SPECIAL DIGITAL ISSUE SEE THE GOOD – even when things are difficult. Through each trial, our community rises to the challenge. From the recent Carr and Camp fires, and now with COVID-19, the North State always finds a way to take on tough situations together. We step up to the plate, pitch in where needed and do what needs to be done. Throughout this time, the Enjoy mission stays the same: share positive stories about our community to encourage and uplift those around us. Our lives have changed quite dramatically the last few weeks, but the power of our community has not. In this special online edition, we want to continue to share those things with you. IN THE MIDST of a global health pandemic, each and every one of us is struggling to find a new normal — a way to get up in the morning and find purpose when we are scared of the unknown, worried for our loved ones and concerned about our ability to maintain life as we know it amidst the circumstances. This struggle isn’t limited to our community or our state. The world at large is fighting this battle and none of us are immune to stress or worry. Unfortunately, like most businesses, this has affected their staff drastically as most of them are college students with limited income. In order to help with the situation as much as possible right now, The Commons has decided to create an online store through their website and will donate all proceeds to their employees. According to the Mayo Clinic: Alcohol use disorder (sometimes called Alcoholism) is a pattern of alcohol use that involves problems controlling your drinking, being preoccupied with alcohol, continuing to use alcohol even when it causes problems, having to drink more to get the same effect, or having withdrawal symptoms when you rapidly decrease or stop drinking. Alcohol depresses your nervous system, in some people the initial reaction may be stimulation, but as you continue to drink you become sedated. ONE OF MY favorite sayings is, “Stop and smell the roses along the way.” How often do we miss great joy in our hurried lives? Maybe we should have classes on how to take a few minutes to savor the moments. My mother-in-law had a great way of encouraging me to take in all that was around me. “Appreciate the moment as it will slip by quickly and quietly.” Those quick instances can live and encourage us as we draw on the memories we hold in our hearts. These last few weeks, as the distractions of what is happening in our world weighed heavily on me, I almost missed the roses again. My dog barked at a bird outside my window and my attention was drawn to the beauty right outside. I had become so consumed by working from home, that I almost missed the trees budding. I determined that I would take a fresh opportunity to look out and look up every day. It’s easy. Just lift your eyes.

A childhood memory came to mind: I was lying in the grass under a tree imagining what life would be like if I could fly. The backdrop of the blue sky above trees outside my childhood home was especially mesmerizing. Robins hopped from limb to limb then fled when startled. A bird’s life seemed ideal. Those days feel a hundred years ago but the memory was fresh in my heart. The birds don’t have a worry and yet they are beautifully arrayed in colors much greater than Crayola could ever create. The trees are not bound by deadlines or the demands of the world, yet they embrace their rebirth each spring. The cares of the day often bombard, distracting us to the point where we neglect the beauty of the moment. Take a few minutes to look outside. Trees bud, birds sing, and roses smell great! Find some loveliness to savor and be thankful right now. SMILE as beauty is never more than a few feet away.•

In times of great stress and uncertainly, the arts have traditionally provided a place for us to come together as a community and a way to support local businesses through tough times. But the concerns our community struggles with today preclude us from getting together to celebrate each other and our amazing North State community. With all of the Covid19 dyanamics at play, and based on my last conversations with the 3 Forest Services, Tribal Counsels, Private landholders, medical team, etc., the cards have just not fallen in our favor. We will be moving the California Untamed 330 to 2021. With the global situation around health saftey and travel bans, home shelters and the closing of trails and outdoor activities (of varying scales across the world) plus the economic hardships taking place, I am confident in the direction and decisions being made. While I know this is the right thing, the sting of disappointment is real. Every runner signed up is receiving 100% rollover credit to California Untamed 330 for 2021 or 2022. The new date for next year is: Friday, July 16 2021. I am updating UltraSignup and information to reflect next years date. Another option, as some may not be able to make July work, over the next month I will be coming out with full details on my new race: Sierra Untamed 333m | 222m | 111m that will be taking place Sept 2021. The course will be starting and finishing in Bishop, CA and venturing into Mammoth. Runners may utilize their entry for Sierra Untamed if need be as well. UltraSignup and our website (www.californiauntamed.com) are being updated as we speak to reflect 2021 informaiton. Stay tuned and keep those heads up. And remember- we are in this together. Service To Others I was raised by my single, hardworking mother. We moved around a lot and I didn’t have a stable childhood growing up. When I was a sophomore in high school 9/11 happened and I knew I had a duty to serve others. I joined the US Navy as a corpsman right out of high school and was deployed to West Africa for operation Flintlock. When I came back to civilian life I couldn’t sit behind a desk for 8 hours a day, so I went back to doing what I knew best– helping people. I was hired at the primary 911 ambulance service for the Los Angeles area where I worked for three years. At that time, the firefighters there encouraged me to become a firefighter. Through divine providence, my Father-inLaw offered my wife and me a house in Redding. We moved a week before the academy started!

The first person I interacted with when I moved up here was Shasta College Fire Academy Chief Donovan Lacy. He is a very kind person, and very accommodating. Every instructor and staff member and especially my fellow students were pivotal in helping me settle into my new life and achieving success in the program. I’ve graduated from the academy, applied to CalFire, and plan to continue my education with a graduate degree in fire science. Coming to Shasta College has taught me the necessary skills to succeed in my career and better protect the community I serve. Enjoy reader Kylie Sisneros shared the following with us: “Hello. I just wanted to send you a message of positivity. I just finished making the pea soup featured in April’s issue and it was delicious! I had to make some small substitutions based on what I had at home during the quarantine (green onion for leek, 12 oz shelled edamame for peas, 2 cups veggie stock with 2 cups chicken stock, and evaporated milk for cream) and it was phenomenal. I will for sure make this again and it a great fresh way to feed myself and my son. Making the recipe was a welcome distraction. Thank you for all you do and thank you to the author.” Thanks for sharing Kylie. Enjoy!

DIRECTIONS: STEP 1: Start with making the parmesan crisps. Heat oven to 400 degrees. Line a baking sheet with parchment paper or a silicone baking sheet. Divide the grated parmesan into 6 round circles spaced evenly apart. Place in the oven, and bake for 3-5 minutes, watching for melting and a light browning of the parmesan. Once done, remove and while still warm and a bit flexible, remove the crisps from the baking parchment with a spatula and allow to cool on a platter. STEP 2: Next, place a large stockpot or Dutch oven over medium heat. Add the butter and olive oil. Once melted, add the chopped leek and potato. Season with salt, pepper and cayenne pepper. Cook until leeks are translucent, about 5 minutes. Add the garlic, stir while cooking, another 3 minutes. Add the chicken stock and bring the mixture to a boil. Lower heat and simmer for 10 minutes, until the potato is tender. Add in the peas and allow to simmer for approximately 5 minutes or until the peas are tender. STEP 3: Remove the soup from the heat and carefully pour into a blender or food processor. An immersion blender will also work, placed directly in the pot. Puree the mixture until smooth. STEP 4: Return the soup to the pot, add in the cream and mix until incorporated. Garnish with a dollop of crème fraîche and serve with a Parmesan Crisp on the side.

INTENTIONAL OPPORTUNITIES FOR CASUAL CONVERSATIONS WITH YOUR TEEN Engaging your teen in casual dialogue is a fruitful investment of your time and energy! Asking open-ended questions about school, friends, hopes, fears and their vision of themselves as an adult prove to be invaluable, entertaining and enlightening conversations. Many parents report the most informative conversations with their children occur while riding in a car, cooking a meal together or while engaged in an activity that both enjoy. Reach Higher Shasta’s teachers, school counselors and administrators encourage parents to be intentional in creating opportunities for casual conversations! Of course, a healthy conversation includes both talking and listening. Listening means paying attention not only to your child’s story, but how it is told, the tone of voice and body language. In other words, it means being aware of both verbal and non-verbal messages. Your ability to listen effectively depends on the effort you are putting forth, your dedication to listening without solving the other person’s problem, ability to refrain from thinking about what to say next and most certainly your ability to listen without infusing your personal beliefs. Remember to model effective listening skills because it’s crucial that our children become good listeners due to the multitude of benefits, including but not limited to family dynamics, ability to make and maintain friendships and to become employable. “The most basic and powerful way to connect to another person is to listen. Just listen. The freedom to have casual and open conversations builds rapport between teens and their parents/guardians. Over time, this strategy enhances the relationship, but also eases the anxiety for teens confiding in parents/guardians about sensitive topics like bullying, peer pressure and abuse. We encourage parents/guardians to feel free to talk to their teens about certain common teenage problems like dating, sex, drugs and alcohol. Effective use of communication will foster relationships of trust, respect and acceptance between the teen and the parent. It is vital to our children’s mental health that each and every one of them have a responsible, nurturing adult in their life and that they have an adult willing to listen without judgment.
