In September 1666, the Great Fire of London erupted from a bakery on Pudding Lane, devastating the city for over four days It destroyed 13,200 houses, 87 churches, and iconic landmarks, yet claimed relatively few lives King Charles II ordered firebreaks to halt its spread, leading to containment. The catastrophe spurred urban reconstruction by Sir Christopher Wren, resulting in a more modern city with improved fire safety measures The Great Fire's legacy includes advancements in firefighting and remains a symbol of London's resilience and recovery, commemorated annually on September 2nd.
We created a cocktail that evokes memories of a smoky urban atmosphere, featuring hot and spicy flavours reminiscent of the fiery events that took London.

The Mamie Taylor cocktail is named after opera singer Miss Mamie Taylor. In 1899, during a sailing trip near Rochester, she asked for a "long but not strong" drink, resembling a burgundy lemonade However, what she received was a delightful, sparkling concoction With a touch of lemon peel, the new drink was born and named after her. The cocktail disappeared for years but regained popularity due to a renewed interest in classic cocktails Similar to a Scotch highball, it features blended Scotch whiskey, lime, and ginger beer, offering a unique twist compared to a Moscow mule.
This is a cocktail with the intent of accentuating the floral notes prevalent during the operas of the 1900s. It boasts a low alcohol by volume (ABV) and a refreshing taste, all complemented by a burgundy tone suggestive of Mamie's cherished favourite

These allegations, many of which were likely politically motivated, led to her downfall She was found guilty and subsequently executed by beheading, marking a tragic end to her noisy marriage to Henry VIII and her influential role in English history.

Budgies are cherished pets, and interestingly, they are yellow, a colour significant at St Martins Lane, as you may have spotted in our iconic revolving door

Sir Walter Raleigh, the adventurous poet-explorer of the same era, set his sights on the New World across the Seven Seas, laying the foundation for English colonization Each of them embodies the spirit of exploration and discovery that defines the Seven Seas as a realm of boundless opportunity and adventure
