Grilled Street Corn Source: Matthew Eads, Grillseeker
Prep time: 10 minutes • Cook time: 30 minutes Serves: 4-6
Directions 1. Light your grill with coals on one side, and allow temperature to stabilize at 350 degrees. 2. While the grill is preheating, whisk together mayonnaise, extra virgin olive oil, salt and pepper in a bowl. Place mixture in the refrigerator, allowing the flavors to meld together.

3. Once the grill has reached 350 degrees, place corn on the grill on opposite side of coals, leaving the husks on. The husks will steam the corn as it cooks and add to the presentation. Grill for 30 minutes.
• 2 tablespoons extra virgin olive oil
4. When the corn is ready, remove from the grill and peel husks back. Be careful when doing so because the steam inside the husks is hot.
• 1 tablespoon salt

5. Coat corn thoroughly with a thin coat of the mayo mixture.
• 1 teaspoon pepper
6. Pour Cotija cheese onto a plate, hold corn over plate and spoon cheese onto corn to coat the mayo mixture.

David’s Drive Charity Wins National Award BY FRANCINE FULTON David’s Drive 831 (DD831), a nonprofit charity created to help veterans, was the recipient of the 2021 American Spirit Award presented by the Veterans Health Administration, part of the U.S. Department of Veterans Affairs (VA).

Jennifer Lilly, chief of voluntary service for the Coatesville VA Medical Center, nominated DD831 for the work it does to improve the lives of veterans, including those who reside at the center and others who live in the community. There were 70 nominees total nationwide. DD831 is named for David Turner Jr., who was employed at the VA Medical Center when he passed away at the age of 20 in December 2009. His family members started the all-volunteer DD831 charity to benefit veterans by providing much-needed goods and services. The 831 symbolizes the phrase “I love you,” because the phrase contains eight letters in three words that have one meaning. Among its many efforts, DD831 collects underwear and socks for veterans, provides holiday gifts for veterans at its annual gift-wrapping event and donates beds and other supplies to previously homeless veterans who are moving into transitional housing. Veterans have also enjoyed fishing outings and a trip to see an Eagles preseason game through the efforts of DD831 volunteers. David Turner Sr., founder

The administrative staff at the Coatesville Veterans Affairs (VA) Medical Center and volunteers with David’s Drive 831 gathered to dedicate a new playground at the VA. and president of David’s Drive, reported that the national award came as a complete surprise. He learned about the honor during a reception held on May 22 at the VA. “Jennifer told me that we had a meeting with Jeff Beiler, the (Coatesville VA) director,” he shared, noting he was accompanied to the meeting by his wife, Joy. “We went in, and it was not a meeting for the director; it was an announcement that we had won the award.” At the reception, there were photos on display of various DD831 events at the VA as well as a congratulatory banner, and the area was decorated with balloons. “A few people spoke about what David’s Drive means to their departments (at the VA),” David Sr. added. Later, the Turners took part in a virtual awards ceremony, where they were featured in a segment that

The Turners accepted the award on behalf of DD831 board members, committee members and the community, which supports the charity’s mission through donations and monetary gifts. “Receiving an award like this is prestigious, but it validates (why people support us),” David Sr. said. “The money that people give goes toward things that make a difference.” On the same day as the reception, DD831 volunteers and Coatesville VA administrative staff dedicated a children’s playset at the VA to be used by visiting families. The equipment was originally installed in September of 2019, but it was closed in 2020 because of the pandemic. At the dedication, a new sign was unveiled, which was donated by Goshen Signs in West Chester. BY FRANCINE FULTON Many local residents who visit Layton Park in Wagontown may not realize it, but the oak tree located near the park’s entrance along Water Works Road is the ninth-largest black oak recorded in the state, according to the PA Champion Tree Program, and the third-largest in Chester County. Aaron Greenberg of the PA Champion Tree Program, which measures and scores specimen trees in the state, commented, “The oak at Layton Park is a fantastic specimen of the species. We’re glad to add it to our list of champion trees in Pennsylvania.” The tree’s height is about 74 feet and its trunk measures 16 feet around. The canopy spread was measured at 110 by 124 feet in late 2020, when it was added to the registry. “Older black oaks, while common in Pennsylvania, often did not survive our industrial history,” noted Will Caverly, a Downingtown native who is a volunteer with the PA Champion Tree Program. “If the trees survived the logging era, they are special trees to our area.” Members of the public are invited to nominate a tree that they would like documented and preserved by the PA Champion Tree Program, which

Layton Park Is Home Of Historic Black Oak Tree
According to Caverly, the black oak played a role in preserving the surrounding land. “Greg Layton’s family name graces the park where this black oak sits,” he explained. “Greg’s grandparents purchased 147 acres in Wagontown in the early 1940s. His grandfather was retired and envisioned being what Greg calls ‘a gentleman farmer’ on the property, but passed away before that could happen.” Greg’s parents, Martha and Ted, moved to the farm in 1943. When Greg’s father passed away in 1989, Greg’s mother, uncle and aunt were left with control over the property. Wanting to keep the farm intact, Greg reached out to the Brandywine Conservancy, a local land trust. The organization performed an environmental study that showed the age and special nature of the black oak tree. Greg worked out a deal with the township to preserve the land under conservation easement. Today, Layton Park has walking and running trails, pavilions, ballfields and a playground. Summer is the perfect time for reading, whether it be at the beach, by the pool or at home on the front porch. Coatesville Area Public Library director Penny Williams recently shared what books patrons are asking for and what books she recommends for summer reading.
Community Courier: What book can you read again and again? Williams: Not just one book, but any of Janet Evanovich’s Stephanie Plum series or Agatha Christie are my go-to comfort books. Community Courier: Do you prefer audiobooks, e-books or actual books? Williams: Before 2020’s quarantine, I mostly borrowed actual books and only read e-audiobooks occasionally. But because we couldn’t go out, and I do read constantly, I started using the Libby app for books to read and to listen to on my tablet. Now I probably read just as many electronic books as I do actual books! It’s more than doubled the number of books available to me and I just love the choices.
Community Courier: What books are patrons requesting? Williams: Currently our patrons are asking for a wide variety of titles in fiction, from current bestsellers to perennial favorite authors such as Harlan Coben, Danielle Steel, Lisa Scottoline and James Patterson. Nonfiction topics run the gamut from current political and social issues, fasting, aging, self-help, history and biographies. For light or so-called beach reading, humorous and cozy mysteries top the list.
The Coatesville Public Library, 501 E. Lincoln Highway, Coatesville, is offering a Summer Reading Program, themed “Tails and Tales.” Children who participate and log their reading hours can win prizes, decorate the library’s bulletin board and be entered in drawings to win larger prizes at the end of the program. kitchen skills, food safety and nutrition. Participants will have the opportunity to make one recipe each day. This year’s dishes will include sloppy joes and limehoney fruit salad. Adult supervision is required, and an adult should be working alongside the youth during the entire camp.
This summer, Penn State Extension’s 4-H program is offering virtual classes for youths ages 8 to 18, including classes on babysitting and cooking. A virtual 4-H Babysitting Special Interest (SPIN) Club will be held daily from Tuesday, July 6, through Friday, July 9, from 10 to 11:30 a.m. The club is designed to help prepare youths age 11 and older for babysitting.
Topics will include learning characteristics and needs of infants, toddlers and preschoolers, as well as safety and basic first aid. Each participant will receive a babysitting certificate after the last program. “If they go and babysit, they will have the credentials,” noted Extension educator Kelly Weisner. A fee will be charged for the 4-H Babysitting SPIN Club. There is no charge for current 4-H members. Registration information can be found at https://extension.psu. edu/4-h/babysitting-spin. Other virtual programs being offered this summer include a virtual cooking camp, to be held from Monday, July 19, through Friday, July 23, from 9 to 11:30 a.m. each day. In both my high school and college yearbooks, I selected the same quote as my favorite. “Perfection is consuming, (but) it seems we’re only human after all.” The words, which come from a song written by singer-songwriter Eric Carmen, basically mean that although we try hard, everyone makes mistakes, goofs and bad choices. Personally, I am a charter member of Clumsy Nation. If anything can be broken, dropped, tripped over, stepped on or misplaced, I have done it. Who among us has not looked for our sunglasses when they were perched on our head or searched frantically for our cellphone while using it? How many of us have driven to the grocery store to buy milk and realize when we get home that milk was not among the three grocery bags full of items that we just bought? What about having to head back to the car because you forgot your mask? I took an informal poll of my friends and co-workers asking what silly mistakes they have made, and they related their real-life experiences. “Turning on the light switch when the power is out to see what the problem is.” “Putting my house phone in my purse thinking it was my cellphone” and “Grabbing the TV remote as I left the house because I thought it was my cellphone.” “Looking for the TV remote and finding it in the refrigerator.” “While working in a warehouse, dropping my cellphone that was in my back pocket and then running over it with a forklift.” “Writing a not-so-nice email about my boss to a co-worker, and then sending it to my boss instead.” “Looking for my car key while it is in my hand.” “Dropping the hose at the gas pump and, after it hits the ground, getting splashed with gasoline.” “While resetting the clock on the mantel, looking at the spot where the clock should be to determine what time to set it while holding the clock in my hand.” “Adding baking soda to a recipe instead of baking powder.” “Wearing two identical pumps to work, but one shoe was blue and the other one was black.” “Depositing my paycheck into my savings account rather than my checking account, causing the checks I had written to pay bills to all bounce.” “While using the restroom at a convenience store, placing my handbag in the sink, which had an automatic faucet, causing my purse to fill with water.” “Spending an hour trying to find a parking place at the ballpark only to discover after being seated that our tickets included VIP parking.” An important note is that while sharing these true stories, the people telling them were able to laugh and smile because the immediate impact of their mistakes has eased with the
