create an airflow to keep the area beneath it cool. The motorised blades can rotate shut in bad weather to keep the heat in and the wind and rain out. With the addition of indoor heating and lighting you can have a fast built shelter at a far lower cost than a hard brick extension.

CafeCulture are a wholly owned business part of the JPR Graphics group of companies. Established in 2003 we specialise in the supply and installation of outdoor seating areas for restaurants, hotels, coffee venders etc. We are a niche independent supplier who design and manufacture many of our own goods and we also buy from many of the world’s best manufactures of high quality outdoor fittings. Unlike many large companies in this industry we are truly independent and not contractually tied to a small restricted range of suppliers. This means you get a much better choice of goods and we can select the right items at the right price that the job or your budget requires. We can also offer finance to spread the cost of your investment. We supply a wide range of products ranging from windbreaks, planters, real and artificial planting, tables, chairs, awnings, outdoor heaters, parasols, servicing, cleaning, repairs, pergolas and many accessory products too. Over the last two years we have noticed an increase in the use of planters to enhance the outside areas and provide a practical and attractive enclosure for your customers. We use artificial woods in many colours and finishes which have the advantage of being totally waterproof, will never rot and never needing painting. Unlike real wood which deteriorates all too quickly artificial woods are extremely durable and will look good season after season. We can plant with real plants or maintenance free artificial plants too. New this year are a beautiful range of Italian made pergolas. They are perfect for any environment and fit to resist various weather conditions. These year-round bioclimatic shelters are an excellent solution to protect outdoor areas. With roofs and sides that can be open in the Summer and closed in the colder months you can extend the use of a Summer outside area to a 12 month area increasing the available covers and your income. These bioclimatic pergolas are aluminium structures with roofs that have rotating, tilting blades. Open in Summer to let the sunlight in and

Rainwater is drained to the ground through the legs and the area under the bioclimatic pergola stays safe and protected. The roof blades can have sound reduction insulation added too which considerably reduces sound energy generated from the impact of the rain on the blades and also reduces the upwards sound of diners using the area underneath. These pergolas are modular so can be extended as needs require and can meet any architectural and design requirements.

PROJECT SPOTLIGHT: WILTON CARPETS AT GRAND THEATRE, WOLVERHAMPTON Ready to Weave axminster carpet from Wilton Carpets has been used to transform the auditorium of The Grand Theatre, Wolverhampton, bringing an elegance fitting of the Victorian interior.

The carpet has been well received by all at The Grand Theatre and Multifloor has enjoyed praise for meeting the tight deadlines of the project with such a high quality end result.

Designed by eminent theatre architect, Charles J. Phillips, The Grand Theatre, Woverhampton has been a focal point of the city since the late 19th Century. As part of a refurbishment of the theatre, some 900m2 of axminster carpet made by Wilton Carpets has been specified and installed by contractor Multifloor (Walsall) Ltd.

In fact, such was the success of the project that the contractor has already taken forward the same Kingston Pindot carpet to the main entrance at Wolverhampton Art Gallery. For further information contact Wilton Carpets Commercial on 01722 746000 or sales@wiltoncarpets.com

Selecting an existing library design in Kingston Pindot and using the Ready to Weave: Our Design service to select a striking red and gold colourway in keeping with the auditorium’s impressive period features, Multifloor presented the design to the city council: “I had used Wilton Carpets in a previous installation at Warwick University and it seemed the natural choice for a project of this stature,” explains Matt Hunt, Multifloor (Walsall) Ltd.

Multifloor specified the wool-rich axminster carpet in an eight-row quality to ensure that it could withstand the footfall throughout the theatre’s performances. Woven in Wiltshire using British wool, the carpet was made within the tight deadlines of the project: “Wilton Carpets proved faultless from the production of samples right through to the delivery of the carpet. Failing to meet delivery timescales could have had a huge knock-on effect and would have almost certainly held up the grand opening,” continues Matt Hunt. “We actually received the carpet earlier than promised and thanks to careful planning it was a simple process to fit, even in the complex layout of the auditorium, a huge ‘thumbs up’ to everyone involved.”

Hotelier & Hospitality Design

“Having worked with Wolverhampton City Council on the theatre before, we were trusted to put forward our specification, so had no hesitation in recommending Wilton Carpets. We presented the design and colour to theatre management, who agreed that it was the right fit for the auditorium.”

ICEHOTEL 365 OPENS IN SWEDISH LAPLAND Sleep on ice surrounded by dancing clowns, dive into a surreal frozen underwater world, climb an ice staircase to your floating bed and fall asleep surrounded by typography, reindeers, chandeliers, or even an apartment inspired by the Victorian era. These are just a few of the unique designs awaiting those checking into the new ICEHOTEL 365, which has just opened to guests located in the village Jukkasjärvi, near Kiruna in Swedish Lapland. ICEHOTEL 365 is the world’s first year round ice hotel and gives guests the chance to sleep on a bed made of ice at a cool -5°C 365 days of the year. During winter, the hotel will be covered in snow but during the summer it will be kept cool by solar power warmed from the midnight sun, covered with a turf roof and planted with Arctic flowers. As well as featuring a champagne-themed ICEBAR and a unique frozen art gallery, the new hotel will feature 20 suites; eleven art suites and nine deluxe suites, giving guests the chance to combine the adventure of sleeping on ice with the added luxury of a heated en-suite bathroom, private sauna (deluxe only) and warm changing area adjacent to the ice bedroom.

Hotelier & Hospitality Design

Over forty artists, designers and architects from nine different countries have been selected to create art in the 365 hotel. Some are ICEHOTEL veterans, such as Norwegian-Italian Luca Roncoroni (who has created an elegant apartment inspired by the Victorian era) and Swedish duo Tjåsa Gusfors and Patrick Dallard (who invite guests to dance with ‘dancers in the dark’ in their suite) whilst some are visiting for the very first time.

8

One of the most dramatic suites in ICEHOTEL 365 has been designed and built by British architects Alex Haw and Aditya Bhatt from Atmos Studio in London (who has previously worked on designs for the Eden Project and Paddington Station). Their suite ‘Dreamscape’ features a daring staircase of pure ice that winds from its entrance towards a floating frozen bed, passing through an ‘explosion of snow tentacles’ that appear to be in motion, hoping to encapsulate the energy of a dream. Founder of ICEHOTEL and ICEHOTEL 365 Yngve Bergqvist comments “the nature and environment surrounding the buildings are not only a huge source of inspiration for the ICEHOTEL, but are also necessary to create the hotel year on year. Previously we said goodbye to our guests in the Spring, but thanks to help from the Midnight Sun we can now invite them to stay year-round.”

THE ANDAZ LONDON LIVERPOOL STREET UNVEILS:

A VERY EAST LONDON CHRISTMAS On the 28th November 2016, the five-star luxury lifestyle hotel, The Andaz London Liverpool Street, unveilled its beautiful festive installation: A Very East London Christmas, a celebration of the charm and history of the neighbourhood in which the hotel is based. Designed by local creative agency, Manifesto Studios, and on display until the end of January 2017, the installation recreates the legendary Bow Bells of London in floating neon Perspex. One of the capital’s most famous icons, it is said that you are only a true East End Cockney if you are born within the sound of the Bow Bells! Seven bells will be suspended across the hotel lobby, the Lounge. Each one embodies an element of the East End personality and etched with drawings of the history and the icons that have shaped the area’s identity so guests can truly experience East London from inside the hotel.

The installation brings to life the #SoEastLondon hashtag, a creative digital campaign launched by Andaz London Liverpool Street to celebrate the unique and distinctive character of its East London locale. The themed bells represent seven core elements of this East London identity, which the hotel frequently seeks to explore and illuminate across its own digital platforms. The installation also offers an incredible interactive experience, by simply tweeting @AndazLondon with #soeastlondon, real bell chimes will be triggered, no matter whether the post is made in the hotel, East London or anywhere across the globe. The East End cannot be beaten for its lively vintage and flea markets as well as up and coming designer stores and amazing street food. One bell captures this vibrant culture, capturing the roving vendors, barrow stalls and culinary innovation with beautiful etchings. East London has a long history of fashion and textiles, which is celebrated on one of the bells, with visual nods to everything from hipsters to the 17th century master weaver that was based at Spitalfields Market, which is just a six-minute walk from the hotel.

The Art bell pays homage to the East London graffiti scene, where every day there is something new to discover, and the street walls are adorned with internationally acclaimed works. The bell depicts the modern artist’s tools: spray can, camera and paint. The largest bell on site, spanning an impressive two meters wide, showcases London’s well-known architecture and skyline, featuring iconic buildings, including the magnificent St Paul’s Cathedral and the Gherkin, Gangster twins Reggie and Ronnie Kray ruled the East End and the London crime scene with their game, The Firm, which rocked the 1950s and 60s. The terrible twosome left their marks all over the East End with the most famous incident at The Blind Beggar pub in Whitechapel. Their legacy is encapsulated on one of the bells, with the design including guns, Ronnie’s spectacles and boxing gloves.

bone” meaning “telephone” or “apples and pears” meaning “stairs”, adding an essence of heart-warming humour to this installation. Sitting alongside the large-scale installation in the Lobby will be neon wrapped green Christmas presents, with each East London themed gift having been inspired by the stories told on each of the seven bells. #SoEastLondon can be found on the supporting installation scripts located around the hotel Lobby, encouraging guests to engage with this trend and join the social conversation around A Very East London Christmas to pay homage to East London. A clever use of design is always at the heart of the five-star luxury lifestyle hotel: effortlessly combining the building’s heritage form the late nineteenth century when The Great Eastern Hotel occupied the site, with today’s modern aesthetic.

A further bell celebrates the inspirational determination of Sylvia Pankhurst, who famously protested for the right for women to vote and founded the East London Federation of Suffragettes in 1914, with 198 Bow Road its first headquarters.

General Manger Otto Steenbeek says, “At the Andaz London Liverpool Street, we want every guest to be able to experience the incredible vibrant culture of East London from within the hotel. This interactive installation achieves this by bringing the area’s unique history and personality into the heart of the Andaz as well as spreading Christmas cheer.

Last but not least, the seventh bell plays homage to the Cockney, most famously known for their rhyming slang. The bell is etched with visual references to some of these most famous sayings, like “dog and

“The Lounge is an impressive location to showcase A Very East London Christmas installation, which offers a creative gathering space for guests and locals to be inspired, make connections and share ideas”.

Hotelier & Hospitality Design

Every bell charts the history of the area, from cockney antiquity to the modern day, paying homage to the architecture, markets, fashions and art scene of the district as well as its people, including cockneys, the Krays and the East End Suffragettes.

Global Tribes Gather at Sleep 2016 to Discover and Discuss European Hotel Design and Development Sleep Bar This year, interior design and branding agency, Superfutures, provided an intriguing companion piece to the Sleep Sets in its Bar – more a series of musings on the meaning of tribes conceived to stir the senses than a conventional watering hole. A conference of inclusion and distinction With an auditorium packed from start to finish, the two-day Sleep conference explored issues at the leading edge of hotel design and development.

(London, 6 December 2015) At the 11th annual edition of Sleep, Europe’s hotel design and development event which took place at London’s Business Design Centre on 22nd and 23rd November, the ‘Science of Tribes’ theme awakened the mind and curiosity while raising the bar with profoundly considered installations, the highest quality of exhibitors and an inspiring and thought-provoking conference.

Hotelier & Hospitality Design

With visitors from across Europe, speakers from the US and more overseas exhibitors than ever before, the 2016 event was the most international and well-attended Sleep yet, achieving a 9% uplift to over 4,700 visitors.

16

Sleep Set Participants from as far away as Japan and Singapore convened to take on the Science of Tribes design challenge through the Sleep Set competition, Sleep’s annual guestroom feature widely recognised for questioning convention and transforming the way hotels and designers think about the spaces they create. The 2016 Sleep Set, sponsored by Dornbracht, saw five teams of designers and fit-out contractors each create a room for a tribe characterised by their shared values, lifestyles and aesthetic

preferences as identified by the Sinus Institute social model. Mitsui Designtec from Japan created a concept to engage the senses for the ‘Established’ tribe, and WOW Architects from Singapore focused upon the ‘Intellectuals’ with a room where norms were overturned and the bed was on the ceiling. Studio Proof conceived a design replete with the stunning details required to please the demanding ‘Performers’ tribe, while Aukett Swanke created a bivouac for the ‘Sensation-Oriented’ tribe that doesn’t normally stay in hotels. The teams presented their concepts to the conference audience and judges on Day Two, and Gensler was awarded top prize for its innovative interpretation of local authenticity for the ‘Digital Avantgarde’ tribe; Mitsui Designtec was also given a Highly Commended award for its beautifully crafted biophilic room design. Luciano Mazza, Director of Hospitality, Architecture at HKS, was full of praise. “The Sleep Sets elevate the Sleep event beyond a standard tradeshow experience,” he said. Ricardo Moreira, Managing Director of XCO2 Energy, added, “Sleep just keeps just getting better every year. The Sleep Sets are really impressive and creative with the subject of tribes - very topical!”

The opening address from serial entrepreneur Sharan Pasricha, CEO and Founder of Ennismore, revealed how personalised design, service and experiences differentiate the hotels his company conceives and develops, including The Hoxton and NoCo, a new brand set to challenge the status quo of the budget sector. Celebrated designer, Adam Tihany, was joined by the President of Seabourn and Cunard, Rick Meadows, to discuss the changing face of cruise ship design, and boutique hotelier, Robert Nadler, was part of the Hotel Development panel which explored ways to keep the momentum going once a hotel has opened. Of course, international hotel brands were well represented too, with Patricia Holler, Senior Director Interior Design at Marriott International, and Erin Hoover, Vice President of Global Brand Design at Starwood Hotels and Resorts, amongst the industry leaders hosting the always popular Development Round Tables. A Future of Wellness session explored the latest understanding of well-being. Sue Harmsworth MBE, Chairperson of ESPA, explained how research increasingly reveals the damage that technology and sleep deprivation are causing to our psychological and physical equilibrium, while acclaimed designer and philanthropist Clodagh enlightened the audience with her view that spaces which inspire ease and joy have a viral power to spread these feelings from one person to the next.

Post Show

Also contemplating the notion of ‘space’ and how it relates to all our life experiences were Signe Bindslev Henriksen and Peter Bundgaard Rützou, the founders of design studio SPACE Copenhagen who shared their philosophy during a keynote interview about ‘Poetic Modernism’. The Fear & Love in Hotel Design panel considered the challenges faced by the industry. In answer to the question, “How can a hotel can establish a point-of-view?”, Vince Stroop, Principal of Stonehill & Taylor, advised owners and developers to invest in properties rooted in the community and with a truly local design to ensure the experience can’t be replicated. The Art Panel also echoed this idea, with Melita Skamnaki, Curator and Director of Double Decker, joining other creative experts in considering how multi-sensory immersions and artwork developed with social media in mind can deepen the hotel’s narrative and the guest experience. General managers at the top of their game, including Kieran Quinn from the Sheraton Grand London Park Lane and Guillaume Marly from ME London, joined the panel Living with Design which explored the challenges of keeping hotel interiors fresh and up-to-date during the life of the design. The closing keynote offered warmth and humour from Loh Lik Peng, Founder and Director of Unlisted Collection, who revealed how his approach of giving freereign to design teams has been part of the secret of his success. Hand-picked, cutting-edge exhibitors Sleep’s collection of over 150 exhibitors displayed all the quality, ingenuity and outstanding craftsmanship that is the hallmark of the show. Over one-third of the brands were new to Sleep and, as the most international lineup yet, the exhibition attracted suppliers who chose the event as a launch platform because of its unique focus and global visitor profile.

Meanwhile, Rug Maker launched a range metallic rugs made from gold and silver looped threads mixed with fine Chinese silk and New Zealand wool – something entirely new in the European market. Style Library Contract presented its new Zoffany ‘Phaedra’ collection of fabrics and wallpapers, with an underlying classical influence elevated by a mastery of colour, while Cole & Son debuted at Sleep with beautiful, one-ofa-kind fabrics and wallcoverings made using traditional production methods. Founder Sponsor and host of the invitation-only VIP lounge GROHE presented its Sensia Arena shower toilet as well as other products incorporating its innovative technologies, while newcomer Villeroy & Boch displayed new ranges designed by Gesa Hansen including the Artis Colour surface-mounted basins available in 15 colours and four shapes for maximum personalisation. In addition, AXOR presented new bathroom and kitchen pieces from its classic collection AXOR Montreux, and Hansgrohe presented its new range, Hansgrohe Metropol Classic. Ross Hamilton Englisbe, General Manager of new exhibitor Hamilton Conte Paris, says, “Sleep is a wellcurated London event that unites a broad spectrum of brands... makes it easy and fun for designers to take time out of their schedule”, while Sven Ullrich, Global Head of Marketing for long-time exhibitor Dornbracht, concurs, “The show is unique for its focus on where products will ultimately be used, the hotel room. There is a lot of inspiration to be found across the show floor.” Leading lighting brands from across Europe, such as Fabbian Iluminazione and Quasar Holland, revealed their latest ranges of contemporary pieces, while design-led furniture and accessories for outdoor spaces were showcased by companies such as Encompass which debuted its [BLACK] furniture line of hanging seat pods, lounge and dining furniture made from basalt fibres and the Immersive Reality Lounge hosted by tech-pioneers, Soluis, gave visitors a chance to experience hotel design concepts in 3D using the latest digital reality platforms.

Art consultancy, Elegant Clutter won the Best Stand of the Show award for its vibrant display. The team had created a piece of artwork and set themselves the challenge of transferring it to every single surface of the mock-up lobby. The results were both stunning and welcoming as the floor and wall surfaces - and even the team’s clothing - became works of art. Judges awarded Preciosa the runner-up position for their ambitious and conceptual front-of-house installation. Giant chandeliers inspired by the earth’s elements appeared to have risen by virtue of their lightness to hang just above decorative containers. Michel Couque, Managing Director of returning exhibitor Lelievre, was delighted with the spirit of Sleep 2016. “As always Sleep delivered the right clients to us,” he says. “It had an even more international flavour this year - we’re happy to be part of the Sleep family, it is friendly and has a nice warmth.” Outside, an old Routemaster bus raised a smile – in reality Havwood’s travelling showroom, at Sleep to provide a UK preview of its two new and spectacular timber finishes. “Last year’s Sleep event was typically met with the response, ‘Wow! What will you do in 2016?’”, says Joel Butler, Event Manager for Sleep. “Well, this year’s Sleep created the best visitor experience and most inspiring content yet. Once again, we celebrate recordbreaking visitor numbers and exhibitors which have already re-booked, and once again Sleep defines itself as the only show of its kind. The question now is, ‘What will we do in 2017?!’” Sleep’s official Event Partner is the European Hotel Design Awards which culminated in a glittering ceremony on Monday, 21st November. GROHE was the Founder Sponsor for the Sleep event and host of the VIP Lounge for the eleventh consecutive year. Next year, Sleep will be held on 21st and 22nd November in London’s Business Design Centre. Register your interest for Sleep 2017 now! www.thesleepevent.com

Five Factors for Considerati While customer reviews can cover all aspects of a hotel experience, one of the most important components of a guest’s stay has always been the comfort and quality of beds and bedding so that guests can achieve a great night’s sleep. As a result of ongoing innovation in the manufacture of hotel duvets, pillows and mattress toppers, choosing the right bedding isn’t as straightforward as it once was, and there is more choice than ever. In fact it can be a minefield! It’s no longer a choice of natural or synthetic and tog – there are many factors at play when updating the ‘all important bedding’ to deliver the ultimate guest experience. Investing in guest sleep is essential for good reviews, returning guests and word of mouth recommendations which is why it’s important to make the right choice for the long term. Especially as it was reported in a Travel and Leisure* report that guests would be willing to pay more for a room with a good bed and bedding as they perceive the overall quality of the room to be higher with a more luxurious bed. Whether it’s part of a full refurbishment or converting bedrooms, a simple need for a bedding ‘refresh’ or the desire to improve guest reviews, we know how much of a challenge it can be for hoteliers and owners to balance practicality and cost but also hygiene and cleanliness with the high level of expectation from guests when it comes to bedding. The Fine Bedding Company Hospitality Division has researched the top five considerations now at play. Initial Outlay Even though many hoteliers and owners believe

that the overriding consideration is initial cost, there are many sub considerations to consider. Product selection is about making an informed decision to enable increased operational efficiencies and cost savings during the course of the product lifetime while maintaining top quality. Synthetic V Natural Natural filled bedding has always been traditionally used in the hospitality sector as its seen as more luxurious. However, with such advances in technology and how we now produce fillings, in many people’s opinion synthetic products are fast catching up, by achieving the same benefits as down with added qualities designed for modern hospitality including greater demands for practical, functional allergyfriendly and durable bedding. In addition, owners and operators need to seriously consider the costs of laundering when they’re making their choice, particularly when they’re choosing between synthetic and natural filled products. Washability Synthetic bedding is extremely popular in this industry, in part this is down to the need for hoteliers and owners to cost effectively keep bedding squeaky clean and like new for each guest. It is cheaper to wash synthetic bedding inhouse rather than professionally clean natural filled products with such regularity.

ion when Specifying Bedding

There are huge cost efficiencies to be made by choosing bedding that can be washed in a commercial machine on-site, not to mention the operational efficiencies that can be achieved by not waiting for bedding to be transported off-site and back again. Furthermore, it’s important for bedding to withstand high frequency washing that will retain their lightness and shape time after timewho wants to have to replace bedding more frequently than is needed, especially if you can wash it and it feels like new each time. Ease/speed of turnaround From an operational standpoint, by using light weight bedding it dries in a matter of hours so can be returned to the room the same day, ensuring faster room turnaround. Light weight bedding also has big cost savings when it comes to the size of housekeeping teams. They can be kept to a minimum if a single person can change beds. As a knock-on effect, by changing the bedding within a 24hour cycle, stock bedding can also be kept to a minimum.

Too hot or too cold? Whilst not always considered high priority, the tog of a duvet is ultimately the deciding factor on whether a guest is too hot or too cold. Before choosing a tog rating, hoteliers and owners must consider their location; “are you located in the warmer or cooler climes of the country?”, their clientele; “do you mainly welcome business or family guests with children?”, self-regulating heating/air con system options of the rooms; “can guests easily turn the heating down or open a window?”. All these factors will determine the warmth of the bedding required. Daniel Fido, national sales manager for The Fine Bedding Company Hospitality Division: “Ultimately, we’re all striving for guests to leave thinking ‘that overnight experience was out of this world’ or ‘that bedding is so much better than I have at home, it was so luxurious and helped me to achieve a fabulous night’s sleep.’ Better still, when guests comment on the quality and comfort of the bedding it generates a positive review that will encourage repeat custom and increased recommendations.” As suppliers continue to evolve to offer hoteliers and guest house owners innovative bedding solutions that are practical and functional like the Four Seasons 3 in 1 duvet combo, guests will continue to experience highest levels of luxury which will in turn lead to greater guest sleep experience, increased propensity to return, recommendations as well as improved room rates and revenue. www.finebeddinghotels.co.uk

The Waldorf Hilton, where class shines through Hotelier & Hospitality Design

When only the most indulgent of weekends will do, where best in London to stay than the Hilton?

20

Surrounded by the breath-taking sights Covent Garden has to offer, the shops, the shows, indulgent restaurants, luxurious Spas and the glittering lights of the big name hotels of the UK. However, just a few hundred yards from Covent Garden centre yet already away from the noise, lies a treasure of the Waldorf Hilton. In a 108 year old building, with 298 luxurious rooms, is the London Waldorf Hilton. Upon walking into the venue you are greeted by a large foyer, draped in class and met with the fantastic staff that elevate the hotel to an unrivalled level. To have such a personal service at the all too often snobbish 5 star rating is a very welcome breath of fresh air. One can feel intimidated at times in such

but Waldorf’s have a concept of speaking to each and every guest with a friendly, extremely polite and knowledgeable manner which makes you feel welcome, relaxed and confident in asking any questions you may have. With the rooms ranging from a classic single for the lone guest to an executive suite, everyone can be accommodated and all budgets suited. The rooms are designed to a very high standard, with light tones underlying the strong, bold colours and beautiful material chosen for the furnishings. Technology leads the way with choice of large screens in the bigger rooms. Over 60 channels are available on the TV’s plus a huge array of movies, to pass the night or afternoon away. All of the above is a standard trait in the higher level of hotel but there are two stand out points for me, firstly the Good Godfrey’s bar and lounge, named after the former leader of the hotels house band, the extremely talented Howard Godfrey. Serving food during the day, and an extremely comfortable place to unwind & relax come the evening, with many drinks on offer, but to my enjoyment, a vast selection of cocktails with a variety of food plates to compliment.

Secondly, the Homage Restaurant, this grand restaurant really takes your breath away just upon entrance, let alone the food! With a wide variety of food to choose from, you will have no concerns in finding something to fit your mood, and if you can’t, allow the staff to help, there knowledge is excellent & they’re very friendly and helpful. With the dimmed lights and the gorgeous scenery, the meal was the perfect way to top a brilliant stay. I would strongly suggest that before you think of leaving the Hotel that you make sure that Afternoon Tea is taken in the Homage, with the historic surroundings complete with gorgeous Chandeliers & Iconic pillars. Sandwiches, cakes and scones aplenty with the option of more to boot. Again the staff couldn’t be more helpful and engaging. It’s such a pleasure to have enjoyed the tea without having to feel too formal, being free to relax and take your time with a good conversation and great food and drink. Overall, there is simply no faults with the Waldorf in every single section they have surpassed all expectations and are setting heights for their competition. We would not hesitate in recommending them as the number one place to stay in London, let alone Hilton.

Galgorm Resort & Spa Should you find your self surrounded by the hustle and bustle of city life in Northern Ireland and need to unwind, look no further. Galgorm Resort & Spa will deliver to your every need. As we left Belfast and arrived, in front of us stood a grand white stately home surrounded by sweeping grounds bursting with huge hydrangea bushes. I felt like the Lord of the manor and I hadn’t even stepped out of the car.

Hotelier & Hospitality Design

Galgorm Resort & Spa is an old ‘gentleman’s’ estate, with the rocky, river Maine running through it. It’s a luxury resort with several restaurants, a deluxe spa and huge grounds dotted with a handful of cottages and log cabins, which also provide accommodation.

22

On arrival we where escorted to a deluxe check inn situated privately away from the public check inn to access a ‘Deluxe room’ from which the title didn’t disappoint, Designed to the highest standard with the new must have bath, complimentary mini bar, king size beds, large mirrors and flat screen TV, it can feel like a home from home, as soon as you close the door. Prompted to get changed into robes and enjoy the spa experience and the luxurious facilities. All facilities are on the waters edge and take in truly breath taking views, tranquillity at its finest.

After a relaxing experience escaping reality it was time to sample one of Galgorm Resort & Spas variety of restaurants. Fratelli, a new Italian Restaurant & Bar. Oozing rustic Italian charm with a contemporary edge. Service was excellent, the menu was even better. Food and drink that lived up to the resorts grand appearance. After a delicious meal a nightcap was in order from Gillies bar which offered a wide range of cocktails and other drinks with live music in a real homely environment.

Hotelier & Hospitality Design

There is an option for breakfast in the glorious river lounge which takes in some amazing views of the surrounding forest scenery. If you are ever in Northern Ireland I would highly recommend a stay at this high end resort, you won’t regret it.

t’s been a busy year all-round for Peppermill Interiors and things don’t look set to cool down for the family-run company in 2017.

Originally established as Peppermill Antiques over two decades ago, the company has changed its focus in recent years – moving away from antiques – and has recently undergone a rebrand. Now, the more aptly-named Peppermill Interiors is a go-to place for contemporary furniture and unique vintage pieces, supplying a huge range of products to both domestic and commercial clients all over the world.

Hotelier & Hospitality Design

Peppermill supplies furniture to a number of highprofile customers, including well-known coffee shop chains, restaurants and famous individuals, as well as independent bars and pubs, and countless domestic clients, who return to Peppermill time and time again.

24

In early 2016 the firm relocated to new premises in Staffordshire, which has provided the company with more space to showcase its ever-expanding range of products. As well as the showroom, a large on-site warehouse allows most reproduction items to be kept in stock in large quantities, this means a quick turnaround and shorter lead times for customers. In the past year alone, Peppermill has launched a complete line of industrial inspired lighting and has expanded many existing ranges, including the popular UK-manufactured ‘Sheffield’ dining collection and the ‘Chelmsford’ leather seating range. In addition to reproduction items and

quirky one-off vintage pieces, Peppermill Interiors also has a bespoke furniture making service on some of its items – recently adding a line of copper based tables, benches and stools to the mix. The company had an impressive 50sqm stand at The Bar & Pub Show in October at Olympia and is already planning to exhibit again at The Restaurant Show in October 2017. And that’s not all Peppermill has planned for the new year, several new product lines are on the horizon, as well as a new-look website, which will be launched in early 2017. Scott Humphreys, Director, said: “We have lots of exciting new product lines that our customers can look forward to seeing in the new year. We’re currently building room sets in our showroom, which will hopefully help our clients to envisage how our furniture can fit into their interior, and our new website should reflect our new image and make the whole shopping experience more user-friendly.” You can see the full collection of new, vintage and bespoke furniture across two floors at Peppermill Interiors’ large showroom in Burntwood, Staffordshire. The showroom is open to the public 6 days a week: Monday-Friday 9am-5:30pm and Saturday 10am-5pm. You can also visit www.peppermillinteriors.com to browse the full range of products.

A touch of the luxurious and modern design in the pulsating center of Lithuania

The newly renovated Holiday Inn in Vilnius hi-tech meets extreme comfort and innovative design, thanks to the modern elegance of DuPont™ Corian® In the heart of Vilnius, Lithuania’s capital, tourists and business travelers at the end of a busy day will be able to rest their limbs in an environment of total comfort and high design. Choosing a fresh look for the renovation of its guest rooms, the Holiday Inn hotel selected the refinement of DuPont™ Corian® high-tech material for the vertical and horizontal surfaces in the majority of their renovated rooms. The Holiday Inn of Vilnius is part of the famous Intercontinental Hotel Groups chain, which has an extensive network of hotels worldwide, suitable for every travel purpose and target, from families to business travelers. The historic city of Vilnius attracts tourists both for its architectural beauty and for its business centre: each year, in fact, conferences, conventions, seminars and incentive travel target what has emerged as a modern, “can’t miss” European destination. For this reason, Holiday Inn - located in the business district of the capital, ten minutes away from the historic city center - wanted to offer its guests a memorable stay. Project management for the renovation of 134 top class rooms was entrusted to Fulvio Cancelli from the company Spekas Ir Ko. The interior design concept was conceived by Arches architectural studio and the fabrication of DuPont™ Corian® material was carried out by the company Gforma.

Based on a connected floating furniture system, DuPont™ Corian® is used for most of the interior design furnishing solutions in the guest rooms – from the bed base and backboard to the table and the round partition/shower; project by Arches; photo courtesy of Holiday Inn, all rights reserved.

Hotelier & Hospitality Design

The project’s central focus clearly pivots on a creative use of light combined with the translucency of DuPont™ Corian® techno-surface, as well as on a design that appears to seamlessly extend from the living into the bath areas in each room. Fulvio Cancelli affirms, “The idea started about a year ago. We wanted a design that would distinguish the hotel in the minds of our guests, and that would ideally tie together the various decor elements from the living and bath areas into a continuous flow.” For this purpose, the architects designed rooms where the purity of DuPont™ Corian® techno-surface and its feeling of warmth are the common thread between the bedroom, the bathroom and the living room furniture. The new bedrooms are in fact equipped with a bed backboard made in DuPont™ Corian®, which frames twin beds that seem suspended. They have been installed with a sliding mechanism so that the beds can be joined easily for a double bed, or remain separate for twin beds. The base of the bed, also in DuPont™ Corian®, is joined seamlessly to the desk beside the bed.

Mr. Geert Snaet, Holiday Inn general manager, comments about the choice to improve a hotel already renowned for its hospitality, “Our idea was to create a room that stands out and we knew we had to take some risk. Most Holiday Inn clients do not remember their room, but the renovated rooms are daring and our clients are giving us an overwhelming positive response. The use of DuPont™ Corian® has helped us to create a sexy business executive room that plays with light.”

The bathroom is characterized by an eye-catching shower that acts as a partition between the bedroom and bathroom areas, and is made with two different thicknesses of DuPont™ Corian®, in the ultratranslucent Glacier Ice color. When the shower LED light is on, the light filters through the thinner band accents, and when showering, a suggestive illumination diffuses into the neighboring room that includes the shadowed silhouette of the person within. Also the vanity and shelves are made with Corian®, giving a very harmonic feel to the overall design concept and ensuring a top quality furnishing solution based on the material’s versatility, reliability and level of hygiene provided. In addition to these innovative and compellingly unique characteristics, other distinguishing points of the project have been the sheer amount of DuPont™ Corian® used and the relatively brief time taken to complete the design, both records. Jurgis Garmus, one of the owners of Gforma UAB, says, “Holiday Inn represents one of our most successful projects, but also one of our most challenging because of short deadlines and the immense quantity of DuPont™ Corian® used. An interesting technical feature of the fabrication is that two separate thicknesses of DuPont™ Corian® were used (6 and 12 mm) for the construction of the shower columns.” The hotel never closed, so the work schedules were intensive and had to be completed in short time frames, about 6 weeks, to ensure hotel guest comfort and uninterrupted operations.

Architect Edgaras Neniskis, one of the owners at Arches architectural studio explains about the design concept, “When we were commissioned to carry out the refurbishment of the Holiday Inn hotel in Vilnius, we aimed to create interiors that should be comfortable but rational because it is particularly a business hotel. Each room is organized as a single space in which the private environment for the bathroom is set by translucent partitions. The design is based on a contemporary, modern look and a connected floating furniture system made from an apparently single piece of DuPont™ Corian®. Thanks to the extreme versatility of this material, we could use it to create the bathroom furnishings, unifying them to the table in the room and the bed.” “We applied the same concept of a unified furniture system made with DuPont™ Corian® high tech material also in the living room area, creating sculptural yet functional furnishings and using the translucency of the material that allowed elegant effects when illuminated. We appreciated Corian® because it is a very flexible material that perfectly suited our philosophy for this project,” concluded Edgaras Neniskis.

The many benefits of DuPont™ Corian®, of particular value to the hospitality sector, have led to the use of this high-tech material for years by architects and designers around the world; interior renovations grand and small are improved by the long-lasting functional design solutions available with DuPont™ Corian®. It is easy to clean, ensuring the highest levels of hygiene to guests and reduced cleaning times for hotel staff. Its ultra-versatility enables the creation of personalized shapes for unique creative interior designs that are beautiful and pleasantly warm to the touch for an unforgettable sensorial experience.

Rosewood Little Dix Bay renovation update

Legendary Caribbean resort is undergoing an 18-month closure and extensive refurbishment, set to reopen December 2017

Seven months in and there have been substantial developments, with the resort set to reopen December 2017, with a confirmed date to be announced Q1, 2017. The above renderings show the new open-air arrival experience, re-built Beach Grill and one of the new Two Bedroom suites. The pyramid shape design of the lounge will complement the existing Pavilion restaurant and will serve as a gathering area for arriving and departing guests. The new Beach Grill will offer expanded seating to enjoy the stunning views of Little Dix Bay and will be open for lunch and dinner. The design of these new buildings pays homage to Laurance S. Rockefeller’s vision of a luxury retreat at one with nature. The design team currently on site have also begun work on both the Sugar Mill and the Pavilion restaurants. The structures of both these iconic buildings remain intact, however the interiors have been completely stripped out, with exciting new designs and restaurant concepts taking shape. On the accommodation side, the renovation will reduce the overall number of rooms at the resort from 95 to 79, to include two Beach Houses and new Two Bedroom Suites with direct beach access. On the western side of the resort there will be seven new One Bedroom Suites with plunge pools. This area of the resort is set slightly back from the beach and with the addition of new

terraces with individual plunge pools, these suites will offer a closer connection to the water with beautiful views of Little Dix Bay. New York City-based Meyers Davis Studio, Inc. are leading the renovations and are overseeing the overall design concept for the refreshed Rosewood Little Dix Bay. Liran Wizman, Founder of Europe Hotels Private Collection, wins top hospitality awards for W Amsterdam EHPC-owned W Amsterdam awarded for Best Design Hotel and Mr. Porter for Best Restaurant Design from prestigious Entrée magazine Entrée Hospitality and Style Awards – image credit to Samuel van Leeuwen December 2016: Recognised for his key role in pioneering designled hospitality enterprises, Europe Hotels Private Collection's owner and founder Liran Wizman recently won two prestigious awards for his W Amsterdam and Mr. Porter restaurant from leading Dutch hospitality magazine Entrée magazine. These awards are the culmination of a five-year journey in which Mr. Wizman, through his EHPC brand and F&B partner Yossi Eliyahoo, The Entourage Group, played a key role in the transformation of Amsterdam into a luxury travel destination with an international food scene.

Hotelier & Hospitality Design

"We are extremely honoured to be recognised by the Entrée Hospitality and Style Award with these two awards. These further validate our brand's willingness to push the boundaries of luxury hospitality and ensure an all-immersive lifestyle experience that melds service and culinary excellence with a unique design element," stated Wizman.

32

Mr. Wizman's extensive background in hotel management and his ownership of over 60 European hotels has led him to the creation of two new design-led brands: the SIR Hotels and the Max Brown Hotels. The luxury lifestyle SIR brand draws its inspiration from a local, fictional personality, establishing an authentic, individual voice that is translated into the Hotel's design, service and amenities. The urban "Poshtel" brand Max Brown Hotels melds an affordable boutique concept with urban, contemporary lifestyle. 2016 was the group’s strongest year to date with the completion of the W

Amsterdam project in collaboration with Starwood, the opening of the SIR Savigny in Berlin, the second SIR to open after the Amsterdam landmark SIR Albert Hotel opened in 2013, and two Max Brown hotels in Dusseldorf and Berlin. 2017 continues this trend with three new SIR hotel openings planned for the first six months of the year: SIR Nikolai in Hamburg, the SIR Adam in Amsterdam and the SIR Joan in Ibiza. The W Amsterdam project and its restaurant Mr. Porter, designed by Baranowitz + Kronenberg, the award winning architects, started with the purchase of two iconic central Amsterdam buildings: the former Telephone Exchange and the Kas Bank building on Dam Square. For this project, Mr. Wizman's longterm collaborators Baranowitz + Kronenberg developed a unique "connect and exchange" design concept. A visual reflection of a dialogue between the past and the present, the Hotel's design is mindful of the properties' heritage, yet projected towards the contemporary, edgy essence of the city. W Amsterdam is a city within a city where both locals and guests can experience Amsterdam at its best. Paying indeed homage to the

city, amenities include art-fashiondesign concept store X Bank, which celebrates local Dutch talent, a rooftop WET DECK boasting views of central Amsterdam, the highend yet casual burger bar offering all-day haute fast food called The BUTCHER and soon the night club Mad FOX. The most recent addition to W Amsterdam's lifestyle amenities, located in a former bank vault, is the AWAY Spa. An innovative, luxurious interpretation of a traditional spa, the AWAY Spa provides guests with a sanctuary of refined tranquility amid the bustling city center. Characterised by a dimmed lighting scene and an overall black and gold colour theme, this was designed using materials like rocky basalt stone, brass and oak wood. These are evocative of the feeling generated by the former use of the space – a mysterious, alluring vault where people used to conceal and cherish their precious valuables. Also re-designed as part of the W Amsterdam's recently added lifestyle amenities is award-winner Mr. Porter restaurant, a modern sophisticated steakhouse, located in the Exchange building, blending private intimate settings with panoramic city views.

a mentality for instant satisfaction and quick turnaround of all items. That formula may work for fashion, but not for corporate wear, as customers demand good quality uniforms that last. The only way to achieve a quality product is by using fabrics that are technically sound and assembled using expert manufacturing techniques.”

34

Cavell Thomas started Inline London 23 years ago from her flat in Kensington in London, producing quality uniforms specifically tailored to the Health and Beauty market. She is now Creative Director of Inline London and remembers one of her first clients being The Spa at Gleneagles, who identified the need for a quality uniform not found in the market in 1993. Gleneagles remains a client to this day and most business is by word of mouth, which is testament to the quality and service offered by Inline London. “We are proud of what we have achieved over the years in terms of building the Inline brand. It is synonymous with quality and style. Clients know that the product will last and are prepared to pay a small premium for longevity over throw-away fashion. As a population, we have unfortunately developed

The company invests a great deal of time and effort sourcing fabrics with technically advanced properties such as breathability and stretch for comfort and durability. The styles are modern, flattering and above all, fit for purpose. Three years ago, Cavell was commissioned to design the Dormy House Spa uniforms followed by the Front of House and F+B uniforms. The project was so successful that Inline London is now the go-to brand for the boutique hotel market. “This is a niche market where we have been able to add value. Most uniform companies are not interested in smaller production runs and offering a personalised service, as it requires a great deal of time and effort,” explains Cavell Thomas. “We are very much a familyrun business and often find that boutique hotels are family-run too. We share a passion for quirky design solutions and working with like-minded individuals to create something special for the staff, is truly inspiring.”

Inline London has also found receptive markets in Europe, one of their clients being the Thanos Hotel Group in Cyprus. Inline has supplied their uniforms for over three years and finding fabrics and a formula to deal with the intense heat was initially a challenge, which they solved using a linen-look performance fabric. “I recently visited Cyprus to check on the hotels” explains Cavell “and the uniforms look amazing. They have lasted brilliantly, the colours do not fade, they fit well and look professional. Thanos allowed us to use brighter colours for the project, which paid off, as the staff look outstanding.” Inline London is set up with an extensive library of designs, fabrics and unusual trims. Cavell is determined to venture further into the F+B and Bistro markets, as she feels there is huge scope for improvement and individuality. She passionately believes that staff are a walking advert for any company. “If they look good and feel great, they automatically promote the brand in a positive light. A unique uniform is a simple and stylish way in which a business can gain a competitive edge.” Inline London operates a mail order service for their spa uniforms. All other uniforms are done by appointment only. Please call 01483 514820 for a free consultation.

The Coravin Wine System is the only tool in the world that lets you pour wine without ever removing the cork using Coravin’s proprietary technology. Now wine enthusiasts can expand their palates by exploring, comparing and contrasting regions, varietals, producers, styles and vintages without exposing entire bottles to oxidation. Restaurants and wine bars can use the Coravin System to expand their wine programs by offering better wines by the glass, without the risk of oxidization if a bottle is not sold that night, while wineries and wine stores can offer customers a taste of fine wines before they buy.

The greatest benefit, however, is flavour. Synergy Grills get hotter than average chargrills. Heat ‘atomises’ the natural fats that are released during cooking which are misted back into food making it incredibly succulent.

SHAPING THE FUTUR Change creates opportunities

There are no recognized research methods that could predict the future adequately. Trend research is therefore a procedure that is not science-based, but practiceoriented and focused on decision makers. This report is based on the relevant literature and scientific contributions in «trend and future» studies, and it combines these findings with the results of the qualitative analysis of interviews and more than twenty workshops. Forty hospitality industry leaders from fifteen countries have given us their input and shared their views of the future. We have compiled a list of mega-trends, subtrends and forces that will shape the future and with it, the changes to come. The main result from this process was the «P-BTE model»; it represents the four pillars of the hospitality environment: people, business, technology, and the environment. These four dimensions and their mid- to long-term impact were studied in detail. Lausanne Report describes the future environment of the hospitality industry holistically and explains the interaction between the various global drivers of change that are affecting the evolution of hospitality. Some of these trends and relationships will lead to profound changes. The industry has no choice but to embrace them. We have selected the six most important developments that will change the hotel industry for good. #1 SHIFT OF MARKET POWER Consolidation vs fragmentation Will globalization fragment or consolidate the hospitality industry? Fragmentation and consolidation are the two opposite directions in which a market structure may evolve. However, both dynamics can co-exist and create risks and opportunities for the hospitality industry at the same time. The hospitality market in the USA is already consolidated and durably so. In Asia, the hospitality industry could continue to consolidate and create regional hotel chains and ownership. Europe is likely to remain fragmented although consolidation is gaining speed.

#2 VULNERABILITY ON THE RISE Fragility vs resilience Is hospitality becoming more fragile or more resilient? Threats resulting from climate change, safety and security issues, wild card events (e.g. SARS, Zika, terrorist attacks, etc.) as well as unprecedented migration streams are today’s and tomorrow’s game changers. The main challenges for the hospitality industry are the lack of predictability and the magnitude of such events – and how fast the industry can react and adapt to crises. The hotel industry’s ability to deal with this new type of fragility will be key to its success. #3 IN SEARCH OF A SENSE OF BELONGING Communities vs individuals Will communities or individuals determine the future? Concepts such as crowdsourcing, crowdfunding, crowd creation, peer-to-peer and sharing hospitality have their origins in the relationship between individuals and/or communities. Human beings need to believe and to belong – and the hospitality business has to be able to meet and integrate the demands of individuals, communities and networks. #4 THE EMOTIONAL EXPERIENCE High tech vs high touch Does the guest of the future want high tech or high touch? New armadas of physical and virtual robots will be deployed to meet customers’ needs. And avatars will negotiate with avatars to ensure everyone’s demands are met, and negotiate the best deals. However, the answer to high tech is high touch – that means emotions. The hospitality industry has to provide these emotions to attract and retain guests. #5 SMART HOTELS DEPEND ON SMART DESTINATIONS Autonomous vs connected Will smart hotels be autonomous or connected? By 2030, many cities will be embedded in so-called smart city clusters. This will pave the way for mutual investments, buffer energy and water supplies through decentralized resources, and provide a clusterwide connected and adaptive safety and security

Business Matters

RE OF HOSPITALITY #6 THE SCOPE OF KNOWLEDGE Empathy vs efficiency Must future talents be empathic or efficient? Future hospitality managers will be stage directors who create memorable experiences and magic moments for their guests. At the same time, they must meet efficiency and profitability requirements and therefore find the best processes, technologies and methods to run their business. Last but not least, they must empower their staff and motivate all stakeholders.

Conclusions. Hands, Head and Heart From an array of possible future scenarios we have chosen the most striking ones to build our six theses. Other industries all over the world have experienced a long process of change in the global market: it is now the hospitality industry’s turn to face this trend and recognize the powerful potential of mergers and acquisitions. China, the new mega investor, contributes towards this consolidation by bulk buying whatever hospitality offers for sale. However, increasing urbanization and the tourism sector’s strong growth give rise to optimism. The hospitality business will undoubtedly continue to thrive, despite a worldwide increase in political instability and uncertainty. What is more, the «silver» segment (baby boomers) with its purchasing power and time to travel will support hospitality and drive it to explore new paths. Digitization is already affecting the hospitality industry as a whole, an industry usually known to be adverse to change. Everybody speaks about the sharing economy and about robots, virtual reality and other amazing technologies — trends and developments driven by the millennials. The new technologies present considerable challenges to classic hospitality. After a long battle against «evil OTAs», hotel chains have decided to pursue a different approach and fight the «enemy» on their own territory. More is being invested in the pre-stay of the customer journey; hospitality strategists integrate and create their own OTAs, and

they exploit new opportunities by collaborating with the peer-to-peer segment. The question that remains to be answered, however, is what the post-digital economy will look like in an era where digitization has become an integral part of all aspects of life. In hospitality, automation is on its first wave, based on the availability of information, cyber-physical systems and data analytics. Other more advanced industries are already on their third wave of automation. Technology, processes, business models and knowledge will have an unknown impact on our lives, on guests and on service providers. The automation of industrial production processes could destroy millions of jobs within the next years. Is this also true for hospitality? The arrival of new types of robots, soon available to small and medium-sized enterprises, ensues full and widespread automation. According to the philosopher Bernard Stiegler, «we have to rethink the economy and pass a contributory income». He declares: «Employment is dead, long live work!» The hospitality sector is also a pioneer in devising certain work models: It was hospitality that invented part-time work models, as well as management contracts and franchise business models. Progress in science and technology manifests itself in different ways in different economies and different political frameworks. Driven by the revolution in knowledge and education, the nature of work will change radically — but only in economies that choose to in-vest in education, technology, and related infrastructures. Certain types of jobs will be assumed by intelligent robots. Others will be created in areas where the demand for services is growing exponentially, while entry barriers continue to fall. In many hospitality segments, robots will be poor labor substitutes. The six theses of this report have illustrated our P-BTE model, which represents the four dimensions of hospitality: people, business, technology, and the environment. It has be-come utterly clear that these are the main pillars of the future. The «P-factor» presents the core of the profit chain in hospitality, it links employee satisfaction to guest loyalty and profitability. We will continue to be «ladies and gentlemen serving ladies and gentlemen». The more important intelligent machines will become (robots, artificial intelligence, and so on), the more important the human factor will be. Hospitality will continue to be about guests and hosts. It will remain a guest-centered industry — with its eye safely on the three Hs: «hands, head and heart».

infrastructure. Both infrastructure and management of the environment can be centralized, and new mobility concepts can be introduced and deployed.

Air Aroma

When it comes to our sense of smell, brands are becoming increasingly aware of the importance of scent marketing and its potential for brand loyalty. Because our sense of smell is directly linked to the portion of the brain that processes emotion and memories, hoteliers across the world are tapping into this connection to create unique olfactive experiences that create lasting impressions for their guests. Founded almost two decades ago, Air Aroma is the world’s first scent branding agency, with offices in New York, Melbourne, Tokyo, Amsterdam and Dubai. Air Aroma specializes in designing custom bespoke signature scents for brands, with prestigious clients like Sofitel, Langham Hotels, and Fairmont. Given that our sense of smell is the most powerful of our five senses, using a unique ambient fragrance has the power to make a positive impact with guests, creating a more memorable experience. Scent recall empowers an individual to relive their pleasant stay in an instant, vivid expression. To make the lasting impression, fragrance designs are carefully crafted in relation to a brand’s values, aesthetics and target audience. “Each signature scent Air Aroma designs is unique and identifiable. ESP Energy There has been extensive research in to the way consumers book holidays and travel activities, the latest results have shown a growing awareness for more ecofriendly hotels and leisure facilities. The Carbon Trust is helping TripAdvisor to extend their Green Leaders programme, which highlights particular hotels that actively participate in environmentally friendly practices. Applying environmentally-friendly, energy efficient procedures, means lighting and heating expenses can often be lowered by more than 50%, whilst still enhancing the overall experience of the stay. By installing energy efficient measures such as solar panels to reduce electricity costs or reducing both heating and electricity costs by connecting to a combined heat and power unit, businesses can save on energy bills, earn an additional income from Government incentives and raise their profile as eco buildings in the ‘Green Leaders’ programme.

Such renewable technology projects would be particularly beneficial in combination with hotel swimming pools and spas, as these facilities demand large quantities of energy. With Hotels being refurbished every 7-10 years, there is an opportunity to maximise this opportunity and implement these changes with minimum disruption. ESP Energy are MCS accredited, ensuring that your project will be implemented to the highest standards. With experience of over three hundred commercial installations including the following technologies - heat pumps, solar panels, underfloor heating, biomass boilers, combined heat & power (CHP) and district heating schemes.

ESP Energy have recently completed a 2.2MW district heating scheme in the picturesque tourist attraction “Portmeirion” in North Wales. A total of 27 properties have been linked together on to one district heating scheme with over 3.5km of underground pipework. This project tested the skill and ingenuity of ESP Energy, due to the 70m height difference from the castle at the top, to the hotel at the bottom, areas of pure rock to dig through and delicate architecture. This project was carried out in the winter months, between November and March, when there were fewer visitors to the village, although the site was open to the public the entire time. All work had to be scheduled around the paying guests and their requirements. JUMBY BAY

A ROSEWOOD RESORT TO DEBUT NEW ESTATE HOUSE BAR AND RESTAURANT FOLLOWING £4 MILLION RESTORATION

Iconic bar and restaurant to reopen in December 2016 with new design, menu concept, and island-inspired diversions

Hotelier & Hospitality Design

Jumby Bay, A Rosewood Resort, the private island resort located just off the coast of Antigua, recently announced that its signature bar and restaurant, The Estate House, will reopen in December 2016 following a four-millionpound restoration. The circa 1830 plantation house, once the centerpiece of the island’s sugar plantation and the oldest building on Jumby Bay Island, will be returned to its former grandeur with a design scheme and culinary concept inspired by the home’s rich history and island traditions. The new Estate House will include a main restaurant and bar with three new private dining rooms each featuring a different island-inspired menu, as well as a wine room.

60

Representing a modern interpretation of the Colonial spirit, the restaurant’s menu combines classic fare with modern island flavours, drawing on the culinary traditions of the West Indies. Among the menu’s many highlights: Monkfish and black trumpet casserole with crispy jasmine rice pancake; Spiny lobster with Armagnac flambe, tomato, saffron pearl, and sear urchin; and Black sea bass with potato confit. For dessert, sweet indulgences include Rum Baba with berry compote and preserved citrus and Baked Alaska with rum flambe and Antiguan black pineapple. The Estate House’s three private dining rooms will also feature menus inspired by different regions of the world and the West Indies. The Blue Room will offer a variety of seafood, the Map Room will feature dishes from the Antilles region, and the Tent Room will feature dishes with Moroccan and North African flavors, drawing on the history of Spaniard colonists who had been under Moroccan influence before traveling to the Caribbean. The bar will boast an extensive rum collection as well as creative cocktails inspired by Antigua’s history including the Christopher Columbus, a powerful libation of English Harbour 5, Captain Morgan and Cointreau with lime, pineapple and pomegranate; the Carlisle Collins, a spicy blend of Johnnie Walker Black Label shaken with fresh lemon and home-made molasses nectar; and Colonial Classic, a refined concoction of Tanqueray 10 and Cavalier White rum stirred with St. Germaine elderflower liqueur and grapefruit oils. In the evening, guests will enjoy poker tournaments and sunset champagne cocktail hours, as well as special rum tastings. On Saturdays, The Estate House will invite guests to dress in their sportiest whites for games of lawn bowling while

enjoying Pimm’s Cup cocktails. The Sunday Rum Brunch will be another new signature of The Estate House, featuring rum-infused takes on classic brunch dishes, to include rum-raisin sticky buns with rum-infused honey and Antiguan Rum cappuccinos. “The restored Estate House will represent the best of the old and new,” said Andrew Hedley, Managing Director of Jumby Bay and Regional Vice President of Rosewood Hotels & Resorts. “Already renowned as one of Antigua’s most sought after dining destinations, the reimagined Estate House will emerge as the Caribbean’s ultimate social club for gourmet fare, sophisticated mixology, and mingling from day to night.” Richly combining the impressions of a traditional colonial home with a contemporary perspective, The Estate House’s redesign, led by acclaimed designer Dennis Irvine, represents a modern interpretation of the Colonial spirit. Retaining historical elements of the original structure, the redesign will pay homage to The Estate House’s roots in empire-era glamour with subtle nods to the island’s history and traditions throughout. A two-story, vaulted ceiling will provide a dramatic entryway to the bar, while an airy courtyard, connecting the main restaurant, three private dining rooms, and the Wine Room, will serve as an idyllic outdoor lounge space to savor pre or post dinner drinks, amongst tropical plants and a fountain made by a local artist. Curated local artwork depicting local Antiguan life, flora, and fauna, and vintage maps will adorn the walls, while sophisticated tableware and accessories in bespoke Ginori china, silver and crystal will offer a refined dining experience. Inspired by the island’s verdant landscape, a colour palette of rich greens will be employed, and handcrafted furnishings in ebony, teak, rattan, and wicker will emulate the style of past travellers and explorers. Sweeping terraces will offer unparalleled views of the island landscape. In keeping with The Estate House’s new look, restaurant and bar staff will wear fashionable uniforms designed by acclaimed designer Emilia Wickstead. The design of The Estate House’s three private dining rooms – The Map Room, The Tent Room, and the Blue Room will embody different facets of the island’s character. The Map Room will personify wanderlust and discovery through carefully curated objects and antique maps from the golden age of exploration. The Blue Room will feature hand painted trompe l’oeil island scenes and rich blues inspired by the twilight sky. Draped fabric ceiling and walls in the Tent Room create a romantic Empire Era dining experience. The Estate House will be open from 6:30 PM to 10:00 PM Monday through Saturday and on Sundays for brunch and private dining. For more information or reservations please contact Jumby Bay, A Rosewood Resort at 268-4626000, or visit www.rosewoodhotels.com

OVENTION OVEN IS A WINNER FOR ASPERS CASINO

Aspers Casino is open 24 hours a day and closes only for a short period on Christmas Day. Its menu offer includes a variety of fast food, such as pizzas, burgers, chicken wings, hot dogs, ribs and cooked breakfasts, which are served in the casino’s restaurant and to players at gaming tables and slot machines. Speed of service and cooked food quality are the driving factors in the Aspers operation and it was these criteria that influenced the specification of the Ovention ovens and the heated holding units. To meet the high levels of demand for pizzas during peak periods

of service, they are cooked in advance, rather than to order. The Ovention ovens provide the capacity to cook two pizzas in less than five minutes. Once cooked, the pizzas are transferred to cardboard boxes and sliced, before being placed in the heated holding units. The castor mounted holding units are then wheeled to satellite kitchens on the gambling floor and the pizzas are served to order, reducing the amount of time spent by valets collecting food from the central kitchen and delivering it to the tables. Aspers Casino has seen a 14% increase in pizza sales since the introduction of the Ovention ovens and the heated holding units. The Ovention oven uses precision impingement technology, delivering over twice the volume of hot air and better air concentration than conventional conveyor ovens.

Food is cooked in a closed cavity, minimising the escape of hot air, for reduced energy consumption. Multiple catalysts break down grease into moist hot air, which is used in the cooking process, for improved quality and healthier product. The catalysts and the fact that the chamber is only open whilst food is loaded or unloaded eliminate the need for costly kitchen ventilation hood systems. Aspers Casino’s Head of Hospitality, Paul Taylor, reported that the Ovention oven delivers consistently high standards of cooked pizza with a crisp base. He added that the accurate temperature control and humidity system of the heated cabinets keep the pizzas at optimum freshness and product quality for up to four hours.

Paul Taylor also cited simplicity of use as a significant advantage: “Cooking time and temperature are preprogrammed and food is automatically loaded into the cooking chamber with a tap of the user-friendly touchpad. The Ovention ovens have helped us improve productivity and deliver consistently high standards of cooked food quality. Operating around the clock means that there is potential for a large number of kitchen staff to use the ovens and the fact that they are so easy to operate simplifies training and maximises kitchen efficiency.” Court Catering Equipment Ltd’s Managing Director, Nick Howe, added: “Our brief was to specify equipment which would speed up service and improve the quality of the pizza offer. We looked at various options before coming to the conclusion that the Ovention ovens and FWE heated holding units were the best solution for this specific application. The Gamble team went the extra mile in helping us with this project, including comprehensive product demonstrations and installing the equipment at Aspers Casino for a trial period.”

Hotelier & Hospitality Design

Gamble Foodservice Solutions has supplied two Ovention Matchbox 1313 ovens and five FWE TS1663-36DL heated holding cabinets to Aspers Casino in east London. Located in the Westfield retail, leisure and entertainment complex in Stratford City, Aspers is the UK’s largest casino. The appliances were specified by kitchen design and installation specialist, Court Catering Equipment Ltd, as part of an upgrade of the site’s foodservice facilities.

CDG TRANSFORMS FARMER COPLEYS’ MOO CAFÉ INTO A BEAST OF A RESTAURANT

Having outgrown its existing café space, Robert and Heather Copley commissioned CDG to design and build an exciting, new destination dining experience. The project involved completely demolishing an old tractor barn to create the striking 157-cover Moo Café complete with theatre kitchen, bakery and spacious meeting room for local business hire or private dining. The challenge to CDG was to create an informal and inviting casual dining venue by day (Moo café), which during the evening, would seamlessly transform into ‘Beast’ - an elegant bistro-style restaurant. Taking inspiration from the natural environment and the barn’s original structure, the CDG team immersed themselves in the farm’s heritage and agricultural backdrop to design an interior with the perfect blend of textures and finishes. Natural stone and granite are combined with real logs and milled copper to create a stunning counter, perfect for both daytime and evening service, whilst reclaimed timbers add warmth and character to bespoke dressers, ‘meet & greet’ and waiter stations. A 2.75m fig tree is an eyecatching centrepiece bringing outdoor elements into the heart of the restaurant. Creating just the right ambience for both Moo and Beast was critical, so quirky wall lights and pendants were custom-made from cow hides, cattle feeders and bowler hats to give the perfect feel to the room and showcase the farm’s personality. To complete the transformation from day into evening, CDG cleverly used old barn doors, which slide on rails to unveil the Moo or Beast branding, creating a dramatic feature wall behind the intimate, curved booth seating area. The functionality of the counter was key to making the operation successful throughout the day and so maximum flexibility was incorporated into the design. During the day, customers are

tempted by an array of mouth-watering homemade cakes and pastries, whilst evening diners can experience live, theatre style cooking – watching the chef at work, over a state-of-the-art Robata flame grill, which is embedded into the counter. The striking copper finish within the counter is replicated in the extraction canopy overhead, linking the design from front to back-of-house. The ‘wow’ factor continues through to the private dining area, where an illuminated, glazed wine and Champagne display wall forms the corridor through to the space. Rob Copley, Owner, Farmer Copleys commented: “This is an exciting new venture for us. There has been a ridiculous amount of thought and planning gone into this project across both front and back-of-house – the design was intrinsic to this. We appointed CDG because of their cutting-edge, on trend designs, which really brought our brief and vision for Moo and Beast to life. He continued: “The feedback from customers since opening has been fantastic and our chef is delighted with how operationally efficient the design and equipment is across back-of-house. Nothing is complicated here at Farmer Copleys - it is simple, home cooked, locally sourced foods prepared fresh. The beauty for us is that this has been brought to life in CDG’s designs. They have really given the restaurant the wow factor, with lots of beautiful finishing touches. We especially like that they answered the brief of bringing the outdoors inside - making it feel like it has always been here. They have clearly spent a great deal of time researching and immersing themselves in our offering, which meant that they have retained many original features and materials as a nod to our agricultural heritage.” Mike Sinclair, Design Director, CDG commented: “This was a fantastic project for the business. We created a unique, versatile scheme that reflects Farmer Copleys agricultural heritage and transforms effortlessly from day to evening with two very different brands and identities.” For further information visit www.cateringdesign.co.uk or call: 01327 314 860

Get the fragrance VIBE Vectair Systems launches VIBE® and VIBE® PLUS large space fragrance systems using patented new “vibrating mesh” technology Vectair Systems, a leading UK aircare manufacturer for the hotel and leisure sectors, today announced the official launch of VIBE® and VIBE® PLUS, two powerful and intuitive new fragrance systems for large spaces which are set to transform the way venues use scent to appeal to customers. VIBE® and VIBE® PLUS are stylish nonaerosol fragrance systems which are both fully programmable and environmentally-friendly. Ideal for hotel lobby areas, corridors, meeting rooms, reception rooms, casinos, stadiums, spa’s and more, the patented “vibrating mesh technology” behind both systems enables superior fragrance strength without environmentally-unfriendly VOCs, solvents or propellants. Smaller fragrance particles travel further and linger longer, and in fact, over a period of four hours, fragrance gets stronger until it reaches its maximum potential, as opposed to starting strong and gradually depleting. Venues can choose from a “Vibrary” of up to 30 premium fragrances, all expertly formulated to appeal to the current trends in the world of fragrance. The Vibrary includes luxury scents such as sweet pea and wisteria, bergamot and sandalwood and sea salt and bamboo. For larger venues, brands with more than one location, or brands that are just looking to add that personal touch, Vectair Systems can also create a completely bespoke fragrance, allowing the opportunity to connect with customers on another level. Examples of bespoke fragrances that Vectair has created in the past include freshly baked bread, hot chocolate, popcorn, leather and bubblegum. Just one VIBE® can cover an area of up to 500m3 and the larger VIBE® PLUS can cover up to 3,400m3 – that’s almost the size of a football pitch. The stylish design incorporating white, black and chrome means VIBE® and VIBE® PLUS can be discreetly positioned on a wall in public areas, or alternatively, VIBE® PLUS can be run through an air conditioning system. Programmable features mean that users can specify factors like how many days they want the dispenser to operate, and choose a start and end time per day. An effective fragrance system can provide a welcoming and fresh smelling environment which encourages guests to a) return and b) write positive reviews. There has even been research to suggest people spend more when surrounded by an appealing fragrance; a study by Lindstrom in

2005 found that 84% of people were more likely to buy shoes, or liked them more, when in a scented room. In the same study, many of the subjects even reported they would pay 10–15% more for the product. Vectair Systems has been in the hygiene industry for more than 25 years and alongside aircare, offers a ‘one-stop-shop’ for solutions including washroom, skincare and surface care, infant care and feminine hygiene. Paul Wonnacott, Managing Director and President, Vectair Systems says: “It’s all about creating memories & moments that stay in the mind for more than a few hours. Venues are increasingly looking at scent in order to engage and attract new audiences. This is because scent can be an incredibly powerful way of inducing various memories. Customers linger longer and are generally happier when exposed to certain scents. We are excited at the possibilities VIBE® and VIBE® can bring to brands around the globe.”

How does VIBE® and VIBE® PLUS work? Traditionally, non-aerosol aircare systems use a wick to dispense liquid fragrance from a bottle. This can be affected by factors like dust or humidity and result in poor fragrance performance. Instead, VIBE® and VIBE PLUS utilise patented vibrating mesh technology to deliver pure fragrance oil in reliable and precise quantities. A mesh or membrane with thousands of laser drilled holes vibrates at the top of the liquid reservoir and produces a mist of very fine droplets. These fragrance droplets stay in the air longer and travel further.

GOOD GAS - GOOD BUSINESS Dispense gas can be hazardous if used in the wrong way. Faulty or leaking cylinders can release excessive quantities of gas. In an enclosed space even a small increase in carbon dioxide (CO2) levels can lead to impaired judgement, but larger leaks of CO2 and/or Nitrogen (N2) may reduce the amount of oxygen available, which can be fatal. Always carry out a risk assessment to determine if your cellar is a confined space. Ensure safe systems are in place to protect all personnel who enter the cellar. DO NOT enter the cellar area if the alarm is sounding. DO NOT immediately enter a cellar to attempt to rescue someone who has collapsed. Put into action your emergency plan. DO NOT tamper with the alarm(s).

BE SAFE WITH DISPENSE GAS

DO install gas detection, where required following your risk assessment, including all areas where gas cylinders are stored and used. DO train staff in the actions to be undertaken if the alarm activates. Do you know what you should do if the alarm sounds? DO have an emergency plan to rescue personnel who are overcome following a gas release and collapse in the cellar area.

Ensure all your gas equipment is correctly installed and regularly maintained. Know what gases you have and how to work with them safely. Understand the correct way to changeover a gas cylinder. DO NOT use damaged or faulty equipment. Replace or repair before further use. DO NOT try to repair leaks. Carry out maintenance on gas equipment only if trained to do so. DO NOT enter the cellar area without telling another member of staff.

CARBON DIOXIDE BE AWARE

DO tell somebody that you’re going into the cellar area. DO get trained in the correct cylinder changeover procedure. DO leak test all connections with an approved leak test solution when you change drink dispense cylinders. DO inspect connections for damage, undertake regular maintenance on all drink dispense systems and regularly change the ‘O’ ring seals. For more advice – BCGA GN 30, The safe use of gases in the beverage dispense industry.

Rogue traders are stealing cylinders and filling them with non-food grade gases. These cylinders are cheaper than those supplied by reputable suppliers. The cylinders are not correctly checked and tested and could explode if they’re corroded inside. DO NOT put your profits at risk by buying gas from non-reputable suppliers. DO NOT buy drinks dispense cylinders that are incorrectly labelled. DO NOT buy cylinders with their identity markings ground off. DO NOT buy dispense gas in cylinders which are designed for other gases, e.g. fire extinguishers. DO NOT use poor quality gas. It will spoil the taste of the beer you sell.

DON’T USE DAMAGED CYLINDERS & GAS EQUIPMENT

DO buy your drinks dispense gases from a reputable supplier. DO check cylinders to ensure they are correctly labelled with a product and a food traceability label. DO check the cylinder is fitted with a complete coloured test date ring. These rings are only fitted by reputable suppliers who follow the law and correctly test and maintain their cylinders. For more advice – BCGA Leaflet 10, Profit through quality. Good gas, good business.

Hijack Cellar Systems

Our expertise in this field is renown throughout the i n d u s t r y. U n l i k e m a n y companies, we design and develop all our own equipment here in North Yorkshire, and have earned an enviable reputation for Quality, Reliability and Value for Money.

Hijack Systems specialise in the manufacture of cellar storage equipment. Auto-Tilt Pub Cellar Systems Hijack auto-tilts are designed for all real & cask ales. An average of less than one pint per cask of ale is wasted using our system. We have specifically designed our auto-tilt system for use in Pubs, Bars and Club cellars. Our unique system can be used on floor standing casks or in racking systems. Our controlled rate of tilt is so smooth that the ale in your casks is undisturbed, this helps maintain high presentation standards when poured into a glass. All prices are subject to vat at standard rate.

Compact Cask Racking System The Compact racking system caters for 9 - 11 Gallon Casks (Firkins). This small but sturdy free standing racking has Built-in self-tilting springs, which because of their sturdy build, do not need to be bolted to the floor. The Compact range is perfect in all cellars (subject to minimum height) and optimises cellar floor space to its maximum storage capacity.

Quality - we use top quality box steel for our builds, ensuring strength and longevity of our storage racking systems. Reliability - being a family run business, we are proud that the promises we make, we keep. This is reflected in the large proportion of our customers who come back to us with repeat business, as well as recommending us to their colleagues in the industry. We are frequently contacted to solve difficult cellar storage problems, such as low ceiling height or lack of floor space. Being a manufacturer we can modify our designs to meet your specific needs because we believe that YOU our customer comes first.

The Compact system is supplied in one, two or three tier heights, with the only width restrictions being cellar floor space and height. It is supplied with self-tilting springs and adjustable feet as standard making it literally £££’s less to buy than conventional racking systems with separate auto-tilt mechanisms.

Hoists (Compact and Universal) Hijacks Hoists are very user friendly. They all feature an automatic brake in the winch mechanism (going up or down). When you stop winding, a disc brake takes over and releases when you resume lifting or lowering. We supply one 2 Tier Hoist and two 3 Tier Hoists, the only difference being the lifting heights of the forks. All models are based on the single mast principle, designed to give the best visibility when loading / unloading a rack.

reators of innovative wine system, Coravin Europe B.V., today launched the all-new Coravin Model One wine system. The brand new system retails at £199, making it the most competitively priced in the brand portfolio.

Using groundbreaking technology, Coravin keeps the cork in place, whilst the accompanying gas capsule inserts inert argon gas into the bottle. The pressure of the argon pushes the wine through the needle, whilst preventing any oxygen from entering the bottle. The new technology includes a user-friendly, approachable design at an accessible price point. This will enable both new and experienced wine lovers alike to effortlessly pour wine without removing the cork, allowing them to enjoy a glass of wine without committing to the whole bottle. The launch accompanies the recent Haygarth report* on wine consumption in the UK. The report revealed that more than a third (35%) of millennials surveyed had chosen their most recent drink purely to try something new, and more than half (54%) said they regularly have three or more different types of drink a week. The results have revealed younger wine lovers have varied tastes in wine, enjoying the exploration of various regions and styles. Maarten Dekker, General Manager of Coravin Europe B.V. commented on the research: “Coravin can give them the freedom to drink what they want, when they want – without compromise and without waste. The Coravin Model One is the perfect system to enable exploration and cultivate a lifelong passion for wine.”
