Twenty Lower Dauphin High School (LDHS) students attended the third annual Geographic Information Systems (GIS) Day at Harrisburg University of Science and Technology on Nov. 16. The daylong GIS Day, offered in-person and online, is geared toward anyone with an interest in geospatial technology.
The Lower Dauphin participants were Riana Agili-Shaban, Thomas
Campbell, Abigail Carter, Liam Carver, Neyten Diaz, Dylan Robinson, Maximus Ford, Nick Haslup, Abdi Henry, Antonio Mardegain, Elijah Nalesnik, Logan Pedersen, Jesse Reigle, Makenna Robinson, Bella Roeting, Ashley Sather, Tanmay Singh, Marshal Stahl, Emmanuel Weese, and Wil Sierer. The faculty advisers on the trip were Elizabeth Kirman, Amber Doran, and Nancy Kiscadden.
While at the celebration of GIS, the students heard from Emily Mercurio, the CEO and co-founder of CivicMapper, a geospatial technology development company that uses modern mapping technologies to solve a variety of issues. They also attended sessions about using geospatial applications, lidar point cloud data, Google Maps, and the building blocks of spatial data science. The event also featured hands-on activities, such as
drone flight demonstrations for highschoolers, along with hands-on GIS and mapping activities.
This year marked the fourth time Harrisburg University had hosted the event, which is co-sponsored by the commonwealth of Pennsylvania. The university is slated to host the 2023 event as well, with the set date of Wednesday, Nov. 15. To learn more, visit https://summits.harrisburgu.edu/gis/.
Guitarist, songwriter, and vocalist Carl “Buffalo” Nichols will perform blues and American roots music in a 7:30 p.m. concert at The Englewood, 1219 West End Ave., Hershey, on Thursday, Jan. 5. The event is sponsored by the Susquehanna Folk Music Society (SFMS) and WXPN. Doors will open at 6:30 p.m.
Raised in a predominantly Black section of Milwaukee, Nichols grew up with a fascination for the guitar and the blues. He spent countless hours combing through his family’s music collections, listening to songs, and learning the riffs as well as the way the music told stories.

Hershey Public Library Eliminates Fees
The Hershey Public Library, 701 Cocoa Ave., Hershey, recently announced that regular fines have been eliminated at the library as of Dec. 6. The library is following the practice of many libraries around the country and removing this potential barrier to library services.
Removing fines is the library’s latest step to ensure that all Derry Township residents have free, equitable, and open access to library materials. Studies have shown that small fines have no impact on return rates.
This change is a part of a national movement, guided by the recommendations of the American Library Association, to increase free public access to library services. The library’s board voted on Nov. 15 to eliminate late fines for Hershey Public Library items.
Going fine free does not mean that patrons will not have to bring library materials back to the library, however; items will still have due dates and materials will still need to be returned. If an item is not returned or is returned damaged, patrons will still be charged replacement costs.

Buford Receives Leadership Award
Keystone Human Services (KHS) recently honored Jeanine Buford with the Dr. Joseph Adlestein Professional Leadership Award at its 50th annual meeting. This award is given annually to someone in a professional role who is a powerful advocate for people with a disability, supporting them to be valued and fully participating members of society.
Buford spent 28 years of her career with KHS. Over the years, she built a team of IT professionals in database design and management, infrastructure, user support, enterprise application, web development, and security. She made sure the IT Department, as well as Property Management, were grounded in the KHS mission and vision, always prioritizing accessibility
and the needs of the people who choose KHS for services.
In addition to developing a robust IT Department and managing Property Management, Buford led the development of the new communications team and set the standard for communicating about KHS and disability policy while promoting platforms for people with disabilities to tell their own stories.

Ways To Make Meals Healthier
Cooking foods at home is one way people may gain greater control over personal health. When people cook at home, they can know precisely what they are putting into their body each day.
Cooking one’s own meals also enables individuals to customize recipes so they align with any dietary restrictions or personal preferences they may have.
Increased creativity and confidence in the kitchen, as well as the fact that cooking at home helps to save
money and enables one to heat healthier, is driving the ongoing increase in dining in.
When cooking at home, cooks can consider various
tips to make meals that much healthier. Small dietary changes can add up to big health benefits.
Increasing fiber intake makes meals healthier. Fiber

improves bowel regularity and helps a person feel full between meals. High-fiber foods also help stabilize blood sugar levels. Two servings of fibrous foods at each meal and an additional fiber-rich snack each day can ensure the body is getting the fiber it needs.
Individuals should strive to slow the pace at which they eat. The pace at which a person eats a meal can affect his or her overall health. Healthline reports that fast eaters are more likely to eat more and have higher body mass indexes than slow eaters.
Whenever possible, individuals should choose whole grains. Choosing whole grain breads or cereals over refined grains can make for a more nutritious diet. Whole grains are linked to a reduced risk for Type 2 diabetes, heart disease, and cancer.
As a healthier option, Greek yogurt should be swapped for other varieties. Greek yogurt contains up to twice as much protein as regular yogurt, providing roughly 10 grams per 3.5 ounces.
Protein along with fiber helps a person feel fuller longer, which can manage appetite and reduce overeating. Greek yogurt also can replace mayonnaise or sour cream in certain recipes.
It is important to add a vegetable to every meal. Vegetables are loaded with essential vitamins and minerals. Plus, they tend to be high in antioxidants that strengthen the immune system.
While a person should minimize the amount of oils and other fats used during the cooking process, when it is necessary for a recipe, individuals should select the best fat possible. Olive oil is a monounsaturated fat that is packed with antioxidant polyphenols. It is considered a heart-healthy oil, and it may promote a healthy brain and memory function.
Cutting out sweetened beverages is another strategy for healthier eating. Sodas and other sweetened drinks are leading sources of added sugar in diets. Opting for water or naturally sweetened fruit juices can improve overall health.
Easy Fitness Resolutions
Resolutions to get in shape, exercise more, and eat healthier foods are popular each January. Optimism reigns when making resolutions, but for many, the difficulty lies in keeping them. Individuals looking to get healthier in the year ahead can try several strategies to stay the course.
Individuals are encouraged to plan to wake up earlier. Waking up a half hour earlier each day can have a substantial impact. This small amount of extra time can be devoted to meditation, deep breathing exercises, or even some yoga stretches.
Another goal is to prioritize moving around more frequently. Many people with office jobs spend hours sitting in front of computers. A sedentary lifestyle can have an adverse effect on overall health. Individuals can set a timer or use a reminder
on a fitness tracker to prompt them to get up and move around for a little bit every hour.
To eat healthier, consuming more vegetables is a good idea. Vague resolutions like “I will eat better” are difficult to maintain because there is no specific goal to achieve. Rather, a resolution like eating a fruit or vegetable at every meal is a measurable goal.
Vegetables can be hidden in favorite foods, such as desserts. Swapping pasta noodles for spiralized zucchini is another option.
Individuals are encouraged to evaluate their posture, as posture tends to decline with age, according to AARP. This change can cause the spine to lose flexibility. Certain stretches may help people to improve their posture and their long-term health.
When walking, people should add “bursts” to their walk. Researchers at

Resolutions For Seniors
People of any age can make resolutions, and seniors are no exception. The golden years may be different from any other period in a person’s life, but seniors can still embrace making positive changes.
One option is to focus on safety. Aging brings about certain changes to the body and mind. Although seniors may not be able to do all the things they could do at a younger age, they can still find ways to improve upon the things they are still able to do, especially if some safety-minded tweaks are made. When resolving to improve home safety, seniors may remove tripping hazards, install grab bars, check smoke alarms, and install a security system.
Another resolution is to find new and enjoyable workouts. The exercise routines engaged in just a few years
ago may no longer suit a person’s physical abilities or interests, so individuals are encouraged to investigate new fitness regimens or methods of movement. Tai chi, yoga, water aerobics, walking clubs, and more can be incorporated into daily habits.
Seniors may also find a better system for organizing their medical records so they may stay on top of appointments and wellness measures. There are many different organizing systems to embrace, and individuals should find one that works for them.
Decluttering one’s home is another resolution option. Individuals can resolve to get rid of extraneous items that no longer serve a purpose beyond collecting dust. Having more room to move around can be safer, particularly if an individual needs a
cane or another assistive device, and there will be less to clean if some clutter is removed. If planning to downsize soon, people may clear clutter to make the move easier.
A great resolution at any age is to learn something new. A language, skill, or hobby are all within reach when individuals map out the steps to achieving their goal.
Another resolution that may be particularly relevant to seniors is to make new social connections. According to Caring Places senior communities, socially active older adults have better cognition and lower risk for depression than those who do not consistently reach out to friends. Individuals should aspire to find new companions or get back in touch with those they have not spoken to in some time.
KPB Litter Summit Held In Lancaster
Stakeholders in the fight against litter convened on Nov. 1 and 2 for Keep Pennsylvania Beautiful’s (KPB) 2022 Litter Summit hosted by the city of Lancaster. The summit was held in coordination with the Pennsylvania Department of Environmental Protection (PA DEP) and Pennsylvania Department of Transportation (PennDOT). The event began with a walking tour of Lancaster’s sustainable community, including two projects funded by Keep Pennsylvania Beautiful, the Tiny Cans Project and Lancaster Compost Bin Co-op Expansion project. The Tiny Cans Project provides free trash cans for neighborhood residents to install on their porch railings to reduce litter-
ing. The Lancaster Compost Bin Co-op Expansion project allows the city to add new compost bin locations throughout the city. Other stops on the tour included the Storm Water Rain Garden and Art Mural at Musser Park, the Urban Forestry project, and the new Bike It Lancaster Bike Share. The tour was followed by an evening reception featuring an “Upcycled Art” exhibit curated by Red Raven Art Company. Keynote speaker Danene Sorace, mayor of Lancaster, spoke about how clean and beautiful communities support strategic priorities for the city: strong neighborhoods, safe places, sustainable economy, and sound government.
Keep America Beautiful (KAB) recognized the PA DEP and PennDOT for their support and collaboration with Keep Pennsylvania Beautiful’s programming, including Pick Up Pennsylvania and the new Young Ambassadors Program. KAB also recognized Gov. Wolf’s office with a State Innovative Partnership Award for the state’s first Litter Action Plan. The summit also featured the state’s new antilittering campaign, PA Fights Dirty: Every Litter Bit Matters, which was developed as part of Gov. Wolf’s Litter Action Plan and outlines strategies for all Pennsylvanians to help in the fight against litter.

Rural Development Grants Available
U.S. Department of Agriculture (USDA) Rural Development will accept grant applications for the Distance Learning and Telemedicine (DLT) program to help people in rural and tribal communities access remote education and health care resources. The DLT program helps fund realtime, interactive distance learning and telemedicine services in rural and tribal areas to increase access to education, training, and health care resources that are otherwise limited or unavailable.
For instance, the DLT pro-
gram gives students the opportunity to participate in classes that may be in places that are too far to access. DLT funds can also help connect rural people virtually to medical professionals without leaving their home.
USDA plans to make $64 million available in fiscal year 2023. Of this amount, $12 million is intended for projects that provide substance use disorder treatment services to people in rural areas.
Eligible applicants include state and local governmental entities, federally recognized tribes, nonprofits, and for-
profit businesses. Applications must be submitted electronically through www.grants.gov by Monday, Jan. 30. For additional information, visit www.rd.usda.gov and look under Programs and Services for Telecommunications Programs and then click on Distance Learning and Telemedicine Grants.
USDA is offering priority points to projects that meet certain criteria. These extra points will increase the likelihood of funding. For more information, visit www.rd .usda.gov/priority-points.

the Mayo Clinic tout the benefits of interval training. While high-impact workouts may not be appropriate for everyone, adding little speed bursts to a daily walk can provide significant health benefits. Aim for 30 to 60 seconds of rapid walking at regular intervals to shake up the workout.
Drinking more water can have health benefits. Increasing water intake can help one feel fuller, thus reducing the likelihood that he or she will overeat. Individuals should gradually increase their water intake by adding a few ounces each day until drinking water becomes a habit.
Another strategy is to exercise outside. To switch up their normal routine, individuals can make use of the great outdoors to exercise. Instead of 3 miles on the treadmill or elliptical machine at the gym, they may opt for the same distance on a local hiking trail.
Healthy resolutions are easier to keep when individuals have specific and achievable goals.

New Year’s Day Brunch Option
The late-night revelry of New Year’s Eve has made New Year’s Day brunch a go-to tradition for millions of people, as staying up until midnight on Dec. 31 can make it harder to get out of bed on Jan. 1. Many restaurants offer brunch specials on New Year’s Day, but people need not leave home to ensure their first meal of the new year is delicious. Readers may try the following recipe for PanFried Eggs and Mixed Mushroom Sauté on Toasted Sourdough Slices, from “Sunday Brunch” by Betty Rosbottom.
Pan-Fried Eggs and Mixed Mushroom Sauté on Toasted Sourdough Slices (Serves 4)
Mushroom Sauté
1 1/4 ounces mixed dried mushrooms
1 1/2 cups boiling water
3 tablespoons olive oil
8 ounces sliced brown mushrooms
2 teaspoons minced garlic
1 teaspoon dried, crushed rosemary (see tip)
Kosher salt
Freshly ground black pepper
Toast and Eggs
4 1/2-inch-thick sourdough slices
Olive oil
2 tablespoons unsalted butter 4 eggs
Kosher salt
Freshly ground black pepper Rosemary sprigs for garnish (optional)
Directions:
1. For the Mushroom Sauté: Place the dried mushrooms in a medium bowl and cover with boiling water. Let stand until softened, 20 minutes. Strain in a sieve lined with a double thickness of paper towels and reserve the soaking liquid. Coarsely chop the mushrooms.
2. Heat the olive oil in a medium-size, heavy frying pan set over medium heat. When hot,
add the brown mushrooms and sauté, stirring often, for 6 minutes. Add the reserved mushrooms, garlic, rosemary, and 1/2 teaspoon salt; stir for 1 minute. Add the mushroom liquid and cook, stirring, until it has evaporated, 4 to 7 minutes. Season with salt and several grinds of pepper. Remove the frying pan from the heat and cover with foil to keep warm. (The mushrooms can be prepared one day ahead; cool, cover and refrigerate. Reheat, stirring, over medium heat.)
3. For the toast and eggs: Brush both sides of the bread slices generously with olive oil. Set a 10- to 11-inch nonstick frying pan over medium-high heat, and when hot, add the bread and cook until lightly browned, about 2 minutes per side. Remove the toast and cover loosely with foil. When pan is cool enough to handle, wipe it out with clean paper towels.
4. Add the butter to the frying pan and set it over medium heat. When the butter starts to foam, break an egg into a saucer, being careful to remove any shell fragments, and gently slide it into the frying pan. Repeat with the remaining eggs. Immediately reduce the heat to low and cook, basting the eggs with some of the butter in the pan frequently, until the whites are firm and the yolks are still soft and runny, 3 minutes.
5. While the eggs are cooking, arrange a toasted bread slice on each of four plates. Mound the mushrooms evenly over the toast.
6. Remove each egg with a spatula and arrange on top of the mushrooms. Season with salt and pepper and, if desired, garnish each serving with a rosemary sprig. Serve immediately.
Tip: If dried, crushed rosemary is unavailable, crush regular dried rosemary in an electric spice mill or place it in a self-sealing plastic bag and roll over it with a rolling pin.

Traditions Of Hershey Named Caring Super Star
Caring.com’s “Caring Stars 2023” features the best senior living communities, nursing homes and senior care agencies in the United States, according to online ratings and reviews from seniors and their families.
Traditions of Hershey in Palmyra is once again the recipient of “Caring Stars 2023” by Caring.com, a senior living referral service and a top site for senior care reviews.
Because of Traditions of Hershey’s multi-year wins, the independent living and personal care community is referred as a Caring Super Star, which can only be achieved when a senior care provider earns the Caring Star award in three or more years.
Caring Stars 2023 includes 329 senior living communities in 39 states. In Pennsylvania, there are 18 Caring Star communities named over 11 counties.
Caring Stars started in 2012 as the first “best senior living” award in its industry, with winners determined based on consumer ratings and reviews.
To be considered for the annual award, communities and nursing homes required: 15 or more published consumer reviews on their Caring.com profile by Oct. 15; an overall average rating of 4.5 stars or higher; four or more published consumer reviews from Oct. 15, 2021, through Oct. 15, 2022, with at least one five-star review published in 2022; and public-facing business responses to a 1-star or 2-star negative consumer reviews across all time.
In addition, Caring.com conducted a reviews-integrity audit and other quality assurance measures as outlined by the company.
Located at 100 N. Larkspur Drive, Palmyra, Traditions of Hershey is an award-winning community that offers independent living and personal care. Apartments are available on a month-to-month lease with no buy-in fees. Resident services include assistance with daily living, meals, housekeeping and laundry, medication management, social events and transportation.
For more information about Traditions of Hershey, call 717-838-2330 or visit www.traditionsofhershey.com.
