Owner, Strong City Strength and Conditioning I am a Northern California native who grew up around the east side of the San Joaquin Valley and the foothills just outside of Yosemite, where my dad worked on cattle ranches. I first moved to Redding in the winter of 1999, just a few years out of high school, to pursue a relationship with my now-wife, Rachel. Some of the first things I loved about this area are the vast ranchlands, the mountains, the beautiful lakes and streams and the Sacramento River running right through town. I love that in an hour or less in any direction, depending on the time of year, you can snow ski, hike some of the most beautiful trails on the west coast, enjoy activities on some of the best recreational lakes and access some amazing fishing. Rachel and I have two boys, Caleb, 17, and Chace, 14. In the summer of 2003, just six weeks after Caleb was born, Rachel and I loaded up and moved to Broken Arrow, Okla., then moved to Chino Valley, Ariz., where we worked on cattle ranches and eventually opened our own custom saddle shop. Arizona was a young cowboy’s dream. However, we missed the trees, lakes and mountains. And, ultimately, we missed family. In 2013, we returned to Redding. I spent the first couple years doing what I had always known to do, which was to shoe horses, and I had a short stint at Shasta Livestock. I then began coaching classes at Jefferson State CrossFit, where I spent several years before this last summer, when we decided to open our own gym. Strong City Strength and Conditioning is now where I spend most of my time. I have fallen in love with coaching, and mostly with seeing people gain confidence through gaining strength and health. Now, we spend our summers boating on Whiskeytown and Shasta lakes or paddleboarding down the Sacramento River. We also love hiking and camping in the mountains. From Castle Crags to Lassen Peak, there is so much beautiful country to see and enjoy. In the winters, we love to ski and snowboard at Mt. Shasta and bass fish on Shasta Lake. Northern California truly is an outdoorsman’s dream. I also love that our town is growing, with locally owned small businesses and restaurants. I love food. And I especially love great coffee. We have some of the best coffee roasters and coffeehouses anywhere, as well as microbreweries and wineries. It’s amazing how much our small town has to offer, yet we don’t have to put up with all that comes from a big city. It’s really the best of everything.

WORK IT OUT F I N D A W O R KO U T T H AT W O N ’ T FA L L B Y T H E WAY S I D E JANUARY IS THE MONTH of fresh starts, new dreams and all the chances we did not get to take last year. It is a moment to reset and start again with a renewed sense of possibility. It is no surprise that January is the quintessential month for setting new goals for health and fitness. But even those best laid intentions often fall short a few weeks in, when the magic of the holiday season gives way to real life again. While it would be great to stick to the ambitious workout schedule or diet set into motion in a New Year’s resolution, setting unrealistic goals can set us up for failure. That well-intentioned plan to work out five days a week can quicky devolve into an “I’ll-walk-on-the-weekendif-there’s-time” reality. Sure, the gym sounded like a great idea on paper, but who knew you would be more excited about yoga, a dance class or an opportunity to learn a martial art? Consistency comes with engagement. Location matters. Find a workout environment that meets your needs effectively and you are likely to stick it out past the customary two-week drop off period. Follow along as we share a few tips for choosing a workout environment that will keep you motivated all year long. Location: An Aerobic Center Aerobic centers are all about cardiovascular health, strength training, muscle toning and flexibility. Aerobic centers will have stationary bikes, elliptical machines, treadmills and stair climbers, all designed to increase heart rate so your ticker can reap the health benefits. If a machine isn’t likely to hold your interest, try one of the step, spin, dance or kickboxing classes typically offered at an aerobic center. You’ll get your heart rate up while connecting with others who share your interests. Location: A Gym The gym is the ideal place for those interested in weightlifting and strength training. They are equipped with machines, free-weights, barbells and other equipment designed to build muscle and lose pounds. Aerobic machines and equipment can likely be found there, too. Gyms often have personal trainers who can help determine an ideal workout regimen and dietary requirements to meet specific weight or fitness goals.

Location: A Yoga or Pilates Studio While yoga and Pilates promote physical health, these two forms of exercise also keep mental and emotional wellness at the top of mind. Relaxation and stress relief are at the core of the practice. Trained instructors highlight breathing exercises, centering, balance and focus as they help their clients build muscle tone, core strength and flexibility. A yoga or Pilates class in the morning is a great way to gain the focus you need to start your day and a great way to unwind after work. Location: A Dance Studio Dance studios provide a place for creativity and fun while you are getting healthy. While dancing can be an intense workout, it also provides a mental break from the stress of life. Classes are tailored to dance style and skill level, so there is something for everyone. Dance studios are a great place to connect with those who share your interests. Children benefit from dance classes because they provide a fun-filled way for them to expend some energy while they gain valuable social and educational experiences.

Location: A Functional Fitness Program Although the phrase “functional fitness program� is a loose definition for any workout regime that incorporates real-life body movements like reaching, pushing, pulling, lifting or squatting, this term could be applied to programs like CrossFit, Ninja Warrior workouts or parkour. These programs are based on high-intensity interval training and include exercises like squats, pushups and weightlifting for a specific amount of time. The goal is strengthbuilding, conditioning and agility training. These programs nurture a sense of camaraderie – and a healthy dose of competition. Location: A Martial Arts or Boxing Program A good workout does not have to involve machines. Sometimes, the best exercise regime is one that incorporates fitness, personal safety and resistance and strength training with others. Ju jitsu, karate, taekwondo, kickboxing and boxing are centered on focus, discipline and self-defense techniques that are often as applicable off the mat as they are on it. progress as they advance to different levels based on specific training and individual sparring matches. Programs like these build character and integrity, nurture a sense of personal responsibility and encourage good sportsmanship. Location: A Fitness Center A fitness center is the very definition of one-stop shopping. Aerobic exercise, yoga classes, weight training equipment, a basketball court, a swimming pool, a jacuzzi, a sauna and childcare options are what you are likely to find here. Fitness centers often have personal trainers on hand to help you make the most of your workout. Because of their wide range of amenities, fitness centers tend to be a top pick for families and fitness enthusiasts of all ages. Location: Athletic Club or Country Club An athletic or country club provides its members with a wide range of sports activities, including basketball, tennis, racquetball, squash and golf. While membership tends to be more costly than at other fitness centers, they include amenities that are not typically available at other establishments. Features like on-site dining, massage, tanning and a shop in which to purchase sports apparel distinguish athletic and country clubs from their counterparts. While some activities are included in the membership costs, others are itemized. Location: A Home-Based Workout Sometimes it is just easier to work out at home. Pick up free weights, a stationary bike or a yoga mat and rock out to your favorite tunes while you get fit in your living room. If you prefer to exercise outdoors, consider an investment in a basketball hoop or a trampoline with a safety net. A jog around the neighborhood or a walk in the park is a great way to stay healthy without the cost of a membership. Whatever workout environment you choose, make sure you find joy in going there. When you love something, it doesn’t feel like work.•

O L I VA R E Z B E E C O M PA N Y I N O R L A N D THERE’S GOOD NEWS in the North State for anyone who has been concerned about declining bee populations. The Glenn County town of Orland, home to Olivarez Honey Bees, is one of the world’s leading producers of queen bees, and is making significant contributions to the regeneration of hives across the United States and into Canada. “Eighty percent of the world’s queen bees are bred in these 20 miles,” says Lyle Ferguson, a director at the family-owned company now in its third generation. It’s a combination of topography, forage availability, climate and a well-guarded family secret. For while a queen bee can lay up to 3,000 eggs a day, they will all turn into worker bees unless a rare and special process occurs involving royal jelly, which will create a new queen. “To do that on the scale of a commercial beekeeper, there has to be some human manipulation,” says Ferguson, adding a little intrigue to the subject. That process is what allows Olivarez to help everyone from hobbyists to sideliners to commercial producers to keep going in the face of the mite infestations and environmental factors devastating hives. “Without queen bees, the populations would continue to dwindle,” he adds. The company also raises bees in Kona, Hawaii, where the climate allows them to raise queen bees year-round, particularly in the winter months when it is too wet and cold in Northern California. This is critical for almond pollination which typically starts in late February. “California doesn’t have enough hives to meet that pollination,” says Ferguson, noting that the need for bees for this one crop is so great that beehives are brought in from as far away as Florida for the three-week pollination period. Ray and Tammy Olivarez are a husband-and-wife team who have expanded on the apiary work started by Ray’s father, Ray Sr. The younger Ray had a significant bee allergy as a child while his father was developing his knowledge, but outgrew it and developed a passion for the bees himself. That passion is built into the company’s commitment to helping hobbyists get started as beekeepers. “The sheer number of hobbyists that we support is just incredible,” says Ferguson, noting the various starter packages the company provides, including bees and hardware such as hives and frames. In pre-pandemic years, the company hosted an annual Hobby Day which attracted up to 5,000 people. They could attend lectures and meet with experts in the field as well as purchase equipment that may be hard to find otherwise. Beekeeping has become popular with people wanting more food independence and support pollinating their gardens, as well as those looking for a natural sugar source. There are also those who just want to play their part in keeping bees alive. “We think the hobbyist has a collective voice that is very powerful,” says Ferguson, noting that many hobbyists are vocal about policies that impact bee populations. It’s also all about the honey, particularly for the couple’s children, Ryan, Josh and Haley, who have started Chico Honey Company and fill jars of fresh, pure honey to sell. The family has become adept at incorporating honey into many different endeavors, including their restaurant and bar in Orland called The Hive, which incorporates honey into most items on the breakfast, lunch and dinner menus, including a homemade honey ice cream. The Hive also has a full bar and offers signature cocktails.

The company has also developed a partnership with Golden Beaver Distillery in Chico to create a honey-based specialty spirit. “It tastes like a very complex tequila,” says Ferguson. “It’s the best descriptor I can give it. It blends extremely well with anything citrus and goes well with ginger products.” There are two offerings: one that is a clean distilled spirit and another that is “oak rested” in barrels for eight months following the distillation process. At Olivarez Honey Bees, bees and honey are more than a business, they’re a lifestyle. For Ferguson, who had worked in the coffee industry prior to his current position, “Honey is so much more complex than coffee.” For the Olivarez family, bees are a passion handed down from generation to generation, with each one finding a new aspect of the industry to grow. I believed that I had been born into failure and had

no realistic chance at a happy, successful life. My family struggled financially. My father and mother were both addicts, so most income went towards their habits. Summers were spent with my grandparents on their farm to work. Although the days were long and challenging, my grandfather instilled in me a drive to work hard to achieve my goals. At 17, I moved out and began working. College seemed like an impossibility to me for many years. My grandfather continued to be my saving grace. Before he passed from bone cancer, he helped me get my life back on track. My grandfather had been an agricultural professor at Shasta College for many years. Watching him motivate his students and positively impact their lives became the catalyst I needed to enroll at Shasta College. I am now carrying a 4.0 GPA and working as a writing tutor at the Shasta College Learning Center. I have never been more confident in my future. My ultimate plan is to earn my bachelor’s degree and join the JET program to teach English overseas. keep moving forward. S TAY I N G AC T I V E D U R I N G C OV I D IT DOESN’T TAKE an infectious disease expert to determine that life during a pandemic is pretty darn challenging. But even while protecting your health and that of others, there are still plenty of opportunities to stay active. After all, there are benefits to getting outside and getting some exercise. It can be a balm to one’s mental health while helping to shore up the body’s immune system, says Kerri Schuette, a program manager with the Shasta County Health and Human Services Agency. If enough snow has fallen, Mt. Shasta Ski Park is one wintry option. This year, skiing in the time of COVID-19 means wearing masks except when actively skiing. Guests and employees are required to wear masks and practice social distancing while indoors, in the base area, loading or unloading from a chairlift or taking lessons. Ski park staff will provide outdoor food venues and work double-time to sanitize restrooms and all high-traffic areas. Access to the ski lodge will be limited and only family members and friends will be allowed to ride together on chairlifts, so plan on slightly longer waits in line. Ice skating is an alternative and Mount Shasta’s Siskiyou Ice Rink, the only National Hockey League regulation-sized outdoor rink in California, has adapted to the pandemic by limiting its 90-minute sessions to 75 people per session. Face coverings are required for all, and congregating on or off the ice is prohibited. Closer to Redding, the tried-and-true Sundial Bridge is always worth a socially distant visit and it provides access to some easy walks in the Turtle Bay Botanical Gardens and around the Redding Arboretum. The Sacramento River Trail can be accessed at the Sundial Bridge as well. Hiking is another way to get outside while keeping a little distance from others, and Healthy Shasta provides a handy trail map and other resources. The more determined hikers can investigate the 11.7-mile Chamise Peak Trail near Shasta Lake, the 10-mile Cabin Creek Trail (formerly Squaw Valley Creek) near McCloud and the 5.7-mile Mount Harkness Trail near Chester that features a tour of a working fire lookout. When roads are clear and potential COVID-19 restrictions allow, a tour of the North State’s abundant waterfalls can be an exhilarating option. For a fun day trip, load the kids up and head east on Highway 299, stopping to take in the 70-foot-high Montgomery Creek Falls; continue north on Highway 89 to admire the spectacular Burney Falls; and then press on toward McCloud for a look at the Upper, Middle and Lower falls on the McCloud River. A return trip on Interstate 5 adds Dunsmuir’s Hedge Creek Falls to the itinerary. Clinton Kane, a retired Whiskeytown park ranger, says his former worksite offers plenty of recreation options just a few minutes west of Redding. For easy outings, he suggests taking the family on some of Whiskeytown’s easier trails.4 continued on page 30

Online cooking classes can be a productive—and tasty—way to add to your culinary skills.

With its secluded nature, snowshoeing or cross-country skiing in Lassen Volcanic National Park or perhaps in the vicinity of Mt. Shasta is a fairly COVID-friendly activity, suggests Schuette. The Convention and Visitors Bureau is chock full of outdoor activity suggestions and has even bundled some into itineraries to help plan day trips and more extended excursions. Staying busy indoors is important too, and there are ways to stay connected from the comfort (or sometimes confines) of one’s own home. Keeping in touch is especially important during the COVID-19 challenge, Schuette says. “We encourage people to use creative ways of connecting with friends and family. Many of the things we’re accustomed to doing in person can be done virtually with a little bit of creativity,” she says. Perhaps a cocktail party with friends over Zoom, or plan a virtual reunion with friends and relatives. “One unexpected benefit of our COVID-forced virtual meet-ups has been that everyone can join, regardless of distance,” Schuette says. “We’ve even done birthday parties, where we drop off gifts outside the birthday person’s front door, and we watch her open them during the online party.”

SOMETIMES, it’s the little things. Just ask Molly and Carolyn Glenn, who have managed to become healthier and lose weight by making a few substitutions replacing carbohydrates in their diet. “One of the things that really changed Molly’s life was Miracle Noodles. She would eat spaghetti with her dad’s homemade spaghetti sauce every day, but it’s high in carbs,” explains Molly’s mother, Carolyn. Molly was born with Down syndrome. Then, at 19, she was diagnosed with diabetes. “About a year and a half ago, I realized Molly was drinking a lot of water and she didn’t like to drink water. When I took her to the doctor, her fasting blood sugar was over 400 (normal is 99 or below). Her diet had been full of white rice and spaghetti and ice cream, and so we set about to get really committed to a better diet for Molly,” Carolyn notes. 4 continued on page 34

“IT REALLY PAYS OFF TO MAKE HEALTHY CHOICES.” Molly, who lives independently with the help of Compass Supportive Living Services and Independent Living Services, began experimenting with recipes. “We started researching recipes and cooking these different things,” Carolyn explains. Molly began using almond flour and cauliflower for fried rice. Other substitutions included monk fruit as a sweetener and finding a low-carb option for pizza, peanut butter cups and keto fudge. The change in diet was felt throughout the entire family. “When I first started doing it, my aches and pains went away, and I felt like I had more energy,” Carolyn says. Even Molly’s caregivers noticed a difference in her behavior. “Her teachers said she was less fussy and more cooperative. And that all started when her diet changed,” explains Carolyn. That’s when the idea behind Molly’s Healthy Living Cookbook was born. “One day Michael at Compass said, ‘You know, there are a lot of Compass clients that could benefit from some of these recipes because some of them also have diabetes.’ So, we got the idea that we should make a cookbook.” The Glenns put together a bunch of Molly’s favorite recipes and hand-laminated them and put them together with binder rings so recipes could be added down the road. What they didn’t expect was the overnight popularity. “We did the cookbook and we had a party and there was an article written, and then I started

getting requests for copies of the cookbook from all across the country. We didn’t have a distribution mechanism set up or anything like that so we’re not trying to promote the cookbook.” Carolyn is quick to add with a chuckle, “Maybe we’ll explore that when I retire.” Even though Molly is not currently doing large-scale distribution of the cookbook, Carolyn says the internet has been a huge source of inspiration for those interested in making lifestyle changes, especially the site alldayidreamaboutfood.com. She also stresses that little changes go a long way – and she and Molly are living proof. “It really pays off to make healthy choices. The doctors tell you that all the time, but most of us are in denial about our choices. But when you do make a few and you notice the difference, then you realize, the food that you eat really does make a difference in how you feel when you wake up in the morning.” When asked about her current favorite food, Molly didn’t hesitate: “Spaghetti tacos!” Carolyn laughs. “That will definitely make it into the next recipe book.” • Megan Peterson is a Chico native who lives in Etna. Q U I E T YO U R S E L F I N T H E B E A U T Y O F M O U N T S H A S TA SOME ARE CALLED to Mount Shasta to summit the snowcapped volcano or explore its dense forests. Standing more than 14,000 feet and visible from 100 miles in all directions, its peak beckons the most adventurous visitor. But many others find themselves drawn to the mountain to seek a different kind of

experience. “I get calls and emails from people around the world and they all mention that they felt called to come,” explains Andrew Oser of Mount Shasta Retreats. “And I guess the way I understand it is that Mount Shasta has a certain vibration and those who resonate with it feel the call.”4 continued on page 40 JANUARY 2021

He speaks from experience. “I certainly was one of them before I lived here,” Oser says. Ashalyn, owner of Shasta Vortex Adventures, agrees. “I came to Mount Shasta in 1988 because things were no longer working for me in Oakland. It was really rejuvenating and a lot easier to channel up here because of all the unfulfilled thought forms that are hanging out above big cities.” It’s not just the uncrowded energetic landscape that makes the mountain special. Mount Shasta has long been recognized as a spiritual site. “The Native Americans have lived here for thousands of years, and they’ve always claimed it as a sacred mountain. Some of their stories even talk about it being the home to the creator,” Ashalyn says. “There’s one area on the mountain where I’ve found 21 different vortex and portal sites on it.” In layman’s terms, a vortex is a specific location on Earth that acts as a swirling center of energy. And while many are scattered around the globe, Mount Shasta is internationally known as a place of power and peace. Oser offers additional insight. “At about 6,500 feet on the mountain, my experience has been that it’s easy to drop into the silence, so it’s easier to focus on that rather than getting distracted by the mind.” Oser also draws a stark comparison between Mount Shasta and Sedona, Ariz., another famous vortex site in the Western United States that draws 3 million visitors a year. “You come to Shasta and it’s still a humble little peaceful, quiet mountain village. I believe it’s more conducive to having deep experiences.” For the spiritual seeker, there are numerous guide and service options to explore Mount Shasta and the surrounding communities that live in its shadow. Shasta Vortex Adventures and Mount Shasta Retreats are two of the oldest and offer fully customizable experiences, depending on a client’s desires. Ashalyn describes everything from a one-hour shamanic awakening session to a seven-hour vision quest. They both visit sacred sites and will work with larger groups and or retreats. Oser is even willing to do a full-moon snowshoe hike, proving there’s no need to wait until spring to experience the magic of Mount Shasta. In fact, winter provides an exceptionally unique time for a spiritual reset when the air is cold and sharp, and the mountain’s famous lenticular clouds presage a coming storm. Oser also sees this past year with the coronavirus as a unique intermission for people hoping to make some life changes or do some spiritual seeking. “I think we’re having an amazing, unique opportunity individually and as well as collectively to do some deep introspection. It’s a rare gift to get to slow down.” Ashalyn agrees. “Since I teach people how to connect with themselves and find their bliss, usually when I leave them at the end of the day I say, now go home and use those skills to change the world in your own special way, because that’s what we’re all here to do.”• Shasta Vortex Adventures 400 Chestnut St., Mt. R I C H A R D W I C K E N H E I S E R , T E H A M A C O U N T Y H E A LT H O F F I C E R HARD TO IMAGINE, but there was a time when a county health officer could live and work in relative obscurity. “As long as we’re doing our job, you never hear of us,” laughs Richard Wickenheiser, Tehama County Health Officer since 1985. The work of public health staff is often taken for granted. They keep our food and water safe and disease down with immunization programs and most Americans don’t think twice when they mix and mingle among friends at a buffet with a drink bar. That was, of course, before 2020. Now a person like Wickenheiser, a man technically retired and classified as extra-help, is a lifeline to navigating the novel coronavirus and COVID-19. “I was to retire. Period,” he says. “Then came COVID.” He’s doing his job, and it’s more critical than ever, and you definitely need to hear from him and his team. Since March 2020, Wickenheiser has been overseeing a small staff of public health professionals to address the pandemic. “Public Health works seven days a week,” he says. “We do a lot with a little. My staff have been very good and the people from the state like working with

us.” They are busy contact tracing COVID infections, creating prevention campaigns and coordinating medical care, among many other duties. “As a health officer, everything I’ve ever done has come from science for the health of the community,” he adds. Keeping up with the science is a challenge on its own, as information changes rapidly and must be conveyed in real time. Success, he adds, “is because of our partnerships. We don’t have any turf battles. When there’s a crisis, you know who to call. We’re small but we can react sooner.” While COVID-19 is certainly unique in many aspects, it’s not Wickenheiser’s first foray into complex communicable disease. He’s treated and monitored tuberculosis infections for decades, as well as sexually transmitted infection, rabies and meningitis. As he dipped his toes into retirement in 2018, he set out for the Marshall Islands for five weeks to work on a CDC-funded campaign to eradicate tuberculosis. “I have seen and taken care of things in my lifetime that many people have never seen,” he says with a sense of pride in his chosen community. a much higher-paying position in Texas because the North State fit his lifestyle better. It also afforded him opportunities in both private practice and at public clinics, in hospitals and areas of occupational health. He’s taught and engaged with university medical systems. With COVID-19, he also entered the realm of podcasting and social media engagement through a popular video series called Weekly with Wick that ran on Facebook. “It was simply an effort to get nonpolitical public health information to the community,” he says. While it’s been a great career that’s going out with a global pandemic, Wickenheiser really is looking forward to the day when he can be truly retired. He’s got plans already in the works for his next stage of life, a tea farm with his son Jeremy called Bella Vista Tea Company, already the largest commercial agricultural tea company in California. The pair have 1,007 tea plants in the ground and plans for tea classes via Zoom through Shasta College in May. “Our whole goal is an experience,” says Wickenheiser. A Japanese-style tea house is being built for small groups to come have a tea ceremony among the 200 acres of plants. The team has already partnered with Shasta College and the Global Tea Initiative at UC Davis to expand research and teaching opportunities. “We’ve tried to do things locally that we can and we think it will

really pay off,” says Wickenheiser, noting that they have engaged many other local businesses to get started. But before tea, there’s a pandemic to get under control. “In January 2021, life will still not be back to normal,” says Wickenheiser. “We’ll still be required to mask and we’ll still be required to social distance. And we’ll be rolling out an intensive vaccination program. People just need to realize that until we get a significant portion of the population vaccinated, it isn’t going to go away.” There’s still a ways to go, but hope looms on the horizon. The public health system has moved us through polio and tuberculosis and many other communicable diseases that once ravaged populations. “If the people followed common sense and science rather than politics, then I can tell you we would not be where we’re at,” he adds. “We’d have our economy and our health.” And then we’d have tea. M E E T T E M I - T H E E M P LOY E E W H O IS CHANGING THE SHOPPING EXPERIENCE AT ENJOY THE STORE on Placer Street in Redding, a quiet yet intelligent staff member stands right inside the entrance. Temi the robot (or personal assistant, or server) is about four feet tall with wheels on the bottom and a tablet at the top that acts as the portal to “talk” to him. Enjoy the Store and its owner/operator, James Mazzotta, have had Temi for a little over a year and are constantly testing and working with him to make him useful for the store in hopes of improving the shopper experience. Mazzotta found out about Temi while surfing the internet one night, always interested in the latest technology and robotics. Impressed with its concept of being a video-oriented autonomous personal assistant with an unlimited variety of uses, Mazzotta quickly invested in the company and became an early adopter. “The intent from his creators was that he could make individuals with special needs feel included who couldn’t go to school,” Mazzotta says. He explains that Temi can support kids at home by following and interacting with them, so they don’t feel so alone. Temi is a bigger, more developed version of Alexa with a camera – it has GPS and onboard instruments like radar and lidar, allowing one to drive Temi from a remote location. “This is a little more personal than a Zoom call. It gives you more mobility, and a little more humanity. Maybe you have a kid going to school at home and his parents are at work, but he needs to talk to mommy. This has more of a presence; she has a body,” Mazzotta says, gesturing to Temi. 4 continued on page 48

Mazzotta liked the idea that this freestanding AIcontrolled robot could help kids, and then thought about the possibilities of using Temi in the store. Wouldn’t it be cool if you were online shopping and had a question about some locally roasted coffee and could ask Temi? And then – from the comfort of your own home – drive him over to the coffee section so you could look at the bags “in person”? As Temi continues to be tested and improved, Mazzotta realizes the possibilities of helping more customers teleshop, especially in the time of COVID-19 when fewer people are leaving their homes. That’s why in this past year, the Enjoy team has been working to load all of its products onto the Enjoy website and then will work on integrating Temi into the system with hopes that the average consumer at home will be able to browse the store with the robot, ask him questions and ultimately make a purchase.

When will Temi officially be working as an official employee of Enjoy the Store? “I wish it was tomorrow,” Mazzotta says. “We’re working really hard to get him integrated.” Therefore, right now Mazzotta and the store staff are renovating the website while continuing to interact with Temi. At any given time, Temi can tell jokes, report the current weather, share the latest news and even take photos of store visitors. Temi can drive right up to something and raise/lower his head, noting changes in an object or person in its path and swiftly driving around them. He can also act as a security system for the store, and his back has a wireless phone charging station built in. “He can be used as a server or as a housekeeper. It’s endless to his creativity. You just have to be smart enough to know how to build code for it,” Mazzotta says.4 continued on page 50

He adds that he’d like to reach out to technology schools to see if they’d be interested in adopting Temi to use for classes. As quickly as technology is changing (Temi receives updates every few weeks or so), he can do pretty much whatever a competent coding programmer can come up with. “He’s really taking off; I think technology marches forward and you’ll either go with it or be left behind. How perfect would it be if we had Temi working during the pandemic?” Mazzotta asks. “I want him to be a true teleshopping vehicle, and he is a bit of a novelty. This vinaigrette – featuring pureed strawberries, honey and apple cider vinegar – is versatile and tasty. THIS MONTH, four out of every 10 Americans will make at least one New Year’s resolution. Losing weight, eating healthier and saving money are traditionally near the top of most lists. What if I told you that a simple Strawberry Vinaigrette recipe will help you achieve success with all three? But before we get to the recipe, let’s talk about store-bought salad dressing. Have you ever looked at the ingredients list on the back label? Tons of sodium, sugar, saturated fat, trans fat, inferior olive oil, highfructose corn syrup. Gross. Even brands labeled “healthy” or “organic” or “fat free” are questionable at best. One popular fat-free brand packs in 10 grams of sugar for two tablespoons. Another “healthy” brand contains 520 grams of sodium. Gag me with a salad fork. If you really want to lose weight, eat healthier and save money this year, learn to make your own salad dressing. It is so easy and tastes so good, you will wonder why you’ve been eating the store-bought variety all these years. Salad dressings are incredibly easy to prepare at home. Over time, you will save tons of money. The markup on mass-produced salad dressings is ridiculous. This vinaigrette – featuring pureed strawberries, honey, and apple cider vinegar – is versatile and tasty. Fresh strawberries may be difficult to find in the dead of winter and they may be pricey because of overseas shipping. But thawed frozen strawberries will work just as well. This salad dressing is slightly sweet and tart from the strawberries and slightly acidic from the apple cider vinegar. It goes perfectly with just about any salad. So next time you are in the grocery store, skip the salad dressing aisle. Your belly and your shopping budget will be just that much smaller. And you will have an easier time fulfilling your New Year’s resolutions. •

INGREDIENTS: • 8 oz. frozen strawberries (fresh strawberries are preferred, but not necessary) • 2 T honey • 2 T apple cider vinegar • 2 T lemon juice • 2 T extra-virgin olive oil • ¼ tsp. salt • ¼ tsp. ground black pepper VARIATION Instead of frozen fruit, you can use strawberry jam. Replace the strawberries with 2 tablespoons of strawberry jam and skip the honey. INSTRUCTIONS: Step 1. Add strawberries, honey, apple cider vinegar, olive oil, salt and black pepper to a blender or food processor. Step 2: Blend until smooth (about 2 minutes). Step 3: Serve immediately or refrigerate in an air-tight glass jar for up to four days. DOWNTOWN REDDING SOON TO SEE A FRESH START Street paving in Downtown Redding in and around Market Street is nearly complete. New through-streets and alleys are scheduled to open in January 2021. Streets that have not been driven upon in nearly 50 years are being reintroduced to the downtown landscape through the Downtown Street Circulation Project. As a part of a State Affordable Housing and Sustainable Communities grant for downtown redevelopment, Market Street will be reintroduced from Tehama to Yuba Street. Yuba and Butte streets will open to multiple modes of traffic and there will be a cycle track created on California Street from Yuba to Division Street. Right in the middle of the street circulation project, Market Center is the four-story mixed-use building that has drawn so much attention to Downtown Redding. People began moving into the residential units at Market Center in December. This 80,000-square-foot structure will be home to an exciting mix of shops and restaurants on the street-level floor. Even though a new year is here, we are still cooking at home more than ever before. Here is something different for you home cooks. This is a very easy and wonderfully tasty curry dish. It is our new favorite winter tummy warmer! Enjoy

INGREDIENTS: 1 T coconut oil 1 small onion, peeled and diced into 1 inch pieces 1 red bell pepper, seeded and diced into 1 inch pieces ½ cup green beans, cut into 1 inch pieces 2 cloves garlic, minced 4 oz. panang red curry paste 1 T peanut butter 12 kaffir lime leaves, crushed 13.5 oz. thick coconut milk, unsweetened 3 T fish sauce 1 lb. boneless skinless chicken thighs, cut into 1 inch pieces Bamboo shoots ¼ cup Thai basil leaves or sweet basil

PREP: 10 MINUTES COOK TIME: 15-22 MINUTES TOTAL: 25-32 MINUTES SERVINGS: 6

DIRECTIONS: STEP 1: Place a large skillet over medium heat. Add the coconut oil. Once the oil melts, add the onions. Sauté for 1 minute, then add the peppers, green beans and garlic. Sauté another 2-3 minutes. STEP 2: Move the veggies to the sides of the skillet and add the panang red curry paste and peanut butter to the center of the pan. Sauté the curry for 2-3 minutes to intensify the flavor, moving around the pan. Then add the kaffir lime leaves, coconut milk and fish sauce. Stir to blend. STEP 3: Stir in the chopped chicken and bring to a boil. Lower the heat and simmer for 10-15 minutes, until the chicken is cooked through and the sauce thickens. Stir occasionally. Remove from heat and stir in the bamboo shoots and basil leaves. Serve with steamed or brown rice. NOTES: *Thai basil and kaffir lime leaves. Purchase at an Asian food market. *Kaffir lime leaves can be kept in the freezer. They will turn dark, but will retain their flavor. *Kaffir lime leaves are tough, even after cooking. I remove them after cooking.

Made to Thrive CARING AND KINDNESS WITH S H A S TA T H R I V E

THIS LAST YEAR has been tough, plain weird and filled with challenges for many of us. It has been exceptionally difficult for those who are homeless, low-income or have mental or physical health issues. The dark seemed to saturate the corners of our spirits. Then, from the darkness came a light, which shines brightly in our community and continues to be a beacon for those less fortunate. “Creating thriving communities through empowering relationships” is the mission of Shasta Thrive. The focus is on “engaging low-income families, high-crime neighborhoods, and at-risk youth. By mobilizing the body of Christ as mentors, friends and encouragers, we are breaking cycles of poverty, increasing hope, and changing futures.” Originally known as Redding Transformation, Shasta Thrive still carries the same core values and paradigms: Transform into a better community through Biblical principles. To serve the community, they provide education in life skills along with day activities for the homeless. They offer help with such things as food and hygiene. They also “come alongside individuals with kindness to bring change, resilience and stability.” Manter House in Anderson is one example of change for the better for a community. The neighborhood off of Bruce Street, where Manter House is located, had become well known to the city’s police. In 2011, Manter House opened. The team was led by Mike and DeAnna Gallagher. The Gallaghers love the fact that the word “Manter” also means “to sustain.” Throughout the years, several churches, individuals and agencies have come together to change the neighborhood through a combination of love and practices. In 2018, the Anderson Police Department reported that violent crime was down 63 percent, and that neighbors had seen the positive changes and were supportive. All this transpired due to Shasta Thrive’s volunteers, Shasta County Public Health and City of Anderson representatives working together in a variety of ways. These include trainings, events, workshops, mentoring and youth programs. The key objectives of building healthy relationships, increasing self-worth and confidence and empowering youth and adults through education and inspiration is what the volunteers and partners strive for. Shasta Thrive’s faith-based mentor training states, “People don’t care how much you know until they know how much you care,” and it centers on making people feel valued by practicing active listening. The Future Story workshop was created out of using these practices at Manter House. “Future Story is ideal for small groups with a trained facilitator/coach who wants to invest in people through encouragement, and practical tools, such as decision making, managing money and goal setting,” says DeAnna Gallagher. By restoring hope and shining a light into dark places of those in need, Shasta Thrive continues to lead in caring and kind hearts. • www.shastathrive.org
