How to

&

for Summer with

If you’re like a lot of people, you’re in prep mode for bathing suit season. What does that mean, exactly? Fewer donuts and more trips to the gym? That’s a great start but let me ask you: What’s your plan? In my new book The Big Picture: 11 Laws That Will Change Your Life, law #3 is “Have a Plan”. If you put a little extra strategy into how you go about achieving your goals, the results are usually better and longer lasting. Here are a couple of tricks to turn a desperate attempt to drop a few sizes into a healthy, sustainable plan that will help you feel your best, look your best and be your best for seasons to come.

Summertime means outdoor time, and outdoor time means sunshine. As much as we all use sunscreen (right?), let’s face it, sunburns happen. So, eat to protect your skin. Fill your diet with antioxidant-rich fruits and veggies to counteract the free radical damage caused by UV rays. While you’re at it, keep up skin elasticity with omega-3 fatty acid-rich foods like salmon, flaxseed and walnuts. You've spent a few months getting into shape so that you could knock ‘em dead at the 4th of July BBQ. Now what? Are you just going to slide back into inactivity so that come next April, it’ll be the same old sweaty, painful song and dance? Don’t do it! Use your newfound fitness to try a new sport or other physical activity. Beach yoga, volleyball, rock climbing. Have an adventure in mind? Go for it! You’ll be establishing a baseline of fitness that’ll keep you healthy all year around. Now that’s a plan I can get behind!

One of oldest neighborhoods in Seattle, Pioneer Square once housed the original skid row and had no shortage of saloons and brothels to support the pioneer milling industry. Now it offers a neighborhood filled with art galleries, shops, restaurants, clubs, and bars. For a walk through history, be sure and take the Underground Tour to explore the now subterranean storefronts of the original neighborhood. No trip to this city is complete without wandering along the waterfront. Head down to the Seattle Aquarium on Pier 59, stroll Waterfront Park, take a spin on the Great Wheel at Pier 57 or even catch a ferry to neighboring Tillikum Village or Bainbridge Island.

Space Needle

Where Seattle Starts The ideal kickoff to your visit to Seattle, take a quick 43-second blast upward to the 520-foot high Observation Deck of the iconic Space Needle for a jaw-dropping 360-degree view of the glistening Emerald City. From the Observation Deck, check out the downtown Seattle skyline while taking in the beauty of the surrounding mountains and waterways. Listen to the distant hum of the bustling city while watching ferries and boats as they cruise through Elliott Bay and outward to surrounding islands. Picturesque Mount Rainier stands tall above the city while the Olympic and Cascade Mountains and Mount Baker peak on the horizon. Whether it’s the free telescopes, interactive screens and controllable cameras, the SkyCafe and Wine Bar, or absorbing the infamous history of the Needle – from Elvis to U.S. Presidents - there’s a lot to be enjoyed. This summer the Space Needle is rolling out new digital-enhancements that are sure to be out of this world! Picture yourself with a life-size Needle. Be floored by a “see through” view over Seattle. Teleport into a Seattle Sounders FC game huddle, a tank at the Aquarium, or onto a flying fish at the Market. With a new interactive digital wall and futuristic augmented reality and teleporting capabilities, the Needle is aiming to put each guest at the center of an elevated 360-degree adventure.

Did you know There are 848 steps from the bottom of the basement to the top of the Observation Deck.

The Space Needle sways approximately 1 inch for every 10 mph of wind.

The original nickname of the Space Needle was "The Space Cage." The original name of the restaurant was "Eye of the Needle."

On a hot day, the Space Needle expands about one inch.

The Space Needle is the perfect perch in the sky to see and experience the city.

This highly recognizable landmark of the Pacific Northwest and towering symbol of Seattle was once the tallest structure west of the Mississippi River. Built in the Seattle Center to be the centerpiece and inspiration for the 1962 World's Fair, nearly 20,000 people a day used its elevators to witness the city from high above to gaze in awe at the natural and man-made beauty below. This impressive 605-foot structure is built to withstand winds of up to 200 miles per hour and earthquakes of up to 9.1 in magnitude, which is as strong as the 1700 Cascadia earthquake. There are also 25 lightning rods (24 actual rods plus the tower) on the roof of the Space Needle to endure lightning strikes.

In addition to the must-see Observation Deck, be sure to make a stop at the SpaceBase gift shop, and experience locally inspired fine dining at the famous rotating SkyCity at the Needle restaurant.

Chihuly Garden and Glass

Avant-Garde Glass as Fine Art Located at Seattle Center, Chihuly Garden and Glass is an imaginative oasis that celebrates the inspiration and life’s work of local artist Dale Chihuly.

Who is Dale Chihuly?

Washington native Dale Chihuly enrolled in the glass blowing program at the University of Wisconsin in 1965. In 1968, Chihuly was awarded the Fulbright Fellowship where he went to work at the Venini factory in Venice, learning his now identifiable technique of team glass blowing. In 1971, Chihuly co-founded the Pilchuck Glass School, and is currently known as the educational leader in blending an avant-garde aesthetic with glass as fine art.

‘‘

We use the same tools today [in glass blowing] used 2,000 years ago. The difference is that when I started, everyone wanted to control the blowing process. I just went with it. The natural elements of fire, movement, gravity and centrifugal force were always there, and are always with us.

chihulygardenandglass.com

Did you know Seattle has the second most glassblowing studios in the world. The first is Murano, an island near Venice, Italy.

Chihuly Garden and Glass After an exhibit at Seattle Center, Chihuly began development plans for the 1.5-arce plot. Keeping environmental best practice in mind, the choice was made to repurpose existing buildings and garden space for the project. Chiluly decided to use specific artworks from his career, combined with new sculptures for the site.

Take a Tour Journey through the breathtaking Glasshouse, the eight galleries and three Drawing Walls of the Exhibition Hall, and the lush Garden exhibits of Chihuly Garden and Glass. 1 The Glasshouse The centerpiece of Chihuly Garden and Glass is the Glasshouse. A 40-foot tall, glass and steel structure covering 4,500 square feet of light-filled space, the Glasshouse is the result of Chihuly’s lifelong appreciation for conservatories. 2 At the center of the Glasshouse sits a 100-foot long sculpture in a color palette of reds, oranges, yellows and amber.

The Exhibition Hall The eight galleries and three Drawing Walls of the Exhibition Hall offer a widespread collection of Dale Chihuly’s significant series of work. The works of art demonstrate how he pushes the boundaries of glass as an art medium in concept, execution and presentation.

1

3 Some of the not-to-miss gallery installations include Glass Forest – artwork featuring electrically charged neon and argon glass stalks or stems created by simultaneously blowing and pouring molten glass from the top of a stepladder to the floor below. 4 Throughout various artworks in the Sealife Room, Chihuly interprets various elements of life in the water. A tower and vessels with sculpted sea life forms such as starfish, octopus, conch shells, sea anemones, urchins and manta rays are presented along with several sea life drawings. 5 Chihuly began the Persian series in 1986 while experimenting with new forms. Originally, he displayed Persians in pedestal compositions, often with smaller shapes nested in larger pieces. Later, working with an architectural framework, he mounted larger forms to walls and suspended them as overhead compositions. The first Persian Ceiling was presented in his 1992 exhibition at the opening of the downtown Seattle Art Museum. 6 The Garden Anchored by four monumental sculptures, the Exhibition Garden provides an opportunity for discovery and surprise. A rich backdrop for the art, it features paths lined with trees, plants and flowers.

EMP Museum

Where Art, Music & Pop Culture Collide Studying our popular culture gives us insight into the power art has over us and within us, like taking a pulse on what we value and enjoy the most. To understand it is to understand how and why we consume art. The history of American pop culture is as vast as it is varied. One cannot discuss its influence without bringing up Rock ‘n’ Roll as a profound force. A historically American genre of pop music, Rock ‘n’ Roll was borne out of our need for expression, curiosity, and independence. If Rock music rattled our cultural conventions, Seattle, Washington, has been one of its most spirited epicenters. Seattle has fostered some of Rock’s most revolutionary acts to date. Jimi Hendrix, Nirvana, Pearl Jam, Soundgarden, Modest Mouse, The Foo Fighters, and Macklemore are on the short list of Seattleites who have transformed Rock forever.

Enter stage left: the EMP Museum, located in the bustling Seattle Center within a stone’s throw from the Seattle Space Needle. The EMP isn’t just a museum: it’s an experience, fashioned by pop culture fans for pop culture fans. Its mission is to inspire us to explore and develop our own creative and imaginative potential by making our own art. The brainchild of Microsoft co-founder Paul Allen, the EMP Museum opened in 2000 to unprecedented acclaim among music buffs, pop culture critics, academics, artists and musicians. Allen’s original vision for the museum was to commemorate the legacy of his childhood Rock hero, Jimi Hendrix. The EMP Museum began as Allen’s tribute to Hendrix and other pop music icons, but it has evolved into a celebration of pop culture in general. Not only does the EMP memorialize the history of Rock ‘n’ Roll, Hip Hop, and Disco, it also honors the legacies of Science Fiction, Fantasy, and Horror genres.

In addition to its eclectic 140,000 square foot interior, the EMP’s remarkable exterior enjoys international celebrity. Designed by the world-renowned, architectural virtuoso, Frank O. Gehry, the EMP’s layout is unconventionally innovative. The psychedelic and serpentine coherence of its patch-worked shapes is aesthetically compelling, urging visitors to begin an unforgettable voyage. Its fluid, metallic sheen has an organic and futuristic elegance. It’s as if all the glamour of Rock ‘n’ Roll were reincarnated into one building—and that’s the point. In conceptualizing the EMP’s appearance, Gehry sought to capture the undulating nature of music, itself. He cut apart a number of guitars and reassembled them into a rippling collage, which became his blueprint for the final look of the museum.

Behind its captivating exterior, visitors can wander through the EMP’s expansive and interactive panorama and let their own fascinations with pop music and pop culture guide the way. The Sound Lab is the crown jewel of the museum and truly makes the EMP special. The Sound Lab offers visitors an interactive, multi-media environment in which to engage their own musicianship. If you’ve never played an instrument and have always wanted to learn, you can choose from a wide variety of instruments to experiment with. A sweeping collection of guitars, drums, keyboards, samplers, and mixing consoles encourage the creative imagination in everyone. Already familiar with the guitar? The Sound Lab features hands-on modules, which teach you new riffs and techniques. You can even jam with your friends on different instruments at the same time in Lab’s Jam Studio or in one of its Soundproof Rooms. As it opens your mind to your own unique, creative potential, the Sound Lab will electrify your imagination well after your visit to the museum.

This vast collection includes souvenirs from Seattle-area events, like the 1962 World’s Fair and the 1999 World Trade Organization (WTO) riots, as well as artifacts related to local business and industry. There are also locally designed and invented products, recreational equipment, maritime objects, paintings by local artists, clothing and textiles dating from the early 1800s to the present day, and everyday household items from the period of Washington settlement through the World Wars, and up to the present day. On the top floor of the museum is a small gallery dedicated to Seattle's maritime history. Originally designed to train naval recruits during WWII, a replica of a ship's bridge overlooks the water and features a working WWII-era TANG periscope from a naval submarine that offers a 360-degree view of Lake Union and downtown Seattle. In the Bezos Center for Innovation, visitors can explore how innovation shaped the region and changed the world. They can tackle a challenge in the Idea Lab, discover a Seattle-made invention in the Patent Tree, and check out cutting-edge concepts in What's Next. This is where Seattle innovators share their latest projects and invite others to look into the future as it unfolds.

SkyCity

at the Needle Restaurant

Culinary Creations as Unique & Unforgettable as the View SkyCity at the Needle Restaurant is a legend in itself. Holding its title as the world’s oldest revolving restaurant, the eatery itself has gone through many changes throughout the years. Enter Chef Jeff Maxfield – a Seattle native with a passion for creating food that is not only visually pleasing but encompasses the diverse bounty of food native to the Pacific Northwest. Under the guidance of Chef Maxfield, the restaurant has become just as popular as the breathtaking views from the top of the tower, and for good reason. The restaurant boasts a seasonal menu that is full of amazing, locally sourced food such as wild mushrooms, hazelnuts, salmon, tuna and sea salt (yes, even their salt is produced in the Pacific Northwest).

From the baby spinach salad, topped with goat cheese fritter, hazelnuts and lamb bacon (yes, bacon!) to the RR RanchBeef Short Ribs marinated and braised with veal stock, coffee and chocolate, everything is thoughtfully prepared and reflects the wide variety of foods available to this port city. And if you thought things could not get more local, Chef Maxfield himself forages the surrounding areas for all of the restaurant’s wild mushroom needs.

It is this commitment to green, sustainable and responsible sourcing that has put the restaurant on the map, but it is the culinary creations that the restaurant team creates that garners such well-deserved attention.

Of course, nothing pairs better with a delicious meal than a breathtaking view, and this restaurant has plenty. Situated on a rotating platform, diners are treated to an amazing 360 degree view of Seattle and the surrounding mountain ranges. You might start your dinner with a delightful salad and fantastic views of the Puget Sound and finish off your main course with breathtaking views of the Cascade and Pacific Mountain ranges. If that were not enough, every visitor to the restaurant is rewarded with a free trip up to the Observation Deck, just in case you missed something! All of the hard work and dedication of the entire restaurant team has definitely paid off in spades. When James Beard House, the coveted culinary heritage foundation, came calling, Chef Maxwell and his team excitedly answered YES! In October 2013, some of their most popular and unique dishes, including the legendary braised short ribs, delighted the taste buds of the culinary industry’s elite, and Chef Maxfield could not be more proud of his accomplishments.

We’re passionate about what we do and we are passionate about the Northwest.

So, the next time you are in Seattle, a stop at the SkyCity Restaurant is a must. Boasting 1,200 – 1,500 guests per day during peak season, reservations are definitely helpful. And while you are waiting for your meal and enjoying the view, be sure to take advantage of the opportunity to interact with your fellow diners. In what has become a SkyCity tradition, patrons will write questions on cards and place them on the window ledge. The question travels all the way around as other tables pick up the cards coming their way, answer the questions and place it back on the ledge. No better way to end a perfect meal than to anxiously wait for your card to come back around to enjoy the different responses from the unique mix of people with you in the restaurant.

HISTORY Created in August 1907, Pike Place Market boasts a distinctive history. As the 19th century came to a close, Seattle was growing rapidly as the population of fisherman, merchants, and gold rushers continued to skyrocket. With a steady influx of new residents, Seattle City Councilman Thomas Revelle was concerned about the absurdly high prices being charged by middlemen for locally grown produce. He proposed a public market where farmers could sell directly to consumers. On its opening day, the Pike Place Market consisted of eight local farmers selling their goods directly to more than 10,000 people; thereby, eliminating middlemen and wholesalers in order to provide shoppers with valuable commodities at practical prices. Over time, the Market experienced stunning growth – now hosting more than 80 farmers, 200 businesses, and 200 craft booths. With over 10 million annual visitors, it comes as no surprise that the Pike Place Market has been lovingly nicknamed “the Soul of Seattle.”

Famous for its enthusiastic fishmongers, the Pike Place Fish Market offers some of the world’s finest seafood selections in an entertaining environment showcasing Seattle’s uniquely interactive fish sales. Did you know Most brands of lipstick contain fish scales.

Workers at the Pike Place Fish Market enjoy surprising and amusing their customers by chasing them around the market with a giant octopus, inviting them to participate in a friendly halibut toss, or simply putting on a little show to flaunt their flinging talents. This entertaining spectacle reached new heights in 1986 when the fish market owner and employees amped up their fish flinging from a time saving step to a fun, customer focused performance. Soon, this exciting pastime was adopted as fish market tradition and visitors from around the world began rushing in to experience the exhibition first-hand. Dressed in orange rubber overalls and boots, the Pike Place fishmongers begin their performances by loudly proclaiming the customer’s order, which is soon vigorously shouted back by another employee. With this signal, the original fishmonger hurls the customer’s hand-selected fish behind the counter for wrapping by the second, “echoing” fishmonger. As this pattern continues throughout the day, the fish market staff perpetually chants and hollers – demonstrating the very passion and commitment that continue to define the Pike Place Fish Market as a world famous seafood destination and cultural treasure.

This fabulous city by the bay that gave us local treats like Dutch Babies, garlic fries, microbrews, and yes, even world famous coffee, is most iconically known for its plentiful seafood and locally grown produce. Proudly serving up amazing seafood year-round, Seattle is known for its Dungeness crab and savory local salmon; however, the Penn Cove Mussels and Olympia or Hood Canal Oysters are also worth sampling.

Recognized for supplying over half of the nation’s apples, the state of Washington is especially proud of their harvest of apples. Sink your teeth into year round returns of Red Delicious and Golden Delicious apples, or seasonal picks of Gala, Honeycrisp, Granny Smith, Fuji, Braeburn, Cameo, and Cripps Pinks. In the summer months, be sure to also try some juicy Rainier cherries and top off with succulent strawberries, blueberries, raspberries, and blackberries. Other major regional crops include wheat, hops, barley, potatoes, sweet corn, onions, asparagus, carrots, lentil, and various herbs, which can be found in farmers markets, such as Pike Place Market or plated at local restaurants. Washington State wines are also becoming a major player in national wine production, and heading out to the wineries in and around Seattle is a great way to spend a day. Look for offerings in a variety of shades of hearty red and crisp white wines, which are proudly produced in the lush surrounding hills and grape-filled valleys. Washington Wine

The City of Music

9

Known for its rich history of musical innovation, Seattle’s many local players have had an impact in various musical genres including classical, jazz, blues, pop, country, rock, and hip-hop.

8

The most notable native talents include the recognizable voice of Bing Crosby, the first female big-band vocalist, Mildred Bailey; ‘50s country/pop star, Bonnie Guitar; folk singers, the Brothers Four and Chad Mitchell Trio; psychedelic bluesman, Jimi Hendrix; and one of the world’s most successful instrumental rock bands, the Ventures. Folk songwriter, Danny O’Keefe; bluesman, Robert Cray; jazz fusion guitar pioneer, Larry Coryell; and fiddle virtuoso, Mark O’Conner also hailed from the great Pacific Northwest.

7

On the rock scene Seattle boasts local heavy metal heroes, Queensrÿche; the rock group, Heart; and grunge gods: Alice In Chains, Soundgarden, Mudhoney, Pearl Jam, and Nirvana, to name a few. There’s also the Kingsmen of “Louie Louie” fame; the Sonics, ‘60s garage/punk pioneers; and more recently, hip-hop stars Sir Mix-A-Lot, Macklemore and Ryan Lewis. In the classical arena, the Seattle Symphony has a well-respected reputation as one of the world’s most-recorded orchestras. Today, Seattle’s music scene is alive and bustling with a host of offerings enjoyed by locals and visitors alike. Catch a concert of any type from blues to rock at the Showbox at the Market, be mesmerized by the greats at Jazz Alley or cozy up at the Cafe Racer for Sunday jam sessions by avant-garde artists. Sunscreen

Summer sun and warmer weather translate to active days outside, beach get-togethers and sunbathing by the pool. To keep your always-glowing skin, healthy happy and looking young, remember to slather on the sunscreen before heading out. Here are some quick tips to ensure skin-protection success! BABO BOTANICALS Clear Zinc Sunscreen SPF 30

Amp Up the SPF ACURE Mineral Protection SPF 30

AVEENO Protect & Hydrate SPF 30

sunscreens

An acronym for sun protection factor, the SPF rating tells you how well the sunscreen will filter out ultraviolet radiation from the sun, which is the culprit that can damage and age skin, and can increase the risk of skin cancer. Naturally the higher the SPF, the better the protection; however, the increase in SPF rating is not as proportionate as you would think. SPF 50 filters out about 98% of the UVB rays while SPF 30 is 97% and SPF15 is about 93%. So, make sure you at least add an SPF 15 sunscreen to your exposed skin for a good dose of protection and look for brands that offer broad-spectrum protection against both UVA and UVB rays.

Expired Protection

Check the expiration date to be sure that your sunscreen is still effective. After about three years, it may not work so well. Why risk it?

Apply & Re-Apply

Rub on at least a full ounce to your exposed areas BEFORE you head out into the sun, as it takes time to soak in. Also, re-apply every two hours as well as after swimming, toweling off or sweating to ensure that the protection continues.

Active & Water Resistant Formulas

OLE HENRIKSEN Truth Revealed Super Crème SPF 15

PAULA’S CHOICE Sun Care SPF 50

CANCER COUNCIL Ultra Sunscreen SPF 50

If it applies, sunscreen packaging is required to use the term "water resistant" versus waterproof or sweat proof and must be labeled as to how long it will resist water or sweat before it must be re-applied. A water-resistant sports formula is recommended if you are going to be rather active, but this type also needs to be reapplied every 40-80 minutes to be fully effective. Sunscreen alone is not enough to protect your skin against all UV rays, so cover up when you can, limit your exposure to the sun and stay hydrated at all times. Your skin will love you for it!

Bill Speidel’s Underground Tour

Did you know That United Parcel Service (UPS) was started in Pioneer Square in 1907.

Buried Deep in History Named Seattle in 1853 after Chief Si’ahl of both the local Duwamish and Suqamish tribes, Washington State’s coastal population quickly grew thanks in part to entrepreneur Henry L. Yesler, considered to be Seattle’s economic father and first millionaire. Yesler built the very first contemporary steam powered sawmill on Seattle’s waterfront in 1852 at the foot of what was then called Mill Road. Teams of oxen skidded harvested trees down Mill Road to the sawmill, prompting Mill Road’s famous nickname Skid Row. Mill Road, now Yesler Avenue, has been referred to as the separation between Heaven and Hell. The good citizens lived north of skid row, and the seedy sinners, south. This area kept its seedy side reputation intact for decades afterwards, some say even through today. Yesler, while Mayor of Seattle, made a great deal of his fortune taking advantage of the city and its inhabitants. William C. Speidel, founder of Bill Speidel’s Underground Tour defines this rascal and other founding fathers in his book Sons of the Profits.

Devastation to a city On the fateful afternoon of June 6, 1889, a cabinetmaker named John Back was heating glue over a kerosene fire. The glue boiled over, caught fire and quickly spread to wood chips and turpentine on the floor. Unfortunately, the shop was located beneath a paint store, and considering the building was constructed of wood, the fire rapidly spread to the surrounding buildings. Originally built on a landfill that was below sea level, Seattle’s water system lacked the pressure required to support the many hoses needed to put out the fire. Within 12 hours, 33 blocks burned to their foundation. Miraculously no life was lost, but the devastation to the city was vast.

Officials decided to re-build and filled in the roads to a higher level, reaching as high as three stories above their original location. Buildings were built above their old foundations, but sidewalks were kept at the original first floor level leaving storefronts below street level. Eventually the open area between the buildings and the elevated street was bridged, creating today’s sidewalks. Glass skylights were inlaid in the new sidewalk allowing sunlight to shine through to Seattle’s original “Underground” storefronts. This created a unique subterranean storefront level that quickly attracted a more sultry business climate.

Take a Tour Beneath Today, Bill Speidel’s Underground Tour reserves the “spicy” details for their evening adult tour. Thrill seekers will learn of a time where female sex workers were registered with the city as “Seamstresses” but rarely picked up a needle or thread. Naturally there are family-friendly tours at Bill Speidel’s as well! Who Knows - you may even catch a glimpse of the ghosts of the Duwamish tribes wandering the dark walkways on this tour. In his controversial Treaty Oration of 1854, Chief Seattle was referenced to have said, “You pushed us off our land, but never forget our spirits will always be here.”

Lou Graham, born Dorothea Georgine Emile Ohben, was a famous Madame who became one of the city's wealthiest citizens in the later 19th century (seated on the left in the picture above). Her tremendous estate went to the school system in Seattle and still supports it to this day.

Bill Speidel’s World Famous Underground Tour 6321 NE 175th Street Kenmore, Washington 98028 Take the Sound Transit Light Rail downtown and get off at the James Street station. Walk to Pioneer Square to 608 1st Avenue, which is between Cherry Street and Yesler Way.

Beaming Wellness Let Food Be Thy Medicine

SCAN To meet Lisa Oderweller

Get the ROCK STAR SMOOTHIE recipe@ HealthBeautyLife.com/food/beaming-recipe/

Built on the notion that “life is better when you are beaming” Lisa Odenweller, founder and CEO of Beaming Wellness, turned a personal philosophy into a thriving business. The combined pressures of parenthood, career and hormonal imbalances led to a period of declining health for Lisa. This prompted a path to healing and discovery that provided a life-changing revelation. Instead of traditional healthcare, she sought organic, plant-based solutions as her ‘treatment’ and discovered the power of food as medicine. As Lisa educated herself about how plant-based foods can heal and transform, she found that simple changes to her diet and lifestyle had a positive effect on how she looked, felt and experienced life. She witnessed first hand the potential to improve her own well being and made a commitment to share this knowledge and to inspire others to experience greater health and vitality by re-evaluating how they eat, drink and think. “I don’t think people realize how much power they have to control their health just by being more conscious and mindful of what they put into their bodies.” Lisa teamed up with several holistic raw food chefs, as well as health and cleansing experts to help develop her gourmet wellness business with an array of tasty organic, vegan, gluten-free, and mostly raw offerings. "I began Beaming with a raw food cleanse program that was not about starvation and deprivation like so many of the “cleanses” currently out there," says Lisa.

I wanted people to feel nourished and satisfied, focusing on long-term health instead of short-term weight loss. She continued, “I test marketed the raw food cleanse program with the idea of helping people feel (and look) so good that they wanted to continue; that they would want

to continue incorporating more whole foods into their diet. And it worked. People wanted to “Beam” all the time… thus, Beaming was born.”

The Beaming mission is to help people realize the power they have over their health. It begins by becoming more mindful of what we eat and drink and making simple changes that can have a profound effect on how we look and feel. Today, Beaming thrives online and at its first location in Del Mar with several more locations opening in Southern California this year. People flock daily to enjoy the artisan cold-pressed juices, superfood smoothies, delicious salads, raw foods, superfood snacks, and soups as well as their signature raw food cleansing programs.

Is it difficult to maintain a raw food lifestyle in the city?

I learned about raw food and healthy living when I lived in California. When I moved back to New York City, I was really worried how I was going to keep up this healthy lifestyle that I had found. I came back to New York and there were actually raw food restaurants and raw food deliveries. It was amazing. There’s raw food everywhere, and if you can’t find it locally, you can order it online. Just type “raw food” into your computer and a parallel universe comes up!

How did you come to realize that a raw food diet was for you? It’s a little embarrassing, actually. It was during a photo shoot to raise rain forest awareness called Carol Alt and Friends, in the Rain Forest. Basically, the photographer said that I simply wasn’t in bathing suit condition. I didn’t feel good and I knew I wasn’t. I just didn’t have the energy that I’d had and I didn’t feel or frankly, look my best. To make matters worse, another young 22-year-old actress was on set and everyone was captivated by her energy. I wasn’t angry or jealous, but I was interested. Fascinated, actually. I wondered, what happened? How did I go from her at 22 to me at 32? Fortunately, a good friend called and said, “Carol, you are the healthiest person I know. You have to meet this doctor. You will never look at food the same way again.” I was starving myself and starting to look bad from malnutrition, so I called the guy. He called me back and he told me what had been ailing me.

Our Publisher Patrick Dockry sat down with Carol for a candid chat about her life, overcoming issues and current projects. Let’s sit in and learn about her personal quest to discover, celebrate and share a healthy lifestyle of raw eating, and how it all led to her current starring gig on Fox News.

1on1 a

Miraculously, he diagnosed my top-six ailments, which included sinus infections, excess stomach acid every day, a chronic blood condition, fatigue, bloating, and lack of energy. He even cured me of a rash that had been misdiagnosed as poison sumac by accurately identifying the blood disorder. Once he told me what I should be eating, it was a major relief. What a miracle to realize that I could eat whatever I want, as long as it is prepared raw and cold pressed. I could eat Tartar and Carpaccio and a whole myriad of delicious foods. I never looked back… Why would I?

 a a

And you were so impressed by the raw lifestyle, it inspired you to write a book about it, right? Three books actually. The first was Eating in the Raw, and then The Raw 50, and the most recent is Easy Sexy Raw. I believe in the lifestyle because it has helped me so much. People say to me, “what… you eat carrots?” Ok, I eat carrots every now and then, but there’s so much that you can do with fruits and vegetables to make delicious dishes because many fruits and vegetables have little flavor. It’s all about the seasonings you add. You can make something taste like a spaghetti dinner, a pizza or a lasagna, but it’s so much better for you.

I understand that you have a new project. Yes, it’s a show called A Healthy You and Carol Alt. We pitched it to Fox News and they picked it up, now for a second year. It’s amazing. I love doing this show as I feel like it’s everything I went through from starving myself to bringing my health back from below ground zero. All of it was geared towards getting the show.

 a

a a a a

How long have you been on now? We just signed for a second year.

Congratulations! We are big fans of the show. I love that you’re kind of hard on the claims of some of the guests. If you aren’t sure about someone, you give real opinions and you really put the pedal to the metal, so to speak. Yes, I do. I need to know the truth and I just don’t want people to use me as an infomercial. It upsets me that there is so much snake oil out there. People are selling products under the guise of being natural and organic, when in fact, they are not natural or organic, or, in many cases, only one or two ingredients are. It’s mis-marketing and an abuse of marketing language that tricks people into buying things that really are not good for them…and paying more money for it, because the label says it’s natural and organic.

You don’t let them slide do you? No, I like to get to the bottom of it all. Pretty much everything featured on my show I’ve done or tried, so I know how well it works or how it doesn’t work before the show. That way I can talk about it. I make them convince me. Even if I don’t like something, I still give it a chance, but, in the end, I call it, as I see it.

How do you get your show ideas or your topics? A lot of them (the topics) are things that I’ve learned about in the last 17 years with my own health issues, they are recommended by friends (like you, motioning to Patrick,) and I have many friends and colleagues who email me with ideas. The beauty is that Fox News is all news, so I am allowed to offer topics that I believe are news. However I’m not a doctor. I engage experts to come on the show and talk about their particular fields.

You provide a great service. I think you need to be on television. I agree (laughs). I don’t make any money off of the show, and nobody can bribe me to say anything, as my existence does not depend on cash. I have been very blessed in my life with people who helped me with my health when I was in dire straights. So, for me, doing the show is all about paying it forward… and that’s what I’m doing.

As the nation’s oldest and largest youth mentoring organization, Big Brothers Big Sisters has helped children realize their potential through professionally managed, one-to-one relationships with adult volunteers for 110 years.

Today, Big Brothers Big Sisters is a staple in many communities; creating opportunities for adults to share valuable life lessons, interests, hobbies and skills, and most importantly – their time with a child who needs a reliable, compassionate adult in their life. Whenever Big Brothers Big Sisters pairs a child with a role model, it’s the start of something incredible: A personal relationship built on trust and friendship that can blossom into a future of unlimited potential.

It doesn’t take much to make a big difference in the life of a child who is facing adversity. Making a donation to support a match between a child and an adult volunteer, and/or volunteering to become a mentor are just a few mouse clicks or a phone call away.

In the Beginning

Ernest Coulter, a New York City court clerk, was concerned about the increasing number of young boys entering the legal system. He believed a healthy, consistent relationship with a caring adult would make a difference in these boys’ lives. He recruited 39 adult volunteers to each befriend one young boy, thus launching the Big Brothers movement. Since Big Brothers' early years, it has undergone several changes, most notably the partnership between the Big Brothers Association and Big Sisters International in 1977, but the focus has always remained on enriching children’s lives through positive, encouraging adult relationships.

Metropolitan Grill Seattle’s Classic Steakhouse If you find yourself in Seattle with a craving for a good steak, make your way down to Metropolitan Grill. Located in the heart of the financial district and nestled in the historic Marion Building, the restaurant is frequented by celebrities and industry big wigs. Why are they so popular with those in the know? Once you have had a taste of their mouthwatering steaks, you’ll understand.

‘‘

We have our own dry age room, which is very important – each steak is dry aged to remove some of that moisture and get that intense beef flavor.

From beginning to end, the focus is on quality. As Executive Chef Eric Hellner explains, “We do a lot of research and homework on what we felt was going to be the best beef program in the country." They begin by sourcing the meat from high quality farms selected for the way they feed and treat their animals. But the real secret is in the preparation; all of the meat is dry aged, prepped with some of the strictest cutting standards in the industry and seasoned with the restaurant’s signature (and top secret!) seasoning. Not only are their steaks impeccable, their service and atmosphere are hard to beat. Servers adorned in crisp white jackets are there to ensure your experience is one of a kind. As Chef Hellner states, “You are able to come in and just enjoy yourself, have really high quality food, high quality service just have a good time and know that you are going to be able to be comfortable just being yourself in here." And if that wasn't enough to convince you to put this on your “must do” list, the restaurant sources most of their vegetables in season from local farmers. Since nothing pairs better with a great cut of meat than a fantastic glass of wine, Metropolitan Grill has gone the distance to ensure your pairing is perfection. The restaurant’s wine menu is carefully crafted by Wine Director Noel Doty. So the next time you find yourself planning a trip to the Emerald City, add this location to your list of must-eat restaurants. But be sure to plan ahead because we weren’t kidding about the restaurant’s popularity – Metropolitan Grill recommends that you reserve a table at least 7 days in advance.

In Dr. Holly’s quest to find a satisfying place in healthcare, she joined the American Holistic Nursing Association and completed a post-graduate program in holistic nursing. This provided the ideal environment for her, which was guided by instruction and a philosophy that supported and treated people, not just their diagnoses, symptoms or lab tests. Eventually Dr. Holly became a Naturopathic Doctor and opened a private practice in Los Angeles where she focuses on comprehensive naturopathic medicine and individualized care. When patients come in to see her, according to Dr. Holly, most are in serious debt with their health. Because there are so many out of our control withdraws against our bodies with our ever increasingly toxic environment and chronic modern day stressors, she feels that patients can take control over what goes into their bodies by using the right nutrient-rich foods and targeted supplementation. This reduces the liability on our system by making more “good” deposits than withdrawals against it. “Nourishment involves large deposits of nutrients, vitamins, minerals, enzymes, and antioxidants, as they are what drive our biochemistry,” says this in-demand natural health pro. “It’s gas in our tanks, how we live and how we thrive. Also, so much of our health has to do with the ability to take in these nutrients, digest, assimilate and absorb them, and to evacuate the waste products on a regular basis.”

She continues, “People don’t realize that their gut is the center of their emotions. It’s sort of the second brain. Only 5% of serotonin, a neurotransmitter associated with mood, is created in the brain and the rest in the gut, which is a pretty big deal!” When asked about the principles of her field of choice, Dr. Holly replied, “Naturopathic medicine starts with the standard of ‘first does no harm’ for which dietary and lifestyle modifications very important. With the belief that the body can heal itself, and using food as medicine, we do all that we can do to get closer to people’s health care goals and desired results using the least invasive methods long before resorting to using drugs or surgery.” “First you want to identify and treat the cause, not just suppress the symptoms, but to get that story and to understand where that person has come in and why they are presenting in the way that they are. Whether it be a nutritional supplement and/or medication, we aim to fix the root cause but with an exit strategy in mind.”

‘‘

‘‘

Originally a nurse, Dr. Holly quickly learned that people give up some of their personal rights when they are hospitalized, such as the right to privacy, the right to choose, and the right to be informed and understand all of what is going on with their care. She became even more disillusioned with the simple directive of carrying out doctors’ orders, as she craved a more active and effective role in caring for people.

It’s important to take some time and truly nourish yourself. You are your own primary care provider and only you are in charge of taking care of yourself.

“I want to be in the business of facilitating understanding because when people have a better understanding, they are empowered and they take better care of themselves. When people get better, they feel better and then when we feel better, we do better, and then that trickles into our family and then into our community, and the rest of the world.”

A Competitive Edge Dr. Robert Walcher

Dr. Robert Walcher’s chiropractic journey began with his own injury when he was only 20 years of age. After trying everything he could to heal his back, he finally received his first chiropractic adjustment. Not only did his spine change after that adjustment, that one event changed his life and chiropractic care became part of his life’s journey. Now one of Southern California’s most trusted chiropractors, Dr. Walcher has since helped set thousands of patients on the path to achieve optimal health. In his 12 years in the business, Dr. Walcher has aided many people who suffered with migraines, allergies, neck pain, sciatica, and low back pain. He helped them to overcome these ailments using various methods to pinpoint undetected spinal subluxations, which are often the cause of many of these symptoms. He also examines the nervous system to find any abnormal stress that could be causing issues. Dr. Walcher feels that regular chiropractic care will reduce abnormal stress affecting nerve function, thus allowing bodies to heal and more importantly, work correctly.

‘‘

I have found that 90% of the time, people do not know there is a problem with their spine. Various spinal problems lead to a host of painful symptoms. My goal is to get the nervous system functioning at 100%, and in turn the pain can usually dissipate.

Dr. Walcher points out that our bodies are under three types of stress at all times: Emotional stress such as finances, kids and work; physical stress, which can be from a car accident or everyday things like how you carry your purse, lift something, or cross your legs; and chemical stress, as in environmental toxins, medications and anything in your diet. These stressors build up on the spine, and then affect how the nervous system communicates with our bodies thus creating symptoms. Many times problems with muscle tension, spasm, weakness, fatigue, and health concerns like digestion issues, asthma and allergies can be overcome with better spine care. “Because these stressors are unavoidable, we as chiropractors address the spine and nervous system by giving regular chiropractic care. Chiropractic is really about performance. Allowing your body and nervous system to work to the best of its ability. That’s why you see all of these major athletes with chiropractors in their lives. It’s so they can perform better,” Dr. Walcher mentions. “Fitness also prevents injuries and allows you to live your lifestyle and push yourself to the limit. In my practice, I help people not only prevent injuries,” he continues, “but the bigger thing is that I help prevent sickness and disease (out of alignment). That’s the big picture in chiropractic.”

You’ve got to be consistent with everything. With eating, taking care of your body, taking care of your spine, working out, all that stuff. If you do it consistently day after day, year after year, then you really can see major changes in your life.

Beyond Skin Deep Dr. Tess Mauricio

A True American Success Story Born in the Philippines and the oldest of four kids, Dr. Tess and her family moved to America when she was only 12 and her youngest sibling was a mere three months. With all of the turmoil surrounding the impending ousting of then-President Marcos, the family made a clean break for the states leaving everything they had behind. They shared a small two-bedroom apartment in east San Diego, in less than desirable conditions, and settled in for a long and difficult journey. While her parents each worked two jobs to make ends meet, Tess was the main caretaker for her younger siblings.

The children attended public schools and had to hone their almost non-existent English skills very quickly, a task that was somewhat daunting to the young Tess. However this pint-sized dynamo set her sights high from day one and went on to become a true American success story. Tess’ parents would always make it a point to say, “This is just temporary. You know who you are, your worth and what you can do. You can pull yourself out of this situation.”

‘‘

‘‘

Beautiful, smart and driven – three spot-on descriptors for Dr. Tess Mauricio. This Board Certified Dermatologist, graduate of Stanford University School of Medicine, and Summa Cum Laude graduate of The University of California San Diego, is the founder of M Beauty by Dr. Tess clinics in Southern California. What you don’t know about this successful physician, author and on-air personality is how she got her start and the obstacles she had to overcome before becoming America’s Favorite Dermatologist.

I always had friends, but I was always definitely more driven and focused on excelling.

“Every time I started a school,” states Dr. Tess, “wherever it was, I had goals. I told my mom that I would be valedictorian and I did everything that I needed to do to become so.” And do so, she did. Tess not only graduated top of her class and delivered the closing statement at her high school graduation ceremony, she was the battalion commander for the ROTC. Because of her shining achievements, she was awarded a full Air Force scholarship and an engineering scholarship.

Out of financial necessity, Tess opted to become an Electrical Engineering major at the University of California San Diego (UCSD) and was one of the few female students in the program at the time. After acing the academics for two years, she knew that she had the grades for a degree in medicine. So she changed her major to biochemistry, applied to medical school and the rest is history.

My passion was always medicine but being poor you have to think financial and practical.

Overcoming Her Own Issues In addition to the financial issues once she reached the states, Tess also had challenges when growing up in the Philippines. Having a severe bout of eczema and darker skin than her siblings brought social scorn. Secure in her academic abilities, she developed a strong personality and was well liked by friends, but the stigma of her skin issues were still festering in the back of her head. “I always had to wear pants and knee-high socks to cover my legs, otherwise I’d be teased. My brother was the beautiful one and I was the smart one. I always had that, but I was hoping to someday fix my skin issues so that I would be more confident,” Tess adds. Today Dr. Tess feels that the level of what we accept as beautiful changes for all of us. Knowing that inner beauty, in the end, is really what counts, she encourages everyone to try to stay psychologically intact, find a support system and to do the things in life that are fulfilling. However, having grown up being (in her own words) "not that attractive" and then later on finding great technologies that can help transform such issues, she feels the need to get the message out. Dr. Tess continues, “Because there are girls, teens, and women of all ages who have little things with their physical appearance that they wish they could improve, I want them to know that there is technology that can help.”

‘‘

I have a deep appreciation of how our skin looks and how it impacts how we feel. I’ve personally gone through the journey and I want others to be part of it so they can be inspired and educated that no matter where they are in their lives, they can do something right now to change their situation and make it better.

Total Beauty Knowing that true beauty is about how you look on the outside and feel on the inside, Dr. Tess Mauricio partnered with Wellness Doctor, Dr. Brian Alman Ph.D. to write California Total Beauty. The book offers a simple approach to happiness by combining an attractive outside and a healthy, positive inner-self. This leading cosmetic dermatologist and top wellness coach work together to help readers enhance their appearance from the outside in and from the inside out. californiatotalbeauty.com

Dr. Tess’ Time Machine Procedure™ Skin Tightening & Resurfacing Technology When people get older and lose collagen, or even experience weight loss, the skin sags. In order to restore the skin to a younger state, collagen must be rebuilt to have a firmer, more youthful appearance. Using a combination of state-ofthe-art technologies and many years of expertise, the Time Machine by Dr. Tess takes on age-related issues and offers complete rejuvenation and natural looking results. Part of the Time Machine process is the new micro fractional ablative radio frequency technology, which is designed for skin tightening and resurfacing. This procedure rebuilds collagen in the skin, offers improvement of fine lines and wrinkles, acne scars, skin rejuvenation, skin tightening, and stretch marks. It is used in combination with laser resurfacing treatments and is followed with Platelet Rich Plasma (PRP) therapy, micro needling and other specially selected technologies and skin care products to aid in healing and maximize results. It works using two different types of energy to heat the skin: Micro fractional radio frequency technology, which is basically tiny electro currents that heat the skin on contact and micro plasma technology that delivers good heating under the skin. Little electrodes that look like wheels on the surface of the application device tip deliver the frequency on the skin. The skin’s natural reaction is to lay down new collagen, which results in younger looking, thicker and tighter skin. The procedure is quick and the down time is minimal with amazing results and without having to go under the knife. Dr. Tess starts the treatment by applying a topical numbing cream, which is left on for 30-45 minutes to take full effect. The tip of the hand tool is carefully run along the affected area in one or two passes with sort of a rolling sensation. A warmingmbeautyclinic.com sense is felt along with an occasional zapping sound, which indicates the process is working. In the end the area is a little tender, slightly swollen and looks, as if there is a mild sunburn. After a couple of days, healing has begun and a normal lifestyle can be enjoyed.

Dr. Tess is the founder of Scripps Ranch Dermatology & Cosmetic Center and several locations of M Beauty by Dr. Tess clinics throughout Southern California, where she enjoys every aspect of dermatology. This busy Dermatologist is also a published author, educator, guest speaker, and talk show host. mbeautyclinic.com

Welcome to Rei do Gado, the best Brazilian Steakhouse in Southern California. Although the scent of the food may have the familiarity of your favorite steakhouse, Rei Do Gado is anything but typical. The service is in the style of Rodízo (loosely translated it means all you can eat), although most of us don’t think of high-end cuts of meat and fresh delicious side options when we think of a buffet-style restaurant. Rei Do Gado is one of the only Churrascarias in the United States to cook their food over a mesquite-charcoal fueled heat, which replicates the way the Gauchos of Brazil cooked their meat over 200 years ago. As authentic as it gets! Once inside you are greeted with an awe-inspiring array of food all around you, which is prepared by Chef Aristeu Lucas and his amazing team. Let your stomach be your guide as you wander the amazing display of charcuterie, cheese, fruits, vegetables and salads. But don’t let the variety and selection fool you. This is just the first course! At your table you will find a wooden stick (it actually resembles a spice container) with a red and a 88 | Health Beauty Life Magazine

green end. This little guy is your ticket to the meat show. Once you have returned with your first round of salad and side options, flip the marker with the green side pointed up. This signals the passadors (meat waiters) to make a stop at your table as they dance around the restaurant with their fresh mesquite-charcoal grilled meat. Once you have signaled the meat procession, you are in for an awe-inspiring selection to choose from. If you thought the selection and the salad and sides bar was amazing, wait until you experience the variety of fresh-grilled meats that will pass by your table. There are turkey and beef filets wrapped in bacon, perfectly marinated lamb chops and fall-off-the-bone ribs. They even feature homemade sausage and you must try some of the house favorites: The skirt steak, which is sooo tender beef ribs that melt in your mouth, and the ever-popular Picanha roast, skewered to allow the juices from the fat to baste and marinate the meat as it grills. The meat is presented to you on the spit where your passador will carve a slice just for you. Like your meat rare? Maybe you have more of an affinity for a well-done slice? Whatever your preference, the passador will be

sure to serve you with exactly what you want by carving from a portion of the meat that is just right. Don’t feel that you have to try everything the first time around and don’t be afraid to turn that stick from green to red if you need a break. The different types of meat will be in rotation during your whole meal so you can try the tenderloin everyone was raving about or have seconds of your favorites! In addition to their amazing display of food, the restaurant features a full service bar with a good variety of wines and beers but we suggest you wash down your food with a Caipirinha, a traditional Brazilian cocktail made with Cachaça (sugar cane hard liquor – yum!). And although it might be hard, don’t forget to leave room for dessert. Their Passion Fruit Mousse is so light and airy; it is the perfect end to a perfect meal.

A word to the wise – it is easy to fill up on the delicious array of sides and fresh veggies but you definitely want to save room for the best part – the meat! Select a few sides to try and go up for seconds after you have had a chance to eat some of the churrasco-style meats that are in constant rotation.

What is a Churasscaria? What began as a gaucho tradition in Brazil in the late 1800s has become a very popular restaurant trend in the United States. It combines the variety of food many Americans are accustomed to with the slow food movement that is popular in many other parts of the world. Patrons can relax, enjoy great food and great company while dining on delicious grilled meats and fresh vegetables. With a never-ending variety of proteins and sides – people with a variety of dietary needs can enjoy a meal that is perfectly suited for them. Although gaining popularity in the United States, the Brazilians are still kings of the Churrascaria with over 500 Rodizo-style Churrascaria in Sao Paulo alone! Viva la Brasil! The next time you are looking for a truly unique dining experience and want to try some of the best food in San Diego, be sure you stop by Rei Do Gado. Just bring an empty stomach!
