ind-boggling” is the word for the toxic ingredients found in processed foods as outlined by Yardena Slater in this week’s feature about what you are really eating. It’s enough to make even a die-hard processed food fan head to the fresh produce department and then run home to dig out a musty cookbook for concocting a good oldfashioned homemade, nourishing soup. There’s nothing wrong with convenience foods as long as they contain healthy ingredients, but the chances of that happening are slim since industrial food processing is likely to involve synthetic food additives such as flavor enhancers and preservatives. Chemicals are even added to make the food items addictive so that you’ll be coming back for more.
Champions of the food industry will argue that modern science has done marvels reducing the costs for consumers and increasing shelf life, but their efforts have simply gone too far. In one experiment conducted by a wary consumer, a McDonald’s hamburger showed no signs of decay after 12 years of storage in a kitchen cupboard. The experimenter also noticed that no animals or insects would go near this “eternal” burger. It’s no wonder since two of the “foods” used in McDonald’s products are tertiary butylhydroquinone (TBHQ), a petroleum-based product that is added to varnishes, lacquers, and
resins, and dimethylpolysiloxane, an anti-foaming agent used in Silly Putty. We need to be reading the list of ingredients on our own popular kosher processed foods, and it’s already a bad sign if you can’t even pronounce them.
Between trans-fats, harmful artificial sweeteners, ingredients that are genetically modified (GMOs), the all-pervasive MSG, sodium nitrate, etc., the enormity of the problem can feel overwhelming. Most people choose to take the line of least resistance by throwing up their hands and continuing to buy these products, no matter what harmful substances are listed in the ingredients, like the good, compliant consumer that is every manufacturer’s dream. Naively, people assume that government regulatory agencies are protecting our health by outlawing the really bad stuff. But, that’s not happening. It’s up to each one of us to do our research and determine what is best for our family’s health and well-being. We can turn things around by spending more time actually cooking from scratch with fresh, whole foods and slowly weaning our families off the highly advertised, processed foods that have become a dangerous fixture in our lives. It’s an uphill battle, but we can do it, with Hashem’s help.

I am writing in response to a letter to the Inbox of Nov. 6, 2014, regarding the Countrywide Lost and Found Information Center (Hagmach Ha’artzi l’Hashavat Aveida). The gmach was originally established in order to provide one centralized address where both losers and finders of objects could report and locate lost and found items. Since its founding, the gmach has enabled people to more effectively fulfill the mitzvah of hashovas aveida. Several poskim have told us that by calling the gmach, one fulfills the mitzvah of הכרזה, announcing found objects. When you call the gmach (1-599-500-003), there is a recording with simple instructions (in Hebrew): For Yerushalayim, press 1, for Bnei Brak, press 2, etc. After choosing a city, the caller must choose an item. For example: For jewelry, press 1, for tefilin, press 2, etc. The call is then directed to the home of one of our 60 volunteers. The gmach is open from 8:30 am until 10:30 pm (until 1:00 am for emergencies). Since the volunteers cannot be on call for all of the hours the gmach is active, you can leave a voice message with the information. If the counterpart of the item you are reporting has already been recorded, the volunteer will call back. Otherwise, the information is saved for a future match. I want to encourage the readers of the UPDATE to use our services. The gmach receives between four and six thousand calls per month, and boruch Hashem, there are many good results! The more people who use the gmach, the higher the likelihood of returning lost items to their rightful owners.

uick, tell me: Which minyan is likely to have a higher final bid for the aliyahs on a Monday morning-- the 7 am minyan, or the one at 10:15?
“Huh?” I can hear you murmur. “What’s the time got to do with the price?” Let me show you. Did you know that two door cars and bright yellow cars get more tickets than four door cars? And did you know that a 2015 model of a two door car (where the front seat moves forward to allow passengers to climb into the back seat) will have higher insurance rates then a 2015 model of a four door car by the same company? And no, police do not have anything specific against neon yellow cars, so that’s not the reason (although it certainly makes a car more visible when it’s trying to evade police by blending into traffic). And the four door and two door cars have both been crash tested and both have airbags. They are both safe cars to drive. So what’s the p’shat in the much higher insurance rates for the sporty cars as compared to their four door brothers? And, while I’ve never sat down and tried to prove this (attention: shammoshim bakodesh in shuls-- I would love your input on this one), the 10:15 minyan is likely to have a higher-end bid, even if the earlier minyanim have more bidders.

is this?
The answer to these different examples, while seemingly unrelated, is one and the same- and very valuable to anyone looking to understand cause and effect or wants to clarify which one is the cause and which one is the effect. Who buys a four door car or minivan? That’s right. It’s usually someone with a bunch of kids or someone a bit older, more settled down, and therefore, in all probability, a safer driver than the youngster who is getting his two door, yellow racing car. So the racing car is more likely to be ticketed, not because of the car itself at all—but rather, because of the driver being more likely
to be the kind of person who will speed for “fun,” and this kind of driving results in a greater chance of getting a ticket. Who buys a neon pink or yellow car? A “racer” type of person— the same kind of person who is likely to speed past you on the highway, thinking that the I-95 is a go-kart course. So while it’s technically true that “yellow cars have higher insurance rates,” it doesn’t mean that buying a yellow car will automatically cost you more in speeding tickets and higher insurance rates. So much of the “statistics” we see fall into this category- where the observation that “99% of people who had a headache last week took Advil” could easily be misconstrued as “Advil causes headaches.” Talk about confusing the masses! In the “selling the aliyahs” example I mentioned above, the people who daven at 7 am are usually those with a rigid schedule. They may be klei kodesh or businesspeople running off to their jobs after a 6 am shuir and Shacharis at 7. They may be kollel yungerleit who want to be home after davening to help get the kids to school. Whatever they are doing, they are people on a fixed clock. Fixed clock means a fixed schedule. And people with a fixed schedule, by and large, are also more “financially rational” and think before they spend more than a token amount on a purchase. (Depending on the purchase, the amount of “token” would change.) But at the later minyan, the chances are that the average mispallel is self-employed or for whatever other reason not on a fixed schedule. He is more likely to think and act on his impulse: “Why didn’t anyone outbid the other guy $10 for an aliyah; its Rosh Chodesh!” It’s not the time of day that made the bidding go higher (and at bigger increments), but that happens as a byproduct of the fact that the people who are davening in the later minyan are more likely to make split second decisions and do so with less rigidity than people who “punch the clock,” either literally or figuratively. On the topic of leining, there’s another point that’s worth making. Someone once remarked to me: “Everyone thanks a good ba’al tefillah for davening so nicely, but they rarely go over to the ba’al koreh to thank him for a Torah reading well done.” This is continued on page 10

Because mitzvahs are not meant to be guilt-fer tilizer. Just the opposite : Mitzvahs are the ultimate form of celebration. A mitzvah means you’re connecting with the Infinite Creator of the Universe on a deep, persona l level. Halacha h means you’re changing the world for the good. What’s more worth celebrating than that?
Celebrating Mitzvahs
And there’s irrefutable proof: When you first became obligated in all this, they made you a party—your bar or bat mitzvah event. If mitzvahs aren’t for celebrating, then why the party? The earliest Torah source for that party happens to be the Zohar, where we are told to make a feast just like a wedding, to celebrate that we get to do mitzvahs.1 Proof that doing mitzvahs is a happy thing, not a do-it-or-getJanuary 15, 2014

Now, imagine you’re making this wild bar mitzvah party with all your friends who brought a whole pile of gifts—and there’s one nudnik there standing next to you and kvetching, “What a lousy party. Your voice cracked in the middle of the Haftorah and your speech put even the rabbi to sleep. The sushi smells rotten. Your Aunt Monica didn’t even bring a gift. And your friends probably don’t even like you.”
You’ve got one of two choices: Throw the guy out, or stay far away and ignore him. And when the party is over, get your money back for the sushi. That’s exactly what you do with guilt. Even guilt over serious, grave messups. Take the advice the of Baal Shem Tov and tell it, “Guilt, I have no time for you right now. I am too busy celebrating my mitzvahs, celebrating life and just getting stuff done. I know I messed up, I said I’m sorry, and I trust
with perfect faith that Gd has forgiven me. But you are distracting me from serving my Creator with joy—and what kind of a dumb life is that, doing all this stuff without celebration?”2 And then, one day before Yom Kippur, or sometime when you’re inspired enough and want to go even higher, you cry a little over the messes you’ve made and resolve to do even better from now on.

Failure
Get this straight: The secret behind success is knowing how to fail. Failures are people who fail once. Successes are people who fail thousands of times—and pick themselves back up each time. Like little kids learning to walk. Like Babe Ruth, who held the world record for home runs—and also held the record for strike-outs. If basketball's your game, here's a quote from another famous athlete: “I've missed more than 9,000 shots in my career. I've lost almost 300 games. Twenty-six times, I've been trusted to take the game winning shot and missed. I've failed over and over and over again in my life. And that is why I succeed.” There’s a reason it works that way: Everything in the world—whether it’s energy, matter, a journey or a story—moves
Mitzvahs are not guiltfertilizer. Mitzvahs are the ultimate form of celebration. in waves. Wherever there’s a crest, a trough is on its way. To surf those waves, you have to learn to travel the troughs just as well as the crests. When you're little, you're good at that. When you grow older, your ego doesn't let you anymore. Drop the ego, admit you're fallible like the rest of us, and allow yourself to experience success. And that’s the way it works with mitzvahs, too. As the Baal Shem Tov put it, “It’s not the bite of the snake that kills, it’s the poison.” The bite is the failure. The poison is the kvetching voice telling you what a failure you are. Why is that voice saying those things? To make you into a better person? To get you to do more mitzvahs? Absolutely not. There's only one objective behind its strategy, and that is to get you depressed enough that you'll give up on the whole thing. And
yours seems to be succeeding.
Celebrate! Guilt is the gateway to depression, and depression is the gateway to surrender. Celebration is the gateway to transcendence, higher and higher without end. When you're happy, you ride high above every obstacle and all the good things in life become so much easier.3 Don’t stop to talk with a snake. Boot it out of the party. hen we come to the Kosel we may be so engrossed in our davening that we don’t notice the numerous birds flying close by and the plants growing out of the stones of the Wall. What we may not realize is that the Kosel— spiritual home to millions — is built of stones that serve as the physical home for various animals and plants.
The Kosel Heralds Our Redemption
The renowned scholar of botany and zoology of the Tanach and Talmud, Prof. Yehuda Felixa, zatzal, claimed that throughout the course of the year 46 different plants, each in its season, grow on the Kosel. One of these plants is the thorny caper or tzalaf. The Gemara in Yevamos and Brachos writes that in Eretz Yisrael there are six types of tzalaf. All of them give a round ball-like fruit. The tzalaf likes to grow on outside walls of houses. On the Kosel, from between the ancient cracks, the tzalaf grows in two places: above the men’s section near the mechitzah and also right at the end of the women’s section close to the little room under the Robinson’s Gate. Neither of these shrubs have ever given fruit. The tzalaf cycle of growth is from Elul until Cheshvan when its leaves fall. On the men’s side, the plant has now dropped its leaves. However, on the ladies side the plant is flowering and leafing in full glory. In addition, for the first time since the destruction, there is fruit on the tzalaf. The verse in Shir HaShirim 2:9 says: “Behold, He is standing behind our wall, He is looking through the windows, He

From here, the Shechinah has never, ever departed. “Peering through the cracks” is through the fingers of the cohamim as they bless Klal Yisrael. One commentator, Rav Moshe Reisher, wrote in his book, Shaarei Yerushalayim, on this pasuk that when the Kosel will give fruits, Moshiach is very close to coming. The first seven visible layers of the stones of the Kosel have an outer frame that marks them as being from the Herodian period. In the small room on the women’s side, a stone is found that does not have the frame. If measurements were taken of the Temple Mount, it would work out that this stone
probably fell from the Kippornus Gate that is spoken about in the Mishnah and which was most likely right here. This stone “cries” once a year. Each Tisha b’Av, from an hour before sunset until sunset, water drips from the stone. On Tisha be Av ת"ש, Rav Ben Zion Yaddler and his grandson came to the Kosel. The Rav went up to the weeping stone. He said that the water the stone was then expelling was water of the Churban because it was salty. “But,” Rav Yaddler continued, “Hashem will help and the water will be sweet, and then the Geulah will come.” This past year the water was sweet. Two points to learn from this story: One, thank your ba’al koreh in shul, and two, if the ba’al koreh would walk behind the ba’al mussaf as the Torah is taken back to the aron hakodesh, he’d get a lot more thank you’s. Why? Since people go and kiss the Torah, this gives them the opportunity to thank the ba’al koreh for a job well done. If you want to give people the opportunity to buy from you or perform the mitzvah of hakaras hatov, you have to be where your customers are likely to find you!

was visiting relatives in the states when my hostess complained to me of neck pain. “Can you give me a massage?” she requested. Knowing the rule that you are not allowed to refuse any requests from your hosts (unless they ask you to leave), I readily obliged. I gave her a 45 minute massage, after which she told me she felt much better.
I had an e p i p h a n y. I realized that I’m fine with the association, because I really like treating pain conditions. They’re usually simple and respond well to appropriate treatment.
A few days later, her neck-pain stubbornly returned, so I gave her another massage. After a couple of days, however, her pain was back again! Exasperated, I suggested, “I can see how much you enjoy massages, but we are not getting very long-lasting results with them. Why don’t we try some acupuncture?”
In all likelihood, the reason people know about acupuncture for pain is because it works immediately, and fast results are generally the #1 criteria for medicine in modern society. Ailments that require more time to produce results are less likely to rise to public stardom. Conditions like asthma, digestive problems, infections, Epstein Barr virus, depression, and infertility, for example, are very likely to respond well to Chinese medicine. They are unlikely, however, to respond overnight.
She was happy to give it a try. After the session, she turned her head back and forth, and enthused, “Now the pain is really gone. I don’t feel it at all!” Finally, she was lucky that her pain did not return again soon after. Under normal conditions, acupuncture is always my first choice for a pain condition. The results are consistently positive. On a different occasion, another woman came to my clinic for treatment, also for neck pain. Before starting the acupuncture, I felt the rock-hard knots in her neck. Then, I gave her acupuncture. During the session, I went back to her neck to check the painful spots, and I decided to use some gentle massage to help move things along. The hard spots immediately melted under my fingers. I told the patient, “Without acupuncture, I’m sure I could easily have spent at least 2 hours trying to massage out your muscle tension. The acupuncture really does most of the work for me!” In most cases, I do not find that massage is strictly necessary. Sometimes I just do it for individuals who are desperate to see immediate results. In general, acupuncture alone does the job; it just takes a bit more time. The blockages usually release themselves over the next day or so after acupuncture. After graduating from Chinese medical school, I was repeatedly frustrated by people’s perception of my field. “Acupuncture? That’s for pain- right?” I would respond that Chinese medicine is an entire medical system that has been used for thousands of years in China to treat all maladies from the common cold to depression. Over the years, public understanding about acupuncture has improved, but the automatic association between acupuncture and pain still remains strong. Recently, January 15, 2014
This should not discourage individuals with chronic problems from pursuing alternative medicine. Results often take time when the condition is deeply rooted. However, it is within the abilities of many holistic practitioners (with Hashem’s help) to completely uproot the problem, and restore good health. Modern medicine may produce quicker results, when for example you use a bronchodilator for asthma, or an SSRI for depression. But the results are only positive in the short term. The underlying problem remains totally untreated, which is why we know that inhalers will never cure asthma. Nor do antidepressants eliminate depression; they merely suppress symptoms. So again, we are left with the choice: a symptomsuppressing quick-fix that will consistently leave us back where we started or a long-term solution with the ultimate goal being a total cure. Note: I am often pleasantly surprised by patients who respond to treatment much more rapidly than anticipated. Quick results are possible even with alternative medicine. I just can’t usually tell in advance who’s going to be cured overnight or who will be totally unresponsive. Back to the subject of pain. Although acupuncture works quickly for pain, it is not merely a temporary solution. When there is pain, it means that there are blockages. Acupuncture is very good at clearing blockages and therefore can relieve pain immediately. While we often see instant results, it usually takes more than one session to completely resolve the condition.
MOM2MOM Question: My two-and-a-half year old twins became really attached to their bottles and I'm starting to think of weaning them, but I don't know where to start. Does anyone have any really good tips?

I had two kids on bottles at the same time. One was gaining nicely and the other was not. The doctor told me to try to wean one baby since the extra calories were not good for him. But every time I gave a bottle to the other baby, the first one would cry. I decided to water down his bottles to the point that he was just drinking white water. Eventually he decided he didn't like it anymore and stopped on his own. I do not hold by forcing an issue with kids. When they are ready they will stop, and if they aren't, they will scream. Depending on how much tolerance you have for the tantrums, I suggest a gradual decrease in the formula until they decide to stop on their own. My decision was more based on the nutritional value and not the age. Wishing everyone hatzlacha and nachas.

We've been quick to trust the glossy ads and slow to stop for thoughtful investigation to find out the truth about our food.

You see, there’s real food and then there’s factory food. Processed factory food is not just un-natural, it also contains ingredients that can lead to severe health problems, is addictive, can spoil your mood, is more expensive than homemade food, causes inflammation, and at the end of the day is just not REAL. Yet we’ve gone so off track in this in this area that many people are barely aware of the toxic concoctions they’re consuming on a daily basis via these foods. Just to clarify, we have always processed our food as human beings. We’ve chopped, soaked, cooked, fermented, grinded, and dried our food, which are all ways of processing food to either make it more digestible, more palatable, or to preserve it for times when it’s not available. Traditionally, this was done by processing the raw ingredients while making sure to retain their nutritional content. These days, there’s a new kind of food processing on the block – industrial processing. This type of processing is done in a factory and relies heavily on multiple processing procedures-- chemicals, sugar, white flour, hydrogenated oils, synthetic food additives and vitamins, and high heat treatment. All of these overwhelm your body on a daily basis leading to organ weakness and disease. Your body was never meant to work this hard, spending nearly all its energy trying to digest such ingredients and the chemicals they are coated in and filled with. And as hard as your body does work, A LOT of this type of food,

which it can’t use or digest, gets stored within you, plastered on the inside of the colon or redirected to some other storage area in your body. That’s why a lot of us look and feel the way we do.

He should not act like a fool, and put himself into situations where danger is prevalent.... for this is like letting go of his life. Harmful Food Additives
Here are some of the more harmful food additives that all natural health and prevention experts raise a red flag on that you may be eating right now:
Artificial S weeteners
• High fructose corn syrup (HFCS)
An artificial sweetener found in almost all processed foods. This one will pack on the pounds faster than any other ingredient and will contribute to the development of diabetes and tissue damage, among other harmful effects. • Aspartame (E951) A neurotoxin and carcinogen, also known as NutraSweet and Equal, found in foods labeled "diet" or "sugar free." It accounts for more reports of adverse reactions than all other foods and food additives combined and may lead to a wide variety of ailments, including brain tumor, diseases like lymphoma, diabetes, multiple sclerosis, Parkinson's, Alzheimer's, fibromyalgia, chronic fatigue, emotional disorders like depression and anxiety attacks,

colorings
Many have already been banned in certain parts of the world. They can be found in processed drinks, dairy, and processed foods, and have been linked to cancer, behavioral problems in children, and reduction in IQ. • Blue #1 and Blue #2 (E133) • Red dye # 3 and Red #40 (E124) • Yellow #6 (E110) and Yellow Tartrazine (E102) • Butylated hydroxyanisole (BHA) and butylated hydrozyttoluene (BHT) or E320 Preservatives found in cereals, chewing gum, potato chips, enriched rice, candy, jello, and vegetable oils. They affect the neurological system of the brain, alter behavior, and have the potential to cause cancer.
Hydrogenated and Partially Hydrogenated Oils
Industrially created fats that can be found in vegetable shortening, crackers, cookies, baked goods, salad dressings, breads and chips, and more. Manufacturers like it because it reduces costs, increases shelf life and stabilizes flavor. These oils contain high levels of trans-fats that are linked to increased risk of heart attacks and strokes, increased inflammation, and diabetes, among other problems.
Sodium Nitrate
Found in some smoked fish and processed meats such as hot dogs, luncheon meats, and corned beef. It

Health is actually widely regarded as a toxic ingredient and the USDA did try to ban it in the 1970s but was unsuccessful due to lobbying by food manufacturers. Aside from acting as a preservative and flavor enhancer, this additive also acts as a color fixer making meat that is not fresh appear new and fresh.
Regularly eating these has been linked to increased risk of heart disease, diabetes, and colon cancer. What you’re mostly getting here are saturated fats, sodium, and nitrate preservatives.
Sodium Sulfite (E221)
Make your own (have a look at the recipe page in this week’s issue).
A preservative found in wine and dried fruit. According to the FDA, about one in 100 people has a sensitivity to sulfites in food and most of these individuals are asthmatic. Common symptoms are headaches, rashes, and breathing problems, and in severe cases death may be caused by the closing down of the airway.
Sulfur Dioxide (E220)
A food additive whose adverse reactions include bronchial problems, hypotension, and flushing/tingling sensations. It also destroys vitamins B1 and E. Not recommended for child consumption. Found in beer, soft drinks, dried fruit, juices, wine, vinegar, and potato products.
Potassium Bromate
An additive that increases volume in white flour and bread. It is known to cause cancer in animals and even small amounts in bread can create health issues in humans.
Processed Foods to Avoid and Some Alternatives
Packaged baked goods (bread, pastries, pretzels, wafers, muffins): These are tasty and convenient foods that also usually contain partially hydrogenated fats that have been linked to obesity, cancer, diabetes, heart disease, immune dysfunction, and reproductive problems. Loaded with calories and very hard to digest, they pack on the pounds, deplete your energy, cause inflammation, and make you look puffy, pasty and bloated. Instead: Bake your own cookies, muffins and pretzels. Eat more fruits, vegetables, nuts, and dates for snacks. Look for baked goods that do not contain hydrogenated fats or other shady food additives. (A great source in Jerusalem is the Natural Choice Bakery on Agrippas 111; deliveries available). Soda ,
regular and diet:
Avoiding this “beverage” is one thing that all experts seem to be agreeing on these days. The preposterous amount of sugar they contain renders them liquid candy and that’s besides the food dyes, preservatives, and other shady ingredients they contain. Soda is being held largely responsible for the growing obesity epidemic, as well as damaging teeth and weakening bones. Diet sodas are sweetened with artificial sweeteners like aspartame and saccharin. In study after study, drinking “calorie free” beverages instead of sugary ones has been linked to metabolic syndrome, depression, preterm delivery, and risk of type 2 diabetes. Instead: Drink only water. Would you sponga your floor with anything else? Same holds true for your body. Water cleanses you and makes up about 75% of your body. If most of the liquid within you is filled with chemicals, sugar, and artificial food colorings there can be consequences. Make your own bubbly drinks (see the recipe page in this week’s issue).
Imitation
foods:
These include any food that is trying to pretend to be something it’s not. Margarine, milk, or cheese that does not have to be refrigerated, nondairy “creamer,” pancake “syrup,” and “lemonade” powder among many others. These foods are a highly processed “fake” version of the real thing and therefore have nothing to do with the real thing. Instead: Buy the real deal. Real butter, real creamer (or use canned coconut cream when in need of a nondairy alternative in desserts), pure maple syrup, and make lemonade from real lemons (and honey). Low-fat and fat-free products: Aha, these are the ultimate in marketing hype. “Diet” foods are extremely processed, don’t taste that good, and
studies show they actually make you gain weight since they are full of sugar to make up for the fat that has been taken out of them, a process that renders them no longer tasty. Many contain fat-free additives such as olestra that restrict the body’s ability to absorb vitamins and minerals leading to the brain sending out a hunger signal more often. Binging on sugar, refined sweeteners, and indigestible additives is not where it’s at if you want to lose weight. Instead: Eat the real, full-fat thing just like our ancestors did. They survived on these for centuries without becoming obese, and so can we.

Best You Can
I know it can look overwhelming and as if there is absolutely nothing to eat on this earth any longer. Yet, there are options out there that we may have forgotten about, thanks to the food industry’s convenience foods. You do not have to go cold turkey. Decrease. Cut down. Save for special occasions. Eliminate the most toxic stuff. Make homemade snacks. Only eat food with ingredients you can pronounce. Be aware and do the best you can. Start adding fresh fruits and vegetables to every one of your meals and have them for snacks too. I recommend purchasing the Nourishing Traditions Cookbook by Sally Fallon – it’s kind of like the Joy of Cooking for real and truly healthy food. Please know that a mother’s food preparation (as well as that of other family members) is a very special activity. As mothers, we imbue the food we prepare with our love. It is such an important activity that impacts the entire household. So yes, to be healthy and get all the perks that come along with that state of being, we need to actually prepare a lot of our food ourselves. If you do not have time to prepare nutritious food for you and your family, you may want to sit down and try to rework how you are spending your day. Real Food Recipes from Yardena Slater Instead of processed meats, serve homemade chicken cold cuts: Ingredients: (Makes 4-6 servings) •
1/2 kg chicken breasts (skinless, boneless)
•
3 medium garlic cloves, peeled and finely minced or put through a garlic press
•
1/2 to 1 tsp oregano
•
zest from half of one lemon
•
juice from 1/2 of a lemon
•
2 Tbsp olive oil
•
unrefined salt and freshly ground pepper
Preparation: 1.
In a small casserole pan, combine all of the ingredients, including a generous sprinkle of salt and pepper, and gently toss with your hands. Spread out chicken in pan so that the chicken pieces don’t touch. Cover pan with foil or parchment paper, pressing carefully around the chicken in the pan. Let marinate for 20 minutes. Preheat the oven to 190º C.
2. Cook for 30 minutes in the middle of the oven. (It is done when the juices run clear when cut to the middle). Remove from oven. Cool for about 15 minutes. Then refrigerate, covered until very chilled. If you want to cut really thinly, freeze for twenty minutes. 3. Using a very sharp, large knife, cut into thin slices against the grain. Enjoy! The homemade cold cuts will stay good refrigerated for 3-4 days, so freeze any extra.

ara sat at the desk in a bright, little room outside the Rebbetzin’s office in the women’s seminary “Bina Yiseira.” She was supposed to be looking over the syllabus of all the courses offered this coming semester. Rebbetzin Stark was busy speaking to girls who freely popped in and out of the office.
“Out! Out! Get him out of the house. When a man isn’t busy making something of himself, he’s miserable. That’s why he’s picking on you."
Sara was looking at the papers in front of her, unable to get past the first entry. She kept reading the same line over and over again. Suddenly a large, single tear fell from her eye onto the paper. She was upset with herself. Why did her emotions have to intrude on every part of her life? Here she was trying the find some intellectual stimulation, yet she couldn’t stop thinking about the morning. It had been terrible. Reuven had looked around the house with that critical eye of his. “Reuven, why don’t you sit down and have your breakfast already?” Sara had implored. “I can’t eat when everything is upside down like this. I like seder,” he had said coldly. Reuven started folding the laundry that had been sitting on the couch for two days. Sara immediately felt inadequate. She was filled with self-recriminations: Why am I such a bad housekeeper? I don’t even have any kids yet, and I can’t even keep this little apartment neat. She felt worried. Is there something wrong with him? He’s so obsessed with order. Why can’t he just relax and enjoy life? Finally, she felt angry. I married the wrong man! How could I have been so blind?’
Rebbetzin. I feel like nothing. I do not meet his standards. I feel like I am getting smaller and smaller in his eyes and even in my own. I’m losing all my confidence. I can’t imagine that he still loves me. He thinks I’m a terrible housekeeper, disorganized, and scatterbrained. But I’m not any of those things.” “How long have you been married?” Sara looked into the concerned eyes of the Rebbetzin. “Two months, tomorrow,” she whispered. “And what does your husband do?” “Well, he’s waiting for the zman to start and then he’ll begin yeshiva. Sara saw the Rebbetzin’s face soften and her concern disappear. “You mean he’s home?” Sara nodded. “He’s with you all the time? 24 hours a day?” “Yes, we’re always together, at least until yeshiva begins.” “Get him out!” Rebbetzin Stark commanded. “What?” “Out! Out! Get him out of the house. When a man isn’t busy making something of himself, he’s miserable. That’s why he’s picking on you. It’s easier than picking on himself. My mother always said, ‘I married my husband for better or for worse, but not for lunch!’

“Did you find any classes that interest you, Sara?” the Rebbetzin asked warmly. All of a sudden, Sara felt her pulse quicken and her face flush. Another tear was about to fall. She hated herself for this, but she couldn’t hold herself back.
“We’re going to get a divorce,” Sara blurted out, losing her self-control. The tears were rolling freely down her cheeks now, and she was heaving deep sobs, unable to catch her breath. Sara was filled with shame and remorse for revealing her heart to a total stranger. But she also experienced a strange sense of relief. Rebbetzin Stark looked at her secretary who discreetly excused herself and closed the door to the office. “Sara, tell me what’s going on.” The words tumbled out: “My husband is so critical,

Rebbetzin Stark walked out from behind her desk and put her arm around Sara, as they walked towards the door. Sara felt the warmth of this caring, older woman, and her spirits lightened. Maybe she and Reuven did have a future after all.
As the two women approached the door, Rebbetzin Stark offered another piece of advice. “Remember Sara, Rav Avigdor Miller says, ‘Having thin skin never does anyone good.’ It’s best to work on growing a bit thicker skin.” Now Sara was smiling. “Thank you, Rebbetzin. I didn’t see it on the syllabus, but I hope you’ll be able to teach me how to do that.” To be continued
