From humble working class beginnings in the cold northeastern city of Boston to the clandestine world of Air Force Intelligence and Russian missile systems, to the sundrenched shores of southwest Florida, Phil has harnessed his passion to create the graceful, elegant oasis that is Fifth Avenue South. After several years of CIA intelligence work in Pakistan and Iran, Phil became restless with precision telemetry and yearned for a different, more creative type of work. He retired his position and took the small savings he had collected and put it all down on a small bankrupt beach hotel in Maine. After many years of hard work the business became successful and Phil sold it to pursue his passion for hospitality in the warmer climate of Florida where he has flourished. Self- taught and self-educated, Mr. McCabe was provided the opportunity to travel while serving in the Air Force and developed a diverse and cultural world view. Studying the success and failures of the great hotels of the world has helped him create a perspective and vision not found in any classroom and has given him the skills needed to not only develop 4 successful hotels and 5 restaurants, but to transform a com-
wavered away from his visions of what was to come, especially when it came to Fifth Avenue. The Inn on Fifth has under gone a thorough transformation. One of the most popular choices has always been Grouper, stemming from its very delicate milD flavors and of course coming fresh out form the Gulf, it’s always been a favorite amongst both visitors and locals. If you’re from the north, Bass, Perch, Trout, and Walley are very familiar choices, however Florida too has it’s own unique fresh catches like, Mahi Mahi, Stone Crabs, Key West succulent shrimp and those are just a few. Our restaurants are not only offering those, but you’ll also see many favorites from around the country. Here’s a quick run down different types of seafood you can expect to see on our local menus. Atlantic Salmon ~ rich in texture with a pleasing mild taste so rich in texture a tall glass of red wine would be a fine compliment. ~ From the Northern Atlantic Ocean
Sea Bass ~ large white flakes, rich in texture and melts in the mouth due to high oil content. ~ Atlantic coastal waters of the United States, from northern Florida to Cape Cod
Cobia ~ White thick and meaty with very nice mild flavors~ U.S. wild-caught from Virginia to Texas
Sword Fish ~ very steak like while being very firm and thick in texture with a nice meaty taste ~ Atlantic, Pacific and Indian Oceans
Flounder ~ very delicate, mild and smooth in texture ~ Atlantic coast Grouper ~ The King Fish…white and flaky mildly flavorful ~Gulf of Mexico Halibut ~ Very smooth in texture nicely mild ~ U.S Atlantic Mahi Mahi ~ the Dolphin Fish, not to be mistaken for Flipper Mahi-mahi is an exceptionally versatile fish, with firm, white meat and very delicate flavors. ~ U.S. wild-caught from Massachusetts to Texas Pompano ~ White and grey fillets. High in oil content making this very smooth yet firm. ~ East Coast from Virginia to Texas,
Tilapia ~ very sweet with a mild flavor ~ usually farmed Tilefish ~ firm and smooth Tilefish has pinkish white flesh that sometimes referred to as a lobster- or crablike taste The meat is mild-flavored and succulent. (Not at all what the name would suggest) Trout ~ mild, very delicate and sweet (from the north) Tuna (Ahi) ~ usually deep and red in color when cooked rare, large firm flakes and very meaty. Yellowtail snapper ~ white and sweet mild delicate flavor ~ U.S., Gulf of Mexico, South Atlantic
Crustations, Mollusks and Cephalopods Lobster ~ the meat is tender, firm, and white with a rich, distinctive, slightly sweet flavor. Maine, Florida, whole or tail just order it! It’s wonderful! Scallops ~ very firm rich texture, yet smooth to the palate available large or in their smaller relative the Bay scallop, both distinctly tasty.
Stone Crab ~ from Florida or Texas very delicate and smooth and just plain yummy! Stone crabs are rare so they are usually on the menu for only a short time. Only the claws are removed so they can return to the wild to grow new ones (to bad they don’t know about Lee press on’s ... how embarrassing.)
Oysters ~ if you don’t already know this one … trust us the description is not going to help.
Jonah Crab ~ from the North Atlantic, once again smooth and succulent very close to the dungenous crab.
Calamari ~ yes, this is squid. Usually cut into rings and battered or sautéed or even marinated. Any way you prepare this delectable delight is going to be great provided it’s not over cooked. This usually causes it to be tough.
Dungeness Crab ~ like all crabs, the Dungeness crab is high in protein and minerals and low in fat. (according to the Crab we interviewed). About one quarter of this crab’s weight is meat, making it one of the meatiest crabs available. The flesh has a delicate flavor and is considered sweeter than other crabs.
Mussels ~ lovely with garlic and butter or beer and wine and occasionally a martini. (Set the martin aside though, that’s for you not the mussels.)
Alaskan King Crab~ by far the meatiest of them all. Sweet and Creamy and oh so delicious. Usually offed by the pound, but don’t be surprised just one of these baby’s is a meal in itself! entréemagazine 17

Luckily all these wishes were granted on a spectacular evening hosted by The Waterside shops. Most importantly, a child’s wish was granted for Make-A-Wish® Southern Florida and a donation was made to St. Mathews House. With the help of some of the best restaurants and caterers in town, Nanette Staropoli owner of Markit Group , Waterside Shops General Manager Anne Fleming, and Entrée Magazine, an unforgettable evening was designed. Stone Crabs Stone Crabs are here! Get‘em while they’re hot, as in selling like hot cakes that is, because the Florida Stone crab is actually served cold. Many times consumers will order these little delicacies and have a look of disappointment or surprise when the order comes to the table. One usually assumes like the King Crab or the crab cake or any of the related species that we order for an entrée is going to come to us hot. Such is not the case for these succulent, seasonal sweet tasting morsels. Stone crab claws are cooked immediately after harvest and sold either fresh cooked or frozen, although most of all the restaurants or stores sell them fresh here in Southwest Florida. The craze for the Stone Crabs is as simple as supply and demand as they are only harvested from May 15 through October 15th. While other towns may have a summer festival or an apple festival, we have such a craving and desire for the claws that we happen to have a Stone Crab festival. This is celebrated every year down by Tin City and the Bayfront area. Hundreds of people flock to the area to grab the first claws of the season and celebrate the seasons

beginning. The majority of Florida’s stone crab claws are commercially harvested off the southern tip of Florida’s peninsula from Sarasota all the way to Fort Lauderdale. The beauty of these treats are that only the claws are removed while the crab itself is set free to go off and grow a new set for following seasons. These usually will regenerate within 18 months. Yes, the sweet-tasting meat of Florida stone crab claws is delicious cold and unseasoned but is usually served with a mustard sauce, lemon or melted butter. Having said that, they are also just as delicious warm and some places will heat them for you if you ask. Florida stone crabs can be purchased at your local seafood market, supermarket, suppliers and of course restaurants here in town. Most of the seafood restaurants and some Steakhouses offer them but if you really have a craving for them especially after reading this, be sure to call first as they are a cold commodity!

Partners Pay It FORWARD Like birthday cake and ice cream, like oysters and Champagne, chefs and charities share an affinity for one another that exponentially magnifies the virtues and values of both. One shining example is Southwest Florida’s Chef Brian Roland and a plethora of local philanthropic partners. A Culinary Institute of America graduate, Brian’s culinary star has risen steadily since he began cooking in Naples and surrounds. Formerly the executive chef at such innovative and popular spots as Chops, Crü and M Waterfront Grille, he left the restaurant kitchen to stretch professionally and challenge himself to meet the creative and physical demands of working in a different environment and venue every day. To that end, and to the delight of party planners throughout the area, he opened Crave Culinaire by Chef Brian Roland that he describes as an “ultramodern take on catering.” While his new enterprise demands more of his time as business expands, Chef Roland has so far managed to maintain his activities at benefits and other charity events. In fact, he is astounded at the funds, good will and good times his culinary contributions have produced. He estimates his donations of catering services, cooking classes and dinner parties have generated more than $1.5 million dollars for local charities. To his amazement, the winning bids on his dinner party donations which initially garnered $2000 to $4000, have recently escalated to $8000 and even $10,000. Chef Roland recounts that his first effort to enhance the lives of others through an organized event was completing a walk for a pancreatic cancer research center while he was still a teenager. That initial experience instilled a “Do unto others…” philosophy that is the foundation of his giving spirit. He explains that through partnerships with organizations devoted to improving the lives of others, he has learned that individual contributions can make an unimaginable difference. Whether he is on the block in the “Bachelor Auction” for cancer research, emceeing events to benefit drug and alcohol treatment-facilities, or providing epicurean delights for guests at literacy fund-raisers, Chef Roland inspires others to engage on behalf of these causes.

Southwest Florida Performing Arts Center Captain Brien’s Entrepreneurial Spirit Grows!
From a single fishing boat to a world class performing arts center Captain Brien Spina’s entrepreneurial spirit has grown. The owner of the wildly successful Off the Hook Comedy Club in Marco Island has purchased a 4-acre property at the corner of Bonita Beach Road & Imperial Parkway and plans to open a one of a kind entertainment and culinary complex which is slated to open in early 2014. The goal is to provide five star entertainment and five star cuisine in a world class venue. The new multi-million dollar, 27,000 square foot Southwest Florida Performing Arts Center will host a 650 seat dinner theater offering the best in music, drama, dance and of course comedy. Great chefs from around the country will be invited to test out the state of the art manufacturer’s culinary test kitchen at the center ensuring only the most delicious fare in the area. The center will also feature world’s first ever Pod Cast Café and Lounge where guests may enjoy tasty homemade desserts and coffee drinks while producing their own podcast free of charge, at the free, public broadcasting studio. The innovative venue will be available for rental to host weddings, banquets, corporate and group events. Since its grand opening in 2005 at Captain Brien’s Seafood & Raw Bar, Off the Hook Comedy Club of Marco Island has become one of the hottest destinations for nationally renowned top rated stand-up comedians. Owner Brien Spina, a Boston Native relocated to Marco Island in 1998 where he earned his Captains license and bought a small fishing vessel. Despite setbacks which included the 2001 terrorist attacks and the BP oil spill his strong work ethic helped ensure his success as an entrepreneur. The comedy club in Marco will remain open as a restaurant and will continue to host shows until the new Performing Arts Center opens in early 2014.

Everywhere you turn these days it’s all about gluten or rather no gluten. Increasingly over the past few years, the rise and awareness of being gluten-free has been at the forefront not only to consumers but for restaurants as well as they try to address their clients’ needs. It’s important to know, just what gluten is and how it effects us in order to determine if it is something that you want, need, can’t live without, or just plain have to stay far away from it. This brings us to the main culprit being the gluten protein that is found in wheat, barley, grains, and triticale (a cross between wheat and rye). A gluten-free diet is used to treat celiac disease. Gluten causes inflammation in the small intestines of people with celiac disease. Eating a gluten-free diet helps people with celiac disease control their signs and symptoms and prevent complications. The good news is that there really are a lot of dining options if you are going to go gluten-free, for example, many of these foods are naturally gluten-free. • Beans, seeds, nuts in their natural, unprocessed form • Fresh eggs • Fresh meats, fish and poultry (not breaded, batter-coated or marinated) • Fruits and vegetables • Most dairy products There are also a lot of grains that can be included in a gluten-free diet at long as they are not processed or mixed with gluten-containing grains, additives or preservatives. Included in these are: • • • • • •
Amaranth Arrowroot Buckwheat Corn and cornmeal Flax Gluten-free flours (rice, soy, corn, potato, bean)

The problem arises because unfortunately, many of our favorite foods do have gluten. Some of these include: • Beer • Processed luncheon • Breads meats • Cakes and pies • Salad dressings • Candies • Sauces, including • Cereals soy sauce • Cookies and • Seasoned rice mixes crackers • Seasoned snack • Croutons foods, such as • French fries potato and tortilla • Gravies chips • Imitation meat • Self-basting poultry or seafood • Soups and soup • Matzo bases • Pastas • Vegetables in sauce This seems like a lot of terribly yummy foods that might be hard to give up, French fries, cookies, soups…..etc. The good news is that as awareness is increasing, more options are becoming available every day. In fact, even the Girl Scouts just added a gluten-free cookie to this years’ line up. One of the main problems that does exist is the possibility of cross contamination and this is where it gets tricky. For this reason, many of the restaurants offer specific gluten free menus and have been trained as well as modified their kitchens to accommodate this growing clientele. The safest way is to always alert your server to any type of food allergy, i.e. peanuts, seafood and of course gluten. Call ahead and plan for the experience and cuisine you are looking for.

method
Dice Ahi tuna into 1/4-inch cubes and set aside. Next dice the cucumber, onion and tomato and set aside. In a mixing bowl, add the tuna, sweet onions, cucumber, tomato’s, Sea salt, avocado and Inamona Jus. Mix lightly. Fill the Gyoza shells and serve each one atop a 1/3 oz. of Wakame Salad.

3 oven roasted roma tomatoes 2 tablespoons panko bread crumbs 4 branzino fillets; skin removed 1/2 cup vernaccia wine 1/2 leek chopped 1 tablespoon shallots 3 tablespoons castelvetrano olives 2 tablespoons halved green grapes 3 tablespoons extra virgin olive oil 3 tablespoons fish stock 1 pinch orange zest salt and pepper
method
Put the tomatoes into a food processor, process them quickly, then add the bread crumbs and whiz again until the tomato is absorbed into the bread crumbs and it looks a bit like a crumble mixture. Spoon out onto a tray and flatten down. Leave in a warm place in the kitchen for an hour or so to dry Preheat oven to 350F. Lightly season the fish then roll filets up then apply bread crumb mixture to the filets. Gently place encrusted filets on a baking sheet and put into the preheated oven. In a bowl beat 5 egg whites with a pinch of salt until snowy and store in the refrigerator. Whisk together egg yolks and sugar until well blended (so thick that you can “write” your name on it. Add the mascarpone cheese and the snowy egg whites to the cream and mix very gently. Now you can try to taste this delicious cream! Prepare a porcelain platter and place the Savoiardi lady fingers that you have previously soaked lightly with sweetened espresso to cover the bottom of the platter. Spread evenly ½ of the mascarpone mixture over the ladyfingers. Arrange another layer of the ladyfingers and top with the remainder of the mixture. Sprinkle cocoa powder and put in the refrigerator for at least 2 hours allowing the cream mixture to set nicely.

Boil off one serving of angel hair pasta and hold. Saute onions,red pepper,garlic with butter, then add red wine then heavy cream. Let it come to boil and then add 1 tsp lobster base and pinch of cayan pepper, when thicken then strain into pasta. Now saute with butter the shrimp,scallops,crab,lobster claw etc.. till cooked then toss all products into sauce and on top of pasta. You may mix all product with sauce then on top of pasta or keep seafood separate and add on top of pasta.

Over a low heat melt butter, and the onion and chopped up leeks, slowly sauté until wilted. Add the flour and nutmeg and whisk in. Cook for about 10 minutes. Add the milk while continuing to whisk. Continue to cook stirring often so the milk does not scorch. Add in Spinach and cool.

1 pound of butter 4 egg yolks 1/4 cup Lemon Juice 1 cup hot water 2 Tlbs of Tarragon reduction - Tarragon and White Wine Vinegar reduced together to a semi dry paste. • 2 roasted shallots

Put egg yolk and Lemon Juice in a food processor and run for 1 minute. Take the hot brown butter and drizzle it in thru the top. If it gets to thick, add a drizzle of hot water. Add the tarragon reduction and roasted shallots. Add salt and pepper to taste. Béarnaise yields more than the recipe calls for but can be used for other entrees or vegetables as well. Place the oysters in the oven for 10 minutes at 350 degrees. Then glaze with béarnaise and brown under broiler. Watch carefully as to not burn, just lightly browned.

In a medium saucepan, combine coconut milk, Broth, ginger and lemongrass and bring to a boil. Add chicken, mushrooms, lime juice, fish sauce, sugar and Chili paste. Reduce heat and simmer until chicken is firm and opaque, 5- 10 minutes. Discard lemongrass. Garnish servings with cilantro.

Reduce heat to medium; sauté shallot and garlic 2 minutes. Add pine nuts, white wine, tomatoes, olives and black pepper to taste; bring to a boil stirring frequently. Reduce heat to low. Cover pan and simmer 5-6 minutes, stirring occasionally. Return fillets to skillet and simmer in sauce until heated through. Serve fillets topped with simmered sauce and cilantro.

Boil pasta until is al dente. Sauté onions in a medium size pan. Add in speck to slightly brown. Add the olive oil. Add the ground pistachio. Add the heavy cream on a low heat and simmer. • 1 cup andouille sausage (diced) • 3/4 cup small diced bell pepper • 3/4 cup small diced celery • 1 cup diced onions • 3 tablespoons minced garlic • 2 fresh bay leaves • 2 cups arborio rice • 1 cup white wine
mahi mahi & risotto
• 1 cup diced tomatoes • 1 tsp spoon fresh thyme • 1 tsp fresh oregano • 8 cups low sodium chicken broth • 1/2 tbsps Tabasco • 1/2 tbsps Worcestershire • 1.5 tbsps creole seasoning • 1/4 cup whole butter
method
Begin cooking sausage for about 5 minutes. Add the peppers, celery, onions, garlic and bay leaves and sauté for 6 minutes. Add the rice and stir with a wooden spoon until fat from sausage has covered all the grains. Add wine and tomatoes, reduce until wine is almost gone. Pour in 2 cups of broth continuously stirring and reduce. Repeat this process until rice is just cooked. Add herbs, Tabasco, Worcestershire and Creole Seasoning. Sauté fish until golden brown. Hold for roasting. Finish when ready in the oven at 400 degrees for 3-5 min. Let rest for 1 minute. Heat the chicken broth and keep warm over low heat. In a large skillet heat 1 tablespoon of oil. Add 1/2 onion and 1 clove garlic, and stir for 5 minutes. Add mushrooms, herbs and butter. Sauté for 3 to 5 minutes until lightly browned. Drizzle in truffle oil. Season with salt cracked pepper. Sauté 1 minute, remove from heat and set aside. Add remaining 2 tablespoons of oil. Sauté the remaining 1/2 onion and garlic clove. Add the rice and stir quickly until it is well coated and opaque, 1 minute. Stir in wine, until all evaporated. Add 1 cup of the warm broth and cook, stirring, until the rice has absorbed the liquid. Add the remaining broth, 1 cup at a time. Continue to cook and stir, allowing the rice to absorb each addition of broth before adding more. (The risotto should be slightly firm and creamy, not mushy. Combine the mushrooms and rice mixture. Stir in Parmesan cheese until melted. Top with a drizzle of truffle oil.)
