weather. Meanwhile, the overall structure has been painted grey so that it seamlessly blends in with the surroundings and the inside is white, which helps make the space feel bright and spacious.
A tall order Working at such a height – 12 storeys up meant that Canopies UK had to overcome several logistical and practical challenges in order to install the canopy, which spans 37 metres in length and stands at almost six metres tall. A total of 18 crane lifts were used to move the 20,000kg of materials that were needed to build the canopy, from the ground to the top floor within extremely tight parameters. Due to the site’s central London location, there was limited space for the materials on both the ground level and up on the roof. “Thanks to our careful planning and logistics and working closely with the hotel and other contractors, we were able to work around these space restrictions,” adds Jason.
Testing times Canopies UK also had to overcome several other challenges that really put their skills to the test during the four-month project, which included increasing the overall height of the 36 metre-long canopy so that it incorporated the terrace steps. This was achieved through a combination of clever design and joining systems and by creating a Perspex-filled arc feature. And because the building wasn’t totally square with the canopy, Canopies UK made a bespoke GRP system that linked the building and the system neatly together. While state-of-the-art Hilti scanning tools and bespoke structural calculations were used to fix the actual structure to the existing roof.
The sky’s the limit “Our extensive experience and tried-and-tested processes, particularly our site-specific calculations, all really came into play for this installation,” adds Jason.
“For instance, by scanning the concrete, we were able to create a bespoke fixing method that would cause minimal disruption to the structure. It’s innovative ways of working like this, that also meant the hotel was able to stay fully open and all nearby guest and conference rooms and bar areas could still be used as the Cantabria canopy took shape. “This project really does prove that the sky’s the limit when it comes to installing one of our canopy systems. We’re extremely proud of this installation, which is testimony to the fact it’s possible to transform your outdoor space into indoor space, no matter how tight space gets or how high up you may be!” The hotel’s General Manager, Bernadette Gilligan, said: “The canopy on Wildside has been flawlessly designed to accommodate events throughout the year. “Come rain or shine, guests can enjoy everything from drinks to private events in the space as the retractable canopy - designed and built as bespoke for Savage Garden – means that the terrace can be cosy and covered during winter, and the perfect suntrap come summer.”

The launderette service is the latest innovation in mass washing facilities using a small carbon footprint, helping to reduce water consumption with a built-in eco-friendly washing up liquid pump providing the correct amount per wash to reduce waste. One of the most recent projects undertaken by Milk is a bespoke sauna and steam room installation at Broughton Hall Estate, creating the design and fabrication of a truly unique project. From an initial customer brief we delivered the design concept through to detailed production and fabrication drawings, material sourcing and fabrication. All in-house processes that led to the creation of a truly unique thermal experience. The sauna created for this installation was manufactured within Milks workshop and was created as a result of the complicated assembly of laminated timber elements. These elements were then CNC’d to form the 148 individual components required to form this unique sauna cabin. The prime grade Hemlock Timber used for this installation was sealed and protected against the rigors of operation by applying 3 coats of Supi Sauna Wax, a product by Tikkurila. A Milk designed circular feature ceiling light was installed mirroring the corporate image of the wellness facility, casting a wonderful light across the curved interior of this sauna. The fluid interior space is complimented by the installation of a Harvia Globe sauna heater. The steam room installation was created in partnership with Wedi Systems UK Ltd, made up of 28 individually formed segments, these were bonded together, sealed and vapour-proofed, ensuring a durable substrate for the Christian Botteganove mosaic tiling. As ever for Milk these mosaics were installed by the uniquely talented Sharon Taylor of Viva Tiling. The hand crafted ceiling light to match that of the sauna but to cater for the specific thermal requirements of the steam cabin, again reflecting the Avalons corporate symbol, compliments the lustrous lines of the steam room interior and that of the sauna heater.
