MANNA LA ROOSA

If you think that Manna La Roosa is just another place to eat in Downtown, think again. The restaurant can be described with four words – food, drinks, art and entertainment. The food and drinks menu is nothing unheard of but the outstanding feature


clever niches, tea corners and main hall. It was owned by a mysterious lady named Rosa la Manna. Some people say that she was quite a powerful person and had many contacts all over the world. She even supplied the prominent drugstore on the first floor. When Rosa la Manna visited Tallinn, she held outstanding parties in the house and the cellar of the house has been rumored to have been full of the best liquor. It is no wonder that the restaurant on the first floor has been named by the lady. The menu is also on par and mannaesque. Manna La Roosa offers the best possible dishes that go perfectly with the wines they have. The place is also famous for its cocktails which are interesting and probably the best ones in Tallinn as they are made with the utmost of care. Manna La Roosa also holds an event titled Yelloween. It takes place at the same time when Americans celebrate Halloween and people can

listen to music from differenet genres like jazz, soul, latin etc. The restaurant wishes to offer the best possible experience to its customers.

TAI BOH

On the second floor of the house is another restaurant named Tai Boh which also has an interesting interior design. In Tai Boh one can also find various interesting pieces that all fit together but create a rather outstanding atmosphere influencial of Indian and Thai handicraft. This is a place where historic art meets improvisation and where even the most sophisticated gastronomers will find something for their exquisite taste. Even though both restaurants are quite eclectic in style, they have a different menu. Tai Boh defines itself as a place that offers Asian fusion kitchen, meaning that they offer cuisine from Thai, Laos, Vietnam, Japan, Indo- nesia and China. The head chef of the restaurant is from Thailand and

the menu really is rich in choices – it offers meals for fish and meat lovers but also for vegetarians. The food looks colourful and fits together with the interior. The cocktail bar also has an important role in the place. The barmen have been given free hands to make all kinds of interesting mixes – traditional and Asian ones. There are also some evenings where people can also listen to a band. However, these evenings tend to be quite popular and therefore it would be wise to reserve a table beforehand. Tai Boh is a place you should visit to find out how extraordinary it is. It is a combination that would satisfy even Mick Jagger. There are also a lot of people who cannot walk by the house without going in because it just looks so outstanding and interesting. On the other hand, the loyal customers are probably gastronomers curious enough to try out everything the menu has to offer.


Restaurant Ribe – 10 year Restaurant Ribe is a two-floor establishment located in Tallinn Old Town. This year, Ribe celebrates its tenth birthday and it has been the favourite place of local gourmands and tourists visiting Tallinn since opening. This is confirmed by the fact that Ribe has been selected among the top ten Estonian restaurants every year since its opening. Ribe has been praised by many, as witnessed by five thick guest books filled cover to cover with good wishes. In the ten years, patrons have commended the food, service and beautiful interior design. While the dishes and design are often more of a question of taste, excellent service experiences is what all of the restaurant’s guests can take with them. In Ribe, all the puzzle pieces are in the right place and it is obvious from all details that everything is done with passion in the restaurant.

Ribe’s cooking unites classic gastronomy with up-to-date trends and the offered dishes are made of fresh local raw produce according to skills and methods of the finest French cuisine.

Ribe, which was established by three former waiters, has been fronted by three chefs over the years: Jevgeni Jermoshkin, Andrei Shmakov and Rado Mitro, who is from Slovakia. Despite the fact that the styles of Ribe’s chefs have varied over time, they have all understood the essence of Ribe and the restaurant’s excellent quality level has remained unchanged. Rado Mitro, Ribe’s current chef, worked in various London restaurants, including in establishments that had Michelin stars, since 2008. Rado has also honed his skills at Noma, which has been called the world’s best restaurant. In Ribe’s ten years of operation, the menu has been updated to match

current culinary trends, but a customer never gets something they have already tried elsewhere from Ribe. The kitchen staff strives to add their own exciting touch to all that they prepare. For example, for starters, Ribe offers refreshing clear tomato consommé with goat’s cheese followed by perfectly prepared beef hanger steak with Eryngii mushrooms and fondant potatoes as the main course. Successful ten years show that the entire undertaking has paid off by now. The service has always been excellent and even the changing of chefs has not harmed the restaurant’s quality. Ribe has been indisputably popular since opening its doors and it has always offered that certain something other restaurants lack. Everything works, greatly owing to the owners’ great passion. NOA CHEF’S HALL

This is a restaurant in a restaurant which is called Chef’s Hall and it has gained popularity all over the world. The restaurant was listed as one of the 50 best restaurants in Estonia 2014 and 2015. Although Chef’s Hall is a part of NOA, it is the private and elegant part of the restaurant which presents fine dining experience at the seaside of Tallinn. The restaurant provides five to seven course degustation menus – OM-

NIVORE and HERBIVORE. Therefore, the restaurant is perfectly suitable for vegetarians as well. The menus have been composed by renowned chefs Tõnis Siigur and Orm Oja. OKO RESTAURANT

Maybe you happen to have some extra time and feel the need to leave your daily routine just for a moment or two? The solution is simple – only a couple of kilometres away from Tallinn in Kaberneeme you can find a beautiful restaurant called OKO which was opened in 2011. Kaberneeme is outstanding for its idyllic nature and calming sea. One can find peace and quiet there even though it is only half an hour’s drive away from Tallinn. The restaurant has repeatedly been chosen as one of the best restaurants in Estonia and it offers Estonian as well as international cuisine. OKO seats 60 people and a hundred more during summer thanks to their wonderful summer terrace. Who wishes to throw a party, it can be done in OKO Partyhouse which seats 60 people and which is reconstructed from old boat house. TULJAK RESTAURANT

In the summer of 2015 legendary and renowned restaurant Tuljak re-opened its doors. The building is under heritage protection and it was erected in the 1960s. As a matter of fact, the edifice is one of the oldest restaurant building in Estonia and it was given the annual award by Estonian Heritage Society and award for outstanding interior design. The restaurant is spacious and seats 150 guests. Moreover, it has large terraces and grill area which seats up to 150 guests. The heart of the house is a powerful kitchen, offering new, old, and nostalgic tastes. Tuljak is also different from his brothers. While OKO is like a fancy tavern and NOA is a seaside casual dining restaurant then Tuljak is a classic old school restaurant. Paju Villa is the youngest of the family but it does not mean that it would not be on the same level as the other family members. It is worth mentioning that the owners of the restaurants promised after opening Tuljak that this will be their last one in Estonia. Nevertheless, they received numerous offers and decided to go and take a look at one house in Nõmme which was being renovated at the time. While visiting the place they instantly fell in love with the house and decided that they are you going to open another restaurant there. After five months Paju Villa opened its doors to guests. The building is


elegant in every possible way and has outstandingly beautiful interior design. There are two storeys and guests can appreciate meals from carefully composed menu while enjoying homely interior. During the summer, customers can also take pleasure in sitting on the garden terrace and there is also a playground for children.

When it comes to the menu, there are various dishes, meaning that everyone will find something for their taste. There are meals for the ones who love classic dishes and for those who wish to try out something new and rather spicy. It is safe to say that people running these restaurants are at it with passion. Despite of their promise not to open any new restaurants, at the time of writing this article a new lease was signed for a new beach restaurant to be built in Haabneeme. It will be opened for guests hopefully later this year.

This year, signature restaurant CRU celebrates its fifth birthday. The soul of the restaurant is Dmitri Haljukov— the owner, head chef, husband and a father of two girls. He achieved 8th place at chef championships Bocuse d’Or Europe and 14th place in the grand finals. CRU is a place where guests take time to celebrate important events in their lives or to simply enjoy themselves. When the mood is right, everything else follows. The restau-

rant’s team is there to aid with great spirits, service, food and drinks. The important thing is not to chase after trends, but to create a pleasant and comfortable atmosphere. Dmitri has always had the desire to create and experiment. Once there is passion and courage, things tend to move along in the right direction. Most of the especially delicious and authentic flavours – sauces and ingredients – are imported directly from America, since originality has an important part here. The chicken, pork and fish is acquired from domestic producers, but beef, the most genuine of steaks, is imported from Brazil. We have received compliments from for example the Americans visiting Estonia – they say that Mach BarB-Que shows the flavour of Las Vegas! It is quite usual that we have so many people visiting us that the new guests must wait in our comfortable bar. While hamburgers used to be the specialty of fast food joints, they are nowadays offered by many fine restaurants; it seems that chefs like to experiment and offer customers their interpretation of what a proper burger is like. NOOT does not fall behind from the rest and the chef’s burger is the most popular dish in our menu in the summer season. It may be that the burger is irresistible because of its pitch black bun that is coloured with active bamboo charcoal. The interior is light and minimalist in the Scandinavian style; it lacks

SENSO – A Place Where Generations of People Have Enjoyed Their Meals In the 1980s an iconic building was constructed in the centre of Tallinn – Hotel Olümpia. On the second floor is a restaurant Senso, offering a chic and sophisticated atmosphere. At first, there was a café, then brasserie, and now there is a restaurant – Senso has reached its level through continuous progress. Breaking the habbit? No place for women near the stove! A freshly opened restaurant Mehed Köögis (Men in Kitchen) is a truly masculine restaurant in historical Hinke Tower, located in Old Town between Pärnu road and Müürivahe street. The restaurant is run by chefs Martin Ludvig and Robert Piho. We went to visit them to find out what are these special things they are doing that women cannot handle, thus breaking the old Estonian saying that only women belong next to a stove. The aim of the restaurant is to offer Nordic-cuisine influenced food which is fresh, seasonal, and healthy. When composing the menu, Martin and Robert try to ensure that there would be food for all kinds of moods. Seasonal chanterelle risotto – check. Juicy duck breast – you’ve got it. Maybe you want

to eat some zucchini with goat cheese and yoghurt instead – just say it. Basically, they offer everything you have ever wished for and they never stop to surprise people with new and surprising tastes and flavours. The chefs say that after all the most important thing is that the food has to simply be tasty.

Men in the Kitchen. Why did you pick a name like that? Martin: We have been working with Robert and other friends for a long time and we have created a nice atmosphere which lets us to try out new

foods. If we do not like something, we can say it out loud and nobody feels offended. For us developing new recipes and trying out new tastes is like repairing cars in a garage for other guys. This is just something we do and enjoy. Of course, women are very important to us, too, because they are inspiring and give us honest feedback. Moreover, I think that sometimes it is fair that men do all the work and women enjoy their cocktails and snacks.

Our menu is a fusion of Scandinavian and Russian cuisine and all our products are fresh. Every morning I visit the market with Martin to buy the freshest meat and other quality goods available. Freshness is the most important factor when buying products. How can a team of guys work together in one kitchen? How important is personality and working habits? Martin: Robert is usually the one who talks and I’m the one who brings ideas to life. Because of that our kitchen works so well – this is our

formula for success. Everyone has their own role in the kitchen and we co-operate as well when developing new recipes. It goes like that – someone comes up with a new idea and then we try it out together and discuss what to add and work with the details. Robert is usually the dreamer and I’m the realist. our cold soups. For example, we offer light and tasty sour milk cucumber soup. Another popular choice are various salads. Nowadays, eating healthy is popular and in the summer people also like to eat fish. Moreover, customers enjoy spinach-made green pancakes served with whitefish and trout roe. Beer Garden, one of the favourite eateries of visiting tourists as well as local Estonians, has been located in Tallinn Old Town for already six years. Here, fine flavours, friendly service and pleasing interior are combined into a whole, ensuring a memorable experience. Beer Garden is not exactly a restaurant, yet calling it a pub would also be an understatement as the dedicated chefs with long-time experience are so good at their work in the kitchen that no one will leave with an empty stomach. Enjoy delicious tastes at the historic Hüüru Mill! A short car ride from Tallinn in the middle of thick brush, there is (and has been for 14 years) an outdoor kitchen next to a small pond where (according to customers) the best fish dishes in Estonia are cooked. Years ago, the owner of Hüüru Mill became obsessed with the idea to open a real Estonian tavern. He travelled around Estonia, looking for the right place, and finally found Hüüru. Back then, the old mill had been totally engulfed by brush but the building with its surviving fittings and wonderful location was charming. That is where the Hüüru Mill Trout Grill was established. You can try your hand at trout fishing and fill your belly with delicious and affordable dishes served in large portions at the tavern with a historic atmosphere located in a beautiful natural setting. In addition to enjoying a meal, you can explore the centuries-old mill and its equipment as well as draw strength from the walls of the old mill and the gurgle of the river. In

winter, guests can relish the look and feel of a wood-burning fireplace. All guests are welcomed as friends, just like they were visiting a home.

FOOD MADE WITH LOVE

Hüüru Mill’s most legendary food is undoubtedly their lightly smoked fish – over the years, they have understood that this is the best method for preparing trout. The Grill’s lightly smoked trout is so delicious that many people who do not eat fish have been encouraged to try and did not regret it. Although fish breeding was not the initial plan when the Hüüru tavern was built, the owners decided to dig a trout pond to the garden and brought fish to live in it. So it seemed natural that fresh fish should be on the menu. One can see from the open-plan kitchen next to the pond how Hüüru’s excellent grill chef fillets and prepares a tasty trout right before the customers’ eyes. Fresh trout can be had at the tavern or you can take it home and cook the fish yourself. While at first Hüüru Grill only had a small indoor facility open for guests, where they could get a side of salad and fries with their fish, by now the restaurant has a second floor and a full menu with a wide selection of dishes. Since there are so many restaurants that offer foreign cuisine in Estonia,

it was decided Hüüru should offer Estonian cooking, and you won’t find overly fancy food from the Grill today either. Even people who do not eat fish at all will find something to their liking because the menu includes, among other things, mutton fillet, potato and barley porridge as well as pork fillet with sauerkraut. Naturally, light salads and soups, mouth-watering snacks and delicious desserts are also available. (Upon pre-order, Hüüru bakes home-made Veskikivi [Mill stone] cakes with proper quark, real whipped cream and cherries – they’re to die for!) Contemporary Russian Cuisine Most of the people who are heading to Port of Tallinn do not know that next to passenger terminal D is a restaurant Masha which offers contemporary Russian cuisine – and that does not mean classic dumplings only. When you enter the renovated warehouse where the restaurant is located, you will be amazed. The milieu and interior is wonderful – every single room is worth looking into. The contrast between the old and new is designed superbly where even the most minute detail has been given consideration. Masha is cute, spacious, and cosy – the kind of place which were not completed urgently but carefully over the time. There are pictures and other things that has been added there year after year. ‘Salt will never be a regular fine dining place with white tablecloths where everything is perfectly set. We want to offer progressive social food which leaves customers a feeling that they were visiting a good friend not a fancy restaurant. Of course, we offer classic dishes as well, but we really like to mix things together,’ says Tiina. She adds that to keep the menu fresh they are constantly traveling the world to discover new tastes which inspire them. Tiina tells that she just arrived

from Chicago where she visited the coolest kitchens and places to get to know the latest trends in the culinary world. She collected many new ideas – for instance tempura-battered frog legs – and says that if you want to stay fresh and trendy, it is essential to know what is going on and what is in – just like in fashion. Food here really is in constant change. Everything depends on what the season offers and what are the new ideas which come up quite spontaneously. However, you can find three foods that will always stay on the menu no matter what and what clients love unconditionally– risotto, grilled octopus with crispy potato, and Thailand style mussels. When it comes to other dishes, the menu is changing and is always offering something new. Just like amusement park in a mysterious night and that mischievous park is run by Vladimir Proskurnin, chef de cuisine of Salt. Moreover, Vladimir recently gained some new skills under Vladimir Muhhin in White Rabbit which is one of the 25 best restaurants in the world. He also acquired some knowledge with Salt’s sous chef in Kadeau in Copenhagen which is one of the 100 best restaurants in the world. Another good thing about Salt is that it lets customers to share food, meaning that if you do not have a lot of money or just wish to share a dish with someone, you can do it. According to Tiina, the prices are not very high as well. This means that you can enjoy a delicious meal for two for 30 euros but if you are willing to pay more it gets even more luxurious.

commands the kitchen of one of the best restaurants in the world Recently, the world’s 50 best restaurants in 2017 were announced. After a dozen year gap, the first place was once again awarded to an US restaurant, Eleven Madison Park in New York. The restaurant’s chef de cuisine Dmitri Mägi started his career in Tallinn. Eleven Madison Park swapped their last year’s third place in S. Pellegrino’s World’s 50 Best Restaurants for the first place this year. World’s 50 best restaurants have been announced once again. Among the best eateries in the top ten, there are both old familiar ones as well as newcomers. The world’s second best eatery is Osteria Francescana. The third place was awarded to last year’s second best El Celler de Can Roca in Girona, Spain. The world’s best restaurants are roughly divided into two by how the menus have been compiled. There are restaurants that only offer specific

“meal sets”—with one serving every lunch and evening—, while the prices are the same for all food and drink courses. The other category of restaurants also has an ordinary menu, familiar to us from most restaurants, in addition to the so-called set menu. Kazakhstan-born Dmitri Mägi, who is Estonian on his mother’s side, has taken a head position in one of the world’s top kitchens. He has previously worked in restaurants in Tallinn and Riga but also in the kitchen of Noma, which was the world’s best restaurant for two years in a row.
